I can tell how long a man’s been married by the way he shops. Twenty plus years and he comes in with a price point, a preferred gold colour, and usually picks the third thing he sees that is most likely to impress. In his defense he’s almost never wrong. But you should see him at the beginning when it’s time to pick an engagement ring. There’s a fair bit of hand holding required, as if he’ll never make a decision as crucial as this one. He’s stored every criticism you’ve ever made on celebrity engagement rings. He knows how you feel about the rings your friends received. He’s creeped your Pintrest page, asked your sister her opinion, sometimes he even comes with your mom in tow. The best part by far is hearing him justify one ring over another on the basis of who you are as a person. It’s during these critiques that I get to see how much he adores you. If I asked him to sit down and write you a love poem he probably couldn’t but ask him questions about your taste and your personality and he can’t contain his enthusiasm. Without realizing he’s doing it he’ll tell me how much you impress and surprise him, how unique you are, how funny, how ambitious. But mostly how he knows you’re perfect for him and how this ring that he’s chosen is perfect for you. So after he’s proposed ask him “Why this ring?” you can thank me later.

MOURNING HAS BROKEN LOVE, LOSS AND RECLAIMING JOY

This memoir by former CHFI radio personality, Erin Davis, should probably be packaged with tissues. If you’re a parent like me, you will likely shed tears. Mourning Has Broken is Davis’s personal account of her life, as it unfolded, after the unexpected and devastating death of her 24-year-old daughter, Lauren. The first half of the book begins as an homage to Lauren, segueing into an account of the circumstances around her passing. Most prominently, it focuses on how Davis and her husband forged ahead after the death. The minutiae of this half of the memoir, which gets so specific as to include speeches from the memorials and emails from fans, was a lot to absorb. For Davis fans, who had witnessed her struggles in real time after her daughter’s death in 2015, it offers an intimate look into what happened behind the scenes. It is in the second half of the book, in which Davis honestly exposes the carnage of her heart resulting from Lauren’s death, that the real gems of this memoir are found. Her wisdom emanates from the pages as she delivers us into the depths of her despair and her path toward healing. Her words convey that the human spirit has the strength to rise like the sun but will inevitably, and frequently, fall into the darkness – often, without warning. Who is this book for? I struggled to answer that question. Certainly, Davis fans will appreciate her candour and intimate details. As for the rest of us? The book is valuable to anyone who has known someone who has lost a child. It helped me understand that there is no timeline or set process for grieving, and it’s more important to support than console. As Davis explains to those who want to say the “right thing” to a grieving friend: don’t start a sentence with “at least”, don’t say anything related to God’s plan, and more specifically, don’t try to console. (You can’t.) By the end of the book, the question remains whether Davis fully reclaims joy as the book title suggests. I would say, no. Rather, she learns to live with the loss. Davis writes: “Losing Lauren was everything I feared but nothing I could have prevented. And if I dwell on that for anything longer than a fleeting instance, I could lose my mind.”

renda Boon knew she wanted to be an artist back in high school, but when it came to selecting a major for college she chose the pragmatic route. “I’m not a starving artist,” she says. “Career possibilities were limited. I wanted to go to university for fine arts, but thought, what are my prospects? Curator or art teacher? I didn’t really want either of those professions.” It was a time when the path for artists was decidedly narrower. Opportunities to market your work through social media or digital platforms didn’t exist. You either had a gallery representing you, or you struggled. Boon chose instead to pursue Graphic Design and Advertising at Conestoga College. This prudence allowed her to utilize her creative skills as a commercial artist yet still enjoy a stable life. She has no regrets. For nearly three decades she’s enjoyed a fulfilling career in layout and advertising in publishing media. “I know so many people who hate their jobs and they’ve been doing it for decades, and I love my job,” she says. But as the years ticked by, that old rumbling for brush and canvas began to resurface again. Three years ago, Boon could no longer suppress it and signed up for oil painting classes

under the direction of Irina Gretchanaia. What she wasn’t prepared for, was how switching from the fast-paced techniques she’d honed for her job, would clash with the slower-paced style of a fine artist. “I’m not a patient person,” she says. “And you have to be patient to work in oils. Every day at work is a new thing. I’ll work on twenty things in one day. At home, I work on the same painting for months at a time. If I mess up at work, I can fix it. When painting, if I mess up, I have to wait a whole week to fix it. It’s been teaching me a lot of patience.” Boon has experimented with acrylics, which dry faster, but is sticking with oils. “The colours don’t blend the same. You don’t get that richness, that depth,” she explains. “I’m tight with the brush. I am unable to do the quick brush strokes. No matter how hard I try I have to blend it. But I’ve stopped fighting that. I’m evolving naturally.” By her third class, Gretchanaia, asked Boon if she’d be willing to sell the piece she was working on. The question took Boon aback. The idea of selling her work had tugged at the corners of her younger ambitions, but she’d long let that go. “The hardest part for me, especially over the last couple of years, is to put


myself out there,” she says. She decided instead to post her painting online for just her friends to see. The overwhelmingly positive response led to commissions and before she knew it she was pulling together a body of work on weekends. “Sometimes you keep going with the status quo until you get a kick in the pants,” she laughs. “I do need that push.” Flowers are the primary subjects Boon is drawn to. They’re a theme she admits to having a slight obsession with. “They make me happy,” she says. “They make everybody happy. You can’t look at a painting of a flower and feel sad. There’s no hidden meaning. I can’t resist flowers. My phone is full of them.” In fact, a recent commission for a purple hydrangea launched her into a major photographing-frenzy. She purchased a plant and studied it fanatically. “I took pictures of that hydrangea for a month. I had over 500 pictures of it. I was obsessed. Seeing how things change over time. How the soil affects their colour. It started out as a yellowy blue and ended up a sage green and violet colour.” This attention to detail is why Boon’s four foot by three-foot canvases swim in a dynamic dance of colour, creating a perfect focal point in a room. Each petal, is a study in light in shadow. But on a recent trip to the Abbotsford Tulip Festival in British Columbia, Boon began considering reducing the size of her canvases. It would make her artistic process more manageable and meet her need for speed, another step in her natural evolution. She’s calling it her tulip series. “At first, I bought a bunch of tulips and took pictures but nothing really inspired me to paint them,” she says. “There’re fewer petals, as far as flowers go.” But something moved her to explore deeper and when she parted the top of a closed flower to take a few more photos, a whole new world opened up. “I could not believe the images I was capturing. I took the photos from the inside, in the center of the flower. It’s the most vulnerable angle, but the most beautiful. I’m so pumped and I can’t believe I’m so excited about tulips,” she says. “I can’t wait to get started.” See Brenda Boon’s work: at brendaboonfineart.com

Another new service appreciated by patients, and not widely available, is treatment under general anaesthesia. This sedation service for wisdom teeth removal as well as for treatments for children, kids with special needs, and people who suffer from anxiety is a real asset. “This service lets patients have treatments in the office where the surroundings are warm and familiar rather than at a hospital. Parents can bring their children into the treatment room which makes it is easier for everyone.” says Dr. Baraz. Patients at White Cedar Dental Care can also choose to have treatments under conscious sedation such as intravenous sedation or laughing gas (nitrous oxide). After having laughing gas sedation, the patient can drive, go back to work or look after their children right after the appointment. “I offer laughing gas as an option because it is very safe,” Dr. Baraz says. “I use it myself and so do my kids. It is a good option for older children, but general anaesthetic works well for children who are very young.” A new technology making x-rays more comfortable for children, adults with small mouths, and those with a strong gag reflex is a machine that takes digital x-rays while circling around the patient’s head. This eliminates the need for a bulky

sensor in the patient’s mouth. The technology also has less radiation and easily detects cavities between young children’s teeth. “Before, we couldn’t x-ray or visually see these cavities in children’s teeth until their mouths were big enough for the sensor,” says Dr. Baraz. “The cavities could get bigger and damage the tooth’s structure. Having this technology helps us diagnose children’s cavities at a much younger age.” Orthodontist Dr. Mir offers patients a choice of metal braces, clear brackets and the Invisalign system of teeth straightening. Patients can also get whiter teeth at the office for $99. Light activated whitening gel only takes an hour to create a whiter smile. “We are also thrilled to welcome a Periodontist (gum specialist) Dr. Dina Zahedi to our team!” says Dr. Baraz. “Informing the parents, or an adult patient, about the options of the treatment plan is key,” explains Dr. Baraz. “Knowing there are options puts everyone at ease. t Sharpe Hearing Clinic, it is important that Hearing Health is accessible to everyone. give a good baseline for anything that could possibly affect hearing later in life,” she said, adding Sharpe Hearing Clinic offers complimentary hearing tests. “It’s good to have a hearing test if you’re feeling you’re not hearing right at any age. When somebody comes here we are not just checking for whether they need a hearing aid. There’s so much that can be determined by an audiogram. If it’s a medical referral from a physician, we are looking at possible causes. Maybe it’s just a block of wax or maybe something else is going on with the middle ear drum. We are always ruling out a medical issue before we go in to a discussion about it being age related or noise induced hearing loss.” While adults do not require a physicians referral for a hearing test, Sharpe noted they do suggest a referral for children under the age of 10 to rule out any of the more common childhood conditions like ear infection or fluid in the ear. With all patients, they look at the overall health of the ear and how an individual is hearing. “When someone comes in, we do a case history for each client (and) those test results are always shared with the family doctor. If hearing aids are recommended then we talk about that,” she said, adding the difference with Sharpe Hearing Clinic

is that it is fully independent and not owned by a hearing aid manufacturer. “We can look at any brand of hearing aid, the different styles and the different price points. They can be very expensive or not (so we) look at the persons lifestyle. Obviously if we have a senior that lives in a retirement or long term care that just needs minimal function and not all the bells and whistles, then they can have something very entry level which pulls the price right down.” The professionals at Sharpe Hearing Clinic also provides free mobile testing in five retirement and long-term care facilities in the Barrie Area in an attempt to ensure even those individuals who can’t make it to their Bayfield Street clinic have access to proper hearing health on a regular basis.

After helping to improve people’s vision for 15 years, Barrie Eye Care now has its own improved look. Last October, optometrist Dr. David Bond moved his company into a spacious modern facility at 680 Veterans Drive in Barrie. Designed by award-winning Barrie interior designer Catherine Staples, the comfortable modern office is a welcoming place for the generations of patients who rely on Barrie Eye Care for regular eye exams, treatments and glasses. “We put a lot of thought into what layout would work best for the new office,” says Dr. Bond, who works with fellow optometrists Dr. Kristen Mansi and his wife Dr. Angela Miller. “We worked on it for a year and a half. Catherine did a great job. The office is about three times larger than our former location. It really is a state-of-the-art facility.” With on-site cutting edge technology, staff can immediately get patients’ test results for retina problems, glaucoma and other diseases. Formerly mysterious conditions, like the sudden lose of sight in one eye, can now be answered quickly. “Our Optical Coherence Tomography or OCT machine scans the eye 50,000 times a second,” says Dr. Bond. “We can see things like high blood

pressure, diabetes and nerve problems inside the eye. With diabetes, the blood vessels inside the eye start to leak and break down. When we see signs like this, we send a note to the patient’s family doctor.” For the first time, Barrie Eye Care has an in-house optical lab to make prescription eyeglasses. This new service delivers patients’ glasses to them faster and more cost-effectively. “If you break your glasses on the weekend, which happens a lot, we have thousands of prescriptions in stock and can quickly make new glasses for you using your old frames or a new one,” says Dr. Bond. Another new feature at the office is a software program that does direct billing for patients’ insurance, and lets patients make online bookings for eye care appointments. With daily computer use being a part of many people’s lives, Dr. Bond has seen an increase in screen-related eye complaints like eyestrain and fatigue. In response, Barrie Eye Care offers protection. “We have blue light coatings for glasses that protect the eyes against damage from the screen light,” explains Dr. Bond. “We can put the coating on plain

as well as prescription lenses. A lot of people are opting to do that now.” Dr. Bond also recommends protecting your eyes from sunlight exposure and embracing a nutritious diet to keep your eyes healthy. “Many of us think about wearing sunglasses in the summer, but there’s likely more UVH exposure in the wintertime when you are outdoors,” he explains. “Diet also affects eyesight. You may be drinking too much caffeine and not enough water, or not eating enough fatty fish which is healthy for our eyes and basically everything.” Though there are many new services at Barrie Eye Care, the staff remains the same skilled and friendly group that patients look forward to seeing. “This is the best staff I’ve ever had and the smartest, most talented people I’ve ever worked with,” says Dr. Bond. “I believe in old-fashioned customer service. t’s a proclamation any home entertainer would relish hearing, and for the Guindons, one of the primary reasons is the year-round indoor pool at their residence. “Our house is now the go-to place,” says Guy Guindon. “All of my sons’ friends are here too.” “We’ve even had a Santa in our pool,” laughs Melissa. People don’t usually think about a pool party at Christmas but the Guindons insist that their Christmas parties are “epic.” “We’ve had a keg party in the backyard and a BBQ. Everyone is in the hot tub. At New Year’s we missed the ball drop because we were all in the pool partying,” says Guy. “This home is great for hosting Christmas,” adds Melissa. The Guindon’s east end Barrie home is a sizeable 5,376 square foot split with wide windows, huge sliding patio doors, a double entry door at the front and a stunning Jupiter metal sculpture from Mar-10 House permanently installed in the landscaped yard. Located within walking distance to the town’s centre, schools, dining and parks, it is the ideal family home. The couple wasn’t even in the market for a home when they were playing around on the MLS and saw the location and indoor pool. They decided to give it a quick tour and were immediately smitten. “As soon as you walk in the front door you fall in love with the open concept,” says Melissa. “It’s the totality of the location, the home’s character and the neighbourhood.” “It’s got a great downtown vibe,” adds Guy. “We can see the fireworks from our dining room and walk to the farmer’s market downtown in ten minutes. The floor plan is exceptionally roomy, which is perfect for the family’s frequent get-togethers of sixty people or more. “The thing is, it’s still cozy,” says Melissa. “That’s what I love about it. It’s got old world charm. It’s warm and inviting, a real home. Not cold and sterile.” The neighbourhood is also mature, yet many yards in the area still remain open with gardens flowing one into another. “At first when we moved in there were no fences,” says Guy. “People have been here twenty or thirty years and they left it all open.” The couple’s first thought was, they had to erect a fence. But after settling in, they quickly learned the value of the arrangement. “The way things line up, there are natural fences,” says Melissa. “You don’t see them.” Everyone respects the invisible barriers and there’s a community feeling and ease to the openness. “You wave hello, but everyone keeps to themselves. It still feels private,” she says.

the patio,” says Melissa. “It’s our main hangout.” Since no interior aspects really needed a renovation, the Guindons decided to focus instead on structural upgrades that would further secure their investment. They redid the basement, the steel roof, added a shed, replaced all the windows and sliders and made a primary change to their indoor pool. Indoor pool expert, Aerosmith Mechanical, installed a state-of-the-art Seresco Advanced Unit dehumidifier for the pool house. A boiler also replaced the existing pool heater for extra efficiency. Due to their busy jobs, which includes a fair bit of shift work, the Guindons wanted as low maintenance of a property as they could manage and a saltwater pool made this a breeze. “Honestly, a lot of people think a pool is scary, but it’s not,” says Melissa. Once a month they take a water sample into Pioneer Pools and walk out with what they need. “It’s always just a bag of salt,” says Guy. “We don’t need to throw in a ton of chemicals or chlorine and we don’t have to be constantly cleaning it or emptying and refilling every season because it’s indoors. And we are in it every day. You cut the lawn, you jump in. You have a stressful drive up from the city, you jump in. All winter long, 24 hours a day, seven days a week, that pool is maintained at 85 degrees Fahrenheit.” The couple took the same low maintenance


approach to their extensive exterior decking which wraps around both sides of the house and offers three separate seating and dining areas. Getting any deck in shape is a yearly effort for Canadians with the sanding and staining and the Guindons were fed up with it. “It’s two weeks out of your summer,” says Guy. “Even with buying the good stain that’s supposed to last, it was still damaged every year from the sun. Our deck is in full sun all summer.” So, they bit the bullet and chose composite decking, a major financial investment. “It was expensive, but we love it,” says Guy. “It’s really added to our enjoyment of the yard.” For the lower level of the home, they co-opted a bedroom and created a gymnasium which enjoys a three-sided fireplace and big screen TV. Bamboo laminate flooring, a full functioning rowing machine, treadmills, dumb bells, and elliptical keeps the entire family fit. “Why do you need a gym membership when you have a full gym at home?” muses Guy. A sitting area right next to it is a second place to kick back postworkout and a good gathering spot for their teenager and his friends. The home holds three generous bedrooms above grade with two full bathrooms and two powder rooms. The main shared bathroom is serviced by a long trough vessel sink with two wall-mounted faucets—an inspired addition that accommodates the needs of a busy family when everyone is trying to get off to school in the morning. For the four-piece master en suite, privacy is key. Two vessel sinks, and a separate rain shower helps everyone get ready for work quickly. “It was a builder’s home,” says Melissa, who learned much of the home’s history from her neighbours. “It used to be an apple orchard when they put these houses in, and the builder built this one for himself.” A fact that always ensures that everything was done just right. 62 Dundonald Street in Barrie is now on the market, represented by Peggy Hill.

Chalet Chic Blue Mountain renovation shortlisted for prestigious design award By Dawn Ritchie | Photos by Heather Goldsworthy

D

esigned by Janice King-Smith of White Elk Interiors and shortlisted for the 2019 International Design & Architectural Awards, this contemporary ski chalet at the foot of the Blue Mountains was transformed from dated and cluttered to fresh and functional over the course of two years. The story began when Chloe Greenhalgh knocked on Janice King-Smith’s front door. Chloe and her partner Darryl Hughes were thinking about renovating their chalet and word had traveled that the designer up the street performed a miracle on the neighbourhood eyesore. Formerly dubbed ‘the prison,’ the peculiar chalet was now a stunning Scandinavian show house where the designer and her family lived. Since they were neighbours, Chloe took the chance on getting a tour. Janice invited her in for coffee

and a renovation union was formed. As extremely active and sociable people, Chloe and Darryl needed a lot more storage and a better layout to accommodate their large social gatherings and regular weekend guests. They also needed a new space for an office where they could address the demands that arose on weekends from their high-profile jobs. They were ready for a style makeover. Modern, minimalistic and contemporary was their design choice. This concept fit right into Janice’s wheelhouse. But achieving all this without changing the chalet’s existing footprint would be a challenge, especially given that nearly every room was trapezoid in shape and the basement was designated as a tenant apartment—off limits. Janice attacked the storage issue as task #1, filling the home with walls of cabinets that blended in seamlessly with the chalet’s

Benjamin Moore Chantilly Lace was the primary wall colour because it best matched the cabinetry, Janice explains. The entryway was really where the clutter explosion began. It had “zero storage” recalls Janice and no closet whatsoever. Not a great scenario for a dynamic, athletic household with a ton of gear. The couple had been making do with a series of hooks, so Janice bumped out a closet by biting into the garage, which too, was trapezoid shaped. Now there was a massive space for clothes, boots, bicycles, skis, snowboards and helmets. “And it still leaves the garage with space enough for a vehicle,” Janice assures. Janice used grey Montauk slate in a Chevron pattern for flooring and added a wide leather upholstered bench for kicking off boots and gear. The existing staircase up to the first level had dated wood railings so she opened that up too with modern glass railings that brought light and openness into the foyer. The lower living area of the chalet was already party central but the owners felt the space needed a major refresh. When they purchased the chalet, it had come with all the bells and whistles in-

tact, including a full bar, serving glasses and even the art on the wall. The Santa Fe style was being kicked to the curb but it was important that a bar remain for the couple’s renowned parties. Janice’s marching orders were to give the area a cool downtown Toronto, Queen Street West vibe. For Janice that translated into a moody commercial bar that had a funky bistro/trendy café feel—espresso by day and whiskey by night. Janice also saw an opportunity to kill two birds with one stone. The couple had requested that new office space and there was a huge vacant ceiling space right above the bar that made the existing bar look unfinished and out of proportion. She suggested they build a mezzanine level above the bar for the office. This would balance the soaring empty wall space, enclose the bar, giving it a roof, and afford that Queen Street West feel the couple was going for. This design would also provide an airy office level right above the main hangout, so they could work and still enjoy the fire without feeling locked away in a small office on chalet days. This inspired concept virtually added a new room to the building without changing the footprint, and allowed for an additional storage closet where the couple could now hide printers, fax machines, office supplies and cleaning equipment. The mezzanine office would also be filled with natural light from the ceiling level windows and it was mere steps away from the kitchen, so you could walk around, get a coffee but not be looking at dishes while you worked—the perfect location. With a glass knee wall (provided by Dennis Risk and Gil Letourneau of MCR Industries) and a three-and-a-half-meter long desk, the mezzanine became an inviting location to check emails, surf the net and survey the action below. Unfortunately, the view from the office would be the dated brick fireplace that covered the entire wall below. That had to go. Janice instead created a svelte modern fireplace using 2 x 4-foot floor-toceiling Montauk slate as the new focal point. Mick Vaclavik and his crew of Renovate Inc. hefted the exceedingly weighty tiles into place by hand, much to Janice’s astonishment. The fireplace deliberately has no mantle and houses a mounted Smart TV. Deep niches on either side stock plenty of firewood for the woodburning Regency Pro Series fireplace that was to remain. The cozy sectional chaise sofa here is from Rove Concepts, plush Moroccan carpet from Elte Market. For the bar, Janice tore out the existing oak

counters and decided on colour blocking. She now had this “monolithic slab of tile on one side of the room” and wanted to balance it by making the bar wall black as well. For continuity, her choice again was Brazilian Montuck slate with a black tempered glass backsplash and black hexagon tile feature which ran up to the ceiling to draw the eye upward. The paint for the backsplash was formulated and supplied by Glass Paint Technology Inc. from Gormley, Ontario, and painted on by a local car sprayer. Chris Robertson of Extreme Linings and Coatings in Owen Sound poured a concrete bar counter and laid an epoxy finish on the concrete flooring as well. The exterior of the bar was finished in barn board to warm things up and underlit to offer mood lighting. Stools from UK District 8. Bay Bloor Radio was the source for the sound system which is app-controllable with unique zones in all areas of the chalet. Behind the bar, a wine fridge and trough stainless steel sink from Riobel keeps things rolling. There is also so much under counter storage now that even Christmas decorations are being kept there. To finish the space, Janice commandeered a walk-in closet and transformed it into a powder room/laundry room right next to the bar under the mezzanine so guests wouldn’t have to go up a floor to use facilities. Another of the more significant features in the renovation is the fabulous sauna and shower room. Here Janice again performed her magic by turning it from clutter alley into a serene Nordic-inspired

itchen designer, Glen Prairie, entered the building trade forty years ago. After ten years of refining his skills in Calgary, he landed in Barrie, where, in 1993, he would launch his own kitchen and bath design firm as a Certified Kitchen Designer. Twenty-five years later, his company, Total Living Concepts, has developed a brand identity of excellence in all things and garnered multiple awards for creative design, renovations, and service. The company now employs a full-time staff that is sixteen strong and has branched out into all aspects of home renovation, from kitchens and baths to basement and room renos, flooring, additions, garages, outdoor spaces, and home maintenance. We use a team concept approach. We typically run ten projects at any given time. So, we have multiple designers, a construction supervisor, carpenters, and our crew on staff full time. We also hire a complement of sub-trades and use suppliers who have worked with us for many years. It’s very important that everything is done appropriately with permits and to code so your insurance is protected. We take care of all that, making sure the work lives up to our standards and how our clients want to decorate. GL/You get a lot of repeat business. What’s the secret to your success? The client must have someone who communicates with them well to assess their needs and design style. It’s one of the key things we do. We

have very loyal clients that have used us for many years. It’s due to the consistency of our people. I only use good trades. We want good people, who are knowledgeable about the codes that are current. We have a Certified Interior Designer on staff and graduates of the Interior Design program from Georgian College. I have some very talented people working for me, no question. I hire trained, creative people. You can be a pipe fitter and be creative. Someone who can diagnose a situation. GL/ A lot of people think they can design their own kitchen. What kinds of mistakes do DIYers make? Not paying attention to things on a municipal level. There’s a process to be followed. You are playing with your biggest investment and you want to enhance your value. Schedules, codes, materials, and the trades you use are important. Some people think they don’t need a designer but if the materials don’t blend in or match with your existing structure, it’s no good. We can help with

material selection. Our designers are trained to facilitate that purchase for them. GL/ Is there value in renovating an older home? Definitely. I live in a mid-century home. If you have five older homes on a street in a desirable area, don’t leave it as status quo. Your advantage is a treed area, but keeping things updated helps so the interior doesn’t look like a 30-year-old house. Especially if you plan to sell. You are competing with new houses. You should make a good product available. My home was built in ‘56 or ‘58. It’s solid but the last renovation was around thirty years ago. Upstairs we put in walnut hardwood floors, with 24 x 48 heated porcelain tile in the front entrance and kitchen. We had to redo all the electrical. Codes are different today, so there was a lot of rewiring. GL/ What’s your favourite room in your house? My favourite room has always been the kitchen. I love to cook and so does my wife. We belong to gourmet clubs. We love a good kitchen.

GL/ Given your specialty, what did you do for your own kitchen? Actually, we just renovated it. It’s the problem with being a renovator. You know too much about all the great perks and features. We did a black and natural lightly stained wood appearing top. A two-toned kitchen. The cabinetry is Miralis from Quebec. Very well appointed, wood grained. Top door. Melamine high gloss with matte black base and pantries. The countertop is grey quartz with veins. We used a granite with waterfall edge as the eating bar. GL/ Matte black cabinetry and faucets are a huge trend. Yes, black matte is hot right now but in some ways, it’s a very classic way to design. It’s beautiful if you use it correctly and right. GL/ Which appliances did you choose? Sub-Zero refrigeration. Wolf double ovens. A Wolf gas cook top. Franke sinks and faucets and a pot filler. My sister once said to me, ‘I never knew what it was like to have a good kitchen until I actually had one.’ People think, I can put the fridge here, the stove there, create the triangle. But it’s more than that. It’s about convenience. About making your life easier. Using good machines, especially if you enjoy cooking. And isn’t that what it’s all about? Food and family. Downtown Barrie’s 147 has some exciting news to share. Known for serving up authentic Italian cuisine and a breathtaking waterfront view, 147 has expanded into the building next door (formerly known as Fitzy’s and later a whiskey bar). “It’s been a really exciting process,” explains executive chef Rick Antonucci. The new space, called “Nexdor,” looks crisp and contemporary thanks to allwhite walls and bar cabinetry. It features a stunning lakefront patio, a spacious wine lounge and extra seating for about 60 people. “It offers a delicious tapas menu along with lovely wines and craft cocktails,” he explains. “We’re even planning on having live music.” To learn more about the expansion and other 147 news, this reporter recently caught up with the 48-year-old local chef. During our visit, he dished about everything from the secrets of Italian cuisine to future 147 projects.

The renovation started this past January, can you describe the construction process? RA: The place was pretty run down, so it really needed a major overhaul. It’s a beautiful space now. We went with a contemporary modern look, installed a new bar and went with an all-white decor and wooden floors. But we did keep the hammered tin ceiling, which I love. You took over as executive chef in August 2018. What drew you to 147? Rick Antonucci: After years of working in Toronto and Vaughan [he cooked at several no

As soon as I walked in the door, everything just felt right. I loved the rustic feel of the dining room with the exposed brick walls, wooden floors, and the open kitchen. The long narrow interior reminded me of the King Street West restaurant scene in downtown Toronto, and I really liked that. I decided to take over the kitchen, and the rest is history.

PREPARATION: In large sauce pan, heat oil over medium heat and sauté shrimp, garlic, tai chilli peppers, salt and pepper. Once everything starts to brown (and the shrimp is almost cooked), add white wine, tomatoes, and the parsley and basil. Simmer for 2 minutes. Add butter just before serving. Serve with crostini. Serves about 4 as an appetizer.

What’s the best way to describe your culinary style? RA: It’s traditional and popular homestyle Italian cooking — basically a mixture of the old and the new. My food philosophy is simple and basic, with a focus on fresh quality ingredients. And I also like big portions. Where did you learn how to cook? RA: Along with my formal education, my family, including my grandmother and my parents taught me so much about cooking when I was growing

up. I also worked for some great Toronto chefs who trained me in the art of Italian cuisine. What are some of the top sellers? RA: Orecchiette with rapini and sausage, osso bucco with homemade gnocchi, braised rabbit, Chilean sea bass, pan-seared trout and more. Our traditional favourites include homemade lasagna, spaghetti and meat balls, and handcrafted stone oven pizzas. We also serve lots of seafood and fish, and offer about four dining specials every day.

The secret to great Italian cooking always lies in the quality and freshness of the ingredients. What’s your favourite menu item? RA: To be honest, my favourite go-to is simple spaghetti with fresh basil and tomatoes. I also love the osso bucco with homemade gnocchi, and my braised short rib rigatoni. The braised short rib pasta isn’t on the menu right now, but we do feature it regularly as a special. Our diners just love it, so it might hit the menu over the next few months. Will you be offering any new summer dishes? RA: I love changing up the menu, and for the warmer months we will be featuring some new summer salads and lighter pastas. We will also be adding dessert pizzas to the menu — toppings like Nutella with sliced strawberries and bananas, or a white pizza with poached pears, Gorgonzola, candied walnuts and drizzled with honey. Diners seem to love your pizza. What makes it so good? RA: Along with fresh, quality ingredients and

Earlier this year, 147 made OpenTable’s 100 Most Romantic Restaurant’s list in Canada. How did that feel? RA: We were absolutely thrilled! The place really does have a great vibe. People feel relaxed and comfortable here. What about specials? RA: On Tuesdays and Wednesdays, we offer half price select wines. On Thursdays, we serve Prosecco for $5 per glass and $2 shucked oysters. Any interesting future plans you want to share? RA: Diners can definitely expect more frequent menu changes. From Beattie’s Distillers Farm Crafted Potato Vodka in Alliston to Redline Brewhouse in Barrie or the Collingwood area’s countless artisanal cideries, craft breweries and more — a bevy of sipping options are on offer. Using Georgian Bay water, Canadian grains and matured in hand-made white oak barrels, Collingwood Whisky has gained a reputation for producing a high quality and authentic Canadian whisky. The brand serves up the company’s original artisanal Collingwood Whisky and its Town Collection Double Barreled Whisky. Both products are made in Collingwood at Canada’s longest continually owned and operated distillery. Built in 1967, the local distillery employs 31 people. Beattie’s Distillers is a family-run business that grows its own potatoes to create its vodka, poitin (a traditional Irish distilled beverage) and gin. “We’re a true farm to bottle distillery with all products grown and distilled on-site and bottled by farm staff,” explains Ken Beattie. “Our family run distillery is located on the same land in Alliston that we have been farming for over 100 years.” The 2000-acre family farm also grows potatoes for potato chips. The retail store is open on Saturdays from 10 AM to 4 PM, and some products are sold at select LCBO locations. Tours and tastings are available by appointment only.

Peter and Jocelyn McArthur are trailblazers in the Barrie-area cider and wine business. While a handful of local producers have been bottling hard ciders made from local apples and pears in the Collingwood-area for the past decade, or so — Heritage Estate Winery and Cidery is the first one with a Barrie address. Along with wines, Heritage Estate Winery and Cidery produces three artisanal ciders, Dragon’s Gold, Eden’s Apples and Strawberry Edens Apple. All ciders are made with 100 per cent Ontario apples, are pasteurized and gluten free. “Dragon’s Gold is the dry cider, has a gold colour and notes of caramel apples, while Eden’s Apple has citrus and floral notes and a sweeter finish,” explains Peter. “But even though Eden’s Apples is sweeter, it still has only half the sugar content of most larger commercial ciders.” The Strawberry is pure summer made with real fresh Ontario strawberry juice. Open from Tuesday to Friday 12 noon to 6 pm, Saturdays 12 noon to 5 pm for retail sales and closed Sunday and Monday. Watch for summer hours coming soon. As the first commercial winery in Grey County, Coffin Ridge opened its retail store in 2008. “An out of control farming hobby led my family into the winery and cider business,” admits general manager Mike Todd with a smile. Along with its boutique wines, Coffin Ridge’s Forbidden hard cider is worth a try. “Made from 100 per cent Ontario apples, our artisanal cider is cold pressed and filtered to preserve the fresh, crisp, new harvest apple flavours,” says Todd. Along with Forbidden, Coffin Ridge also offers seasonal small batch ciders, such as Extra Dry Rhubarb, Maple Rosemary and Tropical Hop Cider — to name a few. Enjoying the stunning local views is part of the Coffin Ridge experience. “We overlook the crystal blue water of Georgian Bay, and we’re in the shadow of the Niagara Escarpment -- the setting is stunning,” explains Todd. Coffin Ridge offers tours and can accommodate group functions for up to 75 people.

A new organic craft cidery has set up shop. Located in the heart of the Blue Mountains, Spy Cider House and Distillery’s first offering is Golden Eye — a dry, light, crisp and refreshing organic cider. “With a respect for the land, our mission is to create small batch artisanal ciders that are both flavourful and unique,” explains general manager Eimear Duggan. The 70-acre certified organic farm uses geothermal energy, has an on-site press, and uses its own estate apples. “We let the ingredients speak for themselves.” The local cidery will open in June 2019, with tours and tastings to follow.

No wine has withstood as many love-hate relationships as chardonnay. Many might remember that back in the 1990s it was the bottle you’d bring to every dinner party. If you ordered a glass of white at a restaurant, it was inevitably a chardonnay. People were far less interested in who was making it and where it came from than they were about just drinking it. Fashionable and marketable, it was a brand unto itself. It was the unofficial white wine of the decade. And then everything changed. Chardonnay became the victim of its own immense popularity. A lot of wineries started producing chardonnay and playing up the attributes that people loved the most – sweetness and oakiness – until it became a caricature of itself. Mass producers used wood chips to capture that oak flavour but they overdid it so that oak became the dominant flavour. By the early 2000s, the thought of drinking chardonnay became almost gut wrenching. Restaurants replaced their chardonnay bottles with easy-drinking pinot grigio and sauvignon blanc, ushering in the ABC era – as in, pour “anything but chardonnay!” The chardonnay brand was all but dead to most new world wine consumers. Fast forward a decade. Improved winemaking practices have produced better wines, and no grape could be happier than chardonnay. Haters have been asked to set aside previously held notions against the grape and re-discover this wine’s more formidable attributes. The perception that chardonnay is a full-bodied, fruit-forward wine with creamy, buttery, rich flavours is somewhat ironic due to the fact that the grape is actually quite neutral in character. Aside from conditions such as climate and terroir that determine the starting point, winemakers essentially have a 68

blank canvas and can make the wine in any style they choose because it is so adaptable. Chardonnay seems to easily translate the terroir of the region in which it is produced. Warm climate chardonnays, such as the ones made in Napa Valley, emit more tropical fruit flavours. But without a certain level of winemaker intervention, those lovely flavours can easily get carried away and become more baked or stewed like, making the wine fat and dull. The better chardonnays come from cooler spots where grapes often teeter on the cusp of ripeness, bringing out more expansive aromas, minerality and a backbone of lively acidity. Aside from Burgundy, the birthplace of chardonnay, Canada is producing some of the very best made in the world today because of our “cooler” climate. In fact, as a tribute to cool climate chardonnay, Niagara hosts the annual International Cool Climate Chardonnay Celebration (i4C) in July each year. This year marks the ninth year as 51 wineries spanning nine countries will come together July 19-21 to celebrate and discuss new ways of producing, enjoying and thinking when it comes to chardonnay. It’s a great event for industry professionals however it’s an even better experience for consumers. We may never again go as far as proclaiming chardonnay to be the wine of the decade, but it does make for a great comeback story. Did You Know: Chardonnay is planted in every major wine producing country around the world due to its ability to adapt to a wide range of climates? It takes its name from the village of Chardonnay in the Mâcon region of Burgundy, France.

The 2016 vintage of this single vineyard chardonnay earned a silver medal at the 2018 International Wine and Spirits Competition, proving that Inniskillin isn’t just a one-trick pony that produces world-class Icewine. The 2017 growing season wasn’t nearly as hot or as long as 2016’s, and so, the fruit was able to form better overall balance, including acidic structure and just the right amount of sweetness. Trista is the creative spark behind an adult September weekend camp, bringing women together to relax, disconnect from life’s stresses and focus on taking time to nurture their own wellness. “It’s all about women supporting women.” Now in its fifth year, Girls Gone Camping fills with almost 250 women of all ages. Some have signed up for the first time and are on their own; others are there to reconnect with friendships made. Some have come from as far away as the Maritimes, England and Australia. Certified as a personal fitness trainer and massage therapist, Trista founded Girls Gone Camping because she saw that most retreat programs were focused solely on fitness. She wanted to incorporate the element of fun and a high level of personal choice in what leads to wellness and relaxation for each participant. As she explains, “Some come to party and some come for healing, everyone is different.” At the core of Trista’s program philosophy is the need to “disconnect to reconnect. Life is so busy and we are so focused on our technology. Put away the social media, put away the carpooling and everything you have to do. Then choose activities – from ziplining to canoeing, kayaking, archery, yoga, Pilates, zumba, pound fitness (based on drumming) or SUP yoga. We do cocktails and colouring, sessions on health and wellness, meditation classes and meditation hikes where you hike out to the most beautiful point in the park. In the fall, Algonquin Park is so picturesque, with the leaves changing colour and steam rising off the lake in the early morning.” This slice of pristine Canadian wilderness is a large part of what makes Girls Gone Camping so restful and restorative. The program uses the cabin facilities at Camp Tamakwa, accessible only by boat on South Tea Lake in the southwest corner of Algonquin Park. The founder of Beaver Canoe established the camp, so its Canadian roots run deep. “It’s amazing to see how the women come together,” says Trista. “It’s like being at summer camp – they sleep in bunk beds in cabins, we have evening bonfires, sunrise yoga on the dock, an evening with a DJ where they dance their hearts out, a huge afternoon water party where I see grown women jumping on the water trampoline and they can’t stop laughing. roam | retreat Inspired by the architecture of grand chateaux in the Swiss Alps, the “world’s largest log cabin” was constructed of 10,000 hand-cut giant, red cedar logs. First built as a private retreat on what was once a 17th-century Seigniorial estate, in 1970 the 120-hectare property was converted to an upscale public resort. Politicians, foreign dignitaries and jetsetters have passed through the large front doors, lounged by the lobby’s massive six-sided fireplace and wandered the trails winding along the woods and riverbank. “The wellness and treatment menu connects naturally with our setting and surroundings,” explains spa director Andrea Guerrero, as I settle in for the Great Canadian Facial. The nurturing one-hour facial features a deliciously heated treatment bed (my body needed no coaxing to melt into the warmth) and local Quebec products, mainly the B. Kamins clinical line using bio-maple extracted from the province’s maple trees. Andrea described the popular facial as adaptable to the individual skin’s needs using a combination of products and techniques unique to the Château Montebello property. The participants in Girls Gone Camping choose from a variety of activities, including ziplining and canoeing.

With just eight treatment rooms and a relaxation area overlooking the peaceful Ottawa River, the spa feels comfortable and not overwhelming. The hope is that guests will find a visit to be relaxing and restorative; indulgence in a very adult way. Le Château Montebello is known for its connection to the river and the hardwoods surrounding the giant log “cabin.” I picked up a map of trails winding through the forest and noticed one that led to the small village of Montebello. The main street has small shops featuring products by Quebec artisans as well as several establishments showcasing local food products. Many are incorporated into the menu at the resort, like the mild Tete à Papineau cow’s milk cheese from Fromagerie Montebello, the mussels steamed in Les Brasseurs de Montebello beer and the local maple syrup flavouring the Quebec maple crème brûlée. I’d found my Zen spot. An hour of pampering, a walk through the maple grove and a small bag of squeaky white cheese curd.
