A sweet year for No. 12 Establishing a new career after a life-changing health diagnosis has been a sweet move for Kirton in Lindsey chocolatier Paul North, as he explains to Caroline Bingham. Surveyor to sweet maker was not on Paul’s mind ten years ago, when he was diagnosed with Primary Progressive MS. “It was a massive blow to the whole family,” said Paul. “My wife Lynn and daughter Stacey were working in property letting and management and I travelled long distances as a surveyor for a national home improvement company. could no longer carry out my job. The next year was one of adjustment and coming to terms with my illness.” Paul enrolled at Lincoln College, achieving AAT qualifications as an accounts technician, but while this gave him a focus it was not a career which appealed. Then in 2013, while at a summer fair, he spotted someone selling old-fashioned sweets to a queue of customers.

“I immediately thought, ‘I could do that’ and within a few weeks I was selling confection and gifts at local events. It was hard work for all of us but I wasn’t deterred and found new opportunities selling to residential homes, taking inspiration from the nostalgic appeal of old-fashioned sweets. It helped me find purpose again and my health and mobility benefitted.” A birthday gift to Paul from his family of GOOD TASTE LINCOLNSHIRE

a chocolate making course was the next pivotal experience. “I was hooked! I started to make chocolate bars and truffles, selling them alongside my other sweets and also into a couple of local shops. It was the great feedback we received about these new products which kick-started the idea to open a retail shop but the right location was the problem.” Lynn had wanted a shop for many years but ideally they wanted to find premises to purchase outright, to avoid renting, which would combine both a business and home. Their search began in 2016 but it wasn’t until summer 2017 that Lynn found No. 12, High Street, Kirton in Lindsey. The 200-year-old property had been three homes at one time and a shop for many years, so had the kerbside frontage. It is in an excellent location and offers goodsized living accommodation. It had everything the family

was looking for but was quite run down. The Norths moved in on 17th December 2017 and with the help of family, friends and some excellent local tradespeople the now bright and welcoming shop opened in time for Easter in March 2018. “Word quickly spread in the town about the business and people could see the transformation taking place. The shop is directly opposite the Co-op and next to the chemist, so there is a high footfall and plenty of parking close by. We have kept a traditional feel to the colourways and decor of the shop, which we feel fits with the heritage of the location. On the first day we opened a lady bought us a bouquet of flowers to congratulate us on bringing the property back into use. We have been so welcomed and supported in Kirton in Lindsey which has meant so much to us.” Although the shop also

stocks cards and wrapping paper, hand crafted gifts and sweets ideal for birthdays, christenings and other

special occasions, it is for his range of luxury truffles and Belgian chocolate bars that Paul is becoming best known. Indeed, last year his customers nominated No. 12 for the Lincolnshire Life Taste of Excellence Confectioner of the Year Award, for which he was a finalist. “One of the great pleasures I take from the job is the research I undertake and seeing customers enjoy a luxury product at an affordable price. I use Callebaut as my main chocolate supplier; it has a superior quality and flavour I always want to give by using a traditional, high quality couverture. “I make all the chocolates on the premises and am almost entirely selftaught. belief in my own palate. Luckily our customers seem to share my taste and I trial different ideas on any willing taste testers in the shop. Our product is all about quality and customers know these are genuinely handmade on the premises, with outstanding flavours.” The truffles are made in small batches using the highest quality ingredients. Amongst the best sellers are Pin Gin and Tonic Truffles using the artisan made spirit from Louth and Fever Tree tonic and fresh limes followed by Kirsch Cherry cups, containing a whole, spirit soused fruit and white ganache. It was these and other distinctly original flavour combinations which impressed the ‘Taste of Excellence’ judges. “There are trends around healthy chocolate and new

flavours such as matcha green tea and other botanical influences. I use fruit purees from lemons and

chocolate is made from the pink cocoa pods and has a unique depth of flavour and fruit.” Going forward No. 12 are supplying boxes of truffles to a small group of local shops and online suppliers but the Kirton in Lindsey shop is the hub of the business. Paul is always keen to explore new aspects of his sweet passion and is kept busy hand-making more truffles on the three days a week he is not in the shop. It has certainly been an exciting first year for Paul, Lynn and Stacey and their No. 12 enterprise. “We have been overwhelmed by the level of support from the people of Kirton in Lindsey and surrounding area who have made us feel so welcome. passion fruit for example and they give exceptional contrasts to the smooth luxury of the chocolate.” Sold loose or in boxes from the shop and online, demand for Paul and Lynn’s truffles has been high. Their first Easter in 2018, Christmas and Valentine’s Day have been hectic to keep up with orders. This Easter, they will be well prepared, with a range of hand dipped, decorated eggs; mottled with cocoa butter swirls or with a new airbrush effect which gives a velvet texture to the surface. “All our chocolates are gluten free, there are also diary free products and ones suitable for diabetics. We can personalise products to order with names and for weddings. I am very excited about a new pink ‘ruby’ chocolate which Callebaut have developed. We produced a ruby heart range for Valentine’s Day which customers loved. This

RECIPES – EASTER DELIGHTS

Baked leg of lamb with garlic, baharat, lemon and bay leaf hasselback potatoes INGREDIENTS: 1 leg of lamb (approx. 2kg in weight) 8 cloves garlic A whole bulb of garlic, cut in half horizontally 1 tbsp Baharat 2 tsp ground cumin 2 tsp smoked paprika Sea salt Freshly ground black pepper Olive oil 2 lemons, halved A few sprigs of fresh thyme 1kg bag of Charlotte potatoes Handful of bay leaves 3 red onions, peeled and cut into wedges Preheat oven to 180°C/355°F/Gas Mark 4 METHOD: Put the leg of lamb into a deep roasting tin. Peel and cut the garlic cloves in half and stud the lamb generously all over with the garlic. Put the two garlic bulb halves under the lamb leg in the roasting tin. In a small mixing bowl mix together the Baharat, cumin, smoked paprika, some salt and pepper and add enough olive oil to mix to a paste. Rub the lamb with the paste and squeeze the juice of both lemons over the leg before adding the lemon halves to the tin. Scatter the

thyme over the lamb. Add a little water to the roasting tin and put in the oven for 1 ½ hours (for medium rare). Keep topping up with a little water during cooking to stop the spices from burning. Holding the potatoes lengthways, cut a thin slice off one side to make a flat base, turn the potato over onto its base and cut vertical slits ¾ of the way down the potato, making sure not to cut all the way through. Toss the potatoes in a little olive oil and sea salt and then into each potato, insert three bay leaves at regular intervals into the slits. An hour before the lamb is due to come out of the oven, add the potatoes to the roasting tin, basting with the juices. Then, ½ an hour before the lamb is due to come out of the oven, add the onion wedges to the roasting tin, again basting with the juices. At this point, check that the top of the lamb is not burning and, if necessary, cover the lamb with some foil for the remaining cooking time. Remove the roasting tin from the oven, allow the lamb to sit for 10 minutes or so before serving.

Rhubarb and soured cream cake with ginger syrup INGREDIENTS: 250g unsalted butter 250g light brown soft sugar 284ml soured cream 2 Fairburn’s free range mixed weight eggs 3 tsp ground ginger 300g plain flour 400g fresh rhubarb, roughly chopped 100g caster sugar 100ml cold water A few drops of rose water (optional) Rose petals to decorate Preheat oven to 180°C/355°F/Gas Mark 4 METHOD: Grease a 23cm round springform cake tin and line the base with baking parchment. Cream the butter and brown sugar together, then beat in a little of the soured cream until the mixture is smooth. Beat in the remaining soured cream, eggs and 2 teaspoons of the ginger. Gently fold in the

flour and spoon the mixture into the prepared cake tin, smoothing the top. Scatter the rhubarb over. Bake for 1½ hours or until the cake feels firm to the touch, covering the top with foil if it begins to brown too much. Leave the cake to cool in the tin for 10 minutes. Meanwhile, in a small pan, gently heat the caster sugar with the cold water, the remaining teaspoon of ginger and rose water (if using) stirring until the sugar has dissolved. Increase the heat and boil for 5 minutes or so, swirling occasionally, until the syrup is golden brown. Remove the cake from the tin, peel off the paper and transfer to a serving dish. Spoon the hot syrup over the cake and decorate with rose petals. Cut into wedges to serve. The cake will keep for 2-3 days in an airtight container.

Aubergine, carrot, asparagus and feta salad INGREDIENTS: Sea salt A pinch of caster sugar 500g bag of Chantenay carrots, halved lengthways 1 large aubergine Olive oil 125g pack of trimmed asparagus A handful of fresh mint leaves, roughly chopped A handful of fresh coriander, roughly chopped Freshly ground black pepper Juice of ½ lemon 200g block Feta cheese, roughly chopped 2 tbsp pine nuts, toasted

over a medium heat, when hot add the aubergine slices. Cook until nicely charred, turning carefully from time to time. Tip into a large bowl. Toss the asparagus spears in a little olive oil and, again, cook on the griddle pan until slightly charred and add the asparagus to the bowl of cooked aubergine slices. Drain the carrots and toss in a little olive oil before cooking on the griddle pan until nicely coloured and then add the carrots to the aubergine and asparagus. Allow to cool slightly. Brackenborough Hall Coach House – Victorian Kitchen Garden Lucky guests at Brackenborough Hall Coach House self-catering are able to explore the Victorian Kitchen Garden at Brackenborough Hall, near Louth, and enjoy free seasonal produce. Paul and Flora Bennett are pleased to share their historic garden and to tell those interested all about the fruit, vegetables and flowers which are grown there. The Bennett family have owned the farm since 1907 and Paul is the third generation to farm the now 1,100 acre mostly arable farm. The garden was created by James Robson, a tenant who bought the farm freehold and undertook many improvements to the grounds and buildings (and later went bust). Originally the vegetable garden would have fed the family and the household staff, and in times of surplus probably all the families at Brackenborough Farm as well. With the help of a gardener/handyman, Norman, Paul and Flora have enabled the garden to continue to thrive, now with fresh flowers for the Coach House guests as well as vegetables and fruit for family and guests. Paul’s mother Eleanor would preserve the produce for the winter by bottling, jamming, pickling, salting and later freezing. Now Flora continues the tradition by making jam, bottling, freezing and then feeding the extensive Bennett/Lindsay family. Flora said: “The vegetable garden is my

favourite place! I love to potter about there on a mild evening, cutting flowers for our guests and picking whatever is in season, then planning what I am going to cook.” Strawberries are the family favourite! Here is the Bennett recipe for Strawberry Gateau. STRAWBERRY GATEAU INGREDIENTS: 8 oz self-raising flour 8 oz granulated or caster sugar 8 oz soft margarine 4 eggs (8 oz) 2 heaped teaspoonfuls of baking powder Homemade strawberry jam Double cream, whipped Fresh strawberries METHOD: Beat flour, baking powder, sugar, margarine and eggs together well until creamy and smooth. Split into two lined baking tins. If you are using an AGA type cooker, bake in the hot oven with cooling plate in place for about 40 minutes. Remove from oven when firm and just starting to come away from the edge of the tin. Loosen from the tin immediately but leave in the tin to cool for 10 minutes before removing. When cold, sandwich the two cakes together by covering bottom layer with jam, then cream, then fresh strawberries (sliced) and a little more cream. Place the second cake on top then cover the top with cream and decorate with whole strawberries. Enjoy!

Lincolnshire is a wonderful and diverse place to explore by bike, and the Lincolnshire Cycle England tours showcase many different aspects of this enticing county, steeped in culture and hidden gems. Find yourself meandering through our stunning designated Area of Outstanding Natural Beauty, and the landscape will take your breath away. Lincolnshire is renowned for its vistas of big skies and the Wolds tour certainly lives up to this reputation. Take the roads along the high lime stone ridges and you’ll be rewarded with views out to the coastline in one direction, and the beautiful rolling countryside in the other. Each day delivers different experiences – and from views as far as the eye can see, you’ll often also find yourself amongst the web of quiet

country lanes, riding through historic medieval villages past abbey and castle ruins, centuries old farmsteads and some of the oldest churches in Britain. More recent developments have also played their part in making this area so suitable for stress-free riding. Canalside cycleways and towpaths are the perfect hillfree and traffic-free arteries to join up the plethora of charming tea rooms, bakeries, old inns and farm shops that make this area such a delight to visit. One of the joys of experiencing the county by bike is exploring the historic market towns. There’s Louth, the ‘finest little market town in Britain’ and Horncastle famed for its antiques shops. Charming Alford with its fivesailed windmill hosts regular arts and craft markets. On

the western edge of the Wolds you can find the Roman town of Caistor with its lovely listed buildings and Market Rasen, home of the only racecourse in Lincolnshire. Wainfleet’s Batemans has been voted top over 14 other pub businesses in new research that gives licensees the chance to have their say on which company is the best. The Licensee Index, a comprehensive survey conducted by independent research specialists KAM Media, spoke to more than 1,500 publicans asking for their opinions on a variety of services. The licensees were all running a pub for one of 14 key operators, from very large companies to small independent, family businesses. Batemans out-ranked the competition overall, scoring the highest marks in areas within recruitment, training, ordering, marketing and communications – and most importantly, scored highly when it came to fairness and clarity of contracts/ agreements. Managing director Stuart Bateman said: “As a family business with a great heritage, Batemans believes in exceptional service and

works hard to invest and create outstanding relationships with our business partners, the people who run our pubs. “With Batemans achieving the highest overall combined scores in this survey, it is proof that what we are doing is right. We wholeheartedly believe in the Batemans brand and in our partnerships with our business owners, who are doing excellent work in our pubs day in, day out, creating a first class experience for the customers.” Publicans in the survey described Batemans as being ‘outstanding’ with recruitment, in terms of being upfront and transparent with regards to providing the information people needed when considering whether or not to take on a pub. When it came to the reasons for taking a Batemans pub, licensees cited lifestyle choice (47%) alongside wanting to be at the centre of the community (33%). They also told researchers that the Batemans name was a key reason for choosing to go into business partnership with this muchloved brewer and owner of 50

pubs in Lincolnshire, Yorkshire, Derbyshire and Norfolk. Mal and Diane Gray have run the Butcher & Beast, just four miles outside Lincoln’s city centre, for the past 10 years. It’s the couple’s third pub with Batemans over a 20-year relationship with the company. Mal Gray explains: “Batemans really cares. It’s small enough that if I ever need to I can phone and talk direct to Stuart [the managing director] or Jaclyn Bateman [the marketing director]. They are very approachable. Having worked for larger pub operators in the past, you more often than not feel like just a number, but with Batemans you are made to feel like a member of the family.” He continued: “Myself, Diane and our staff have all attended Batemans’ exceptional training courses and the overall business support is excellent. Welcome to the Lincolnshire Show The Lincolnshire Show is one of the most popular UK county shows, offering a huge variety of spectacular entertainment, food, shopping, livestock and equine classes, and a whole host of other things to see and do. Now in its 135th year and organised by the Lincolnshire Agricultural Society, the Lincolnshire Show has grown to become one of the county’s flagship annual events. Regularly attracting over 60,000 visitors across two days, this year’s event held on 19th and 20th June promises another action-packed line-up with something for everyone to enjoy.

This year is an especially important year for the Show, as it celebrates the 150th year of the Lincolnshire Agricultural Society. Malted milk rice pudding with lotus biscuits and pumpkin seeds This is a combination of my favourite flavours and memories. I was a ‘weird’ child growing up I didn’t like the expected things, I preferred apple juice to orange, Granny Smiths to red apples, semolina with sugar for pudding, I didn’t enjoy hot chocolate so on and so forth. I did however love Horlicks and rice pudding along with the caramel slightly bitter biscuits my mum would get with her tea at the shops. This is a creation based on those memories. Makes: 6 INGREDIENTS 500g pudding rice 1kg milk 1kg whipping cream 200g Horlicks (more or less depending on preference, mine is more) 250g sugar 1 dried empty vanilla pod 2 peels of orange zest Finishing: 12 lotus biscuits crushed

50g pumpkin seeds Microplane of hazelnut EQUIPMENT Pan Spoon METHOD Place all of the ingredients in a pan and cover with tin foil. Bake in the oven at 180° for 1-1.5 hours, the rice should be soft by the time you finish. Remove from the oven and serve. If the mix is slightly dry add equal parts of milk and cream until desired texture is achieved. You can mix the finishing ingredients in or sprinkle them on top, I prefer on top so I can get that crunch when eating it. METHOD Portion the loin into 6 pieces of equal size. In a stock pan bring the wine and berries to the boil and fast reduce down until a thick syrup is formed. Add the beef stock and reduce until the desired sauce consistency is formed. In a pot bring salted water to the boil, blanch the baby leeks for 2 minutes. Remove and plunge into an ice bath, once cool remove and pat dry. In a frying pan add some butter and bring to the bubble, add the leeks and cook until golden and crisp. Remove from the pan, add the loins and thyme, colour on both sides, add more butter and spoon over the bubbling mix. Season with salt and then remove from the pan, allow to rest for 2 minutes then portion and serve. Seafood sales on the increase February 2019 saw a massive 25% increase in sales for Moorcroft Seafoods compared to last year. “The exceptional weather and Valentine’s Day falling on a Thursday certainly helped, meaning customers were busy all week,” said Andrew Moorcroft, founder of Moorcroft Seafoods. “[We] had to make a number of extra deliveries over weekends because our customers [were] simply running out of fish. “We’ve seen an increase in demand for locally sourced products such as crab and lobster as well as Alfred

Enderby’s smoked product range. I think the people of Lincolnshire are appreciating more how fortunate we are to have access to arguably the best and freshest seafood in the country.” Whilst Grimsby lost its fishing fleet in the 1970s due to the Cod War, it is still the seafood hub for the country. Uncle Henry’s sticky sausages and onion gravy INGREDIENTS: 6 Uncle Henry’s sausages 1 batch of sticky onions (see below) 1 tbsp plain flour 1 sprig thyme 400ml beef stock Worcestershire sauce Sticky Onions: 50g butter 12 medium onions 1 tbsp sugar

METHOD: Fry the sausages for 15 min or until browned, then remove from the pan and keep warm. Heat the onions in the same pan then add flour, stirring for 1 min. Add thyme, then gradually add stock. Bring to the boil then simmer for 5 min until smooth. Add Worcestershire sauce, season and serve with sausages.

For the onions: Makes 600g, which is 3 batches. Prep time 5 min, cook time 30 min. Melt the butter in a large, deep frying pan and stir through the onions. Cover with a lid and cook gently for about 10 min until softened. Remove lid, add sugar, then cook for 15-20 min, stirring, until all of the liquid has evaporated and onions have turned golden. (Will keep in the fridge for up

to 5 days, or freeze for up to 1 month.) When onions are fried gently, they release natural sugars. These sugars caramelise, giving sticky softened onions their characteristic sweet flavour. Adding a teaspoon of sugar speeds up this process. If the onions fry too quickly or over a high heat, they may start to burn – a splash of water can help to prevent this.

Harrisons Restaurant ultimate shepherd's pie of the rosemary and garlic. Rub on the lamb and place into an ovenproof dish with an inch of INGREDIENTS: water on the base. Cover tight 1-1.5kg lamb shoulder (lamb with a lid or with foil and roast belly will work equally well) in the oven for 2 ½–3 hours at 2 banana shallots (echalion) 160°C. 2 carrots With only 20 minutes 2 sticks of celery remaining to cook the lamb, 1 bunch of rosemary 2 cloves of garlic (puree is fine put the potatoes on to boil ready for mashing later. Once to use also) the potatoes are cooked, run 1 tsp mixed 5 spice under a hot running tap for 1 glass red wine 2 minutes to wash the starch 1kg potatoes for mashing away. Mash and add a good 200g soft goats’ cheese knob of butter and a splash of milk to help pipe the mash. METHOD: Leave the potato to cool Start by coating the lamb. Finely chop 1 clove of the garlic slightly to one side and remove and add to a pestle and mortar the lamb from the oven, turn the oven up to 200°C. Leave with some good quality oil, the lamb to rest with the lid/ cracked black pepper, sea salt foil on for 10-15 min. Dice and picked rosemary. Smash together to release the flavours the shallot and finely chop

the celery. Sauté in a large saucepan on a medium heat to soften the vegetables. Chop the other clove of garlic finely, add to the saucepan and grate both carrots in. Continue to cook, without browning, for a couple of minutes, add a glass of red wine and reduce by half. Whilst it's reducing, strip the lamb. Either using two forks or your fingers, pull the lamb into small strips, removing any lumps of unrendered fat and any bones. Add the stripped lamb to the saucepan and stir well to coat the meat with the sautéed vegetables. Add a good couple of glugs of Lea & Perrins. Pour the cooking juices from the lamb into a jug and allow it to sit for a couple of minutes. The fat will come to the top

and separate from the jus. It’s up to you how much of this fat goes into the gravy. It's full of flavour but too much could make the gravy greasy, I’d pour half away and keep the remainder. Add the jus and remaining fat to the lamb and heat together. Thicken the gravy (use either cornflower or a non-flavoured gravy powder) and spoon the meat and vegetables into a heatproof dish. Keep some gravy for serving. Pipe the mashed potato on top of the meat. Crumble over the goats’ cheese evenly distributing over the top. Bake in the oven for 15-20 min until the cheese is starting to colour. Serve with some spiced root vegetables and the remainder of the gravy.

British asparagus and lamb chop tray bake The perfect alternative to a Sunday roast for springtime. With just 5 ingredients, this requires little preparation time and will seriously deliver on flavour.

Serves: 2 INGREDIENTS: 250g white potatoes 4 lamb chops A few sprigs of rosemary 250g British asparagus 260g frozen peas METHOD Preheat the oven to 200°C. Place a medium pan of water on to boil while you chop the potatoes into 3-4cm chunks. Add the

potatoes to the boiling water and cook for 10 min, then drain. Place a large frying pan on the heat and add a drizzle of olive oil. Once the oil is hot, add the lamb chops and sear on all sides until browned. Place the potatoes into a medium-sized oven tray and nestle the lamb chops in amongst them. Add the rosemary, asparagus spears and peas and roast in the oven for 10 min until the asparagus is cooked and the potatoes are crispy. Serve immediately.

Claythorpe all set for an eventful year 2018 was a great year for events at Claythorpe Watermill and 2019 is shaping up to be even bigger. June sees the return of the unique and highly praised pop-up pizza restaurant, serving wonderful wood-fired pizzas by the riverside. Crops grown to ‘pink’ perfection Jones Food Company, based in Scunthorpe has made headlines as one of the largest indoor, vertical farms in the world producing crops under hermetically controlled conditions. Directors James Lloyd-Jones (CEO), Dr Paul Challinor (CTO) and Gary Thorneycroft (CFO) bought the former cold storage warehouse in March 2018 after searching the country for a building which would offer the right location, level of security and freehold they required. It only took until November last year for the company to harvest their first income generating crop. Gary explained that James had the idea to set up the company. Through Gary’s son, a rugby playing friend of James, they met and Paul is the scientist internationally known for his expertise in agronomy and crop production. “It took us eighteen months to formulate the business plan, identify this location on Foxhills Industrial Estate and secure funds from the Enterprise Initiative Scheme. vertical farm in the world with 5,120 sq m of growing space. We have installed five rows, each of which has 17 trays stacked to a height of 12 metres.” The building was bought as an empty box and the investment has transformed the interior into a farm which uses no soil, rainwater or daylight but instead grows from seed placed on root encouraging matting, fed with nutrient rich water under three spectrum, red/blue/white ‘pink’ lighting. Only six people work in the farm with most of the processes – seeding, watering and light phasing – running automatically. ‘Frank’ the robot will be the next innovation. Frank will operate within the growing area moving the heavy trays around the facility; a job currently achieved with a forklift. Hydroponic techniques are already

used extensively by tomato growers but this high care facility is immune to variations in weather conditions and can grow up to fifteen crops a year. “We are producing herbs and leaves for food processors and sandwich makers. Crops such as basil, parsley and coriander are fast growing and a short height. On average crops take four to five weeks from seeding to harvesting. Fans create a constant breeze to encourage root and stem strength and the mature leaves have depth of flavour and colour without any tainting by pests, disease or soil.” Jones Food Company are the largest customer of GE LED agricultural lighting at present and run the plant from solar panels. The company would like in

the future to identify other UK locations in which to invest and could develop a range of dried herbs to utilise any over production. Gary added: “We have had interest from across the globe because this type of agronomy can reduce air miles and the cost of importing fresh produce. We have turned our crops’ day upside down – it is less expensive to run electricity at night than during the day – and to a degree this system turns traditional agronomy on its head. It will be an important technology though to the future of farming.”

Celebrating local food and drink at this year’s Revesby Country Fair Revesby Country Fair is back for 2019 with a celebration of Lincolnshire food and drink – and organisers are calling on local producers to get involved. The fair returns to the glorious parkland setting of the Revesby Estate, former home of the famous botanist Sir Joseph Banks, on Sunday 4th August. This year’s show will be championing the best local fare, with the award-winning Fairburns Eggs, Lincolnshire Brewing Company and Bails Barista already confirmed to be there. Brewing success in Lincolnshire With many pubs having closed their doors for the last time, it is gratifying to know that the microbrewery is alive and doing well – thriving, in fact. Over 2,000 of these small businesses can be found throughout the country, one of which is the Oldershaw Brewery at Barkston Heath, near Grantham. Words & Photographs: Mike Webster Oldershaw Beers was a business started by Gary and Diane Oldershaw in 1996 and it is now run by Kathy Britton, the managing partner and her husband Tim, who bought the business in 2010. It remains a family business and it moved to its present location seven years ago. With steady but consistent growth, the brewery currently produces around 42,000 gallons of beer a year which, translated into pub talk,

equates to well over a quarter of a million pints! Production here is quite incredible given the very small number of operational staff employed. Since the outset, more than 50 different beers have been produced, all by means of the most traditional of brewing methods so well proven over many centuries. Good beer cannot be rushed and by the use of open-top fermenters, mashing in by hand and the

racking of each cask also by hand, the final products are conceivably the finest crafted beers that can be made. This is not just a statement by the owners but proven by the numerous awards bestowed on this brewery by CAMRA and SIBA. Whilst beer is made from just four ingredients – water, malted grain, hops and yeast – great care and attention is given to each. Water, sourced locally, is constantly

monitored for pH and acidity levels to ensure consistency. The hops are supplied from various sources, depending on the flavours and types of beer being brewed. Whilst traditional English hops are used much of the time, other exotic varieties are used from as far afield as New Zealand and America. malts is then used to created the distinctive tastes and flavours. Towards the end of the brewing process, ‘finings’ are added, the purpose of which is to help the yeast to settle to the bottom and so leaving the beer with a clear and sparkling finish. With three fermenting tanks, and three brews per week each producing 324 gallons per brew, this nine barrel plant offers a large range of beers, with twelve of these being on a regular basis. Lighter types of lager style are produced along with the more ‘hoppy’ golden and darker ales with a range of different stouts too. Frequently ‘one-off’ beers are brewed and seasonal varieties appear on a regular basis each year. The bulk of beer production here is sold in casks to pubs, restaurants and hotels but casks both large and small are also in demand for private parties, fairs, celebrations and other social events. Bottled beers always form a sought after purchase and these are supplied to many outlets for craft beers and specialised stores as well as the brewery shop. It is the stronger beers that are bottled,

mainly due to the fact that real beer has live yeast in it and consequently it cannot be pasteurised. Essentially, this means that it must be above 4.0% ABV in order to keep well. Special events brews have been produced frequently including for the RAF centenary, royal weddings and sporting events – one such being the recent ‘Chip and Run’, launched for the Six Nations Championship. There are always seasonal specialities which include brews for spring, summer, spooky beers for Hallowe’en and festive ones for

Christmas. Core varieties of bottled beers include Heavenly Blonde, Newton’s Drop, American Hopquad IPA and an interesting speciality called St Pancras which is brewed specially for this iconic building in London. The Renaissance Hotel at St Pancras is renowned for its standard of hospitality and with this traditionally hand crafted golden lager style beer, specially bottled for the Booking Office Bar and Restaurant, it provides exactly what the customers have now come to expect. Boston College hosts young bakers for its third annual Bake Off competition Following on from two highly successful years, Boston College has once again invited students from local secondary schools to highlight their baking skills and creativity in the kitchen with the Boston College Bake Off. Students from Years 9, 10 and 11 were given the opportunity to enter the competition to design cakes and pastries with the chance of creating their very own Showstopper in the grand finale. As in previous years the College found itself with the unenviable task of having to choose finalists from a huge number of high-quality entries, with students initially submitting a paper entry detailing their very own show stopping design.

Finalists this year are representing William Lovell Academy, St George’s Academy, Thomas Middlecott Academy, Haven High Academy and Boston High School. Having been shortlisted, the top 16 entries were invited to a ‘Boston College Masterclass’ at the College in February. This masterclass involved a variety of technical challenges with an ‘Afternoon Tea’ theme which allowed the judges to select the final eight who will go on to create the Showstopper they detailed at the beginning of the competition in the College’s industry equipped bakery. As well as the winner taking home the coveted ‘Star Baker’ trophy and a bakery hamper worth

£100, a £200 voucher from the leading catering and hospitality supplier Russums, will be awarded to the winning baker’s school.

Apprentices cooking up a storm at Lincolnshire restaurant Three would-be chefs have shown their commitment and passion has paid off, after gaining apprenticeships at an award-winning restaurant. And the hope is that the trio will also secure permanent employment when their training at the Hope and Anchor, South Ferriby, is complete. The highly acclaimed restaurant with rooms has been singled out for its superb cuisine created by head chef and owner, Slawomir Mikolajczyk, who trained with some of the biggest names in the world of cookery. And now he is giving an opportunity to the next generation of would-be chefs, who are gaining valuable experience and training. Sixteen-year-old Demeetri Nikolaidis joined the team four months ago, leaving home to pursue a career in food.

“My family has fish and chip shops so I’ve always been involved in food and came to the Hope and Anchor on work experience,” he said. “I really enjoyed it so when I heard they were taking on another apprentice I asked if it could be me.” Even leaving home at a young age to live in a staff house wasn’t a problem, with Demeetri determined to secure his future. “It’s a fantastic place to work and I’ve learned so much,” he said. Demeetri has joined fellow apprentices, Tom ‘TJ’ Scrivener (20) and 17-year-old Connor Barley, who are also training at the Hope and Anchor.

Tom originally planned to go to university to study film but decided instead to follow his love of food. “I am much better at doing something really practical, so this is perfect for me and I absolutely love being a chef and learning new things,” he said. “It’s been an amazing opportunity.” His words are echoed by Connor, who has been at the Hope and Anchor for eight months, initially starting as a pot washer. “I loved watching everything that was going on in the kitchen so when the chance came for an apprenticeship, I jumped at it,” said Connor, who currently works on the

garnish section. “I’ve had the opportunity to do a little bit of everything and it’s confirmed that this really is the career for me.” Slawomir believes it is important to nurture the next generation of talent. “The industry has a real shortage of chefs so it’s vital that we do what we can to encourage young people into the industry,” he said. “We’re very proud of everything they’ve achieved in a relatively short space of time and we’re delighted they are part of our team.” For further information about The Hope and Anchor visit www. thehopeandanchorpub.co.uk.

200 Degrees Coffee opens new coffee shop in Lincoln

Speciality coffee roaster 200 Degrees has opened its coffee shop on Sincil Street in Lincoln, bringing its signature fresh food menu and hand roasted coffee from its roast house in Nottingham. Complete with a courtyard garden, and purpose-built barista school, the new shop will serve 200 Degrees coffee, with an imaginative selection of salads, soups, sandwiches, cakes and pastries prepared daily on the premises. There will be plenty of vegan and gluten free options and everything is available to eat in or takeaway.

The Lincoln venue is the company’s eighth coffee shop to open since 2014 and the fifth to feature bespoke barista training, including new courses and tasting events for a range of experience levels – from enthusiastic beginners, all the way through to budding baristas and established professionals. The school also features a sweeping mezzanine floor with views across the entire shop. Coffee lovers can also purchase freshly roasted beans in store and online, and 200 Degrees now supplies coffee to more than 100 wholesale

customers across the UK, as well as providing bespoke ‘beans to machines’ solutions for numerous offices, restaurants, cafés, hotels, conference centres and shops. In the lead-up to the opening, 200 Degrees set up home in a converted horsebox and hosted successful popup events, offering passersby the only thing better than fresh coffee: free fresh coffee. Calling local artisan food producers and makers Organisers of the monthly Belvoir Makers’ Market held in the shadow of the ancestral home of the Duke and Duchess of Rutland are searching for the best local artisan producers and makers as it looks to expand. Trading at Belvoir is not a new idea. The Duke of Rutland’s ancestors set up a market and a midsummer fair in the Middle Ages and now the location has been restored to its vendoring roots with the opening of the £3m artisan shopping village last year. The Engine Yard will see the hustle and bustle of market day returning with the Belvoir Makers’ Market taking place on the third Sunday of every month throughout 2019. Launched last autumn with a handpicked selection of artisan food producers, the monthly market will embrace the best of local food and drink producers, artisans, handcrafters as well as street food vendors and entertainers. With the Engine Yard already proving popular with the local community, walkers and cyclists since it opened

in September last year, the monthly market looks set to grow the offer for visitors. Reliably delicious elderflower recipes from Belvoir Fruit Farms In these times of fake news and political uncertainty isn’t it reassuring to know that nature just carries on regardless; the day turns to night, the sun rises to greet a brand-new day and the seasons come and go. For generations, the first sighting of the frothy white elderflower exploding in the hedgerow has been the harbinger of summer, a familiar sign that warmer days are returning. Gin and tonic drizzle cake This super-light sponge is drizzled with Elderflower Cordial and gin which makes it moist and taste quite special! Of course, if you're baking it for the family you can omit the gin. Serves: 12 INGREDIENTS 225g soft margarine or butter plus extra for greasing 225g self-raising flour, plus extra for dusting 50g plain flour 225g golden caster sugar 4 large eggs Zest of 1 lemon For the drizzle: 6 tbsp Belvoir Elderflower Cordial 6 tbsp gin

Elderflower sorbet In France there’s a cheeky dessert called a Colonel, which is lemon sorbet drenched in vodka – here’s our English twist on it! Delicate elderflower sorbet served with a shot of gin – who could resist? Serve it in cups and saucers for a quintessential English look. Serves: 6 INGREDIENTS 150g caster sugar 550ml water A strip of lemon peel 250ml Belvoir Elderflower Cordial Shots of gin to taste Slices of lemon and biscuits to serve

METHOD Put the sugar, water and strip of peel in a saucepan and bring to the boil, stirring until the sugar dissolves. Simmer for 5 min until a syrup forms. Stir in the cordial and cool, then chill. Churn in an ice cream maker according to manufacturer’s instructions or pour into a freezer container and place in the freezer, stirring every hour until frozen. This should take about 6 hours. To serve, remove from the freezer for about 10 min before scooping into teacups. Garnish with a slice of lemon and drizzle over the gin. Serve with biscuits.

For the icing: 150g icing sugar, sifted 2 tbsp Belvoir Elderflower Cordial 2 tbsp gin Yellow and white sprinkles, optional

METHOD Preheat the oven to 180˚C/160˚C (fan)/Gas Mark 4. Use plenty of margarine or butter to grease the insides of a 2 litre Bundt tin, then dust with a little flour. Place the margarine or butter, flours, sugar, eggs and lemon zest in a large bowl, then use an electric whisk to whisk everything together for about 1 minute until it is pale and fluffy. Use a spatula to spoon it into the tin and level the surface. Bake for 30-35 min or until risen and golden. Mix the drizzle cordial and gin together. Place the tin on a wire rack and use a wooden skewer to prick the cake all over, then spoon over the drizzle and leave to cool in the tin. Sift the icing sugar into a medium bowl, add the cordial and mix to a smooth thick icing. Stir in the gin. Invert the cake onto a serving plate, then spoon the icing over. Sprinkle with yellow and white sprinkles, if liked, to look like bubbles.
