Often my husband Keith and I would prowl around junk stores to find treasures mostly to look at and enjoy but occasionally to love and cherish. When we were tossing around ideas for a name for our new venture, Keith was reading an article in the newspaper about a shop that seemed like the kind of shop we were aspiring to be. He suddenly said, ‘You can sell your stuff in the front and I’ll be Red Foxx in the back’. Grasping his heart, feigning a heart attack, ‘It’s the Big One’. Suddenly Red Fox(x) sounded perfect. A homage to Sanford and Son – for those who enjoyed that TV series in the 70s. We’re thinking about you, Red. IE Wood Fired Pizza is synonymous with good food, a restaurant now with two locations in Barrie and most recently opened in Collingwood. Pie was also featured on The Food Network’s popular show ‘You Gotta Eat Here” so you know you’re in for some good eats. As a certified chef, owner Randy Feltis knows food, and describes PIE as “real food done well.” Walk in the front door and you will find the wood-burning oven with a temperature of 900 degrees, cooking your made-to-order pizza in a mere 90 seconds! The open kitchen area is where the hand-spun pizzas take shape. Creating tasty crusts, chefs turn the dough, toss it, and cover them in sauce. They add toppings and then it’s into the wood fire. All bread and dough items are made onsite; from the namesake pizza pies and the sweet dessert affectionately referred to as “dough balls” aka, one-bite cinnamon and Dulce de Leche delights. PIE chefs roast their own mushrooms, grate their cheese, smoke their bacon, and cure their own pork belly, and they use local beef and pork for the legendary meatballs. Bread service includes fresh warm slices with a side plate of grated Parmesan, balsamic vinegar and olive oil for dipping. A wide variety of topping options includes delicacies. Since opening the original The North Restaurant in 2007, we have been flooded with catering requests for large groups. That inspired the move in 2012 to the much larger two-storey Victorian building with private party rooms for catering and special events. In addition, we took over the Victoria Village event centre and named it The West. I started in the kitchen as a young boy in Portugal. My grandmother had a catering company and by the time I was 12, I was working part-time in a professional kitchen. Combined with my culinary training at Humber College, I have been fortunate to do what I love and be acclaimed for my work.

WHAT ARE YOUR SIGNATURE DISHES? Our diners favour our rack of lamb, sea bass, calamari, sushi roll and our prosciutto. It is important to me to create a diverse and everchanging menu and diners enjoy the variety offered. I like to intrigue people by dabbling in new foods and being on the cutting edge, with a mind to always maintaining and enhancing the fine dining experience.

My passion for cooking has stayed constant through the years, and I love change, new techniques and challenging my culinary skills. I was honoured to receive the Readers’ Choice Award for favourite Chef for 2013 and 2014. I would like to extend my sincere gratitude to everyone who has supported me over the years.

WHAT’S THE ONE THING PEOPLE NEED TO TRY BEFORE LEAVING YOUR ESTABLISHMENT? People rave about our desserts. We like to treat our customers and when they leave we want them to feel that they have had a special experience. We have been known to delight groups with an element of surprise in our presentation. Great traditions are grandmother’s mouthwatering butter tarts, warm chocolate lava cake, and my personal favourite, banana cream pie. WHAT’S THE STRANGEST THING YOU’VE EVER EATEN? At the North we love to try new things such as our Wild Game Festival in the fall that introduces sensational dishes that accentuate the unique taste of kangaroo, wild boar, squab, and venison. I enjoy shaking things up. WHAT IS YOUR FAVOURITE INGREDIENT? That has to be our beef as we dry age our beef, which is an involved process that makes the beef tastier and more tender. We are the only local kitchen to dry age ribeye and striploin for 45 days and the results are worth the effort. Fresh ingredients and unique products from Chinatown or farmers’ markets are also inspiring with their abundance of unique textures, colours and aromas.

Many places wet-age their beef, where meat is aged after it is vacuumed sealed in packaging. Dry-aged meat is hung in a refrigerator for several weeks. When meat is dry-aged, two things happen. The first is a lot of the moisture evaporates concentrating the flavour. “It has a beefier more pronounced flavour,” Cortese explained. Secondly the meat takes on a different texture and is very tender. “Customers notice the difference,” he said. The shop also sells a better quality of meat, unlike other stores that may choose price over quality. “We have the higher grade beef,” he said. “There’s a massive quality difference.” Along with the butchered meats, Cordino’s has a cold deli with a wide variety of carefully selected meats, cheeses and other fine, readyto-eat foods and they have a hot deli which features sandwiches, salads and pastas. But right now my business is split three ways between portraiture, fine art and commercial photography. WHEN DID YOU START YOUR BUSINESS? I started photographing professionally in 1988. I also worked at a portrait/wedding studio for 6 years but have been on my own for almost 20 years now. PEOPLE ARE SURPRISED TO KNOW: That I have four dogs, three of them Jack Russell Terriers. Believe me, 3 Jacks make a “full house”. WHERE DID YOU RECEIVE TRAINING? I learned a lot when I worked at the other studio, but I also attended many workshops and seminars. I was awarded the Master of Photographic Arts from the Professional Photographers of Canada and currently am a Master Member in Fine Art of the Master Photographers of Canada, where I also sit on the Board of Directors. I never stop learning, but I’ve also taught photography and fine art printing. WHAT INSPIRED YOU TO EXPLORE YOUR FIELD? I’ve always had an interest in photography. My father had a part-time studio while working in the Army and I guess I picked up the passion from him. I have a photo, it’s on my website, of me at about 2 or 3 years old holding a camera - not a toy either! It’s been part of me all my life. It’s not just what I do, it’s who I am. All of our Pedicures are done in comfortable reclining chairs and include a foot scrub and a rejuvenating massage with our signature scents from Soapstones, made right in our own backyard, Beautiful Muskoka. Our Facials are a full-body experience and include a face, neck and shoulder massage along with a scalp massage and a hand and arm massage. A combination of the two is a must for every client! HOW/WHEN DID YOU START YOUR BUSINESS? We opened in October of 2010 after a 10-month renovation that was done by my dad, he worked hard to make it everything I had imagined. We did a small renovation this past September to accommodate a fourth Pedicure chair and now have three Certified Estheticians on staff. Moksha Yoga Barrie is their official studio. “Yoga strengthens all the deep muscles in your spine and your core,” explained Trapani. “Those are the muscles you need for stamina, better posture, and those are the muscles you can’t work out as easily by lifting big weights.” To achieve optimal conditions for their classes, Moksha Yoga uses insulation, air filtration, a purified humidification system and radiant heat panels to help mimic the feeling of natural sunshine.
