One of the many benefits of producing a publication in Southern Georgian Bay is the opportunity to spend a lot of time exploring this gorgeous area. It was during a recent outing with GoodLife sales manager Patsy McCarthy that she took me to a must-see home on the market, just steps from Sunset Point. “Does it get any prettier than that? Who wouldn’t love to live there?” she asked. I had to agree. There were more gardens in the yard and more verandas spanning the exterior than at any other home I had seen in some time. The views would be breathtaking. The spectacular exterior left us both wanting more. We couldn’t wait to see what was inside. elegant art gallery. Passionate about her collection, Sue can talk about every painting as if it was only purchased yesterday. She remembers artist’s names and the conversations she had with each one of them. The throw pillows on the white couches in the living room were bought in Delhi, India. The red, pink and orange shades in these pillows inspired the colour theme on the main floor. It’s interesting to see warm colours mixed with white to create an elegant look. An abstract painting of a tree that Sue commissioned from an Australian artist fits perfectly over the television, adding more reds and oranges to the living room. With the living room open to above, the area feels very spacious yet cozy. The dining table is large enough to host a sit-down diner for 10. At the other end of the great room, the window seat beneath the floor-to-ceiling windows is perfect for reading while enjoying the view. The natural stain of cherry wood flooring blends well with the white shades and subtle browns within the furniture throughout the rest of the space, creating a break between the two. Adjacent to that is the open-concept, allwhite kitchen. It’s spacious yet all the stainless steel appliances have been placed within reach of one another. the hallway leading back to Derek’s office. The powder room has floor-to-ceiling mirrors that make the small two-piece bathroom appear wider. From the dining area, exterior glass doors lead to their very private yard. Outside, there’s a fountain surrounded by extensive greenery and landscaping. There’s also a hot tub surrounded by wooden benches. What a perfect place to enjoy some quiet time outdoors, with soft music playing through the home’s surround sound system. Back inside and up one flight of stairs, sits the master ensuite. The couple decided to convert this space from a master bedroom into a family room with a large television and comfortable sofas. The double closets in there are great for extra storage space. The ensuite bathroom is part of this suite. In there, they’ve got double sinks, a soaker tub and a steam shower. “The steam really helps Derek’s asthma so we’ve got another steam shower in the basement bathroom,” said Sue. Up another flight of stairs and there’s more bedrooms. Since Derek and Sue live alone, they decided to use two of the rooms upstairs for alone time. Call it his and hers areas. In Derek’s day room, he’s got his cycling exercise bike as well as a comfy reclining chair to watch television. Across the hall, in Sue’s room, she’s got a mahogany sleigh day bed with pink bedding and a classic wing chair to match. In the corner, there’s a vintage mahogany desk. Nestled between these two rooms is Derek and Sue’s bedroom. “It’s big enough for sleeping time,” said Sue. The colour theme in here is beige and spa blue, a calming palette perfect when it’s time to relax. Further down the hall white shelves line the length of the two walls facing the loft’s railing. Because this space is open to below, the shelves can be easily seen from the main floor. This library space holds their wide selection of books and international decorative pieces. This loft is also Sue’s workspace. She likes

the openness of the area and the view of the great room below. In addition to the full home theatre they have in their basement, the space down stairs is a perfect for their guests to stay over. There’s a fully furnished guest bedroom dressed in calm white and beige shades inspired by the forest painting above the bed. There’s also a three-piece bathroom that includes a steam

shower and a kitchenette in the rec room equipped with a toaster, microwave and a fridge. With this much luxury, their guests are easily spoiled during their stay. Having worked in office design in the past, decorating this home was never a challenge for Sue, rather it was joyful, she said. But in order to take better care of her developing business, the Silver Springs Retreat in Flesherton, they have to move. A year ago, restauranteurs Dave and Linda Phillips decided to take on a management challenge. The daunting task? Bring the Mill Cafe in Thornbury back to its former glory as a unique and successful dining destination for locals and tourists alike. “Despite its spectacular setting, it has struggled for an identity for the past several years,” muses Dave, who owned the successful Fireside Cafe in Wingham, Ont. (about an hour outside of London) along with his wife Linda. So far, the couple’s hard work seems to be paying off. “Since we took over the management duties, the Mill’s recovery is well underway and diners are pleased with the changes.”

To learn about their plan to breathe new life into the Mill Cafe, this GoodLife reporter recently caught up with Dave. We dished about the new menu, what it takes to succeed in the restaurant business, historical tidbits about the landmark building and more. GL: The Mill offers the perfect backdrop for a dining experience. Tell me about the view. DP: Sitting on one of our outdoor patios overlooking the Beaver River and the Thornbury (triple spill way) Dam with the landmark fish latter is pretty amazing. It’s quite a spectacular site -- the trout jumping in the spring and the salmon working their way upstream in the fall. The mill pond is also quite picturesque with its resident swans and ducks. There’s no place quite like it! GL: What led you and Linda to take over the Mill’s management? DP: About two years ago, the Mill’s owners Noel and Terry Neelan (who also own SiSi’s in Thornbury) purchased and renovated the Mill. Wanting to restore the Mill to its former glory, they hired a restaurant consultant who just happened to be a former employee of ours. He recommended that we take over the Mill’s management, and the rest is history. The timing was perfect because we had just sold our successful 20-year-old restaurant and we were looking to semi-retire and move to the Collingwood-area. GL: What kind of changes have you made? pounded the Thornbury pavement to find out what diners wanted. Just like something you would see on a Food Network restaurant show, I went into every shop and talked to anyone who would listen. My goal was to have local folks tell me what they wanted from the Mill. Turns out, they wanted a more affordable and accessible menu, better service and consistent hours. GL: I’m impressed with your hands-on market research. DP: It was the only way to learn how to make this place vibrant again. When we took over, the Mill ranked dead last on Trip Advisor for Thornbury restaurants. Today, we hover between two and three, and that’s out of 12. Higher rankings on Trip Advisor are a testament to the Mill’s turnaround. Customers are starting to return, and there’s a feeling of goodwill in the community about the Mill again. GL: Perched on the banks of the Beaver River, the Mill’s landmark location offers historic charm. What do you know of the Mill’s past? DP: The site dates back to 1855 and it was originally a sawmill. That original mill, along with its replacement, were destroyed by fires. In 1877, it was rebuilt as a grain mill for flour and oatmeal. At this time, the millpond was also constructed. During its early days, the industrial mill (as it stands today) was powered by an overshot water wheel, and was later replaced by turbines, which powered the building until the mid-1950s. In its final working days, it was used to mill alfalfa. Later tenants included stores, and a series of restaurants -- all called ‘the mill’.

GL: Is the Mill best described as a pub? DP: I would call it a casual dining atmosphere. We do offer some very spectacular dishes, but because of the ambiance of the historic mill and the river, it’s not a tablecloth restaurant. It’s very quaint and offers a unique dining atmosphere. As for capacity? We can seat about 60 indoors, and about 85 on the patios.

DP: That’s right. Perhaps, it’s better to talk about our wonderful culinary team who are always on display in our open kitchen. They are a very tightly knit group who work under Linda’s direction. My wife Linda has spent her entire life, since the age of 10, working within the industry and she comes up with menus and the culinary staff executes her ideas. She has an incredible passion for food and her philosophy is to cook everything from scratch using only fresh, high quality ingredients and to source local ingredients when possible. GL: Drawing from your experience. What does it take to succeed in the restaurant industry? DP: Basically, there are three things you have to do right to have success within the restaurant business. Those three things are great food, great service and a really good atmosphere. For us, service has been the biggest turnaround feature with the Mill. Service is extremely important to Linda and myself and it was the hallmark of our last successful restaurant. Making sure that

our guests have an unbelievable experience is one of our trademarks. GL: How would you describe the Mill’s decor? DP: It’s full of charm, and I guess you could even call it folky modern. There’s a really fun fish theme going on inside, and the walls are graced with paintings from local artist Sue Tupy (whose father was the creator of Blue Mountain Pottery). She also created the Mill’s logo, which is a dancing papier mache salmon perched on a latter. GL: I understand the Mill has its own winery. DP: That’s right. Terry and Noel Neelan, who own the Mill, co-own Solo Contigo, a vineyard in Mendoza, Argentina. This winery features a super-premium malbec as well as a delicious sauvignon blanc and an outstanding torrontes. We proudly serve these wines at the Mill.

GL: What three-course meal would you order for me? DP: Let’s make it a four course meal (he laughs). I’d start you off with our ever popular kale Caesar salad, followed by our fabulous fish taco. For your main course, I’d order you up our braised lamb shank. For dessert, you’d have to try the Mill’s signature sweet -- key lime pie. My wife makes it, and it’s nothing short of magnificent! It has become a trademark for restaurant and we have repeat customers who have it with every meal. Many customers who don’t have room for it, take it to go. GL: Yum! Let’s hear more about the dessert menu. DP: Everything is made by in-house by scratch, with a few exceptions. To support the local community we source a few sweet treats, such as Grandma Lambe’s butter tarts and Goldsmith Orchard’s popular Thornbury pie, which features a blend of mixed berries and apples in a delicious flaky crust and crumb topping.

Designing your own home is exciting, but actually building it yourself with family members must be a lot more special. That’s what Don and Sherry Currie did on almost three acres of land. They decided to have Don build their 4,200-square-foot home with their oldest son and a close family friend. Having worked in the construction industry for many years, Don had more than enough experience to tackle this personal project. They used various designs from magazines as their inspiration and got right to it. A refreshing blend of casual living with some luxurious detailing fills every corner of this home. The couple chose a casual craftsman style throughout. With the help of a Mennonite craftsman from Desboro, they were able to get some stunning woodwork all around the house. Every room opens with a heavy solid oak door that blends perfectly with the natural oak flooring throughout the residence. The frosted glass transom at the top of each door is great for bringing light in each room while maintaining privacy. Two front doors lead into the house. One door enters through the spacious laundry room and the other through the foyer. The kitchen is directly to the right of the foyer, past the warm wood styled powder room. With oak cabinets and granite countertops, this look spreads a rich country feel around the house. In addition to the dishes sink facing the window to the front yard, Sherry also has a granite vegetable sink on the opposite end of the kitchen facing the great room. A stainless steel high table, with two stools tucked underneath, was added to the middle of the kitchen to serve as an island. This is a great idea because it allows for extra surface space without taking up too much room in the middle of the kitchen. The pantry is to the left of the kitchen. The dark olive stained old antique pine double pantry doors blend well with the brown cabinets in the kitchen, spreading a rich country feel around the house. In the pantry, Currie has everything well organized on the rustic looking shelves. You can easily see it all through the glass in the doors. “I had seen the pantry design in a magazine and my husband made this one exactly like it,” said Currie.

The great room is two-storeys high with a vaulted ceiling that adds architectural interest to the space. Sherry used different commissioned paintings around the living room to complement the warm reds in the space. The vintage cow print chair by the window was reupholstered in Walter’s Falls. “Animal print happens to be in right now and it really highlights country so I went with it,” said Currie. The living room sofas are furnished to wrap around the fireplace, which runs on radiant heat. Also all heating and cooling systems are geothermal. These are just a couple features the couple added to make their home as environmentally friendly as possible. It helps us keep the house green but also cuts down utility bills, said Currie. Despite the grand look of the fireplace, the outside view through the floor to ceiling window is definitely the focal point. With a river in their back yard, it’s really difficult to beat this view. You can go out to the deck through the allseason sunroom. The fully insulated space is a great area for reading, working or having a drink while enjoying the sunshine any time of the year. Because the Curries are big on entertaining, they’ve built two picnic tables out back for when their friends come over for BBQs. They’ve also got a fire pit, perfect for gathering around. To the other side, there’s Sherry’s greenhouse and vegetable garden. “I plant all kinds of vegetables, pretty much anything we eat,” she said. On the other end of the deck, there’s a builtin hot tub adjacent to a seating area comfortable for four. Outdoor speakers are installed to play music while enjoying the outdoors alone or while entertaining guests. The glass railing around the deck is perfect, as it does not obstruct the view. Exterior glass doors by the tub take you back inside through the master suite. With the spectacular view outside, Sherry has used her favourite season as an inspiration for the master’s colour palette. “I love the fall. So many colours in this house were inspired by the comfortable warm hues of the season,” she said. The autumn tones are definitely evident all around the house. a comforting and cozy feel in their retreat. The solid oak closet doors, link the country style in the living space into their bedroom. The ensuite bathroom is quite the sanctuary. The therapeutic massage tub from Fulford’s Plumbing is hospital regulated and is almost as good as getting an actual massage, she said. And the heated floors are a great feature to have on during the colder months. The guest bedroom upstairs is decorated with much cooler colours. Hues of blue and beige in the room create an environment that’s just as calming as a spa, perfect for guests to relax at the Currie residence. Olive maple cabinets in the guest bathroom upstairs also flow quite well with the colour palette used in the room. On the same level there’s another bedroom. “It’s for our two grandkids to use when they stay for sleepovers,” said Sherry. The second floor’s foyer is a loft that overlooks the great room. Sherry furnished this space as a home library. With bookshelves on both sides and a seating area with comfy wing chairs in the middle, the area is a great quiet space for reading. “In the winter, when you can see through the trees, the view is spectacular,” she said. Despite the spectacular features that this home had to offer the Curries, they’re now looking to downsize. They’ve listed their home on the market knowing that another countryloving family with love this house as a yearround home or a seasonal cottage.

n winter, Thomas and Daphne’s 16 and 14-year-old boys can just grab their skis and go down the hill. There’s no need to waste time getting on the lift when you’re up so high already. And in the summer they enjoy mountain biking and golfing at the Monterra golf course. Initially, the Berky family always thought

they’d get a cottage right by the water. They looked at a few place at Wasaga Beach. But their boys were never really fond of the beach. They’d rather stick to their outdoor activities. A family drive near the area where they like to ski led to the discovery of the perfect location for their family cottage. GoodLifeMagazine.ca | 37

The Swiss-like chalet was nothing like what it looks like now when they first toured it. It was extremely outdated, filled with bird nests and just not liveable, said Thomas. But the view and convenience of the location had them sold. That’s why they contacted James Woodcock of TDI Construction from Thornbury. They needed the right builder to help them design their weekend getaway cottage. Woodcock was able to incorporate the few ideas they shared into a complete vision. They gave him some inspiration but also the freedom to pleasantly surprise them with the outcome. “We didn’t know exactly what we wanted, but were hoping to keep it as natural and cottagey as possible,” said Daphne. And Woodcock really hit the nail on the head with this one. He gutted the entire space down to the studs. The whole design and construction took about a year. He had to make quite a few changes to make the cottage work for the Berky family. Since the view is much more unobstructed on the higher level of the house, Woodcock chose a reverse layout. The bedrooms are on the lower floor by the entrance and the living area is on the second floor. “You don’t spend as much time in your bedroom as you do in your living space so it makes sense to have the living area with the better view,” said Daphne. The cottage sits at the peak of the mountain, offering a spectacular view of Georgian Bay. The large windows are great for showing it all off. And the view-facing deck is the perfect spot to relax after a long day of outdoor activities.

Just inside from the deck, the fireplace in the living room had to be completely redone. To give a much more fresh and modern look, Woodcock wrapped the fireplace with stoneveneer. This added richness to the space and helped make the fireplace an interesting focal point in the room. Adjacent to that is the kitchen. Kept simple and rustic, the space is perfectly functional for quick and easy weekend meals. They’re always too busy having fun when they come up to the cottage. Cooking is usually very low on their list of priorities. “If it takes more than 15 minutes, we just don’t make it,” said Daphne jokingly. The white cabinets in the kitchen make the space look modern and spacious. And they’re complemented with dark brown granite countertops. The large rectangle shaped island is perfect for the family to grab a quick meal together. And the island’s wood top finish blends with the rustic feel of the area. When Woodcock constructed the rest of the space he kept this rustic rough look throughout the entire cottage. He chose unstained wood beams and steel railings for the stairs to keep the country style all around. Downstairs the two bedrooms also have a good view of the water and the hill through the mature trees. The boys’ room is large enough for a twin-or-double bunk bed ensemble. And the master bedroom holds Thomas and Daphne’s queen-size bed with two night tables. All the furniture is simple but functional with a subtle French country touch to blend with the theme of the cottage. Practicality and functionality were well thought of in this cottage. On every floor there’s a bathroom. The basement bathroom is for the boys. In there, Woodcock kept a contemporary but also very natural feel. He used dark porcelain stone tiles to give it a rustic look. “The boys love it,” said Daphne. On the level just above, there’s Thomas and Daphne’s bathroom. On the higher level beside the living room, there’s a large two-piece bathroom for all to use. “It’s really about comfort, you don’t want to be making a far trip to the bathroom after a long day of skiing,” said Daphne. Thomas’ must-have feature in the cottage was the indoor hot tub. Closed off by garagelike glass doors with a view to the backyard. It’s easy to soak in the warmth while enjoying this view to the outside.

“When our neighbours put up their Christmas lights, it’s so nice at night in the winter,” said Daphne. The doors are also great for having the space closed when it’s too cold or opened for a little bit of fresh air. There’s also a rack on the wall that the entire family’s skis. Another glass door separates the hot tub area from the laundry room. With easy access from the outside, the boys can easily take off their snow gear before getting into the cottage. There’s also plenty of space for storing their equipment and laundry supplies. The post and beams entrance with the cedar shingles were Woodcock’s favourite part of the design. “I think it makes the entrance to the place homey and inviting,” he said. It also sets the theme of the cottage right from the outside.

In addition to the spectacular views, this cottage is all about location. It’s only a few minutes to the Blue Mountains village and steps to the attractive Scenic Caves and Bruce Trail. Collingwood’s downtown area is also just a few minutes drive, so it’s also convenient for groceries and other shopping. The drive to and from the cottage is quite stunning. You get to see Georgian Bay from different heights and angles. This cottage is a perfect example of how a fixer-upper project can really pay off. “Everything was an eyesore before, now we just love relaxing here,” said Daphne. Proceeds raised by Cobble Beach Concours d’Elegance will go to Sunnybrook Foundation to fund a state-of-the-art helipad on the rooftop of the Toronto hospital. About 500 of the 1,000 patients who are treated for life-threatening traumas at the hospital each year arrive by helicopter. At present, the hospital’s helipad is located 500 metres from the trauma room and transferring patients from the helicopter to the trauma room results in lost time in situations when every second counts. “I am pleased to be involved in bringing a car event of this stature to Canada. The harvest season is in full swing and with plenty of local food to enjoy, it’s the perfect time to explore farm markets. with that in mind, we toured four nearby farms and asked growers to share their favourite fall recipes. along with mouthwatering culinary submissions, the farmers interviewed offered up delicious details on their markets including the latest news on seasonal events, interesting crops and tips on enjoying this season’s bounty. Farm fresh goodness is on offer at Barrie Hill Farms. “We are southern Ontario’s leading farm destination for excellent berry picking, farm fresh food, and fun family outings,” says Morris Gervais of Barrie Hill Farms. Along with picking fields loaded with strawberries, raspberries, blueberries, pumpkins and more -- Barrie Hill Farms showcases a 3,600-square-foot farm market. You can enjoy fresh country air and peaceful scenery while shopping for seasonal berries, fresh local produce, homemade pies (fresh or frozen), maple syrup and various field crops. “We also grow our own tomatoes, cantaloupes, melons, peppers, flowers, squash and pumpkins, to name a few,” says the local farmer, whose family has been operating the farm for the past 40 years. Preheat oven to 375F. grease a 2l baking dish with butter. Topping: in a small bowl, combine flour, oats, butter, brown sugar and cinnamon. Stir together until crumbly. Set aside. Filling: in a medium bowl, stir together raspberries, sugar, flour and lemon juice. Pour into a greased baking dish. Gardeners and local food lovers can’t miss a visit to Garrett’s. Owned and operated for 33 years by the Garrett family, the country market sells a wide range of farm-fresh wholesome foods, including fruits and vegetables, organics, fresh baking, specialty cheese, eggs, jams and more. Owner Jeanette Garrett says she’s particularly fond of the harvest season. “I love the smell

of the apples and the colours of freshly picked vegetables — the reds, the oranges and the greens.” The local farmer is also sweet on fall weather. “There is less humidity and the mornings are fresh and cooler. It’s like an envelope of closure to the hot summer months that we’ve worked through.” With respect to managing the bounty of the harvest, Garrett advises leaving some canning until the winter months. “If you don’t have time to make jams and jellies during the growing season, just freeze the fruit and make your jam on a cold snowy wintery day in January. It warms up the kitchen and the wonderful smell of the jam cooking will remind you of summer.”

PreParation: in a large bowl, combine cucumbers, onions, peppers and salt. Let sit overnight. Drain the mixture and place in a large heavy bottomed pot. Add sugar, dry mustard, celery seed, mustard seed, tumeric and vinegar; mix together until combined. bring to a boil, stirring until thickened and sugar is dissolved. if mixture seems too runny, you can thicken with cornstarch. Pack into clean hot jars (sterilize according to manufacturers instructions) leaving 1/2inch head space. makes about four to five (500ml) jars.

During the farming season, folks don’t have to drive far before coming across a Hewitt’s Sweet Corn produce and baking stand. “Along with our main farm market and scratch bakery, we have over 13 retail stand locations,” says Trevor Hewitt, whose family has been operating Hewitt’s Farm in Coldwater for nearly 40 years. “It started with one stand, and just kind of grew from there.” Along with garden fresh Ontario produce, freshly baked pies, cookies, breads, local honey, maple syrup, homemade jams and preserves — Hewitt’s Farm Market and stands offer up Hewitt’s famous sweet corn and signature butter tarts. “Our goal is to provide convenient access to farm fresh produce and baking,” Hewitt explains. Located right at Hewitt’s farm, the main market and on-site scratch bakery (open most of the year) offers an expanded selection of locally sourced grocery, produce, meat, bakery and dairy items. The seasonal stands are as far south as Barrie, as far north as Bracebridge, west to Midland and east to Orillia. According to Hewitt, the first farm stand started with his dad’s sweet corn and his mother’s butter tarts. “It’s my grandmother’s butter tart recipe,” he explains. “My mother tweaked it a bit and we have run with it ever since.” What’s new for this fall? “Along with offering up more jams and preserves, we are showcasing more harvest activities at the farm,” explains Hewitt. Starting the first weekend in October, Hewitt’s Farm Market and Bakery will feature a corn maze, play area, pick-your-own pumpkin patch and farm animals.

LEGACY FROM MEMORIES “You have been suffering to see your youth pass away like a puff of smoke; but if it grows again, and comes to life in what you make, nothing has been lost, and the power to work is another youth.” Vincent Van Gogh

These words by renowned painter, Van Gogh, have inspired one local artist to paint cherished memories and in doing so, re-live her youth. “There’s a sense of power when you’re painting,” said Ona Alisauskas, a Collingwood artist. Alisauskas immerses herself in her works, intent on capturing experience and painting her most favourite things. She paints a moment in her own life or in the life of someone close to her, and in doing so, she relives it – every spot of sunshine on the choppy water of Georgian bay, every dried orange leaf along the path at the family cottage. Each colour she mixes is for the memory, so it can be re-lived even when she is gone. These memories carefully captured on canvas are her legacy. “I paint for posterity,” said Alisauskas. “I have 52 | GoodLife Georgian Bay | Fall 2013

a sense of the continuum of art and my little place in it. When I go, my paintings will live on.” But she has more than the distant future in mind when she paints. “My main motivation is re-living the experience,” said Alisauskas. “Making that experience from a memory or a reality.” Alisauskas will often paint people into her art in order to make that experience one that is easily shared. “I like to incorporate a body in my work ... I’ve always liked people,” said Alisauskas. “I put myself in that place.” She paints landscapes like Blue Mountain and waterscapes like the shale beaches of Craigleith. She brings photographs of the scenes and

The story behind this painting begins with English painter George Dawe (1781 - 1829) who was commissioned by the Russian Emperor, Alexander I, to paint portraits of all the Russian Generals who participated in the defeat of Napoleon. Dawe painted 329 portraits, which are now in the military gallery of the Hermitage Museum in St. Petersburg. This portrait is actually the head of Adam, her son, on the body of Andrey I. Gorchakov.

things she loves to her studio and paints from those. “You lose yourself in your work,” she said. “It’s like videogames. Everything else goes away. I’m painting things that are intensely personal, including my own family. It’s a personal experience.” Alisauskas always did well in art class, from childhood to elementary school and high school. Her Grade 13 art teacher encouraged her to attend Ontario College of Art, Drawing and Painting, where Alisauskas tried everything she could – oil, acrylic, watercolour, and three-dimensional sculpting. She completed her assignments in many styles from abstract expressionism to realism. But she enjoyed the challenge of realistic painting, and has stuck with that style through her career. “If I had my druthers, (clay sculptures) is what I would be working in,” said Alisauskas. But she liked the practicality of painting with watercolours – they are mobile, tidy and the canvases are portable. Rocky Shore: This piece, Rocky Shore I, was exhibited at the Canadian Society of Painters in Watercolours 85th anniversary juried exhibition in 2010. It was subsequently selected for the Government of Ontario Art Collection at the archives of Ontario in 2012.

Alisauskas maintained a varied career first as staff artist at the Mississauga library, then as a designer in the research and development department at Sheridan College. She later earned her teaching degree and became a high school art teacher, then an instructor at Humber College in web production. She’s an elected member of the Ontario Society of Artists and the Canadian Society of Painters in Watercolour. Now retired and living in Collingwood, she draws inspiration from the escarpment and Georgian Bay. “I love the water, it’s one of my big motifs,” she said. “I’m a beach bum in the summertime.” Alisauskas, originally from Mississauga, has been visiting Blue Mountain since childhood. Her father built a chalet at the base of Apple Bowl in the 1960s, and she made it her goal to retire to the area. In 2001, she did retire and move to a cottage on Georgian Bay, and later a home in Collingwood. She still enjoys skiing and doesn’t often paint in the summer because she’s always at the beach. rarely, a nirvana moment happen. When it does, not only does the food go with the wine, but both achieve a higher fusion on your palate, transcending all the elements.

here are seven of my absolute favourite marriages of cuisine and fine wine.

1/ Oysters Rockefeller and New Zealand sauvignon blanc. The fresh shucked oysters are topped with a mix of bread crumbs, spinach and bacon bits, put on a bed or coarse salt and broiled until brown. A NZ sauvignon has green elements like gooseberry to fuse with the spinach, and a spicy saltiness to enhance the oysters. The bacon? Who knows? Best choices are Cloudy Bay S.B. or any from Kim Crawford for the best hedonistic fusion. 2/ Sauternes from France with pan seared foie gras. I gently put some grape halves into the reduction at the last moment or have a wild berry reduction on the side. Sauternes is a region in Bordeaux with very sweet whites where the grape sugar is intensified by noble rot. Often Barsac, a tiny region within Sauternes, has less pricey versions. The LCBO never has enough Sauternes on shelves but an Ontario late harvest, such as Henry of Pelham Late Harvest Vidal, works amazingly well too.

3/ Freshwater fish with Ontario Rieslings. In summer I live in a boat and catch trophy smallmouth bass. Every few days my wife demands a fish dinner, and I go out and bring two or three back, usually 12 to 15 inches long (I release the monsters) and after I fillet them, she dips the bass in egg washed breadcrumbs and pan fries them. Dozens of Niagara Rieslings are first class now. Try Tawse Sketches of Niagara Riesling which gloves with the lemon wedges and flaky fresh caught bass. Pickerel is a fab species too! 4/ Lamb with Spanish tempranillo. The Rioja region is the top producer of tempranillo and the best are amazing. Usually aged mostly in American oak, the classic aromas show lots of mint, coconut, sandalwood incense, and sumptuous black cherry elegance. So mint is the food bridge, whether you prefer mint jelly, or piquant mint sauce. Want to create something sublime? Get a crown of lamb, and use fresh mint leaves (one tiny leaf variety tastes like mint chocolate) to infuse the stuffing, which goes into the middle of the crown. The fusion of the Rioja red with the mint touches is astoundingly delicious. 5/ Pan seared scallops with Aligoté. Around 90 per cent of great white Burgundies are chardonnay cloaked by village names. The region also makes aligoté, and mostly keep it for themselves. Why undersell $140 whites? Fortunately Paul Bosc of Chateau des Charmes pioneered in bringing in aligoté cuttings and growing it in Niagara. Try this with scallops (make sure you do not overcook the scallops, they are not supposed to bounce like rubber), it cuts cleanly through the richness and cleanses the palate. Another unknown Burgundy white, Melon, is grown by Norm Hardie in Prince Edward County. It too is killer. 6/ Asian cuisine with gewürztraminer. This grape is intensely floral, reminiscent of rose petals, violets, honeysuckle, lychee nuts, and tangerine blossoms. It finds its perfect mate with Chinese and Thai dishes, including orange or lemon chicken, pad thai and many more. My favourite fusion is Thai duck curry in coconut milk that also has lychees floating in it. For great Alsatian sweet edge gewurz, look to Alsace, but Niagara also produces a few of these spicy fragrant whites too, usually in a drier, less viscous style. Fielding 2010 Gewurztraminer is a very nice local choice. 7/ Chocolate dipped strawberries with red Ontario icewines. Yes, a raft of Ontario producers make icewines from cabernet sauvignon, cabernet franc and merlot grapes. If you make a semi sweet chocolate glaze and dip fresh Ontario strawberries in it, serving a half bottle of one of these red icewines is a transcendent taste explosion on your palate. Inniskillin 2012 Cabernet Franc Icewine is very elegant. A grand summer dessert pairing.

As a travel editor i love every aspect of travelling. From the moment a trip first comes together to the moment i am back home after a long adventure, i love all of it. some people wonâ&#x20AC;&#x2122;t believe me, but preparing for an adventure is one of my favourite parts. each trip is unique and requires a different amount of preparation and planning. early this year i was offered the experience of a lifetime; a ten day expedition to Antarctica aboard the Antarctic Dream. needless to say i jumped at the opportunity.

In all of my travels

I have visited six continents; Antarctica would be my seventh and final continent. After committing to the expedition I began researching, an important step in order to know what to expect and what to pack. The first item on my agenda was to research the ship. I had heard that the Antarctic Dream was an incredible ship, but knowing what I do about the sometimes-harrowing seas of the Drake Passage, I decided to investigate a little further, just to be sure. No one wants to go to Antarctica without feeling safe. I discovered that the Antarctic Dream was built in Holland in 1961 for the Chilean navy. Her original name was Piloto Pardo, named after the officer who sailed with his ship Yelcho with Shackleton on board to Elephant Island to rescue Shackleton’s men who had been there for 4.5 months. When the Yelcho was decommissioned, the Piloto Pardo replaced her, servicing as a logistics ship to the Chilean stations. Five years ago the present Chilean owners bought the ship and refurbished her as a passenger ship for the polar regions. She takes a maximum of 84 passengers, 5 expedition staff, 13 hotel staff and 20 nautical crew members. At 81 metres long and 12 metres wide, she has a draft of 4.6 metres. The next step was to figure out what to pack. Even after all of my travels I still always manage to over pack, this trip was no different. A trip to Antarctica is no ordinary trip, it requires preparation for the unexpected; warm clothes for those frigid days and lighter ones for in between. Through my research I discovered the Canada Goose Expedition Parka, and I am thankful I did. The Expedition Parka was first developed in none other than Antarctica and has been used by scientists there for over 20 years. Designed to withstand the most frigid of temperatures, the Expedition Parka is durable, well insulated and surprisingly light weight. The Expedition Parka

also boasts a multitude of external pockets, ideal for day trips. The ship will supply jackets, but if you want to ensure comfort and warmth I would highly recommend Canada Goose. The next thing I needed was a good camera man. Although I do all of my own photography, this particular trip called for someone who knew their way around a video camera. I called my old friend Bill Maycock from Bermuda. Not only would Bill be a great cameraman but he would also appreciate a trip like this. After weeks of preparation the trip was finally upon us. From Toronto we flew to Buenos Aires, Argentina. After three days in Argentina we caught the flight to Ushuaia, Tierra del Fuego, where we spent the night in a hotel, got up early the following morning and boarded the ship. One of the first things I do when I board a ship is look around to see who else is on board. I always find the demographics interesting. On this specific trip I was surprised to find so many women, I had mistakenly and perhaps being slightly “old fashioned” assumed it was a more masculine adventure. As I have mentioned in previous articles, I have been sailing for over 40 years and have heard numerous stories about what it is like to cross the Drake Passage. On any given day the Drake Passage can go from calm seas to huge swells. I knew once we got across we would be in another world and that it would be worth it. The Drake Passage definitely lived up to its reputation. The two day passage was

made that much more comfortable by the fantastic staff aboard the Antarctic Dream. On our third day at sea we finally reached the South Shetland Islands and the beginning of our passage through the Nelson Straight. Almost immediately we found ourselves surrounded by humpback whales. The clear, almost calm conditions provided ideal viewing from the bow. The ship slowed to a snail’s pace and everyone, including our Captain, had an opportunity for a photo. Our next destination was the Aitcho Islands Group and Deception Island. We boarded the zodiacs and were soon standing on solid ground. It was an amazing feeling to know that I was one of only a small number of people who had ever stood at this spot. When you set foot on Antarctica, it is an amazing feeling. My mind was thinking of what it would have been like for Shackleton. Compared to my first class adventure, what was he thinking when he first stepped onto solid ground, was he having similar thoughts? The Aitcho Islands, are a dramatic mix of snow and moss covered cliffs, often dotted with penguins at their nests. We spent the next few hours exploring the nearby shores, being careful not to disturb penguins and seals. The penguins were breathtaking, crowding the shore in the thousands; it was hard to stop myself from picking one up for a quick cuddle. When our time was up we headed back to the zodiacs and it was off to our next destination, Deception Island. Many passengers braved the chill of the deck in order to watch our progress through Neptune’s Bellows and into Whalers Bay. As we departed the ship I couldn’t help but

think that the rugged and often extreme landscape is defined by its stark contrasts. Deception Island is volcanic, resulting in black beaches offset by blindingly white glaciers. The view was absolutely breathtaking. The remains of old whaling stations and wooden boat frames just add to the history and intrigue that is Antartica. For the wildlife enthusiasts, Antarctica is a prime location to view all sorts of rare and exotic species. In addition to the humpback whales, we were lucky enough to see killer whales, chin-strap penguins, gentoo penguins, fur seals, leopard seals and a variety of albatross species. For those who enjoy dramatic scenery there is nothing to match the colour, light and sheer power of ice fields filled with the abstract forms of icebergs. For myself the combination of wildlife and scenery made an unforgettable memory. After an amazing and fulfilling adventure it was back to Argentina and then onto Toronto. My experience aboard the Antarctic Dream fulfilled a lifelong goal and was the experience of a lifetime. The expedition group and crew were amazing and sharing the experience with my good friend Bill made it that much more remarkable. If I learnt one thing on this trip it was that no matter how prepared you are, some experiences are just that much better because they are unanticipated. I think this trip taught me to remember to leave a little room in my suitcase for the unexpected.
