For me, like most homeowners, May and June are the official months of getting down and dirty. After some renovations last year which involved removing perennials and shrubs, my front gardens are ripe for transformation. The timing was perfect to read Dawn Ritchie’s article on 2016 Gardening Trends in this edition. It gave me ideas on how to create a pollinator garden to do my part to help the honeybees. Experts suggest foxglove, geranium, dahlias, snapdragons, asters, lavender and more to attract the bees. I can’t wait to start planting and making a difference

Never was there a greater concern about how we have poisoned our planet. As our chickens come home to roost with the inevitable climate change, honeybee’s colony collapse and emerging evidence of how pesticides cause cancer and are linked to ADHD in children, the Ontario government has finally banned pesticides. The good news is, homeowners are no longer in denial and have begun to plant pollinator and organic vegetable gardens. Change starts at home.

Photographing this month’s kitchen renovation was a bit of a lighting challenge. I prefer not to use flash for my interior photography and photographing a white kitchen has challenges enough. But architecture inspires me and through careful light control I managed to avoid using flash and reveal the awesome beauty of this renovation. Great design and great installation

tâ&#x20AC;&#x2122;s early morning and the sun is inching its way above the mist suspended over the lake. A damp, earthy bouquet fills the air and the subtle lapping of water against the shoreline is the only movement perceived at this time of day.

The owners of this property have held on to and loved it for many years, anticipating the time when they could build their dream cottage on the rugged terrain, amongst the towering trees. This is traditional Muskoka in every sense and itâ&#x20AC;&#x2122;s why they chose this location for their retreat. But although they love the rustic na-

ture of the property, they wanted a more contemporary design to their build. With the help of Catherine Staples, interior designer and owner of Catherine Staples Interiors, and contracting company Attainable Solutions, they were able to create a unique getaway that brings together the urban look they desired with more classic elements of cottage design. Tucked into the granite rock face that defines the property, the 2,000-square-foot, two-level cottage asserts a contemporary look in its exterior design, with multi-level, low-pitch roof lines and walls of windows framed in black on the lakeside, while at the same time, the grey cultured stone and cedar exterior offers a natural warmth that fits into its surroundings. “It’s one thing to have it modern but it also needed to be incorporated into the landscape. That’s why we brought in the wood and the stone,” explains Staples. “I think the colour combination just fell into

the landscape so beautifully.” Taking advantage of sightlines and the natural surroundings was key in the design of the cottage that boasts floor-to-ceiling windows in every room that faces the water. Upon walking into the foyer on the top level that overlooks the main floor, guests are treated to sweeping views of the lake through large windows in the Great Room that capture the morning sun. Grey slate floors and crisp white walls, combined with a tempered glass railing for the wooden staircase provide an urban look to the entryway, while a cedar accent wall and bucolic barn door leading to laundry facilities offer a warmth to the area. “The (tempered glass) was chosen for its modern style and adding the wood handrail on top gives it a warmer feeling,” notes Staples. “The glass also opens up the Great Room (below) so it’s not as busy.” Contrasting the look and texture of materials is an integral part of the design of

the cottage, where smooth white walls and grey slate floors are offset by rustic elements such as tongue-and-groove ceilings, wooden accent walls and custom-made wooden doors throughout. The Great Room encapsulates this strategy well with large frameless windows that cover a bright white wall on the lakeside. “We didn’t put window frames around any of the windows,” explains Staples. “It’s just a drywall return to give (them) a more contemporary look.” An imposing floor-to-ceiling grey slate gas fireplace, flanked by warm-toned wooden walls on each side, boasts a thick slab of liveedge pine atop the stone hearth to soften the look and give a warmth to the room, which also has grey slate tile on the floor. “The tile we used for the fireplace façade is very close to the tile on the floor but it has a slightly different tone and different style,” recalls Dwayne Hutchins, a project manager for Attainable Solutions. “It’s got variations in size and texture and we bumped it out to give it more texture rather than a smooth face.” The six-by-35-inch slate floor tiles that are featured throughout most of the lower level are an effective conduit for the hydronic heating system, but are also cool on the feet in the summer and low maintenance. They were chosen for practicality, notes Staples, but also offer a nice contrast to the white walls and wooden accents. This distinction is especially apparent in the kitchen where smooth white upper cabinets and white quartz countertops create a clean, modern look and complement the large, five-by-almost-10-foot island that is made almost entirely of quartz. In an area where functionality is key, the island also incorporates plenty of storage, dishwasher and large, apron front stainless sink. To aid in food prep, a smaller sink is located on the

Large windows and the deck makes it the perfect place to take in the scenery. MIDDLE: The screened Muskoka Room is a great way to enjoy the outdoors no matter what the weather. The teak furniture featured in this room was designed by Catherine Staples Interiors and built by Lee Industries. The game table and chairs was refurbished.

While the cottage is open concept, distinctive areas such as kitchen and dining are created with a lower ceiling height than the Great Room. The dining area boasts a custom-made birch table and low maintenance black chairs that match the chairs at the kitchen island. Again, the key is practicality and these chairs are perfect for wet bathing suits.

Your local independent hearing clinic. It’s the perfect area for outdoor entertaining but for those who want to get out of the bugs and inclement weather, the screened Muskoka Room, off the kitchen, is where Staples expects family and friends will gather often. This is the only room in the cottage where traditional Muskoka elements are prominent, with wooden window frames and a pitched wooden ceiling painted in white that evokes a coastal feel. Teak furniture, designed by Staples’ team and built by Lee Industries, along with a refurbished card table and chairs, further enhance this atmosphere. While the four-bedroom, two-and-a-half bath cottage was built to accommodate large gatherings in its principal areas, the upstairs den, at the opposite end from the Muskoka Room, offers an area for individual pursuits or smaller groups with a cosy deck overlooking the water. This space is down the hall from the three children’s rooms and also acts as a guest room. Below, a haven within the Muskoka retreat has been created for the owners. The couple’s master suite is tucked behind the Great Room on the main level to provide privacy. The white ceiling and walls, as well as the clean lines of the windows in this intimate space, are contrasted by hardwood floors and an accent wall made of rough sawn wood painted ‘iron mountain grey’ with fireplace insert. French doors blend with the large windows and lead to a flagstone patio overlooking the lake. Like much of the furniture in the cottage, the pine headboard was designed by Staples. “We wanted to bring a little bit more of that wood element in again to give it character and warmth,” she notes. “The grey painted side tables are suspended on the wood headboard and I brought in the sparkle of sconces.” A transom window high up on the wall opposite to the wall of windows in the bedroom draws natural light into the master ensuite on the other side. This washroom is bathed in pale greyish-beige tile and white walls to provide a simple pallet. The seamless glass shower and stand-alone tub on one side are offset by a dark vanity with white quartz counter with sunken sink on the other side. Minimalism is also a key component to the main washroom upstairs, where a stand-alone tub against white walls creates

I enjoy interacting and joking with my patients. It takes the nerve off. All the staff tell me I’m exactly like Dr. Taylor, personality wise - a real compliment.” “A cavity is really only a symptom of a problem. We can fix that, but it’s important to get to the crux of the issue. Why are you getting cavities? I always look at that, especially with children who are just starting out.”

CHILDREN’S DENTAL CARE “I want to see children as soon as they get teeth. Normally you can’t work on a child until age four at a general dentist, but it’s important that they become familiar with the dental office, so that their first time coming in isn’t with four cavities. I want them to have many good visits prior to work so they don’t associate the office with pain and needles. It’s key to avoiding a phobia that will follow them into adulthood. We have a Lego table for them to play with and let them ride up and down in the chair, give them a sticker and make them giggle. We participate in the Healthy Smiles Program and see how the teeth are coming in and only charge for a polish.”

every homeowner is soon educated, the upkeep of a residence is a relentless chore that never concedes its demands. Owning both a home and a cottage only doubles that workload. The Thomas family found the task of maintaining two properties increasingly overwhelming as a challenging career and growing family took priority. “My husband is a very busy rural physician,” says wife Jody Marcus. “He’s on call a lot. We’d come home from the cottage and the lawn needed to be cut and gardening done and we just knew things had to change.”

Looking to reduce their workload, the couple decided to sell the two properties and consolidate into a larger beachside property on the shores of Georgian Bay that could perform as both home and resort. “It’s very rare to find a sandy beach on Georgian Bay,” says Marcus. “There are only eight of us with a sand beach here and we are lucky to also have deep water for a boat. But the great thing is it goes out gradually so the kids can be in the water safely. Our kids were young and safety was important to us.” A long curvy, private road leads up to the spacious beach property in Midland they now call home. The scale of the 4,460-square-foot residence isn’t apparent from the exterior drive, but from the bayside it reveals its grander countenance. “It was a real labour of love finding this home,” says Marcus. “But it has been the best place to bring up kids. We’ve been here for 15 years and we’ve had more swimming, hot tub, beach parties and bouncy castle birthdays than you can imagine. My daughter even had her graduation picture taken here, on the beach.” The two-storey residence was architecturally designed to offer water views from every room, and houses four bedrooms and three bathrooms – one of which is a spa bathroom with free standing tub, dual vanities, oversized glass-walled shower and Carrara marble tile (Olympia Tile.) white tufted leather headboard (from Simply Modern in New York) and whitewashed wood ceilings, lies on the upper level, but it remained unused for years. “My children were quite young when we moved in,” says Marcus. “And I wasn’t comfortable leaving my kids alone. The lower level has three full bedrooms and we slept downstairs for many years, leaving the upstairs master as a guest room. But once the children were in Grade 7 and okay to be alone, we moved right upstairs.” That’s when the lower level became a rollicking teenage haven. Granite rocks surround a wood-burning fireplace here and the stone carries onto an adjoining wall. Beamed ceilings and wood panelling bring a rustic tone in strong contrast to the modernity of the upper level. “We have a giant craft room,” says Marcus. “With every imaginable kind of glitter, glue and craft going. It’s one big room with built-in cabinets, an office, exercise space and more.” The Thomases didn’t worry the furnishings in this space much. It’s the place where the kids could go wild, put on plays, come in from the fire pit on the beach or from having a hot tub and enjoy an indoor sauna or sprawl on big comfy couches and watch a movie. “The kids always had group projects and we’d have two to 20 kids down there doing a craft. We used to do a traditional gingerbread house every year. This is their domain. I put in a fridge so they didn’t even have to come upstairs for a snack if they didn’t want to.” For the upper level, the design style was far more adult and deliberate. Here white is Marcus’ signature style in décor – both inside and out – from walls to furniture to tiles, linens and artwork. “We stucco’d the exterior white six years ago,” says Marcus. “Tore off the decks, installed composite decking and replaced all the windows.” Arriving through a set of double glass entry doors you are greeted by the riot of bleached white light. A curved white balcony overlooks the sunken living room below. Rustic white sculptures of elk heads, shells and corral colonize the room. An L-shaped white leather sofa fills the space end to end and is placed quite correctly to face the stunning water view of Georgian Bay ahead. “In the winter, it’s full sun in that room,” muses Marcus. “My daughter and I put down

home tour|Midland towels and lie on the living room floor to get a winter tan.” The few splashes of colour that do invade this monochromatic colour scheme come primarily from the natural wood of the cathedral ceilings in the great room and the stone accents, cushions and animal skins which populate the floor and throws. “There’s no brown in this house,” says Marcus firmly. “I’ve always liked the colours white and black for décor because I think it allows for accent colours and provides a good base for hanging pictures, especially black and white ones.” So adamant was she about her colour theme that she even took a paintbrush to the brown brick surround of the family room’s fireplace and drybrushed it a dark grey, then whitewashed the ceiling and exposed beams and dressed the room with black leather lounges and a zebra animal skin motif. Off the family room, through patio doors, the composite deck with glass railings and a Nantucket-chic teak dining set complete the look.

Friends have often questioned Marcus about her contemporary design choice. How could a busy mother of two, whose home is regularly Grand Central Station for all the children in the neighbourhood, dare pick such a vulnerable colour? “White is just easy,” insists Marcus. “You wipe it down or paint over it if it gets dirty. There’s nothing much to match and I like the Cape Cod look.” On the upper level, only the dining room is allowed a departure in colour, dictated by a valued piece of furniture from Marcus’s ancestral past. “It was my Zayda’s TV cabinet,” says Marcus. “It reminds me of my grandfather who I loved to death.” The cabinet housed an old black and white television. “Probably one of the originals,” she says. “He was a tinsmith from the old country and had to work very long and hard to save up for that. It was prominent in his living room. With her eldest child now in medical school in Scotland, following in her father’s footsteps, and the second daughter on the brink of a similar education, the Thomases now look ahead to the empty nest syndrome that all families inevitably face. “We’re downsizing,” says Marcus. “But I will miss this place. All the volleyball and badminton games in the yard. Watching the kids Seadooing, tubing and waterskiing in the summer and skating in the winter. My husband makes a huge skating rink on the lake each year and all the kids in the neighbourhood come. It’s been great for us here; we just walk out the door and start cross-country skiing across the bay from own our backyard. But we’ve already built our new home.” The new residence may be smaller and more manageable, but it is still on the water. Asked what her interior design choice will be for the new home, Marcus just laughs. “All white, of course.”

hen grown children move out of the family home to begin independent lives, empty nesters soon find themselves rattling around in vacant rooms that are a burden to clean and an unnecessary expense to heat. Downsizing is the inevitable course. Finally entering their retirement years, homeowners Andrea and Terry Roach knew it was time to eliminate the redundant bedrooms and move to a smaller residence but they didn’t want to lose their entertaining space. Holidays were habitually held at their home for their large blended family of eight, which had now expanded to include eight grandchildren. They wanted their retirement home to remain the welcoming hub in the wheel of their family’s lives. Thinking out of the box, the Roaches focused on a massive kitchen renovation for their new two-bedroom bungalow in order to fulfill this task of togetherness. “I wanted it to be a place where everyone could sit, talk, eat and be entertained,” says Andrea. “Room for lots of people – friends and family – to just be together. We couldn’t do that with a traditional kitchen; everyone would be in different little spots.” Before the renovation, a wall divided the average-sized kitchen from the great room. Burgundy

countertops contrasted dramatically with the builder-grade off-white cabinetry and refrigerator. Yellowing tiles, angular cabinet positions and unattractive grey-green carpeting on the great room’s floor did nothing to enrich the appeal. The bones of the home were superb, but aesthetics had to change. The Roaches consulted with designer Sheree Toffan from Designers Plus and told her what they were thinking. “They knew they wanted Shaker cabinetry and a big island,” says Toffan. “They didn’t need a kitchen table for just themselves anymore and they still had a separate dining room if they invited a couple over for

dinner. Taking down a wall would be necessary, but because it would now be one open room, it had to look dressy.” “We were nervous about removing the wall,” says Andrea. “What if it was load-bearing?” Toffan suggested leaving a post intact that could easily be incorporated into the island’s overall design. A trip into the attic by the electrician confirmed it was safe to remove the wall in its entirety. Once eliminated, the whole space opened up, bringing a light airy atmosphere into the room. A massive 11-by-4-foot island, with seating for eight, was crowned with luxurious Bianco Alaska granite (installed by Royalty Stone Inc.) “You wouldn’t think an island

that large would fit in a 1,500-square-foot bungalow,” says Andrea. “It’s huge, but it works!” The drab carpeting and tiling in the kitchen was replaced with hand - scraped Acacia walnut hardwood that carries throughout the length of the main floor. Toffan suggested a double shaker door with a small bevel for the cabinetry, to bump the designer-look up a notch, and painted them Benjamin Moore Cloud White. (Cabinets by Décor, out of Manitoba.) Under cabinet lighting and three inner-lit display cabinets further brighten the room. Toffan recommended a matte tile backsplash to offset the glossy granite counters. “We went with staggered Natura White Matte subway tiles that are 15 inches and five-and-a-half inches,” says Roach. “Michelle at Desert Tile was just wonderful.” The interesting hand - scraped appearance of the tiles unifies with the Acaia hardwood flooring. ooligans restaurant is making its mark in downtown Barrie. Along with showcasing a 20-foot high quality HD TV and delicious made-from-scratch fresh food, the popular eatery has just finished redesigning its rooftop patio. “It’s going to be the place to hang out this summer,” says Adam Smith, who owns and operates Hooligans with eight other partners. As the 189-seat restaurant heads into its second year of business, Smith recently invited GoodLife by to unveil the new and improved Hoolies Rooftop Patio and to dish about other Hooligans’ news, including an expanded menu. In the Kitchen in the kitchen|Hooligans Let’s start with an update on the new patio. Adam Smith: We’re so excited about retrofitting the top level and transforming it into Hoolies Rooftop Patio. Along with opening up the sightlines to offer an unmatched view of the waterfront, the 80-seat patio features newly purchased comfortable and inviting outdoor furniture. We still have the sun umbrellas and misters for super hot days, but it’s much more private and there is an outdoorsy, get-away feeling to it. The patio will also feature its own self-contained kitchen along with a special summer drink menu. We’ve also added glass barriers and heaters to extend the outdoor season. You must also be excited about the redevelopment of Fred Grant Square (Meridian Place), which is beginning this summer. AS: We are! Visitors to Hoolies’ Patio will be able to sit right on top of all the action. Let’s back up a bit. For several years, the owners ran the business as the Bank nightclub, but then opened Hooligans in August 2015. Why was there a change in direction? AS: The transformation from nightclub to family friendly restaurant was a calculated move to help make the downtown core more accessible to young families and tourists. It’s the kind of place where you can bring your whole family in for some great food and take in a sporting event, or just enjoy some quality time together. We felt that downtown Barrie needed a place like Hooligans. And we were right! Besides yourself, who owns Hooligans? AS: Including myself, there are nine owners in total. The partners are all friends and everyone is from Barrie. Our skill sets are diverse, which offers a bevy of expertise to run the business. We have bankers, accountants, venture capitalists, even a prominent politician, operations and sales guys and so on. The Bank had six original partners, but three were added when Hooligans started. Is Hooligans a sports bar? Or is it a family restaurant? AS: Even though we do offer an ultimate

Sweet Thai Bowl viewing experience with one of the biggest screens north of Toronto, our real focus is serving up fresh food and great service in a family-friendly atmosphere. We specialize in terrific fresh food, top-notch service and a menu full of dishes that people want and crave. We’re proud of the fact that we aren’t a cookie cutter franchise restaurant. Describe the menu. AS: Hooligans serves up fresh, made-fromscratch casual dining fare. Some might call it comfort food. Everything is made in-house daily including our freshly ground burgers, soups, hand-breaded chicken tenders, all

sauces and desserts and more — nothing is frozen and nothing comes out of a box. You just released a new menu yesterday. Can you share the details? AS: We are so excited about this menu, which showcases 20 new items! The expanded menu features lots of appetizers, salads, new Indian dishes (or Asian bowls) and a second steak dish. To make way for the new choices, we dropped nine dishes from the original menu. A lot of research went into the new menu before we rolled it out. Over the past three months, we taste tested over 50 dishes before settling on the

Then we took all of those food ideas and Hooliganized them by making them fresher, tastier and ensuring they met our high quality standard. The end result is fabulous! What are the most popular dishes? AS: Our nachos continue to be our top seller. Other wildly successful items include our wings, Hoolie bites, chicken tenders, soups, burgers and our steak dinner. Tell me about your head chef Rowell Ragudo. AS: Rowell did his culinary education at Humber College and has trained under Canadian celebrity chef Susur Lee. Thanks to Rowell and his made-from-scratch kitchen, there’s definitely a real wow factor to our food. Along with being very accommodating with special requests, Rowell has the same control and precision in preparing every single dish – whether it’s for two people or 200.

What’s Hooligans’ food philosophy?

Along with a massive TV, the interior of Hooligans features exposed brick walls, tin accents and plenty of reclaimed wood. How would you describe the interior?

What about dessert? AS: Just like our regular menu, we’ve just launched a new dessert menu with lots of great items. We’ve got a funnel cake, and an amazing chocolate chip cookie that comes warm to the table in its own skillet – and much more. Thanks to your giant big screen TV and other smaller monitors around the restaurant, Hooligans can host anything from business meetings to festive parties. Can you expand? AS: We’ve had great success hosting meetings and parties. We have wifi available for use, which means presentations can be easily displayed on our monitors (through a laptop or tablet, via an on-site server). We

AS: It’s a comfortable, unpretentious and welcoming environment. The decor has an urban, industrial and reclaimed feel. Even our tin was reclaimed from an old barn in Oro-Medonte. In terms of history, the building was a TD Bank for several years. As a result, we still have the original vault, which we now use as a storage room. We had to remove the door which weighed about 2,000 pounds [laughs]. What about your kids’-eat-free menu? Adam Smith: As a New Year’s gift to Barrie, we offered kids’-eat-free meals from Jan. 1 to March 31. During that time, we served over 1,200 free kids’ meals. Now, we offer kids’-eat-free meals on Sundays only.

Beyond kids’ eat free Sundays, what other specials do you offer? AS: On Mondays and Tuesdays, we offer allyou-can-eat wings, Wednesdays is half-price wine, Thursdays is steak night ($20 steak dinner with all of the fixings), Fridays and Saturdays are date nights with off the menu featured dishes, along with live music starting at 9 p.m. We also offer a Hooligans daily express lunch menu (most meals are $9.95). What about brunch? AS: We offer brunch on Saturdays and Sundays and all holidays from 11 a.m. to 4 p.m. The menu features popular full breakfast style entrees, along with discounted drinks such as Caesars and mimosas. What about diners with special dietary needs? AS: Whether it’s an allergy or a special request, we encourage diners to talk to our servers and our kitchen will do its best to accommodate. Being a local restaurant guy, what are some of your fave foodie destinations? AS: Locally, Fox’s Bakery and Deli (foxsbarrie.ca) has been phenomenal to work with, and their products are amazing. They have actually made two custom items for our menu. We’d also like to give a shout out to The North (thenorthrestaurant.com) and chef Marco Ormonde. Outside of Barrie, we love Earls (earls.ca) in Toronto, and the Houston’s chain (hillstone.com) in the US. Actually, when we were coming up with the concept for Hooligans, we drew plenty of inspiration from Houston’s in Florida.

In the Kitchen in the kitchen|Hooligans CHORIZO AND PORTOBELLO PENNE Recipe courtesy of executive chef Rowell Ragudo of Hooligans 1 whole Chorizo sausage (roasted in 375F oven for 12 minutes), chopped into half moons 2 slices Applewood smoked bacon (roasted in oven with chorizo) dicd into 1/4-inch pieces

PREPARATION: 1. Place vegetable oil in frying pan on medium heat. Once oil is hot, add chopped sausage, mushroom slices, chicken, bacon, tomatoes and red onions, sauté until warm. Stir and season with salt and pepper. 2. Add basil pesto and stir to coat.

1 medium Portobello mushroom cap (lightly oiled and seasoned with salt and pepper, and grilled for 3 minutes per side, sliced into 1/4-inch strips)

3. Add white wine and deglaze pan, scraping off bits that are caramelized onto the pan.

1/3 cup grilled chicken, diced into 1/2inch chunks

4. In separate bowl, mix together Alfredo cream sauce and tomato sauce to create a rose sauce. Add to the pan and stir until combined.

5. Add penne pasta and simmer until the noodles are warm. Toss the pasta with the sauce until evenly coated and proceed to plate. 6. Garnish with freshly grated Parmesan cheese and warm garlic bread. Enjoy! {Serves 2}

early every Saturday morning for the past 26 years, Lynda Van Casteren of Nicholyn Farms has risen before 4 am, loaded up her farm truck (with help from family), and made her way to the Barrie Farmers’ Market to set up shop. “I always look forward to market days,” confesses the longtime vendor as she serves up a freshly prepared peameal bacon sandwich to an eager customer at the Barrie market. “The community and social atmosphere is amazing.” While the friendly community feeling has been a constant, farmers’ markets have changed since Van Casteren first started decades ago. “There has definitely been an evolution,” she explains. “Back in the early days, we had a handful of vendors and the selection was limited. There was the egg farmer, the honey guy, the apple farmer, the produce farmer and so on. We still have all of those staples, but now there’s much more. Heck, you can even buy Ontario wine at the Barrie Farmers’ Market now!” Apart from homemade baked goods, local farmers’ markets feature a rainbow of local farm fresh produce, honey, locally raised meats, plants, flowers, preserves, chocolate, and gourmet food products -- to name a few. “Prepared foods are now really big at markets,” she explains. “At the Barrie Farmers’ Market, you can buy soup,

And the meals are made with local ingredients.” To keep up with trends, Van Casteren who started out selling pork, pies and preserves 26 years ago, — now serves up their own farm raised pork, beef, chicken, lamb, along with baked goods and fresh fruits and vegetables from their gardens and Geodome. She also sells locally produced bison, elk, venison and fish. “Like other vendors at the market, we’ve diversified.” Why the plethora of offerings? A couple of reasons. “Consumers have become more food savvy and want more variety,” explains the local farmer. “Secondly, grocery stores have realized that farmers’ markets are popular and have taken great measures to set their shops up like local markets — as such, we’ve had to step it up a notch to compete.” There’s no question that farmers’ markets have grown in popularity over the past decade. Inspired by the local food movement, farmers’ markets have been taking root all across Canada. While some are well established (the Barrie Farmers’ Market has been around since 1846), others are just a few years old. Robert Chorney, executive director of Farmers’ Markets Ontario, says the interest in farmers’ markets is strong. In the early 1990s, Ontario had about 60 markets. By the end of 2016, about 180 will be up and running.

PREPARATION: 1. Snap off tough ends of asparagus and wash well in cold water. 2. Combine all ingredients in a sealable bag or container and marinate for 30 to 60 minutes. 3. Preheat grill on medium heat. 4. Remove asparagus from container and place on preheated oiled grill rack. Grill 5 minutes on each side or until tender to touch with a fork. 5. Devour with enthusiasm.

What’s driving the renaissance of farmers’ markets? Three things, according to Chorney, who is also the founding President of Farmers’ Markets Canada. “The whole local food thing is huge right now, and it’s here to stay. People want fresher foods grown locally. Secondly, community groups are looking to do something new like put a bit of fizz in their downtowns. Lastly, the farmers are saying they’ve had enough -they want to sell direct and cut out the middle man.” Shopping at a farmers’ market is a healthy decision not only for you, but for your community’s economy as well. “For every dollar spent at the market, another two dollars ripple through the provincial economy,” explains Chorney. In Ontario

alone, sales at farmers’ markets total almost $750 million, leading to an economic impact of $2.5 billion. “For every one person you see working at the market, another two are busy at work back on the farm,” he explains. As many as 27,000 people in Ontario are directly involved in preparing and selling the products you find at the market. Farmers’ markets are also a great way to incubate a new business because of the low overhead. “At the Barrie Farmers’ Market, we’ve seen several vendors turn their stalls into storefronts,” explains Van Casteren. Examples include SoupHerb and Chavo Crepes to name a few. Robert Radcliffe, who represents his family’s business, Lakeview Gardens in Lefroy, at three farmers’ markets — Bradford, Innisfil and Sandy Cove - says: “farmers’ markets are a great way for local growers and producers to sell directly to consumers.” Lakeview Gardens is a three generation farm with a 28,000-square-foot greenhouse operation and outdoor fields. A sampling of Lakeview Garden’s crops include: various cucumbers, tomatoes, sweet peppers, gourmet greens, kale, collards, onions, beets, carrots, leeks, beans, shallots, broccoli, herbs, flowers, vegetable seedlings and more. “We also grow hot peppers from mild jalapeños to the hottest varieties in the world, including the Carolina Reaper and the Trinidad Scorpion,” he explains. “We

sell those at the market, and trust me, they are hot!” Offering items like hot peppers illustrates how vendors are stepping outside-thebox to cater to modern foodies. “We are constantly experimenting with new crops and work hard to extend growing seasons for our customers,” says Radcliffe. Besides shopping, there’s plenty to see and do at the area markets. Many local farmers’ markets now offer up live music, barbecues, roaming magicians, strawberry festivals, pancake breakfasts, and more to entice visitors. Getting back to the root of farmers’ markets, Henri Linde of Valley Farm Market and Catering says folks are drawn to farmers’ markets because they want to know where their food and plants come from. “People enjoy meeting the local growers and producers,” says the farmer who is a vendor at the Springwater-Elmvale Farmers’ Market. “Beyond that, more and more people are realizing that supporting local agriculture is important.” Valley Farm Market grows asparagus, strawberries, Saskatoon berries, sweet peas, sweet corn, beets, mixed lettuces, carrots, tomatoes, cucumbers and much more on its farm. And all of that is on offer at the farmers’ market. But the best reason to go to a local farmers’ market is freshness, according to Linde. “Where else can you buy a carrot that was freshly picked that morning?”

All three are delicious and quick to prepare!” 1 lb (500 grams) Flevo Farm sausage 2 cups penne* 1 Tbsp olive oil 1 onion, cut into wedges 1 clove garlic, minced 1 stalk celery, chopped

1 cup cherry tomatoes, halved (or 2 whole tomatoes, chopped) 2 Tbsp fresh basil or fresh parsley, chopped (or ½ tsp dried) ½ tsp hot pepper flakes 1 Tbsp balsamic vinegar Fresh grated parmesan

PREPARATION: 1. Boil sausage in large skillet until cooked to a hint of pink inside. Drain, reserving liquid. Slice sausage into 1/4 inch rounds. 2. Cook penne until al dente. 3. Heat oil in skillet. Cook onions, garlic, celery for a few minutes. Add tomatoes and basil/parsley and cook for a few minutes until tomatoes have softened. Stir in hot pepper flakes, sausage rounds, and balsamic vinegar. Toss in penne and mix thoroughly. Add some of the reserved liquid if mixture seems too dry. Sprinkle with parmesan. Makes 3 to 4 servings. Enjoy! Note: *Substitute 1 cup whole grain or basmati rice and cook according to package directions. Serve sausage mixture over rice rather than mixing it all together.

PREPARATION: 1. Gently toss together berries, sugar and cornstarch until berries are coated. 2. Place bottom crust into the pie plate. Pour in berries and top with 1 Tbsp butter, if desired. 3. Cover with top crust (either a full cover, or strips). Brush top pie crust with the egg then sprinkle the 1 tsp of sugar on top. Pinch seams together and mark your pie vents. 4. Using the lowest rack of your oven, bake for 15 minutes at 425F. Reduce to 350F, and bake for about 50 to 55 minutes more, or until you see the pie filling bubbling and your pie is browned. 5. Remove from oven and cool on a baking rack. Enjoy this pie with some local French vanilla ice cream. {Serves 6}

Some people sing, some dance; I paint and I love it.” The self-taught artist said painting offers the ability to continually learn and challenge oneself. “If frustration could count as training, I have had lots,” she laughs. “Apart from that, I adore books, videos and especially the Internet. Social media gives endless access to others artists’ knowledge, experiences and allows me to absorb what I want to learn at my own pace.” From the large baroque style works stretched across walls to wild animals preserved in their glory and works with a hint of surrealism, Charlton finds painting offers her the ability to share a world that is as unique as the individual creating it. For her, there is something special about working with oil paints. “You can push and pull them, layer them, drag them or even blend them. They are versatile. I have tried many different medias and I always feel I can express myself the best with oil paint. The depth of colours is endless and the slow drying time allows me to be patient. Knowing when to walk away, fold the laundry, clean the house, regain your senses and try again is all part of it for me.” Charlton admits she isn’t afraid to scrap a piece and start all over.

“It may take time to reconcile what is not working, however, I’ve just always followed my own instinct. Chances are if I don’t like what I produce no one will ever see it.” When it comes to sitting down to paint, Charlton said her process starts with an inspirational feeling or emotion and a highresolution photo of the subject. “I can zoom in and see the tiniest detail. I feel like you need to see what you are painting and you cannot paint what you can’t see,” she said. “The most rewarding part, though, has always been adding the fine details. From tiny hairs to shiny reflections, it’s just satisfying.”

Charlton said she admires anyone who has the dedication, talent and perseverance to make art. “Art is such a special thing to create,” she said. “Incorporating emotions with light makes a piece come alive. I am always moved when someone is able to capture the essence of what they are painting. ne of the great things about wine is the chance for exploration – getting out of a rut and trying something completely new. Some of us find ourselves in a wine rut because we get lulled into continuously buying the same wine time and time again, or we are fearful that we “know nothing about wine” and therefore we should stick with something safe. I hate to say it but that’s a very “Molson-and-Labatt’s” attitude and it is something we Canadians developed throughout years of living with the beer giants. Let me explain ... Most of us grew up either drinking products made by one of the big Canadian breweries and it was only the “cool kids” that branched out with a Moosehead or a Creemore … but these days there’s a beer revolution going on and people aren’t happy drinking the same-old same-old. Craft beer is huge and it seems you can’t walk into a bar or restaurant these days without seeing a new name on one of the taps. The same can be said for wine and wine drinkers. Although this revolution has been going on a lot longer, it’s taken some time for us to catch up with it. Let’s face it, the LCBO isn’t exactly a leader in this department, and who can really blame them? They buy for an entire province and it’s only a small minority that wants to try something new … but if that minority turned into a majority, then we’d be seeing all kinds of interesting wines and regions coming out all the time. So I say, get out of your wine rut and try something you’re not completely comfortable with, or that you’ve never even heard of before! Who knows? Maybe you’ll find your next favourite. SUMMER SESSIONS Warmer weather means more time outside on the deck and patio. Thankfully there’s a class of beer that won’t punish you for staying out a little longer BY ROBIN LEBLANC

ith the warmer weather finally here (knock on wood), I’m spending a lot more of my time on the porch at the cottage and, as I always do at this time of year, finding that my tastes are going more towards session beers. Now, when I say “session beers,” I’m not referring to beers that you can have at Session Toronto, the much-anticipated beer festival happening at Dundas Square on June 11. While those are fantastic beers to look forward to, in this instance I’m talking about the class of beers you can pick up at the store and enjoy at home. To be called “session” a beer has to follow one simple guideline: be at or below 4.5 per cent ABV – just low enough in alcohol that you can enjoy several of them in a drinking “session,” as it were. It may initially sound

odd to give lower-alcohol beers a distinction like that but with more and more breweries making some beers that – while fantastic in flavour – can start at 8.0 per cent ABV and go all the way up to 15%, it’s good to know that there’s a selection out there that won’t skimp on flavour ... and ensure you can walk away after one or three cold ones on the dock. When you see a beer with “session” in its name, you can be sure that you’re in for a beer that won’t lead to a headache afterwards.While session beers aren’t totally a new class, the past two years have seen a fantastic rise in demand for them, with plenty of Ontario breweries coming out with their own easy drinking beverages.

POMPOUS ASS ENGLISH ALE Great Lakes Brewery ABV: 4.2% LCBO#: 408054 It’s important to note that session beers aren’t just light-bodied and hoppy. Sometimes they’re rich, malty and a bit heavier as well. A prime example of this is none other than Great Lakes Brewery’s own year-round favourite, Pompous Ass English Ale. Pouring a deep hazy amber and giving off an aroma showcasing roasted coffee notes, expect lovely flavours of bread pudding, caramel, and stone fruits in a medium body. STATE OF MIND SESSION IPA Collective Arts Brewing Ltd. ABV: 4.4% LCBO# 420034 Collective Arts is one of Ontario’s most memorable breweries due in no small part to the vibrant, consistently changing artwork that adorns their bottles. But while the bottle designs by local artists manage to grab your curiosity, the results of head brewer Ryan Morrow’s talent grabs your attention. State of Mind is a very solid addition to Ontario’s selection of Session IPAs, with pineapple and orange balancing nicely with a mild bitterness.

LITTLE NORWAY PALE LAGER Sawdust City Brewing Co. ABV: 4.5% In 1942, at the height of the World War, the Royal Norwegian Air Force moved its “Little Norway” training facility from Toronto to the Muskoka Airfield near Gravenhurst. From then until the remainder of the war, the town was host to thousands of Norwegian pilots honing their skills. This pale lager, a collaboration between Gravenhurst’s Sawdust City and Norway’s Arendals Bryggeri, is a tribute to the past and present friendship of two nations. This very light-bodied beer – only available in select bars, at the brewery itself and in select stores in Norway – has distinct grain character with a delicate grassiness and crisp, dry finish.

DETOUR SESSION IPA Muskoka Brewery ABV: 4.3% LCBO#: 404368 (single) 404335 (six pack) Muskoka Brewery doesn’t get much credit for being fairly ahead of the curve when it comes to certain beer style trends in Ontario. Mad Tom IPA, for instance, was one of the first intensely flavoured IPAs when the province was just waking up to the style. Similarly, Detour was one of the first beers in Ontario to be marketed as a Session IPA before the craze really started kicking off. Detour is both adventurously hopped and one of the more accessible beers for newcomers in Muskoka Brewery’s catalogue. Expect notes of lemon, grapefruit and pine with a grassy finish in this lovely porch sipper. Robin LeBlanc is an award-winning beer writer and owner of thethirstywench.com. 2016 GARDENING TRENDS POLLINATOR GARDENS Topping the list of 2016 gardening trends is the pollinator garden. Wild flowers, mini meadows and bee, butterfly and hummingbird-friendly plants are in demand as concerned gardeners sit up and take notice of the critical loss of pollinators around the globe. Garden centres are reporting a huge increase in requests for milkweed to assist butterfly habitats. Vegetable gardeners were alarmed last season when many blossoms on their vegetables never set fruit but rather withered on the vine, an indication of lack of pollination. The plight of the Monarch butterfly and disastrous colony col-

lapse of the honeybee has spurred gardeners to take action in correcting the problem themselves. A single definitive cause is still being debated about the decline in honeybees but evidence is pointing to a threefold problem. Malnutrition due to loss of habitat, pesticide exposure and weakened immune systems as a result, which gives rise to vulnerability to attacks by mites and other pathogens. Just as stressed plants and trees without food and water cannot fend off bug infestations, the same holds true for pollinators. In the past, farmers planted a diversity of crops that matured at different times and fed the bees throughout the season but now that monoculture (the cultivation of

TIP Add rocks to birdbaths to offer pollinators a landing pad for a quick drink without risk of drowning. Change water regularly to discourage mosquitoes. For gardens without birdbaths, plant the perennial, Lady’s Mantle (Alchemilla mollis), which collects rain droplets on the leaves. Master gardener and bee expert, Cathy Kozma of Bees Are Life, Inc. says “Every

bee is a $50 bill. So next time you see a bee flying past think that’s fifty dollars you’re looking at.” Here are just a few of the many plants pollinators would enjoy visiting.

ORGANIC EDIBLE GARDENS “Food gardening is going to be huge,” says horticultural expert Nancy Stein. “After the $8 cauliflower, it’s going to explode.” Yes, everyone is jumping on the organic vegetable bandwagon as the farm to table trend gathers steam. People want fresh, open-pollinated non-GMO fruits, herbs and vegetables and are building raised beds and learning how to preserve their harvests. Major retailers have responded to this trend, even creating whole lines to support it, like Williams Sonoma’s amazing Agrarian line of products. Etti Mountain of Barrie Garden Centre says it’s not just the price of fresh food that is

driving this trend, the recalls on lettuce and frozen fruits has her customers demanding more resources for organic gardening. For new gardeners with a small yard, Mountain suggests starting with easy-to-grow perennial vegetables like rhubarb and asparagus that return year-after-year without any effort. “Garlic is also easy,” says Mountain. “And you can plant potatoes in a potato bag and you’ll get a whole bushel from just one bag. You don’t need a large yard anymore to have a vegetable garden. You can have vegetables growing on a balcony or in containers. There’s plenty of apparatus to help now.” Barrie Garden Centre sells specialized growing containers for just this purpose that will hold three tomato plants or six peppers and peas or beans supported by a teepee – enough for a generous harvest for a family. Of course, it’s not just vegetables hungry gardeners want. Homegrown fruits are on the menu too.

BUCKET BERRIES Berries in containers are trending, as gardeners discover the ease and convenience of patio planters. Blueberries, strawberries, gooseberries and currants will all produce well in a good-sized pot that allows for

easy picking. Strawberries will also put out runners, so buying a proper strawberry pot and a single ever-bearing strawberry plant can mean a bounty of berries as one plant produces many more by sending runners cascading down from the top of the pot to root in the pockets of soil protruding from the container below. “Blueberry bushes are one of the absolute easiest fruits to grow,” says Etti Mountain. “You just need acidity in the soil and sunlight. If you have room for one bush, you’ll get a good harvest and it is easy to freeze blueberries.” When it comes to perennials, says Carl Young of Bradford Nurseries, “Everything works better in the ground primarily because overwintering fruits and vegetables don’t like to be thawed and frozen, and thawed and frozen again, but if pots on a patio are all you have, you work with that.” Protecting potted berries and fruits with burlap and straw during the winter helps. Citrus, however, needs to be brought indoors. “The advantage of having your own food, unsprayed and not subjected to pesticides means that your two year old can go out on the patio, pick those berries and pop them right in their mouth and you can feel good about it,” says Barrie Garden Centre’s Debra Lidstone.

the same tree in one visit merely by going from branch to branch. “With declining numbers of pollinators, you need to pay attention to that,” says Tieseen. The five main in-demand fruit trees are apple, plums, apricot, peaches and cherry. “You don’t have to worry about pollinating a plum tree though,” says Tiessen. “If you’re in a subdivision, there’s bound to be another plum within half a mile.” For cherries, he suggests the Stella Cherry as a good choice because they’re self-pollinating. Barrie Garden Centre has a new variety of dwarf cherry bush this season (The Romeo and Juliet Cherry) that remains between three to five feet in height. “You need two for pollination,” says Mountain. “They aren’t Bing cherries, but they’re very sweet.” Bradford Nurseries also carries a vast selection of multi-grafted fruit trees and even a few delightfully espaliered fruit trees that have been trained to grow horizontally along a fence line, making it easy to pluck fruit from a standing position.

OAK ALLEY PLANTATION This is surely the grand dame of the plantations of Louisiana. The vista looking down the long walkway to the two-storey, columned porches of Oak Alley is surely one you’ll remember from the silver screen. Live oaks line both sides of the walkway, their arms outstretched and forming a living embrace that graciously welcomes visitors through the gate and to the front door. The distinguished row of trees for which the home is named, are more than 300 years old. The iconic quarter mile is made up of 28 Virginia live oaks, planted in two equal rows, 80-feet apart. The live oak, noted for its hardiness and stately stature, is so named because it is an evergreen, shedding its leaves only as new ones emerge. It is considered one of the most beautiful trees in North America, and is a symbol of the elegance of the old south. This is the panoramic view you will have noticed as Brad Pitt rode his mount under the trees in Interview with the Vampire; and it’s Oak Alley’s own trees and sugar cane fields that played stage to Matthew Mcconaughey and Woody Harrelson’s characters in True Detective. Oak Alley was built in a time when the sugar industry was booming, and sugar cane plantations and their stately homes lined the Mississippi River. One of the plantations in St. James Parish originally owned by the Roman family, Oak Alley has had the good fortune to have fallen into hands over that years that saw her refurbished and updated, while maintaining all the historic detail and charm she had when she was built. Now cared for by a trust, you can explore the “Big House” as well as recreated slave quarters, paying homage to the reality that made plantations like this prosper. A popular tourist destination, you can also experience recreations of a Confederate officer’s tent and 25 other selfinterpretive areas. Tours of the “Big House” are ticketed and guided, arrive early to buy your ticket, so there’s time to indulge in a pre-tour Mint Julep at the cafe.

The current owner is Kevin Kelly, a man who fulfilled a lifelong dream by acquiring the property in 2003. He has carefully cared for Houmas House, so that the mansion today reflects the best parts of each period in its rich history alongside the big bend in the Mississippi River. By the time of the Louisiana Purchase in 1803, the plantation was established and producing sugar. Construction on the mansion began about 1810 and was completed in 1828. By that time Houmas House began to increase land holdings, eventually growing to more than 300,000 acres. Described in its heyday as “The Sugar Palace,” an original French Provincial style home that was erected on the property became living quarters for the staff that served the great house. Connected by a carriageway to the mansion, it is but one of many features of the property to explore. The Gardens of Houmas House Plantation are where the tour begins and ends, are a popular spot for photographers and

demand a leisurely stroll, at the pace demanded by a sultry southern afternoon. The gardens boast a lush 38-acres, dotted by fountains and statues, ponds and exotic plants. You’ll likely come to pass by the gardener if you stroll the right path, undoubtedly followed by one of the owner’s dogs. If you want to retire for the evening in the style of a sugar baron, you can spend the night at Houmas. A row of cottages is nestled along an alley of ancient oak trees with a view of the world famous gardens, the breeze from the Mississippi cooling the night air.

The Whitney property includes a restored “Big House,” in French Creole style, and is one of the best-preserved Creole plantation houses standing on River Road.

WHITNEY PLANTATION Opened in 2014, the Whitney Plantation is the only plantation museum that tells the story of the slaves of Louisiana.
