eldom does a home fulfill all of a homeowner’s precise needs. Small room sizes, lack of storage, too few bathrooms and poor kitchen layout tend to be the main stumbling blocks. The only viable solution to get what one truly wants is to build from the ground up. For the majority of people that’s a daunting endeavour unless you possess the steely determination of go-getting single mother to three Paula West Oreskovich who, not even for a moment, thought this an insurmountable task. “I never thought I could not do it. Being alone and building a house like this. I just did it,” says Oreskovich matter of factly. Oreskovich purchased the land and designed the nearly 7,000-square-foot, seven bedroom, six bathroom structure all by herself, taking into account every possible luxury and necessity her busy household would require. Then she sat down with architect Philippe Lamadeleine. “And we put it to life.” The home would have a two-level garage with six amazing garage bays. “I wanted to actually be able to park inside my garage instead of it being overcrowded with sports equipment,” says Oreskovich, who drives children to hockey and horseback riding events up to 10 times a week. There would definitely have to be high ceilings on all levels. The master bedroom would span nearly 1,000 square feet and have access to a treetop level deck. be adorned with high end organizing solutions. A double-sided gas fireplace in the master bedroom would gaze into a luscious spa en suite with a jetted tub lit by a chandelier. Every bedroom, in fact, would possess its own en suite to avoid bathroom arguments and each bedroom would have quaint dormers. Since televisions are not allowed in the children’s bedrooms, an upstairs TV room would be an evening gathering spot.

As a self-proclaimed “neat freak,” Oreskovich likes everything in its place which meant the mudroom on the first floor had to be tricked out with every imaginable organizational option. There would be hooks, drawers and cubbies for her three very active children who keep things rocking with all their rep sports. The tiled mudroom would have its own washer and dryer for sports togs, plus a doggie wash for her two

the yard, an in ground swimming pool with separate all season Jacuzzi and outdoor fire pit was compulsory to keep everyone entertained at home and off the streets. Oreskovich also decided that the great room’s Napoleon fireplace was to be twosided, so she could supervise all the action in the main living area from inside the adjoining office when working. And on top of this huge laundry list of must-haves, the home had to be designed with a “rustique farmhouse modern look” that harkened back to Paula West Oreskovich’s happy childhood in the agricultural town of Haileybury in northern Ontario. Friends and associates were quick to warn of the pitfalls of building on your own and promised she would be fighting with her general contractor by the end. But, according to Oreskovich, nothing could be further from the truth. “There was not one disagreement. Not one argument. For a big project like this, with so many personalities and opinions to deal with, it went 99-per-cent smoothly. I was fortunate to be surrounded by such good tradesmen and 90 per cent of them were local.” Tim Perry was Oreskovich’s general contractor. She now considers him a friend. His commitment to the partnership was so absolute that he joined her, saw in hand, to physically rip barn boards off an abandoned 1896 barn on the 7th Line in Oro-Medonte that Oreskovich had discovered on her travels. “We hand selected every beam and board we bought,” says Oreskovich, who sought out only the most prized pieces with original pegs and nails still intact. She really wanted to incorporate that agricultural feel into the home’s interior, going as far as to have barn boards installed on the ceiling over the kitchen’s island as a unique décor element. The stone chosen for the front exterior of the home was Pennsylvania Fieldstone, chiefly to impart that rustic agricultural look of farmhouses. It carries through inside the home to the great room’s fireplace surround and up the stairs on a handsome feature wall, right into the master en suite, where luxurious nightly “de-stressing baths” could take place. The exterior stone facing on the sides and back of the residence is Old London Brick, which also reappears in the recreation room and around the wet bar, bringing continuity to the overall design.

All the plumbing throughout the home is a replication of that “1920 rustique farmhouse” look she loves, from showerheads to taps and faucets. Restoration Hardware was Oreskovich’s supplier for 95 per cent of the lighting fixtures, with the beautiful Camino Vintage Candelabra repeating in the great room, dining room, foyer and master en suite in varying sizes and tiers. George Gaffiero of Imagine Landscaping was hired to bring Oreskovich’s landscape sketches to life. He installed more than 200 tons of armour stone, plus skids and skids of Navascape Old English cobble around the pool. The home sits on the edge of the Minesing wetlands, so engineered fill was brought in to raise the grade of the land for the pool and ensure its integrity. “The back of the property is environmentally protected,” says Oreskovich. “I’ve seen heron in my backyard. Turkeys and deer.” Construction began in August 2013 and remarkably only nine months later the family was unpacked and settled in. “I really built the house for the kids and their friends,” laughs Oreskovich. “But I just love Snow Valley. The houses are further apart. There are a lot of trees and yet we’re only seven minutes to Georgian Mall.”

his two-storey, 4,455-square-foot, custom-built architectural gem was the brainchild of Natasha and Devon Stanley, who designed and constructed the recreational property in 2013 to their own exacting standards. Important to this dynamic couple were aspects such as a bright contemporary look, good flow, open concept floor plan with quiet integrated spaces and pleasing views from every window. “You can see the mountain from practically every room in the house,” says builder/ homeowner Devon Stanley. “At the back of the house, I have a 16-foot long window with panoramic views. And every night we watch the lights of the ski hills from our master suite as the groomers go up and down the hills preparing runs for the next day.” The genesis for their design stemmed from a tiny postage stamp-sized photo

they had glimpsed in a magazine. “We were in Chapters in Toronto one day flipping through magazines,” says Stanley. “Just looking for ideas and this little one inch by one inch picture popped out.” It was a partial angle of a home with a courtyard that housed a pool, and they kept coming back to it. Realizing the heart of a home could lie outside of the actual structure, they began working with Bruce Abbott on the blueprints to base their new home’s design around a courtyard. Foregoing the pool they instead opted for a spacious terrace and laid dark charcoal flagstone with pea gravel intertwined between the slabs. In the centre, a two-stemmed river birch was planted that will eventually canopy the entire courtyard as it matures. The rear of the courtyard sports an eight-foot tall privacy wall that blocks any view from neighbours.


“It helps encapsulate the area to create a serene outdoor oasis,” says Stanley. The courtyard layout dictated incorporation of separate wings for the residence, which has served a useful lifestyle purpose. Quiet après ski time before a roaring fire in the great room can occur concurrently with raucous movie watching and rough housing in the media room on the opposite side of the courtyard. Everyone in the family remains within eyesight yet conveniently out of earshot. Entering through the front door of the home, the foyer extends to a long, open hallway that permits open concept views to the rear of the residence where the kitchen and dining room are located. An open rise architectural staircase with two steel stringers, solid treads and glass railing climbs the wall to the second level. “I fabricated the metal on-site myself,” says Stanley, who also framed, drywalled and roofed the entire structure, built the kitchens and bathrooms, laid the flooring, and did the fine finishing. Foundation, electrical, plumbing and heating tasks were contracted out. The immense kitchen with mega storage has two islands to support an active family with built-in wine and beverage fridges. Four spectacular glass pendants suspended over the islands provide task lighting. A fullsized fridge and standup freezer flank the large windows that illuminate either side of the commercial-sized gas range. Beside the kitchen is a walk-in butler pantry with full cabinetry and sink that performs as a second kitchen. Ahead is the dining area and the main living area. Once in the great room, you are struck by the magnitude of light cascading in from the floor to ceiling windows. Daylight bounces off the white walls that are the presiding theme of this contemporary residence. “You can go all day long without turning on a light,” says Stanley. “The glass is in the right spots. It’s always bright and fresh looking.” In the evening, energy efficient LED lighting provides ambience. Floors on both levels are polished concrete. Kick off the ski boots and radiant heating instantly warms the feet. “It’s the primary heat source for the house,” says Stanley. “Radiant is the most energy efficient source you could put in this house. It runs

off a boiler system.” The in-floor heating has multiple controllable zones with adjunctive air heating serviced by two furnaces. Dressing the concrete floor before the wood-burning fireplace is a wool-blend Feizy rug in chocolate, grey and ivory tones. On it sits a recycled wood plank and forged metal coffee table from L.A.’s innovative Cisco Brothers – a home furnishing design company that transforms discarded objects into residential items that are functional works of art. The distinctive coffee table embodies a unique metal footrest flange under the tabletop so that no feet need ever find their way to the surface again. The Stanleys teamed with design savvy Holly Stone, owner of Stone Home Design (10 Keith Ave., Collingwood in the Cranberry Mews) for furnishings. Stone placed two cow print swivel bucket chairs from Rowe in the great room, along with a distressed leather settee and black/brown sofa from Cisco Brothers. “Everyone who comes in the house sits in those cow print chairs,” says Stone. “And they never leave because they swivel all around. They’re the perfect height to hold your drink glass. From those chairs you can see the lights of the ski hills and turn back to look in to the kitchen and off to the media room on the other side of the courtyard.” The media room is supplied with a 70inch wall-mounted TV and gas fireplace. The surround is a sheath of stunning hot-rolled steel installed by Stanley himself. A cowhide rug covers the floor in front of the oversized organic linen Loft sectional chaise lounge

from Cisco. “The chaise is huge,” says Holly Stone. “Almost the size of a double bed.” Stone also sourced the coffee table from Four Hands, out of Austin Texas, built with recycled wine crates from local vineyards. An adjoining three-piece bathroom with spa shower (wall tiled with stunning Marmi Deco Blanco Porcelanosa large-scale tile) makes the media room convertible to a main floor master, allowing residents to age in place. The home was constructed with two upper level masters as well. “We wanted two masters so in-laws and guests who stayed with us would have their own private section of the house,” says Stanley. In the main master bedroom hangs the superb handmade forged Spider chandelier from Cisco that complements the Sienna Iron Queen Bed (by Four Hands.) enzington Burger Bar is expanding its patty territory, again! Along with its downtown Barrie, Orillia and Bradford locations, the popular burger chain now has a Barrie waterfront location to satisfy the burger needs of hungry Centennial Beach goers. “We’ve taken over the concession building and done a ton of work to it — both inside and out,” says owner and founder Brandon Clark. “It looks amazing!” Serving gourmet burgers at so many new locations is all thanks to Kenzington’s local fan base. “Our crazy big following has made it all possible.” Originally established on Dunlop Street in downtown Barrie in 2007, Kenzington Burger Bar has become a popular destination for gourmet burger lovers. Kenzington features over 22 delicious burger combinations. “Our goal is to serve up some of the most creative, mouthwatering burgers this side of Toronto,” says the 34-year-old entrepreneur. And with four locations, it appears that

burger lovers have a soft spot for Kenzington Burger Bar. “Our diners are constantly posting photos of our burgers and specialty drinks on social media — it’s pretty cool.” From the bar, Kenzington’s Caesar Slider is very popular because it’s topped with a mini burger. In March 2015, the Barrie location was featured on the Food Network’s You Gotta Eat Here. “That was an amazing experience,” admits Clark with a smile. “It’s been a crazy ride since then.” All Kenzington Burger Bar locations feature a four-step ordering process, which allows you to customize your meal. First you pick your topping combination (too many to mention), then your bun (signature potato roll, pretzel, gluten-free, tortilla wrap or grilled cheese) and then your protein (signature beef, grilled chicken, fried chicken, ground turkey or black bean and quinoa veggie). After that, you pick your side (Yukon fries, salad, garlic parmesan fries, sweet potato fries or onion rings). The Centennial Beach location serves up a more

limited menu. “Our signature beef patty is a special custom blend done exclusively for us and it’s fresh ground daily,” he explains. “Everything on our menu is made in house.” Along with burgers, Kenzington Burger Bar is also well known for its live music. “We play live music every night after 10 p.m., and on the weekends in the afternoons (except for the Centennial Beach location),” he explains. The local restaurateur says he’s always been passionate about burgers and got in on the current burger craze on the ground level. “It’s the most versatile platform for food because you can customize every aspect of it. APPLE MOJITO This fabulous cocktail is a popular item at Kenzington Burger Bar (KBB). 1.5 oz Captain Morgan’s Rum 1/2 lime (cut in slices) 5 to 8 mint leaves 1/2 oz Agave Nectar 4 oz Somersby Apple Cider PREPARATION: 1. Muddle fresh lime, mint leaves and Agave in a mixing glass. 2. Add ice, rum and shake. 3. Pour mixture into Collins glass and top with Somersby. 4. Garnish with mint sprig and sliced apple.

South St. Burger’s mission is simple. “Better burgers, better sides, and better shakes is our driving philosophy,” says Stella Gan of Liberty Hospitality – a group of companies that owns and operates Barrie’s two South St. Burger locations. Originally established by Jay Gould, the founder of New York Fries — South St. Burger has 39 locations in Canada and Dubai. “It’s a privately-owned Canadian company that’s growing fast and furiously,” says Gan, whose group also has an Ottawa location at Landsdowne Park. This burger joint’s popularity stems from quality ingredients. “We use only 100-per -cent Canadian Angus beef with no fillers, preservatives or antibiotics, and our burgers are always fresh never frozen,” says the local business owner, who purchased the Barrie locations in 2014. All burgers are grilled on an open flame for that backyard smoky grilled flavour. The fries are hand-cut daily from freshly selected potatoes and are cooked in non-hydronatebd sunflower oil. “Our milkshakes are also super popular because we make them the old fashioned way with scooped ice cream and blenders.” Then there’s the burger toppings — ranging from guacamole to wasabi mayo. “With over 30 gourmet toppings, you can expect the unexpected,” says the local business owner. “Sure you have your favourites, but no two burgers need ever be the same.” If building a gourmet burger is your thing then post your creation to Instagram #SouthStBurger and South St. Burger may feature it on their feed. Along with veggie burgers, South St. Burger also offers various gluten-free options (including buns, burgers and toppings) and its beef is halal. New menu items include a grilled Octoberfest sausage, along with beer and wine, as both Barrie locations are licensed. The most popular menu are the signature burgers, which include: the True North, the Hawaiian, the Nacho and the Mushroom Swiss. “Our chicken burger, featuring a grilled whole chicken breast, is also super popular.”

Beyond great burgers, the locally-owned and operated restaurants make a point of giving back. Along with charitable donations, both Barrie locations do various local fundraising events. STRAWBERRY MILKSHAKE (South St. Burger’s Not So Secret Recipe) This delicious shake is the perfect drink to wash down a South St. Burger. 1 cup (2 heaping scoops) premium strawberry ice cream 7oz (almost 1 cup) 2% milk 1/4 cup frozen strawberries cut up into small pieces PREPARATION: 1. Scoop the ice cream into a blender or milkshake mixer. Pour in the milk and add the strawberries. Ensure blender is set to the lowest setting. Blend on low speed for approximately 30 seconds, switch to high speed and blend for 60-90 seconds. Shakes should be thick and thoroughly blended. 2. **It is important to not over mix. Do not add ice or any other artificial ingredients**

HOMEMADE LEMONADE This refreshing drink is the perfect summer beverage to wash down a burger. The recipe is inspired by the lemonade served at Boon Burger. 4 cups water 1 cup cane sugar 5 Tbsp lemon juice + 1 tsp lemon juice PREPARATION: 1. In medium saucepan, mix together water and sugar. Bring mixture to a boil, and boil for 2 minutes. Allow the syrup to cool to room temperature. 2. Combine the syrup with lemon juice and mix well. Pour over ice. 3. Serve 4.

BOON BURGER Boon Burger takes a different spin on the classic burger joint. “We serve up healthy and tasty fast food that is plant based,” says Michael Valiant, who owns and operates downtown Barrie’s Boon Burger with his wife, Tina. But you don’t have to be vegan or vegetarian to eat at Boon. “While we are vegan, that’s completely besides the point,” explains the burger spot owner. “What we are really trying to do is provide a healthy and delicious alternative to traditional fast food. And we take that business very seriously.” Why open a vegan burger restaurant? “People love burgers because they are a comfort food,” he explains. Beyond that, he wanted to serve up healthy and/or vegan fare that wasn’t a wrap, salad, or a rice bowl. “At Boon, we realize that the devil is in the details and we make everything — from patties to various gourmet sauces and more — in house.” Popular sellers include traditional fare. “Like most burger places, we sell a lot of bacon cheese burgers,” he explains. But

at Boon Burger, the Bacun Cheeze Burger is vegan and the bacun is made from marinated tofu. Other popular burgers include the Jalapeño Chedda Burger (grilled black bean patty, tangy burger sauce, pickled jalapeños, chedda, tomato, red onions and lettuce) and the Spicy Boon Buffalo Burger (spicy grilled white patty, basted with a famous Louisiana hot sauce, mayo, guacamole, tomatoes, celery, red onions and lettuce). Boon Burger sides also have a twist. “At Boon, we don’t use deep fryers or microwaves. Everything is baked,” he explains. Best-selling sides include baked to order fries, a plant based poutine and chili cheese fries. Salads, soups, chili and more are also on offer. As for recommendations? “A tough question, but if you like spicy I would opt for the Jalapeño Chedda Burger. If you prefer something milder, go for the Budda Burger (curried buddha patty, curry mayo, red pepper-peach chutney, sliced cucumber, tomatoes, red onions and lettuce) or the Reu-

ben Rebel Burger (grilled boon patty, Dijon mustard, tangy burger sauce, sauerkraut, smoky bacun, tomatoes, red onions, pickles and lettuce). The Barrie business sprouted up in 2014, after Valiant partnered with Winnipeg-based Boon Burger founders, Tomas Sohlberg and Anneen DuPlessis, who started the company in 2010. Today, there are four locations (Barrie, Burlington and two in Winnipeg). And more on are on the horizon. “We are opening up a Guelph location in September, and by next year, Boon will expand into the GTA,” he explains. On the environmental front, all Boon Burger waste is either recyclable or compostable, including all take-out packaging. THE BURGER’S PRIEST The Burger’s Priest is the latest addition to Barrie’s burger turf. Located in Park Place, this is the Canadian company’s 13th location. “Our philosophy is simplicity and freshness,” explains California native and founder Shant Mardirosian, who came up with the idea after deciding full-time ministry wasn’t for him after graduating from seminary school. “We grind our premium fresh free-range beef every day on-site, and grill our burgers on a flat-top griddle to lock in the flavour and juices,” he explains. “You’ll never have yesterday’s beef in today’s burger.” Even the toppings and buns are simple. “It’s basically a California meets New York burger joint — kinda like what burger spots were like 60 years ago,” explains Mardirosian, who opened his first location in Toronto in 2010. He includes Bible scriptures inside each restaurant to represent the story of The Burger’s Priest. Every location has a different verse showcased. The classic menu serves up tempting

items such as The Vatican City (a double cheeseburger squeezed between two grilled cheese buns), The Option (two roasted portobello mushroom caps, panko crusted, stuffed with cheese and fried to perfection), Chili Cheese Fries and Yukon Gold Freshly Cut Fries — to name a few. “Hands down, our two most popular burgers are The High Priest (two beef patties, secret sauce, cheese, pickles, chopped lettuce, diced onions on a non-sesame seed bun) and The Bacon Double Cheeseburger,” he notes. For gluten-free diners, patties, fries and gluten-free buns are on offer.

Diners can also order items from the secret menu after answering a skill-testing question. “It’s pretty easy,” he laughs. The 60-seat location is also licensed. Why expand to Barrie? “Barrie is a great restaurant town and we found a spot that offers great visibility for Highway 400 travellers heading north to the cottage. THE WORKS The Works is another must stop on the Barrie burger trail. “Our driving philosophy is to serve up the world’s best burgers with endless variety in fully licensed shops in a fun, hip full service environment,” says marketing manager Kate Notwell. “We blast classic rock and believe in providing better than excellent customer service.” With 26 locations and growing, the company started in Ottawa in 2001. The downtown Barrie location is owned and operated by Eric and Gillian Mutrie. All burgers are made with 100-per-cent Canadian beef with no fillers. “We offer something for everyone, so no matter your mood, interests or dietary restrictions, we can hook you up with an awesome burger,” she explains. “We have over 60 gluten friendly items, and we can work with all kinds of allergies to ensure that a guest is taken care of and still has a great meal. Popular items include The Work’s fully loaded, piled high burgers such as Gettin’ Piggy with It or Juicy Lucy. Diners also particularly enjoy the Tower O’Rings and classic milkshakes made with 100-per-cent Canadian Chapman’s Ice Cream and milk. Variety in sides is another specialty. From steamed broccoli, cucumbers and celery for the more health conscious folks to poutines, fresh cut fries from 100-per-cent Canadian potatoes, sweet potato fries and more, plenty is on offer. “Currently, on our Baconism III menu we offer a side of Netflix and Chili Frito fries, topped with all-bacon chili and FRITOS.” And if a guest could just have one item? “That question is impossible to answer,” she laughs. “However, a World Famous Tower O’Rings with our Nacho Libre (with cheesy nachos on top) and a thick and creamy milkshake to wash that down would be an awesome choice.” The Works is located at 137 Dunlop Street East, Barrie. In September, downtown Barrie’s beloved Pizzeria Italia will celebrate its 50-year anniversary. Longevity is an accomplishment for any business, but especially notable in an industry where 80 per cent go under in five years. So, what’s the secret to Pizzeria Italia’s success? “Great food, good prices, friendly service and a homey atmosphere,” says Angie Genovese, who runs the restaurant that was started in 1966 by her parents, Eugene and Josephine (née Barbaro) Genovese and her uncle Nino Barbaro (who later left to open Nino’s Italian Restaurant in Barrie’s east end).

Are your parents still involved in the restaurant? AG: My parents still own the business, but my dad is totally retired. Occasionally, my mom still helps out with cooking when we are in a jam. Today, I run it with the help of my son, Eric, my daughter, Katarina, and the rest of my wonderful staff. Who is in the kitchen? AG: My uncle Joe (Barbaro) ran the kitchen with my mom with the help of Maria Labarbera until they retired. After that, it was my brother, Frank. Now we have a new kitchen manager and chef and he’s been a great asset so far. My son, Eric, also helps out in the kitchen. The menu features pizzas, panzerottis, various pastas, veal and chicken Parmesan, lasagna, spaghetti and meatballs, salads and more. Who came up with the recipes? Congratulations to you and your family on 50 years in business! Angie Genovese: Thanks! We’ve been here for so long that we now have three generations of families coming in to dine. That kind of customer loyalty has been amazing for us. What led your family to open a restaurant in Barrie 50 years ago? AG: My parents moved to Barrie from Sicily between the late 1950s and early 1960s in search of a new life. Looking for a business opportunity, they, with my Uncle Nino, decided to purchase this building in 1964. At first, they rented it out. When that didn’t work out my parents decided to turn it into a restaurant in 1966. My uncle Nino was in the kitchen, my mom worked the front of the restaurant and my dad looked after the business side, along with the deliveries and pickups. That’s how it all came to be. A few years later, my uncle Nino moved back to Italy to run a family restaurant, but came back to Barrie to open his own restaurant with my aunt Rose in the 1970s.

Your parents (mom is now 79, and dad is now 88) must have some interesting stories to tell about this place.

AG: My mom and uncles came up with all of the recipes. All of the dishes are old family recipes.

AG: Oh, if the walls could talk [laughs]! In the early days, there was always a bit of a language barrier, which made for humorous scenarios. One day, this customer came in and ordered a medium steak, which was on the menu back then. When my mom went into the kitchen asking for a medium steak, my uncle Nino looked confused and replied: ‘we don’t have different sizes of steak – we only have one size’ [laughs]. My mom also tells stories of having to teach diners how to eat spaghetti properly by twirling it with a spoon. Back then, spaghetti and meatballs were a novelty to many Barrie diners.

As a regular customer, I always order the manicotti. What are some of your most popular items?

Are there any restaurants in Barrie older than 50 years? AG: Mom thinks we’re definitely one of the oldest, and is positive that we were the first Italian restaurant in town. Some people will remember Roberto’s Pizzeria (now the site of Hudson’s), but Pizzeria Italia opened first. Town and Country is a few years behind us, as they opened in 1973. The Queens has also been here for a long time.

AG: Everything sells well, but we are really well known for our meatballs, pizzas, and meat sauce. But lately, our manicotti and cannelloni have been selling like crazy. And, our homemade bread, of course. Your bread is so amazing! I have actually been eyeing those 12 fresh loaves sitting on a shelf behind you this entire interview. AG: Our bread is made with a very basic recipe, but customers have loved it since the day we opened. It’s funny because people will often order the gluten-free pasta and then insist upon having our bread. I can’t figure it out! [laughs]. What’s your food philosophy? AG: People should enjoy what they’re eating and everyone should feel full when they leave. That’s why our portions are so big!

Over the years, we’ve tried to make them smaller but customers like the idea of taking home their leftovers for lunch the next day. Except for a few types of noodles, we make everything from scratch. It tastes so good because everything is so fresh. Your building is close to 100-years-old. Do you know much about its history? AG: Before my family purchased it over 50 years ago, it was a church, Hi-way Pentecostal. Even today, as you walk into the front door and look up, you can still see the cross under our sign in the brickwork. Just a couple of weeks ago, a lady came in to have dinner and told me lots of great details because she attended the church as a child. From what I understand, it was a very small church with the altar at the front (where the kitchen is) and a piano next to the altar. The priest lived upstairs in the apartments and the downstairs had a daycare and church hall.

CHAMPAGNE TIRAMISU Recipe courtesy of Pizzeria Italia The perfect dessert to finish of any Italian meal. You will need champagne glasses for this recipe. 2 (250 grams each) bricks cream cheese 125 grams mascarpone cheese 300 grams (1-1/2 cups, plus 1 Tbsp) granulated sugar 1 tsp almond extract 500 ml (2 cups) whipping cream lady finger cookies amaretto espresso (regular coffee works too!)

PREPARATION: 1. In medium mixing bowl, mix cream cheese, mascarpone, and 150g (half the amount) of sugar until well blended. Stir in almond extract. 2. In separate medium bowl, whip the whipping cream and rest of the sugar together until mixture thickens. Gently fold the whipping cream mixture into the cheese mixture to create filling. 3. Add filling into the champagne glass (about 2/3 full) using a piping bag (or however you’d like to get it all in there!). 4. In small bowl, pour an equal mixture of espresso and amaretto with a dash of sugar. 5. Dip your cookies in the espresso mix (just for a few seconds, so your cookies don’t turn to mush) and then serve in your glass.

AG: Sometimes, we get customers coming in to show us a picture of the painting. Customers have told me that after Harris painted in Algonquin Park in 1918, he then moved to this area to paint in and around Kempenfelt Bay, where his family’s cottage was located. I guess it was around then that he did the painting. As a child, your family lived in the apartments above the restaurant. What are some of your earliest memories of growing up at Pizzeria Italia? AG: Because we lived upstairs, I remember running up and down those stairs to see our parents who were always in the restaurant. Also, because I went to St. Mary’s School, which used to be just up the hill, I would come home for lunch and bring friends. They loved eating at the restaurant. It’s funny because my friends wanted to eat the Italian food, and I wanted to eat their bologna sandwiches [laughs]! I also have vivid memories of the farmers’ market, which was a couple doors down at the old armoury (now a small military museum). Has the menu changed over the years? AG: Yes and no. The staples, like pizza and spaghetti with meatballs, lasagna and so on, have always been on the menu. Items like our manicotti and fettuccini were definitely

added later. In the early days, we even had steaks, pork chops and eggs on the menu. The decor of Pizzeria Italia isn’t fancy, but as long as the food is good I will always come back. I think many diners feel that way. AG: Even though the decor is dated, it’s a very family-friendly atmosphere, and people seem to like that. We’d love to renovate, but that costs a lot of money so I think we will just stick to making small changes here and there. Some people even tell us not to change anything, which just blows me away [laughs]! My family regularly eats at Pizzeria Italia and Nino’s Italian Restaurant. I love that your families have helped each other out over the years. AG: For us, it’s never been about competition. Once when I was in college, my Uncle Nino and Aunt Rose went to Italy one summer and I helped them by working at their restaurant. They are amazing people and I love them dearly. What’s your favourite meal to make at home? AG: Honestly, if we aren’t eating here at the restaurant, we will bring the food home and eat it there. After all these years, I’m still crazy about our pizzas. What about desserts? AG: Our new kitchen manager, Frank Fazio, has been really adamant about making our own desserts. Before he arrived, we would always buy them. Now we offer some phenomenal homemade desserts, including bread pudding, cheesecakes and tiramisu.

What about diners with dietary restrictions? AG: We try to modify meals to the best of our ability if our diners ask. Our menu has meals suitable for vegetarians, some even for vegans. We also serve gluten-free pasta. It goes great with any of our sauces because they are all gluten-free, as well. What about the future? AG: We’re definitely going to have a party to celebrate our 50th anniversary in September. Not sure of the details yet, but let’s just say it will be a good time! [smiles]. On that note, we are collecting old photos and artifacts from the early days of the restaurant and putting them on display. We found my dad’s old ‘Pizzeria Italia’ lighted delivery sign that he had on the top of his red Volkswagen Beetle for years. We cleaned it up and it now sits on display in the dining room. For the party, I would love it if both of my parents were here and Mayor Jeff Lehman came in to help us celebrate 50 years of business. You’ve got the ear of thousands of local diners, anything you’d like to add? AG: We like to say a big thanks to our customers for supporting us for so long. It’s been a great ride and we aren’t going anywhere. Lastly, if people come in with a copy of an old picture of the restaurant, or a picture of people dining here over the years, that we can use for the anniversary, we’ll give you 10-per-cent off your meal. COCKTAIL GARDENS Themed plots have been a growing trend for the last few years. We’ve had children’s gardens, fairy gardens, salsa and pizza gardens and now arriving on the scene is the fanciful cocktail garden. Herbs, fruits and even squashes and root vegetables are making their way into cocktails as Millennial mixologists concoct sweet syrups and savoury infusions to add to their herbaceous muddles of mint and lemon verbena. Prepared at the height of garden freshness, syrups and infusions can be stored for

months to “capture the taste of the season” in the cooler times of year, according to Paul Zammit, Director of Horticulture at the Toronto Botanical Gardens. No, it’s not just the mighty Mint Mohito or Lime Basil Gimlet anymore. Enter the Butternut Squash Old Fashioned, Elderflower Foam Cosmos and the Carrot Cake cocktail. Topped off with a sprig of rosemary or a spicy bean stir stick, these umami-rich libations are sure to be conversation starters at parties. Yes, “drinking your garden” is now a thing! Now many will recommend copious amounts of hot climate wine to you especially from places like Argentina, Chile and Australia, all big meat-eating countries, and yes those wines do pair well with the smoky goodness coming off the barbecue – but there are other countries to look at for your barbecue-wine pleasure, places that might not automatically or immediately come to mind when seeking out wine for your outdoor grilling and dining pleasure. So let your guests bring over the standard from those aforementioned countries; somewhere downstairs in a locked room you’ll have some special bottles that you can decided to shore or not – that’s up to you. Familia Garces Silvia 2013 Boya Pinot Noir Chile ($14.95 LCBO#444711) When you’re talking value in Pinot Noir this one takes the cake, I wouldn’t put it in line with the greats of Burgundy, but if you like juicy fruit like black raspberry and black cherry with a smoky element and a hint of floral then this wine’ll be right up your alley. (¬¬¬¬) Rusterberg 2014 Chardonnay South Africa ($19.95 LCBO#598631) There really are some great Chardonnay values out there, and this would be one of them; it drinks like California without the Cali price tag: subtle apple and pear notes get wrapped in vanilla and butterscotch balanced off with good acidity and a spicy finish. (¬¬¬ ½+) Santa Duc 2009 Les Vieilles Vignes Cote du Rhone France ($16.95 LCBO#101543) Here’s a Rhone Valley wine where no lying down is required, it’s already seven years old, but drinks much younger: plum,

henever people think of craft beer or even more flavourful beer, the default assumption tends to be that it’s going to be a high-alcoholic flavour bomb. Sour beers with wine-like characters, fruit-salad-esque hoppy beers, dark and boozy imperial stouts, these beers are great, but they really command your attention and sometimes you want something simple done well. Enter the pilsner. Even if you haven’t had much experience with beer before, chances are good you’ve had a pilsner. Molson, Budweiser, and even Coors beers are all inspired by this style of beer that was originally brewed in Bohemia in 1842, thus making it known as the “normal” beer for several generations. Light, crisp, refreshing mouthfeel and well-balanced and understated flavours have been

a signature profile of the pilsner, creating a beer that is complex in its simplicity and the perfect way to wind down after a long day. Sometimes it’s good to have a beer that you don’t have to think about, but if you do it’s only good things. Originally regarded as a lesser beer due to the deevolution of flavour and colour brought on by the Big Guys, the traditional flavours of the pilsner style has almost been rediscovered and in recent years has been attracting craft brewers from all parts of the globe, who are creating beers in the style that either celebrate the back-to-basics traditional approach or offer a whole new flavourful variation. who moved to the Barrie area about a year ago, dabbles in a number of different mediums to express her creativity. Meacher has been creating as long as she can remember. “It was at the end of my arm. I always did it. It was not a conscious thing,” she said. “As a teenager I did all sorts of things like ceramic sculpture and weaving and, when my boys were about 15, I decided that it was time I became a professional and not just a twiddler.”

She turned a spare bedroom into a studio and focused on the craft. “I tried everything else and I wasn’t comfortable. I didn’t have any stick-to-itiveness,” she said. “I did what I classifed as grown-up mud pies using an inch-and-a-half thick of paint. I had a ball.” After an operation kept her from standing at her easel, Meacher found her true passion – watercolours. “I picked up my son’s drafting pens. Then I added in watercolour and then I dropped the drafting pens,” she said. “Watercolour is my passion. It challenges me.”

In recent months, Meacher has been experimenting with scratch board – a board on which you scrape away the top layer to create an image. “I’ve even added a touch of watercolour to it,” she said. “I’ve just had a couple pieces framed to see what they’ll look like. I’m always challenging myself.” Most of Meacher’s pieces focus on flowers that are native to Canada. “All of my works are botanically correct,” she said. “Summertime is playtime, you go canoeing and walking and take photographs. I never picked anything, but I’d photograph everything and I have a great colour memory.” Meacher’s talents led her to create the logo for the Canadian Wildflower society, a group of which she was a member for 10

years. She has also written and illustrated three children’s books – Emily’s Enchanted Guardians, Emily’s Perils and Poisons, and Emily’s Spirits of the Snow. “There have been times where I have actually sketched a bird and when I’m finished there’s a fairy there. Don’t ask me how they arrive, but they do,” she said. “All my fairy pieces are connected to books I have written.” Meacher, who is dyslexic, tackled the challenge of writing books in memory of her daughter-in-law. “Two days before my daughter-in-law died, she said ‘would you do me a promise and finish that book you started five years ago,’” Meacher said. “I truly believe she sat on my shoulder while I wrote the first one.” Meacher has shown at The Royal Hor-

here’s been a revolution in men’s hair restoration over the last decade. Following years of tinkering with unsightly comb-overs, unwieldy toupees and painful hair transplants that left “doll head” scars, men suffering from male patterned baldness finally shunned the fringe altogether and just shaved their heads. But that look is evolving yet again as scalp tattooing has proven effective in presenting the impression of growing stubble in a closely shaved head. The ground-breaking technique is called Scalp Micro-Pigmentation (SMP) and it’s an advanced form of tattooing that creates the illusion of minute hair follicles. Tiny dots are tattooed into the scalp that seam-

may be reminiscent of the military buzz cut worn decades ago by men and adolescent boys, but today it’s musicians, celebrities, sports figures and talk show hosts who are donning the hairstyle and it isn’t going away any time soon. As long as men will be going bald, the buzz cut will remain in vogue and SMP will be there to sustain the look. During the procedure tiny needles that move at 130 times per second deposit minute injections of pigment into the epidermal layer of the scalp, imitating hair follicles. The specialized micro-pigmentation needles are supplied with unique inks that are less prone to colour change over time and are not penetrated as deeply as other tattoos. The effect is the remarkable recreation of

lessly blend in with any remaining hair to recreate the impression of a shadow of new growth for a full hairline in a buzz cut. And the procedure is catching on like wildfire. Part of the reason for its popularity is the ease and convenience of the permanent hairstyle that can withstand the elements. No degree of wind, water, sweat or active sports participation can unseat this hairline. But the other reason is because it is downright fashionable. Local tattoo artist, Brent Spicer of Tattoo Emission has now brought this technique to Barrie. “As the popularity of shaved heads has grown, so has this new proceedure” claims Spicer. Once the naked scalp was rebranded as a manly and powerful look—the style became so synonymous with cool confidence that even those who were not follicularlychallenged were reaching for razors to follow suit. The new trend of the closely shaved head with just a hint of stubble

t was just an ordinary cornfield – a patch of farmland like so many others sprawling off Rama Road that had seen better days. To Rama First Nation, a fiercely proud, progressive people, it’s where they planted the seeds of hope from which sprang Casino Rama Resort, a life-changing, landscapealtering enterprise that this year celebrates 20 years as one of Canada’s most successful resort casino operations. Back in the early 1990’s, despite the doubts of many, the small community east of Orillia decided to enter the bidding process alongside 13 others to become the host site for the province’s first casino on native land. The province decreed that just one First Nation’s community would win; it seemed like a pipe dream at best. However Rama defied the odds, made the shortlist and, in December of 1994, the province announced Rama had won the jackpot.

Just 19 months later, in July of 1996, Casino Rama Resort opened its doors. “When it opened, it was electrifying,” recalls Ted Williams, a former chief and councillor who was band manager in the years leading up to the opening. “There were 3,500 jobs created, a potential payroll in excess of $100 million … in little old Rama.” Williams, who would go on to become an executive at Casino Rama Resort for five years, vividly recalls the first Saturday night of operation. “I worked until midnight and when I left, the place was just hopping,” he says. “I decided to count cars until I got to the corner in Atherley. It took me six minutes and I counted 240 cars – there was this stream of headlights coming toward Rama. I had to pull off to the side of the road because I was overcome with emotion. It was like that movie (Field of Dreams): ‘Build it and they will come.’ It was overwhelming.”

Mary-Anne Willsey, a Day 1 employee – one of an astounding 374 employees who started in July of 1996 and who continue to work at Casino Rama Resort today – still gets goose bumps when she thinks back to opening day. “When we walked in that door the first time and saw the lights and the sparkle and the drama and the majesty of a casino – on treatied land – it was breathtaking,” she said with a proud smile. “We had employees who were literally in tears. It was spectacular.” Few could have envisioned how that initial box-like building would develop into a world-class destination that would transform the entire region. Today, Casino Rama Resort, celebrating its 20th anniversary, boasts a dynamic gaming floor with over 2,500 slot machines, more than 110 table games and offers a tasty menu of eight restaurants. It is also home to a state-of-the-art

She was operating a downtown Orillia business with her husband and had no inclination to work at Casino Rama Resort when she was offered a job in VIP Services; she initially turned it down. “When I told my mother, she was horrified I’d turned it down. She said ‘It’s your responsibility to the community … you could bridge the two cultures.’” said Willsey, the message resonated with her. “When my brother and I were being raised, pre-casino, pre-modernization, our mother used to tell us that within our lifetime we would be proud to be an Indian. The casino represented, to my mother’s generation, accomplishment and pride in her people. We all

t is not a place purpose-built for tourists, or one remodeled and reimagined from its former self into one that serves as a tourist attraction. Milan is one of the most populated cities in Italy, is home to the country’s stock exchange and is a bustling urban centre. It is at the same time an industrial powerhouse and a living history museum. Milan is a city of new and of old; a home to grand Gothic architecture and arbiter of fashion and design. As I arrive at the ME Il Duca – Melia Hotels recently opened hotel in Milan – I am greeted by two impeccably dressed young men. They work the door of the hotel, but could just as easily have been on their way to a job in a very well dressed law firm, or walking a runway. It’s early morning, but the hotel is bustling in the quiet way hotels do, having just escorted out the last guests from Milan Fashion Week the night before.

It’s a bit too early for my room to be ready, but I am quickly settled in at the hotel’s lobby bar (which becomes a coffee bar in the morning) and am served the first of what will be many of the best cappucinos I have every tasted, over three days in Milan. ME Milan Il Duca occupies the site of the former l’Hotel Duca di Milano, originally designed by renowned late architect Aldo Rossi. Rossi’s studio renovated the site to boast modern interiors, fusing traditional and contemporary Italian design. ME by Meliá is a brand extension of the Meliá hotel group, a handful of hotels geared towards cultured, fashionable guests who are driven by new experiences and opportunities. The ME brand is known for its firstrate concierge service; guests can experience the best of Milan through a dedicated Aura Manager, who is devoted to making each stay unforgettable.

DUOMO DI MILANO No visit to Milan would be complete without some time spent exploring the Duomo di Milano and the surrounding square. If you recognize any landmark in Milan, it will be the Duomo. This is the sparkling, multispired Gothic creation that looks like a wedding cake topper. Construction of this massive cathedral began in 1396. It is the largest and most complex Gothic building in Italy, constructed of pink-veined white marble quarried from Candoglia. Construction continued on the Duomo di Milano for five centuries, and during this time artists, sculptors and achitects of various styles were engaged in the project resulting in a fusion of European Gothic and Lombard tradition. The square around the Duomo is bustling with tourists of course, but also locals going about their day, or stopping at a café. It’s a must stop for photos, and offers a 360-degree look at the heart of Milan.

ARMANI/SILOS Armani/Silos opened in spring of 2015 and is dedicated to the designs of Giorgio Armani over the past 40 years. The museum is located in a renovated building that was constructed in 1950 as a granary, hence the name Silos. The space is a sweeping 4,500 square-metres spread over four floors, and is like 40 years of haute couture runways frozen in time for an up close look. The museum also houses a digital archive, workstations and a vast collection of photos, sketches, technical drawings and illustrations from Armani’s lifetime of work.

HANGARBICOCCA This contemporary art museum is housed in a former Pirelli factory. The massive space is now home to contemporary art, and is located in an area of Milan which used to be dominated by the Pirelli factories. The prominent feature of HangarBicocca is the permanent installation The Seven Heavenly Palaces by German artist Anselm Kiefer, made specifically for the site. It consists of seven towers made of reinforced concrete, each weighing 90 tonnes and varying in height between 14 and 18 metres. In addition to the permanent installations, the space also regularly hosts temporary exhibitions.

Housed in a complex that for many years functioned as a distillery, it is now a collection of modern spaces displaying modern art. The Fondazione Prada was created in 1993 by Miuccia Prada – the youngest granddaughter of Mario Prada and heading the family-owned luxury goods manufacturer since 1978 – and her husband Patrizio Bertelli, as a platform to analyse present times through the staging of contemporary art exhibitions as well as architecture, cinema and philosophy projects. The complex in Milan is an addition to the Fondazione’s exhibition space in Venice, the Ca’ Corner della Regina, an historic palazzo on the Grand Canal and hosting exhibitions since 2011. The entrance building houses a very special attraction: a bar where film director Wes Anderson has recreated the typical mood of old Milan cafés.

W

hen you are invited to a dinner party hosted by Downtown Barrie and some of the city’s finest chefs, you have to go – particularly when the location is the bus terminal. Not only was this by far the most unique setting for Curb Appeal, it turned out to be a fabulous evening. On Friday, June 17, more than 150 people gathered outside at the centre of the terminal to enjoy gourmet appetizers from Grilled Cheese Eatery & Lazy Tulip featuring tomato soup and grilled applewood smoked cheese. Ryan Traversy from Peller Estates paired wine with every course and RedLine Brewhouse made sure everyone had their choice of cold beer. The first course included a mushroom cream and escargot in a pastry provided by Painters Hall. Marco from The North served a gorgeous seared tuna, and Anna from Kohyang House followed up with a tasty potato noodle dish. Randy and his team at The Farmhouse did not disappoint with smoked pork ribs, and Brandon from Kenzington Burger Bar showed us they are not just amazing at creating burgers, they also put together a decadent dessert featuring a mascarpone cream cannoli and a chocolate mouse tart to please every palate. Kim and I had the pleasure of joining Katherine and Brad, Jan and Greg, Ronda and Adam for a night to remember and lots of laughs. Kempenfelt Bay School Colours of Spring Gala Kempenfelt Bay School recently held it’s annual Colours of Spring Gala at Liberty North. The evening was a celebration of the school’s recent finalized purchase of property on the campus of the Town of Innsifil, at Yonge St. and Innisfil Beach Road. Construction is now beginning on a 24,000 square foot facility that will be open for classes in September, 2017. While the opening will see KBS continue with the JK-Grade 8 range of grades currently in the school, the intent will be to add a new high school grade each successive year to provide a full JK-Grade 12 independent school option for Simcoe County. The evening was, indeed, a wonderful celebration with great food, exciting silent and live auction items, and dancing to the incredible band, Goldmembers.
