Welcome to the spring/summer issue of Good Taste Lincolnshire. With the longer, warmer days we’ve been looking at BBQ recipes to cook up a feast for your friends and family. Sadie Hirst from R J Hirst butchers has treated us to some fantastic flavours with her Dr Pepper BBQ ribs. Many of us enjoy programmes such as Bake Off and Extreme Cake Makers and watch in awe at some of the wonderful bakes the contestants create. Baking has seen a huge revival in the last few years and we have some creative spring recipes to try at home, perfect for those who are just beginning. Caroline Bingham visited the new Barista Training Centre at Stokes Lawn Café. The new café located in uphill Lincoln offers customers the opportunity
to see the factory whilst enjoying a coffee and cake. For those wishing to learn new skills, the training centre offers courses on how to create the perfect cup of coffee at home, as well as City & Guild registered courses. The Lincolnshire Show will be celebrating 134 years in 2018 while also taking up the theme of 100 years of the Royal Air Force. The Main Ring and Countryside Ring will once again have exciting classes and attractions to watch; you can treat yourself to a bite in the Food Court as well as browse and admire the beautiful blooms on display. There will be plenty for the whole family to enjoy. We hope you all have a wonderful summer.

With three iconic locations for their celebrated cafés within Lincoln, Stokes continues to be one of the most recognised names across the city and county for their expert blends of own roasted coffees and fine teas. Caroline Bingham was invited to be a guest at their recently launched Barista Training Centre. Words & Photographs: Caroline Bingham The original High Bridge Café is a city landmark serving breakfasts, lunches and teas with a contemporary influence over three floors of a Tudor, timber framed building straddling the Glory Hole water gateway to the city. The Stokes Collection Café serves visitors to the museum as well as those touring the Usher Gallery exhibitions and events. The most recent opening has been Stokes Lawn Café, in a prime uphill Lincoln location. Stokes has also relocated its head office to this listed building, with the public having access to view the coffee production process, while also enjoying light bites, breakfasts, lunch or afternoon tea in the comfort of a dazzling urban, industrial inspired interior. EXCITING OPPORTUNITIES Nick Peel, managing director of Stokes, explained that the relocation to The Lawn

has given the business the opportunity to expand in more ways than the new café: “We had outgrown our Mint Lane building, so purchasing The Lawn has opened up many new avenues. The iconic Blue Room is a beautiful timber vaulted ballroom which can be used as a theatre and performance space as well as a charming venue for weddings and special occasion celebrations. We have a programme of jazz concerts coming up with the option to dine in the Lawn Café pre-show.” COFFEE CONNECTIONS I was invited to the new state-of-the-art Barista Training Centre to be given a coffee enthusiast’s course in tasting and terrior. Stokes imports coffee beans from more than twenty countries as the growing seasons shift across the globe; from Latin America to Africa to south Asia. Depending on variety, territory and climate instils unique qualities and
flavour to the crop. Roasting, blending and grinding will also influence the final product. Training manager, Mike Palliser, learnt his barista skills with the Costa group and will now share his knowledge with students on one of four bespoke barista courses which have been launched. “Stokes has many commercial clients who stock our teas and coffees and they need to know how to produce the finest cup of coffee for their customers,” said Mike. “Our courses range from professionals who need to boost their skills, to novices who wish to gain an accredited City & Guilds qualification to land their first job as well as coffee loving individuals or groups who would like a relaxed, social experience with lunch to become a knowledgeable connoisseur.” Mike began my coffee cupping session with an espresso made from an Italian style bean blend. is an art in itself, with just the correct weight of beans (14g) being dispensed, to just the right length and grade of grind before Mike tamped down the grains to intensify the penetration of the pressurised hot water. Mike placed three glasses in turn under the nozzle to show the stages of the breakdown of the grains. “Water is the solvent,” he explained, “which under pressure for twenty-four seconds is used to dissolve firstly the acids, then the sugars and finally the flavour lipids come through.” Tasting these individually, the complex nature and flavours from the beans became apparent. I had never tasted coffee this way before but the first glass had sharpness and the acidity Mike described. The second glass, which accounted for six seconds of brew time, had more sweetness and mellowness before the third glass was packed with the flavour and bitterness of strong coffee. Mike poured glasses one and two together to let me taste a ‘ristretto’, with grains only exposed to only the first sixteen seconds of brewing. I could see why this speciality is a favourite with Italians. I too loved the nutty, full roundness but without the bitter back notes of the full brew. I think this will be my new cup of choice. Finally, I tasted the three stages mixed together, which had immediately the more familiar espresso intensity but I had not
appreciated how this unique hit is achieved before. In the new roasting room, green coffee beans are stored behind shutters in their hessian sacks before being roasted. A refurbishment of one of the original tea packing machines, dating from the 1920s, has been completed and recommissioned to sit alongside the similar vintage tea blender. The room has of course a wonderful aroma but is also a fascinating mix of high technology and vintage charm. Interest and appreciation of coffee has grown extraordinarily over the past ten to fifteen years and Nick can see more niche markets developing. “Single bean coffees are a growing trend with a similar interest in origin and terrior developing as is already recognised for wines and cheeses. We shall be investing in sourcing more unusual and distinct ‘gourmet’ beans in the future to serve not only our own customers but also those of our clients. We have also recently appointed a Business Development Manager who will be building more relationships with large volume venues such as universities across the UK.” A three-day professional course with City & Guilds accreditation costs £600 +VAT, while a three-hour, morning or afternoon Coffee Experience costs £75 +VAT per person. Promoting the Bastion in the Air project through food and drink Ferry Ales Brewery (FAB) and Lymn Bank Farm are launching new products to promote the Bastion in the Air project. FAB has developed an English Pale Ale and Lymn Bank a creamy Red Leicester cheese. Both of these products will be available in Lincolnshire Co-op stores, as well as a number of independent retailers. The Bastion in the Air project aims to promote the First World War aviation heritage of the county, highlighting the work carried out in constructing aircraft and defending British airspace which led to the formation of the RAF in 1918 and the continuing links between the county and the RAF. There will be travelling exhibitions, as well as two major static exhibitions at RAF Scampton and in The Collection Museum, Lincoln. The exhibition at RAF Scampton will be housed in the ‘Dambusters’ hangar and will feature the recreation of part of an airfield ‘somewhere in France’, including three replica aircraft. Eggs ‘in vogue’ as sales hit a record high Egg sales have topped 6 billion for the first time in 40 years. Retail egg sales are on the march for the eleventh year running, rising by 250m in 2017 and as one of the healthiest sectors of UK agriculture there is room for market growth. #EGGSMYWAY Reigning Olympic champion gymnast Max Whitlock is a ‘good egg’ and is supporting the £1 million British Lion marketing campaign #EggsMyWay to promote the culinary and health benefits of eggs in 2018. The recent change in official egg safety advice by the Food Standards Agency is likely to lead to more record-breaking sales in 2018, as pregnant women, children, the elderly and everyone in between can now safely eat runny or even raw eggs. Andrew Joret, Chairman of the British Egg Industry Council, said: “The British love affair with eggs is alive and well, and truly flourishing.” Sarah Louise Fairburn, brand and sales director, LJ Fairburn & Son, said: “I love fashion, but this is one trend I’m egg-static about. It’s an age-old pastime which has seen a revival in the last few years thanks to shows like The Great British Bake Off and Extreme Cake Makers, and the trend for baking doesn’t seem to be slowing. We bring you some fruity and chocolatey recipes to keep you busy this spring. HAZELNUT MERINGUE

HAZELNUT MERINGUE WITH FRESH RASPBERRIES Serves 8
RACHEL GREEN
1 tsp vinegar 290ml double cream 1 tbsp Cointreau (optional) 450g fresh raspberries Icing sugar for dusting 2 x 20cm lined and greased cake tins Preheat oven to 190°C/375°F/ Gas 5
Ingredients: 125g skinned hazelnuts 4 large egg whites (at room temperature) 250g sugar ½ tsp vanilla essence
Method: Place the hazelnuts on a baking sheet and roast the nuts until lightly browned, this will take approximately 10 minutes.
Cool the nuts and blitz in a food processor or chop finely. Turn the oven down to 170°C/325°F/Gas 3. Place the egg whites in a clean dry bowl and whisk until stiff, add in half of the sugar and beat for a further 90 seconds then add the remaining sugar, vanilla essence and vinegar and whisk until combined. Fold in the hazelnuts and divide between the two tins, making the tops level.
drink powder. Fold in the flour mixture, followed by the milk. Divide between the tins, smoothing the tops. Bake in the oven (lower shelf) for 25-35 min or until an inserted skewer comes out clean. Once cool enough to handle remove from the tins to a wire rack to cool completely. Meanwhile roughly chop and put 100g of the strawberries in a small saucepan along with the
remaining sugar, roughly mash with a potato masher then set over a medium heat, and bubble for a few min until syrupy. Pass through a sieve, discarding the pulp. Leave the syrup to cool then roughly chop 175g of the strawberries and mix in the syrup, halve the remaining strawberries and keep the smaller ones whole. Whisk the cream with the rest of the malt extract until holding its shape. Put one of the
STRAWBERRY AND MALTED LAYER CAKE Prep time: 30 minutes plus cooling Cooking time: 25-35 minutes Serves: 14-16 Ingredients: 345g plain flour 3 tsp baking powder 75g ground almonds 225g unsalted butter, plus extra to grease 260g (plus 3tbsp) golden caster sugar 4 medium eggs 1tsp Natural Madagascar vanilla extract 7 tbsp malted drink powder 225ml milk 450g strawberries 400ml double cream Mini wafer flowers A small bunch of thyme
Bake for 35-40 minutes until the meringue cakes are well risen and firm, turn off the oven and open the door and leave the cakes to cool off in the oven. Remove the meringues from the tins. Whip the cream until just stiff, add the Cointreau (if using) and spread over the upturned base of one of the meringues, then place on the raspberries. Carefully place the other half of the meringue on top and dust with icing sugar. sponges on a serving plate, spread over a third of the cream and half the chopped strawberries and some of the syrup, then top with another sponge, and repeat the decoration. Set the last sponge on top, then spread with the remaining cream and halved and whole strawberries, drizzle over a little more syrup. Add the thyme leaves and mini wafer flowers.
STRAWBERRY AND MALTED LAYER CAKE
Method: Heat the oven to 170°C, 150°C fan/Gas 3. Grease 3 x 18cm cake tins and double line the bases and sides with baking parchment. Mix the flour, baking powder and ground almonds in a bowl, leave aside. Beat the butter and 260g of the sugar until creamy and pale, gradually beat in the eggs then mix in the vanilla extract and 3tbsp of the malted

RASPBERRY AND PISTACHIO TARTS Makes 6 tarts Ingredients: Filling and Topping: 225ml whole milk 1 large egg 2 large egg yolks 100g caster sugar 25g cornflour 50g pistachio paste 600g fresh raspberries 25g chopped pistachios Sweet Pastry: 200g plain flour 20g ground almonds 40g icing sugar Pinch of salt 125g unsalted butter 1 large egg yolk 1 tbsp ice cold water Method: Make the filling by placing the milk in a saucepan and bring to the boil. Place the egg, yolks, sugar, cornflour and pistachio paste into a bowl and whisk.
Pour the milk over the egg yolk mixture and whisk together. Pour the mixture back into the pan and cook over medium heat, whisking until the mixture is thick. Scrape back into the bowl, cover with clingfilm, and refrigerate until needed. To make the pastry, place the flour, almonds, icing sugar and salt into a food processor and pulse to combine. Add the butter and pulse until the mixture resembles breadcrumbs. Add the egg yolk and the water and pulse until the mixture starts to form a ball. Tip the mixture out onto the work surface and use your hands to knead together into a dough. Wrap in clingfilm and refrigerate for an hour. Roll out the pastry on a floured surface until about 2-3mm thick and cut out 6 rounds of pastry big enough to line 10cm wide tart tins. Use the pastry to line six 10cm loose bottomed tart tins. Place the tarts onto a baking tray and refrigerate until the pastry is chilled.
RASPBERRY AND PISTACHIO TARTS
Line each tart case with a piece of baking parchment and fill with baking beans. Bake in an oven at 180°C (160°C fan) for about 20 minutes then remove the parchment and the beans and bake for 5-10 minutes or until the
pastry is golden brown. Assemble the tarts by filling each tart shell with a layer of the pistachio mixture. Top with raspberries and chopped pistachios, dusting with a little icing sugar.
BLUEBERRY AND LEMON CURD MUFFINS Makes: approx 10
minutes. Wash the blueberries and pat dry, toss in a little flour. Sift the flour and bicarbonate of soda into a large bowl. Stir in the caster sugar, blueberries and lemon zest. Beat the eggs, add the milk and melted butter, mix together and pour into the flour mixture. Mix together quickly and lightly, the mixture should still look a bit lumpy. Divide between the muffin cases, make a little indent and place a teaspoon of lemon curd on the top of each one. Sprinkle with the demerara sugar. Bake for approx 20 min until risen and golden. Cool for at least a few minutes before enjoying.

LEMON & ROSEMARY CHICKEN SKEWERS WITH WATERCRESS PESTO AND MEDITERRANEAN VEGETABLES Makes 6 Ingredients: 6 boneless chicken thighs 1 red pepper 1 yellow pepper 2 courgettes 2 red onions, halved and peeled 2 sprigs rosemary, leaves finely chopped Zest of one lemon
Salt and pepper Olive oil For the pesto: 65g watercress, roughly chopped 1 clove of garlic, 1 tbsp toasted pine nuts 50-75ml olive oil 50g finely grated Parmesan Method: Using a sharp knife, cut the chicken thighs into decentsized chunks. You should get 3-4 pieces from each thigh.
GARLICKY PRAWN, RADISH AND CELERY LETTUCE CUPS Serves: 2
Place in a bowl with the lemon zest and chopped rosemary leaves, then drizzle with olive oil and mix thoroughly with a good pinch of salt and pepper. Leave in the fridge to marinate for 30 minutes minimum but preferably overnight. Next chop the peppers and courgette into chunks and the red onion into wedges. Toss in a little oil and season with salt and pepper. Remove the chicken from the fridge and thread alternating chunks of chicken, pepper, courgette and onion
onto metal skewers. Put back in the fridge until ready to cook. To make the pesto, blend all the ingredients except the oil in a food processor, then slowly add the oil until the desired consistency is reached. To cook, lay the skewers on a hot barbecue for around 4 minutes on each side, ensuring that the chicken is cooked through. Alternatively, pre-heat the grill to medium-high and grill for 5 minutes on each side. Serve drizzled with watercress pesto. GARLICKY PRAWN, RADISH AND CELERY LETTUCE CUPS
Ingredients: Large knob butter 1 clove garlic, crushed 180g uncooked king prawns 1 pack of Merchant Gourmet, ready to eat, Puy lentils 6 radish, sliced 2 sticks celery, sliced 4 spring onions, sliced Small bunch coriander 1 lime 1 Little Gem leaves, separated and washed Method: Melt the butter in a frying pan until bubbling, add the garlic and swirl around the pan. Turn the heat down to medium low so the garlic doesn’t burn, then add the prawns to the pan. Turn them in the garlicky butter until they are pink and cooked through. Add the Puy lentils, stir to warm through then remove from the heat and set aside. While the prawns are cooking combine the radish, celery, spring onions and coriander. Season well and squeeze over the juice of ½ the lime. Toss well. Tip in the prawns and toss again. Lay the Gem leaves on a serving plate or board and spoon in veg and prawns and serve with lime wedges.

AMERICAN DR PEPPER RIBS
SADIE HIRST
Ingredients: Rack of 10 pork ribs, with plenty of meat left on the bone 2 litre bottle Dr Pepper Sauce Ingredients: 200ml Dr Pepper (taken from 2 litre bottle) 8 level tbsp soft brown sugar 6 level tbsp tomato ketchup 2 level tbsp French’s Yellow Mustard 3 level tbsp dark soy sauce 2 level tbsp Worcester sauce 1 level tsp ground Allspice Method: Preheat oven to 160C/140C fan/Gas mark 3. Line a roasting tin big enough for your rack with baking parchment. Lay in the ribs with the flesh facing downward, pour over half the bottle of Dr Pepper (1 litre), cover and seal tightly with foil. Put in the oven for 2½ hours. Place all of the sauce ingredients together in a pan and bring up to the boil and then simmer gently for about 20 min until reduced to a sticky syrupy sauce. The easiest way to amalgamate all the ingredients together is with a wire balloon whisk and then just stir with a wooden sauce. Keep a close eye on it as it can easily burn or boil over with the sugar content being so high.
AMERICAN DR. PEPPER RIBS
After the pork ribs have cooked for 2½ hours, remove from the oven, turning the ribs over so the fleshy side is at the top and place ribs on a large plate. At this point if you are cooking inside, turn your oven up to 200C/180C fan/Gas mark 6 or have your barbecue ready. Drain off the liquid in the tin, leaving the baking parchment, but get rid of the foil. Baste ribs generously with the sauce. Then either return the ribs to the roasting tin and back in the oven or put the rack or ribs onto the barbecue. Cook for a further 30-40 minutes, basting with the sauce every 10 minutes. Remove from the oven or barbecue and allow to cool and rest for a few minutes before slicing into individual ribs. Give a final coat of the sauce just before serving. There is no polite way to eat them, have a beer to hand, pile of kitchen roll at the ready and get stuck in!

Ingredients: 50ml Pin Gin 20ml Fresh squeezed lemon juice (this will keep in the fridge for ages!)
Method: Shake up the Pin Gin, lemon, sugar syrup and elderflower in a cocktail shaker, pour over cubed ice and then top with soda to finish. Ideal in a tumbler or a highball glass.

The idea of owning my own coffee shop goes back to 1978 when I went to catering college. From there at 18, I went to work in several different establishments including BHS and Bishop Grosseteste University, as catering manager, but the idea of having a coffee shop took second place to my other passion, sewing. Sewing became my business, which eventually led me to working for Adidas as a seamstress, altering top athletes’ clothing including Olympians and Paralympians, which I have thoroughly enjoyed and still do. But I then came to a point in my life when I thought, if I don’t do it now (the coffee shop) I never will. After two years of searching and many ups and downs, I found a premises on The

Strait in Lincoln. I designed the shop myself, and put all the things I like into it. This included reclaimed wood and treadle sewing machines as table bases. Huge whisks from industrial food mixers were made into light fittings, table tops were made from printed yardsticks imported from the USA. If I liked it, I hoped other people would too. I wanted the cakes to be the unique selling point of the shop. I wanted to display cakes in the window that would stop people in their tracks, and that’s just what they do. I wanted to serve afternoon tea how it should be served – with petit individual cakes served on a special stand. All food, whether it’s the cakes, soups or flatbreads, are all freshly baked on the premises. I decided early on in the planning process
to use local produce where possible as Lincolnshire has the most amazing foods. So I use ingredients from neighbouring local brands such as Lincoln Tea and Coffee, Curtis and Sons (Lincoln), Myers (Horncastle) Primrose Free Range Eggs (Wragby), Farmhouse Jams (Bassingham), Lymn Bank Cheese (Thorpe St Peter), Pipers Crisps and Welbeck Bakery (Worksop). I feel I and the Coffee Bobbins Team have achieved a lot in such a short time. I have to keep reminding myself I have only been open 8 months. Customers comment on how established the coffee shop is, and I feel very proud of our achievements so far. Winners announced at
awards ceremony The winners of the fourth Select Lincolnshire awards were announced at a glittering award ceremony held at Lincoln Minster School on Tuesday 10th October 2017.
Some of the county’s most loved businesses including Stokes Tea and Coffee, Gourmazin, The Horse and Groom and Pink Pig Farm came together to celebrate the food, farming and hospitality sector in Lincolnshire. The room was packed with over 160 attendees including bakers, chefs, business owners, butchers, farmers and producers from far and wide across the county. BBC Radio Lincolnshire Presenter Melvyn Prior compered the evening, and got the juices flowing for what turned out to be a marvellous evening accompanied by great local food, brilliant company and a packed room full of winners. Guests were treated to a sumptuous
four-course Lincolnshire meal, all expertly created by Head Chef Rob Smith and the catering team at Lincoln Minster School. All ingredients were kindly supplied by local members of Select Lincolnshire including Grasmere Farm, Modens Bakery, Dennetts Ice Cream, Lincolnshire Brewing Company, A Little Luxury, Scaman’s Eggs and The Lincoln Tea and Coffee Company. Colourful and seasonal food was selected to demonstrate and showcase how versatile and dynamic local ingredients can be when used together. Guests started with a warm autumnal firecracker salad which replicated a firework display on a plate. Powerful pinks and
oranges were artistically placed, setting the tone for the remaining courses. A blood orange sorbet was then served before a main course of tender Lincolnshire beef, vegetables and a Cote Hill Blue cheese scone. If that wasn’t enough, a generous helping of plum bread and butter pudding was then served for dessert alongside a drizzle of hot toddy custard and a shot of marmalade gin. This culminated in the final taste explosion of the evening. It really was a firework bang from start to finish. Tea and coffee was kindly supplied by The Lincoln Tea and Coffee Company.

One of Lincolnshire’s
loveliest surprises
The striking silhouette of the mill at Claythorpe Watermill and Wildfowl Gardens has made it one of Lincolnshire’s most familiar landmarks. You’ll recognise the building from tourist maps and magazine covers, and it even appeared in edible form as a gigantic cake at last year’s SO Festival. But the iconic view of the mill across the water, its huge chimney rising above the river, would be unrecognisable to the 18th century entrepreneur who built the place. And the folks who toiled in one of the six mills that are listed at Claythorpe in the Domesday Book would find themselves completely lost at the visitor attraction that today brings nearly 20,000 people a year to this beautiful spot, deep in the Lincolnshire countryside. A huge fire in the late 19th century saw a traditional waterwheel upgraded to the latest technology, and you can still see the Victorian turbine that replaced it in the river beneath the café. Although Claythorpe ended its days as a working mill in the 1970s, the millstones and much of the old workings are still intact and make for a fascinating glimpse into the mill’s past, while its towering chimneys hark back to Claythorpe’s time under steam power in the 1800s. Claythorpe became a visitor attraction in the 1980s and today features a unique animal collection including wallabies, A Lincolnshire Life Magazine publication

Railway Tavern Cottages
It is four years since the Railway Tavern Cottages project started with the purchase of the Barnyard Plot that was formerly joinery workshops. Dawn Jacklin, Director, recalls the transformation that led to this unique holiday accommodation. Following completion of the purchase of the Barnyard Plot on 24th January, the clearance of the site began. We then had the plans drawn up for the cottages and other works, the project moving on a step further when these were passed in September 2015. February 2016 saw the lowering of the Leylandi trees that towered above the cherry picker which was 80ft high at its full reach. The idea at this stage was to get the stumps to a manageable height so they could be dealt with again at a later stage when access through to the cottages had to be opened. In July 2016 the footings were started on Westerby Lodge, the footprint of the old breeze block building being transformed into a lovely cottage. Once roof height was reached, it was the turn of Holly Cottage to lose its old roof. The tiles were all kept to be reused, the gable ends were also taken down and in turn these were rebuilt ready to take the new roof. Both roofs were then completed. Customers and locals to the Railway Tavern were enjoying seeing the progress as much as ourselves. We decided to install underfloor heating which lengthened the project a little, so we aimed for August, to launch the CREATE FAMILY MEALS
cottages. We had already taken a booking for 5th August so that became our target. The build works finished in June. Richard Lowes’ team had done an amazing job. This gave us chance to furnish the cottages and prepare the garden areas, but also gave us chance to have a few test visits and gain feedback. Joan Westerby is a local artist and mother of Ben Westerby who had previously owned the plot. As a tribute to him we displayed an old sign of his in the cottage named after him. Joan has also let us display some of her paintings in the cottages. We held a small opening ceremony on the morning of 5th August before welcoming our first guests to both cottages. As a surprise on the day we asked Joan if she would cut the ribbon and declare the cottages open. We have had guests from as far away as Edinburgh and Isle of Wight already, all have enjoyed many different parts of Lincolnshire. East Kirkby’s Lincolnshire Aviation Heritage Centre and Lincoln Castle and Cathedral have been popular destinations, as well as the local beaches. Love Food Select Lincolnshire

This year is an especially important year for the Show, as it celebrates and commemorates the 100-year anniversary of the RAF and the end of the First World War. The theme is being represented throughout the Show, with performances, displays and activities to get involved in, no more so than in the Aviation Zone. We’re often lucky enough to experience a flypast or two, so make sure you keep your eyes to the skies! You’ll also be spoilt for choice with a variety of exciting acts, classes and performances in the Main Ring and Countryside Ring, and over in the Show Gardens and Floral Art section you can
browse and admire the beautiful blooms on display. Visitors can even jump aboard the land train to visit the cows, sheep, pigs and an array of new and traditional farm machinery. The Food Court will be brimming with Lincolnshire produce from hog roasts and sausages to jams, pickles and cakes, and the Lincolnshire Kitchen plays host to some of the finest food producers and chefs from across the county, who will demonstrate live their delicious recipes using local produce. And for the younger audience, the Show is packed full of educational stands on food, farming and animals, not least in the Schools Challenge Area. A visit to Westminster Lincolnshire business figures, including Sadie and Russell Hirst from RJ Hirst Butchers of Woodhall Spa, were invited to the Houses of Parliament by MP Victoria Atkins, for a prestigious event to showcase Lincolnshire Food Producers. The event was held in the Jubilee Room off Westminster Hall and was called ‘A Taste of Horncastle and Louth’. Other awardwinning food producers included Modens Plum Loaf, Lincolnshire Poacher Cheese, Fairburns Eggs, Pin Gin and Skidbrooke Cyder Company.
Lincolnshire chef, author and ambassador for the county’s produce, Rachel Green, gave a passionate speech about the integrity of Lincolnshire’s Food Producers and the quality of their produce. MP Victoria Atkins recognised how food producers in her constituency make up the rich tapestry of businesses, from the large to micro. Businesses had the privilege of meeting the DEFRA Minister and MP George Eustice and he enjoyed sampling a selection of the delicious produce.

Despite many people being tempted to skip a morning feast as a result of busy, on-the-go daily lives, there is one food that has increasingly become a popular way to start the day – eggs. Full refurbishment for North Lincolnshire café Mowbrays of Haxey, a village café that prides itself on its locally-sourced, ethicallyproduced goods, has undergone an extensive refurbishment following receipt of £1,000 funding from the UK Steel Enterprise (UKSE) Kickstart Fund. The grant from UKSE has been used to purchase a state-of-the-art coffee machine and dining furniture to accompany the latest redecoration, as well as contributing to the essential replacement of larger goods, such as fridges and freezers. North Lincolnshire-based couple Ben and Lisa Hepworth, the new owners of the café, provide an extensive breakfast and lunch menu, alongside serving homemade cakes, pies, speciality coffee and afternoon tea to an increasing local clientele. Business owner, Ben, said: “We have had great success, increasing footfall by thirty per cent since taking over the business. Looking ahead, we are hopeful that in the near future we can

A ‘bountiful’ start to 2018 Axholme Brewing Company reported unprecedented sales figures for the last quarter of 2017 with their first new beer of 2018 selling out in record time, as demand for their ales continues to grow. October to December was a record sales period for the Lincolnshire brewery as pubs, bars, restaurants and shops stocked up on their products for Christmas. Even the traditionally quieter months of January and February have seen strong sales growth, with the new Bounty Hunter coconut milk stout selling out in under a week. Director, Shahram Shadan, is delighted, but not surprised, by the company’s rapid growth and the success of the latest beer. “The last three months of 2017 were huge for us. We ended the year by selling out our entire bottle stock just days before Christmas. Our core range, in particular Cleethorpes Pale Ale, continues to sell really well, but adding new lines such as the Resistance 6% IPA and the Bounty Hunter coconut milk stout has helped us keep things fresh and gain new customers,” said Shahram.
