From the moment you see the house, you think 35 Eugenia Street in Barrie is something quite different. But once you enter through the front door, you are sure the home is one-of-a-kind. Built by Mike Carty, the owner of Level Design Build, the very original dwelling is home to Carty and his family. It features a very modern design that sets it apart from the brick bungalows and two-storey homes in the east-end area of Dundonald and Codrington streets. “That’s what I’m passionate about,” explained Carty. “Modern design. The minimalist approach. Clean, simple lines.” The home is very bright and spacious. Pocket doors on the mudroom in the front entrance slide over the opening, quickly and easily, offering the ability to immediately conceal a mess – should the children leave one! The open concept living area is warm and inviting, with a double set of oversized patio doors offering lots of natural light. This makes the room a great spot for all those house plants that need the sun.

The open concept living area is warm and inviting, with a double set of oversized patio doors offering lots of natural light.

The kitchen is streamlined and efficient. The island allows for ease of conversation with guests or family members while meals are being prepared or dishes are being done. Moving upstairs, the bedrooms are both spacious and inviting. The master bedroom features a massive walk-in closet with both a “his” and “hers” side. The ensuite bathroom is delightful. The T-wall vanity allows the shower and the toilet to be located behind, allowing for the utmost privacy. And this is an extremely handy feature when you realize the home – by design – has no window coverings. The bathroom vanity has reclaimed barn board on the sides, which serves to give the room some rustic warmth. Carty, a big fan of using reclaimed materials, said his home also boasts wooden floors and doors that were made from the wood of old pickle barrels that he happened upon by sheer chance a few years ago. The 2,700-square-foot home sits on the foundation of the original bungalow that was on the lot. After purchasing the property, Carty tore it down to the foundation and used the existing footprint to create a home in keeping with the philosophy of Level Design Build. “The home is very linear. There is no wasted space in this home.” Nor was there much wasted labour or materials, Carty added. “Every time you cut on an angle, there’s waste. There’s wasted materials and wasted labour.” With the clean, simple lines of modern design, materials are used to the fullest. And with fewer angles and therefore less cutting of materials, there is less labour. “Our philosophy is to keep things simple,” GoodLifeMagazine.ca | 13

Carty said, adding it is his view that there is a lot of waste in a “traditional” build. “We need to think about conserving materials, energy, etc. We need to think about our waste. We need to think about our purchases.” Homes with a modern design are very functional homes. “You have to think about how you are going to live in the home and design it accordingly. We spend a lot of time in our homes and we should enjoy it.” The builder also encourages people to think smaller. Smaller homes take less material and labour to build. They also cost less to maintain. Society is in this vicious cycle where people live in big homes and then have to pay for all the maintenance and upkeep, which means there is less money for things other than the home. And maintenance can be time consuming too, leaving people with less time for family and other important things, he explained. build Post and Beam homes. Then, a few years ago, he was presented with what he described as an amazing opportunity. A designer came to him and asked him if he would be willing to build a custom cottage. He did. And since then, he and his company have built numerous cottages and homes in and around the area. His home is one of three homes in Barrie that have been built by Level Design Build. The unique look of his home garners a lot of attention. Carty held an autumn open house at his home on Eugenia Street to let interested folks see the home for themselves. “People are drawn to it. It’s something you would usually see in larger cities.” He also agreed to have his home included as part of the Big Brothers Big Sisters of Barrie Showcase of Homes this fall. The fundraiser is an annual event fundraising event in the city and allowed even more people to see the unique and modern design offered by Carty and his company.

And Carty believes in building homes that are very well insulated. “I am a big believer in insulation, particularly sprayfoam insulation. It’s a premier product that gives a much better value. You get a full seal, which gives the home a much better R-rating.” This all circles back to Carty’s motto about cutting down on waste. A home with better insulation does not waste energy when it comes to heating and cooling the home. “You can have a great furnace, but if there are leaks (in the home) it’s not efficient.” Although his company can design and build, they are also very willing to work with a client’s designs to create the unique look that the client desires. A visit to a paint store can be very intimidating especially when you stand in front of all of the colour choices, the multitude of shades of those colours and the different colour lines presented by various paint manufacturers.

What colour do you pick? The task of matching the right colour with the right room, for most of us, is extremely daunting. GoodLife has reached out to two professional designers – Cynthia Grassing, décor consultant and long-time decorator for Pratt Homes in Barrie, and Sue Kay of Colour Now - Allandale Decorating (Sue@Home) – to help us make great colour choices for our homes. This is the premise of Feng Shui, the ancient Chinese art of arranging interiors to make the best of energy flow throughout the house. James Lee and Julia Zhu wanted to ensure their waterfront estate was Feng Shui approved so the couple flew a well-known artist from Hong Kong to help design their luxurious Innisfil residence.

Starry Night

inspires DIY

Why settle for a typical backsplash when you can have a piece of art instead? When it came time for Andrea Taylor to renovate the kitchen in her newly purchased home, she knew it was time for the mosaic project she always had in mind. The famous Starry Night artwork by Vincent van Gogh served as the inspirational piece for this project. “It’s been one of my favourite paintings since I first saw it in New York City,” said Taylor. “It’s a beautiful piece of artwork.” Fascinated by the colours and movement found in the painting, Taylor wanted to recreate the same feeling throughout her kitchen. With white cabinetry and a dark granite countertop, Taylor decided it was the perfect time to bring a splash of colour into the space. “Navy looked like a nice accent, so that’s what we did,” she said. 36 | GoodLife Barrie Edition January February 2014 ■

The project started by making a rough sketch on the wall around the cabinets. “I drew lines on with pencil so I knew where I wanted certain elements.” She started off by outlining swooshes in the sky. “I wanted them to appear like a line. Then I did a circle where I wanted the stars to go,” she added. Taylor, owner of Limegreen and Ultramarine Creative Studio, had the convenience of glazing ceramic bisque tiles into the necessary colours right at home. Once she had all the shades, she would break up the tiles into smaller pieces using a hammer. To keep things organized, Taylor separated the tiles into different buckets based on colour. She also custom glazed each piece of tile used in the backsplash. “Many people take some time to save old plates and use those instead. But that’s not what I did.” The biggest challenge was working around the wall cabinets. “I would be bent over in some of the corners for a long time trying to find the right shaped piece that fit.” Another challenge was grout. Thankfully, Taylor’s handy husband was happy to help, allowing her to focus on the creative aspect of the project. This massive piece of art was definitely not

Taylor’s first do-it-yourself experience. “DIY projects around the house are a regular thing for us,” she said. The talented artist has worked on a variety of different renovations alongside her husband. “It’s a skill I learned from my father who is a contractor.” Getting the job done right required a lot of detailed precision along with patience. Balancing the completion of this project while working a full-time job and looking after her family was not simple. The project took Taylor approximately 70 hours to complete throughout the course of an entire year. Today when people visit the family, the backsplash is often a topic of conversation. When people toured Taylor’s home studio as part of the Midhurst Arts and Crafts Home Tour, many inquired about the cost of contracting her to complete a similar project in their home, she said. In addition to her love and appreciation for art and specifically pottery, Taylor studied Graphic Design at Georgian College. Quite the creative individual, Taylor is always happy to take on more projects and assignments. After the success of the backsplash project at her house, Taylor is now considering recreating similar artistic work for others. GoodLifeMagazine.ca | 37

Flooring TRENDS After looking around the area for years, the couple fell in love with a model home built by Horseshoe Ridge Homes. Established by builders John and Julie Boville, the husband-wife team focuses on using only high-quality material to ensure enhanced long-term value of the homes they build. The model home’s sophisticated chic country style design really struck a chord with the Brouillard family. They simply fell in love with it. So when it came time to designing their residence, they used the model home as inspiration. It all started with the timber framed great room. “We loved the vaulted ceiling with the timber and wanted to have the same style living room,” said Brenda. The builders helped the homeowners with every design decision – from picking out materials to the colour of the paint, acting as an interior designer, Julie was always there. “Julie was amazing. There’s no way I can take all the credit,” added Brenda. All that was required in the initial steps was the couple shared pictures of designs they liked and then Julie would make it happen. With a completely open-concept layout, the great room is what you first see when you walk through the front door beneath the Europeanstyle exterior timber trusses. To add depth and architectural interest to the timber framing, a mixture of pine and fir with different stains was used. Picking paint colour is one thing; picking stain for timber trusses is much more intimidating, the couple admitted. Luckily, John and Julie’s expertise and guidance resulted in perfect choices. The floor-to-ceiling windows frame the mature trees in the backyard. During the colder months when the leaves have fallen, a spectacular view of Highlands Golf Course becomes part of the scenery. The proximity to the course has also resulted in a successful home business. “Our son loves collecting golf balls and selling them. He’s been making more money than his allowance already,” said Brenda. Although the backyard is spacious enough for their children Matteo, 7, and Chloe, 5, to play outside, there are also many activities available in Horseshoe Valley. “It’s like the whole community is our yard,” said Patrick. With Horseshoe Ski Resort just around the corner, there are so many family-friendly activities to explore yearround. Adding a fan above the patio dining set, from Inside Out Patio in Toronto, was a great idea for humid weather and to keep the flies away. Originally from Northern Ontario, Patrick and Brenda were excited to make a move away from the Greater Toronto Area and closer to home. Back inside, the open kitchen sits to the right of the front foyer as you enter this cozy home. “We entertain a lot and I love being in the kitchen so my goal was to have the kitchen right in the party,” said Brenda. In the kitchen, a corner was converted into a large pantry with a trendy frosted glass door. A mudroom was added between the garage and the front door by Rice’s Cabinets of Barrie and is the perfect place to store everyone’s shoes. It also serves as a pit stop upon entering the house after a long day of outdoor activities. “The kids can come in here and dump all their stuff without making a mess around the house,” said Brenda. The couple also utilized the attic-like space above the garage to store seasonal items such as the family’s extensive collection of Christmas decorations. Further into the bungalow and to the left of the front entrance are three bedrooms. Brenda

WHAT DOES A PUB DO WHEN IT GETS TOO BUSY?

For Donaleigh’s,

the answer was expansion -- big time! “We were tired of constantly turning away customers,” confesses Steve Ricalis, who owns and operates the popular downtown Barrie watering hole with Don Kellett. By absorbing the building next door, the renovation adds 4000 square feet, essentially doubling the size of the original pub. To learn more about the expansion and other Donaleigh’s news, including Ricalis’s former catering gig with the Rolling Stones and other touring rock and roll bands, this Goodlife reporter recently sat down with Ricalis (who was happy to take a break from swinging a construction hammer) and chef Carol Smith. GL: Donaleigh’s is less than three years old and it’s already expanding. Impressive! Why the rapid growth? Steve Ricalis: Demand led to the expansion. It was frustrating because we were constantly turning people away on Thursdays, Fridays and Saturdays. By adding dining space, we’re able to expand upon the most important part of this business which is food. Our chef Carol Smith is just fantastic and she has quite the following. GL: At press time, the addition is still under construction. When will it open, and how many people will it accommodate? SR: Renovations are never predictable [laughs], but we are aiming for the end of December 2013. (It is open now !) The building, which originally dates back to 1887, was just a disaster. We had to rip out everything and basically start from scratch to bring it up to code. As for capacity, the two buildings combined, which will be joined by an opening in the wall, will be able to accommodate 390 people, plus 113 people on the patios. The original bar holds 120 people, or 220 with the patios. We purchased both buildings in March, added a new sign and installed the front patio to get revenue to help cover renovation costs.


GL: Your expansion reminds me of the Madison in Toronto, a popular pub that kept expanding by taking over neighbouring buildings. SR: You’re not the first to make that comparison [smiles]. GL: Let’s shift gears and talk about your personal history. Before opening Donaleigh’s, you travelled the world catering to rock and roll stars? SR: In 1996, I hooked up with a Toronto catering company specializing in movies, commercials and rock and roll shows. One day, my boss put a bid on the U2 tour and got it. After that, it was a European tour with the Rolling Stones. Then I got picked up by an England-based company that exclusively did rock and roll shows. I also did tours for Green Day, Fleetwood Mac, Rod Stewart and Lenny Kravitz -- not to mention hundreds of festivals. GL: Interesting! What did you enjoy about touring? SR: The travelling. I toured around the world at least three times. Interacting with the musicians was also fun. They were all really nice people, but I especially enjoyed working with the Rolling Stones, Green Day and Lenny Kravitz. I would see the artists regularly because it was my job to set up the dressing rooms and prepare and serve lunch and dinner, while working with a chef. The job was also interesting because it varied, sometimes we would do 1,000 people for lunch and dinner. The Rolling Stones, for example, had a touring crew of 500 and a local crew of 500 people. It was a machine, and it was crazy. The logistics of the whole operation were just mind-blowing.

GL: You gave touring up and moved to Barrie to open Donaleigh’s? SR: In 2010, I came home to Barrie after finishing up a Green Day tour. I was drinking at my friend Don Kellet’s bar Monsoon Lounge and we just started chatting about opening up a new pub in Barrie. I knew I was finished with being on the road. It takes its toll and I was ready to stop. I like Barrie and lived here when my parents (Jim and Rhoda Ricalis) owned the Brookdale, which my brothers and I ran from 1981 to 1987.

GL: No way! The Brookdale was a super popular dance club in the 1980s. But that’s another story … let’s get back to the present. SR: If you insist [laughs]. GL: What was your vision for Donaleigh’s? SR: Don and I just wanted to open up a small bar, where we could do some bartending and just hang out. We opted for an Irish pub because we wanted something unpretentious and easy, just a casual place to eat and drink. The idea is timeless, more or less. Truth is, I have a soft spot for Irish pubs. In all my years of travelling, I would look for an Irish bar in every city. GL: What’s the secret to Donaleigh’s success? SR: Great food, great service and a great atmosphere. We try hard. Don and I are working owners and we’re here all the time. Our chef Carol is also extremely committed. Because Donaleigh’s became so busy, Don just recently closed Monsoons. GL: Let’s hear about the menu. SR: Donaleigh’s concept is built upon great fresh food above all else. Too many pubs bring in frozen food and prepare it. Not us. ence who focuses on making food from scratch with fresh local ingredients. She’s the kind of chef who boils bones for three days to make gravy! The menu is best described as upscale pub fare. It’s a good stable menu and people love it. We give Carol some creative space by offering daily specials. GL: Did your touring days inspire the menu? SR: Don, Carol and myself created the menu. But my touring days did inspire a few items. Our shepherd’s pie is made with whipped mashed potatoes piped through a piping bag because that’s how Keith Richard’s likes his shepherd’s pie. Fish tacos are also featured because I found those all over California. GL: Carol, I understand you received your culinary training at Toronto’s George Brown College. What led you to become a chef? Carol Smith: By working in hotels and small restaurants, I fell in love with cooking at an early age. Cooking for people, and putting a smile on their face is very gratifying to me. One highlight of my career was catering for Sweden’s King and Queen, who were visiting Canada with 2,000 guests at Roy Thompson Hall.


GL: What’s your food philosophy? CS: To enjoy food in a balanced way. While a healthy diet is important, I also believe in balancing the good and the bad. I think it’s okay to let yourself indulge every once and awhile. GL: What are the house specialities? CS: Our hottest items are Guinness battered fish and chips, shepherd’s pie, lobster mac and cheese, Irish nachos, Guinness steak and our signature burger with buttermilk onion crisps. SR: Nachos are probably our biggest seller because we make them with thinly sliced deep fried potatoes, rather than tortillas. Then we load them up with cheese and all of the fixings, and bake them in the oven. They’re delicious! GL: Tell me about the dessert menu. CS: We make all of our desserts from scratch. Highlights include our Bailey’s Irish Cream cheesecake, warm apple crumble and a warm chocolate lava cake. We also make Irish Fosters, which features Bushmill’s flambéed bananas with vanilla ice cream, strawberries, walnuts, whipped cream and chocolate sauce. GL: What three-course meal would you recommend? CS: Start off with the wild mushroom and asparagus salad (arugula tossed in balsamic vinaigrette and asiago cheese topped with an assortment of roasted wild mushrooms, cheese and asparagus spears). For the main, go for the lobster mac and cheese (a creamy blend of cheeses, lobster meat and pasta shells, which are baked until golden brown). For dessert, indulge in a slice of Bailey’s Irish Cream cheesecake. GL: What’s your favourite meal to cook at home? CS: Like most chefs, I cook simple meals at home. Usually whatever my kids suggest or are craving. My all-time favourite dinner is still just a simple charbroiled steak dinner, with garlic mushrooms, baked potatoes and Caesar salad.

GL: What about the beverage menu? SR: We have 16 beers on tap and over 25 scotches available. We will have 22 beers on tap when we renovate. We serve various pub lines — from Guinness to Muskoka Brewery’s Mad Tom.

GL: You offer live music from Wednesday to Saturday? SR: We bring in musicians who offer an eclectic mix of rock and roll, top 40, and blues to an East Coast sound. We also feature a local artist named Nate Douglas. His band is called High Drive and they’re just amazing! GL: I like Donaleigh’s interior which features, lots of dark wood, booths, Guinness posters, sailboats, shelves of pub paraphernalia and various vintage photographs of downtown Barrie. SR: Most of the pub paraphernalia, which includes anything from vintage beer mugs and books to antique cameras, has been donated by our customers. There will be plenty of empty cabinets in the new section, so we encourage folks to bring stuff in. We’ll need lots of new knick-knacks [smiles]. GL: Speaking of the expansion, did you unearth anything interesting during the renovation? SR: I found an old safe hidden under the back staircase. I didn’t even know the thing was there until we started ripping up the floor. Too bad it was empty [laughs]. I had to get a tow truck to take it out. It was huge! GL: You’ve got the ear of thousands of area diners. Anything you’d like to add? SR: Just that we’re super excited about the renovation, which will allow us to better serve our customers. Not too many people even know about it because we’re not constantly posting updates on Facebook. One day, we’ll just open (the sliding doors that divide the two buildings) and people will say: ‘where the heck did this come from?’ [laughs].

Comfort from the kitchen Three delicious recipes to take the bite out of winter

When the mercury drops, I start digging into my recipe files for comfort food. After all, one needs something hardier than a salad to warm up on a cold wintery night. With that in mind, here are three of my family’s favourite comfort meals. Just like at home, I’ve also included a non-meat version of the dish that I would normally serve to our youngest son, Jamie, age 11, a committed vegetarian for the past three years. PORK SCHNITZEL This meal is a real crowd-pleaser! Serve it with mashed potatoes, Caesar salad and lemon slices. For breading, I use Shirakiku panko flakes, but any panko breadcrumbs will work. To avoid messy hands, wear clean disposable gloves when breading the pork. Vegetarian option: Rather than pork, substitute tofu for the protein. I use Sunrise soft tofu. Just cut it into 1-1/2 cm wide slices and prepare with the same breading and frying process. you will need to reduce the cooking time because the tofu pieces are smaller and will cook faster.

1. In a wide shallow bowl, mix the panko flakes with the basil and thyme. In a second shallow bowl, place the flour. In a third shallow bowl, place eggs and beat them. 2. Place strips of pork on a large plate; sprinkle both sides with salt and pepper. 3. Before you start breading, have a large parchment paper-lined baking tray ready to put the completed pork strips onto. Put on disposable gloves and place one strip of pork into the flour dish. Lightly dredge the pork (both sides) with flour. Take the floured piece of pork and dip it into the egg mixture, covering all sides; allow excess egg to drip off. Now dip it into the panko flakes, covering both sides. Place breaded pork strip on the parchmentlined tray, and repeat until all pork strips are completed. At this point, you can cover the breaded pork strips and place in a refrigerator for 4 hours, or you can simply keep going with the recipe.

4. Preheat oven to 175F. Prepare a second parchment paper-lined baking tray and place the empty sheet into the oven. This tray will be used to keep the finished pieces of schnitzel warm.

5. In a large heavy bottomed skillet over medium heat place 1/4 cup of the oil. Once heated, cook pork strips 2 or 3 pieces at a time until golden brown (about 3 minutes per side). Once cooked, remove pork strips from the skillet and place on a paper towel lined plate. Remove excess oil from each strip with additional paper towel. Place cooked pieces in the preheated oven on the prepared baking tray. Repeat with all remaining strips until completed (add more oil to skillet, if necessary). 6. Place 2 pieces of pork schnitzel on each of 4 dinner plates and serve immediately with lemon wedges. Serves 4.

BEEF STROGANOFF This classic dish is both rich and delicious. Serve it with a side salad and a loaf of crusty bread. Vegetarian option: A few substitutions can easily turn this meal into a vegetarian delight. For starters, use vegetable stock rather than beef stock, and opt for non-meat beef strips – available in the vegetarian section at most supermarkets – rather than beef. If there’s only one vegetarian at the table, make the recipe as is using vegetable stock. Just remember to set aside a portion of the cream mixture – about 2/3 cup – in a separate pot before you add the beef to the main cream mixture. Complete the vegetarian meal by adding non-meat beef strips to the vegetarian cream sauce you’ve set aside.

PREPARATION: 1. In a large heavy bottomed saucepan, combine cream, tomato paste, paprika, mustard, Worcestershire sauce, salt, thyme, pepper and beef stock. Over medium-low heat, simmer mixture for about 20 minutes, or until sauce is slightly reduced. Remove pot from heat and set aside. 2. Melt 3 tablespoons of the butter in a medium-sized skillet and sauté mushrooms over medium-low heat until tender, about 10 minutes. Transfer to a bowl, including juices, and set aside. 3. Fill a large pot with water and 1-1/2 teaspoons of salt. Over high heat, start boiling water to cook pasta, as per package instructions. 4. Heat remaining 2 tablespoons of butter in the skillet (the same one used for the mushrooms) and sauté over medium heat until beef is lightly browned, about 3 to 4 minutes. Transfer to a bowl, including juices, and set aside.

PREPARATION:

This easy creamy dish is perfect for a weeknight dinner. Since it’s all done on the stove, your cooking time is minimal. Serve it with a tomato, avocado and cucumber salad. The recipe calls for Scoobi Do pasta, which is pasta in the shape of large corkscrews. If substituting a different pasta, 6 cups of Scoobi Do pasta works out to be about 550 grams. Vegetarian option: Omit the lobster if the vegetarian in your family doesn’t eat seafood.

1. In a large pot of boiling water (with 1 tsp salt added), cook pasta for about 8 minutes, or until al dente. Drain and return to pot.

2. Meanwhile, in saucepan, melt butter over medium-low heat. Stir in flour; cook, stirring, for 1 minute. Gradually whisk in milk and cream; cook, whisking, for about 7 minutes or until sauce is thickened. 3. Add Dijon mustard, salt and pepper. Stir in all of the cheddar cheese, and 1 cup of the Applewood cheddar (the second cup will be used later as a garnish) and cook, while stirring, until all cheeses are melted. Add lobster meat and stir until heated, about 1 to 2 minutes. 4. Set the drained pot of pasta back on the stove. Over medium-low heat, slowly pour half of the cheese and lobster mixture over the pasta, stir well. Add the rest of the cheese and lobster mixture, and stir until well combined. 5. Place into individual bowls. Top each serving with a few heated cheddar baguette crisps (whole or crumbled, your choice) grated Applewood cheddar and parsley. Serve immediately. Serves 4 to 6.

Panagakis and her mother, Christine Paterson, opened 4Cats Arts Studio at 135 Mapleview Dr. W. in early November and were thrilled with the reception the studio received. “We really want to make a difference,” said Paterson. An art school graduate, Paterson said she had been toying with the idea of an art studio for kids for about the last five years. The only problem was she wasn’t sure how to go about taking her idea from concept to reality. But all that changed in March of this year during a visit to Toronto. “We were at The Beaches, which is where I am from, and we went into a 4Cats and I was blown away,” said Paterson. She immediately knew this was exactly the kind of studio she wanted to operate and applied for a franchise the very next day. In May, Paterson and Panagakis went to British Columbia for training on how to operate a 4Cats studio. “It’s a very hands-on franchise. Very familyoriented,” Paterson said. In the Artist Focus classes, the kids learn all about the techniques and tools of a famed artist,

such as Monet, Picasso, da Vinci, Warhol and Van Gogh. They learn the history of the artist and they make their own work of art based on the artist’s work, which they get to take home with them. There are also the Mixed Media sessions where the kids get to work with paints, paper mache and clay. “We do substantial pieces and try to get three or more projects out the door with them,” Panagakis said. The feature that may be the highlight of the studio, though, is the aptly named splatter

In this room, officially named the Jackson Pollock Room, the students get to create their works of art by throwing paint at their canvas using a variety of tools without any worry about paint hitting the floor and walls. Each piece is unique and the kids have a blast with the freedom the room offers, both creatively and literally. “Our number one rule here is ‘it’s no big deal’ and we have the kids say that. You’ve got some paint on your hands? No big deal. You spilled some paint on the floor? No big deal.” And, above all, art should be fun. It should be something that you enjoy. The 4Cats motto is: The best, most fun art studio ever! And Paterson and Panagakis want to make sure anyone coming to their studio finds this to be true. “There are no mistakes in art. No rights and wrongs,” Paterson said. “You have to retrain them because in school they are taught that there are correct and incorrect answers.” At the studio, it is all about personal expression. “We love when a kid will ask us if we like what they’ve done and we instead ask them if they like it. All over Ontario, craft breweries are sprouting up faster than dandelions. “Ontario’s craft beer industry is on a really strong growth curve right now,” says John Hay, president of Ontario Craft Brewers, an association of more than 35 small brewers dedicated to making great tasting, high quality beer in Ontario. Why is business hopping along? “Customers have discovered the taste and variety of Ontario craft beers and they love them,” explains Hay. “People are eager for premium quality local alternatives to mainstream products, and our brewers are offering plenty of innovative choices.” Furthermore, Ontario consumers are increasingly engaging themselves in the growing “craft beer movement.” They perceive locally brewed beer to be the same, if not higher, in quality, than import brews. With more than 250 available brands, beer enthusiasts have plenty of choice. Ontario’s Craft Brewers’ share for premium priced brands has more than tripled since 2002, going from less than one per cent to over three per cent of the beer volume sold in Ontario and continues to be

the fastest growing segment with the LCBO’s beer category. “Current average growth across all retail channels are over 10 per cent, per year,” says Hay. “In the LCBO stores, where the shopping environment is terrific, it’s anywhere from 20 to 50 per cent.” Our region is home to many craft breweries offering the finest hand-crafted exotic and regular ingredient suds. Barnstormer Brewery and Pizzeria is Barrie’s first brew pub. “We are a premier destination for craft beer lovers north of Toronto,” says founder and artisan brewer Dustin Norlund. All beers are made in-house with the finest hand selected natural ingredients. Complementing the cold beer, a 90-seat restaurant (set to open early in 2014) is integrated into the brewhouse. House specialities will include artisan pizzas, sandwiches, pastas and wings. Inside the retro-aviation themed brew pub, various handcrafted suds are ready for sipping — from Billy Bishop Brown to Landing Light Lager. “We currently have five beer styles available with more to come,” explains Norlund, age 39, who owns the business with Akos Tozser, 49. While the brewery produces multiple beer styles to satisfy a variety of palates, Norlund says Flight Delay IPA is a staple. Flight Delay IPA is a West Coast style India pale ale using Magnum, Chinook, Centennial and Citra hops. Along with bottles, Barnstormer even offers take-out beer in growlers (specialty beer jugs). “Fly by with your growler and we will fill you up,” says Norlund. Barnstormer visitors can also look into the brew house “to

see the nectar being made.” The local artisan brewer says Southern Californian craft beers have influenced Barnstormer’s flavour profiles. “I was living in Southern California when it experienced a craft beer boom, so those flavours are in my genes.” Why build a brew pub in Barrie? “In our opinion, Barrie was in need of a craft beer store and brew pub,” explains Tozser. “Brew Pubs are very popular in Toronto, and the local market is ready.” Tozser will oversee sales and front-of-the-house operations. JOBS & ECONOMIC IMPACT OF ONTARIO’S CRAFT BEER INDUSTRY • Since 1985, small brewers in Ontario have created thousands of jobs and have invested tens of millions of dollars into the Ontario economy. • Today, there are approximately 900 direct brewery jobs with about 3,600 indirect jobs (using a multiplier of 4). The 900 jobs account for almost 30% of the brewing industry in Ontario while the corresponding share of premium products is over 3%. These jobs are mostly generated from the premium priced segment. • The broader economic impact of small breweries is estimated to be well over $400 million annually.

When you step into Flying Monkeys Craft Brewery, the pavement underfoot reads: In heaven there is no beer, so drink it all while you are here. A fitting statement for the downtown Barrie brewery, whose mission is to brew fearlessly and have fun. “We’re not very corporate-like around here,” chuckles artisan brewer and founder Peter Chiodo. The 47-year-old even pokes fun at his job title by listing lion tamer and Elvis impersonator as official responsibilities. “Around here, we think normal is weird.” Joking aside, this craft brewery located in a beautifully restored historical building means big business. Along with serving over 400 bars and restaurants in Ontario, Flying Monkey suds are sold all over the world. From across Canada to Europe, Scandinavia and Brazil -- its market is vast. “We are just hitting the United States, which is really exciting for us,” explains Chiodo, who established the brewery with two other partners in 2004. “It’s even available in Japan.” With six main brews on offer (Chiodo refers to them as brew-usual suspects), Flying Monkeys produces about 3-million bottles per year, and has 18 full-time staff. Its whimsical packaging has even caught the attention of various musical artists, including

PETER Chiodo artisan brewer the Barenaked Ladies. “We’ve done some wicked collaborations with great musicians just because we wanted to meet them,” confesses the artisan brewer, who became interested in beer-making after watching his grandfather home brew. Flying Monkey’s signature brew is Hoptical Illusion Almost Pale Ale. But selling uniquely flavoured suds wasn’t how the brewery started out. Originally called Robert Simpson, after Barrie’s first mayor and brewmaster, it focused on market-friendly mild beers. “We switched gears in 2009,” he explains. That’s when the brewery took on the Flying Monkey’s moniker and began experimenting with novel flavour profiles. “We started making craft beers that we liked to drink,” he explains. The new business formula worked immediately. “The orders just kept getting bigger and bigger and the rest is history.” While running a brewery requires dedication and hard work, Chiodo says the beer sells itself. “It’s an easy beer to sell. It’s well made and well packaged.” Looking to the future, Flying Monkeys will have a tap room ready by June 2014. “People will be able to come in and enjoy a full glass of beer (not just a sample) and experience what craft brewing is all about,” he explains. Flying Monkey’s offers free daily tours on Monday to Friday at 2 pm; and Saturdays at 1 pm, 2 pm, 3 pm and 4 pm. Call ahead for groups (an on-site party room can accommodate 60 people). Nestled in the heart of Ontario’s cottage country, Muskoka Brewery was established in 1996 by Gary McMullen, a former air force aerospace engineer, and his childhood friend Kirk Evans. “I was home brewing as a hobby while serving in the air force,” explains McMullen. “I thought, why not open a brewery?” Fast-forward to today and Muskoka Brewery is a craft beer success story, specializing in handcrafting premium beers as unique and refreshing as the region they're from. The local microbrewery currently churns out about 7.5 million bottles of beer per year, and employs about 55 people. Sadly, co-founder Kirk Evans passed away shortly after the brewery was up and running. Muskoka Brewery produces several beers in small batches with no additives or preservatives. McMullen has a soft spot for his company’s flagship brand, Muskoka Cream Ale. “I have a special place in my heart for our Muskoka Cream Ale because it’s the beer that Kirk and I launched the brewery with.” Additional brews include Summer Weiss, Dark Ale, and a Premium Lager, all of which continue to bring in medals at the annual Canadian Brewing Awards. Paying homage to the local Muskoka cranberry harvest, the brewery offers up a Chocolate Cranberry Stout. “Muskoka Brewery is committed to using local ingredients,” explains the artisan brewer.

In recent years, it’s moved the bulk of material purchases to North America and buys local ingredients when possible. “This includes work we are now doing with a local hop grower in the Collingwood-area, Clear Valley Hops, explains McMullen. “The cranberry juice we use in our WinterBeard – Double Chocolate Cranberry Stout is from Johnston’s Cranberry Marsh right here in Muskoka.” The popular brewery owner offers his take on why the Ontario craft beer industry is booming. “The beer industry is returning back to ‘normal,’ if there is such a thing, after many years of beer becoming defined as simply a straw-coloured malt beverage with 5 per cent alcohol,” “Canada has a rich beer history and tradition and the breadth of styles and flavours of beers is unbelievable. Consumers are demanding more and brewers are responding with a rebirth of styles long forgotten.” Furthermore, the beer renaissance ties in well with the growing appreciation of culinary excellence. Brisk sales at Muskoka Brewery have led to an expansion. In 2012, the popular brewery relocated to a much larger 35,000-square-foot facility. In 2014, a larger retail store, along with a tasting and events room, will be added. Fans of Muskoka Brewery can look forward to a new brew launching in the near future. “We are having a ton of fun with it right now,” he teases. “I can’t really say anymore. Just keep an eye out for something really exciting from us in 2014.” The brew house is also currently aging some barrel aged beers. These extremely limited beers will only be available for sample and purchase at the on-site brewery retail store. »

CREEMORE SPRINGS BREWERY Chris Freeman general manager Craft beer will soon be flowing at the newly constructed Collingwood Brewery. “We are aiming to be open in January 2014,” says head brewer and general manager Chris Freeman. “It’s a dream for us to open our doors in Collingwood. We can’t wait to invite everyone into our brewery and to share our love for craft beer.” Located off Highway 26 in the south end of town, the 4,500-square-foot brewery will showcase two brews to start, including its signature Downhill Pale Ale. Additional suds will follow in coming months. Paying homage to local ski resorts, Downhill Pale Ale bottle labels feature alpine slopes complete with chairlifts. “Our brewing style is eclectic,” explains the 37-year-old artisan brewer. “There will be a beer for any occasion, or mood you might find yourself in – we will produce everything from a classic Bohemian Pilsner to a barrel aged Russian Imperial Stout.” Founded by Freeman, along with partners Tim Cachia, Art Joyce and Greg Widell, the Collingwood Brewery’s phi-

losophy is to produce the finest craft beer inspired by the world’s classic beer styles, using all-natural ingredients. “The four of us followed different paths into the business - Greg, Tim and Art were drawn to it by their experience of the US craft beer scene and the passion they developed for great beer,” explains Freeman, a trained brewmaster. Discovering their common passion for artisan suds, the group decided to open a craft brewery. “Collingwood is the perfect place to brew seasonal beers.” The Collingwood Brewery has a licensed event space where it can hostspecial events, including beer education, guided tastings, food pairing and concerts. The event space accommodates 100 people. Craft beer aficionados can visit the onsite retail store for tastings and free guided tours of the production facility. Call ahead for tour details. Established in 1987, Creemore Springs Brewery is one of Ontario’s first craft breweries. “We’re definitely one of the trailblazers in Ontario’s craft brewing industry,” says Karen Gaudino, Creemore Springs director of marketing. “When Creemore Springs started out 27 years ago, there were only about five craft breweries in Ontario,” says Gaudino. “Today, there are over 100.” Since its acquisition by Molsons in 2005, some refer to Creemore Springs as a macro’d microbrewery. “The definition of craft beer is highly debated,” admits Gaudino. “But we don’t believe that ownership defines who you are. We still use our traditional brewing methods and are committed to craftsmanship.” Using original European recipes, Creemore uses only the highest quality ingredients and fire-brews its beer in small batches in an authentic copper kettle. One thing is for sure, stresses Gaudino, is that Creemore Springs beer can’t be brewed anywhere but Creemore. “It can’t be.” “It wouldn’t be Creemore Springs without the water that comes from the local springs just down the road.” Employing about 70 people, Creemore Springs is housed in an 1867 red brick historic

Recently, Creemore Springs launched a craft beer exploration series called Mad and Noisy Brewing, named after the two rivers that merge and flow through the local Creemore village. “Mad and Noisy allows our brewmasters to branch away from the traditional branding of the brewery,” explains Gaudino. Hops and Bolts India Pale Lager is Mad and Noisy’s first release in its series of imaginative and innovative craft concoctions. Mad and Noisy caters to the burgeoning craft beer industry, which lets people explore different tastes and styles, says Gaudino. From food pairings to craft beer parties (where guests bring their favourite brews to sample and share) beer connoisseurs are taking their suds more seriously. Creemore Springs offers free tours daily at noon, 1 pm, 2 pm, 3 pm and 4 pm. “Along with seeing how craft beer is made, guests are invited to sample fresh brews from the tap, which is the equivalent of tasting maple syrup right in the sugar shack,” says Gaudino. Creemore Springs and Mad and Noisy beers are available on-site, at various bars and restaurants, the Beer Store and the LCBO.

Barbara Chittick looks out the window of her studio and sees inspiration everywhere. For the past 23 years, Chittick has been living and painting in Midhurst. “It’s where I can view majestic pines from my loft studio. I also enjoy painting the hidden gems of scenery in the Georgian Bay area that I can access with my kayak,” she said. “There is an enticing feeling of solitude drifting along past rock faces and wind-blown islands that reminds you of the elemental spirit of the earth.” Chittick is known for her oil paintings, which include portraits, figurative art and still life. Patrons from Australia, England and the United States have commissioned family portraits and portraits of racehorses from the artist. “My equine art is gaining recognition amongst thoroughbred owners,” she said. Chittick studied at the Ontario College of Art, The Three Schools and Georgian College developing new techniques along the way. She said

her work is always evolving and she chooses subjects that challenge her. She originally painted on silk and transitioned from the flowing liquid dyes to oil painting. “I use similar vibrant colour schemes using the depth and texture of the oils. My subjects are extremely diversified as I enjoy exploring the beauty and wonder of colour and expression. My interest moves from portraiture to abstract when I search for greater expression.” Chittick is an admirer of Tom Thompson and Arthur Shilling, and enjoys artist who use a lot of colour. “I would like my paintings to be not just a reflection of what is immediately around me but also an expression of the landscape of our lives.” Chittick’s work can be seen at a number of galleries and at her home studio in Midhurst. The future looks bright for the painter who recently received an exciting new commission. “I received a commission to paint a group of Masi villagers from a photo taken by a traveller to Tanzania, Africa. This will allow me to introduce symbolic imagery into my painting and is leading me toward more cultural references in my future work.”

All my working life I have travelled; first while working in the hotel industry and more recently as a travel writer. I am lucky to have been able, over the years, to include my children in my travels and each of them has joined me individually, some more than once. In more recent years now that the children are all grown, I manage an annual trip with my wife but she hasn’t travelled with the children individually. This year both she and our only daughter passed milestone birthdays and decided that it was time they took a vacation together on their own.

We started planning the Thirty/Sixty trip earlier this year. First, they had to decide what kind of vacation they would enjoy most. Both enjoy historical sites, reading, the sea and a more intimate setting. With those things in mind, we settled on a voyage that both my wife and I had enjoyed several years ago on one of the tall ships of the Star Clipper fleet. Following is their experience in their own words by Katherine Card. We arrived in Rome in the early morning, having taken the overnight flight from Toronto. Anyone who has been to Rome before knows it is impossible to see in a day. So we settled on a nice coffee and a tomato and mozzarella baguette at a local shop, which was good enough for the both of us. Later in the day we boarded a coach and were heading to the coast to board the ship. My mother had been on the Royal Clipper a few years before and had absolutely loved the experience. I, on the other hand, had never been on a cruise, much less

a tall ship in the Mediterranean. When we pulled up to the port the first thing that surprised me was the size of the ship. It looked much smaller than I had envisioned, although I soon realized there is a lot of space hidden on this magnificent ship. We boarded, found our room and spent the evening exploring the ship. Built in 1992 and refurbished in 2011, the ship is intimate, with room for just 170 passengers. Although seemingly small, the spacious accommodations and expansive teak decks provide ample space for relaxation or recreation. There is an indoor-outdoor Tropical Bar and Piano Bar and an Edwardian-style library, offering books in a multitude of languages on a number of different topics. Antique prints and paintings of famous sailing ships line the walls, while teak and gleaming mahogany rails make you feel like you are truly sailing. All cabins have marble-lined bathrooms with showers and include double or twin beds that can be converted

to queen-size beds. On our first evening we decided to head up to the deck for the sail away. I was amazed by the beauty of the sails. Having travelled for the better part of two days, we were ready for bed and called it an early night so that we could enjoy our first port, Portoferraio. Portoferraio, the largest city on the island of Elba, France, is a small island boasting 145 kilometres of Mediterranean coastline. For those travelling on foot, the waterfront with its elegant shops and the town square with its old churches and terraced streets are a great way to spend the day. The most popular excursions visit Napoleon’s country home in San Martino, the port town of Porto Azzurro, the fishing village at Marciana Marina and the pebble beaches. We opted to wander through the town and take in the sights. Portoferraio is all that you would imagine a quintessential French town to be, and was a wonderful first stop on our Thirty/Sixty trip. Once we were back on board we got ready for dinner and headed into the dining room. We had experienced dinner the night before, but were far too weary from travelling to fully appreciate all that the Star Clipper had to offer. Dinner on the Star Clipper is an adventure in itself. The elegant dining room presents the chef’s finest culinary creations, designed to please the eye and the palate, and complemented by a selection of equally fine wines. Dinner is a seven-course masterpiece that never gets boring because it is constantly changing. The dining experience is made that much better by the company. Each night you can choose to dine with guests who you have inevitably already met, or you can choose to be daring and meet new people. Either way, the conversation always flows and the laughs never stop. The next morning we were up early and ready to go. Next stop, Porto Vecchio on the island of Corsica, France. According to local history, the ancient Greeks named Corsica ‘The Island of Beauty’ because of its rugged coastline of jagged peaks and scented vegetation of eucalyptus, honeysuckle, lavender and wild mint. The island has retained its rugged beauty of centuries ago. Porto Vecchio, the walled southeastern town, is lined with medieval streets. Visitors to French Corsica enjoy the beautiful beaches, and the Golfe de Porto Vecchio is no exception. It’s warm, sandy shores rest before the island’s only cork forest. When planning this trip, there were two ports

that I was most excited to experience. The first was Monte Carlo, Monaco and the second was St. Tropez, France. As is often the way in life, neither destination was what I had expected. Monte Carlo is an amazing city. Money and glamour seem to seep from every surface. As a favorite destination for the rich and famous, it’s a great place for people-watching, and the streets are lined with elegant boutiques and cafes. The best tours visit the casino, the posh Hotel de Paris, the Oceanographic Museum and the cathedral where Princess Grace and Prince Rainier are entombed. We opted for a hop-on/ hop-off bus that allows tourists to see the city in one day and choose where they want to stop. We visited the gardens, had a coffee and photo opportunity at the casino and Café de Paris, and took a walk and shopping stop in the old town. All in all, Monte Carlo was a nice surprise. St. Tropez, on the other hand, was a little bit of a disappointment. Touted as a sunny, peaceful town, ideal for unwinding, St. Tropez is overpriced and overvalued. If you are looking to do some high-end shopping or spend days at 92 | GoodLife Barrie Edition January February 2014 ■

the beach, St. Tropez is the place for you. If not, you will probably enjoy the idea of going there more than the destination itself. With that said, we did have some fantastic mussels for lunch, so the day was not a complete loss. Each morning we would enjoy a delicious breakfast before heading ashore to explore.

Money and glamour seem to seep from every surface. Breakfast is a buffet with a full selection of hot dishes, including eggs, potatoes and crispy bacon, as well as a full selection of cold items, including cereals, Parisian croissants, sweet Danish pastries, fresh tropical fruits, cheeses and yogurts. The ship also offers lunch each day, for those guests who either stay aboard or who wish to come back to the ship to eat. The lunch menu changes daily but is always a buffet of hot and cold dishes.

Our next port was the city of Calvi, on the island of Corsica in France. Calvi sits on the northwestern tip of the island of Corsica. Above the town’s marina is the Citadelle, and below the Citadelle extends the elegant Quai Landry, lined with restaurants and cafes. Having seen a few small port towns, we decided to take a tour of some neighbouring citadels instead of remaining in Calvi. Well worth the ride, the countryside of Corsica is lined with olive trees, cork and small villages. Corsica has a fascinating history, with continual occupations in 1729 the Corsican Revolution for independence began. After 26 years of struggle against the Republic of Genoa, the independent Corsican Republic was formed in 1755 and remained sovereign until 1769 when it was conquered by France. The first Corsican Constitution was written in Italian (the language of culture in Corsica until the end of the 19th century). While travelling, both my mother and I prefer to purchase local goods, specifically kitchen or household items and foods. Corsica is a dream


for anyone looking to bring home local olive oil, honey, salt, wine or cork. After a day on the island, our bags were full of treasures. Nearing the end of our trip, the second last stop was Palamos, Spain. Palamos is located at the foot of the coastal mountains in the heart of Spain’s Costa Brava region. The area’s seven beaches have shorelines that range from rocky to smooth and sandy. Interesting archaeological sites include the Iberian settlement at Castell beach, the Iberian archaeological ruins dating to 6 B.C. and the medieval castle of Saint Esteve at La Fosca beach. The 16th-century church of Santa Eugenia Villarroma is located in the town centre. I had been desperate to swim in the Mediterranean and since our trip was coming to an end it was looking like Palamos would be my last chance. Lucky for me the port is located directly adjacent to a beautiful stretch of beach. The water was a little cold, but we both braved it and took the plunge. Afterward we rewarded ourselves by sampling some of the regions famous prawns. We were not disappointed. Our final stop was Barcelona, Spain.

Unfortunately we weren’t able to spend any time in Barcelona since our flight was leaving at noon. Others on the ship, who were continuing on to other ports, explored the streets of Spain’s cultural centre which are lined with tapas bars and cafes, and filled with musicians. City tours will also take visitors to Gaudi’s eccentric Church of the Holy Family, the 14th-century Gothic Quarter, the Picasso Museum and the Spanish Village. Our Thirty/Sixty trip was a fantastic way to spend a milestone mother-daughter year. For anyone who enjoys being on the sea, reading, fine dining and exploring foreign cultures, the Star Clipper cruises are for you. Not only do they offer an exciting and ever-changing itinerary of ports, but the crew is amazing and truly makes you feel right at home. Each night there is entertainment put on by the cruise director and piano music with a live-in musician. The only question I was left with at the end was how can we top this for our Thirty-Five/Sixty-Five trip?
