Brace yourself – it’s that time of year again! it’s time to say to goodbye to the cool fall weather and hello to biting cold. i must admit though that i’m a little bit excited about spending some quality indoor time and tackling home projects, reorganizing spaces or just relaxing with a good book and a warm drink by the fireplace.

It’s also time to start chipping away at those holiday shopping lists and what better way to do so than by wandering our downtown shops to find the perfect gifts for friends and family. Andrea Higgins Great everyday, perfect for the holidays Nothing says fall is here and Christmas is near like the smell of fresh-from-the-oven baked goods. And while every day is a great day for baking at Sigrid’s Bakery, master baker Andrea Higgins said the holiday season brings with it a number of must-have taste sensations. Christmas Stollen tops her list. “You could say it is like a heavy raisin bread but very unique in its taste,” Andrea said. “There are three different kinds and they all contain marzipan (almond paste). The most popular is Dresdner Stollen and it has raisins, finely chopped lemon peels and rum. The Marzipan Stollen contains extra chunks of marzipan and the Poppy Seed Stollen has our light, homemade poppy seed filling inside. We also make a Diabetic safe Stollen.” Sigrid’s, a traditional European bakeshop, specializing in German baked-goods, has been in business for 31 years and was founded in 1983 by Andrea’ parents Josef and Sigrid (the bakery’s namesake) Krautgartner. “My parents left a very successful bakery in Germany to start a new life in Canada with my sister and me. The idea was to bring a touch of Europe to Barrie. To this day, my parents still help out, but I took over the bakery in 2004. Today, my husband Brian, and our three children help me run the business. Brian is a huge help and is my right hand. I couldn’t run the business without him.” Year-round, Sigrid’s counters are filled with trays of tempting goodies ranging from date squares and pastries to yummy cookies, butter creams and cream cake tortes.The bakery is particularly well known for Bienenstich (a yeast-based custard filled cake topped with honey glazed almonds), homemade breads, buns and Florentines! Other top sellers include mambo dry hazelnut cake, buttercream rum balls and the ever-popular Swiss Mountain rye bread. For the holidays, Sigrid’s also makes delicious gingerbread houses. “Another popular item at Christmas is Canache rolls – marzipan wrapped around a Ganash that is made with couverture (pure high grade dark chocolate), whipped cream and Kirschwasser (cherry liquid),” Andrea said. For those looking for gift ideas, Sigrid’s also stocks a number of German products including Marzipanbrote (almond bread), Mozart truffels, Niederegger and Schluckwerder.“Our shelves are lined with various European specialty items such and feel free to top off your shopping experience with a treat, or a savory soup & Sandwich on a homemade bread.” The bakery also sells various 100-per-cent peanut-free, gluten-free and dairy-free products, diabetic cookies and cheesecake, as well as gluten-free bread in plain, sunflower and raisin. With the holiday entertaining season revving up, it’s the perfect time for an appetizer story. With that in mind, we asked a handful of chefs and food professionals to offer up their favourite recipes for festive hors d’oeuvres. The results are downright delicious!

1-1/2 cups creamy mashed potatoes 1 large egg 1-1/2 cups grated white cheddar cheese 4 Tbsp chopped fresh chives 1 tsp kosher salt

“This is a great recipe for leftover creamy mashed potatoes,” explains the chef/co-owner of Alliston’s Bistro 77 and the Burger Bistro Joint. “They can be made in any size for an appetizer, and they are gluten-free.” For more chef Jay Klausen potato recipes, visit bistrofreshpotato.com. 1/2 tsp freshly grounded pepper 3 Tbsp cornstarch PREPARATION: 1. Preheat oven to 375F. 2. Combine all ingredients in a mixing bowl, incorporate well. Line a baking sheet with parchment paper. Using a tablespoon, spoon out the mixture leaving an inch between each portion. Place in oven and cook for 7 minutes. Flip, and cook for another five minutes, or until golden brown. 3. Serve warm — either plain or with sour cream or an aoili. {Makes about 30}

Preheat oven to 375F. 2. In a skillet over medium heat, cook bacon in batches until cooked through but not crispy. Transfer to a paper-towel lined plate and let cool. 3. Cut each strip of bacon in half to make 24 small strips. Spread each strip with 1/2 tsp (2 mL) mustard and wrap around an apple wedge and piece of cheese. Secure with toothpick. Repeat with remaining ingredients. 4. Arrange bites on a parchment lined baking sheet. Bake in preheated oven just until bacon starts to bubble and cheese begins to melt, about 3-5 minutes. Do not overcook. Serve immediately. {Makes 24 pieces}

The 24-year-old Georgian College trained chef, who was born in Penetanguishene, has always felt at home in the kitchen. “I grew up helping my grandparents and mom cook everything from simple spaghetti to pies and desserts,” explains the young chef. After working his way up the cooking ladder in various local restaurants, Fournier landed at micheal and marion’s the Side Door in 2012 as garde manger. By the summer of 2014, he took over as head chef.

PREPARATION:

3 cups goat cheese 5 leafs fresh sage chiffonade (chiffonade means sliced into long, thin strips)

1. In a stand mixer, whip trout, goat cheese and sage until soft.

Juice from half of a lemon zest from half of lemon 3/4 cup water 1/2 cup sugar 1/8 tsp cinnamon 1/8 tsp allspice 1 pinch nutmeg PREPARATION:

2. Add the cream slowly and whip until cream is incorporated and goat cheese is smooth, but still has some small chunks of trout.

1. Cut orange into thin slices (roughly 1/8-inch slices), removing any seeds as you go. Stack the slices together and cut into eighths.

3. Put mousse into piping bag with large star tip and chill until set. Alternatively, set bowl of mousse into the fridge to set (to quenelle later with spoons).

2. In a small saucepan, combine oranges, lemon juice, zest and water; bring to a boil. Reduce heat to a rapid simmer and cook, stirring frequently for 40 minutes or until fruit is very soft. 3. Return to a boil and add sugar and spices. Reduce heat to medium low and cook 15 to 20 minutes, or until colour darkens. Set aside, keeping warm, until ready to use or reheat before use.

1 cup (2 sticks) butter, melted PREPARATION: 1. Preheat oven to 350F. 2. Place first sheet of filo on cutting board and brush with butter. Place next sheet on top of buttered filo and repeat with butter. Add one more sheet of filo and brush with butter. 3. Cut the filo into squares (6-inches by 4-inches) and push into muffin tin to make cups, leaving an empty space between each cup.

8 kumquats 3-1/2 cups granulated sugar 1-1/2 cups water Note: if you can’t find kumquats you can use a thinly sliced orange PREPARATION: 1. Thinly slice kumquats. 2. In medium saucepan over medium to high heat, bring 1-1/2 cups sugar and water to a simmer and cook until the sugar is completely dissolved to make a simple syrup.

3. Add sliced kumquats to the simmering syrup and cook until softened. 4. Strain off the kumquats and toss them in the 2 cups of sugar. Lay onto baking sheet lined with parchment paper to air dry for about 30 to 40 minutes. Remember to reserve the syrup to add to your favourite drinks like homemade iced tea, hot teas or coffees. Also, save the rest of your 2 cups of sugar to use in baked goods because it will have a delicate citrus flavour. Note: If using oranges, quarter the orange slices after they dry. 5. To   assemble the appetizer: Pipe or quenelle 3/4 to 1 ounce of mousse into each filo cup. Spoon the warm marmalade over top of the mousse.

Donaleigh’s Irish Public House may be missing Cheers’ Sam and Diane from behind the counter or Norm enjoying a pint at the bar, but it has quickly become one of Barrie’s top pubs. More than that, it has become a place, like the Cheers bar, where everyone knows your name and you are always surrounded by friendly faces. That welcoming feeling is an important aspect that owners Don Kellett and Steve Ricalis wanted to bring to the business, especially at Christmas time when a sense of community is particularly important. “We wanted to create a place where everybody feels comfortable, where everyone is welcome” Kellett said. “This is where they come and meet new friends. It’s Barrie’s Cheers.” The regulars that come in for a pint of Guinness or one of the many daily features – from burgers to chicken pot pie – are a

constant reminder of the pub’s connection to community. Being embedded within the community is exactly where Donaleigh’s wants to be. “A traditional public house was not just to get a good meal,” Kellett said. “There were community meetings and public celebrations. It’s based around the community.” The winter holidays are a festive opportunity to make people feel at home. As snow falls outside Donaleigh’s this winter, there will be festive Christmas trees indoors, decorations all around and fiddle music on the speakers.

Staff uniforms become more Christmas themed, and there is still the same great selection of music and food available throughout the day and into the night. This year is Donaleigh’s fourth Christmas in downtown Barrie. Though closed on Christmas Day – the only time all year – to let staff enjoy time with their families, the pub is back open Boxing Day. When New Year’s Eve rolls around, the pub focuses on providing its customers with the best entertainment experience possible. Memphis Mud is booked to play live, and there is no cover. Kellet said, “ We don’t charge cover for regular events because we strive to give our patrons the best quality experience possible.” The pub’s food prepared by a red seal chef, Carol Smith are a mark of quality. Those daily specials are incredibly popular, with both sit-in and take-out orders keeping staff busy.

Though the menu does not change to incorporate holiday-themed items, the pub becomes a warm and inviting place to be. “Christmas is my favourite time. I have two young kids. I have my daughter’s artwork on the wall. She’s three. It’s very… interpretive,” said Kellett, chuckling. “We pride ourselves in being family friendly.” Donaleigh’s staff will also be handing out hot chocolate to kids at this year’s Santa Claus Parade. Inspired by a close friend, whose son is autistic, Donaleigh’s puts out

Cozy perfection in Thornton

Exquisite styles mixed with sophisticated design elements create grand elegance throughout this Thornton home on 1.2 acres of land overlooking the Niagara escarpment. JJ and Trish Hochrein were fortunate to purchase this gem from an interior designer who put so much custom love into the home. However, with Trish’s passion for interior decorating, she had to put her stamp on it as well. “We did quite a bit of changes to make it our home,” said Trish. From finishing the basement to changing all the paint colours throughout the house, Trish and JJ were able to make this attractive home an even closer match to their style. Upon entering their picture-perfect home, you are immediately welcomed by calming neutral colour palettes throughout. A view of the gorgeous backyard is seen right from the entrance.

In the living room to the left of the entryway, variations of white, beige and brown hues create cozy warmth. And the elegant fireplace with travertine surround sets the area as a flawless formal sitting space. On the opposite side of the foyer, a classy office space serves as Trish’s writing zone. Thanks to two oversized windows on adjacent walls plenty of natural light shines into the room. The third wall includes custom built-in floor to ceiling bookshelves.

Further into the house and past the living room is the butler pantry that connects to the kitchen and dining space. The elegant transitional style kitchen is equipped with commercial grade appliances, including a Jenn-Air range. “My husband really enjoys cooking so it’s quite the chef’s kitchen,” said Trish. Adjacent to the kitchen next to the exterior French doors is the rustic-looking dining table from Restoration Hardware’s Flatiron collection. With six vintage French chairs, also from Restoration Hardware, there’s plenty of room for the family to enjoy many of JJ’s delicious recipes. Above this rustic table hangs a chic chandelier. “It’s a smaller version of the one in the great room,” said Trish. Open to the kitchen and eating space is the two-storey great room. This well-designed area includes various unique and luxurious design elements such as a coffered ceiling, a Juliet balcony from the second floor’s master suite and a grand fireplace from Town and Country Fireplaces that is surrounded by a detailed cast stone mantel from Omega Mantels in Toronto. Furnished with a nautical colour palette of blue, white and grey, the great room is the main entertaining spot on the main floor. With oversized floor-to-ceiling windows, the beauty of the outdoors shines through. Despite the spaciousness of the area, there is still a very cozy feel to the space. “Our guests always find this room warm and inviting,” she said. The paint colours used throughout this home add a lot to the richness of the design. In the great room, a crisp shade of white was used to promote focus on all the other beautiful elements that surround the space, such as the outdoor scenery. The walls were painted with Benjamin Moore’s Cloud White and the trim with White Down. Using more neutrals, the hallways, mudroom, office and living room on the main floor were painted with Benjamin Moore’s Natural Linen. This brings subtle cream tones to the spaces while making it simple to redecorate. The Brazilian walnut hardwood floors complement the warmer hues of these walls, while also matching well with the handrails of the staircase. Taking the stairs up to the second floor from this well-designed space leads to the master suite on the right side. Trish has furnished this space using inspirations from some of her favourite design sources, such as the interior decorating website Houzz, Restoration

Similar to every other room in the house, wainscoting wraps the walls in the master suite to add a stylish touch. Just two steps past the his/hers walk-in closet is the ensuite bathroom. With heated floors, a jetted tub and a spacious shower, this is truly the couple’s escape. Pairing nicely with the neutrals theme throughout the house, the ensuite bathroom is painted with Retreat SR2 from the Sarah Richardson collection by Para Paints. Down the hall and past the window seat are three more bedrooms. The one with the ensuite bathroom is their son’s room and the other two serve as guest rooms. Although these two rooms do not include ensuite bathrooms, they share the main bathroom. Completed with the same Crema Marfil

marble used for every countertop in this house, including the kitchen counters, this bathroom is comparable to that of a high-end hotel. Both bathrooms on the second floor were painted in a classic coastal blue hue called Seersucker SR46 from the Sarah Richardson collection by Para Paints. More living space was added to this home when the Hochrein family decided to finish the basement. “We made it into a Muskoka space,” said Trish, referring to the warm colours used to decorate their walkout basement. The two red exterior French doors that lead to the backyard help frame the view of the outside. The secondary focal point in this space is the all-stone wood-burning fireplace with the rustic wooden mantel. The natural materials used to create this feature piece are clearly inspired by the Muskokan style. On the opposite end of the basement is a custom built-in storage unit. “I call it the world’s most expensive toy box,” said Trish. It cost so much to make because its sophisticated

It’s the festive season, when family comes first in our thoughts. Of course, friends dropping by for special weekend dinners and winter evening parties also come into vogue. Lots of the feasting will focus on turkey or whole chicken, special fish dishes, aged clover studded hams, as well as racks or leg of lamb and sirloin or prime rib roasts. The best wines to accompany these should be special, but that does not mean they have to cost an arm and a leg. I am always in the hunt for the best-hidden gems at a price that does not involve a second mortgage. So today, I bring you my latest top value white and red wines. Between the five choices, they can match with almost anything you can dream up in the kitchen. You may be aware that several wines can go with a single dish. For instance, with roast turkey, a sauvignon blanc will cut cleanly through all that gravy and excite and clean the palate. But an oaked chardonnay also can go because it matches or complements the gravy and all the butter on mashed potatoes and veggies. Some folks will even match a pinot noir or gamay to roast turkey, although that is quite daring. But this lighter styled red does go with mushroom or savoury stuffing, as well as cranberry sauce. Five years ago, her family moved into their new home in Midhurst. After living in the older home for awhile, the wife could see that interior renovations and new decor ideas were needed. Moreover, she knew that she could design the project herself. This decision, born of an inner confidence, allowed her natural talent for design to come out and shine. “It’s funny because I’ll look at homes that really need a lot of work, like a complete rip down to the studs, and my husband will not be able to see it,” explains Lindsay, who now works as an independent design consultant for residential and commercial properties. “The work is fun and it’s great to be able to see a finished project after knowing how things looked when it started.” By the time the couple decided to move on and build their own home, their Midhurst home had been transformed. Lindsay was ready to create an elegant but simple interior design for their new residence. “I got the knack for interior design in Midhurst where I renovated the entire space,” recalls Lindsay. “That was a process in and of itself. That’s when I found myself thinking that maybe I could do this outside of my own space.” While looking for a quiet, family-friendly area suitable for their young son and within an easy drive to Barrie, the couple found a new development of custom homes in Snow Valley in Springwater Township. With many families already in residence and city shops a short drive away, the location was perfect. The couple soon bought a lot in the enclave from local builder Dendor Fine Homes. Dendor began construction on their luxury four-bedroom, four-bathroom bungalow in May 2013. The family took up residence in December. The home is cradled on a gently sloping lot that allowed construction of an above grade lower level with walkout to a forest-fringed private yard. “Dendor was fantastic to work with,” says Lindsay. “They worked reallyhard and got it done for us. Dendor doesn’t take on a lot of different projects. They construct a couple of houses at a time and do them very well. We liked the layout of our home on paper and knew this was a child-friendly area with lots of kids around.” To create the interior design plan for this home, Lindsay hired Amanda Forest, a Toronto interior designer who helped bring the homeowner’s design vision into reality. “I didn’t go to school for design, but either you have the interest and the ability or you

The exterior’s traditional stone and stucco finishes are complemented by a threecar garage with vintage carriage house-style doors and a natural stone arch framing the front entrance. The light-filled entry hall leads to an airy, open-concept living room, kitchen and dining room encompassed by soft grey walls with fresh white trim accented by espresso brown hardwood floors. The neutral palette creates a calm atmosphere while woodland views, seen through a series of large windows across the back of the home, add natural beauty. Nature is also invoked through design touches like the branch-patterned upholstery on living room armchairs near the floor-toceiling gas fireplace with white marble surround. Beside the fireplace, a bed for the family’s beloved golden retriever is colour coordinated with the grey and white room, keeping the décor theme of a stylish but definitely family home. Flanking the fireplace, a set of tall twin cabinets, whose hue perfectly fits the prevailing palette, was a fortunate auction find as was the handsome hutch in the dining room. Graceful tray ceilings in the living room and kitchen add loft and subtle elegance to both rooms. In the open kitchen, which was custom built by Astro Kitchens of Barrie, a marbletopped island provides comfortable seating for family meals. The island’s light is supplied by a row of traditional pendant lamps with a hint of modern design. “It is quite a large island which is great for entertaining,” says Lindsay. “Everyone gathers in the kitchen anyway, so we decided to make room for them.” When guests arrive for brunch, a windowed breakfast nook off the kitchen is a comfortable spot to gather. With walls painted in Windham by Pratt and Lambert, the kitchen is a chef’s delight with GE Monogram stainless steel appliances and gas stovetop. The distinctive carved wooden cabinets and woodwork décor accents were designed by Lindsay.

“I knew I wanted some sort of design for the wood in the kitchen, but I didn’t want anything too elaborate or ornate,” she explains. “I sketched out the entire kitchen. Astro Kitchens gave us the space and said go ahead and design it.” The formal dining room, whit walls glowing in Genteel Grey by Pratt and Lambert, is illuminated by a dazzling crystal chandelier from Restoration Hardware. Many of the light fixtures throughout the residence were sourced here and at Prima Lighting in Vaughan. A waffle ceiling adds charm and interest for diners and reflects its designer’s style. “My décor style is a romantic, elegant look but on the traditional side,” says Lindsay. “Nothing too contemporary. I want a simple elegance.” The master bedroom’s ensuite also displays a romantic look with a classic standalone tub, soft recessed lighting and textured glass sconces. Down the hall, the son’s cozy bedroom is attached to his playroom by a Jack and Jill bathroom with double sinks. Downstairs, the design mode is casual for family and friends. Two deep-seated brown leather couches are ready for movie night or to catch a favourite show. Beyond the family room, a guest suite of a bedroom with TV and bathroom is handy for when the couple’s families come to visit. clients, ranging from elite athletes to clients suffering from debilitating chronic pain. “By the time a client gets to their third treatment, they are so impressed that they are booking their whole family to come in and see us,” she said. “Brothers, sister-in-laws, aunts, you name it. We even have clients that fly family in from Halifax for treatment.” Hayes, who has worked closely with the Canadian Snowboard Team and the Canadian National Freestyle Ski Team, focuses on getting her clients healthy as quickly as possible. After working in Whistler, then owning a successful clinic in Jasper, Hayes and her family decided to make the move back to Ontario. Hayes decided on Barrie because it was away from Toronto but had good GO Train access to the city, where her husband works. Resolution Physiotherapy and IMS Clinic opened in Barrie in June 2010. “I traded my mountains for a lake,” Hayes says as

chronic pain disorders and sports related injuries. The clinic’s physiotherapists also have specialized training in the treatment of TMJ (jaw) disorders, craniofacial disorders, vestibular dysfunction, women’s health, running techniques, Fit fore Golf, K-Taping and sports concussion. “We work with many local teams to prevent injury. We do complex cognitive testing when athletes are healthy, establishing a baseline for each athlete. We can then compare these results to testing following a concussion sion and and be mor more objective about the severity

of their concussion.” Hayes said. “It also allows us to know definitively when an athlete has fully recovered back to their personal baseline and get them back to their sport safely and quickly.” In the middle of speaking with GoodLife, Hayes is called out to feel a knee by one of the other physiotherapists. “We really are a team around here,” she said, when she returned. “Being in a team makes us more effective. If one of us takes a course we come back and share what we’ve learned with the rest. We talk about cases that may be challenging and we work through problems together.” But, the clinic’s greatest specialty is in Gunn IMS (Intramuscular Stimulation) treatment.

she points to the stunning view of Lake Simcoe out the wall of windows across the back of the clinic. “We have fallen in love with Barrie. It is a big town that still has a small town feel, and gives us easy access to all the outdoor sports we love.” Demand has led to a recent expansion of the bright, open-concept clinic on Victoria Street. The team at Resolution is now able to meet the demand for appointments and the expansion has also provided space for more therapists, but Hayes said she’s taking her time to expand her staff. “We only hire truly exceptional physiotherapists. They need to have completed level three post graduate manual therapy training or higher,” she said. “I am very lucky to have the physiotherapists we have here. They all have a lot of experience and post graduate training.” This training and experience enables the clinic’s staff to confidently diagnose and successfully treat complicated spinal joint, peripheral joint, systemic

“When you have to change a light bulb five or six times in a row, you realize it’s the wiring that is the problem and not the light bulb. It’s the same with physiotherapy,” Hayes said. “If you keep getting treatment, and it isn’t working, it’s probably your wiring, or in this case your nerves.” That’s where Gunn IMS comes in. Gunn IMS was named for the Vancouver physician who developed the treatment and who has since been given the Order of Canada for his contribution to the research and treatment of neuropathic pain. Gunn IMS treatment is used to normalize the function of nerves and is exceptional at resolving pain when other traditional treatments have not been effective. Gunn IMS uses acupuncture needles, approximately the size of a hair, that are placed into muscles, which have been made tight by an unhealthy/abnormally functioning nerve. Hayes decided to get her IMS certification at the encouragement of athletes on Canada’s national

& IMS CLINIC supplies get tight and cannot let go until fluid flow to that nerve is improved.” When acupuncture needles are placed into muscles, which are tight because the nerve is unhealthy, there is a reaction and the patient will feel a cramp. “The cramp is what tells us the muscle is tight because the nerve is neuropathic. If the nerve is healthy, there is no cramp,” she said. “Immediately after the muscle cramps the muscle is able to relax back to normal. The tension in the muscle is reduced for up a week and in that time the fluid flow in the nerve increases, allowing the nerve to heal. Within a few treatments the health of the nerve improves, eventually permanently returning to normal.” She said the treatment has dramatically helped many clients, including one who was off work for four years because of terrible pain. “It’s fun treating people like that because we get results so fast and when things start to feel better they give you this look like ‘how on earth are you doing this?’”

That client went back to work within six months of beginning treatment. The clinic currently has four physiotherapists who are certified in Gunn IMS. “Getting certified in Gunn IMS is not easy. Physiotherapists require extensive post-graduate manual therapy training before they are allowed to take the course. Our entire team of physiotherapists is certified in Gunn IMS. michelle Huggins matthew Jones By KAThERInE ElPhICK PHOTOGRAPHy By EllIE KISTEMAKER The delicious aroma of freshly baked focaccia bread fills downtown Barrie’s Lazy Tulip Café. “We bake our own bread daily,” says Michelle Huggins, 47, who owns and operates the artsy, shoebox-sized Café with Matthew Jones, 48. “Our whole wheat focaccia is nothing short of fabulous.” Opened in March 2012, the Lazy Tulip Café is a quaint, soulful, independently-owned eatery with a focus on fresh and conscious eating. It offers a breakfast and lunch menu specializing primarily in vegetarian and gluten-free options. Recently, this GoodLife reporter sat down with its co-owners to chat about everything from the Café’s funky vibe and community involvement to the importance of serving up a healthy and tasty menu. What’s on offer for breakfast? MH: We serve up international diversity spreading from France to Mexico. Huevos Rancheros (two eggs served sunny side up on re-fried beans, topped off with fresh avocado and homemade salsa) is a very popular dish because it can be served on gluten-free corn tortillas, or in a crepe. Swap out the eggs for some scrambled tofu and now it’s vegan! Matt is the genius behind the quiche and the baked French toast, which are remnants of his time at Bonjour Brioche. We offer “Eggs Benny Sundays,” where our breakfast chef (Michelle’s brother Rob) makes hollandaise from scratch with perfectly poached eggs on peameal bacon served on our own fresh whole wheat focaccia.

Mediterranean GoodLife: Thirty years ago, you met as members of a Toronto marching band and have been friends ever since. What led to the Lazy Tulip Café partnership? Michelle Huggins: I have always wanted to open a little Café. The desire stemmed from years of travelling and spending countless hours in various foreign Cafés. We hadn’t planned on opening up a business together, but the lease just came up and it all happened organically. When I told Matthew I had found this cute little space, he suggested that we do something together. Within a month, we were open. 46 | GoodLife Barrie Edition - November December 2014 ■

What’s your culinary background? Matthew Jones: For several years, we’ve both held front-of-the-house positions for various well-known Toronto chefs including: Susur Lee, Massimo Capra and Didier Leroy. Being around that type of high quality food is truly inspirational. I also spent five years working at Bonjour Brioche, which is one of the best bakeries in Toronto. During that time, I picked up lots of great ideas from the owners, Lori and Henri Feasson. Michelle’s vast travelling experiences and love of ethnic cooking has also been a great asset.

MJ: We slim down our weekday breakfast menu. During the week, we sell tons of breakfast sandwiches, baked French toast and our very own granola (made with organic gluten-free oats and served with yogurt and fruit). What about the lunch menu? MH: Our lunch menu offers a selection of 10 wraps and sandwiches all served with our house salad along with homemade soups and salads. Our sandwiches are truly scrumptious because they are served on our homemade whole wheat focaccia bread which is light, fluffy and delicious. Our soups are also a big hit! We sell so much soup — even in the summer we are constantly making batches of soup. What would you order for me? MH: For a weekend breakfast, I would recommend the Huevos Rancheros served on a crepe. For lunch, I’d suggest the Mediterranean sandwich. I’d also probably shoot you a little side soup for a taste. MJ: It’s a tough choice between the sandwiches. I really do love them all and could eat a different one each day. Why specialize in primarily vegetarian and gluten-free? MJ: People are becoming more aware of what they’re eating, where food is coming from and how it’s impacting our environment. As for the gluten-free angle? It’s a huge market and our customers love that we offer so many different options. MH: I don’t eat red meat, just chicken and fish and there are lots of other people on a similar diet. Whatever the reasoning — environmental, health or an opposition to factory farming — many people are choosing this dietary route. That’s why we decided to tap into this growing market. We aren’t strictly vegetarian. We offer locally sourced, free range chicken and turkey bacon. Even though it’s tiny (about 500 square feet), the Lazy Tulip Café serves up plenty of personality on the decor front. I like the colourful chalkboards, local art and various travel photos that grace the walls. MJ: The vibe is worldly, spiritual and funky. Music is also a big part of the atmosphere. Our 800-song playlist ranges from Indian tablas to Mumford and Sons and local musical talent. We have a TV that shows an eclectic slideshow of Michelle’s travel photos from such places as India, Nepal, Thailand, Mexico, the Bahamas and North America. It makes for fun conversation and fellow travellers love it. Since we are close to the bus station, we get the odd backpacker passing through and they feel very much at home here.

Michelle, you played a vital role in helping to release the “Barrie Happy” video. Over 40 downtown Barrie businesses got “happy” for the video and Mayor Jeff Lehman even makes a cameo appearance rocking it on the drums. Describe that experience. (Readers can check it out at barriehappy.com) MH: After a brutal, long, cold, snowy, depressing winter, some of the downtown Barrie business owners decided we needed to get together, thanks to Sarah Jensen, and talk about how we could bring in some new energy. As we all know, the song “Happy” by Pharrell Williams is the hit of 2014. It’s a song full of positive energy and … well … you just can’t help but be happy and sing along to it! One day I came across this fun video of a community from Canmore, BC that was promoting its Food and Wine Festival. Everyone felt this would be a great way to promote downtown Barrie. So we did it. What’s your business philosophy? MH: We’ve both spent years specializing in front-of-the house service. Our goal is to ensure that everyone walks out the door happy. Connecting with our customers is extremely important to us. MJ: It’s all about loving what you do. We love the restaurant industry because it’s all we’ve ever done. All our staff is wonderful and happy to be here. Let’s hear about the beverage menu. MH: We came up with our very own fun and interesting coffee called the “Canadiano.” It’s basically an Americano with maple syrup. We serve various specialty coffees made with fair trade and organic Planet Bean coffee, which is freshly roasted in Guelph. We also offer smoothies and various in-house brewed iced teas. Almond and soy milk are even available for specialty lattes and cappuccinos. What about your gluten-free, vegetarian and vegan options? MJ: We offer tons of gluten-free options, including gluten-free bread (from the Thornbury Bakery) and wraps, so any sandwich can be made gluten-free. Our soups are always gluten-free and we always have vegan soup available. All of our sauces are also gluten-free. Our menu

also features various vegetarian items. For a sweet treat, we make a delicious cranberry, coconut and oatmeal cookie that’s glutenfree and dairy-free. We use maple syrup as a sweetener. What’s your favourite dish to cook at home? MH: I lived in the Bahamas and Florida for about eight years so I learned how to cook fresh fish. One of my favourite dishes is a Chinese-style whole steamed red snapper with garlic, ginger, soy sauce and sesame seed oil and white wine. Serve that with some basmati rice and rapini — done! Besides Lazy Tulip Café, what’s your favourite foodie destination? MJ: Whenever I’m in Toronto, I eat at Bonjour Brioche (bonjourbrioche.com) for breakfast. I highly recommend it! Sure, my friends own it and I worked there for years, but it honestly makes the best croissants in the world. They also have amazing bread — I love it! Toronto’s Fresh (freshrestaurants.ca) has also been an inspiration. If you were to describe the Lazy Tulip, I would say it’s a combination of these two restaurants. Any interesting plans for the future? MH: We pretty much just take each season as it comes. That way, we can grow in an organic and natural way. We are continually evolving and tapping into what this community is asking of us. Eventually, we’d like to expand but we don’t want to rush. When the time is right the opportunity will present itself. The construction in this area has been brutal, but now that’s over we look forward to a very busy future. Each month, we get busier and busier so that’s a great sign for us. We believe this area is on the brink of change and we’re proud to be at the forefront.

This tasty soup recipe is courtesy of Lazy Tulip Cafe owners Michelle Huggins and Matthew Jones. The amount of curry powder is based upon the cook’s personal taste and the type of curry powder used. “I prefer the East Indian curry powder that I get from the spice stores in Toronto’s Kensington Market,” says Huggins. “Also, the amount of water or stock will vary depending upon the size of the squash. When reheating the soup, more water will likely need to be added as the soup will thicken once it’s cooled.”

$ 4 cloves garlic 1 whole (2 to 2.5 lb) butternut squash 1 Tbsp vegetable oil (or olive oil) 1 cup chopped onion 1/2 cup chopped celery 3/4 cup peeled & sliced carrots 2 Tbsp East Indian curry powder (hot) 4-5 cups water (or vegetable stock) 1 (14-ounce) can unsweetened coconut milk 3 Tbsp cream of coconut Salt & Pepper, to taste

PREPARATION: 1. Preheat oven to 375F. 2. Slice butternut squash in half lengthwise. Remove seeds, season with salt and pepper. Put on baking sheet skin-side down and place two whole garlic cloves in each half. Roast in the oven until fully cooked for about 1 hour (the longer the better). Once cooled, scoop out squash from skin and set aside. 3. In a large pot over medium heat, heat oil and sauté onion, celery and carrots for about 2 minutes. Add in the curry powder and continue to sauté for another 2 minutes. Add water or vegetable stock and bring to a boil. Reduce to simmer, and continue to simmer until all the vegetables are tender.

4. Add squash, coconut milk, and cream of coconut to broth. Bring to a boil and allow to simmer for about 10 minutes. 5. Use an immersion blender to purée soup in the pot you made it in. If you don’t have an immersion blender, you can use a regular blender or food processor.

The Gas Fireplace Outlet listens to the customer’s needs and wants, then works with them to provide the best fireplace possible.

“Don has been a gas fitter/ business owner since 1992 and we started this company together about 10 years ago, specializing in pool heaters,” Leshuk said. “We found the Savannah line about seven years ago but we were wholesaling it at the time. Three years ago, to balance out the seasonality of the pool heater business, we started working with the line direct to homeowner which has been a lot of fun.” Leshuk said “no one has been working to promote and market the Savannah line over the past seven years more than we have. We know this line, its history and have a vision for what we feel it can do in the marketplace.” They are such fans, that they have four of the models in their home and one outdoor model.

“The Savannah line all about the flame. They all have a beautiful flame, which is what matters to most, no matter the price. And they always supply battery backup in case your power goes out,. “People don’t usually think about that until a big storm hits, then they’re thankful,” Leshuk said. Owned and operated by Mark and Monica Aarden, the local sweet shop is filled to the brim with gourmet chocolates. “It’s a true European chocolate wonderland with the heavenly aroma of the finest Belgian Callebaut chocolate,” says Monica Aarden with a smile. Trained as a Master Chocolatier, teacher and pastry chef in the Netherlands, Mark has worked in the chocolate industry for the past 30 years. “He’s been in the chocolate business since he was 17,” Monica Aarden boasts proudly. “Many of the traditional recipes we use date back to the 1800s, from the European company where Mark worked as the manager and main chocolate manufacturer.” As for the couple’s chocolate making philosophy? “We make everything on-site from scratch using the best quality ingredients.

Quality comes first,” says the chocolatier. Catering to the sweet desires of every customer, Aarden Chocolates serves up various tempting treats including Belgian bonbons, signature truffles, chocolate truffles and various solid chocolates, dipped creations and barks — to name a few. “We love what we do and we both nibble away all day long,” she chuckles. Belgian bonbons are one of the chocolatier’s specialties. “They are filled with a basic ganache (ganache is a velvety smooth blend of chocolate and cream) and a variety of delicious flavours. For all our creams, caramels and ice cream, we use our own local Miller’s Dairy from Creemore.” Speaking of caramel, the shop’s top seller is chewy caramel dipped in chocolate. Along with gourmet chocolate, the local chocolatier specializes in creating gift baskets, party trays, along with wedding and speciality cakes. The local shop offers gluten-free, peanut-free, and sugar-free chocolates. During the holiday season, Aarden’s Chocolates offers a variety of festive themed treats.

Designed and constructed by A.N.T. Construction, the 2,502-square-foot home has four bedrooms, four bathrooms and elegantly occupies a 71 by 260 foot lot. The residence is the first build in what will be a quiet enclave of homes with private wooded backyards. “The backyard of this home has a large, interlocking stone patio accessed through a walkout from the kitchen’s dining area,” says Rachel Redmond of A.N.T. Construction. “In one corner, the lot is landscaped with mature fir trees. You could easily put a pool in this backyard.” The front door, flanked by matching leaded glass side windows, opens to a bright front entryway with a marble floor, double closet and a practical yet fashionable bench. The entry glows with light from a contemporary square brushed metal chandelier housing a sculptural block of textured glass. Through the front hall’s pillared inner doorway, views of the

open concept kitchen, living room and casual dining area open up, while the backyard and leafy woodlands are seen through the far multi-windowed wall. Designed for chefs and those who want to be, the kitchen is equipped with top-of-the-line stainless steel appliances, large granite-topped island with seating and convenient pantry. Adjoining the kitchen is a storage and mud room with an exterior door opening beside the garage. An interior door into the garage is also in this room. Design consultant Yvonne Nielen of Barrie created an interior design plan for the home to make it both elegant for entertaining and comfortable for family life. A formal dining room, located close to the kitchen at the front of the house, features an innovative square glass and brass light fixture chosen by designer Nielen. “Everyone who comes into the house mentions the lights,” says Redmond. “I did too when I first saw them. Yvonne sourced all of the furniture at The Brick.” Large windows in the lower level give the space a main floor feel. Two roomy bedrooms, one currently being used as an office, are connected by a Jack and Jill bathroom with two sinks and tub. A family room with a stone gas fireplace fitted with a flat screen TV makes a cozy place for family members to watch shows or to entertain their friends. The lower level also has a full bar with wine cooler, fridge and counter seating. Though young families are expected to be the main group interested in the homes of Innisfil Estates, the initial open house showed that other people are considering the enclave for their future home as well. “On the open house weekend, which was Sept. 13-14, it was really busy with lots of people,” recalls Redmond. “We were expecting young families but found that this bungalow attracted retired people who wanted to live on one level. It also appealed to people who don’t want to live in the city, but want to live close enough to be able to easily commute.

The wire sculpture artist uses wire with recycled or recuperated materials to create stunning pieces of artwork. “I have made windows from empty gum packages, globes from bread bag tabs, wall hangings from the aluminum can pieces,” she said. “I aim to help people see further possibilities for what they consider to be trash.” Each of her sculptures starts with a profile of the subject. She recreates the shape with heavy wire then builds it out in 3D. “Then I switch to a finer wire to add a skin, layer by layer, until I get the density I’m looking for. Things like legs, arms, wings, ears get added at this point as well. If the design is to be freestanding, I also have some engineering to do.”

Brunetta, who was born and raised in Barrie, first became interested in art in high school. “In my senior year, I did my co-op placement with local artist Marlene Hilton Moore. In exchange for cleaning countless brushes, stretching giant canvases and prepping them for painting with smelly rabbit skin glue, I received art lessons and learned how to do custom picture framing. My phys ed teacher still remembers that I blew off a golf game, choosing a field trip to the Art Gallery of Ontario instead.” Brunetta used her framing skills to work her way through university where she earned a B.A. Hon. in Translation (French-English). While she didn’t study art in university, Brunetta continued to hone her craft. “I attended the Haliburton School of the Arts every summer for a week, taking courses that ranged from willow furniture to hat making to sculpture.” She also took group and semi-private lessons with potters, goldsmiths, basket weavers and felt-makers. “I’m a lifelong learner, always picking up new skills to add to my repertoire.” It was at the Haliburton School of the Arts that Brunetta made her first wire sculpture. The rest is history. “I’ve always been drawn to working in three dimensions and have sculpted in wood, clay, iron and assemblage in the past,” she said. “One year at the Haliburton School of the Arts I chose a wire sculpture class and was completely enchanted by the medium. It was 3D drawing!

And to have such a beautiful environment in which to live and work is invaluable to me. I have wildlife in my backyard, proving to be an excellent source for sculptural reference.” Brunetta’s work can be inspired by anything from shadows in the snow to the construction of plastic packaging. “The light shining through a stack of empty gum packages and reflecting off the foil was the start of a stained glass window made from over 200 gum packages. The challenge is to quit thinking of ideas. I scatter sketchbooks around my house and studio to download ideas from my brain so they don’t keep me awake all night.” Brunetta is a fan of many other sculpture artist and artisans including her wire sculpture instructor Charles O’Neil from Haliburton. “Cal Lane is a sculptor who transforms oil tanks and shovels and cars into lace and her work makes me long for a plasma cutter. Col Mitchell is a contemporary paper artist and her work makes me smile widely every time I view it.” In addition to her wire sculpture art pieces, she has an Eco Art & Craft line of jewelry, decorative items and accessories she creates primarily from up-cycled aluminum cans. “I also make my own packaging from upcycled cardboard packaging and junk mail.

My life has been filled with amazing experiences and I’ve had the chance to travel to some of the world’s most exotic and remote locations. Last year I had the once-in-a-lifetime opportunity to visit the Antarctic. It was a life-changing experience. When the opportunity arose this spring to visit the Arctic, I just couldn’t turn it down. I had seen penguins, now it was time to see polar bears.

Travel affords one the opportunity to experience different cultures and climates in a unique way that would not be possible otherwise. I have been travelling my entire life, but it has only been over the past 10 years that I have really begun to appreciate the art of capturing what I experience on film. One photograph can tell a story that would be impossible through any other medium. I could write an entire novel and still never elicit the emotional response that one photo can have. My family can attest to the fact that my camera has become not only one of my most prized possessions, but also my obsession. I am not obsessed with getting the ‘right’ picture, but instead cannot wait to capture as much as I can through one single image. The Arctic is truly a photographer’s paradise. With its unique, vast and often stark landscape, it takes a well-trained eye to truly appreciate and capture the beauty of ice. I wouldn’t call myself a master, but I was certainly going to give it a try! My Arctic adventure, much like my Antarctic one, presented a number of clothing challenges. Choosing the right clothing can be the difference between life and death in the Arctic. Thankfully I had the gear from Canada Goose and the tutelage of the company that made the whole trip possible, Adventure Canada. for comfort, boasting a bar, library/card room, gymnasium and gift shop. After a few days of travel, we arrived in the Canadian territory of Nunavut. Nunavut became Canada’s newest territory April 1999 and is located in the Eastern and Central Canadian Arctic. At approximately 200,000 hectares, Nunavut is the largest native land claim settlement in history. When most people think of the Arctic, they think of ice and wildlife. Visiting the villages was like stepping into a whole different world. Inuit culture in the Canadian Arctic has left little to no physical evidence; there are no pyramids, palaces or temples, yet the culture has been around for four millennia. The greatest achievement of the northern people is that, for many generations, they survived Arctic winters and thrived in a country regarded by many as uninhabitable. The Northwest Territories and Nunavut cover an enormous area, nearly a third of Canada,

yet the entire population would barely even fill a standard football field. Scattered across the coastal areas of the region are small Inuit Communities. Few have populations numbering more than 1,500, and, despite the introduction of snowmobiles, satellite communication and video, they remain faithful to their traditional hunting culture. On each of my trips, I try to buy at least one thing from the local towns and people. This time I decided to buy a pair of handmade seal slippers and mittens. I had the unique opportunity to watch my slippers and mitts being made and was in awe at how careful the local people are to ensure that the entire seal is utilized. Leaving the village behind, we once again ventured into the icy wilderness. I started each day aboard the Sea Adventurer by waking up every day at 3 a.m., in full sunlight, to have a cup of coffee with the first officer on the bridge. It is amazing the things you can see and the stories you can hear when the

In addition to my early morning conversations, I also took full advantage of the ships lecture series. Never one to sit in a classroom, I was blown away by how much I appreciated and learned from the lectures available onboard. Lectures included everything from wildlife biology and drawing to photography and ornithology. Spending two weeks on board with some of the best photographers in the world is a truly humbling experience. I am always amazed at how much can be learnt from the people you are travelling with. For example, I met a fantastic professional wildlife photographer named Mike Beedell, who has a vast and intimate understanding of the landscape and how to photograph it. Also aboard was John Houston who lived in the Arctic as a child and is an award-winning writer, director and producer of Canadian and international documentary films. In addition to photographers, bird lovers also flock to the Arctic and for good reason. Visitors are often struck by the abundance of bird species found in this glacial environment.

Although most spend their winters in the warmer southern climates, in the summer the vast ice landscape is home to more than 100 mostly migratory bird species, including the peregrine falcon, ringed plover, snowy owl and the fulmar. Although I am not an avid birder myself, I can admit there is something magical about the birds of the Arctic. As one can only imagine, my bucket list is quite extensive. With that said, one of the experiences near the top of my list is to photograph a polar bear in its natural environment. Having grown up in Bermuda, the idea of such a large mammal living in such a frigid climate, and on a sea of ice nonetheless, has always been inconceivable. I couldn’t wait. I finally managed to fulfill my dream while out on the bridge with the first officer, early one morning. I had my binoculars focused and waiting. All of a sudden there he was; one of the most amazing mammals to walk the earth. What a fantastic surprise, and a wonderful opportunity to put my photographic skills to the test. Polar bears are the largest living land-based carnivore in the world. The largest males can weigh up to 800 kg and can reach 13.5 feet in length, about the same size as a compact car. They can be seen alone, but often form groups of two to 20 and sometimes herds of a few hundred are seen in areas where prey is aggregated. These magnificent animals are built for the cold. Their coarse outer fur is made of translucent hairs that allow ultraviolet radiation in. The fur also serves as a wet suit, trapping in heat when the bears swim and their small rounded ears minimize heat loss. What an incredible animal and an amazing experience! Throughout the voyage, I couldn’t help but realize how lucky I am as a Canadian to live in such a vast and diverse country. Many people don’t ever get to experience that this beautiful country has to offer. It is a destination that most people don’t even think about, but it’s right on our doorstep and is something that should be on everyone’s bucket list.
