TIM RONAN IS ROCKING OUT GREAT MUSIC AND CUSTOM-MADE GUITARS AT BACKLINE GUITARS By Laurie Wallace Lynch

A

s a young boy, Tim Ronan sat on the stoop in his grandfather’s garage to watch with wide-eyed excitement as his Uncle Kevin’s band The Back Line practiced. It was those memorable moments that inspired Tim Ronan to learn to play guitar and eventually, open his custom electric guitar making business called, you guessed it, BackLine Guitars. “My Uncle and his band were a big deal—they would play the classics and they were the coolest guys around,” says Tim Ronan.

“I was about 12 when I started to play and the guys in the band became my mentors. I named my company after my uncle’s band and because my shop is located on a back line road in the hamlet of Colgan.” By day (or night), Ronan is a Toronto based pilot with a regional airline, following in the footsteps of his father who is also a pilot. It was during some time off work that Ronan picked up some tools and wood and started making his first guitar.

I AM MOSTLY SELFTAUGHT, BUT MY DAD WAS A GREAT HELP AND I LEARNED FROM HIS ATTENTION TO DETAIL.

“I went to the university of YouTube,” laughs Ronan. “I am mostly self-taught, but my dad was a great help and I learned from his attention to detail. My first guitar was made of cherry and an African wood called Wenge and turned out well. My little hobby turned into a monster! I use maple, walnut cherry and ash sourced from a local Mennonite farm and use rosewood and ebony mainly for fretboards, comes from Exotic Woods.” Ronan has designed dozens of made-to-order guitars for clients all over North America and says a selection of his guitars are available at The Twelfth Fret on Danforth Avenue in Toronto. Made-to-order guitars take about four to six weeks to create and usually begin with a client creating a list of what their ideal guitar should look and sound like. Each of my guitars is unique and is created as a work of art,” says Ronan. “I build guitars organically to have a certain sound. My guitars must also stand the test of time, so no guitar leaves my shop unless I would be satisfied to use 14

it on the road myself.” Almost 25 years after he first watched his uncle’s band play, Ronan is an accomplished guitarist and singer and tours with his band Tim Ronan and Three Night Stand. He is also working on his first album using his favourite guitar The Barncat. “The album is in the rock genre with pop rock overtones,” he says. “I haven’t thought of a name yet, but it will come to me organically like the names of my guitars. I saw Barn Cat on a license plate one day, and we have barn cats, so it seemed the perfect name for the semi-hollow bodied guitar I made. I also like The Ronan which I designed myself, the last one was sold to a heavy metal musician in Alabama. It looks like a stealth bomber with sharp angles. It looks mean and aggressive --like the Darth Vader of guitars but retains a sense of pure class. I am proud of every instrument that leaves the BackLine workshop which is just steps away from where my Uncle’s band The Back Line band used to play.” For more information visit backlineguitars.com.

MATTHEWS HOUSE HOSPICE WHAT YOU DON’T KNOW ABOUT HOSPICE MAY SURPRISE YOU

Matthews House Hospice is full of surprises! “People are so surprised when they walk in and are greeted with a big, friendly hello, a wag and a sniff from our new facility dog and then hear laughter and music coming from the Great Room, or see families enjoying a meal together,” says Andrea Roylance, Director, Gifts and Gratitude, Matthews House Hospice. “This is a typical day. This is not the doom and gloom place that people may expect or perceive it to be—that’s a myth. Matthews House is a happy, vibrant, safe and relaxing place where we offer support to those who need care as well as to their friends and family.” Matthews House Hospice serves Simcoe County with a 10-bed residential hospice facility and community programs. “People are also surprised that we offer so many programs such as grief and bereavement counselling, mental health counselling and support, educational seminars, resident round-the-clock services, as well as wellness treatments such as massage, reiki, aromatherapy and more. Hospice care is offered to help improve

the quality of life for individuals living with a life-limiting illness or requiring palliative care near the end of their life, either in-home or at Matthews House.” Hospice care can be broken down into four categories: residential care, in-home palliative service at a person’s home or retirement home, holistic and healthy wellness programs and mental health and bereavement support. Now here’s the biggest surprise of all—these services are offered free of charge. As stated on the website: “Here you will find peace, not worry; comfort, not pain; strength, not fear and joy, not sadness.” Andrea says people are often reluctant to mention the “D” word (death) but it’s a conversation that needs to happen. “We focus on the educational aspect surrounding end of life by holding Monthly Learning Seminars to increase awareness of issues surrounding mental health, lifethreatening illnesses, caregiver issues, navigating the health care system, grief and bereavement issues and more. The sessions are open to the all people of South Simcoe to better understand the

role of hospice.” Matthews House Hospice costs three million dollars a year to operate, mostly community funded and a small portion is partially funded by government. “We have about 20 staff including social workers, grief counsellors, psychologists and administration staff and are a volunteer-driven community with about 180 volunteers,” adds Andrea. “We depend on donations to run our facility and to be able to provide our many services at no cost to those who need them. To raise funds, we hold many innovative events and donation programs throughout the year including virtual events like Scotch Tasting, Hike for Hospice, Polo for Hospice, Butterfly Release, Golf Tournament, Butterfly Ball Gala and a few more. My message is to please, do yourself a favour and find out about hospice before you need to know about it. There’s no cost for programs or services as we operate on a pay-it-forward basis. Many of our residents tell us they wish they had come here sooner.”

taking a cooking class, enjoying an exercise class, reading, or taking a stroll around the grounds on the beautiful pathways. “Residents can stay as busy as they want to be,” says Deirdre. “Roberta McLoughlin, our Activity Aide for the Lodge goes room-to-room to inform Residents of what is happening. She helps keep the residents engaged and is on-site five days a week. We also offer day trips to go shopping, to the movies and restaurants and to the casino.” Retirement Lodge residents enjoy three square meals a day in the dining room with two choices at each meal, plus three snacks a day. “We try to source local produce and other products in season,” explains Deirdre. “Dessert is offered at lunch and dinner and our snack cart is available three times a day. We also serve meals in their room if a Resident is not feeling well.” Allergies and dietary needs are also accommodated. “We have a Residents’ Council which gives residents a voice in meal selection, special themed events and holiday celebrations and more,” says Deirdre.

HEARING WELL IS BEING WELL By Danielle Wilson, H.I.S

Hearing loss is gradual. Our hearing starts to change in our 40’s, but it is so subtle, we often do not recognize the signs immediately. Our brain will tell us we hear the same today as we did yesterday, thus we will not acknowledge our gradual hearing loss over the years. Because the process of hearing loss is so gradual, we may tell ourselves it is only circumstance; that other people are not speaking clearly, or that there is too much noise around us. By the time we recognize the issue may be our hearing, and not the circumstances, 20 years may have passed. Thus, it is our lack of recognition of the presence of the issue in our 40’s that stopped us from addressing the problem when it started. Unfortunately, our hearing does not improve with time, or by leaving it alone to fix itself; hearing loss continues to gradually worsen. Knowing our hearing will naturally start to decline, and that it will continue to decline without intervention, is the reason we recommend having regular hearing tests. Hearing is one of our five major senses that help us understand the world around us. Sound can arouse our emotions: hearing a child laugh or the voice of the one you love. It can trigger our memories: music can magically transport us to another time. Sound also alerts us to the presence of danger, or to the presence of a loved

one on the other end of the phone. Hearing connects us, not only to the world, but to one another. Our ability to hear is a wonderful gift, and one we often take for granted. As humans, we have an instinctive need for social connection to others. Social connections help us develop higher self-esteem and empathy, as well as reduce anxiety, stress, and depression. In fact, social connectedness has a direct influence on improving our immune systems (CMHA, 2019). Hearing well is a vital element of your social connection and an important part of your healthy lifestyle because it helps you stay connected with the people around you. Yet, there is a stigma about having hearing loss that stems from a belief that this natural process makes you seem ‘old’. This is unfortunate because this belief can cause people to be reluctant to get their hearing tested, and there are benefits to having your hearing tested regularly. The first benefit is that having a hearing test can help you understand your hearing system’s ability today. They say, ‘knowledge is power’. Another benefit of having regular hearing tests is that we will identify whether you have any hearing loss and, if so, to what degree it may exist. During your hearing test, your clinician will talk with you about the impact your hearing ability is having on your lifestyle and relationships. THE HEALTH BENEFITS OF GRANDPARENT-GRANDCHILD RELATIONSHIPS Not long ago, extended families were the norm, with multiple generations residing on the same street if not in the same house.

Today the family unit is largely an amalgam of different situations. The rise of two-income families has pressured parents into finding childcare situations. Quite often grandparents once again step in to offer guidance and support for youngsters. This can be a good thing for both the grandparents and the grandchildren. Although a bevy of psychological research focuses on parent-child relationships, new evidence points to the benefits of the grandchildgrandparent relationship as well. Close relationships between these different demographics is often a sign of strong familial ties. A study from researchers at Boston College discovered that emotionally close ties between grandparents and adult grandchildren reduced depressive symptoms in both groups. Research at the University of Oxford among English chil-

dren between the ages 11 and 16 found that close grandparent-grandchild relationships were associated with benefits including fewer emotional and behavioral problems and fewer difficulties with peers. Adult and grandchildren alike benefit from relationships with their elders. Grandparents can provide a connection and exposure to different ideas while providing a link to family history and knowledge regarding traditions and customs. Nurturing grandparent-grandchild experiences may be easy for families where grandparents live in the same house or close by. For others, it may take some effort. own a private road in the exclusive multimillion dollar waterfront community of Tollendal, lies 9 Arbour Trail, a tranquil refuge within the city. Tucked into a grove of trees, mere steps from the beach on Kempenfelt Bay, the classic 25-year old Viceroy home boasted a prime location and secluded setting on a 200 x 200-foot parcel of land. The one shortcoming was a dated interior when homeowner Mike McCann bought the property in 2018. “The house was 24 years old,” he says. “And I doubt it was considered modern even 25 years ago. There was honey oak throughout.” McCann, who prefers a modern design style, decided to bring the look up to speed. “I wanted a community kitchen, a social kitchen, where friends and family could gather, cook and have a great conversation,” he says. “We renovated the kitchen, fireplace, put in stone, added accent walls, created a spa bathroom and renovated the downstairs bathroom for my mom.” McCann tasked Infinite Design and Interiors with the massive job and the result today is an airy, open concept floorplan that is an entertainer’s dream. The house has two kitchens, 5600 square feet of finished space, six refurbished bedrooms, four fully renovated bathrooms, Argentinian tiles with heated floors and new hardscaping and landscaping done by Drysdales, who planted a bee and butterfly sanctuary plus 50 new trees, including majestic hemlocks. McCann also updated the roofing with 50-years shingles and had Al St. Jean put in new eavestroughs. “He was in and out in one day. An excellent craftsman,” McCann says.

Inside, the kitchen is now outfitted in flat panel, high gloss all-white cabinetry with under mounted lighting. A quartz waterfall island that seats four has striking embedded wood accents. The kitchen is supplied with Bosch double wall ovens, a double fridge and soft close cabinetry. Off the kitchen, a private office, powder room, utility bonus room and laundry, supplied with Miele appliances, are situated. McCann bounced ideas off Samantha Thomas of Inhabit Designs, who suggested tiling choices and walnut paneling for the great room. “I was in a rush to get things done 34

quickly and Sam encouraged me to wait and get the right tile when what I wanted wasn’t in stock. I’m glad I did. I’m very grateful,” he says. “She sourced the tile in the bathroom and front room.” Floor to ceiling walnut panelling with a granite surround for the linear ten-foot gas Napoleon fireplace now anchors the great room. Hidden within the walnut paneling are multiple closets, including a spacious clothing and shoe closet with built-ins and pull-out bench and a roomy double-doored linen closet. The whole project won Infinite Design and Interiors a finalist spot in the 2019 Awards

for maintenance free,” he explains. “When you live so close to the lake, you need fiberglass because of the moisture. If you have a wood door it will bend.” McCann regularly takes advantage of that proximity to the lake. Even though he has a saltwater pool in the rear yard, he chooses to plunge in Lake Simcoe after a workout or tennis game. “It’s 32 seconds to the water’s edge,” he says. “It’s a habit I’ve gotten into. The house offers so much. When Covid hit in March I decided to party less and embrace solitude. It’s so peaceful and quiet here on a private road. You can sit in your front yard and not see a single soul for five hours.” One of the highlights of the renovation was the coffee and wine bar built into an alcove between kitchen and great room. It contains a beverage and separate wine fridge, interior lit cabinetry, and a Miele espresso maker that McCann says has now ruined him for coffee outside of the house. “I didn’t used to consider myself a connoisseur, but it pours a perfect cup of coffee. Grinds it fresh, makes a superior cappuccino or espresso and it doesn’t matter what coffee beans I buy. It’s rich, flavourful, nice and neat.” McCann vows that when he sells this house a Miele espresso maker is 36

the one thing he can’t do without at his next property. On the reverse side of the walnut paneling in the great room, the main floor bedroom is found. It contains a loft, walk-in interior lit closet, and view to the in-ground pool. A double vanity bathroom with Carrera tile and rain shower across the hall services this room. Walk up four steps, supported by glass railings, and you move into the next level of the home. To the left, a front room with thirteen foot ceilings is fronted by those timeless Viceroy-peaked panoramic windows

that take advantage of lake views. A rustic wood burning fireplace here makes the space a favourite haven for reading and crafts. Builtin cabinetry also allows for the possibility of transforming it into a business center. Move down the hall and we are in the master suite, with sixteen feet slider windows that lead out to a private deck and the hot tub. “When the pool is open, I sit in the hot tub and get relaxed, then jump in the pool, then get into the steam shower and jump in bed. I get the most soothing relaxing sleeps ever,” says McCann.

W

hile many of us may have heard the benefits of eating local honey, including it being a natural sugar that tastes darn good, perhaps it comes as no surprise that bee pollen may also have many benefits. Brian Scott, owner, and beekeeper of Innisfil Creek Honey maintains about 700 to 800 beehives and produces 30,000 to 40,000 pounds of honey a year along with 1,000 pounds of bee pollen. He and his family collect bee pollen from the hives, dehydrate it and then bottle the granules into 250-gram jars. “I am not a nutritionist, but studies have shown that bee pollen has many natural vitamins and minerals,” states Scott. “When bee pollen is digested in tiny amounts over the winter months, it may help build up someone’s immune system to produce antibodies which may reduce the reaction to seasonal allergies. Local honey also contains small amounts of bee pollen.” Collecting, dehydrating, and packaging bee pollen is a labour-intensive process. “Two things come from flowers which interest bees: nectar and pollen. Adult bees eat nectar and harvest it into honey. Pollen is the substance used to pollenate flowers. Bees collect pollen on 40

their back legs and when they move from flower to flower, they fertilize the flowers. They also bring the pollen into their hives and feed the larva. Bee pollen may be expensive to produce, but in terms of consumption, is someone takes just a quarter to half a teaspoon a day, a 250-gram jar can last you about a month.” Brian Scott got into the bee business quite by chance. “One year my wife decided she wanted a beehive, so for her birthday, I bought her three beehives. Before long she decided it was not for her and the beehives became my beehives! For a year or two it was a hobby that then expanded into a business selling hives and supplies. I built a classroom and now teach bee keeping courses. It has been very fulfilling for me. I enjoy the peace and tranquility of watching and learning from them.” People come from all over Ontario and even Quebec to learn about beekeeping. “I’ve noticed a huge increase in beekeeping as a hobby,” says Scott. “In five hours, I teach beginners everything they need to know to start beekeeping and the information needed to decide whether or not they want to be a beekeeper!”

Winter weather, climate change, modern farming techniques and the use of chemicals all contribute to the decline in bee populations, according to Scott. “Bees can bring chemicals back with them to the hives which hinders their ability to grow or even survive. Winter can also be devastating for bees. On average 30 to 50% of bees die over the winter,” says Scott. The bee business is a family affair at Innisfil Creek Honey. “My daughter Kiara has been working in the business for three years and knows almost as much about beekeeping and supplies as I do, and my youngest daughter Payton bottles the honey and prepares the orders. We sell our honey on our farm and have a booth at the 400 Flea Market every Saturday and Sunday year-round. achlan McGurk, who owns Belfry Chocolates with his wife Sharon, knows how to make a sweet first impression.“So great to meet you,” says the Alliston chocolatier, as he hands this food reporter his edible Belgium milk chocolate business card. A delicious gesture, and one that immediately gives me a soft spot for the local chocolate

factory located in Bern’s Flowers & Gifts in downtown Alliston. After a brief tour of the shop, which is filled with fresh flowers, gifts and mouthwatering chocolate creations, the local proprietor sat down to share the story of Belfry Chocolates, which was established in 2018. Here’s how the delectable tale unfolds.

Belfry Chocolates is located inside Bern’s Flowers & Gifts, a floral business you also own with your wife, Sharon. Wow! The aroma of fresh flowers and chocolate makes this shop pretty inviting! Lachlan McGurk: Chocolate and flowers are a such a perfect combination. We just need to start selling wine [laughs]. Originally established in 1975, Bern’s Flowers is a downtown Alliston landmark that you and Sharon have owned for the past seven years. What led you to add an on-site chocolate factory? LM: We were the largest customers for Aarden’s Chocolates in Stayner, and when the opportunity came along to buy that business in 2018, we jumped at it. After the purchase, we set about learning the tricks of the chocolate trade (via Aarden’s Chocolates, along with some additional chocolatier training in Montreal with Callebaut), moved all of the equipment to our Alliston shop, built a purpose made room and started on-site production. We haven’t looked back since. What’s the story behind the name, Belfry Chocolates? LM: Since we use Callebaut chocolate from Belgium, we wanted to focus on a Belgian theme. I researched famous Belgium landmarks and the Belfry of Bruges caught my eye. It’s a big cathedral and our logo is roughly designed around the bell tower.

What’s on offer? LM: Truffles, bars, and liquor filled chocolates. We also do themed chocolate — anything from musical instruments or ballet shoes to two and a half kilogram molded animals like Easter bunnies and cows. We also cater for events, such as weddings and corporate functions, and provide some restaurants with after dinner chocolate treats. The sky is the limit, really. What’s your chocolate making philosophy? LM: Our mission is to make every chocolate a ‘wow’ experience. I should also mention that all of our chocolate comes from traceable and sustainable plantations. What are the best sellers? LM: Our signature collection, which are boxes of mixed flavoured truffles in a variety of size options, and our line of Belfry Bars are super popular.

What’s the secret to making great chocolate? LM: The secret is two-fold: high quality ingredients and accurate tempering. Tempering is the proper heating and cooling of chocolate to stabilize it. Proper tempering gives chocolate a smooth and glossy finish, gives it that ‘snap,’ and keeps it from easily melting in your hands. Many of your chocolates are alcohol infused. What led you to focus on this niche? LM: Being Scottish, alcohol weighs heavily on my mind [laughs]. Our alcohol-themed chocolates have the perfect amount of alcohol within our secret recipes to deliver the perfect 46

experience to the taste buds. The texture, based on customer focus groups, took months to perfect. Our goal was to master a recipe that moved away from the traditional expectation of runny, over boozy, fake tasting chocolates, to an authentic texture which reflected a pleasurable taste of true alcohol with high quality chocolate, resulting in perfection to the palate. In fact, a sommelier in Niagaraon-the-Lake was able to tell me the exact icewine that filled our chocolate sample!

Scottish Regalia in Barrie, and the Scottish Loft in Niagara-on-the-Lake. On the Scottish front, I understand you sponsor various Scottish events, including Scotch nosing nights. LM: I established a whisky club in Alliston five years ago called the Drouthy Dozen. Drouthy is old Scots for “thirsty” by the way. We support many Scottish whisky tasting events, in particular the iconic Stevenson’s Farms Scotch nosing nights.

Let’s hear about your partnerships with local wine and spirit producers. LM: Our first partnership was with Beattie’s Distillers of Alliston. We infused Beattie’s flavoured spirits into our secret chocolate recipes and came up with a real winner! Our success with Beattie’s gave us a catalyst to expand our range into the winery sector in Niagara-on-the-Lake. Our confidence allowed us to say: ‘try this because we can do this with your wine.’ Among others, we work with Lakeview Winery, Jackson-Triggs, Tawse Winery and Southbrook Winery. Being Scottish, I produced a range of Scotch malt whisky chocolates, which are popular with our retail partners such as Burnett’s & Struth

Along with Beattie’s Distillers, do you have partnerships with other local businesses? LM: We love the idea of working with local businesses. So, we do a line of truffles using Sheldon Creek Dairy’s amazing 45 per cent cream. We call the line Sheldon 45, and their cream adds a special velvet finish to our truffles. What about your postcard chocolate bars? LM: We developed our postcard bars, which feature images of Niagara-on-the-Lake, Toronto’s skyline, the Distillery District, St. Lawrence Market, the Muskoka’s and more, to cater to the tourism market. We pay a renowned Canadian artist, Robert Johnson, for the use of his artwork on our postcard bars.

Is there an Alliston-themed chocolate? LM: In the pipeline, we’re working on an Alliston-themed chocolate bar, and we’re going to ask the Alliston public to help us develop the theme. Prior to getting into the chocolate business, you were an IT manager and then started your own training company, which specializes in teaching project management. It seems that your business background has been very helpful in terms of growing the business. Is that a correct assumption? LM: Yes, I can’t stop this [he points to his head and laughs] from coming up with new ideas. The chocolate business has really allowed me to think outside the box. While we do have chocolates for sale at the shop for walk-in customers, one of our growth areas is ‘business to business’ customized treats. For example, we produce custom design ‘customer appreciation’ chocolate bars for many local businesses, such as New Tecumseth Optometry Clinic, The Hair Gallery, Capstone Renovations and Physiomed to name a few.

Why do you think society has a chocolate obsession? LM: Well, dark chocolate is said to have great health benefits. I was reading this story about a lady in Europe who is a centurion, and when asked what her secret to living a long, healthy life was, she replied: ‘I eat chocolate everyday’ [smiles]. There is just something about chocolate.

What’s the best part about working in the chocolate business? LM: The creative aspect is super fun! And the smell of fresh chocolate is pretty spectacular. Do you offer vegan, gluten-free or sugarfree chocolate? LM: We do vegan dark chocolate chunks, and soon we will be offering sugar-free Callabeut chocolate. We also offer gluten-friendly dark chocolate. Other than your shop, where are Belfry Chocolates available? LM: Drysdales Tree Farm, Bradford Home Hardware, various wineries and shops in Niagara-on-the-Lake, Drysdale’s, Burnett’s & Struth Scottish Regalia in Barrie and more. What about the future? LM: Continuing to grow and evolve in creative and unique ways one ‘bite’ at a time. We’re also looking to broaden our partner base further, and into different sectors.

Tuscan superiority What rebellion tastes like

T

he Tuscan wine region has been known for its wine production for hundreds of years, especially for its red wines like Chianti and Brunello di Montalcino. Rolling hillsides and winding country roads make the region picturesque. But its specific location within Italy – with its western side facing the Tyrrhenian and Ligurian seas and its eastern side sitting high in the Apennine Mountains – make it legendary for producing wines of great quality and distinction. The climate has rich diversity, with typical Mediterranean warmth along the coastal regions and cooler inland temperatures that match the rise in elevation. Several red wine-producing regions are located within Tuscany, including Montepulciano and Montalcino in the south, Chianti in the north-central part, and the Tuscan Coast that includes Bolgheri and Maremma. Of these regions, it is Chianti and Bolgheri that produce the most extensive array of ultra-premium, modern day blended wines, known around the world as

super Tuscans. The concept of super Tuscan wines is an interesting story whose origins are linked to the famous Chianti Classico and the limits imposed upon it due to the strict regulations on usable grapes. The term has become synonymous with adventurous winemaking and a rebellious pact. Understanding how and when these wines shifted from being referred to as simple “table” wines to outstanding “innovative” wines is key to appreciating their true identity. Italians introduced the DOC wine appellation system, modeled after the French AOC, during the 1960s. Each region forged rules for viticulture and production. Chianti’s DOC/DOCG rules were often criticized as restrictive. Others were considered misguided (a requirement that inferior local white grapes comprise a portion of red blends was frowned upon by many producers who were ambitiously looking to up the ante on the quality spectrum). By the end of the 1960s, a handful of renegades balked at the regulations. They created new brands to blend cabernet sauvignon or merlot with sangiovese, making their own “Bordeaux-style” wines. They also played with aging periods and vessels like cement and small oak barriques. Yet, such diversions weren’t tolerated under the DOC or DOCG label designations. This age of innovation and rebelliousness would eventually aid in the marketing of the super Tuscan story, but initially came with consequences. Producers like Marchesi Antinori had to bottle their Bordeaux-style red blends and varietal wines under the generic category of Vino da Tavola, Italy’s lowest-quality tier (table wine). But as the wines grew in prominence, authorities would begin to acknowledge the labeling system’s inadequacies. In 1992, the Italian government introduced a new wine classification: Toscana IGT. Toscana IGT, however, held little romance for critics or consum-

The Luce brand was formed thanks to the inspired collaboration of the Marchesi de’ Frescobaldi and Robert Mondavi families and remains a contemporary styled wine perfectly representing the unique territory where it is produced. This‘Lucente’is Luce’s second wine but it’s not to be considered second-rate. It’s highly attracted label aside, this is a wine that’s gifted with great complexity. LuceWinery

Brands like Sassicaia, Tignanello and Ornellaia became darlings of wine critics. In fact, in 1978, Decanter magazine organized a blind tasting, and it slipped Sassicaia in among top Bordeaux. The obscure wine beat out much of the competition, only to be revealed as Italian. Regarded as one of Italy’s flagship wines, Sassicaia was first released commercially in 1968 – the first ever ‘super Tuscan’

– and steadily gained a reputation before exploding in popularity when Robert Parker scored the 1985 vintage a perfect 100 points. Bolgheri Sassicaia would eventually earn its very own independent DOC in 2013. Wine lovers during the ‘80s and ‘90s pushed prices into the realm of upper echelon collector status. Owning a top tier super Tuscan was considered worthy of showing off, a crown jewel of any wine cellar. Even Robert Mondavi wanted a piece of the pie and began collaborating with the Frescobaldi family in the early 1990s. The result was the creation of Luce, now celebrating 25 years. Today’s super Tuscans seem to follow two distinct paths – the original rebel version, which uses sangiovese as the base and grapes that are not indigenous to Tuscany; and wines composed of varieties from Bordeaux (cabernet sauvignon, merlot, cabernet franc). Both are equally enjoyable and can still be the subject of much debate, but the overall consensus remains the same: rebellion has never tasted so good.

Ruffino Modus ($34.95)

Made up of almost equal parts sangiovese, merlot and cabernet sauvignon, Modus continues to be one of the best value bets available – especially for a wine that’s also making its 20th vintage with this 2017 edition. It’s full-bodied and complex with finesse and style, packed with intensely rich and matured fruits and velvety soft on the palate. It’s definitely ageworthy but it can be enjoyed now – especially after decanting. Quite harmonious, I barely noticed the 14.5 per cent alc./vol. 2018

Guado Al Tasso Il Bruciato ($24.95)

The Guado al Tasso estate is located in the small but prestigious Bolgheri DOC appellation on the coast of Upper Maremma, about 100 kilometres southwest of Florence. This appellation has a relatively recent history as it was established in 1994 but has gained worldwide recognition as a new reference point for producing stellar modern blends. This is comprised of cabernet sauvignon, merlot and syrah and it offers very good structure and balance. Another terrific value option. GoodLife | South Simcoe Winter 2020

Maple Walnut Biscotti Baking Time: 60 minutes for 30 cookies Preparation Time: 20 minutes Serves: 30

baking powder, baking soda and salt; stir into butter mixture in two additions to form slightly sticky dough. Stir in walnuts.

INGREDIENTS

Divide dough in half. On lightly floured surface, roll each into a 12-inch (30 cm) long log. Place 3-inches (8 cm) apart on parchment paper-lined baking sheet. Press to flatten to 2 1/2-inches (6 cm) wide. Bake in 325°F (160°C) oven for about 30 minutes or until light golden and firm to the touch. Let cool on pan on wire rack for 15 minutes.

INSTRUCTIONS In large bowl, using electric mixer, beat butter with brown sugar until fluffy. Beat in maple syrup and vanilla. Beat in eggs, one at a time. In separate large bowl, whisk together flour, 50

Transfer logs to cutting board; cut crosswise on slight diagonal into 1/2-inch (1 cm) thick slices. Stand slices up, 1-inch (2.5 cm) apart, on baking sheet. Bake in 300°F (150°C) oven for about 30 minutes or until almost dry. Transfer to wire rack; let cool completely. Maple Glaze: In small bowl, whisk icing sugar with maple syrup. With cooled biscotti sitting side by side, drizzle glaze over tops. Separate slightly and let stand until set, about 15 minutes.

Peppermint Dandies Hot Cocoa Serves 2

INGREDIENTS 1 4 Tbsp 2 cups 4 Tbsp ½ tsp

handful of Dandies peppermint marshmallows cocoa powder non-dairy milk sugar peppermint extract Crushed peppermint candies, optional garnish Melted chocolate, optional garnish

In a saucepan turned on medium heat, combine milk, cocoa powder, sugar and peppermint extract. Whisk until all clumps have dissolved. Bring to a boil, then remove from heat. Optionally, dip the rim of a mug in melted chocolate, then into the crushed peppermint candies. Fill with hot cocoa and top with Peppermint Dandies Marshmallows and enjoy!
