2022: YEAR OF THE TIGER This new year celebration is celebrated also as Spring Festival. It is celebrated in January or February in many countries around the world, especially in countries with larger Asian communities. Many countries celebrate the new year according to the Chinese Calendar and not only to our calendar which is the Gregorian calendar starting on the 1st of January. Lunar New Year is an important public holiday for many countries including China, South Korea, Vietnam, Singapore, Malaysia, and Indonesia. This important date on the Chinese calendar has been celebrated for many centuries. During the festivities, ancestors are honoured and traditional ceremonies are held where people get together and welcome the new year with customs that shall bring good luck, good fortune, wealth, prosperity, and happiness. The Chinese calendar is about one month behind our calendar as it has between 30 and 50 more days per year. And the Chinese zodiac calendar has a cycle of 12 years. The calendar was started on astronomical observations of the moon's phases. Each year a Chinese zodiac animal is the symbol for the year. The 12 Chinese zodiac animals are rat, ox, tiger, rabbit, dragon, snake, horse, goat, monkey, rooster, dog, and pig. Traditional Food to Serve and Their Meaning Adding some Asian-inspired food to your menu is a great way to introduce some of the traditions and symbolic about food on the Lunar New Year. Spring Rolls: The crisp golden rolls are meant to symbolize bars of gold and bring wealth and prosperity in the year to come. Oranges and Tangerines: Their round shape and gold color is said to symbolize prosperity and bring the recipient good fortune throughout the year. Noodles: Noodles shouldn't be cut or broken into pieces. Long noodles represent a nice long life, although eating them could get a little messy. Dumplings: They are a symbol of the ingot, the gold and silver pieces used in ancient times, so they represent prosperity. Rice: It's the symbol of fertility, luck, and wealth. It's a link between Heaven and Earth.
Colours are also an important symbolic part of the celebration! Here are some key points to consider: Red - happiness, beauty, vitality, good luck, success, good fortune Blue - healing, trust, long life Gold or Yellow - richness, nobility, royalty, freedom Green - wealth, fertility, regeneration, hope, harmony, growth

Roasted BBQ Duck MAKES 4 SERVINGS
INGREDIENTS
INSTRUCTIONS
4 Duck legs
Poach duck legs in poaching liquid on low heat till reaches 165 degrees. Remove from liquid and place on a cooling rack and refrigerate for one hour.
Duck Poaching Liquid 1 cup Soy sauce 1 cup Water ¼ cup Hoisin sauce ¼ cup Maple syrup 1 tbsp Sesame oil 1 cup Onion
When ready to serve, place in a 400-degree oven till the skin is caramelized and crispy. Sub Recipes Fried wild grains Seven-minute tea egg Five spiced spaghetti squash fritter Wilted bok choy Hoisin ginger bbq sauce

SEVEN MINUTE TEA EGG
4 cup Cooked Wild Grains
4 ct. Cooked eggs, cracked not peeled
2 Tbsp. Oil ¼ cup Green Onions 1 Tbsp. Minced Ginger 1 tsp Sesame Oil Season to taste with salt and white pepper
MARINADE 1 cup Hot Water ⅛ cup Black Tea Leaves ½ cup Reserved duck poaching liquid
PREPARE THE FRIED WILD GRAINS
PREPARE THE SEVEN MINUTE TEA EGG Bring mixture to a boil.
Using a wok or non-stick frying pan on medium-high heat, place oil in wok or pan until it starts to smoke.
Cover cracked eggs with liquid.
Quickly add ginger and cold wild grains until the grains become slightly crispy and hot throughout.
Soak overnight. Peel eggs prior to serving.
Season and garnish.
WILTED BOK CHOY 1 lb Baby Bok Choy
FIVE SPICED SPAGHETTI SQUASH CRISP 1 ct. Spaghetti Squash cooked, peeled, and cooled 1 Tbsp. Olive oil
1 tsp Sesame Oil Season to taste with salt and white pepper PREPARE THE WILTED BOK CHOY Blanch bok choy in salted water. Drain and toss in sesame oil and seasoning.
1 tsp Five Spice Powder Season to taste with salt and white pepper PREPARE THE FIVE SPICED SPAGHETTI
HOISIN GINGER BBQ SAUCE
SQUASH CRISP Break down the spaghetti squash.
2 cup Duck Poaching Liquid 1 cup BBQ Sauce
Toss in oil and seasoning. Spread on a lined baking sheet and dehydrate in the oven at the lowest
PREPARE THE HOISIN GINGER BBQ SAUCE Combine ingredients, heat, and serve.
