We are embracing the turn of the seasons Without doubt we look to serve more substantial and satisfying dishes which make the most of autumn’s harvest. We have some tempting recipes from the people who know Lincolnshire produce best. Sadie Hurst shares a tasty dish which dates from the 16th century, while Mike Holman of Ferry Ales has a very English twist for a Croque Monsieur. Rachel Green has an economical aand substantial brunch dish, ideal for the whole family. Read on and we have some crafty ideas for gifts you can make at home for family and friends this Christmas. My favourite is Rachel Green’s Pickled Grapes, so versatile to use in salads or with cheese and a gift you can cook up with the children to give with love. Our feature writers have been finding more exciting stories about some of

the unique produce being made in Lincolnshire and the hard working people behind these businesses. Mike Webster went to meet the couple behind a new name which has already hit the national headlines; Pin Gin. Kate Chapman has been talking to Terry Smith of Smith’s Smokery. He is following a family tradition of fishing on the East Coast where conditions can be harsh. Finally, Good Taste Lincolnshire and the Select Lincolnshire teams will be ready to help you get into the festive spirit at the Lincolnshire Food & Gift Fair at Lincolnshire Showground. This is always the event which kicks off Christmas for us so do come along to meet exhibitors bursting with inspiration for your celebrations.

AMY AND ALAN BOTTOMLEY

Even before I met up with Alan Bottomley, the creator and founder of Bottomley Distillers Limited, I instinctively knew that there had to be a story behind the name of the end product. Words: Mike Webster Alan’s partner Amy beamed as she explained the story from the beginning. It sounded more like a fairytale than reality, but the company grew out of a pipe dream Alan had one day on his drive to work. Alan was already quite knowledgeable about the distillation of spirits, having learned much from his father during the early nineties. The techniques had always been in the back of his mind and it seems he was forever looking for a way of exploiting his knowledge and turning his ‘know how’ into some form of profitable enterprise. The original notion was to create a business with a Christmas theme based on producing Christmas trees together with gin. After arriving home that evening, the idea was put before Amy. Somewhat sceptical about the tree side of things, the gin bit did nonetheless generate some degree of interest. The situation led to many nights of intense conversation with friends, relatives and many other acquaintances. Business plans were discussed and A Lincolnshire Life Magazine publication

PAGE 02-04.indd 3

various ideas began to come together until, in February 2016, the business was founded. The Christmas tree part had been left out of the plans but Amy suggested that, having previously thought about devoting time to the pine, the new distilled product could well incorporate the memory of this in its name. Applied wit and a good measure of insight led to the ideal name for the product and by June 2016, the new distillate was born – Pin Gin! It is a first for Alan and Amy, and Lincolnshire too, as their company is the first gin distillery in the county. Alan’s venture into the world of manufacturing and retailing gin has really taken off in a big way. He has literally created a cottage industry by utilising his garage in Louth and having converted it into a first class working distillery. It appears he has tapped into a ready made market for this drink, the demand for which is accelerating out of all proportion at the present time. As a fairly widely considered necessity on the social scene now, it seems that the

requirement for it can only rise. Fashions do come and go, this certainly being true within the drinks market but the figures for gin consumption speak for themselves. Any glance along supermarket shelves will readily indicate the large selection of different brands now available. This, together with the curiosity of the consumer to try new brands, is a surefire winner for the manufacturer of Lincolnshire’s premier gin. Business is decidedly booming for Alan and Amy. To begin with, they were very pleased with the way that sales were made at the launch. Fifty bottles per week did give a good satisfaction rating, but at present, this figure has risen to 200 and with more demand than the business can supply, this successful couple are now bordering on having to impose a waiting list. A production rate of 600 bottles per week is to be expected very soon but their biggest concern at the moment is that their premises will prove to be too small to cater for the expected demand. The bottles are supplied by a company in Grimsby GOOD TASTE LINCOLNSHIRE | 3

A FAMILY BUSINESS THE PERFECT MIX

ALAN FOUNDED THE DISTILLERY IN HIS GARAGE

and these are being delivered to the distillery on a frequent basis. Labels for the bottles are supplied by a local firm too and all in all the finished product is produced totally, along with all its components, within the county of Lincolnshire. The process for distilling gin is relatively fast. From a quick infusion process with a neutral spirit and grain and then set with combinations of any of ten ‘botanicals’ for 24 hours prior to distillation, Alan’s gin production has a turnaround of just a few days. Its manufacture is certainly not to be confused with other spirits like whisky, rum and brandy which can take many years to mature. The ‘botanicals’ utilised by Alan and Amy in their process comprise juniper,

peppercorn, liquorice, almond, orange, lemon, rose, lavender, cinnamon and cucumber. Gin is a spirit which traditionally derives its predominant flavour from juniper berries (Juniperus communis). Quicker then brewing beer really, gin distillation has, even so become a very labour intensive concern for this couple. With ever spiralling orders coming in together with ever spiralling orders for labels and bottles going out, Alan is often pushed to the limit when it is time to deliver the goods. Orders for Pin Gin have in actual fact been coming in from within Lincolnshire and the surrounding counties – but word is spreading! The reputation of this newcomer to the spirit world has widened and

4 | GOOD TASTE LINCOLNSHIRE

PAGE 02-04.indd 4

orders are now appearing from much further afield. Not such a bad problem to encounter with a new and very successful business venture but Pin Gin is a product that demands repeat business. It is a quality product that is packaged in a very attractive way and it has been hailed with great admiration wherever it has been available up to now. We have certainly come a long way from Hogarth’s London and the days of the ‘gin palaces’ of yesteryear. No longer looked upon as ‘mother’s ruin’, this once maligned drink has nevertheless enjoyed many a rise and fall in its very chequered history. ‘ Gin’ - the name itself is synonymous with the old Dutch or Belgian ‘jeneve’ or as is more often known, ‘Geneva’ or ‘Hollands’,

and was once often illicitly imported from Holland during the 16th and 17th centuries. Whether of reputable or inferior manufacture, gin has always enjoyed a measurable prominence. It has long been the ‘in’ drink of the social elite and as a base for a ‘mixer’ it hardly has an equal. Its versatility is without doubt limitless. So, it would seem that the gin devotee, whether a straight drinker or cocktail aficionado, has been given yet another string to their spiritual bow, courtesy of Alan and Amy, Lincolnshire’s premier gin distillers. Go on – enjoy a Pin and Tonic! Bottoms up! Further information is available at Alan and Amy’s website at www. bottomleydistillers.co.uk Love Food Select Lincolnshire

| NEWS IN BRIEF |

Much ado about food

SADIE AND RUSSELL HIRST

Sadie Hirst of award-winning RJ Hirst Family Butchers in Woodhall Spa has recently introduced a new exciting talk ‘Much Ado About Food’. This is in addition to her original ‘Off the Beeton Track’ talk, which explores cookbooks and food authors from the past. During the past three years, whilst visiting and working with community groups, schools and museums, Sadie has seen a great resurgence of interest in food history.

The inspiration for this specific new topic came about in April when Sadie was involved with the enormously successful Emerge Festival in Horncastle. The festival was organised by young people from Banovallum school as well as the Red Lion Theatre both situated in Horncastle and celebrated the life and work of William Shakespeare. Sadie said: “The young people of Horncastle have done an amazing job organising The Emerge Festival and I am delighted to have been involved in the first ever one. “It has been hugely enjoyable being able to share with people the food history from this period.” Sadie was so delighted at the level of response and interest that since April she has been working hard to put together

her new talk, which explores Medieval, Tudor and Early Stuart food through books, recipes, spices, kitchenalia and historic food tasters. Sadie officially launched her new talk in July at The Assembly Rooms in Lincoln. “To be invited to launch Much Ado about Food in The Assembly Rooms – a building steeped in so much history and heritage – was a tremendous honour,” said Sadie. SADIE LAUNCHED HER NEW TALK AT THE ASSEMBLY ROOMS, LINCOLN

A familiar name with a new home! Modens Bakery of Spilsby has revived a heritage recipe to add to the range of hand made artisanal bakes it currently produces. Slater Eyre Lincolnshire Plum Bread is a rich, moist, spiced fruit loaf –

“It seemed rather apt too, when so many of our medieval dishes originate from the 11th and 12th century crusades.” If you would like to discuss having Sadie as a guest speaker for your community group in Lincolnshire, please contact her at sadiehirst@btinternet. com or telephone RJ Hirst Family Butchers in Woodhall Spa 01526 352321. made using an original recipe from Mr. Slater Eyre and his bakery dating from nineteenth-century Louth. A delicious balance of spices including ginger and cinnamon, and rich, moist

fruit bursting with flavour give the loaf its unique taste. Each loaf is unique in shape and size too given the hand cut nature of the product – which means no two are ever quite the same! “The taste is quite different to any other plum bread we know of,” says Lynette Corten-Miller co-owner of Modens Bakery. “The depth of flavour from the spices is wonderful and along with the moisture from the fruit this combines to give a lovely rich, sticky loaf.” The bakery from which Slater Eyre takes its name is sadly no longer part of the High Street in Louth – but Modens Bakery is delighted to add their plum bread expertise to the mix and relaunch this Lincolnshire classic. FAIRBURN'S CORNED BEEF BRUNCH HASH Serves 4

RACHEL GREEN

Ingredients: 500g potatoes, peeled and diced 3 tbsp olive oil 50g salted butter TARTE OWT OF LENTE

SADIE HIRST

Sadie Hirst of RJ Hirst Family Butchers in Woodhall Spa gives Good Taste readers a special recipe to create at home. The 'Tarte Owt of Lente' dates from around 1500 when the dietary observance of Lent was much stricter than today. This dish includes all of things that you were to abstain from during that period – butter, cheese, eggs, cream! It’s not one for if you are on a diet, but it is really tasty. I like it warm out of the oven with a nice green salad, but you can enjoy it cold too. Ingredients: 200g pack of Cheshire Cheese 1 egg 150ml Double Cream 25g butter (soft) Pinch salt and ground white pepper

1 large onion, peeled and diced into 2.5cm squares 1 garlic clove, peeled and crushed 340g corned beef, cut into cubes 1 - 2 tbsp Dijon mustard, to taste A dash of Worcestershire sauce A good handful of flat-leaf parsley, chopped 4 medium cooked beetroot (about 200g), diced 6 spring onions, sliced 4 large Fairburn’s eggs A good pinch of chilli flakes, or 1 tsp Tabasco sauce, salt and black pepper Pack short crust pastry Egg yolk to glaze Method: Preheat oven 180C fan, 190C nonfan or gas mark 5. Line a baking tray with parchment and put in the oven to preheat. Chop and pound cheese in a mortar or sturdy medium sized

Method: Cover the potatoes with cold salted water and on a high heat bring to the boil. Simmer until nearly tender, then drain. While the potatoes are cooking, heat half the oil with half the butter in a large, heavy pan. Fry the onions over a medium heat until they soften and start to colour, then add the garlic and fry gently. Add the drained potatoes, the rest of the oil and turn the heat up to maximum. Cook for a few more minutes, until the potatoes are just starting to pick

up some colour. Season and stir in the corned beef, mustard, parsley and the beetroot, turning it carefully so that you avoid everything going pink. Once the beetroot is warm (just a minute or two) turn the heat off and add the spring onions, fold gently to mix in. In a separate pan, melt the butter and fry the Fairburn’s eggs, then season and sprinkle with chilli flakes. Divide the hash into 4 portions and put an Fairburn egg on top of each.

bowl, with either a wooden spoon or pestle. Add in the egg, double cream, butter and seasoning and make a spreadable paste. Chill filling in the fridge. Line a 25cm/10-inch pastry case saving enough pasty to make a thin lid. Make a hole in the centre of your lid. I use the end of a funnel

to do this. Spread your filling in the case and use the egg yolk to seal the tarte lid on. Glaze with egg yolk. Put on your preheated baking tray and bake in the centre of the oven for 30-40 minutes. It should be a nice goldenbrown colour when done. Cool slightly before slicing and eating.

“You can’t beat a good Croque Monsieur, and for this recipe I have paired it with our 49 SQN Bitter by slow cooking the ham hock in beer and serving it with a simple salad and of course a pint of 49 SQN Bitter,” says Mike Holman of Ferry Ales Brewery. It doesn’t get much better than that! Ingredients: 1 or 2 hocks from Redhill Farm

Butchers in the Bailgate, Lincoln 1.5 litres of chicken stock or water 500ml 49 SQN Bitter 3 thyme sprigs 2 garlic cloves 8 thick slices sourdough bread 150g Gruyère, finely grated Dijon béchamel: 60g butter, diced 60g plain flour 49 SQN HAM HOCK CROQUE MONSIEUR

WINTER WARMERS.indd 4

400ml milk, warmed 100g Dijon mustard ½ tsp finely grated nutmeg Watercress salad Watercress 8 small gherkins, sliced lengthways Juice of 2 lemons 2 tbsp olive oil Salt and pepper Method: Rinse hocks and place in a large saucepan with the stock or water, beer, thyme and garlic and bring to the boil. Reduce heat to low and simmer uncovered until meat easily comes away from the bone (1½-2 hours). Set hocks aside to cool. Once cool, shred the meat. Meanwhile, for the Dijon béchamel: Melt butter in a saucepan over a medium heat then gradually add flour and stir until smooth (3-4 minutes). Gradually whisk in warmed milk and stir continuously until thickened (4-5 minutes). Remove from heat and stir in the mustard and nutmeg. Preheat oven to 180C and line an oven tray with baking paper. Spread some butter on the bread then griddle until the bread is nicely chargrilled. Remove from the griddle and assemble the sandwiches. Spread the béchamel over half the bread slices, top with ham, sprinkle a generous helping of Gruyère and sandwich with remaining bread. Alternatively: sandwich after adding the ham and then sprinkle generously with Gruyère. Place on a prepared tray and bake until cheese melts (10-12 minutes). For the watercress salad, toss the salad with lemon juice and olive oil in a bowl and dress then with gherkins. Serve the Croque Monsieur with a pint of 49 SQN Bitter. Love Food Select Lincolnshire

RICH CHOCOLATE ROULADE WITH HOMEMADE SALTED CARAMEL SAUCE

| RECIPES |

RICH CHOCOLATE ROULADE WITH HOMEMADE SALTED CARAMEL SAUCE

KATIE JONES DID SOMEONE SAY CAKE

Ingredients for the roulade: 175g of quality 70% dark chocolate 5 large eggs 175g caster sugar A greased and lined 35cm x 25cm (or rough equivalent) baking tin For the chocolate ganache filling: 75g of quality 70% dark chocolate 130g butter at room temperature 125g icing sugar 2 tablespoons cocoa powder Splash of double cream Plus 600ml double cream, whipped. For the salted caramel: 300g caster sugar 200ml double cream 130g room temperature butter 1 heaped teaspoon salt Method: Pre-heat the oven to 160 degrees Celsius. Melt the 175g dark chocolate over a bainmarie to avoid over-heating the chocolate. This much dark chocolate gives a very rich, and slightly drier batter; if you wanted a slightly lighter batter you can do 100g dark chocolate and 75g milk chocolate, or a higher ratio of milk to dark, depending on your preference. Whilst the chocolate is melting separate the egg yolks from the whites in separate mixing bowls. The whites need whisking until they form stiff peaks. Whisk 175g caster sugar with the egg yolks until the consistency is silky and glossy.

Pour the melted chocolate into the egg yolks and sugar, then mix. The mix will be thicker with a higher ratio of dark chocolate. Add in 1/4 of the whipped egg whites and whisk into the chocolate batter to help it loosen up. Once loosened and well mixed pour the rest of the egg whites into the chocolate batter and gently fold in until mixed. The roulade has a slightly meringue-type quality so it's important to be gentle when folding the egg whites in, although it must be mixed as thoroughly as possible to avoid any unmixed chunks. Pour the batter into the greased and lined baking tin and gently spread into the corners, and bake for 20 minutes. For the chocolate ganache: Whilst the roulade is baking you can melt the chocolate over a bain-marie. Once melted whisk this with the icing sugar and cocoa powder. Whisk in the butter and a splash of cream. This should be a runny-spreadable consistency, and will firm up in the fridge. When the roulade has cooled down spread the ganache over evenly. Whip the double cream until it forms soft peaks; don't overwhip! Then spread this over the chocolate ganache. Now it's rolling time! Use the edge of the greaseproof paper the roulade is baked on to roll the roulade over onto itself and keep rolling (slowly!) until you've made it roly-poly. Prepare the plate you'll be resting the roulade on, and ease the bottom of the roulade off the greaseproof paper with a spatula/ fish slice, then lift it onto the plate. Give a generous dusting of icing sugar over the top and leave to set in the fridge.

The salted caramel sauce is optional but really adds a whole other dimension of flavour. I've been making this roulade for years on its own, but happened to have some left over salted caramel sauce from my caramelita recipe, so drizzled it over a slice and it was incredible! For the salted caramel: Heat the sugar in a large saucepan over a medium heat, stirring continuously (controversial, I know) and quickly with a wooden spoon. Do NOT leave the sugar or multi-task when making caramel, the sugar will spoil! Give it your full attention. Once all the lumps have melted the sugar should be a golden brown, and you need to immediately add and stir in the butter to stop the sugar from getting any darker. The butter will melt within a few seconds, keep stirring it in. Once the butter has melted slowly drizzle in the double cream, whilst continuously stirring, but mind your fingers as the cream will create some very hot steam and make the caramel ferociously bubble and spit a little. Once the cream is mixed in the caramel will calm a little and become smooth. Let this boil without stirring for one minute, then take off the heat and stir in the teaspoon of salt. Let this cool a little, and it will thicken as it cools. Once the caramel has cooled for 5-10 minutes liberally drizzle over the roulade, and keep some back for drizzling over the slices to serve as well. The caramel will become too thick to drizzle if it cools too much, so you can just reheat it a little to make it runny enough to drizzle. This caramel will keep for weeks in an airtight container in the fridge and can be reheated regularly.

MARZIPAN APPLES

CATHERINE SHAW

Marzipans have been given as delicious gifts and used to decorate cakes for centuries, and the sweet almond paste is easier to mould into the desired shape and less quick to set than fondant. Why not try this tutorial to make your own marzipans for a gift or to adorn a Christmas cake? You will need: A clean, dry work surface dusted with icing sugar A flower and leaf shaping tool or a similar clean narrow tool 250g White marzipan (enough to make approx 16 marzipan apples) Sugarflair Christmas Green edible colour paste Cocktail Stick Greaseproof paper or parchment 2 small pieces of black liquorice Sugarflair Royal Gold edible lustre dust Soft Food Safe paintbrush

Method: Open the marzipan and knead on the sugared board until pliable. Add a little icing sugar if it starts to stick to your hands. Use a cocktail stick to dip into the Christmas Green colour paste and prod repeatedly into the marzipan. Knead the colour in until even and add more if required, until the desired apple colour is reached. (If you use liquid colour, you may need to add more icing sugar to prevent the marzipan from becoming sticky. ) Take a small piece (approximately 15g) of the green marzipan and roll into a 1-inch ball. Use the flower and leaf shaping tool to indent the top of the apple where the stalk will sit, using a fingertip to soften the edges. When you are happy with the overall shape, place on the greaseproof paper to harden slightly overnight. Cut fine slices of liquorice ‘stalk’ approx. 1cm long, attach to the apples with a dab of cooled boiled water. Apply a subtle sheen of gold edible lustre dust to one side of each apple to finish.

Method: Remove the grapes from their stalks and wash under cold water and leave to dry on kitchen towel. Meanwhile, place the remaining ingredients in a small saucepan and slowly heat the mixture, stirring occasionally to help the sugar dissolve. Once the sugar has dissolved bring the liquid to the boil for 1 minute and add the grapes and cook for a further minute. Using a slotted spoon, transfer the grapes to a warm sterilised Kilner jar packing them tightly. Pour over the hot liquid and cover the grapes completely. Seal the jar and store two weeks before eating with cheese, game terrines, ham etc.

The Farmers have arrived in town... JANE TOMLINSON

Lincolnshire farmers, Jane and Terry Tomlinson, are celebrating 25 years at Redhill Farm by opening a brand new shop on Bailgate in Lincoln. ‘Redhill Farm Shop in the Bail’ is a small version of the existing shop located on the farm and is being run by Jane and Terry’s son George. At 23 years old

George has grown up with the business, having served on the Farmers’ Market stall from the moment he was old enough to see over it! Jane commented: “We’re delighted to bring Redhill Farm to Lincoln. We’re particularly pleased to see the shop in the hands of our son George. Not only is he an approachable young butcher he also knows our farm inside-out, so really does bring the farm onto the Bailgate.” The new Farm Shop in the Bail offers free-range pork, lamb and hogget, grass-fed beef and freshly collected free-range eggs all supplied daily from Redhill Farm, just 20 miles north of Lincoln. All other produce is carefully selected from farmer

producers whose products offer genuine provenance. Jane added: “All our meat is free range and ethically farmed to the highest standards. We hand produce everything in our own butchery, bakery and smokehouse at the farm. We have cherry-picked other suppliers who share our commitment to provenance and authenticity, so customers can be confident that if we are not the farmer, then we will know exactly who is.” Customers can also find home cured, matured and smoked pork products alongside the fresh free-range meats. George said: “We’re proud to have achieved national recognition for our pork but selling our produce in person at Farmers’

Markets remains very important to us and we will continue to attend all our markets. The Farm Shops complement the Farmers’ Markets and we’re particularly excited that the Farm Shop in the Bail will offer visitors to Lincoln a taste of genuine Lincolnshire food culture. It will also allow us to support our increasing number of trade customers in Lincoln and the surrounding area.” Open Tuesday to Saturday and offering light take-away food service alongside the butchery and deli, customers can pick up delicious free-range bacon and sausage sandwiches or warmed hand-made sausage rolls. New blend for The Lincoln Tea and Coffee Company

Since winning the Select Lincolnshire Wholesaler of the Year award, it has again been a busy time at The Lincoln Tea and Coffee Company. “Ensuring we always provide the top quality tea and coffee with excellent service we are so well known for is our priority,” says Susie Carlisle. The company also supplies a full range of equipment, servicing and training to the commercial market and is known for its friendly and professional full set-up support service. Started in 2013, it quickly built a solid reputation for quality and has again this year seen fantastic growth. “I am often asked what has been our recipe for starting a

brand new business which can go on to win awards and have such a solid reputation in only a few years,” says Susie. “The key to our success is passion for tea and coffee and a passion for top service. This is at the heart of our company and with everyone we work with.”

Customers say... “John and Susie are always ahead of the trend when it comes to tea and coffee and support us with a fantastic all round service, ensuring we are knowledgeable and can serve our customers

well, every day.” “From the first meeting I could tell straight away I was talking to the right company. Their knowledge and attention to detail was outstanding.” After listening to customers’ needs they have recently launched Lincolnshire Tea™ high grown East African and Assam black teas blended together resulting in a high quality tea which brews well even in the hardest water. Sampled by Anglian Water, they released the following statement: ‘The geology of the east of England makes our region a hard water area. So having a tea specially blended to take into account the minerals in the water is a great idea, and it

tastes delicious!’ Lincolnshire Tea™ is currently available in loose leaf and prism bags and a paper bag version is due to be launched later in the year. “We are proud to be working with local artist Edward Waite who has painted ‘Lincolnshire Icons’ to appear on our retail packaging. The tea has been blended and produced within the county with local water in mind and the packaging will promote this local link.” For more details of the products and services from The Lincoln Tea and Coffee Company visit their website www. thelincolnteaandcoffeecompany. co.uk or telephone 01522 681838.

INTO THE SMOKER THE EELS GO

Smith’s Smokery –

A way of life

His family have been fishing along the Lincolnshire coastline for generations and Terry Smith is following in his ancestors’ footsteps – specialising in catching eels and using traditional methods to enhance the delicacy in his own smokery. SMOKED SALMON PÂTÉ

Fishing started as a hobby for Terry, who traps and prepares his catches, before they are sold locally at farmers’ markets or transported nationwide and further afield on the continent. He launched Smith’s Smokery in Friskney, near Boston, ten years ago after taking inspiration from the Dutch smokehouses he had been delivering to for many years. As well as eels, for which demand is growing, Terry also catches signal crayfish and smokes other fish including salmon, trout and mackerel, which come direct to him from Grimsby fish market. “We fish a variety of different waters throughout the year, from lakes and reservoirs to rivers and tidal estuaries and even the open sea,” says Terry, who works with a small team including wife Anne and his son Christopher. A Lincolnshire Life Magazine publication

SMITHS SMOKERY.indd 3

“We go out most days and cover quite a big area from the Humber down to the Norfolk Broads. “Our traps are set along the bottom of the river and checked every two to three days; catches vary from day to day, we measure it by weight and no two days are the same; one day we can trap 30–40lb of eels, other days it can be up to 120lb but by the end of the year the overall catch for many years has remained the same. “Eels are very prevalent along this coastline and particularly like slow moving water, where there’s a bit of mud. “Most of our time is spent fishing on bleak windswept tidal waters often raining and cold, fishing in water flowing faster than you can walk.”

Terry began fishing when he was a teenager and would often go out with his uncle and grandfather. “Our family has always been catching something, our great-great grandad and grandad were fishermen catching shrimp, cockles, fish and eels in the summer and flight netting for ducks and geese in the winter on the Friskney mudflats in the late 1800s and early 1900s,” recalls Terry, who worked on the land before becoming a full-time fisherman. “As a family we’ve always fished – we had some nets and when I was younger fishing for eels was something I could do, it was just a bit of fun and it gave me a little bit of income. “It wasn’t until my 20s that things changed and I started catching so many I didn’t know what to do with them all. “Then I heard you could sell them at Billingsgate Market, the old one near Tower Bridge, so I put them in the boot of my car and drove down to London on the off chance. “It was 1975 and the first time I had ever been to London.” Terry’s venture proved successful, so he invested in a van and started taking his catch to the capital on a regular basis. Within five years his part-time hobby had become a full-time job. “I’d go down there once a week, or once a fortnight, early on a Sunday morning to avoid the traffic and that’s how it all started. “We were catching more and more, but the London market was very fickle, very up and down so we’d heard that there was demand over in Holland, it was another long shot but we decided to go for it,” adds Terry,

who supplies wholesalers and restaurants too. Again the gamble paid off and he soon began sending his eels to Holland and Germany at the start of the 1990s. It was while delivering to the continental smokehouses that he saw the techniques they used first-hand and decided to try them for himself after a difficult spell brought about by the growth of European eel farms forced him to rethink the focus of his own business. Smith’s Smokery uses traditional hot and cold methods to flavour its eels, which Terry describes as similar to mackerel in taste but with a smoother texture. Best eaten cold with a salad or on toast, Terry adds that the delicacy should be used sparingly as it is quite

22 | GOOD TASTE LINCOLNSHIRE

SMITHS SMOKERY.indd 4

expensive, although a little does go a long way. “All of our products are smoked using traditional methods to enhance the natural flavour. They are first cured using a little salt and then smoked using oak or beech in old fashioned kilns to keep the process as natural as possible,” he explains. “All our products are free from artificial colourings, additives or preservatives. We have three kilns in our smokehouse for hot smoking and cold smoking, and a large boiler for the crayfish. The kilns were brought over from an old eel smokery in Holland.” For hot smoking the fish is smoked and cooked at the same time – cooked at around 80 degrees Celsius for around two to three hours, so they are fully cooked, moist and flavourful.

Cold smoking takes place at around 30 degrees Celsius for a longer period of time – between 12 and 48 hours – depending on the product. It is used as a flavour enhancer for foods such as bacon, cheese and salmon. “There has been a lot of negative publicity in the last couple of years about the supposed decline of the eel but we believe we have a sustainable source,” adds Terry. “Most of our eels are caught on the East Coast where no elvers are caught; this allows rivers and other waters to keep well stocked. “For us, fishing is a way of life as well as a business, it’s just always been part of our lives – it’s hard work, but we enjoy it too.” To find out more about Smith’s Smokery and its products visit www.smithssmokery.co.uk

Lincolnshire Plumbread has the sun at its heart A field near Withern just off the Lincolnshire Wolds is where a new food-producing tradition is establishing itself. The field produces silage – winter feed – for a herd of pedigree Limousin cattle, and part of the field is covered by 600 solar panels, which power Pocklington’s Bakery as it produces bread, cakes and traditional Lincolnshire Plumbread from a 1930s recipe. Pocklington’s famous Lincolnshire Plumbread is available in their Louth shop, farm shops, garden centres, in supermarkets across the region and by mail order – even overseas. And Pocklington’s is the only solar-powered craft bakery in the UK.

Chris Pocklington runs the bakery business with his wife Tina. He’s the grandson of the business’ founder Cyril Pocklington, the son of a Louth miller, and Chris is passionate about the business and about living in East Lindsey. He sees no incompatibility between the traditional Lincolnshire farming landscape and producing renewable energy: “The farmer who produces silage under our solar panels went to school with me,” says Chris. “He says since our solar panels went in, in 2014, he gets only five per cent fewer bales of silage from it.” The solar panels provide 55 per cent of the bakery’s power, averaged out over a year. On a bright day (the kind of weather

Pocklington’s famous Lincolnshire Plumbread available in your local Lincolnshire Co-op, all good Farm Shops, Garden Centres, Spar Stores and other independent retailers throughout Lincolnshire.

that draws holidaymakers to the Lincolnshire coast only six miles away) they can generate 180kW per hour, which is more than the bakery needs. In the winter and at night, power comes from the grid so the bakery can continue to operate 24 hours a day, six days a week, employing 78 local people. When it becomes possible to store power from renewable sources (and the technology is catching up fast) then Pocklington’s and many other businesses in the UK can finally be less reliant on electricity from fossil fuels. But right now, this is the only craft bakery in the UK using solar power. The decision to install it required a 10-year investment plan. “Our electricity usage has gone up every year since 1984, so when the bank offered to back us, we went ahead,” explains Chris. Chris is waiting for greater certainty in the UK’s economic conditions before he invests in more renewable energy technology. Meanwhile, his solar-powered craft bakery is coming to the attention of other bakers curious about small-scale renewable energy generation for manufacturing businesses. He says: “We are very lucky that we have enough space

around us to be able to do this – and nice neighbours.” Chris sees bringing in new technology to make traditional products as a necessity: “Increasing labour and pension costs threaten the future of craft bakery; we have to compete against big factories, but investing in production machinery only reduces the quality of the product. It’s all about finding a happy medium.” Chris is a hands-on boss; enjoying everything from baking, delivering and speaking to customers, to repairing machinery and cutting the grass around the panels. He also makes sure that Pocklington’s baking is anchored in all that’s good about traditional Lincolnshire food – maintaining traditional methods and using locally sourced ingredients wherever possible – but he is constantly looking to improve what he does. “We are currently looking for ways to reduce sugar and carb levels in our cakes, which is a challenge,” he says. When there are so many good food traditions in Lincolnshire to celebrate, everyone can welcome a new tradition that has taking care of the environment built in.

Fine Dine and Wine at newly refurbished White Hart Grille Restaurant and Bar

Lincoln’s White Hart Hotel has unveiled its refurbished Grille – Restaurant and Bar. In keeping with its reputation for being an AA Rosette Award for Culinary Excellence winner, Grille boasts a new look of contemporary luxury, ideal for fine dining.

White Hart General Manager Ian Robinson couldn’t be happier and said: “It’s been nine years since we last refurbished, and that’s a long time when you consider how much footfall we get through the restaurant.” The staff feel that the refurbishment may help the Grille achieve its goal of a second WHITE HART GRILLE RESTAURANT

Rosette, a definite aspiration for the near future. The £100,000 refurbishment was kept under wraps by covering the windows as the work was undertaken, but now the Grille is back and better than ever. “It has been revitalised with new colours and the mirrors on the main wall really bring it all together,” said Ian. As Grille – Restaurant and Bar grows, it manages to keep customer satisfaction at its centre as well as innovating to constantly improve the delicious menu. A new six-mile cycle track which runs from Brayford Wharf in Lincoln to the village of Doddington has opened, enabling cyclists or pedestrians to make a safe and traffic free journey along the Fossdyke canal and green fields. The final mile to Doddington was officially opened on Sunday 2nd July by Olympic Gold medallist Georgie Twigg MBE. The mile was named after her, in recognition of her sporting achievement and the fact that she was a village resident for many years. The new section of tarmac track connects with the national cycle route Sustrans 64, which follows the route of the old Nottingham to Lincoln railway line. As a result, pedestrians and cyclists can now enjoy traffic free access to Doddington from Skellingthorpe, Harby, North and South Clifton and even Fledborough across the Trent. Once at Doddington, visitors can relax and fill up at the restaurant, the café, coffee shop or choose from a delicious range of food from the farm shop. Whether visitors are after a light lunch or quick refreshments, there is something for everyone to enjoy. The café and restaurant menus boast an array of delicious cakes and showcase the estate’s own produce alongside the best of other local producers. This includes Lincoln red beef, game and fresh fruit and vegetables from the walled kitchen – which guests can visit. Beyond just eating and food shopping, there is a home and country clothing store and a giant cycle shop if visitors fancy a leisurely shop after lunch. Electric bikes can be rented from the cycle shop and there are also a number of quiet and peaceful routes nearby waiting to be explored. Doddington Hall and Gardens are open Wednesdays, Sundays and BH Mondays until the end of September and the gardens are open every Sunday throughout October. Everything else is open 7 days a week. Visit www.doddingtonhall.com for more information.

Coffee Bobbins is a small independent coffee shop serving light lunches, afternoon tea and homemade cakes, which are made on the premises. We source most of our food from local suppliers. The decor is somewhat quirky, with an industrial sewing theme. The tables have bases made from vintage treadle sewing machines and there are unusual lights made from huge industrial balloon whisks. An interesting collection of vintage sewing machines are displayed around the shop with of course, wooden bobbins of all sizes.
