Build a Better Burger

What takes a hamburger from ordinary to OMG? Cam Dyer, owner, founder and chef of TheSmoke (thesmoke.ca) in Collingwood, shares his secrets. 1. THE BUN has to be up to the task. “It has to be soft and hold whatever juiciness is there without falling apart,” Dyer says. “It should be the same diameter as the meat, so that first bite isn’t just all bun.” 2. THE MEAT should have enough fat, so don’t use extra lean. “Use lean or medium, or a combination of those two,” he says, “so you get that juiciness.” 3. THE CONDIMENTS you choose are key. “In my opinion, mayonnaise is part of a burger — it has to be,” Dyer says. Four veggies — lettuce, fresh tomato, red onion and pickles (can be on the side) — are also recommended. Beyond that, it’s a matter of your own tastes, so consider cheese, bacon, jalapeños and the like. 4. THE TEMPERATURE at which you cook your burger is also important. You want very high heat, Dyer says, to really sear the meat and hold in the juices. Then salt and pepper your patty as you cook it…and bon appétit.

It’s the exercise so many of us love to hate — the squat. But this one move can tremendously increase lower-body strength, promote balance and lessen aches and pains. Do them wrong, though, and not only is your work in vain, but you could also make any balance issues or aches and pains even worse, says Robert Karpathios, owner and operator of Barrie’s True Strength Personal Training. Here is his advice on how to do a proper squat.

• Stand tall with your feet straight and shoulder-width apart. • Bend your knees while driving them apart as you sink your butt down between your heels, keeping your weight centred over your mid-foot. Keep your gaze forward and your chest up. • One you reach the bottom position, stand back up, keeping your chest up and knees out. “If you’re an absolute beginner with squatting, master the movement first using only your bodyweight, performing three to four sets of 20 repetitions,” Karpathios says. As you get stronger, add kettlebells or a barbell, or change up sets and reps. “Take the time to master this movement, always prioritizing perfect execution,” he says. “Your body will thank you.” truestrengthpersonaltraining.com

At White Cedar Dental Care in Barrie, dentists Dr. Zina Baraz and her husband Dr. Bashar Bashi wouldn’t have it any other way. “Our goal is to make sure patients are happy and have a great experience,” says Dr. Baraz, who has practiced dentistry since 2001. “We always invite new patients to come and have a tour of the office and a free consultation with two x-rays before making any commitment. We want people to feel comfortable so they can make an informed decision after seeing the office, feeling the atmosphere and meeting the dentist who will take care of them.” Over the past year, White Cedar Dental Care has added even more patient services to their wide range of family and cosmetic dental treatments. Skilled professionals deliver all services using the newest dental equipment and technology. New to the office is Cerec, a machine that creates a crown that can be made and put on the patient’s tooth during a single visit. “With Cerec, we eliminate taking an

impression of the tooth and only need one appointment,” explains Dr. Baraz. “The patient doesn’t have to live with a temporary crown. We prepare the tooth, take an individual digital picture of it, send it to the machine and the machine mills the crown. Then, we try it on in the patient’s mouth. We can forward the pictures to a lab if necessary. It’s a great service and our patients, especially the ones who have high gag reflex, really enjoy it.” Another new service appreciated by patients, and not available at many dental offices, is treatment under general anaesthesia. Since joining our team in July 2017, anaesthetist Dr. Lu has provided this sedation service for wisdom teeth removal as well as for treatments for children, kids with special needs, and people who suffer from anxiety. With years of experience, Dr. Lu is certified in advanced cardiac life support (ACLS) and paediatric advanced life support (PALS). “Dr. Lu is very kind and explains the steps that will be done,” says Dr. Baraz. “This service lets patients have treatments

in the office where the surroundings are warm and familiar rather than at a hospital. Parents can bring their children into the treatment room which makes it is easier for everyone.” Patients at White Cedar Dental Care can also choose to have treatments under conscious sedation such as intravenous sedation and laughing gas (nitrous oxide). Dr. Baraz will recommend a level of sedation to a patient based on their needs or according to parents’ wishes. After having laughing gas sedation, the patient can drive, go back to work or look after their children right after the appointment. “I offer laughing gas as an option because it is very safe,” Dr. Baraz says. “I use it myself and so do my kids. It is a good option for older children, but general anaesthetic works well for children who are very young.” A new technology making x-rays more comfortable for children, adults with small mouths, and those with a strong gag reflex is a machine that takes digital x-rays while circling around the patient’s head. This eliminates the need for a bulky sensor in the patient’s mouth. The technology also has less radiation and easily detects cavities between young children’s teeth. “Before, we couldn’t x-ray or visually see these cavities in children’s teeth until their mouths were big enough for the sensor,” says Dr. Baraz. “The cavities could get bigger and damage the tooth’s structure. Having this technology helps us diagnose children’s cavities at a much younger age.” Orthodontist Dr. Mir offers patients a choice of metal braces, clear brackets and the Invisalign system of teeth straightening. Patients can also get whiter teeth at the office for $99. Light activated whitening gel only takes an hour to create a whiter smile. Because many families refer other families to her office, parents often ask Dr. Baraz what treatment plan she would use for their children if they were her own. She always recommends a plan that is as simple as possible and includes only what is absolutely necessary. This makes treatment as easy as possible for the child. “Informing the parents, or an adult patient, about the options in the treatment plan is key,” explains Dr. Baraz. “Knowing there are options puts everyone at ease. We are blessed and honoured when a family refers another family or a patient refers a patient. We want to be sure we are taking care of every single person who walks into the office. Putting the patient first, doing the best for them and making them feel like family is our goal.”

n the forested lot that Jim Jamieson has considered ‘home’ throughout his entire life, the silence is tangible. A faint chattering of birds and the occasional fervor of chipmunks dashing through underbrush is barely noticed in the tranquility. Close by, the steady panting of fox red lab ‘Lucy’ distracts only because she is intent on capturing your attention. Her task is not an easy one because you are focused solely on the peaceful setting, the impressive two-storey cottage with timber-frame accents before you, and a slice of sparkling water seen through the trees. Thickness from the early September humidity settles in, but the generous shade afforded by the mixed forest keeps the air surprisingly cool on the driveway side of the cottage. On the lakeside, gentle breezes off Lake Muskoka combined with the same forested landscape offers comfortable spaces to take in the views. Jim surveys the Lake Muskoka property from his driveway under a canopy of trees. Dressed casually in a pair of shorts, t-shirt and ball cap, he talks about his family’s roots – not only in Muskoka, but on this very property. “When people ask me where my home is, well my home is in Muskoka. I live in Newmarket but my heart is here. There is a lot of sentimental attachment to this property,” he shares. The first time he was here he wasn’t even born. “My mom was pregnant with me through the summer. I was born in September, so basically I was here in the womb,” he laughs. That was more than 50 years ago, but even that half-century seems diminutive compared to his family’s history here.

Built in 1918, the original cottage was on a double lot purchased by Jim’s great grandfather in 1912. The large lot was severed in half in the mid-‘30s so his two daughters (Jim’s grandmother and great aunt) each had about 125 feet of frontage on the quiet bay. “I purchased it from my uncle in December 1988,” he recalls. “I did some renovations on the old building to bring it through to a couple of years ago, when we finally got serious about building a new cottage. I’d been thinking about doing it for probably 20 years.” The former cottage was torn down by the Muskoka Custom Cottages crew on Aug. 15, 2016 and the excavation started two days later. The family was able to move into the fourbedroom, three-level cottage, just shy of one year later. Fortunately, they were able to use the same setback from the water as the former cottage,

which is much closer than new builds on vacant lots in the area. The orientation to the water is also close to the 1918 cottage but the cottage, itself, is about two times the size with the main and upper levels currently completed. “The orientation for the site and the orientation of the cottage suited a walkout basement nicely,” notes Matt McCague, owner of Muskoka Custom Cottages, the builder chosen by Jim and Lynne after a long search. “So we designed the cottage with a beautiful walkout basement with a nice lakeside deck. Having that full-height basement walkout is always nice with the stone rear entry.” Future plans to maximize usage of this space are being considered by Jim and Lynne and in the meantime, the lower level acts as a nice conduit to get to the landscaped lake side of the property where they do much of their entertaining on granite terraces and a substantial

dock. On this side of the cottage, old-growth trees embrace the flagstone paths and patios that are just steps from the lapping of waves on the sandy beach. The modern siding of the cottage in light ‘pepperwood’ taupe, accented with mossy green trim, blends into the natural surroundings, making it barely visible to boaters. Inside, the post and beam style of the cottage is complemented by contemporary design elements. Back at the driveway, when you step through the knotty alder front door with side and transom windows, your feet reconnect with the same Rosseau granite highlighted by veins of pink that is prominent on the walkway leading up to the steps of the cottage. Its etched lines where stone meets stone are more rounded in the foyer than outside, to soften the look. Without thick grout lines, this

type of granite flooring shows true craftsmanship as it flows into the nearby powder room to blend the earthy feel with the modern pedestal sink and chrome fixtures. The main foyer also features a double pine closet with Shaker-style trim and built-ins that acts as storage for footwear and coats. From this vantage point, the sparkle of sun on waves can be seen through floor-to-ceiling windows in the Great Room. The warmth of Canadiana décor throughout the cottage, from cushions to light fixtures, pairs well with the reclaimed hemlock floors of varying widths and lengths that run throughout the main level, as well as the pine cathedral ceilings, and post-and-beam accents. Modern walls in ‘late wheat’ colour and straight-edged, floor-to-ceiling windows counterbalance the rustic feel of the Great Room. From an overhead beam that runs along the roof ’s peak, what looks to be a prop from an old plane engine is actually a fan that hangs in just the right place to not impede views from the second level while circulating the air. Accentuating one corner is a deep-red wood stove on the same scribed-stone hearth as the foyer. A functional heat source and sentimental piece from the former cottage, Jim and Lynne felt it was important to use it in the new cottage. Not far away, a framed black-and-white photo that depicts the homestead’s primal beginnings in 1912 sits on a delicate wooden table. “When they bought the property in 1912 it was probably a couple of years before they even stayed on the lot,” says Jim. “They’d come up basically two weeks in July, two weeks in August and pitched a tent. I think this was built a year or two after they came up and then in 1918 they started construction on the actual cottage.” Comfortable furniture with cosy blankets, plush cushions, and an ample area rug featuring a Muskoka setting make the Great Room a relaxed place to entertain. In a prominent space on the main level, between Great Room and foyer, is a significant

Sticky Jumbo Peach Shrimp INGREDIENTS: 2 cups of large shell on shrimp 6 cloves of garlic 1 tbsp Curry Rub (Metropolitan Chef- Barrie Olive Oil Co.) 3 tbsp Hot Pepper Peach Jam (Stonewall Kitchens - Barrie Olive Oil Co.) 2 tbsp Harissa Olive Oil 1 lime

DIRECTIONS:

Quickly pull the legs and tails off the shrimp. Using a non-stick frying pan on a medium heat. Peel and very finely slice the garlic, fry with 2 tablespoons of Harissa Olive Oil until crisp. Remove the garlic from the pan leaving the Olive Oil remaining in the pan. Stir the curry powder into the Harissa Olive Oil, then add shrimp. Sautee for 4 minutes, or until the prawns are cooked through, tossing regularly. Stir in the Hot Pepper Peach Jam and stir for 30 seconds, taste, season to perfection with sea salt and black pepper, then dish up. Toss the crispy garlic on the shrimp and finely grate over half the lime zest and serve with lime wedges, for squeezing over the dish.

staircase going from the main level to the lower, as well as to the upper loft space. The craftsmanship and smooth fir of the steps and handrails going upstairs, and the rustic hemlock on the steps going down, make this a focal point of the cottage, while not impeding the flow. “We featured the stairs,” agrees McCague. “They’re Douglas fir and we have the open risers so you get all that light going through the stairs to create more of an open look. It feels more open, more largess, than closed stairs.” Between the staircase going upstairs and the custom kitchen fashioned by Muskoka Custom Cabinets, a cosy nook was created within the wall to store and serve wine. Handcrafted in stained quarter-sawn oak, the centre complements the expansive kitchen island only steps away, and brandishes the same Cambria Hollinsbrook quartz countertop. The Mission-style, quarter-sawn oak on the body of the formidable island is clear coated to show off the natural wood and counterbalance the white rubbed custom cabinetry throughout the kitchen. At 40 inches by 80 inches, it’s an excellent place to entertain indoors. “The first gathering we had after we got possession, we put the appetizers on the island and everyone stood around it,” notes Lynne. “There were 14 people here and everyone just congregated around the island.” Pendant lights hanging by thick cords and consisting of bubble glass with exposed bulbs give it a modern, industrial look, while providing ambient lighting. MCC also created a double pantry for extra storage in the kitchen. A spacious dining area, large enough to accommodate a harvest table hand crafted by long-term friends of Jim’s, Munro’s furnishings in Barrie, that easily seats 12 has inspired views of the lake through large windows. Glass sliding doors in this area lead to an intimate Muskoka Room that shows off its post-and-beam structure. system allows easy closing of the screens during storms but most of the time, this room offers cool breezes from the lake. A grey vinyl cushioned floor feels nice on the feet. To add impact, the wall that is attached to the cottage boasts the same green siding with a white freeze board as the former cottage. It’s here where the sign ‘Annopacis,’ meaning ‘Year of Peace’ in Latin will be hung over the sliding glass doors to the dining area. The cottage has held this moniker since the original build in 1918. “I wanted to recreate the wall from the original building,” explains Jim, holding a photograph. “You can see the tongue and groove skirting at the bottom separated by a white freeze board and the horizontal siding, above, similar to the look of the new building.”

This popular room also leads out to the deck that stretches from this end of the cottage, past the kitchen and Great Room, to the other end where the master bedroom is. From the inside, the master bedroom can be found behind double pine doors, off the Great Room. This cosy space features a pine vaulted ceiling and views of the lake through sliding glass doors that lead to the main deck. A soft carpet in â&#x20AC;&#x2DC;shell beachâ&#x20AC;&#x2122; tone provided by Muskoka Carpet and Drapery in Gravenhurst, keeps it comfortable and warm underfoot in this room, while a heated tile in the ensuite continues the warmth. The weathered floorboard look of this grey porcelain tile offsets the more modern pale blue walls. The focal point of this washroom is a vanity handcrafted by Muskoka Custom Cabinets with the same Shaker-style doors and drawer fronts with bead board centre panel and wrought iron San Carlos-style pulls as in the kitchen. Also similar to the kitchen is the rubbed effect of the navy top coat of paint to show a black basecoat. The spacious Cambria Berwyn quartz countertop aptly holds a sunken squared sink and picks up the sparkle of the chrome fixtures that are found here, as well as in the stand-alone, seamless glass shower. Beside the vanity, a rustic barn door slides with ease to reveal a convenient laundry space with window to draw in light. One other room â&#x20AC;&#x201C; a comfortable guest room â&#x20AC;&#x201C; completes the main level, while their daughtersâ&#x20AC;&#x2122; two bedrooms and a guest bath can be found upstairs. This level features exceptional views from a vaulted loft-style hallway that overlooks the Great Room through to the lake. At the top of the stairs, an intimate landing features an overstuffed leather chair and canoe-inspired shelving unit. A transom window draws light into this niche to make it the perfect reading space. From here, the same neutral-toned carpet of the master bedroom provides warm texture underfoot throughout the upper level, except in the four-piece washroom where a brown-

Built in 1918, the original cottage was on a double lot purchased by Jim’s great grandfather in 1912. The Muskoka Room shows off true post-and-beam style and is one of the more popular spaces of the cottage, featuring great views and breezes from the trees.

toned porcelain tile is heated. Both spacious bedrooms on this level boast vaulted pine ceilings and transom windows over the beds as well as another window to draw in lots of light. Large closets with built-ins allow exceptional storage in these rooms. he Koenderman cottage was always a warm, welcoming place for friends and family. Tucked within mixed Muskoka forest and overlooking 215 feet of Little Lake Joe, the property has welcomed friends of Paul, Suzanne and their children Julianne and Aaron since 1987. From the time Paul helped build his parents cottage on Go Home Lake when he was 16, the high school sweethearts embraced the area as their second home. After they were married and had children, Suzanne’s career as a teacher afforded her and the kids the luxury of spending every summer at the cottage while Paul drove up every weekend from Kitchener. “We’d been going up to Muskoka basically our whole lives and then in 1987 we bought a cottage on Little Lake Joe and loved it,” recalls Suzanne. “The kids had lots of gangs up there. They brought high school friends, college friends – it was just a place of happening. Our kids both worked at Clevelands House when they were teenagers.” The setup was perfect for their needs so she was surprised when Paul came home from a Calgary trade show several years ago and told her he wanted to build a log cottage. “We hadn’t decided we were building a cottage or anything and he came back and said, ‘I have seen the most incredible cottage that we should build. It’s a log one.’” The cottage that had such an impact was an impressive True North Log Home boasting classic post-and-beam design with slow-growth white pine walls. As an engineer, he also valued True North’s technology that ensures tight joints and zero air infiltration. “I said, ‘Oh, a log one. I’m not sure I want a log cottage,” says Suzanne with a laugh, remembering her thoughts going to a drafty little cabin. 34 | GoodLife Barrie Edition May June 2018

This 6,485-square-foot log cottage on Little Lake Joe replaced a smaller cottage that the owners had since 1987.

“We’re skiers and when you go out west skiing you just see more of the round log look. We wanted it to look more ‘ski lodge.’” But once they met CEO Rob Wrightman and his son Kyle at their headquarters in Bracebridge, and they explained the True North Log Home system, and showed them photos of recent builds, she was just as enthusiastic as Paul. They planned to tear down their cottage and build their dream right there on Little Lake Joe to continue making memories. The plan they chose was loosely based on the Citadel 1 and 5 designs, but Paul had them implement many of his own design ideas. “It was his dream,” says Suzanne. “He put a lot of time and effort into this building. It was his dream cottage.” Sadly, Paul was killed on the way to the cottage, about two years ago, when a truck tire flew off and hit his SUV. He never did get to enjoy the finished building. But his spirit and ideas are captured in many of the unique details of the seven bedroom, five-and-a-half bath cottage and matching 3,234-square-foot detached garage with upper guest quarters. His desire to capture the essence of a ski lodge out west with rounded hand-hewn posts and beams was perfectly executed by the craftsman that True North found to do the job. These bucolic curved timbers offer structural support and beauty with the pillars that support the porch roof, the porch handrail and those on the second-level balconies, as well as the timber-frame design in each dormer. “They were all hand hewn; Paul insisted on that,” says Suzanne. “He thought the look was just majestic. It was cosy yet grand looking. 36 | GoodLife Barrie Edition May June 2018

We wanted it to look more ‘ski lodge.’” Once inside the main double doors to the cottage, in the open foyer, views of Little Lake Joe are taken in through three expansive walls of windows in the Great Room. The two levels of windows, from floor to vaulted ceiling, allow sun to drench the room with sunlight. A double door of glass with transom window above leads to the deck that spans the width of the cottage, facing the lake. “The original design didn’t have those windows right up to the top,” notes Suzanne. “It looks like a staircase going up with the windows. That was Paul’s idea to bring in lots of light.” The tri-prow front, along with the white pine ceiling and log walls on either side, creates an intimacy not easily obtained in such a grand space. Distressed hickory floors run through this room and throughout the entire cottage. Part of this ambiance can also be attributed to the floor-to-ceiling granite fireplace that anchors the space on the left side of the room. Handcrafted from granite with whispers of pink from the nearby Rosseau quarry, the structure is as much a work of art as it is a functional wood-burning fireplace. Two thick maple logs protrude above the Rumford firebox to balance a substantial maple mantel. This, and the mantel on the granite fireplace in the lower level were made from a favourite maple tree on the property that had to be felled. Another one of Paul’s ideas.

The octagonal room off the kitchen is a favourite place for the grandkids to play and watch TV. The round wooden table is a takeaway from the former cottage and was kept for the kids to paint and eat and bang away on it. The ceiling in this room is vaulted with exposed structural beams and a kingpost. Across the room, a corner between the Great Room and dining area showcases meticulous craftsmanship in a military sculptured dovetail design. This log joinery is also featured at the corner of the main foyer and hallway to the master suite – two of four such structural elements in the cottage. To enhance the stone of the wood-burning fireplace and counterbalance the warmth of the pine walls, Suzanne chose a dark blackish-grey colour for the upper walls and the open loft. With access from the main foyer via openstyle log stairs, the loft overlooks the Great Room and lake through the windows. A large common area beneath the sloped ceiling of a large dormer creates a nook for reading – or in the grandkids’ case, practising plays and doing puzzles. This area joins four bedrooms – two each at the end of a hallway that runs between the open space and log banister – that are at

angles to one another. “Paul wanted those bedrooms angled like that because he didn’t want a big square wall there,” notes Suzanne. “This way, there’s an alcove area and you kind of walk into your bedroom that way.” Each bedroom on this level has vaulted ceilings and its own private balcony through large double glass doors. One has its own ensuite; two are joined by a Jack-and-Jill washroom and the fourth has inside access to the main bathroom on that level, which also has a door into the communal space. Back downstairs, on the main level, the Great Room opens to the spacious gourmet kitchen and dining area that overlook the lake. Handcrafted cabinetry swathed in dark green with a black wash makes the pine walls and ceiling stand out, while a centre island and nearby beverage station antiqued in creamy

The granite countertops are striking with ribbons of white, grey and pink that draw in similar colours from the fireplace stone. “This is a fabulous kitchen. I like this kitchen better than my house kitchen,” she jokes. Church also handcrafted metal exterior light fixtures with the shapes of animals on either side of every exterior to a balcony or deck. And, he created the elaborate metal chandelier that hangs from the structural kingpost in the octagonal room off the dining area. A high vaulted ceiling in this room highlights the intricate structural system along with the beauty of white pine beams. Completely enclosed in walls of glass, this comfortable space is reminiscent of a treehouse with the surrounding forest, and offers exceptional views of the rugged and treed landscape that slopes to the cedar dock that stretches out into the bay. It also acts as a TV and play room for the grandchildren. A second octagonal room is featured right below, on the lower level, for a ground view of the surroundings and another place to gather. With five grandkids, children Julianne and Aaron, and many friends and family, the Koenderman cottage continues to be filled with love and laughter, just as it was when Paul was alive. This Christmas saw 18 people share the space and in the summer itâ&#x20AC;&#x2122;s not uncommon for the cottage to be filled with guests. Which is why the master suite, tucked behind the fireplace of the Great Room, is a nice oasis for Suzanne to retire to at the end of a long day. Soothing grey on one wall marries well with the rustic Douglas fir beams that run perpendicular to the white pine on the ceiling. An over-sized double glass door, framed in pine with a transom window above, lead to a private covered area of the main deck that overlooks Little Lake Joe. Four other windows bathe the room in light. Boasting taupe and grey tones, the master ensuite features a handcrafted dark grey double vanity with generous space around each rectangular sink, a marble countertop and antiqued bronze fixtures, which are also featured in the large seamless glass shower.

The ceramic tile on the floor and in the shower matches well with the hues of the vanity counter. hen Lindsay and her husband bought her parents’ home in Thornton, Ont., 10 years ago, a main floor renovation was not in their plans. Sure, the kitchen was tiny and the adjoining dining and living rooms were underused — until the couple’s two hockey-playing children used them to store their hockey bags. However, clean lines, warm accents and lots of light in their home were not a priority. That all changed last year. “Basically, it still didn’t feel like my home,”

Lindsay says. She enlisted the design skills of Celeste Pilon of Total Living Concepts in Springwater to redesign the house’s central living area. “I had my own vision that was totally different from the existing main floor. We wanted to open it up and make it a lot brighter. After the wall came down, the whole space was flooded with light from windows facing the backyard.” To increase the brightness, they installed double sliding-glass doors from the kitchen to the deck. The result is a beautiful view of the woods in the family’s

backyard and over to Blue Mountain. Pilon learned about the family’s lifestyle in order to design the renovation according to how the space would be used. The couple wanted a contemporary look with a neutral palette, plus cozy, rustic touches to complement their forest view and satisfy Lindsay’s fondness for fireplaces. Cultured stone from the home’s existing corner fireplace was recycled into a floor-to-ceiling surround for a new gas fireplace centred between two large windows.

The couple wanted to trade their dated interior for a modern look witha neutral palette.

“We have the fireplace going most evenings and it heats the whole floor,” Lindsay says. “I told Celeste I wanted a fireplace that would be a centre focus in the house. When people walk in the front door, their eyes are drawn to the fireplace.” Looking at the renovated main floor’s chic open-concept living area, dining area and kitchen, it is difficult to imagine the space was ever divided into four rooms. Crown moulding and espresso-toned engineered wooden flooring throughout unifies the space. Comfortable couches in the living area are the only pieces remaining from the original main floor. A broad dark wood cabinet, designed and created by Total Living Concepts, stretches beneath a wall-mounted flat-screen television. Cabinet doors lined with speaker fabric hide cables and boxes while allowing operation of remote controls. The custom cupboards also serve to tuck away the kids’ games and toys. Beside the living room, a tall bay window frames the dining area and its rustic-style dining table and benches. The furniture was handmade by Beeton Barn Board using recycled wood from Ontario century barns and homesteads. The builder thoughtfully carved the family’s last name into the one side of the table, ensuring it will become an heirloom. Next to the table, a wine storage cabinet holds ready cheer for dinners, while a glassed-in section showcases family mementos and treasures. Lindsay credits Pilon with pulling together a look that made the space perfect for her family. The renovation has also made the couple’s home the go-to place for celebrations and holidays with extended family and friends. GoodLifeMagazine.ca | 47

“Celeste was very good at helping me pick out everything,” Lindsay says. “I had an idea of what I wanted, but without someone to run ideas by and put everything together, it’s difficult. We wanted a contemporary look with a bit of rustic and Celeste really helped us achieve it.” Pilon used her designer ingenuity to find space in the kitchen for an innovative walk-in pantry. “The family originally had a dining area in the kitchen, so the dining room became a space they weren’t sure what to do with,” Pilon says. “The kitchen wasn’t satisfying the needs of the family because it didn’t have enough space. Lindsay was using a closet behind the laundry room as a pantry, but she really wanted one where the kids could go in and grab their snacks and make their lunches.” That problem was solved when Pilon created a walk-in pantry from the kitchen’s former entrance, now part of the room’s far wall. A power room was relocated and enlarged as part of the laundry room renovation that included a row of hooks for coats, a storage bench and a separate ventilated room for storing hockey equipment. A discreet pocket door separating the room from the rest of house is appreciated before equipment-washing day. Access to a family-sized wooden deck, complete with barbeque, inspired the placement of a convenient and stylish beverage centre between the laundry room and main kitchen. The sleek centre features a quartz counter, natural stone backsplash, wine refrigerator, recessed sink and plenty of white wooden cupboards in the same Shaker style as those in the kitchen. “We wanted to keep the beverage centre away from the kitchen’s working area so that

home | House Tour when friends or family were visiting, they wouldn’t be stepping in the way of whoever was cooking,” Pilon says. “Because the centre is next to the deck door, people can easily come inside and make their drinks or whatever they want.” The kitchen was designed to accommodate quick weekday breakfasts and leisurely family lunches on the weekend. Faux candles illuminate a pair of large modern black metal light fixtures from Union Lighting in Toronto. The look is repeated in the dining area’s chandelier from Wayfair.ca. Pot lighting and audio speakers are recessed into the kitchen’s ceiling. The wide quartz-topped island comfortably seats diners on bar stools across the front and on chairs at an attached drop-down dining table for four. Electric outlets and USB ports installed beside the table make it a great place for the children to do homework. The chefs of the family are well equipped with a six-burner Thermador gas stove and stainless steel sideby-side refrigerator and freezer by Electrolux. “I’m so glad we had a pot filler put in above the stove,” Lindsay says. “It’s very convenient when you are making pasta or anything that requires water. When we first got the stove, it looked complicated but it is actually simple to use. My 12-year-old cooks on it now.” The kitchen’s clean-lined white Shaker-style cabinetry combines contemporary looks with a nod to the past, echoing the style of the rest of the new gathering area in this home. The cabinetry and its colour were chosen for its longevity as well as its good looks. “I knew I wanted a white cupboard with a dark island,” Lindsay says. “I wanted something that was simple. A white kitchen is timeless.”

pened in January, Chillz Lounge is downtown Barrie’s newest dessert bar and craft cocktail lounge. “It’s an intimate setting where you can relax with your partner, date, family or friends and indulge,” says Teresa Woolard, who owns and operates the 26-seat lounge with her husband, Mark. “With over 40 desserts, various craft cocktails and a beer and wine menu, our motto is to expect the unexpected.” Over Taj Masala tea lattes, Goodlife recently sat down with Teresa, who won the 2018 Barrie Chamber of Commerce’s Women of the Year - Entrepreneur Award, to discuss the delicious business venture.

You’ve had Swirleez, a fun self-serve frozen yogurt shop on Barrie’s waterfront, for the past five years. What led you to open Chillz? We opened Chillz to complement Swirleez. Swirleez is hugely successful. It offers the best frozen yogurt around and serves about 80,000 customers a year, but all in the warmer months. Because it’s so seasonal, we were looking for something that could operate 12 months a year to make it more sustainable. We can also draw upon Swirleez ingredients and staff for Chillz, so it made sense. You’re catering to two completely different demographics. That’s right. Swirleez is a more family-friendly, self-service kind of place, while Chillz offers more of a luxurious sit-down adult setting with alcohol. I felt that Barrie was in need of a really good dessert and coffee place. They enhance each other, but offer completely different experiences.

The decor is super trendy and features a hammered-copper bar, upscale funky furniture, a fireplace and Bencore LED lighting. Can you tell me about your design vision? We wanted a modern, upscale and sexy decor with clean lines. Luis Méndez of LM Design helped us and it came together beautifully. There are lots of windows, so during the day the place has a real coffee shop feeling, but at night, it has a cool and trendy look because we can dim the lights. Can you explain your motto: expect the unexpected? When you enter Chillz, it’s more than people would expect. There’s a real wow factor. From our modern decor, to our menu, which is basically an encyclopedia of desserts, people are won over. The attention to detail, from the way we plate our desserts, to our cocktail menu and the service we provide, is appreciated by our customers. People are saying that it’s a little piece of Toronto in Barrie. Along with desserts, the menu includes signature tea lattes, specialty coffees, craft cocktails, hors d’oeuvres, local craft beer and wine. Is that correct? That’s right. I should also mention that the beer we serve is from Barnstormer. I want to hear more about those fabulous 40-plus desserts. Along with various crepes and waffles, we offer parfaits, sundaes, fondues, cheesecakes, tiramisu, creme brûlée and more. We also have our own line of signature frozen desserts that are to die for. Our signature desserts are basically four textures in one. Take my favourite, hazelnut heaven: It’s a caramel latte centre surrounded by Swirleez hazelnut gelato enwrapped in a vanilla mousse, and then topped with a hazelnut crunch coating. There are four textures, so biting into it is a real taste sensation.

What are your top selling items? Everything sells really well, but some of our most popular items include the fondues and New York-style cheesecakes. Let’s hear about the fondues. Our fondues are really fun and they’re super popular. It’s an experience that brings the campfire indoors. We make them with highquality Belgium chocolate and serve them with five dippers — sliced bananas, sliced waffles, strawberries, Two Bite Brownies and marshmallows. It’s a great date-night experience, or a fun thing to order for families. Do you have options for diners with special dietary needs? Absolutely! When I first went public with the Chillz idea, one of the first thing people mentioned was to have vegan and gluten-free options. I took their advice and made that

happen. We offer an entire page of vegan desserts, including a chocolate avocado parfait. All of our vegan desserts are made by a local nutritionist. We also have gluten-free treats, including a fabulous chocolate torte that people love. For diabetics, we have a delicious refined sugar-free brownie (made with maple syrup) that clocks in at 110 calories. Let’s hear about the craft cocktails. We have 11 signature cocktails on our menu with more to come. Some of our most popular drinks are the chilly chocolate martini, the salted caramel martini, the espresso martini and my favourite — the wild berry mojito. Our general manager, Ryan Megson, is super creative and is a real craft cocktail guru. He even makes his own vodkas and syrups. For example, our Jolly Rancher Icicle is made with his Jolly Rancher-infused vodka.

Espresso Martini (recipe by Chillz) 1 oz vodka 1/2 oz Kahlua 1 oz espresso 1/2 oz cherry syrup Garnish: maraschino cherry Glass: martini Place all ingredients in a shaker. Add ice and shake vigorously. Double strain into a martini glass. Skewer maraschino cherry and rest on the glass rim. Makes one cocktail.

Chillz tea and coffee is also pretty tasty. Can you expand? We have eight luxury tea lattes, and our coffee is really good. I’m a bit of a coffee snob, so I did tons of research before deciding upon a coffee maker and specialty beans. I’m a trained barista and so is my general manager, so we take our coffee pretty seriously. What’s on tap for the summer at Chillz? At the end of May, we hope to open our new 24-seat patio. It will feature luxurious outdoor furniture and have a European flare. It will be a very happening spot. In fact, I’m thinking of having a jazz saxophone player out there. To further complement the patio experience, we’re introducing a new warm weather drink menu that showcases rosé wines, sangrias and plenty of interesting and refreshing summertime cocktails. Any other interesting future plans? We’re looking into all sorts of things, such as franchising and getting into the wedding business with our individual signature frozen desserts. We’re also developing a layered gelato cake to serve and sell as a take-home item. Finally, we’re going to be adding more alcohol into our desserts for people who are looking for something with that extra zing. What’s your favourite part of Chillz? It’s a pretty great atmosphere! With grilling season upon us, and so much great produce to choose from, who doesn’t feel inspired to cook up something new? These four recipes fit the bill for simply delicious dining alfresco. Bonus: They are easy enough for every day but decidedly company worthy, too

ASPARAGUS AND TOMATO TART ½ 450 g pkg frozen puff pastry, thawed ½ pkg artichoke dip (I used artichoke and asiago dip) ½ red onion, thinly sliced into rings 16 asparagus spears, ends trimmed and stems sliced in half lengthwise 1 tbsp olive oil ¼ tsp salt 1 cup grape tomatoes 1 tbsp balsamic glaze Preheat oven to 400°F. Roll out puff pastry and place on a parchment-lined baking tray. Spread artichoke dip over pastry and top with separated onion rings. Coat asparagus with oil and salt, then arrange over pastry. Layer tomatoes overtop. Bake on bottom rack of oven for 20 minutes. Remove and allow to cool on a wire rack. Drizzle with balsamic glaze (or a reduction) before serving. Makes 4 servings.

LOADED STEAK SALAD BOWL WITH CILANTRO DRESSING STEAK: 1 large or 2 small boneless ribeye steaks 1 tbsp olive oil 1 tsp Montreal steak spice 1 clove garlic, diced 4 basil leaves 4 mint leaves DRESSING: 1 cup cilantro leaves (stems removed) 6 to 8 large basil leaves 6 tbsp olive oil 3 tbsp red wine vinegar Â˝ tsp salt SALAD: 4 cups greens (baby romaine and mixed greens) 2 peaches cut into wedges 1 avocado, cut into chunks 1 cup cherry tomatoes, halved 1 tbsp hemp hearts

Place steak in a bowl or ziplock bag with oil, garlic, steak spice, basil and mint leaves. Let sit at room temperature for 30 minutes. Heat barbecue on high. When hot, grill steak for 4 to 5 minutes on one side, then turn over and grill another 4 to 5 minutes. Allow steak to grill again on each side, rotating the direction to get crossed-grill marks. Remove and slice thinly when itâ&#x20AC;&#x2122;s cool enough to cut.

To make the dressing, combine cilantro and basil leaves. Add oil, vinegar and salt. Using a hand blender or food processor, blend until combined. Arrange all of the salad ingredients in a large bowl. Place steak over salad and drizzle with dressing. Makes 4 servings.

GRILLED OCTOPUS 2 medium-sized octopuses (about 1 lb each) Â˝ tsp dried oregano 1 tbsp olive oil 1 clove garlic, diced 1 lemon salt, to taste 1 tbsp fresh chopped parsley Bring a large pot of water to a boil. Add octopuses and boil for 40 minutes. Remove and let cool for about 10 minutes. Remove the head from the tentacles by cutting off two tentacles at a time.

Combine oregano, oil and garlic in a bowl. Add octopuses, stirring to coat, and let sit until grill is ready. Heat barbecue on high. When hot, grill each octopus for 1 to 2 minutes. Turn over and grill again for 1 to 2 minutes. Remove from heat and place on a dish. Top with freshly squeezed lemon juice and sprinkle with salt and parsley. Makes 4 servings.

MANGO TRIFLE TIRAMISU juice from 2 oranges 1 oz Malibu coconut rum (or white rum with 1 tsp coconut extract) 5 small or 3 large mangoes 4 eggs, separated 5 oz whipping cream (35%)

6 tbsp sugar 1 tub mascarpone cheese (leave out at room temperature 1 hour before using) 2 sleeves ladyfinger cookies shredded coconut In a bowl, combine orange juice and coconut rum. Set aside. Peel and finely dice all but one mango; purée remaining mango and add to diced mangoes. Set aside. Beat egg whites until stiff peaks form; refrigerate. Beat whipping cream until stiff and refrigerate. Combine egg yolks and sugar and beat until creamy. On medium to low speed, add mascarpone cheese and combine until smooth. Using a spatula, fold in egg whites and whipped cream. Start layering: Set out eight to 10 dessert cups. Cut cookies into small pieces, dip each into juice mixture and arrange a portion in bottom of dessert cups. Top cookies with some diced mango, followed by coconut. Spread a few tablespoons of the cheese mixture overtop, smoothing with the back of a spoon. Repeat the cookies, mango and cheese layers, and top with more diced mango and shredded coconut. Makes 8 to 10 servings.

pita bread In a bowl, place the lemon juice and zest, olive oil, garlic and oregano. Blend with an immersion blender to create the marinade for the pork. Add the pork to the bowl and stir to mix thoroughly. Place the pork and marinade in a plastic bag and seal, removing as much air as possible. Let the pork marinate for 6 to 12 hours. Prepare the wooden skewers for the grill by soaking them in water for half an hour before preparing the souvlaki. Preheat the grill to 400°F. Once you have reached this temperature, turn off one side of the grill to create an indirect heating area. Cut the vegetables into chunks similar in size to the pork cubes, then start creating the skewers by alternating the vegetables and pork on the skewers. Season the skewers with salt and pepper and drizzle the left over marinade over the top. To grill the souvlaki, start with the skewers on the flame. Once you have created nice grill marks on each side, check the temperature of the meat. If it is below 155°F, place the skewers on the other side of the grill to finish cooking over indirect heat. The total cooking time should be approximately 12 to 15 minutes. Serve immediately with your favourite pita bread and tzatziki. Makes 4 to 6 servings

Strawberry Parfait 1 lb strawberries, sliced 1 pkg lady fingers,’cut into 1” pieces 1 cup crème fraiche 1 container of vanilla ice cream (such as Belly’s 16 Vanilla Bean) 2 oz Grand Marnier 1 tbsp honey In a bowl, mix together the crème fraiche, Grand Marnier and honey. In each parfait cup, place a scoop of the vanilla ice cream. On top of the ice cream, layer the sliced strawberries, crème fraiche and lady fingers. Top the lady fingers with more strawberries and a final dollop of crème fraiche. Makes 4 to 6 servings

Tzatziki 2 cups full-fat Greek yogurt 2 small cloves garlic, minced 1 English cucumber 2 tbsp fresh lemon juice 1 tbsp best quality olive oil salt and pepper Line a fine mesh sieve with paper towel or cheese cloth and place the yogurt in the sieve. Let the water drain for 30 mins. While the yogurt is draining, grate the cucumber, squeezing out any excess water. Once the yogurt has drained, mix in the cucumber, garlic, lemon juice, olive oil and season with salt and pepper. Lemon Potatoes 1½ lbs mini Yukon Gold potatoes 1 lemon, juice and zest 2 cloves garlic, minced ¼ cup olive oil, plus extra for the potatoes 2 tsp fresh oregano salt and pepper Preheat the grill to 400°F. Mix together the lemon, olive oil, oregano, garlic, and season with pepper. Set aside until the potatoes are finished grilling. Coat the potatoes with a little olive oil and salt, then place on the grill and cook over indirect heat for approximately 30 minutes, until the potatoes have a crispy skin and are soft and creamy inside. Place the potatoes in a bowl and toss with the dressing. Cover the bowl and let the dressing sink in to the potatoes for about 15 minutes before serving. Makes 4 to 6 servings

Watermelon Feta Skewers ½ a watermelon, cut into 1 ½” chunks 2 lbs feta cheese, cut into 1 ½” chunks 2 limes 2 sprigs of mint, destalked and chopped 1 tbsp olive oil salt and pepper wooden skewers

Place the watermelon and feta onto the skewers, taking care not to crumble the feta. Once the skewers are finished, drizzle with the olive oil and squeeze the lime over the top. Sprinkle the mint on top and season with a little salt and pepper. Makes 4 to 6 servings

& Avocado Salad 2 lbs shrimp (41 count), raw with shells on 4 cups water salt 2 avocados ½ cup cilantro leaves 1 lime, juice and zest 1 tbsp honey splash of your favourite beer (try Muskoka Brewery’s Detour) ¼ cup olive oil salt and pepper

In a large skillet or saucepan with a lid, bring the water to a boil and season with a big pinch of salt. Once the water has boiled, remove from heat, add the shrimp and cover. Let the shrimp cook in the hot water for 10 minutess. Once they have finished cooking, rinse the shrimp under cold water to stop the cooking. Pat them dry with a clean tea towel or paper towel. Cut the avocados into 1-inch dice and place in a large bowl. Add the cooled shrimp and cilantro. Combine lime, honey, olive oil, beer, salt and pepper in a bowl, then pour over salad, toss and serve. Makes 4 to 6 servings

Line of Fire Love a barbecued steak but worry about those char lines? Fair enough: Research has shown that the charred exterior (and well-done interior) of the meat is loaded with heterocyclic amines (HCA), a known carcinogen. Indeed, back in 2009, a study found that people who ate their steaks very well done were 60 per cent more likely to develop pancreatic cancer than those who liked theirs rare. You can reduce the risk by avoiding barbecue flare-ups or by grilling over indirect heat. But the tastier way to keep your steak safe is to marinate it. A 2010 study found that adding rosemary to meat before â&#x20AC;&#x2122;cueing it reduced HCA by up to 90 per cent. Researchers chalked it up to the herbâ&#x20AC;&#x2122;s antioxidants. However, garlic, onion, tart cherries and honey also seem to block the chemical from forming. The takeaway: Marinade is your friend.

Beach Body Tricks GET BUFF FAST WITH THESE 5 EASY STEPS BY PATTI VIPOND

When the calendar clicks over to spring, Ontarians gleefully shed their mitts and parkas, revel in being boot-free and begin to dream of summer days at the beach. However, if hibernation was your main activity during winter, your body may be less than beach worthy right now. Summer is within sight, so how can you buff up fast? Personal trainer Dave Fraser, owner of Core Evolution Fitness (coreevolutionfitness.ca) in Barrie, helps men and women achieve quick pre-summer shape-ups as well as create long-term healthy habits. Here is his expert advice.

Eat every 2 to 3 hours to shed pounds fast.

Focus on eating whole foods.

Enjoying a small meal or snack every two to three hours during the day gives your body a consistent level of insulin that lets it use energy steadily instead of storing it as fat. “Really big meals send your insulin levels way up high,” Fraser says. “Then they drop and you’re hungry again. Instead of two or three big meals, eat five small meals so your body can use all the energy you give it. If you have a massive dinner, your body has extra energy. You aren’t active at night, so you body stores that energy as fat. What you want to do is feed your body just enough to cover your activity levels so it’s energy in, energy out.” Watch out, too, for what he calls “mindless eating.” For example, someone brings doughnuts to work and everyone eats them because they are there — not because they are hungry. “You should be eating for a purpose,” Fraser says. “Your body is like a Ferrari. A Ferrari is a very fine machine, but if you keep abusing it, it’s not going to run very well for you.”

You really are what you eat, so nourish your body with energy from whole foods instead choosing refined, processed or deep-fried foods. Whole foods are in their natural or closeto-natural state and include fruits, vegetables, legumes, grains, seeds and nuts. Begin by trying to make one better-food choice each day. “Instead of having a giant burger and fries, have a salad or a chicken breast with veggies on the side,” Fraser says. “Making small food choices like that daily is the quickest way to make the most changes fast. People always look at what they have to give up, but not at what they have to gain.” He points out that if you want your body to look fit, you have to make changes. You can’t, for example, train effectively on a bad diet. “If you are piling in bad energy like fats and grease, your body just stores it,” Fraser says. “Also, whatever you put into your body during the day is what it uses at night to repair and make you stronger. It’s the little choices you make everyday that will give you better and better results.”

When people ask Fraser how to look good fast, he tells them to get active, start eating properly and eliminate or reduce alcohol consumption. Not only is alcohol high in empty calories, but it also encourages bad food choices — think beer and cheese-laden nachos. Also stay away from the sugar-fuelled calories in fruit juices, energy drinks and pop. “In summer, there are barbeques and a lot of social activities,” says Fraser. “You don’t have to give up alcohol, but you have to be mindful of it. Start to make little changes. Instead of having four drinks, have two. Fruit juices are wasted calories, so drink water or herbal tea instead. I know water is kind of boring, but it can make all the difference. It flushes your system and gets everything working properly.” Once you do this and see results, it becomes even easier to eat better and reduce alcohol, juice and pop.

Exercise your whole body. Even if you are focused on getting a better butt or toned abs, exercising your whole body through workouts, sports or aerobic activities is the most effective way to achieve your beach body. “People want to spot train, but your whole body needs to be worked on,” Fraser says. “Changes aren’t going to happen overnight, but they can happen in three to four weeks, and moreso in eight weeks, if you are strict about doing the right things.” Don’t be surprised if your mind starts to change along with your body. “When you exercise, hormones are released that make you feel good even if you are not in the best shape,” he says. “I recommend an hour of activity four or five times a week. Play a sport, go biking or hiking, run, or go to the gym and do weight training or high intensity interval training.” If you feel uncomfortable in a gym, work with a trainer to make a fitness plan for your goals. For strong abs, do crunches, planks, ab rollouts, reverse crunches and oblique mountain climbers. To tone your legs, do squats, sumo squats, deadlifts and lunges. Firm up your arms with bicep curls and tricep extensions.

While many people find it difficult to sleep on an airplane, what with all the commotion and tight quarters, there are ways to make it easier. For those of you boarding at midnight, getting up at zerodark-hundred to fly to the beach or settling in for 14 hours or more, here are 10 things to consider. BY DOUG WALLACE

Choose a window seat so you can really hunker down and get some rest without having your arm and shoulder bumped by anyone travelling along the aisle, and no one asking to be let out to the washroom. Select your seat as far away as possible from the galleys, which can be quite noisy; the bathroom lineup, which is just too gawky; and the bulkheads, where the parents with infants tend to be seated.

Keep in mind that the very back row and the row in front of the exit-door row may not recline.

Put all carry-on luggage in the overhead bin, leaving the space under the seat in front of you free for just your feet. Take off your shoes and put on the comfy socks they give you (or bring your own). Those feet are going to swell no matter what.

Make sure your seat belt goes overtop your blanket, so flight attendants don’t have to wake you up to make sure it’s done up in the event of severe turbulence. A neck pillow and earplugs go without saying, but throw on an eye mask as well.

Keep sleep aids simple — melatonin, Gravol — particularly if you don’t want to be loopy while passing through customs. Consult your pharmacist before you take any over-the-counter medications. Stronger sleeping tablets should be reserved for super-long flights and must only be taken under the advisement of your physician.

Limit or, better, avoid alcohol, which only makes sleep more fitful.

Tell yourself, “It’s currently 1 a.m. where I’m landing. I should get to sleep now.” The power of suggestion often works. The whole key is to adapt as quickly as possible to the time zone you’re visiting, so you may as well start on the plane. This may require breaking with the airline’s in-flight service routine, skipping the meal and going right to sleep immediately upon takeoff.

It’s a bit surprising, considering where I am — a press trip to the Hilton Los Cabos Beach & Golf Resort. This sprawling, 375room hotel overlooking the Sea of Cortez is home for a few sunny days — and a welcome relief from the Canadian winter. Here, our group of seven gets to enjoy high-end (but no-attitude) dining in three of the property’s six restaurants, a blissful eternity pool, peaceful walks on the nearly vacant beach and multiple ways off-resort to take in the vibrant culture of Los Cabos. How could anyone staying here be anything but chillaxed? Well, if you brought with imminent deadlines, missed your connecting flight from Chicago to San José del Cabo and thus wound up spending five hours taking in the delights (not!) of O’Hare International, and, thanks to a Canada-based technical glitch, have been unable to fix layout problems in a magazine nearing its press date, you might feel a little less than Zen. But as I soon found out, I was in exactly the right place to remedy that and reconnect with what matters.

Every spacious room in the elegantly understated Hilton Los Cabos boasts a magnificent ocean view. The sea is a bit rough for swimming, but the infinity pool (and the top-notch pool-side service) definitely makes up for it.

Gloria seems to have picked up on the stress behind my smile. Through spa director Adriana Tello, she tells me that while my body is in Mexico, my mind is everywhere but. I have to learn to be where my body is and to be open to the energy of the Earth around me. The jaded journalist in me would have been quietly dismissive, but as she “heals” my aura with a bundle of herbs, which we then burn, I actually feel an odd lightness come over me. Maybe there’s something to this stuff after all. And with that, I decide to open my mind to this experience and the other wellness activities on this trip’s agenda. Call it an experiment in positivity. Unbeknownst to me, the experiment had actually launched earlier — the first morning at the resort the day before, when we all took part in a painting class. The

instruction was “paint how you feel.” I felt woefully inadequate as a painter, but Tello spoke soothingly about how our own inner dialogues trip us up or cut us off from fully experiencing our lives. I listened, painted, and the resulting waterscape was better than any visual art I’ve attempted. How is it that letting go is actually the route to reconnecting? Despite that experience, and Gloria’s insights, I still have to remind myself to turn off my hamster-wheel brain at the outset of a treatment at the resort’s world-class eforea spa. During the 80-minute, locally inspired Nohult Detox Cure, I am exfoliated with chia seeds, slicked with a body mask and wrapped in a warm cocoon. After rinsing in a multi-head shower in the treatment room, I am massaged from head to foot. Deadlines? What deadlines?

To reinforce this relaxed feeling, I walk along the rugged shoreline. The sand is quite coarse and the ocean is generally too rough for swimming, but aside from another couple of beach walkers, the area is beautifully deserted. I wind my way along the shoreline, weaving around dramatic rock formations, breathing deeply and listening to the calming roar of the tide. There is something undeniably grounding and restorative about walking barefoot in this raw, powerful display of nature. The day’s pièce de résistance? A spainspired dinner in the same fragrant courtyard where my aura cleansing had taken place. Every mouthful — from the sushi served on stones used for hot-stone massages (cold, in this case and, yes, cleaned) to the chicken mole to the variety of sweets (lemon verbena, Papantla vanilla,

salty caramel popcorn) on the four-tiered dessert display — is bursting with fresh, local flavour. Later, in my spacious room, I sleep better than I have in years. The group opts for a change of pace the next day and we head out to an organic farmers’ market in the city. Here can you find not only fresh produce and homemade salsas and condiments, but also local art, jewellery, even a bouncy castle for visiting kids to play in. We then all head for a stroll along Marina Puerto Los Cabos, a pretty habour that boasts a funky restaurant made from a shipping container. Our walk suddenly opens onto a large, green lawn, dotted with five-foot stone sculptures. Known simply as the Sculpture Garden, it’s an oddly peaceful place. Soon enough, it’s time to head back to the hotel for a cooking class and lunch with executive chef Mauricio Lopez, the creative culinary thinker behind yesterday’s spa dinner. As we get our hands-on lesson on how to make tamales, Lopez speaks with pride about how he and his team have learned to accommodate every food restriction they’ve faced — from allergies to intolerances to veganism — without giving up taste or presentation. The lunch-and-learn is topped off with churros, still warm and served with caramel sauce. The only downside? Everything tastes so good that I am almost uncomfortably full. Good thing our afternoon activity is an eyeful rather than a mouthful. We board a 45-foot deep-sea fishing boat to look for whales in the Sea of Cortez, passing “the Arch,” the area’s renowned landmark rock formation. Once again, Los Cabos does not disappoint: a majestic humpback breaches mere metres from our boat, and a little later, another swims rapidly alongside us.

Iâ&#x20AC;&#x2122;ve never seen a whale before and Iâ&#x20AC;&#x2122;m surprised by what a moving experience it is. The contemplative mood that settles over our group is briefly interrupted, however, as Poncho, a well-known local sea lion, amusingly pops up in the wake of our boat, hoping we have fish for him. All too soon, itâ&#x20AC;&#x2122;s time for our last meal at the resort, this time outside. Once again, chef Lopez and his team wow us with a traditional Mexican buffet set up market style. With tamales, chicken mole, squid ink linguini, the freshest-tasting octopus Iâ&#x20AC;&#x2122;ve ever had and other delicious mains, itâ&#x20AC;&#x2122;s hard to leave room for the killer dessert cart. But who couldnâ&#x20AC;&#x2122;t squeeze in fresh assorted macarons, festive-looking doughnuts or, my favourite, the salty-and-spice chocolate tart? The setting â&#x20AC;&#x201D; a ring of palm trees with a view of the ocean as the sun sets â&#x20AC;&#x201D; is the icing on the red velvet cake. Small wonder I have to pass on the shore-side sâ&#x20AC;&#x2122;mores post-dinner, when we sit around a beach bonfire and watch a pair of fire dancers twirl flaming batons and rings around their bodies and into the dark night air. A magical ending. As I reluctantly head home the next morning, I realize some of that Los Cabos magic has rubbed off on me. Despite a few more airport-related hassles and the return to our chilly climate, I keep calm, think about the present, not past mistakes or future demands, just as Gloria had wisely advised. As for my lingering yen to return to the place? Call it a strong connection.

Gardening season is upon us. But this year, why not cultivate a little change and plant your own organic vegetable garden? You’ll help the planet, improve your health and lower your grocery bill. Read on to learn how to dig in By DAWN RITCHIE

lanting a vegetable garden is a giant leap towards sustainability. Lowering food bills requires only four things: sun, water, dirt and seeds. And three of these are entirely free. “A 10-by-10-foot vegetable plot in your backyard can feed a family of six throughout the season,” says Sam Guido, owner of Kell’s Garden City in Innisfil. “Carve up the plot into eight to 10 sections, and grow what you enjoy to eat. People will be surprised how much food they can grow. Yields are abundant.” SUN First, take a walk through your yard and assess the sunny and shady areas. Most vegetables, like tomatoes, require direct sunlight for six to eight hours, but there are plenty of veggies that grow happily in partially shaded areas — spinach, chard, lettuces, potatoes, carrots, beets and kale are just a few. Check the instructions on your seed packets for sun requirements. The front yard is underused land for food production and a movement is afoot to “grow food not lawns.” But few neighbours enjoy unsightly raised beds in a front yard. The solution is to secret your veggies behind shrubs and incorporate them into flower beds. Plant edible flowers, like nasturtiums and violets, amongst them. Pots on your front porch are a great spot for lettuces and herbs. Share your bounty with your neighbours and new friendships will be part of your harvest.

small stones? You can amend. Guido suggests choosing a premium medium that is rich with composted manure, top soil and peat loam for your very first planting. He is no fan of fertilizers and pesticides, however. “Pesticides and herbicides get into the watershed,” Guido says. “Start with high-quality soil, then create a compost bin to generate your own in the future.”

WATER Why get dinged with high water bills in the summer when Mother Nature provides it for free? A rain barrel placed under a downspout will fill to the brim with one good rain. Get two barrels and you can daisy chain them to harvest the overflow. Natural rainwater is not only a valuable resource, it has the proper pH value for your plants. Just remember to empty and flip your barrels in the winter so they won’t crack. SOIL Soil is ground zero, literally, for creating a sustainable garden. Planting organic, heirloom non-GMO vegetable seeds is a sound practice, but if the medium you’re sinking them into is not teeming with nutrients, your plants will not thrive. After you select your garden site, jab a shovel into the soil to see what lies beneath. Are you dealing with clay or sand? You’ll need raised beds. Is it a mixture of topsoil and 92 | GoodLife Barrie Edition May June 2018

ZERO-WASTE GARDENING Installing a compost bin means you no longer have to spend money on those yard waste bags that you haul out to the curb. That’s next year’s free compost you’re throwing away! A basic backyard composter can recycle all of your yard waste: twigs, grass clippings and plant matter, soil from hanging baskets, as well as your kitchen’s vegetable discards, paper-shredder confetti, a workshop’s sawdust, paper towels, dryer lint, coffee grounds, egg shells and even fireplace ashes. Alternate between wet green material and dry brown. A little rain, a little air and a bit of mixing speeds the process. “Let it sit for a year and rotate it,” Guido says, “so the micro-organisms can work it.” Unfortunately, the municipality eliminated compost bins from their discounted truckload sale this year, but you can make a composter with discarded pallets for free. Four pallets squared up on their ends and tied together with zip ties will produce an instant compost bin at zero cost. SEEDS Buy quality organic, non-GMO, open-pollinated, heirloom seeds and you need only do it once. Let one plant in each of your beds go to seed at season’s end. Collect the seeds after they dry out, store in a paper envelope and label with the vegetable type and date of collection. Replant next season. Seeds are hearty for two years, but will germinate at slower success rates for years to come. Save your extra seeds and exchange them for varieties you don’t have at a local Seedy Saturday get together. There are several held every year at community halls and libraries across the county. Utopia Hall holds one annually, as do the Beeton and Innisfil libraries. Seedy Saturdays occur early in March and April. Mark your calendars now for next year.

FERTILIZER Living by the lake is a bonus if your family has an angler. The remains of fileted fish are free fertilizer for your garden. They are packed full of nitrogen, potassium, phosphorous and calcium. Dig fish discards deep enough into the garden beds so dogs and raccoons are not tempted to unearth them. Green manure is a term that refers to a cover crop you plant in the fall, like rye grass or red clover. You dig it under in the spring before seeds set to help feed the soil. It’s another form of natural fertilizer. Farmers used to regularly plant cover crops. Their fields were abuzz with happy pollinators and singing birds. Conventional farmers now spray chemical fertilizers instead. Glyphosates have been flagged as a probable carcinogenic according to the World Health Organization. For sustainability, the organic approach will help keep your home a chemical-free zone. COMPANION PLANTING Use companion planting as another alternative to pesticides and fungicides. It protects the environment, our health, and saves the honeybees. Many plants contain natural pest repellants when planted next to a vegetable that marauding insects are targeting. Marigolds for instance, repel whiteflies and root knot nematodes. Borage deters the feared tomato hornworm. Thyme has an aroma the cabbage butterfly despises and ants are not fond of catnip. Want to rid your garden of slugs? Try dried rosemary. Check online for companion planting charts. There are hundreds available to ease your journey through pesticide-free gardening. SUCCESSION PLANTING For a season-long harvest, plant seeds every couple of weeks to keep the garden producing. Another good tip in exploiting the garden’s footprint to its maximum is to plant vegetables that grow upwards, like lettuce, next to those that grow downwards, like radishes. FRUIT ORCHARDS Include fruit trees and berry bushes as part of your sustainability plan. Berry bushes serve the plumpest berries at your table and make delicious syrups and jams for the winter months. Apples, peaches, pears, plums and

cherries can all be yours, even in a small yard, thanks to the development of dwarf fruit trees. By espaliering a tree (training it to run sideways across a fence) your orchard becomes an attractive part of your garden design. Guido reports that fig trees have now been acclimatized to survive winters if buried in the cold months. And lemon trees can be potted and brought inside for the winter. There are numerous ways to store fruit. Freezing, canning, dehydration, storing in a cold cellar or preparing tasty fruit leather. Grow your own orchard and your family’s fruit will never be sprayed by poisons or dipped in petroleum-based wax to survive transportation to a grocer. POLLINATORS Planting bee- and butterfly-friendly plants and pollinators will boost your harvest three-fold. Blanket flowers, echinacea and black-eyed Susans are perennials that are beloved by pollinators and will return year after year. You can also harvest echinacea to make your own tincture of herbal medicine. Soak roots or flowers in a solution of grain alcohol. Drain and store. BEAUTY Consider all seasons of your garden when designing it for sustainability. Plant robust

shrubbery, native species and perennials that will give your garden structure once the snow flies. Use solar lighting. It adds drama to the nightscape and provides safety by lighting pathways. And remember to always add a little bit of magic. Something spectacular revealed at the end of a winding path or behind a bush: a topiary, explosion of wildflowers, pretty garden beehive carved with inlays, or a bubbling bird bath visited by hummingbirds. Every garden needs a little theatre. Place a cane chair or bench in the spot as a respite for reading and reflection. We need these spaces of solitude in our busy lives. TOOLS OF THE TRADE Finally, invest in high-quality tools. Sustainability is about using things that last. You’ll need a leaf rake, digging shovel, hand trowel, hoe and a pruner to start. A wheelbarrow will prove valuable for moving soil and a garden fork, edging spade and pruning saw can be added later as you grow your arsenal. Keep tools clean and sharp, and coat with light oil before winter storage and they will last for decades. A mix of beeswax and linseed oil is especially effective as a rust resistant (1:3 beeswax/linseed oil). If handles get pitted from leaving them out in the rain, give them a quick sand and a coat of varnish.

SAVE OUR BEES! Don’t pull or poison dandelions this season. Dandelions have a relatively short season and they are the first food for bees in the spring. Dandelions are also edible. Eat the leaves in a salad and make a delicious dandelion syrup from the blossoms. It tastes like honey!

Romancing the Stone For Barrie’s Jennifer Wolfe of Bliss Jewellery, there is something magical about the diversity of materials that come from the earth. Small wonder, then, that before she became a goldsmith, she was a lapidary — a lover and cutter of stones. “Some stones have such incredible natural colour, it’s sometimes hard to believe they are real. I found this stone in Tucson on one of my biannual trips,” she says of the greeny-blue beauty in the pendant pictured above. “It is a killer combination of azurite, malachite and chrysocolla.” The colours made her feel like she was looking at a map of the ocean.
