On many warm summer evenings after dark, I can be found walking my two boxer dogs and gazing into the lit up homes around me. I enjoy critiquing whether or not they have hung artwork too high, admiring an unusual ceiling fan or simply analyzing the choice of paint colour. Ok, yes, I am walking quite slowly at this point. I often come away with decorating ideas or, better yet, stark examples of what not to do when designing a living room, kitchen, dining room, etc. You will not be surprised to learn that many in my neighbourhood close their blinds when they see me rounding the corner. But I know I am not alone in my passion for all things involving home décor. The reason there are so many interior design and home décor TV shows and magazines is because so many people just like me and love looking into other people’s spaces. In this edition of GoodLife, we open the doors to three magnificent homes in our area and take a guided tour, admiring what the homeowners have chosen to do with their space, with or without a designer to lead the way. For those who know what level to hang their artwork, we speak with the shop owners at Gallery 111. This creative group has opened in downtown Barrie to exhibit and sell art. The backyard barbecue continues to be a great Canadian summer pastime and Ted Reader is the expert in “everything grill.” In addition to promoting his new book “Gastro Grilling,” Ted shares some of his favourite recipes along with top grilling tips. In keeping with fire and food, the popular cottage/camping favourite s’mores has been kicked up a notch and we have the instructions on how to do just that. With a homemade graham cracker and flavoured marshmallow recipe, along with a chocolate ganache, I can only imagine how many times these pages will be ripped out for safekeeping in the family recipe book. GoodLife food writer Katherine Elphick, along with chef Randy Feltis and his wife Sarah Jackson, take a tour of The Farmhouse to find out how this restaurant is bringing “comfort food done well” to a new level. To understand what that means, you must experience it first-hand and I promise you won’t be disappointed. Finally, cross the globe to India to discover the mystique and wonder of this faraway land, get health and beauty advice, find out how to pick the perfect swimsuit and more, all included in this issue of GoodLife. Close to 200 people gathered June 13 at the Spotlight event Centre to help raise funds for a deep-drilled well and generator for the Barrie Dream Centre in malkangiri, India. Past the ensuite is an amazing dressing room with custom, built-in, glass panel closets, a window seat and custom blinds. “My wife got the bigger side, of course,” said Karl. Also on the main floor is an office that can be easily converted into a bedroom. This is the only room that doesn’t have a window to the backyard. But the view of the court on which the home sits is still interesting thanks to the abundance of mature trees. Across from the office, there’s a powder room with dark stain vanity, tile backsplash, bowl sink and automatic sensing lighting. On the other end of the main floor, the laundry room is complete with storage space, vanity and sink. From there you can access the threecar garage and the charcoal BBQ deck. This BBQ is conveniently located near the kitchen for easy access while preparing quick grilling recipes. “It’s great for saving some trips back and forth,” said Karl. Since Karl is big on technology, he wired every room with Ethernet, cable and phone outlets. In addition to that, surround sound is placed all around the house for the enjoyment of music. “You can listen to the radio or plug in your iPod and hear it all around,” he said. And the basement is fully equipped with a large family room within a built-in home theatre. But since this space is really their ultimate indoors entertaining spot. There’s another large seating area facing a stunning fireplace. Right across from that is a restaurant-like all wood wine cellar and a full wet bar with high chairs. This space is the perfect crowd hangout. In the basement, there are also two other bedrooms and a full three-piece bathroom. Imagine leaving your home in perfect condition and head for a long weekend getaway. when you return, nothing is the same. The house has flooded and everything is a write-off. keith and Pat keindel experienced this exact disaster last August.

When the water inlet to the toilet tank burst, the entire house flooded in less than 48 hours. This left the Keindel family with only two options – sell the house as is or renovate everything. Since the view from the house is absolutely spectacular, walking away from this property was the tougher choice. Around that same time, Pat met Catherine Staples, principal interior designer of Staples Design Group in Barrie. “Right a way we realized just how similar our tastes were,” said Pat. help them love their home again. What happened to the Keindels was catastrophic, said Staples. Most of the house was basically gone. They lost many items that, unfortunately, time cannot bring back. Some of these items included their daughter’s baby pictures from 30 years ago, as well as china and crystals collected by Pat’s grandmother more than 100 years ago. “It all smashed when the cabinet collapsed,” said Pat. Since the house had to basically be taken down to plywood, Staples decided to transform the main floor from a closed off, outdated design to a completely open-concept layout. This made the main floor the perfect contemporary space for entertaining. The varied ceiling heights not only add architectural interest throughout the space, but also help break up areas within the main floor to make it feel cozy. “The transformation is staggering,” said Pat, who was almost in tears at first sight of her new home. Pat and Keith wanted to add their personal touch to the theme of the house. Because they both love wildlife, they added paintings of wild animals around the main floor. Staples used this theme through fabric choices for accent furniture, such as the two animal print chairs at the dining table ends. The print is seen again on the reupholstered vintage chaise lounge in the

living room. Staples is known for her choice of neutral colours throughout her designs. This allows her to keep the space calm but also very elegant. She mixes some modern simplicity with a touch of classic to bring true richness into the Keindels’ home. She converted the Rumford stone fireplace into a much more modern focal point. When you enter this gorgeous residence, the fireplace is the first thing you see. This once wood fireplace has been converted to gas but not cleaned from the inside, to keep an authentic wood fireplace look. To enhance the living room, some luxury upgrades were included. The television is electronically covered with a large Carl Brender’s polar bear painting. The speakers are also hidden behind the lamps in the room. These upgraded features were added to help quickly convert a family TV room into an elegant living space when entertaining guests. But that’s not it for sophistication. To add

more richness to the area, a couple throw pillows were made from vintage genuine mink fur coats. Pat loved how this idea ties back to the wildlife theme. She decided to add more of these pillows in the master bedroom that’s located on the main floor. In addition, the walkin closet, positioned under the stairway, was completed with a custom storage system in a chocolate pear colour and installed by California Closets. Their master bedroom’s ensuite is a true sanctuary. With a distant but unobstructed view of Georgian Bay and the Blue Mountains, time can easily pass while soaking in the bathtub. The steam shower in the ensuite bathroom is also large enough for two. The transformation, however, didn’t just include the floor layout and its upgrades. The Keindels decided to restore many pieces of furniture that were impacted by the flood, in addition to some new items they had to purchase. Since the furniture was of great quality to begin with, restoring it instead of buying all new saved the family quite a bit of money, said Staples. But more importantly, it allowed them to keep furniture that was special to them since the 1970s. Pat and Keith travelled to many regions of the world for work. They lived in the Far East for some time. “There we developed a passion for Asian antiques,” said Pat. Today their home is filled with some stunning pieces that are thousands of years old. Many of these pieces also had to be repainted by hand. The two antique Chinese wooden chairs alone took Conda Restorations six months to complete. Pat was glad she could continue to cherish her antiques after Conda’s great work. Appreciating the richness in the Asian art, Staples decided to incorporate the Asian theme, along with the wildlife, throughout the house. The cherry blossom patterns on the fabric chosen for the kitchen’s high chairs give an Asian vibe that connects the kitchen to the subtle Oriental theme found throughout the rest of the main floor. The entire kitchen is brand new. Elegant white maple cabinets, from Kitchen Art in Barrie, mixed with an espresso coloured wood stove hood, replaced the old water-damaged cabinets. This is all complemented with rich Cambria quartz countertops. And in order to not obstruct the fabulous outdoor views spotted from the kitchen, Staples installed Hunter Douglas’ Silhouette window »

Before shadings. They bring in just enough sunlight without hiding the outdoors. These stunning blinds are all managed by remote control. Similar to the main floor, the second level was also completely renovated. The same espresso hard wood floorings used on the main level replaced the water damaged flooring of the second level. To complement this, the exposed wood beams on the ceiling were also stained in espresso. This adds elegance to the space while keeping a slight country feel to the house. Fresh coats of paint make the second floor feel calm and inviting. One of the colours repeatedly seen throughout the house is a spa-like sea blue shade. “I find it to be a very soothing,” said Staples. It’s used as an accent colour with the neutrals on the main floor as well as the second. 34 | GoodLife Barrie Edition - July August 2013 ■

On the upper floor’s foyer, Staples included an interesting seating area, made up of the Keindels’ restored vintage furniture. A couple wingback chairs were reupholstered with the trendy clove leaf design. She also added a trendy Hi Ho Cheerio chair. It’s a wooden chair with unique honeycomb circle carvings to the sides and the back. The light look of this chair helps break up bulkiness in the space. Down in the basement, the in-home gym is located. With mirrored glass closet doors and a TV, this space is perfect for working out. And the steam shower in the basement’s bathroom is great for cooling off. Despite how beautiful the house looks now, the project was extensive. There was more than 5,000 square feet of damage. “Since this has happened to us, everyone in our community has paid more attention to their water system,” said Pat. Water regulators are being installed in newer homes in the area to ensure that water pressure doesn’t go above 85 psi. Of course, Pat and Keith have taken their own precautions as well. They added a water shutoff feature to their home alarm. “So when we leave the house, the water is automatically turned off as soon as the house alarm is activated,” said Pat. Staples’ contractors have also mould-proofed the entire house, to make sure it never found its way in this gorgeous home. “It’s shocking what water can do in a very short period of time, it was just 48 hours,” said Pat. She describes what they’ve been through as a traumatic experience. “Unless you go through it, you have no idea what it’s like,” she added. Now Pat and Keith are excited to get back in their home and catch up on some sleep they’ve been missing for months. Their new home will allow them to do exactly that. “They really deserve to have a beautiful home,” said Staples.

The local restauranteur is referring, of course, to his waterfront eateries The Farmhouse and PIE Wood Fired Pizza Joint 2. Recently, this GoodLife reporter sat down with the 38-year-old multi-tasker at

the newly-opened Farmhouse to dish about breathing new life into the historic Allandale building (formally Beaches) and converting it into a family-friendly dining establishment. Conversation topics also covered the closing of Oscars (a restaurant he took ownership of in 1999 at the age of 24), the success of PIE, family life and his new gig as a barbecue personality. »

Why close Oscars and open The Farmhouse (on April 18) with your wife Sarah Jackson? RF: Oscar’s location was terrible. We were there for 14 years, our lease came up and we didn’t renew it. We always felt we were swimming upstream at Oscars because that area didn’t develop. Everything was closed around us. There was no foot traffic, little parking and no patio. The sad thing about Oscars is that it was a fantastic restaurant, but it just wasn’t thriving. We tried almost everything to make it work. We reinvented ourselves more times than Madonna did (he laughs). How did The Farmhouse come about? RF: We were looking for a new location, and this place came along really, really fast. So we had to pull the trigger. The only way to open The Farmhouse and PIE 2 (he co-owns both PIE locations with Craig Russell) within the same month was to close Oscars and bring over its entire staff, including our head chef Chris

Gardener. It’s called The Farmhouse because the building reminded me of my aunt and uncle’s century home. They were pig farmers in the Bradford area. Why not move Oscars to The Farmhouse? RF: Oscar’s wouldn’t work here. This is a country place with Victorian architecture, and Oscars was all about stainless steel and cuttingedge stuff. The Farmhouse is licensed for 325 people and Oscars food doesn’t translate well to that number, so we had to bury Oscars. Farmhouse food is more family friendly -dinner for adults runs about $25 per person, and the kid’s menu is $8 (includes a drink and dessert). PIE taught us that family-friendly restaurants can be super successful in Barrie. You describe the menu as “family-sheek farm food.” What does that mean? RF: Simply put, it’s comfort food done well with local ingredients. The cool thing about the menu is you choose your entrée, and then


you get to pick two sides (out of 12 options). It’s choosing your own adventure and people seem to love it. The idea is to give folks what they want. So you can order up the barbecued ribs or the crispy local trout and have it with a salad AND fries. Everything we serve is food you’d find at a family restaurant, but we up it a notch. Our greens are grown on-site and we specialize in offering fresh and sustainable farm food, so locally grown and Canadian produced is very important to us. Along with our meat and poultry, all of our seafood and fish is Canadian farmed, including our oysters, mussels and halibut. Tell me about the indoor greenhouse. I love that it’s the first thing you see when you walk in. RF: It’s called the Urban Cultivator www. urbancultivator.net and it grows 13 flats of gourmet greens and herbs every 10 days. We saw it on Dragon’s Den and just had to have it. It’s a BC-based company and Arlene Dickinson backed them. What do you recommend? RF: You can throw a dart at the menu and everything is fantastic. But, you must have the cornmeal fried and parmesan oysters because they might be the best thing in the entire world! For the main course, we are doing a bacon glazed grilled pork chop, and it’s probably the best pork chop you’ll ever have. People are also loving the halibut right now, especially because it’s in season. Did you bring any Oscar’s specialty items over? RF: We brought over the mussels and the oysters, and instead of Oscar’s salmon, we are doing Farmhouse smoked trout. We still use the theories of Oscars, but have simplified things. Our food philosophy is to take the best products we can possibly buy and treat them very simply. What are your signature dishes? RF: We’re concentrating on a Canadian triple A roasted strip loin. It’s our take on prime rib, but we use a strip loin because it’s a leaner cut. It’s seared, it’s cooked, it’s roasted but we’re bringing in some molecular gastronomy, similar to what you’d find in a Michelin star restaurant. We use a sous vide cooking technique, which is French for “under vacuum,” and it’s very cutting edge. »

Choices include: a six pound farm organic chicken for $20 per person (minimum 6 people), a whole suckling pig for $35 per person (8 person minimum) or a six-pound PEI whole farmed halibut for $40 per person (minimum 4 people). We just require 48 hours notice.

After sitting abandoned for several years, Mark Porter purchased it in 2007 and undertook a $1 million renovation to restore the building to its former beauty to house Shutters restaurant, and later Beaches. Interestingly, the building is rumoured to be haunted by a cleaning lady who was murdered here years ago. Legend has it that she likes to rattle the glasses and turn the TVs off and on. Have you had any paranormal experiences yet?

You and Sarah have a two-year-old son named Cash. Did having a child give birth to the family restaurant idea? RF: We take Cash everywhere, and obviously Oscars wasn’t a comfortable environment for children. We wanted to build a place that we would feel comfortable bringing him to. Sarah has taken a strong interest in The Farmhouse and she’s really the one working the hardest on this venture.

RF: I’ve heard about this ghost. Even Koos and Lawna Uylenbroek (owners of the Crazy Fox Bistro who formally ran their restaurant out of this building) have mentioned stories to me about this place. While I haven’t had any haunted encounters yet, one of our servers claims she had an experience. It was the night before our big Mother’s Day brunch and we were all staying late to set up. At about 1 a.m., she ran down from being alone upstairs and was totally freaked out. She felt a presence behind her and then a loud bang in her ear, like someone popping some bubblegum. Needless to say, I haven’t had an encounter yet, but I would love to experience something like that. Oh, whatever (he laughs).

This brick building is rich in history, so I did some research before our interview. Originally built in 1907 to house the Allandale Railway YMCA, it offered overnight accommodation to the railway men who were awaiting

Mark Porter (who owns this building and the former home of the Titanic survivor) brought them in. They were originally carriage house doors. Let’s hear about your orchard and garden signature cocktails. RF: They’re fresh juice and herb cocktails, and they’ve been going crazy for us. An outside company makes and delivers them every two days for us. The “kale Caesar” is one of our best sellers! Speaking of the bar, every day we offer an “appy hour” from 4 pm to 6 pm and it includes a glass of house wine or a pint of draft beer, and a selection of appetizers for $5. » What about desserts? RF: It’s homemade pie and that’s all we do. Why just pie? We’re a farmhouse and that’s what you’d get served at the farm. Our three pies are chocolate pecan, lemon meringue, and apple. Speaking of pie, I heard that when you were 12-years-old you won first place for your apple pie at the local country fair. Is that true? RF: I won the apple pie competition at the Carden Fall Fair. I gravitated towards the kitchen at a pretty young age. (See Feltis’ apple pie recipe on page 43). What about brunch? I hear you serve up some fabulous maple syrup poached eggs. RF: Those poached eggs are really good and we use my dad’s maple syrup to make them. It’s a farm heavy breakfast buffet. We serve roasted strip loin, peameal bacon, home fries and we cook your eggs to order. The buffet table is rounded out with other items like smoked trout, fresh fruit, apple salads and so on. It runs Saturday and Sunday from 10 a.m. until 2 p.m. and it costs $14.75. Did you renovate? RF: Not much. The building was in really good shape. The only thing we’ve added are some wooden banquette tables. They give the place a cozy, country farmhouse feeling. »

What about private parties and weddings? RF: We have private parties almost every day and weddings are coming in hard. It’s just crazy! Along with being a guest expert on Cityline, let’s hear about your new spokesperson gig. RF: I just became the Canadian spokesperson for Black and Decker barbecues. So when they need a spokesperson to talk about their barbecues – they fly me out and away I go. Black and Decker is currently doing a grill tour across Canada exclusive to Walmart. Charcoal grilling takes centre stage in this book. “Gas, with its instant heat, is super convenient,” says Reader. “But when I’ve got the time, the best is charcoal. It makes everything so wickedly flavourful.” Why call the book Gastro Grilling? “The word ‘gastro’ comes from ‘gastronomy,’ and most people seem to think that means pretentious. Says Reader, “Gastro does not imply pretentious when I’m involved. Gastronomy means ‘the art and science of good eating.’ There are other definitions in play, but I like this one. It’s simple and the truth and unpretentious, like me and my food.” Famous for grilling the un-grillable, Reader’s latest collection of fiery fare is characteristically

creative. His recipe for Angry Blueberries with Cold Cream showcases the barbecue guru’s wild imagination. “Sometimes, I get a little carried away,” he chuckles. Preparation instructions include visiting a local pharmacy to get a medical syringe, filling individual blueberries with spiced whiskey and then roasting them on a grilling stone “until they pop and burst and dance around the stone,” he explains. “Then you squeeze a little fresh orange juice over top and spoon them over ice cream.” Additional crowd-pleasers include his mouthwatering foot-high burger, margarita wings, southern barbecued pulled pork, shrimp and brie pizza with almond pesto, inside-out grilled cheese steak, apple cider barbecued salmon,

peanut butter and jelly steaks, and many more. As for his personal favourite? “Hmm. That’s a tough question because I have so many. However, I absolutely love the grilled-roasted Arctic char with onion, pear and sage stuffing.” How does this grilling king come up with such innovative ideas? “I love pushing the boundaries and having some fun,” says Reader who has authored more than a dozen cookbooks. “Never say you can’t. Just say you can.” The grilling master also encourages yearround outdoor cooking. “During the colder months, get yourself a toque, some long johns and a heater in your garage. That’s my philosophy, and that’s what I do.”

2 cups (500 mL) Devil’s Cut by Jim Beam 1 vanilla bean ¼ cup (60 mL) honey 2 slices double-smoked thick-cut bacon ½ cup (125 mL) condensed milk 4 ripe bananas, unpeeled 4 to 8 slices raisin bread 1 tsp (5 mL) chopped fresh sage

PREPARATION: 1. Pour the bourbon into a canning jar. Split vanilla bean in two and scrape out the seeds, cut the pod into 1-inch (2.5 cm) sections and add both the seeds and the pod into the bourbon. Add in the honey and seal jar. Give it a shake to dissolve the honey in the bourbon. Set aside to infuse for 24 hours. 2. Cut the bacon into ½-inch (1 cm) thick lardons, or strips, across the width of the bacon. In a pan, fry the bacon lardons over medium heat for 5–8 minutes, stirring occasionally, until browned and crisp. Remove from heat and drain. Pat with paper towels to remove excess bacon grease. Place bacon in small bowl. Spoon over the condensed milk and drizzle with a little vanillainfused bourbon. Stir to combine and keep warm.

3. Fire up your grill to 450–550°F (230–290°C). 4. Suck up the bourbon mixture into an injection syringe. Set aside. 5. Grill the bananas for 5–8 minutes per side, until the banana skin is darkened and begins to split. The flesh of the banana should be warm and soft . Inject each banana with a little squirt of infused bourbon. Be careful, as the bourbon will more than likely ignite as it drips out of the banana.

6. At the same time as you are grilling the bananas, grill the raisin bread until golden brown and crisp. 7. Remove bananas from grill and carefully open the peel to expose the hot tender banana. Grilled Half Chicken with Kick O’Honey BBQ Glaze This has got to be one of my favourite recipes because it consists of crispy skin, a little white meat, a little dark meat, all moist and juicy with a sweet kick and NO bones! Ask your butcher to split and debone a whole chicken; this will make your job a lot easier. For the glaze, make sure to use a really good fullflavored honey. I recommend orange blossom or buckwheat honey for this recipe. Serves 2 to 4 4 boneless skin-on half-chickens, skin intact 2 tbsp (30 mL) Bone Dust BBQ Spice (recipe included)

1 tbsp (15 mL) cracked black peppercorns

4 green onions

1 tbsp (15 mL) cracked Szechuan peppercorns

1 shallot, finely chopped

2 tsp (10 mL) cracked coriander seeds

4 tuna steaks (approx. 6 oz/170 g each), cut 1½ inches (4 cm) thick

PRePaRaTIon: 1. in a bowl, mix together the four peppercorns, coriander, hot pepper flakes, kosher salt and brown sugar. add the minced garlic, soy sauce and olive oil. Stir to make a pepper slurry and set aside. 2. To prepare the Smashed green onion Butter, place the 4 green onions onto a cutting board. Take a heavybottomed frying pan and smash the green onions. You want them to split apart and extract the juices. roughly chop them up and place in a bowl. Season the smashed green onions with a little kosher salt and the lemon juice. add shallot, cilantro and softened butter. Mix it up with a spoon to incorporate. Transfer to a small bowl and set aside. 3. fire up your grill to 550-650°f (290–345°c). 4. rub the tuna steaks with the five-Pepper rub, pressing the seasoning into the flesh so that it adheres. 5. grill the tuna steaks for 1 to 2 minutes per side directly over the hot flame for rare. it won’t take long. remember that the more done the tuna is, the dryer it becomes. rare to medium is my recommendation. 6. at the same time as you are grilling the tuna, grill the green onions for 2 to 3 minutes, turning until lightly charred and tender yet still bright green. Season with a little salt and pepper. remove onions from grill. 7. remove tuna from grill. Serve immediately with a dollop of Smashed green onion Butter and grilled green onions on the side.

2. Slice the baguette into 12 rounds about 1 inch (2.5 cm) thick. Butter one side of each slice of bread. Place 6 slices of bread butter side down. Sprinkle each with 2 to 3 tbsp (30 to 45 mL) of the mixed cheese. Top with a slice of bread, butter side up. Repeat for remaining sandwiches and set aside.

3. Fire up your grill to 350–450°F (180–230°C). 4. Place your grilling stone directly over your fire source. The stone should sizzle when you drop a little knob of butter onto it. Be careful not to overheat the stone because, as even a heat as it is, it can still burn your food. Open grill lid and drop a teaspoon (5 mL) of butter onto the hot stone. As it melts and sizzles, add the red onion and shallot and sauté on the stone. Using a pair of tongs, spread the onions into an even layer. Let the onions sizzle for a few minutes, then give them a stir with the tongs. Turn them about so they start to brown on all sides. Set onions aside in a small bowl or a corner of the stone. Keep warm. 5. Season all sides of the filet mignons with kosher salt and black pepper. Set aside.

6. Stone grill the sandwiches for 2 to 3 minutes per side, turning frequently to prevent burning, until the bread is golden brown and crisp and the cheese is melted. 7. At the same time as you are grilling the cheese sandwiches, drop another teaspoon (5 mL) of butter onto the hot stone and place seasoned steaks onto the bubbling butter. Stone fry the steaks for 2 to 3 minutes per side for medium-rare doneness. Remove steaks from grill stone and set aside to rest for 5 minutes. Remove grilled cheese from grill. Thinly slice each steak into four, on the bias. Place two slices of steak atop the grilled cheese. Garnish with caramelized red onions and fresh thyme. Serve immediately.

Directions Mix flour, salt and sugar in a bowl. crumble butter and shortening into flour until pea size nuggets are left. Mix water in gently, be careful not to overwork. Pastry should be a little raggedy. Wrap in saran wrap and place in fridge for 1 hour. Roll out pastry to 1/4” thickness. Cut out rounds and place in muffin tin. Chill while you prepare fruit filling. Mix 3 cups mixed fruit and berries, with 1/2 cup sugar and 2 Tbsp. cornstarch. Fill each tart shell with fruit until brimming. (Fruit will break down and shrink during baking so start with them heaping full.) Top each tart with a pastry shape. Brush pastry with milk and sprinkle with sugar. Bake in lower third of 350F oven for 30-40 minutes or until pastry is lightly browned and filling is bubbling. Serve warm with lemon gelato.

For the founders of Gallery 111, an art collective that opened on Dunlop Street in December, that is exactly what they set out to do.

Prior to the opening, interior decorators and designers working in Barrie frequently made trips to Toronto to find specific furniture items or artwork for their projects. They couldn’t find the quality and style they wanted north of Highway 9 so spent countless hours driving back and forth to the city. The need Gallery 111 sought to fill was to provide a conduit between area artists and the designers, as well as the public who could appreciate and use the work that was available. “We wanted to let people know that they didn’t have to always go [the Toronto]route,” said Sarah Uffelmann, a goldsmith and core member of Gallery 111. “Whether they are a designer or shopper, there are funky, artful items in Barrie.” The 12 full members are painters, sculptors, jewellery makers, potters, print makers, glass workers and furniture makers. »

“Our goal is to provide a link between the artists and the community of people who are interested in purchasing art,” said Uffelmann. Jeanie Myers, a professional organizer and interior decorator, attended the Gallery’s open house called Creatives working with Creatives. “I love art,” said Myers. “A painting or piece of art can work as an inspiration [when decorating]. But it is important to find the key piece.” Traditionally artwork is the last thing considered when choosing a decorating theme for a room. Owners or designers have an empty space on the wall above the fireplace and look to find a piece to fit the space. Claudia McKnight, a teacher in the Interior Design program at Georgian College and a core member of Gallery 111, says a piece of art that inspires the homeowner or client can be a place to begin. “It’s important to surround yourself with things that have meaning,” said McKnight. “The home needs to be a healing place rather than another war zone.” By beginning with artwork that appeals to the owners on a personal level, the colour choices and theme can flow from that point of inspiration. “What we surround ourselves with is part of our essential well-being. Authentic art invites us to pause. It helps us to transcend our everyday worries.” When the work is created by a local artist, homeowners and designers often appreciate the piece even more. The work takes on its own significance based on the individuality of the artist and the experience of selecting the work. Whether it is a hand-crafted table or a standalone sculpture, owners will enjoy a vibrant piece of art work for 20 years while, all going well, the piece also gains in value. “We’re always being encouraged to invest in our own community, whether it’s by buying local food or building materials. Why not have the same approach with art?” said McKnight. Artists in the collective are available for consultations and can produce pieces if clients can’t find what they are looking for at the gallery. Since not everyone has the luxury of beginning their design with a piece of art, they also work with people to find a piece that fits with their existing space. “It depends on the person whether they start or finish with art,” said McKnight. While the Gallery 111 founders felt that there was a definite need for this in Barrie, it wasn’t until the storefront at 111 Dunlop St. became available that things kicked into high gear.

Many of the artists now participating were part of the Mad & Noisy Gallery in Creemore that was a collective before it was sold, leaving many artists without a place to hang their hat. With artist Jill Price at the helm, the group decided to go ahead with the Gallery 111 collective in mid-November 2012 with the belief that a strong community, whether artistic or otherwise, benefits everyone associated with it. “We knew the space would be open on December first,” said Price, the artist in residence who has studio space in the back of the gallery. “So we pulled together the Barrie contingent from Mad & Noisy and decided in a week.” One unique aspect of Gallery 111 is that it operates on a different model than traditional galleries. Artists keep 100 per cent of their sales and pay their share of the rent with the proceeds. Wall space is divided between members with sculptors occupying the floor. “Everyone is guaranteed a feature show,” said Price. “And we also work with commission-based artists.” Brett Lundy, a sculptor and

furniture maker out of Toronto, opted to join this new collective even though he doesn’t live in the area. “You can’t find this [model of co-operative] in Toronto. There just aren’t many highend craft places.” The response from other members has been similar; they are grateful to have a place to call home rather than shopping their wares between galleries. “We’ve really bought into what we’re trying to do,” said Uffelmann. “There’s a sense of ownership for our members.” The downtown location is essential, she noted, and they believe in the importance of being involved in the downtown development. Ultimately, Gallery 111 is about filling a niche between two realities: designers looking for unique inspiring art to either kick start or supplement their designs, and artists looking for visibility to the design world and members of their own community. “I am passionate about other artists and their work,” said curator Price. “I get energized by being part of something bigger.”

Anyone who follows the dance world will know of 21-yearold Jordan Clark. A resident of Tottenham, Clark won the So you Think you Can Dance Canada competition in 2011 and has been seizing the opportunities that arose from that win ever since. A cast member for The next Step TV show, going into its second season on the Family Channel, and having just finished filming east Side Story, Clark shared a few of the day-to-day joys and experiences that have gotten her where she is today. 1. Good beGinninGs It sounds odd but I like to get ready for my day. I have a shower and a protein shake. By preparing myself, I go through a transformation from dead to alive. It excites me a little. I like that process of feeling like a new person and that each day is a new start. 2. An eYe on The fUTUre I love going to the movies at least once a week. Eventually, my goal is to be on the big screen so it’s a great learning experience and not just to relax. I have so many favourites. I loved The Notebook but also The Avengers, especially the Hulk. He gets angry and blows up, and punches people. How cool is that? 3. A solid foUndATion My mom has always been my #1 supporter. When I was eight, I told her I wanted to be a professional dancer and she didn’t humour

me. She said “Okay. How do we do it?” It really takes a whole family to support this kind of [dream] with all the driving and costs. 4. A Teacher I wouldn’t be where I am today without Vlad Novitski. I started working with Vlad’s Dance Company in Richmond Hill when I was 13. He was like a father figure to me. I often spent more time with him at the studio than with my own family. But he also made me sit out if I didn’t do my homework. 5. A Portable Life My life is on my MacBook Pro. I love pictures of where I’ve been and videos to remind myself of what I’ve done. I use social media to keep in contact with a lot of family and friends because I’m so busy. I don’t like cellphones much but I do love instagram. The fact that you can see what people are doing at that exact moment is amazing. 6. The Go-To Chocolate chip cookies are my weakness. In Grade 12, I taught at two studios, choreographed at three, did my own dancing and was in school. I remember coming home every

night after dance to fresh baked cookies. They were my go to. I try to stay away from them now though. I like Pillsbury cookies with a nice glass of milk but any kind is good. 7. The Release I love hot yoga especially when I don’t have much time. I like to pack my schedule really tight so that I can barely move and then hot yoga is my release. I love to sweat and I love the sweating release. I drink lots of water and eat before. 8. The Passion I couldn’t live without dance. It’s my hobby not just my career. I’ve taken a lot of acting lessons this last year and that’s the direction I want to go. I will always dance but I would love to be on the big screen or on Broadway. I have so many goals now. 9. The Idol I love Beyoncé. The way she dances and the way she sings. It’s so sassy and so inspiring to me. She’s talented and I look up to her. Her middle name is Giselle (the name of the character that Clark plays on The Next Step.) So I think this was meant to be.

The wider straps break up the wideness of the shoulders and help create balance. also a deeper V-neck can easily show off your upper body. If you want to distract focus from the lower part of your body… forget about those skirted bathing suits. not only are they so outdated; they just don’t do the trick. “We would never put women who are heavier on the bottom in skirted suits and that’s usually what they all come in looking for,” said Decola. instead she recommends an a-line bathing suit, it’s all one piece and doesn’t really go from tight to loose. it just about covers the hip and that’s all you need, she said. If you’d like your thighs to look thinner and sexier than ever… Definitely avoid boy-cut shorts and opt for higher cut bottoms instead. Tankinis may be a great idea for ladies with bigger thighs. Solid colour bottoms can help lengthen the look of your legs and

patterned tops can drag focus away from curves that you’re trying to hide, said Decola. If you’ve got a more round figure… Try out an asymmetrical look. You can create lots of interest on the top with straps that flow from a ruched bandeau style top. and remember patterns should always fall where you want to lead the eyes. So if you want to hide that tummy, have a solid colour towards the bottom and patterns closer to the bust. in this case you’re creating balance by evening everything out. If you really want to hide some belly fat… consider a one-piece suit with side detailing, said Decola. This can slim you and help give your waist some curves. onepiece bathing suits with draping across the sides can definitely camouflage that pooch. retro patterns such as houndstooth and chevron are also great for slimming and totally in, she said. figuring out the perfect style won’t do the trick if you end up with a bathing suit that doesn’t fit you right. “You shouldn’t be falling out of it. it should be well fitting for your body,” said Decola. aged rustic feel, when the house was built back in 2008. “The kids didn’t believe we were asking them to do it and they loved it,” said Sonya Wedgbury with a chuckle. Despite the open feel of the main floor, Rob and Sonya wanted to make sure that there’s still some privacy on the main floor. So one key feature that the couple wanted was a family studio. It was an idea they had seen in a previous model home. It’s sort of a hideaway area on the main floor behind the kitchen, said Wedgbury. “We like to think of it as a multi-use space that keeps the mess away from the kitchen and the entertaining area,” she said. There’s space for a mini home office, a laundry nook, a powder room and an island counter for the children to get their homework done. The stone floor family studio is connected to the mudroom with a staircase to the second floor and the basement. This is an additional staircase to the one by the foyer. The couple decided it was a convenient addition. “When the kids are dripping wet from the pool they can run up these back stairs without wetting the rest of the main floor,” said Wedgbury. Right outside the family studio, there’s the modern French country kitchen. All white cabinets with a stone backsplash. A wooden island with a sink can comfortably seat four people. The country style legs at the seating side of the island give it an elegant dining table look, rather than an ordinary kitchen counter. Farrow Arcaro Design designed the kitchen and other parts of the main floor. It’s an interior design studio run by Marina Farrow and Katherine Arcaro out of Collingwood. “These ladies were so pleasant to work with and they’ve » » done some awesome stuff for us,” said Wedgbury. Adjacent to the kitchen is the butler pantry. It’s sort of a divider between the kitchen and the enclosed dining room. The couple uses it as an area to serve guests and store beverages. It’s also right behind the powder room that’s always kept pretty and well decorated for their guests. The Wedgbury family love hosting gatherings of family and friends. So having enough space to entertain large groups was a complete necessity in designing the floor plan. “It’s nice to have different spaces for adults and children,” said Wedgbury. This is why they added a small-enclosed dining room on the main floor. It’s a quiet space for adults to enjoy their meal while the kids have fun together, she »

Since the Wedgbury family enjoys hosting guests overnight, they decided to have their master bedroom on a separate floor. So Rob and Sonya’s suite is conveniently located on the main floor with stunning views of the outdoors. Their generously sized his and hers walk-in closet leads into the ensuite bathroom, where there’s his and hers vanities. Sonya pointed out how her side of the counter is lower than Rob’s. “So it’s comfortable enough for me to reach,” she said. The stacked stone veneer shower wall gives a spa feel to the bathroom. But the family’s true relaxation getaway is right outside their master bedroom. Directly from their suite, Rob and Sonya can walk out the French glass doors to their backyard. Out there a sanctuary waits. There’s a salt water swimming pool, a cabana, a seating area with a large stone fireplace and of course the outdoor sound system calls for a couple lounge chairs. Emma’s room complements the French country style of the rest of the house with a feminine touch of vintage and a burst of pink and lime green accents. On the other hand, with dark blue colours and a soccer theme, Robbie’s room can hardly be mistaken for anything but a boy’s room. An interesting feature he’s got is the hideaway closet underneath the angled ceiling. The door to this closet is only about three feet high. So it sure is only big enough for children. It’s where Robbie hides so many of his toys. And when their friends come over, they’ve got the bonus television room on the second floor, said Wedgbury. “It’s the hang out space,” she added. With a large-screen TV and a couple couches there’s plenty of space for many of Emma and Robbie’s friends. When the family moved up north they wanted to make sure that their home was also their loved ones’ home away from home. “We wanted people to come visit and spend the night, or even stay a little longer,” said Wedgbury. So guest suites were a high priority in designing the second floor. There are two guest rooms, both footsteps from a bathroom with a double-sink vanity. “One of them is usually locked up with grandma’s stuff, so it’s ready for her to come up anytime,” said Wedgbury. And if both of these rooms are occupied, that’s no problem. In the basement there are another two bedrooms, one of them with its own bathroom. It’s where Rob’s sister usually stays when she comes up from Toronto. They wanted to make sure that when their guests sleep over they are comfortable in privacy. “We didn’t want anyone sleeping on pull out couches or air mattresses”, she said. The basement is also the family’s getaway space. With heated flooring throughout, the area is warm and cozy year round. The surround system in the large recreation room means the family can enjoy a great movie with a large group. “When our kids have a lot of friends over, this is where they usually end up,” she said. The basement recreation area is so spacious. Sometimes I actually find Robbie playing fullon soccer down here, said Wedgbury with a giggle. MULMUR ARTIST CAPTURES CHANGING LANDSCAPES BY MAIJA HOGGETT As an artist in tune with his surroundings, the rural landscape of Dufferin and Simcoe counties has provided Peter Adams with a lot of subject matter over the years. From rolling country roads to neglected barns and snow-covered fields, the Mulmur-based oil painter has been capturing the changing local scenery for more than a decade. Adams was born in Scotland, but has spent most of his life in Canada. He started working with oils in high school and has painted parttime for more than 20 years. About five years ago he started painting full-time, and up until recently had a studio in Collingwood (he closed it to open a studio at his home south of Creemore). “My work has always represented a response to my immediate surroundings. Since moving to Mulmur Township 15 years ago, my work has focused on the beautiful landscape of Dufferin and Simcoe counties, but I’ve focused much attention on the changes that are happening to this rural landscape,” Adams says. “It’s always been about responding to what I experience in my own backyard. Similarly, my kids keep creeping into my paintings, and often provide an intriguing contrast to the changing landscape in the background.” 82 | GoodLife Barrie Edition - July August 2013 ■

Keeping a keen eye on the changing scenery, the Melancthon mega quarry proposal sparked a series of paintings for the environmentally conscious artist. While the company behind the 2,300-acre limestone quarry proposal eventually withdrew its plans last year, the idea of a mega quarry on prime agricultural land had already planted the seed for Adams’ Earth Scar Series, which focuses on the diamond mines of Canada, Russia and South Africa. “Although this represents a departure in subject matter for me, the series is the result of research conducted in response to the proposed mega quarry of nearby Melancthon Township. I’m still thinking about changes to the local landscape in this series, just stepping back a bit and considering the larger industry of resource extraction,” Adams says. The Red River Series, which gets its name from Bob Dylan’s love song the River Shore, is his most recent and focuses on the Yangtze River in China. Last year its waters ran red, inspiring Adams to continue exploring the “ecological discourse” of his Earth Scar Series. “I was inspired by a Maclean’s article about China’s Yangtze River turning bright red last Sep-

tember. I have yet to read any official explanation for this change, but it has provided an intriguing (and symbolic) visual for how humans interact with this planet,” he says, adding there are more paintings to come in this series. As Adams pushes himself to explore new subject matter, he is also pushing his boundaries with the mediums he’s putting on the canvas. “In the last year or two, I have started developing my own mixed-media technique, using acrylic washes, paint markers, oil sticks, as well as the oil paints I have always used,” he says. Adams’ work is getting attention locally. It has been featured at galleries in Creemore, Collingwood, the Dufferin County Museum and Archives, and more. In 2012 he won the Best of Show in the South Simcoe Arts Council’s Juried Art Show. That accolade led to an exhibit at the Gibson Centre in Alliston entitled Wetlands and Waterways. Murray is making a name for herself on the comedy scene. She is well known to anyone who attends Georgian College’s annual Gord Bastain Variety Show, and she’s been popping up around town MCing a number of events. “Comedy comes naturally to me. I don’t have any filters. Comics can be the court jesters of the world. Being able to laugh at ourselves is key,” she said. Born and raised in the Ottawa Valley, Murray moved to Barrie in 1985 to attend Georgian College. She now works at Georgian College, and she said it’s there she gained her comedic confidence. I loved it.” One of Murray’s biggest supports has been her friend, and fellow comedian, Shelley Marshall. “She has been an inspiration and a mentor. I really am inspired by her and she’s also my little coach and cheerleader.” Murray is busy working on a number of upcoming projects and also has a number of MC gigs lined up. “It’s all been by word-of-mouth,” she said. “I really enjoy doing the charity work.” As for the future, Murray said she has big plans. “My goal in life is to one day say ‘and everyone is the audience is getting one.’ I love Ellen Degeneres. I love the interviewing aspect of being an MC. I like talking to people. I’d love to have my own talk show. I’d love to have my own talk show.”

DOUBLE CHOCOLATE S’MORES Chocolate Graham Crackers Dark Chocolate Ganache Chocolate Swirl Marshmallow toasted

HOMEMADE GRAHAM CRACKERS 1 ¾ cups + 2 tbsp. all-purpose white flour 1/2 cup whole wheat flour 1 cup Demerara sugar or dark brown sugar 1 tsp. baking soda ¾ tsp. sea salt 7 tbsp. unsalted butter cubed and frozen 1/3 cup maple syrup 6 tbsp. whole milk

1. In a large bowl combine the flours, sugar, baking soda and salt. 2. Cut in the cubed and frozen butter using a pastry cutter or pulse in a food processor untill it becomes the consistency of a coarse meal. 3. In a separate bowl whisk together the maple syrup, milk and vanilla. 4. Add the milk mixture to the flour mixture and stir till the dough comes together, add more milk if necessary. Divide the dough in half and place the dough in the fridge. Let it rest for 1 hour.

5. Take out one ball of dough and on

a lightly floured surface roll out to a 1/8" thickness. 6. Cut into 2 ½" squares or any other desired shape and place on a cookie tray lined with parchment or Silpat. Use a fork to perforate the crackers and sprinkle tops of the cookies with the desired topping option. Once all the dough has been shaped into crackers place the baking pans in the fridge to chill for 30 mins. and sprinkle with coarse raw sugar.

CHOCOLATE SWIRL After the marshmallow has been whipped and in the pan, drizzle 6 oz. of melted dark chocolate and swirl into the marshmallow with a wooden skewer.

7. Preheat the oven to 350°F 8. Bake the crackers for 15 mins., or until lightly browned.

MARSHMALLOW METHOD

CHOCOLATE GANACHE

1. Prepare a 9"x9" pan by brushing the sides and bottom with vegetable oil and line with parchment paper.

BASIC GANACHE

2. In the bowl of a stand mixer, or a large mixing bowl, place the cold liquid and sprinkle the gelatin on top. Set aside and allow it to bloom, about 5 mins. 3. Place the syrup ingredients in a medium saucepan and cook on the stove top over medium heat with a candy thermometer until it reaches 240oF. Take the syrup off the heat. 4. Start mixing the gelatin with a hand or stand mixer on low speed and slowly add the hot syrup. Gradually increase the speed to maximum and whip for 10 to 12 minutes or until the marshmallow is thick, shiny and ribbon-like. 5. Scrape the mix into your prepared pan and smooth with a silicon spatula. 6. Sift together the coating ingredients. 7. Refrigerate till set, at least 3 hours. Then turn it out onto a cutting board liberally sprinkled with the coating mixture. Brush all sides of the marshmallow with the coating and cut into 16 squares. Or have fun with it and dredge a small cookie cutter in the coating mixture and cut it out into different shapes! 8. Brush the cut sides with the coating mixture and wipe off any excess then store in an air-tight container for up to a week with each layer separated by parchment paper.

7 oz. Callebaut Chocolate, or any good quality chocolate — white, dark or milk ¾ cup whipping cream 1. Break up the chocolate into peasized pieces, if not using chips, and place in a metal or glass heat-proof bowl. 2. In a small saucepan, scald the whipping cream over medium heat. 3. Pour the scalded cream over the chocolate and set aside for 5 minutes. Stir the chocolate cream mixture until all the chocolate is melted and the mixture is smooth. If the chocolate is not completely melted, place it over a pot of water simmering on low heat like a double boiler and stir over the heat until smooth. Take it off the heat as soon as it is melted. 4. Once the mixture is smooth cover and place in the fridge to cool, about 1 hour.

LEMON MARSHMALLOW Add the zest of two lemons to the prepared marshmallow when finished whipping.

For over 30 years, I listened to stories of India. As ADC to the Viceroy of India, Lord Linlithgow, during the late 1930s, my father-in-law had been stationed in the country. Listening to his stories and looking at his photos sparked an interest in a country famed for its vibrant colours, strong spices and immense beauty. While attending a press conference I happened to win two first-class tickets aboard Jet Airways from Toronto to Delhi. Knowing that my wife had always dreamed of experiencing India, what better than a two-week tour of some of the country’s most popular destinations. The first step was planning the trip. My research into a tour operator uncovered Worldwide Quest. I was so impressed by what I found that I booked with them to set up all of my ground arrangements. Once that was

taken care of, it was simply a matter of packing and getting to the airport. Delhi, India’s capital city was designed and built by the British during the 1920s. Delhi is a city of extremes and like most of India; it has a way of assaulting your senses with smells, sights and sounds. Our experience of this vibrant city began on a rickshaw tour of Old Delhi. From the 12th through the 19th centuries, Old Delhi was the capital of Muslim India.

is a labyrinth of streets, formidable mosques, monuments and forts speckled with colourful markets carrying all sorts of goods amidst an atmosphere of barely controlled chaos. Delhi is a distinct divide between ultramodern and traditional. Clean lines with tech money and automobiles, complimented by Old Delhi with ox carts and vivid full streets. This divide is just one example of the country’s expanding economy over the past decade. Our time in Delhi came to an end with a visit to Jama Masjid, India’s largest mosque with white marble domes and minarets as well as Raj Ghat, where Mahatma Gandhi was cremated. Not only did Worldwide Quest meet us as we stepped off the plane but they assigned a driver who would accompany us for the entire trip; each morning we would look forward to fresh fruit and drinks prepared for our days drive. From Delhi, our trip took us south to the city of Agra. As the capital of India between the 16th and 17th centuries, Agra is a city full of architectural wealth known for its marble and soapstone artisans. The slow pace was a wonderful contrast to Delhi’s busy atmosphere. Our first stop in Agra was at the world famous Taj Mahal. The Taj Mahal was built by Mughal Emperor Shah Jahan in 1652 as the final resting place for his favourite Queen, Mumtaz. The perfectly symmetrical masterpiece took twenty-two years to complete and was built by the hard labour of over 20,000 workers, masons and jewellers. The artistry is mind blowing and although packed with people the sense of serenity and ambiance is brilliant. The Taj Mahal definitely lived up to its hype and remains a highlight of our travels. Leaving Agra, we were once again reminded of India’s vibrant culture. Heading southwest to Ranthambore National Park the lush landscape is speckled with women pristinely dressed in saris of every colour imaginable, a photographers dream. Cows ew the landscape, as a sacred animal they are highly respected and abundant. When they are in the middle of the road, the cow has the right of way. Nestled in the Aravali hills, Ranthambore National Park is a haven for both wildlife watchers and adventure seekers. Although only 410km Ranthambores desert ecology has some of the finest wildlife sightings India has to offer. Our trip included a full day of viewing, with both morning and afternoon excursions. animals present include leopard, chital, hyena, jackal and sloth. Up close tigers present an imposing sight, much larger then I had expected and much more beautiful. Our driver’s skill allowed for some great photographs and lasting memories. Next stop on our journey was Jaipur, named after Sawai Jai Singh II, the warrior and astronomer sovereign who founded the city. Amber Fort, a beautiful complex of palaces, halls, pavilions, gardens and temples, was built by Raja Man Singh over a period of two centuries. Approachable only via a steep path, we opted for the elephant option and enjoyed the once in a lifetime experience of riding an elephant into an Indian Fort. The City Palace, which boasts the title of former royal residence, was built in the centre of the old city. Its carved arches are supported by grey-white marble columns with ornate floral motifs in gold and coloured stones. Guarding the entrance are two elephants carved entirely from marble. Guides of the city are known as retainers and are descendants of families who have served generations of rulers. After an amazing trip back in time we headed directly west to the Kingdom of Jodhpur. Ruled by the powerful Rathores, Johdpur’s Mehrangarh Fort is the setting of Kipling’s The Jungle The palace is one of the largest palace complexes in the world and attracts tourists from all over the globe. The James Bond film Octopussy was filmed here in 1983.

Book. Looking down on the city from the hill provides a beautiful and vast perspective. The dominant white roofs are offset by blue houses, the deeper the shade of blue the more religious the family. Driving through the remote and peaceful Aravali Range our next destination was the Jain temple known as Ranakpur Temple. Jainism prescribes to a path of non violence toward all living beings. Local holy families in rotation care for the temple. Carvings that today would not exist, simply because of the time and effort taken to create such intricacy, are abundant in this ornate place of worship. The last stop on our journey was Udiapur. The city’s palace is on the lovely Lake Pichola, built during the 18th century, the palace is one of the largest palace complexes in the world. Attracting tourists from all over the globe, the James Bond film Octopussy was filmed here in 1983. This is where our driver delivered us to the Udiapur airport to re connect to Delhi for our return home. Our trip lasted twelve days and took us all around North India. We were fortunate enough have our expectations exceeded by Worldwide Quest and to fly first class on Jet Airways, experiencing amazing food and service. We stayed in some top end hotels and travelled in comfort, but India is not only for those with a large budget. The country is easy to navigate on a shoestring and is an affordable place to purchase quality goods, and have them shipped home. As we did with our kitchen blinds literally saving us thousands of dollars. India is a country on the rise with immense growth predicted for the hospitability industry, contributing to increased employment and other opportunities. Being a frequent traveller, I experience most destinations alone. Travelling alone has its benefits but travelling with someone you love cannot be beat.
