xceptional is the only fitting word to describe the sprawling Innisfil country estate of Dale and Brenda Clair. Of course, when the man who built it was also responsible for the construction of Great Wolf Lodge, Blue Mountain Village and Cobble Beach, one would expect nothing less. The residence, tucked behind an alarmed security gate, boasts 6,300 square feet of luxurious living space with four bedrooms, five bathrooms, gourmet kitchen and a lofted detached garage on 25 acres of prime southern Ontario farmland. residence and garage – a streamlined look that eliminates additional pillars. Good eye lines and sturdy support is important to Dale. Every stud has to line up with every floor joist from concrete to the roof by his exacting standards. Symmetry of the side windows in the great room is also essential and the structural angles of the trusses have to be placed just so, to ensure the view remains intact but the room is not baked by the sun through the lovely floor-toceiling DeCola windows. Building is simply in his blood, and he admits he has a tendency to move every four years because he is constantly exploding with new ideas about the structures he wants to erect. His partner, Brenda, shares this passion. Together they pore over photos of luxury residences that inspire them and start a binder of fresh ideas for each new home many years before it is built. They slowly collect clippings of furnishings, fixtures, appliances, textures and the structural elements they love. As the binder gathers heft, they feel the pull of starting anew, leaving behind them a trail of extraordinary residences for others to enjoy. At this property, the favourite room for the Clairs has been the outdoor dining 14 | GoodLife South Simcoe - Fall 2016

room where they dine al fresco from May to mid-October. Only when temperatures plummet do they finally venture indoors. The “Muskoka Room� as they have donned it, contains a wood-burning Heatilator fireplace, one-inch slate flooring and phantom electric screens that magically appear from nowhere, lowering at the touch of a button to keep bugs out (from Davis Solutions).

The gazebo-like structure is constructed from the same stone that faces the exterior of the residence, which the Clairs had deliberately laid by masons (the Farr Brothers) with wide mortar lines that mimic old farmhouses. The light grey stone alone ran upwards of $150,000, reports Dale, but its peaceful demeanour blends flawlessly with the accents of board and batten styled siding, making it worth every penny.


The interior kitchen in the home is a gourmet chef’s dream. A six-burner Viking range with pot filler is topped by a powerful Zephr range hood (TA Appliances). The 36inch French panel Thermador refrigerator sports automatically adjustable shelves and is embedded in Norcab cabinetry along with an Incognito Miele dishwasher and Sharp Insight Pro drawer microwave. The microwave drawer projects outward from the island at a button’s push. Magic corner pullouts in blind corners make every inch of cabinetry useful and plate racks on either side of the farmer’s sink add a designer’s touch. The 5-by-10-foot island (seating six) is topped with gorgeous black soapstone (N&G Soapstone) and the counters are Cashmere White granite (A1 Granite) with Wavy Super White glass subway tile backsplash behind. Franke Villeroy & Boch porcelain sinks are located in both the island and main prep counter with a black finish on faucets to offset the look (Bathworks). The builtin buffet and coffee bar on the far left is constructed in Wormy Maple (like the island) and provides a welcome break in the overall look of the light cabinetry. Directly across from the kitchen lies the open-concept dining and great room with a crisp yet cozy look. The walls between the timbers have been Venetian plastered by Linda Dawson, who did much of the consulting on the interiors. Floors are distressed antique red alder (Irvine Carpet & One Floor), which Dale highly recommends because not only is hardwood soft on the feet, the dents simply don’t show if a grandchild drops a spoon. The floor is already distressed and a new mark just becomes part of the character. A Restoration Hardware dining table that seats 10 sits in repose before the grand windows, ready for their monthly dinner parties. Behind it, two plush King Edward sofas flank an oversized upholstered ottoman and invite après dinner conversation.

Dale admits they spend most of their nights right here in the soft leather club chairs with a glass of wine or cup of coffee and a fire roaring in the Rumford fireplace. It’s the perfect spot to read a book or watch a hockey game on the laptop. Come time to retire, the fire screen is raised and the retractable glass on the fireplace lowered to make the firebox airtight and worry free, even with a full fire raging. The residence’s master suite sits to the west of the great room with a deluxe en suite including spa shower and freestanding soaker tub. The upper level is devoted entirely to guest suites, which are equally lush. A Jacuzzi tub for the ladies’ wing and a spa shower for the men’s wing. Furnishings and linens designed with a feminine or masculine motif accordingly. The Juliet balcony that divides the catwalk between the two wings is large enough for a seating area with two club chairs. During large parties, Dale says there is always at least one couple who drifts up there for quieter conversation.

The games room on the lower level of the residence is full of toys including foosball, shuffleboard and pool tables and a children’s playroom for the grandkids. Storage is secreted behind barn doors here next to an additional guest bedroom and there’s even a gift-wrapping room on this level. But the pleasures don’t stop there. The residence’s private projected screening room is accessed directly down the hall from the games room, despite the fact that the theatre was built under the home’s detached garage. Dale had a passageway to the cinema tunnelled underground below the breezeway so that any noise from the surround sound system would not disturb those in the residence proper. Movie posters line the beautifully trimmed passage en route and theatergoers enjoy the full effect, passing through a velvet rope to a concession stand where they can stock up on goodies and popcorn before sinking into deep lounges to enjoy an Apple TV-supported flick. The impressive components of the cinema’s equipment are hidden behind a panelled door in the wall of the theatre in a separate enclosure to maintain a clean look and eliminate any noise from the machinery. Were this not enough fun, there’s plenty of room to roam and play on the lawns outside, including inside a kooky treehouse built for the youngsters. The playhouse is entered via a topsy-turvy rope bridge reminiscent of CNE fun houses. A zip line runs off the side to carry children back down to ground level. Hidden discreetly beyond the tree line and the playhouse is the workshop, accessed by either a separate driveway or by foot on a leisurely stroll along the property’s trails. Cross over a serene bridge rising above a seasonable creek bed (constructed by Dale) and you are struck by the tremendous size of the 10,000-square-foot modern heated barn ahead. With a spacious woodworking shop, four garage bays and two hydraulic car lifts (for Dale’s passion of maintaining old cars), it is the man cave of all man caves. But then again, this is just the sort of outbuilding required for a couple with a passion to build.

For Alliston, Ontario, one need look no further than an old country homestead standing at the east edge of town, a minute’s drive north of Victoria Street E. GoodLifeMagazine.ca | 23

There survives a proud redbrick farmhouse that is the birthplace of a man who literally changed the world. Sir Frederick Banting, the Nobel Prize winning co-discoverer of insulin was born in this house on a road now appropriately named for him. Falling into disrepair for decades, the old homestead was adopted several years ago by a group of volunteers who understood the significance and value of this historic property. Banting was Canada’s very first Nobel Laureate, but more than that, his groundbreaking medical discovery continues to save millions of lives globally to this day.

To date over 1400 students have passed through the doors of the Banting Homestead for this education. The Legacy Foundation recently added a lecture series, symposiums, scholarship programs and graduate/post-doctoral awards to their busy agenda.

The scourge of diabetes is not a disease of the past. It is, in fact, growing at an unprecedented rate annually, particularly amongst youth. There are 415 million people ages 20-79 currently living with diabetes and no one is certain just how many children and adolescents are presently afflicted. Statistics reveal that up to 40 per cent of people with Type 2 Diabetes may not even know they’re living with this lifethreatening illness.

Banting’s insulin discovery endures as the primary treatment to keep those alive who would otherwise be resigned to a death sentence from the disease. With the rising tide of diabetes, The Sir Frederick Banting Legacy Foundation, which operates the property, has taken on the mantle of this fight to help prevent the disease through education and awareness. 70 per cent of Type 2 diabetes sufferers can prevent and delay the disease merely

Group tours for adults are available at no charge and free school field trips with subsidized bus travel are offered for schools. To date, more than 1400 students have passed through the doors of the Banting Homestead for this education. Their threehour tour includes a brisk walk around the trails of Heritage Park to work out the kinks from the bus ride to the site and to reinforce the merit of exercise. Next, a talk and multimedia video presentation including a video from astronaut Chris Hadfield, who discusses the need for personal responsibility for one’s health, followed by a team-based scavenger hunt in the farmhouse where children will examine exhibits and learn more about Banting and his medical discovery. The tour concludes with prize presentation and a Q&A in the Octagonal Drive Shed presentation facility. The Legacy Foundation recently added a lecture series, symposiums, scholarship programs and graduate/post-doctoral awards to their busy agenda. The general public is welcome to tour the homestead for free during public hours and picnic on the grounds at their leisure. While it is primarily an education centre, numerous installations inside The Banting Homestead explore Banting’s distinguished, yet shortlived life. The War Room explores Banting’s celebrated military career. Injured in battle in the Battle of Cambrai, the war had a great impact on his life. He later worked on military wear, such as flight suits designed to prevent pilot blackouts due to acceleration forces that prevented proper blood flow in

the body. Banting died prematurely just shy of his 50th birthday in a military plane crash but not before first becoming a celebrated war hero (awarded with the prestigious Military Cross for his heroism while under fire.) In addition to his military and medical careers Banting was an avid woodcarver, writer, prolific painter and sketcher who travelled with A.Y. Jackson, and other members of the Group of Seven into the rugged Canadian wilderness to paint landscapes. He even dared join an expedition north of the Arctic. Many of Banting’s original paintings and sketches hang in The Artist Room. The Discovery Room exhibits some rather daunting-looking syringes from the early 1900s, vintage boxes of Protamine Zinc Insulin and Banting’s own famous spectacles and collection of smoking pipes. His discovery won him the esteemed Nobel Prize in Medicine/Physiology in 1923 and King George V knighted him in 1934. The Family Installation is where family photos and The Banting Family Tree is displayed.

Wandering through the scant few rooms of the restored homestead, visitors can linger by the fireplace where the Banting family fended off the chill of Canadian winters, but one is left with the ache for more extensive exhibits. The potential of a larger museum or Discovery Centre is evident but funding and vision remain the main stumbling blocks here. Visitors interested in a mockup of Banting’s lab will require a trip to the Ontario Science Centre. The Town of New Tecumseth is the owner of this historic property. Venue buildings and the five acres surrounding are only under long-term lease by the Sir Frederick Banting Legacy Foundation which focuses primarily on diabetes education. The shop carries a wide variety of fine Italian imported goods as well as a food bar of delicious homestyle Italian meals and desserts. How long has Amaretto Café Bakery been open?

Why Tottenham?

Marino Mazzotta: We’re actually brand new. We’ve only been open for seven weeks. But my father always had cafes in the ’60s, ’70s and into the ’80s. I guess you could say it’s in our blood. It was only natural to continue the family’s tradition within the industry. And now I have my mother in charge of the kitchen.

MM: We have been looking in the area for the past four or five years. The spot we ended up with was one that we had our eye on for a while. It’s a 100-year-old building that used to be an old house, which is now converted into a commercial space on the main floor and apartments on the upper levels. I grew up in the city but now I’m looking to settle in the beautiful and quiet countryside.

How large is your seating area? MM: Currently we have three tables inside and three outside. So that makes for eight people in total. However, because of the high demand, we will be renovating one side of the café in order to accommodate more seating. But we won’t close down for renovations since it will all happen after hours.

Tell me more about your grocery section. MM: We carry a variety of products that are imported from Italy. We have four different types of pasta, gluten-free, bronze cut pasta, egg nest pasta and semolina pasta. You can also purchase the same imported Italian coffee beans that are used for our espressos. How have visitors and locals reacted to your new café bakery? It has been overwhelming since we started. The locals are very pleasant and we have regular customers already. We also get people from downtown coming up on the weekend to buy our specialty bread, which is baked in-house. We have olive and red pepper bread. A lot of couples from surrounding towns come by for the espresso and the cannolis.

Any interesting future plans? We plan to expand the space so that we can seat more guests. Also in the near future we’d like to add a liquor licence so that we can carry Italian wine.

s our nights grow cooler and we reluctantly dig out the sweaters, there are still plenty of reasons to celebrate the season that lies between swimming and skiing. It’s apple harvest time! Now in its ninth year, the Apple Pie Trail is a self-guided culinary food trail with 40 fabulous whistle stops from Creemore to Meaford that celebrate the scrumptious Ontario apple. Apple production drives much of the economy in the region and while the trail goes year-round, the fall is always the highlight because the picking season is in full swing and fall colours are at their peak. Kristin Ellis of The Blue Mountain Village Association, the group that publishes the trail’s map, says “Grey County is the most concentrated apple growing area in Canada. Each of the 40 trail stops have been thoroughly screened to ensure that vendors and farms are either cooking or working with local apples.” By dawn ritchie

40 DELICIOUS APPLE-INSPIRED TRAIL STOPS There are six major vicinities along the scenic trail route and conquering one or two towns per day may be the best way to approach this embarrassment of riches. At the southern end, there’s the Creemore & Stayner leg. A little further north brings you to the Collingwood, Craigleith and Blue Mountain Village trail. The Beaver Valley – just to the west is the heart of the applegrowing region – and not to be missed, the Clarksburg, Thornbury and Meaford destination that lies at the north end of the map and offers a winery as well. To help visitors manage all the excitement, The Blue Mountain Village Association is now working on creating daily itineraries to curate visitors’ adventures. PLANNING YOUR ITINERARY A typical day trip could start with breakfast at a café with apple pancakes before heading to an artisan’s gallery to view exhibits of paintings and jewelry with an apple orchard theme. Next, onto a cidery or honey house to acquire some Apple Cinnamon Creamed Honey for the pantry. Later browse through a local cheese shop that serves apple smoked cheddar and stir the appetite for a lunch of curried apple and ginger soup. After lunch, a pit stop at a local coffee shop for a caramel apple latte

revs the engine before an afternoon of apple picking. Wind down the day’s exploits with a leisurely dinner of apple smoked ribs (Trail Stop #28), roasted salmon with apple lentil salad (Stop #32) or another apple-inspired menu at one of the many excellent restaurants on the trail. PICK YOUR OWN Two pick-your-own orchards are cited on this culinary trail: T&K Ferri Orchards and Farmer’s Pantry, both in Clarksburg. T&K Ferri (Trail Stop #21) is an award-winning orchard known for it’s high intensity planting system. The Farmer’s Pantry (Trail Stop #22) is activity central with tons of things for the kids to do. ACTIVITIES There the family can enjoy a wagon ride and game of mini-putt in the orchard, visit a petting zoo, negotiate a rope maze and blow off steam on a sand mountain. There are candy apple dips and calf roping … and for the adults, the lovely market to peruse. But everywhere along the trail there are activities to be enjoyed. A cooking class in Creemore is at The Mad Maple Country Inn (Stop #1.) Two museums offer the history of the apple industry and tools used in the harvest (Stop #18 & 37) or one can view apple knit textiles at the Meaford Museum at the Harbour. GoodLifeMagazine.ca | 51

It needs to be “cellared” for three months to develop its sweet and tangy flavour profile, much like a fine wine does. Pick up a Red Prince Apple Pie at the Thornbury Bakery Café, (Stop #31 on the trail.) The bakery is even generous enough to supply itsrecipe.

SAMPLE A NEW APPLE VARIETY But perhaps the best part of hitting the Apple Pie Trail is the opportunity to sample a vast variety of different apples from Ginger Golds, Jersey Macs and Paula Reds to Ambrosias, Tolman Sweets and Russets. Many consumers have only ever eaten four or five types of apple, because that’s all grocers carry, when in fact there are more than 7,000 types of apples grown worldwide. The Apple Pie Trail thankfully has its fair selection, including the rare and fabulous winter apple, the Red Prince, grown only in Thornbury. Exclusive to Binkley Apples, a sponsor the Apple Pie Trail, the Red Prince was brought over from Holland. No one else in Canada has the rights to grow or distribute

ORGANIC APPLES Those seeking organic apples will definitely want to pull in to The AppleTop Farm (Trail Stop #23) in The Beaver Valley, open every day 9 a.m. to 5:30 p.m. (except Tuesdays) from September to October. Only seven minutes from Clarksburg (two concessions down,) AppleTop is the only certified organic grower currently on the trail. They have 27 acres of apples and sell Paula Reds, McIntosh, Galas, Empires, Cortlands, Ambrosia, Jona Golds and Northern Spy right out of their rustic old barn on the property. It’s a casual lesson about good stewardship of the land according to grower Helena Johnson. “People are really curious about what we do,” she says. “So we take them into the orchard and let them ask questions.” Johnson insists that apples should be handled with care. “Apples should never touch the ground and should be picked carefully. BREWERIES, VINEYARDS & BAKERIES If refreshments at a winery or local brewery are more appealing, dusty trail-goers can enjoy a cold one and still leave with a bag full of brewery-made Spent Grain Apple Doggy Biscuits for Rover (Stop #11). “The dogs just love them,” says Ellis. Two vineyards on the trail offer hard cider and an outstanding “Ida Red Frozen to the Core” dessert wine (Georgia Hills Vineyard: Trail Stop #20). For kids: apple slushies (Ravenna Market: #19) and ice pops (Currie’s Farm Market: #10) are to be found along the route. PIE FROM SCRATCH! Getting down to the ‘core’ ingredient of the Apple Pie Trail is of course that iconic Canadian dessert. No day trip would be complete without filling the shopping bags with homemade apple pies, crumbles and apple butters from a farm stand. “There are places like Grandma Lambe’s, Blackbird Pie and Giffen’s Country Market just pumping out pies all day long,” says Kristin Ellis. Which means just before bed, there’s the reward of that sinfully good slice of pie to feast on.

“Some people think my work is painting because I use a lot of pastels in my work … so they’re surprised when they see they’re not paintings,” says Harding-Tucker. She uses hand-colouring to inject life into her black and white prints. This manual way of adding colour, combined with her photography, creates a unique image. “I do a lot of abstracts in photography,” says Harding-Tucker. “I have tricks of light in my still lifes and I think people like them because they couldn’t tell how I did them.” To get to this point, Harding-Tucker has taken a journey of self-taught experimentation. University was when she started to play around in the darkroom, but she didn’t realize her interest until she moved to the mountains of California. Left on her own most of the time, she started her body of work. “My friend had a camera so I borrowed the camera and I started taking pictures and people showed a huge interest in them.”


When she returned to Toronto, she worked as a theatre photographer, working in black and white. She spent years developing her skills in the darkroom. Later she started shooting still life. “I liked them but they were still missing something,” she says. While visiting an art supply store, she came across prints of Parisian pastels from the 19th century. “I started playing with the colour on my black and white images and that really took off … people loved them.” From there, she networked with other artists, became a member of the Society of Canadian Artists, president of Ontario Society of Artists and, after moving to Simcoe County, she got involved with the South Simcoe Arts Council. Moving away from still life, Harding-Tucker has gravitated toward panoramic images of large landscapes. This is a hint back to her time in California where she photographed trees, lakes and mountain environments. “I’m starting to do a bit of conceptual stuff where the owl is taking part in a lot of my photographs to do with the environment,” says Harding-Tucker. “… sort of a message

to go along with pristine environments because the owl is the one bird that, if it disappears, it’s because the forest is dead.” She attributes this interest in nature to her background in science. “My whole family were scientists exceptthey did some art as well.” An exhibit she was featured in two years ago at the Ontario Science Centre explored the concept of how to mix science and art together, entitled Occam’s Razor: Art, Science and Aesthetics. She explains her subject matter for the show as “something that is mysterious that happens in nature.” “I try to photograph things that are anomalies in nature, like eclipses or a sundog,” she says.

Her current interest is capturing the egret. Harding-Tucker has been travelling to Texas in the winter to photograph birds during migration season. “These birds dance, they’re just incredible … so I photograph them for a while until I get something I want, if they want to stay around long enough,” she says with a laugh. Harding-Tucker plans to use the egret as the subject for a sculpture, a dream she has yet to realize. “I’m not quite sure what to do with the photographs yet,” says Harding-Tucker. “I’m not really interested in just the bird. I get an idea around the bird. I allow the object to draw me in.”

T

he LCBO has been dragged kicking and screaming into the 21st century, offering up two new initiatives to their customers. One began in May 2015 and the other just this past July and – for those in Muskoka and surrounding area – only one might apply to you directly, but you just might be interested in the other. Back in 2015, the LCBO started opening special country themed boutiques. To refresh your memory, the Ontario system of alcohol sales contains a number of wine agents who bring in wines for both Private Order and on Consignment. Some of those wines sit in the LCBO warehouse waiting for restaurants and private customers to order them from said agent, but never see the light of day at the retail level. Well, the LCBO opened up a new channel for these wines and has called them “Products of the World Specialty Boutiques.” These are stores-within-a-store and carry all the products in the system (LCBO and agent) in one location from a particular country. The problem is you have to go to the store to get them, and they are not available through the new on-line ordering system ... which brings me to my next big news. You did read that correctly, the LCBO now allows you to 58 | GoodLife South Simcoe - Fall 2016

order on-line for either home delivery (for a fixed delivery charge) or to the store nearest you (for free). Online wine shopping is huge south of the border, both direct from the winery and through various retailers (like Amazon) or wine clubs (like Virgin Wine). This trend continues to grow as more and more people become comfortable with giving their personal details online and shopping without the need for actually handling what they’re buying. Now granted, it’s not all their products. “Up to 5,000” qualify, but it is a step in the right direction for a retailer that has been sorely lacking in innovative ideas and has generally stuck with a 1920s mentality when it comes to the sale of booze. A list of specialty stores can be found on HelloLCBO.com (search for ‘Products of the World Specialty Boutiques’) and includes: Greek, Portugal, Spain, Chile, Argentina, Asia, New Zealand, Australia and Kosher wines, with more being added in the future. There are 168 luxurious rooms and suites, fashioned by renowned designer Thomas Pheasant. The Salamander’s grounds and amenities are nothing short of luxurious.
