Rocky Road Brownie Recipe by Pam Wattenbarger

T

his easy Rocky Road Brownie recipe is the perfect dessert for those lazy summer days. Because it begins with a boxed mix, there’s hardly any preparation time. Kids can help make the dessert by sprinkling the marshmallows, pecans, and chocolate chips over the brownies. If you need a gluten-free version of the recipe, simply substitute a gluten-free brownie mix.

Ingredients • 1 box (18.25 ounces) brownie mix • 2 eggs • 2/3 cup vegetable oil • 1/4 cup water • 3 cups miniature marshmallows • 1 cup toasted pecans, chopped • 1 1/2 cups chocolate chips

Instructions 1. Preheat the oven to 350°F. 2. In a large bowl, mix together brownie mix, eggs, vegetable oil, and water until blended. 3. Spray a 9-by-9-inch baking dish with cooking spray. Pour brownie mix into the dish. 4. Bake brownies for 18-22 minutes. Remove from oven. 5. Immediately sprinkle marshmallows onto brownies. Top with pecans and chocolate chips.
