If you’re a gold bug like me here’s a once in a lifetime opportunity. 150 grams is just shy of 5 troy ounces of raw natural Yukon river gold for sale. I’m sure you’ve seen this stuff on TV shows like Gold Rush Alaska and Yukon Gold but there’s nothing like owning a bit yourself. A travelling miner came through town and offered for sale a small portion of what he had prospected from his secret location somewhere around Dawson city. 150 grams was all I could convince him to sell me. He really didn’t want to sell any but you can’t just walk into the local hardware store for supplies and pay with raw gold. After some delicate negotiations he reluctantly parted with just enough to get him the cash he needed. These are not tiny fine dust particles of gold some measure almost 1cm in length. They are big enough to use in hand made nugget jewellery. This gold resembles oat meal flakes in general dimensions. The glass bottle is a little smaller than of a roll of nickels but what in contains is about 3500 times more valuable. Raw gold like this isn’t typically 100% pure. Often there is a little silver, copper and trace amounts of other metals. River gold from the Dawson area is usually quite good. We picked a few random samples from the bottle and had them tested with a x-ray fluorescence spectrometer. This cool high tech instrument calculated the samples contained on average 94.6% gold, 3.8% silver, a bit of copper and other metals. This testing method is non destructive and gives the most accurate results besides melting the entire lot down and ruining the natural beauty. We will not separate the material into smaller amounts. You’ve written about thousands of places, but can you name one that’s your absolute favourite? I would probably have to say Italy. My mother is Italian born, which is what drew me there. There’s just so much to see and you never feel that you’ve seen it all. They say that it’s the most revisited country in the world. I actually lived there for four years and thought I had seen it all, but I return more to Italy than any other place. It’s my happy place. Which item do you always shop for when you’re travelling? I usually buy a piece of jewelry that’s very particular to that place — something I know I’ll wear regularly and gladly that will always be a visual memento. It’s often an investment, so I make sure it really talks to me. But now, I just buy Christmas ornaments. I have the most remarkable Christmas tree. I have hundreds of ornaments from everywhere in the world, like a beautiful Fabergé egg I got in Moscow. Many things are just some type of item I can tie with a ribbon and put on a bough. It’s like my scrapbook. Is there a luxury item that you routinely take on your travels? Yes, I have so many pashminas. I bought most of them in India. They’re so lightweight and practical, and you can really dress up an outfit with it. On the plane, they’re invaluable. I usually bring two — I roll up one and use it as a pillow, then I use the other one for my shoulders or my lap. They’re also gorgeous investments. One I’ve had for about 20 years and they just get better with wear. Where are you hoping to venture next? I’m going to New Zealand next year. It’s been on my list forever. It’s one of the few very special places that has somehow evaded me. I’m very excited.

Clean lines, vibrant colour and a revered teaching are the earmarks of Clayton Samuel King’s art. His work, embedded with the rich imagery of the natural world and dignity of its magnificent beasts, holds at its core, the interconnectivity of us all. Each canvas and birch panel commands a meaningful narrative. His painting, Mnaadendimowin, represented by the buffalo, is about respect. The story educates us that buffalo was a gift given to the Anishinabek people, not to misuse or waste but to honour in a sustainable way. One only takes what is needed and respects that life by putting all parts to their highest use. It is the path of balance and one of the Seven Sacred Grandfather Teachings governing the moral and cultural codes of the First Nation people. A teaching, perhaps that was never more resonant in a time of waste and disregard for animal welfare. “To honour all of creation is to have respect,” explains King. “I want to use my art to carry on those stories. Using our brothers and sisters and aunties and uncles, the tree beings, the stone beings, the animals, fire beings, water beings, and the air.” 20

After graduating from the three-year Advanced Fine Arts Program at Fanshaw College in 2010, King made the decision to move back to his First Nation’s roots on Chimnissing (Christian Island) and bring back the skills he had learned to his people—print making, photography, sculpting, drawing, painting and art history. Jobs in the arts were few and far between however, so he took on the esteemed position of Councilor for the Beausoleil First Nation Council and became a Cultural Ambassador to Ottawa. A prolific painter, during his tenure, he still managed to exhibit work in over three dozen group exhibitions and five solo exhibitions. In 2014, he won the Emerging Artist of the Year award for the Barrie Arts Awards. Today his canvasses and murals hang across Ontario: at Bell Canada and The Ontario Library Services in North Bay, The Archives of Ontario, The Barrie Native Friendship Centre, Naandwegamik Health Centre in Little Current, Fanshaw College and in numerous private collections. Georgian College at Midland commissioned a collection of three four-by-eight foot murals, some of the largest works he’s created.

One of his goals is to open his own studio within the next two years, create a new line of merchandise that includes apparel and draw a series of children’s books and coloring books that carry on his instructional art workshops. King just won the Smoffice competition (Small Space, Big Ideas) for Indigenous Entrepreneurs to help enable that ambitious objective. How often do you find a prime Kempenfelt Bay property that has superb views of the waves from both a gorgeous contemporary home and a classic 1930s cottage? This rare pairing exists on an Innisfil shoreline where vintage and modern architecture create a unique place to live. By Patti Vipond

hen a property has an entirely glorious view across Kempenfelt Bay, a grand expanse of windows is de rigueur in the design of any house built there. The requirement goes doubly when two houses share the shoreline. That brings us to a secluded 5-acre wooded property on 154 ft. of Kempenfelt Bay in Innisfil. A magnificent contemporary glass, stone and metal home and a cosy classic 1930s cottage sit companionably adjacent, each with amazing waterfront views through windows complementing their respective eras. They also share the property with a 2 bedroom, 1 bathroom guesthouse above a heated workshop, a tennis court, vegetable and flower gardens and a massive open-ended domed sports court where tennis, hockey and basketball are played against a forest backdrop. Obviously, this is a place where a family can enjoy tranquil privacy or invite a crowd to come over and have a rollicking good time without annoying the neighbours. When Alain Sacksen bought the property in 2006, only the wooden cottage, tennis court and workshop existed. Sacksen built an apartment over the shop when the plan was to tear down the old cottage and build a new house. However by 2009, it made more sense to buy the empty lot next door to build the new house and keep the little cottage. In 2011, his family moved into their stunning new home whose design was influenced by the “Not So Big House” design concept. “I follow the ‘Not So Big House’ philosophy which is the subject of books by Sarah Susanka,” says Sacksen, who used its principles to design the four bedroom, four bathroom home. “I wanted a modern industrial look with lots of windows. The design is also Frank Lloyd Wright inspired.” Architect Ted Handy, principal of Ted Handy & Associates Inc. in Barrie, designed the graceful 3,562 sq. ft. two-storey contemporary home. If you want to splash colour or go with a colour theme, you can throw down runners or hang paintings or whatever you want. It’s much easier to change the mood of the house if you stick with a neutral base and add colour.” Full-length windows on the entry side of the house provide views of the attached two-car garage, interlocking brick drive, and guesthouse/ workshop with three-car garage. dows have fibreglass frames and can be shaded with electronic blinds. “Fibreglass frames are the only kind you can use for very wide windows because it is stronger than vinyl or wood,” Sacksen says. “Fibreglass is also good at holding in heat, so the frame stays at the same temperature as the interior of the house no matter the temperature outside.” Though much of the wall space in this modern masterpiece is glass, an efficient heating system keeps the home warm and comfortable in the cool seasons. “There is radiant in-floor heating in the main level’s concrete flooring and downstairs,” says Sacksen, noting there is also forced air heating/ cooling in the home. “It is generated by closed loop geothermal heating. No effluent goes into the lake, so it is ecologically friendly and efficient.” The most striking design feature of the house may be the solid glass second floor hallway that runs above the entry foyer and overlooks the main floor. The metal framed glass floor has steel-topped glass sidewalls that give a walking on air feel. “The architect just loved this idea,” Sacksen says. “I wanted to have more light come through the house. I’ve never seen anything like it in a home. Some people build a floor to ceiling fireplace in the living room as a focal point. I wanted the glass hallway to be the centrepiece. The glass is about an inch thick so it is extremely strong. Doug Smitherman, who was my contractor, found the man who did the CN Tower’s glass floor and he installed this hallway.” The glass hallway connects the master bedroom to two more bedrooms, a bathroom and a laundry/ exercise room with a sink and stackable washer and dryer. The laundry room has a closet so it could be a fourth bedroom. The two bedrooms belong to Sacksen’s young daughters. One room is toned in light pink, while the other has a wallpapered feature wall complemented by deep turquoise walls, and a walk out to a deck. Both rooms have hardwood floors and exceptional waterfront views. In the master bedroom, transom windows above the bed brighten the space and two mirrored bedside tables reflect light onto the hardwood floor. A gas fireplace and TV are set in the wall at the foot of the bed. A walk out to the lake view deck also leads to a two-person hot tub that is popular all year round.“Instead of putting a Jacuzzi tub in the bathroom, we decided to put a hot tub on the deck,” Sacksen says. “It’s great in the winter. The deck is very private. On one side of the yard, you only see the old cottage and on the other you see

Within the same space is a sink lit by vintage-style shaded crystal sconces and a dressing table tucked beside a window. A doorway beside the sink leads to the ensuite. “Instead of having the traditional two sinks together in the bathroom, we decided to separate them,” explains Sacksen. “One is in the bathroom and the other is in the walk-in closet.”

On the main floor, the sleek gourmet kitchen has a walk-in pantry, large quartz-topped island and an intriguing backsplash made of small metal tiles. Sacksen’s father, who is a welder, created the custom glass-topped dining table. The metal frame divides the glass into a six square design. Beyond the kitchen, a mudroom/breezeway connects the garage to the house. It includes a dog sink for cleaning the resident dogs. The trio includes a Havanese, Shiba Inu and an Akita. Across the hall, a wood panelled office, complete with olde English leather office chair and a substantial wooden desk, comes as a surprise. “The office is disjoined from the rest of the

house intentionally,� says Sacksen. “The idea was to make it into a British library or office.� The downstairs theatre room is very popular with the girls. Soft couches and chairs are gathered near a gigantic screen. The room opens to a bar/beverage area with its own popcorn machine. Across the yard, the vintage one-storey wooden cottage opposes the linear lines and careful planning of the contemporary home. As was the habit back then, the cottage grew piecemeal as families expanded. The homeowners of this Tollendale Woods property had been eyeing their empty lot for some time. Sandwiched between two homes and secreted away on a quiet street within walking distance of their boat slip, vacant residential land was a rare find in Barrie.

The couple had been mulling building a home from scratch, after a successful gut and renovation of a property in Shanty Bay. Their new dream home would be a bungalow with plenty of room to move and a focus on natural light. They also wanted to be their own designer. Purchasing the land could mean they’d finally get everything they’d ever wanted in a residence. Before breaking ground a big job had to be done, however. It was some serious soul-searching about their family’s needs, lifestyle, and their differing tastes. Both partners admired Frank Lloyd Wright and West Coast designs. They were leaning toward a home with an art gallery sensibility, but it was going to be a merger of traditional and contemporary styles. Design decisions can often reach an impasse in custom builds, especially if partners harbour conflicting tastes. Developers take those decisions out of buyers’ hands, offering cookie

Luckily, compromises can be arrived at that keep all parties content when a good builder listens and comes up with inventive solutions to problems. Caroline and Perry Achtenberg of P.A. Builders in Hawkestone understood that aesthetics and precision would be the guiding principles at each step of the home’s design/build process. Especially after the couple spent an entire day mapping out the configurations of light switches and heating and security controls that would shape their initial view of the home as they entered their sanctuary. “We wanted it to be comfortable and cozy and warm and inviting after work,” the homeowners explained. Their objective was a view from the front door that instantly eased the stresses of the day once they walked through it. To that end, every piece of furniture would need to be meticulously measured in advance and the layout prearranged. A clutter free home was the primary goal. Children were maturing and this was a home advancing quickly toward empty nest status. That inevitability resulted in children’s rooms being situated on the lower level of the bungalow. Two bedrooms and a shared bathroom were set there with direct access to a hangout area designed specifically for them. A spacious lounge, storage chests, pine pub table from Munros, oversized coffee table from Decorium, fireplace and TV were all at their command. The main floor would reflect more adult sensibilities with a vibrant collection of art pieces from Roy Hickling, Ted Fullerton, and Brian Barrer. All electronics, appliances, and other operational household paraphernalia would be tucked away in sleek, accessible compartments. And structural eyesores like vents and power outlets would be deliberately positioned out of sightlines.

“It’s everything we wanted,� say the homeowners. “Open concept. Big island for entertaining. Contemporary. Everything on one floor.� But it’s the little unseen touches that truly made things special for the homeowners. Like the small nook inside a coat closet’s floor where an unwieldy central vac hose retracts into a holding vessel in the basement below. “It memorizes the coil,� says one of the homeowners. “It’s one of my favourite features.� One departure from the crispness is found just off the foyer, when you turn into the rustic mudroom directly around the corner. There you’ll find weathered barn board and polished barn beams to collect boots and jackets in a more casual setting. The alcove is separated from the foyer by a sliding barn door built from rough pine that was stained and beaten to resemble a similar age. The powder room repeats this look with a weathered wood vanity, striking alligator-styled wallpaper, seeded glass lights and industrial faucets that protrude directly from the wall. Onepiece commodes were chosen for the bathrooms to maintain the home’s artful flair. “For me, everything needs to look like a piece of art,� remarks one of the homeowners. Aesthetics were so important, in fact, that when the debate arose about installing an overhead fan in the master bedroom, the compromise was to install a modern, low profile fan and paint it the same colour as the ceiling so it would blend in. A bulky headboard was also supplanted by a wall treatment that mimicked the look of wood inlays in the great room. Another act of continuity. In keeping with the gallery colour scheme, the master bath is bedecked in cool white veined marble, and complemented by a stream of river rock rolling down the wall of the shower stall and across the floor. A luxurious soaker tub nearby beckons and heated floors and towel racks fortify the spa pampering. The exterior of the residence is a beautiful marriage of natural stone and cedar in a modern style with smoky charcoal coloured brick lining the sides and rear of the structure. For the back patio, which extends directly off the kitchen, the homeowners chose stamped concrete for low maintenance with a covered deck at the ready for all temperatures with embedded fans and heaters at ceiling height. Designing and living in a home which afforded such close proximity to their private marina has been a great joy the homeowners report, but they’re already mulling a new project. Their next build? A Manhattan-styled loft with an industrial motif, exposed concrete, wood beams and exposed metal.

A

passion for design and an insatiable need to keep busy is one of the many things that has led to a successful career in real estate for Broker Kristin Cripps. Kristin began flipping homes in Barrie and surrounding area 18 years ago and soon after saw her calling to leave massage therapy and pursue her true passion for real estate. Cripps has proven herself to be not only one of the best real estate agents in Simcoe County, but also in Canada. Prior to opening the doors to her own brokerage, she worked her way to the top and made it to the top one per cent of all agents, and brokerages in Canada. Along with a great team of administrators and sales representatives, Cripps works out of a 3,000 square-foot industrial loft-style office in Barrie’s south end full of exposed beams, rafters, brick walls and lots of barn wood, each and every office different to represent the team’s individualities. Its sink or swim really. I always feel we need to be growing, learning and expanding ourselves and as a

business,” she said, noting she also works diligently to ensure the success and growth of her team. “It’s pretty simple. To be a leader, I need to make myself better and always be evolving as a Broker.” Together they work as one large team, she noted, adding she prefers to be seen as just another member of the team and not their boss or superior. “I’d rather we are all team members,” she said. “I don’t have a door on my office that way anyone can come and talk to me at any time and we can work through any obstacles that may come up.” We know real estate is most likely the biggest investment of our client’s life time and we want to make sure they feel secure the entire process and even after the transaction. RVH is a state-of-the-art regional health centre – the largest hospital in the region at nearly a million square feet - with 450,000 patient visits annually, 2500 staff, 430 physicians, 750 volunteers and a budget of $340 million. As a regional centre RVH provides care for almost half a million people, with half its patients living outside the City of Barrie. “We are continuously seeking the next opportunity to improve care for residents of the region,” says Janice Skot, president and CEO. “We are working hard to provide services and

programs not currently available, but desperately needed. That’s why we’re excited to have recently opened the Simcoe Muskoka Regional Heart Program and the Simcoe Muskoka Child and Youth Mental Health Program and now we are looking into the future.” In 2012, RVH doubled in size and with no room to build on its current 40-acre Georgian Drive site, RVH is starting to plan for a second site in south Simcoe County. Charting RVH’s course for the future is a

complex and lengthy process; planning and building another hospital could take 20 years. As a first step, RVH will begin providing some outpatient services in Innisfil’s Rizzardo Health and Wellness Centre when it opens on Innisfil Beach Road in early-2019. My name is Korapin Adlam but everyone knows me as Mink. I am Registered Massage Therapist (RMT) and Traditional Thai Massage Instructor (TTMI). I also have a BBA in accounting which I had before I came to Canada from Thailand in 2008. The idea for starting my Thai massage business began quite accidently really. One evening my husband kept complaining that his back was really sore and I could sense he was in a lot of pain and discomfort. I asked him to lie face down on the floor and he reluctantly said ok. I then stood on his back and massaged him with my feet. After the massage was done he said, “My wife has magical feet!” He could not believe that the pain was virtually gone. Then, he looked at me and said you should open your own business doing what you just did to me. I was super reluctant at first to make such a drastic change in professions, as I truly felt at that Canadians would most likely have no interest in Thai massage.

BACIO TRATTORIA When you walk into downtown Barrie’s Bacio Trattoria, you are greeted with a smile and great food. “We want people to feel like they are eating at home with family,” explains William Ortiz, who owns and operates the 40-seat restaurant with his sister, Elizabeth Ortiz and his mother, Nancy Juarez. “We are a family run

What led you to open an Italian restaurant in Barrie? William Ortiz: It’s a long story [laughs]. We were born in Peru, but then moved to Italy when we were quite young. We settled in a town just outside of Rome called Ostia Lido, and took in the Italian culture and cuisine. We eventually moved to Canada (William was 15 and Elizabeth was 17) and have lived here for more than 20 years. We decided to open a restaurant in Barrie because my sister has lived here for the past 10 years and thought it would be fun to have a business together. My mom and I moved up from Toronto and the rest is history. Have you always worked as a chef? WO: I have been working in restaurants since I was 15. Cooking is my passion and I have worked in kitchens all over Canada. I have also worked in Peru, Costa Rica and Italy. Here at the restaurant, my mom helps me in the kitchen and with shopping and Elizabeth works the front of the house. It’s all about teamwork for us. Elizabeth Ortiz: Even on his days off he is still cooking. He loves making meals for his family, and we can’t get him out of the kitchen. We never eat out [smiles]. Why the name Bacio Trattoria? EO: We picked Bacio because in Italian it means kiss. In the Italian culture, you always give two kisses every time you say hello to someone. We thought it was the perfect name for our restaurant because we want the atmosphere to feel warm and inviting. The decor is fun with lots of colourful retro lighting, and plenty of homages to Italy ranging from shelves full of olive oils, pasta boxes and canned tomatoes to a large painting of the Trevi Fountain. I also like the sliding glass garage door, which creates a patio feel and the open kitchen. WO: We wanted it to feel like home because we spend so much time here, and we wanted it to feel comfortable. The decor is really a mash up of places I have worked in, with elements of some our favourite restaurants in Italy. EO: The painting of the Trevi Fountain reminds me of one of my favourite places in Rome. How would you describe the menu? WO: We specialize in Italian cuisine and serve anything from seafood salad to tiramisu. Everything is made from scratch and cooked to order. I only use fresh high, quality ingredients and I cook with lots of alcohol which makes it even more tasty! [laughs]. Since we lived near Rome, we also serve up some Roman specialities like pasta carbonara and supli di chicca (pork and

Tagliatelle Pomodoro & Shrimp (recipe courtesy of chef William Ortiz) This delicious summer dish is easy to make and ready in 20 minutes. 750 grams tagliatelle all’uovo 500 grams La San Marzano peeled tomatoes 100 grams roasted garlic 150 grams shallots, small dice ½ bunch Italian basil, chopped ½ bunch Italian parsley, chopped ½ bunch chives, chopped 250 ml extra virgin olive oil, plus 1 Tbsp Salt & Pepper to taste 350 grams peeled and deveined tiger shrimp 100 ml white wine Preparation 1. Crush the whole tomatoes with your hands, make them feel your love. Add the roasted garlic, shallots, basil, parsley, chives & extra olive oil. Stir, then add salt & pepper to taste. Let the sauce have fun in the refrigerator for 1 day. 2. Shrimp: Slice the shrimp in half, this way they will look amazing when you saute them. Season with salt and pepper. Have large pan on high heat with 1 Tbsp olive oil, add the shrimp, when ready deglazed with wine. Add the lovely sauce you made the day before. Bring to a quick boil. Take it off the heat. 3. Pasta: Cook the tagliatelle al dente. Mix with the sauce & add a bit more love (extra virgin olive oil). This will give you a nice shine on your fresh and delicious meal. 4. Tips: One of the most important ingredients is love, without it might as well come to BACIO and let us give you all the best we got! Buon Appetito! Serves 5.

WO: It’s still in the planning stages, but we have some entertainment ideas in the works. On Friday nights, we hope to bring in a DJ for Latin music and salsa dancing. Casamigos Watermelon Mint Margarita 2 oz Casamigos Blanco Tequila 1 oz fresh watermelon juice OR 4-5 watermelon chunks (1”) .5 oz fresh lime juice .5 oz simple syrup Mint leaves Optional: 2 dashes Peychauds Bitters Method: Combine all ingredients into a tin shaker. Muddle fruit/herbs and add ice. Shake vigorously for 8-10 seconds then fine strain into a rocks glass and add fresh ice. Garnish with a mint sprig and a watermelon chunk on skewer.

Fill with ginger beer and stir to mix everything together. Garnish with mint leaves and add in your straw.

Stoli Spiked Pineapple Lemonade 2 Cups Stoli Crushed Pineapple Vodka 1 cup lemon juice .75 cup simple syrup Mint leaves Method: In a small pitcher, combine the Stoli Crushed Pineapple Vodka and lemon juice. Sweeten to taste with simple syrup. Pour over ice and top with soda water and mint sprig garnish. Serve to your party guests or save the rest for later!

Method: Add the freshly squeezed lemon juice, sugar and Hayman’s Gin to a highball glass and stir. Add plenty of cubed ice and stir again. Top with soda water and stir for a final time. Garnish with a lemon wedge.

Muskoka — known as Ontario’s ‘Hamptons’ — is a prime summer destination. With hundreds of lakes, rustic appeal, beaches, great shopping and dining, golf, boating and fireside evenings, it’s no wonder Muskoka is the destination of choice for cottagers, campers and summer vacationers. This summer, why not forego a weekend at the cottage for a weekend of pampering with your best girlfriends? Why not dine lakeside, be pampered at the spa and enjoy a classic Muskoka getaway? That’s just what I had in mind when I planned a getaway with my best girlfriends at Deerhurst Resort in Huntsville. Off we went heading north to Hunstville. Girls’ weekend underway! Good friends, good music and a few stops along the way make for a great start. You can’t help but get in the cottage and vacation mood as

you head up the 400 and onto Hwy. 11 North. Passing Webers (well, not passing… stopping, of course, for a famous burger) is a tradition when en route to cottage country, as well as the Muskoka Store, which always draws us in with its rustic log exterior, brightly coloured canoes and famous moose. Inside, we can’t resist a few purchases — this is, after all, a classic Muskoka vacation! As the highway views go from city to town, to gleaming rocks, towering pine trees and crisp country air, we start to relax and unwind as Muskoka begins to take us over. Entering Huntsville, we stop for a couple hours and stroll the streets and shops, enjoying a refreshing beverage on a patio at one of the local restaurants. With a calming ambiance, lovely staff and relaxing amenities (check out the steam room!), our day is just what a bunch of busy women need. We lazily stroll back to our rooms to take in the view before getting ready for dinner. Summer evenings at Deerhurst are just as alive as summer days. As the sun sets, candles are lit, fire pits are started and music begins. There are multiple dining options including The Antler Steakhouse, where the menu highlights a variety of AAA Canadian steaks and is brimming with locally sourced ingredients. The wine list is perfectly designed to match the menu that showcases and complements Muskoka’s glorious bounty. Overlooking the historic canal between Fairy and Peninsula Lakes, this log house-style restaurant offers the perfect Muskoka dining experience. I stood on the terrace outside the villa at White Pearl and watched sunrise gild the quiet bay in front of me. Birds called from nearby branches, monkeys chattered in the distant Casuarina trees and waves rolled with a soothing regularity onto the wide white beach. Even this early, the sun warmed my shoulders and the air seemed charged with ozone, maybe a hangover from last night’s rain. Flowers shone white and pink and yellow against dark foliage. “This can’t get any better,” I thought. And then it did. A discrete “good morning” announced that breakfast had arrived and within a few minutes, our butler – our private butler! – had laid out breakfast in the shady part of the terrace. It was going to be a memorable day. My daughter Allie and I had arrived late the night before after long hours of travel. She had flown in from London, England, and I from Canada via Cape Town and Johannesburg. We were looking forward to a rejuvenating retreat from our busy lives, and some much needed mother-daughter time. White Pearl was the ideal place for both.

Located on the curve of a protected bay on Mozambique’s Lagoon Coast, about 100 km south of the capital city of Maputo, White Pearl is a luxury property promising an escape full of pampering and adventure. Helder, our personal butler, returns after breakfast to help us plan our stay. We both want to do a horseback ride along the beach, try the marine safari, do a coastal marine walk and maybe do some sea kayaking. “I would suggest the early morning for your beach ride,” Helder tells us. “It can get very warm as the day goes on, and the horses are happier when it is cooler. I can arrange that for 9:30.” “Also, there is a surprise planned for you for lunch – it will be wonderful. Then you might need a rest.” Together we plan how we will spend our days, even fitting in treatment sessions in the spa. It is effortless, uncomplicated — so exactly what we need right now. Most of us thrive on the complexity of modern life, but to step out of the buzz, just for a few days, is sometimes a re-energizing necessity, and White Pearl is ideally designed for that purpose. There is Internet, and large screen TVs — but the pull of the view from the terrace makes those things somehow less important. Although all the means for connectivity are there, disconnecting in this paradise is irresistible. Our beach ride is a slow and leisurely one at first, with nobody else on the beach but us. The return trip is an energizing gallop — even the horses are eager to get back for lunch. The surprise Helder has promised is a picnic on the beach, just feet from the edge of the Indian Ocean. Under gauzy white curtains, the table is laid with china and silverware, and tantalizing food — fat local prawns, chicken with piri piri sauce, crab curry, grilled vegetables and rich Portuguese custard tarts. The following days unfold like a dream. We put on wet suits and climb into motorized dinghies to sail along the coast and snorkel in the clear turquoise water. In a curated stroll along the beach the resident marine expert gives us insight into the many organisms that proliferate in the rocks and coral, revealing a whole world in microcosm. then we head to the Maputo Elephant Reserve to experience a real African safari. Mid-morning breakfast is served from the back of the safari jeep, and there’s the possibility of sighting elephants, giraffes, warthogs, zebra, rare black-backed antelope and rich bird life. The return to White Pearl is timed so that lunch can be enjoyed, then there’s the matching thrill of a different kind of safari — on the ocean, which can include whale watching, dolphin sightings, snorkeling and scuba diving along the pinnacle reef; the perfect way to do it all in one day. If the timing is right, guests can witness the nesting behaviours of the endangered loggerhead and leatherback turtles. The resort spa, located above the villas and with views of the Indian Ocean, is small but provides all of the usual treatments, plus some that are unique. The African Rungu massage uses ancient African warrior sticks to deliver long, deep pressure — ideal for relieving stiff or tired muscles. The Jewel of Africa Massage employs a coconutscented balm for a calming, restorative treatment. We loved the beach bar, an informal place, sparkling white and perched oceanside, where we gather for a glass of wine before dinner or to grab a casual tapas lunch before an afternoon of sunbathing. The oversized daybeds and loungers that line the pool and overlook the beach are hard to resist, and just steps away is the pool bar, which serves signature cocktails all afternoon. The cool comfort of the Reading Room is ideal for a high tea, and the large telescope in the corner gives you an evening view of the vast African sky and its stars. We have dinner one night in formal style in the high-ceiling dining room, and on another we’re served casually on the deck. Guests can also arrange to have their butler deliver a private dinner to their villa. Food is a surprising and delicious blend of fla82

vours, with a strong Portuguese influence married with local ingredients. Freshly caught seafood and tropical fruits and vegetables from the on-sight gardens mean that our meals are both tasty and healthy. In the boma, at sunset, we are treated to local music and dance performed by some of the villagers who live nearby. The resort is committed to employing and educating local villagers, supports ecological initiatives in the area and champions Mozambique culture. Mozambique is an emerging tourism experience, but getting there is easier than one might think. The country suffered for years through civil wars, but since the 1990s has been rebuilding infrastructure and developing its tourism offerings. Getting to White Pearl Resort is now easy. Flights from Johannesburg to the capital city of Maputo are frequent and the resort will collect you from the airport in their signature white 4x4s. When we took the drive, it was a four-hour trip through country market towns and countryside — a dusty and rather long drive that landed us at the resort well after dark. As of May 2018, the completion of the new Catembe bridge will shorten the drive to 90 minutes. I'd recommend the much quicker, and more exciting, alternative — to get to or from the resort by helicopter. Allie and I returned to Maputo on the helicopter, a 30-minute flight, with some majestic views of the coastline along the way. Fixed wing flights also connect the resort with Kruger National Park, so guests can enjoy a classic safari in Kruger and then fly to White Pearl for a tranquil beach vacation to rest up from those early morning safari expeditions. This was the ideal spot for Allie and I to share a relaxing getaway, but is perfect for a honeymoon, a romantic escape or a family vacation. I would love to come back sometime with the whole family. Romance, privacy, total indulgence and adventure in a remote location are all here at the Pearl of the Indian Ocean, along with the exotic flavours of Africa. It's a place where you can step out of the world for a while and recharge in luxurious tranquility.

1% of Canadians suffer from celiac disease, where the absorptive surfaces of the intestines are damaged by gluten. In addition, about 6% of Canadians experience non-celiac gluten sensitivity (NCGS). Typically, gluten sensitivity is associated with similar symptoms to irritable bowel syndrome (IBS) (e.g., bloating, abdominal pain, diarrhea, foggy thinking, etc.). For those suffering with celiac disease, avoiding gluten is necessary and for those with NCGS avoiding gluten is a beneficial option to help eliminate uncomfortable symptoms. However, for the vast majority of people avoiding gluten doesn’t make your diet any healthier. In fact, many gluten free products are higher in fat, sugar, salt, and low in fibre, B vitamins, iron and zinc. Sometimes food marketing tricks us, we hear gluten free or anything ‘free’ and associate it with healthy. The sad reality is a gluten free cookie, is still a cookie!

What should you do? If you don’t have a gluten sensitivity and aren’t celiac, don’t avoid gluten. Instead focus on the portions and quality of the items you are eating. Gluten is found in a lot of carbohydrates and we tend to overeat these types of food, which can often lead to some of the symptoms mentioned above, including bloating. In addition, the way we process wheat is processed now is very different than the wheat our ancestors ate. We use to eat wheat that was mixed with other grains (e.g., beans, nuts, seeds, etc.). It was only in the last 100-200 years that the industry started milling and refining our bread to create white flour. Cutting back on the refined and process grains we eat each day can also help.

What is the keto diet and should I be following it? The ketogenic (keto) diet is a high-fat, lowcarb, moderate protein way of eating. In simplest terms, following the keto diet will put your body in a metabolic state known as ketosis. In this state your body is using fat as its primary source of fuel (instead of glucose) and producing ketone bodies. What are ketones? Ketones are a natural form of energy made from fat that is used by the body and brain. They are produced in the liver when fat is broken down to be used as energy. When attempting to achieve ketosis and become ‘ketoadapted’ many people measure the amount

Why are people following this diet? The ketogenic diet has been proven to be effective for weight loss, but there are also claims around its ability to prevent and treat certain chronic diseases. It should be noted that keto diet has been utilized in the medical community for years now, especially in the treatment of child epilepsy. However, this doesn’t work for everyone and should be done with the support of a health professional. In addition to its epilepsy claims it has also been linked to autism, heart disease, cancer, and diabetes. Although some research has found links between improvements in these conditions and following a keto diet, they have also found links between other diets and their ability to support such disease states. Unfortunately, there is no evidence to suggest that a keto diet can cure any disorders or diseases (its not that simple). What about for weight loss? Many individuals following a keto diet tend to lose weight. It’s likely related to the combination of reduced caloric intake and overall satiety (the high fat diet helps keep you satisfied post meals). However, can these individuals keep the weight off? There is very little research to support the long term results of following a keto diet and whether or not that leads to more sustainable weight loss than someone following another form of a diet (e.g., reduced calories or low-carb). I believe that finding a diet that works for your lifestyle (that can be followed long term) is the true key to successful weight loss. Although the keto diet might work in the short term, can you sustain it…or will you?

The margarita is perhaps the most mysterious cocktail of all, as no one really knows the true story of its origin. Theories abound, from its creation for glamorous showgirl Marjorie King (she was allergic to all other spirits except tequila) to the belief that it was named for Rita Hayworth in Tijuana in the 1940s (Rita’s real name was Margarita Cansino). Gin and tonic in the UK

A good G&T works at any time of year but add a slice of cucumber and a sprig of rosemary for a refreshing twist on a classic. Or play around with other garnishes and flavours; whether it’s a dash of lime, rhubarb syrup or a lychee thrown in, this is a very versatile drink with a crisp, clean and smooth taste. It was invented to cure and prevent malaria in the ranks of the British Army in India but has evolved to become one of Britain’s favourite tipples. Stay at the luxurious Portobello Hotel, just a few minutes’ walk from London’s Ginstitute, a dedicated gin venue with an exhaustive G&T menu.

Mojito in Cuba

The origin of the mojito is hotly contested; some believe this rum, lime, sugar and mint concoction was invented by African slaves in Cuba’s sugar cane fields. Others claim it was created to cure a scurvy epidemic on board the fleet of Elizabethan mariner, Sir Francis Drake, while in the Caribbean. But provenance aside, this timeless cocktail was bound to become well-known and got its first glimpse of fame as the favourite tipple of writer Ernest Hemingway. One Havana Bar – La Bodeguita del Medio – claims to be a regular haunt of Hemingway, with an inscription of ‘My mojito in La Bodeguita, My daiquiri in El Floridita’ in his handwriting framed on the wall. Pisco sour in Peru

As with most popular cocktails, there are several claimants to the pisco sour’s creation. Though Chileans feel differently, Peruvians maintain that combining pisco (an amber-coloured South American brandy) with egg whites, sugar syrup, lime juice and then garnishing with Angostura bitters, was their idea. The story goes that American bartender, Victor Morris, moved to the Peruvian capital of Lima in the 1920s and opened the wood-panelled Morris bar, which first served this local twist on the classic whiskey sour cocktail. With a complex sweet and sour flavour, this frothy, citrusy spring drink is nectar of the gods. A stay at the Country Club Lima Hotel, a mansion hotel whose saloon bar serves a mean pisco sour, will help you experience this local favourite.

Bee’s knees in the USA Mimosa in France Supposedly created to mask the pungent bathtub gin of the Prohibition era in the USA, the bee’s knees has matured into a sophisticated cocktail perfect for summer. It’s a mixture of gin, lemon and honey – sometimes with a splash of orange juice and a spiral of orange peel on top. Honey wasn’t a traditional cocktail ingredient at the time, but it was discovered that it adds a pleasant floral element to this otherwise simple drink. Stay at Concord’s Colonial Inn in Massachusetts, a 7-minute drive from Woods Hill Table; this farm and restaurant grows its own produce and has a delightful honeysuckle gin and organic honey bee’s knees cocktail on the menu.

Dreamed up by a bartender named Frank Meier, the world’s first mimosa was served at the Ritz Hotel in Paris circa 1925. Containing orange juice, Champagne and a teaspoon of Grand Marnier or triple sec, its refreshing, light and sweet flavour have made it one of the most popular beverages to accompany a Sunday brunch. It was no doubt inspired by the similar Buck’s Fizz cocktail – invented at the Buck’s Club in London in 1921 – which uses twice as much Champagne as orange juice and was apparently intended to provide club members with a dignified excuse for drinking alcohol before lunch.

Americano in Italy

This Italian cocktail dates back to the 1860s, when its creator Gaspare Campari first added it to the menu at his Milan bar. It you haven’t yet tried Campari (Italy’s national drink), then this cocktail is a good way to ease yourself in; the bitter taste of the liqueur is complemented by sweet vermouth and softened with soda water, making an invigorating spring-like drink. Check into the luxurious and fashionable Room Mate Giulia, right in the city centre where you’ll find endless Campari bars.

Garlic Herb Shrimp and Pesto Crostini

DIRECTIONS

These grilled crostini are ideal for backyard summer hangouts. You can prep the tomatoes and grill the baguette ahead of time, then toss the shrimp on the grill once everyone is ready to start snacking. The number of shrimp in each package varies from 12 to about 15, so try to cut the baguette into the same number of slices as there are pieces of shrimp.

2. Preheat grill to medium heat. Brush both sides of baguette slices with remaining 1 tbsp oil, dividing evenly. Arrange in single layer on grill. Cook, turning once, until grill-marked, about 4 minutes. Transfer to large plate. Set aside.

Per serving (1 crostini): 80 calories, fat 4 g (1 g of which is saturated), sodium 160 mg, carbohydrate 9 g, fibre 0 g, sugars 0 g, protein 3 g INGREDIENTS 1 cup (250 mL) PC® Axiany Cherry Tomatoes (about half 255 g pkg), chopped 2 tbsp (25 mL) olive oil, plus additional for oiling grill 1 tbsp (15 mL) chopped fresh basil Pinch (0.5 mL) salt Half baguette, sliced diagonally into 1/4-inch/5 mm thick rounds (12 to 15 slices) 1 pkg (340 g) frozen PC® Garlic & Herb Grilling Raw Butterflied Shrimp 2 tbsp (25 mL)PC® Pesto 98

1. Stir together tomatoes, 1 tbsp oil, basil and salt in small bowl. Set aside.

3. Brush grill with oil. Arrange frozen shrimp, shell side down, in single layer on grill. Close lid and cook over medium heat, turning halfway through cooking time, until opaque throughout and shells are pink, 5 to 7 minutes. Transfer to separate large plate; remove and discard shells. 4. Spread pesto over top of baguette, dividing evenly. Top with shrimp and tomato mixture, dividing evenly. Chef’s Tip: No barbecue? Arrange baguette slices in a single layer on a baking sheet and drizzle with oil; bake in 400°F (200°C) oven, flipping baguette once, until crispy and light golden, about 6 minutes. Set aside. Arrange shrimp, shell side down, in a single layer on a parchment paper-lined baking sheet; bake in 450°F (230°C) oven until opaque throughout and shells are pink, 10 to 12 minutes.
