elcome to summer, which from my point of view, is the best time of the year. Warm weather, long days of sunlight, green everywhere you look—and fresh veggies in abundance! Between our backyard and community gardens, farmers’ markets and even our regular stores that carry local produce, those of us with access to these abundant resources can finally have almost all the just-picked tomatoes, squash, beets, arugula, cukes, peppers and fruit that we could ever want. Blessed with overflowing gardens, many of us resort to canning, pickling, baking or other means of putting away summer’s bounty for the winter. Others give tomatoes and zucchini by the bagful to friends, coworkers and strangers on the train. Eventually, we run out of takers for our overflowing gardens—but not really—there are a lot of people nearby we may not have considered that would love to share our extra veggies in their evening meals. This month, we explore the topic of Food Democracy, a term coined in the mid-1990s by British food policy academic and former farmer, Professor Tim Lang. Boiling it down, food democracy concerns the “fulfillment of the human right to safe, nutritious food that has been justly produced.” In other words, access to safe and nutritious food is an inalienable right of everyone, no matter their economic status or position in life. A quick Google search pulls up myriad sources about the topic, providing a wealth of both sobering and inspiring information about how our ever-growing global wealth gap is related to the food gap of poverty, urban/ suburban/rural food deserts and the obesity and chronic disease epidemic that has become commonplace. Up to one in six Americans struggle with hunger, yet 40 percent of the food in this country gets thrown away. Not good numbers. So what does food democracy have to do with too many tomatoes in your garden? Plenty! Did you know that you can donate your garden’s bounty to a local food pantry and help someone else to put a nourishing and delicious summer meal on their family’s table? Thanks to the efforts of many organizations and government agencies, food depositories are able to legally receive and distribute quality produce to those in need. The 1996 Bill Emerson Good Samaritan Food Donation Act was also enacted to protect those who donate “apparently fit” food in good faith. One of the most convenient ways to locate a local pantry for your produce is through AmpleHarvest.org, which works hard to ensure gardeners can find good outlets for their produce. Gardeners can search their database to find registered pantries within a specified distance and includes the hours that donations are accepted. Other options in the Chicago area include Common Pantry (CommonPantry. org), a Northside pantry with refrigeration capability to accept both fresh produce and dairy. Chicago Community Gardens (ChicagoCommunityGardens.org) operates its Share The Harvest Program, which works with community garden groups that produce specifically for food pantry donation. Also, check with churches, synagogues and other community groups for places where your bounty will go to good use. Flaxseed Oil Soothes Carpal Tunnel

C

arpal tunnel syndrome is typically accompanied by pain, numbness and reduced mobility in the hands and wrists. Research published by the Tehran (Iran) University of Medical Sciences in the DARU Journal of Pharmaceutical Sciences has determined that the application of external linseed oil—also referred to as flaxseed oil—can reduce pain and increase mobility for syndrome sufferers. The research tested 100 patients with the condition in two groups—one rubbed placebo oil onto their wrists, while the other applied linseed oil daily over a four-week period. Both groups wore wrist splints at night. After the treatment period, those that applied linseed oil experienced a significant drop in pain scores using the Boston Carpal Tunnel Questionnaire and Function Assessment. The same patients also reported an improvement in mobility and function.

Illinois is Keeping Momentum Going Toward Clean Energy The U.S. Environmental protection Agency (EPA) will release its final Clean Power Plan this summer—a rule that requires states to reduce the carbon emissions from power plants by 2030, and the Union of Concerned Scientists (UCS) has released a national analysis showing that Illinois is well-positioned to meet the draft rule. With Illinois’ renewable electricity and energy efficiency standards and coal plant closures, it is slated to be 82 percent of the way toward meeting the non-mandatory, nearterm 2020 benchmark the EPA set for it, which helps ensure that each state is on a path to comply with the 2030 goal. A renewable electricity standard requires utilities to produce 25 percent of their electricity from renewables by 2025. An energy efficiency standard requires utilities to reduce energy demand by 2 percent each year. Eight units that produce 12 percent of the state’s coal-fired generation will retire between 2012 and 2020. Illinois can further meet its mandatory 2030 emissions reduction requirement by creating a regional program that allows Midwest states to work together to reduce emissions, and Illinois state regulators and utilities are considering this approach. The state can also strengthen its renewable electricity and energy efficiency standards. A recent UCS analysis found that requiring utilities to generate 35% of their electricity with renewable resources by 2030 and reduce energy consumption 20 percent by 2025 would reduce the typical residential customer’s electricity bill 11 percent, or $10 a month, in 2020 and 23 percent, or $22 a month, in 2030.

Some people are drawn to the added dimension of spiritual exploration that the horse offers, so I offer this as one, but not the only, option. I am happy to chat over the phone or do introductory meet-and-greet sessions with my horses—they like meeting folks for any reason. I often let the horse pick the human he or she would like to work with, unless a person feels called to a particular horse.” Kortendick recognizes that each person is unique. “Many have troubling experiences from their past. Others feel stuck in mindsets that keep them from fulfilling potential. Many experience lack of congruence—that is, words and actions say one thing, but feelings are much different,” she notes. “Once we understand how wearing masks make us uncomfortable, we can discover our authentic self and get on the road to positive change. Horses sense immediately when our feelings and actions are incongruent with each other. Once we acknowledge the disparity, the horse responds, perhaps becoming calmer, and we have an ‘Aha!’ moment—a big step forward.” Kortendick offers one-on-one sessions and short retreats. ecoalert Plastic Bag Ban Takes Effect on August 1 in Chicago and Evanston Chicago’s plastic bag ban will take effect on August 1 at stores subject to Article XXIII. Retail Bag Use, as approved in April by the city council, with a floor area which exceeds 10,000 square feet. Targeted are chains stores that sell perishable and non-perishable goods, but the ban does not apply to restaurants or stores that are not part of a chain. As a result, large Evanston retailers also will no longer give out plastic shopping bags made of plastic less than 2.25 millimeters thick and that are not certified as compostable, to customers. The 27 stores affected include Jewel-Osco, Walgreens, Whole Foods, Trader Joe’s, CVS, Aldi and Target. Focusing on bigger retailers that have a major impact, the change will not affect local mom-and-pop stores. Under the ordinance, customers may bring their own bags of any type. Evanston has started a Think Outside the Bag campaign that includes bag shares where residents can drop off extra reusable bags and others can pick them up, and reusable bag giveaways at locations throughout the summer, including at the Main Evanston Public Library, North Branch Library, Noyes Cultural Arts Center and the FleetwoodJourdain Community Center. The doctor stresses that maintaining good oral health is important for overall health. “It’s been proven that people with periodontal disease are at a higher risk of developing heart disease. If your gums are bleeding, bacteria builds up and gets into your bloodstream and can affect your joints, heart and lungs,” he says. There is also a correlation between diabetes and gum disease. “We see in patients with diabetes that when the gums are healthy and there is less bleeding, the better controlled their sugar numbers are, and vice versa,” he notes. Migraines

are More than Just a Headache by Megy Karydes

T

rupti Gokani, M.D., a boardcertified neurologist and founder of Glenview-based Zira Mind and Body Center, states, “Whether we would like to believe it or not, a migraine doesn’t just happen. Rather this type of headache is an intervention that occurs from above, telling you that your body is out of balance, that your body is not in harmony and it needs to get into harmony.” Gokani continues by explaining that according to ayurvedic principles, a migraine is a spiritual intervention designed to capture our attention with an attack of pain to evoke a re-evaluation of our life, looking within to discover imbalances. “Migraine occurs when we are disconnected,” she states. Migraines affect between 36 and 40 million Americans, yet many never get a formal diagnosis nor proper treatment from a migraine specialist, according to the American Migraine Foundation. Even more people suffer from ordinary headaches, according to Gokani. She explains the difference: “Migraine is a specific type of neurological condition that involves the brain, the blood vessels and inflammatory peptides. A true migraine attack generally is one-sided, moderate to severe in intensity and associated with nausea, vomiting, light, smell and/or sound sensitivity. These attacks generally stop people from doing their day-to-day tasks and often lead one to climb into bed and sleep to relieve the pain.” Other kinds of headaches are described by location, severity of pain and associated symptoms. Gokani trained in family practice and psychiatry until finding her passion in the field of neurology. She is also a certified master clinical psychopharmacologist. After desiring to learn a more 26

systems-based approach to healing, she then trained in ayurveda through two distinct programs, the Kerala Ayurveda Academy and the Ayurvedic Training for Health Professionals, which are offered in conjunction with Maharishi University and Scripps Integrative Medicine center, in La Jolla, California. Her primary interest is in understanding the migraine condition and how to manage it, and Gokani has focused her practice on this for more than a decade. “During this time, I have also created protocols to help those with digestive issues, fatigue, insomnia, mood issues, difficulty focusing and more,” she notes. “I have taken a far more holistic approach to balancing the mind and body the more I have worked with patients, as many patients come in with a multitude of complaints during their initial consultation with me.” Gokani uses both Eastern and Western medicine in her pain management approach. For headaches, and migraines specifically, she cites classic triggers as the most common culprits: stress (good

or bad, such as getting married or getting a divorce), weather shifts, foods, hormone imbalances, lack of sleep and skipping meals. Managing those triggers brings relief, which she’s able to do by helping patients identify and balance their dosha, or mind/body type. The holistic approach Gokani favors is ayurveda, a 5,000-year-old system of healing that many people believe was the first system of healing to classify headaches based on a person’s dosha. “The three types are Vata (wind type), Pitta (fire type) and Kapha (earth type),” Gokani explains. “Depending on which dosha is affected, head pain will occur in different locations and with different intensities. For example, if the Vata dosha is imbalanced, which can occur if you are eating too many cold, dry foods, traveling or not sleeping enough, your pain will likely be located in the back of the head and neck area. The Pitta type and Kapha type headaches have different triggers and different locations of presentation.” “To me, the fundamental cause of migraine is not living in alignment with your mind-body type,” notes Gokani. “Stress is basically when the mind and body are not living in harmony with the world around us. If you go to a job that you hate or you feel is too high-pressured and constantly wish you could be spending time with your kids at home, you will always feel a sense of stress and anger with your work. This can in turn activate your nervous system to work against you, rather than in harmony with you, and thus lead to cycles of pain.” Diet can be an important factor, as well. “If you eat foods that are heating, such as spicy foods, but have a Pittatype ‘fire’ nature, you will be stressing your digestion by eating foods that activate, rather than balance your gut,” observes Gokani. “If you allow yourself to live a life for others and do not live authentically, you will create stress, and this will in turn imbalance you, and can lead to pain.” During the course of studying integrative medicine, especially ayurveda, and treating patients, Gokani realized there are some important principles that apply to both her own migraine patients and those she wasn’t seeing. She began putting into writing the decade of experi-


ence and knowledge she has gleaned about the mind while attending conferences, reading books, speaking with practitioners and completing more advanced training in integrative medicine and ayurveda. Then, four years in the making, she wrote The Mysterious Mind, a practical guide for people looking for answers. “The more I wrote, the more I realized that this book is not just for migraine patients, but for anyone who has a mind that is not optimal,” explains Gokani. T

echnology has indisputably made what was once unfathomable and mysterious, transparent and predictable, fueling our desire and dependence for more of what we can easily control and visibly trust. While the technological innovations of this age continue to stretch the boundaries of what is possible, we persist in limiting our own potential. In the face of natural uncertainty and instability, we stick to tendencies toward stress, anxiety and conflict as means to our goals. To navigate this life unbounded by worry, conflict and strife when there is no “app for that” or pill that will dissolve our obstacles, we must first look within. Inner knowing, or noetics, is as essential to our daily lives as technology, if not more so. It’s not all in your mind

Astronaut Edgar Mitchell’s New Cosmology Inspires a

Quantum Leap by Linda Sechrist

I

n May 1961, President John F. Kennedy’s televised speech before a joint session of congress challenged members to appropriate funds for landing a man on the moon and returning him safely to Earth. Those words stirred the spirit of imagination and exploration in Edgar Mitchell. By 1966, the former naval officer, aviator, test pilot and aeronautical engineer had joined Project Apollo as one of National Aeronautics and Space Administration (NASA)’s fifth group of astronauts. In 1971, as the lunar module pilot of Apollo 14, he and Alan Shepard walked on the moon while their crewmate Stuart A. Roosa orbited its surface aboard the mission command module Kitty Hawk. The sixth person to walk on the moon, Mitchell, the author of The Way of the Explorer, co-founder of the Institute for Noetic Sciences (IONS) and chairman of Quantrek, Inc., logged nine hours of lunar surface exploration time, more than any other astronaut. More than 50 years later, it is possible to debate whether the last living member of the Apollo 14 crew, whose accomplishments have secured him a place in the annals of aerospace legend, will be more remembered for exploring inner space than outer space. As an inductee of the prestigious Leonardo da Vinci Society for the Study of Thinking, Mitchell belongs to an elite group of the world’s greatest living thinkers. His induction honors 40-plusyears of intellectual pursuit, dedication and a tireless search to discover common ground between science and spirit within the inner reaches of human consciousness. The catalyst for this search was Mitchell’s desire to gain a deeper understanding of the transformative awakening he experienced on the ride back to Earth. 30

No longer preoccupied with work tasks, Mitchell gazed intently out the window of the command module as it rotated to maintain thermal equilibrium with the sun. During every twominute rotation, he observed the Earth, Moon and Sun passing by, as well as a magnificent, 360-degree panorama of star-filled heavens. His realization that the molecules of his body and the molecules of the spacecraft had been born in an ancient generation of stars elicited a visceral experience of being interconnected with all things and a state of spiritual ecstasy. The results of his personal explorations led Mitchell to co-found IONS in 1973. The nonprofit parapsychological research institute looks at spiritual experiences from the view of quantum science, and performs scientific research into a transcendental potential capable of inspiring global civilization to collective systemic actions that move

toward a more sustainable future. Through Quantrek, Mitchell collaborated with a stellar interdisciplinary team of degreed scientists that used scientific methods to study the quantum hologram (QH) model, which Mitchell calls “nature’s mind”. Focused primarily on the quantum attributes of nature’s mind—entanglement, coherence, resonance and non-locality—Quantrek’s research succeeded in accelerating the advancement of knowledge regarding the ultimate nature of reality. By embracing the goal of empirically establishing a unified theory of nature that incorporates the phenomenon of consciousness and a synthesis of thinking capable of linking disparate schools of thoughts in physics, Mitchell was able to describe a new cosmology that holds a promise for a necessary evolution of how we see ourselves in relation to the reality around us. Mitchell’s nature’s mind model holds great potential for demonstrating empirically that everything in the universe is part of the same whole and derived from the same source. This means that human beings, when compelled by scientific findings, may come to realize that in this interconnected and interdependent universe, what one does to others, one does to oneself. This interconnected and interdependent universe may bring us full circle to reconsider an insightful statement made by the president in his “Moon Shot” speech. “…In a very real sense, it will not be one man going to the moon… it will be an entire nation.” In July 1969, when the U.S. population was only about 200 million, the collective imagination of 600 million armchair explorers worldwide enthralled and entrained with the image of Neil Armstrong taking one giant leap for mankind. It is possible that Mitchell’s new quantum hologram cosmology might also be capable of igniting another collective moment, in which we all take one more quantum leap in a collective consciousness that benefits all of mankind. Launching a

Kitchen-Based Food Business from Home

D

epending on the relatively new cottage food laws in Wisconsin, Illinois and Minnesota, home bakers, picklers and jammers can now launch a food business from their home kitchen and sell certain food products to neighbors and friends. The laws in question refer to “non-hazardous” food products, often defined as those that are high in acid with a low pH, like jams, jellies or pickles, or low in moisture, such as breads. Every state’s new cottage food law will specifically answer four key questions about home food production and sale: what products can be sold; where they can be sold; how they can be sold; and how much of each product can be sold. “We have value-added products like salsas, spreads, pickles and jams,” says Erin Schneider, who, with her husband Rob McClure, operates Hilltop Community Farm, in LaValle, Wisconsin. They produce only high-acid food products with their 32

consciouseating organically grown crops. “Our black currant and honey jam is sold before we even make it. Rob has quite the following with his garlic dills.” They sell at a holiday farmers’ market and earn about $2,000 a year. “I’m eager to encourage vendors who have products produced under the Illinois cottage food law,” says Roxanne Junge, market manager for the Glenview Farmers’ Market, in Glenview, Illinois. “The cottage food law is an awesome thing for people to get their foot in the door, try out a new product and sell it direct to their customers. It allows them to do this without investing too much money into the business before they’ve figured out what will sell. Eventually, many of them are able to take the next step to open a storefront or start an online sales business.” “Being able to use our kitchen for the operation made our lives easier, and it gave us the opportunity to stay in business, as it lowered our costs considerably,” explains Blanca Berthier, co-owner of Mundo Verde, an Illinois company that has been making premium and amaranth granola since 2010. Berthier moved her operations from a certified kitchen into her home after the Illinois cottage food law was passed in 2012. Thanks to the success of her products, Berthier expanded her operation beyond her home kitchen by using a commercial co-packer to manufacture the granola to her exacting specifications. By using the co-packer, her products can be sold at local grocery stores and by direct delivery. “Your best research comes directly from your customers. Ask them what they like and make it,” advises Dorothy Stainbrook, owner of HeathGlen Farm & Kitchen, in Forest Lake, Minnesota. HeathGlen specializes in preserves, syrups and scrubs made from organic fruit harvested at Stainbrook’s farm. What started out of her farmhouse kitchen under Minnesota’s cottage food law exceeded the state’s sales cap, so she opted to build a commercial kitchen on-site to keep up with demand. Some food entrepreneurs choose to rent space in a community or incubator kitchen when they scale up. Cottage foods and specialty food products are ultimately defined by their quality ingredients, distinctive flavors and taste. By meeting a seemingly insatiable appetite for more, these local, small batch food entrepreneurs are rebuilding a community food system. “We think it’s much more important to produce what grows well on our soil and then sell it, so that ecology drives economics, rather than the other way around,” says Schneider. “Paprika peppers, elderberries, hardy kiwi, garlic, pears, currants. These are the plants that are adapted here, and it’s our job as ecologically minded farmers to show how delicious these things can be, fresh or preserved.”

The Smorgasbord of Midwestern Laws by Beth Kregor he Midwest has a great tradition of home cooking, and its potlucks are legendary. Yet, state laws are sometimes hostile to the home cook that tries to test the market or grow a business selling homemade goodness. Nevertheless, new laws are pending in local state capitols. Be sure to check on the most recent developments nearby before starting (Forrager.com is a good resource). If the results are not favorable, legislators seem to be listening to enterprising home cooks lately—contact them. In Illinois, a cottage food operation may sell specific baked goods, jams, jellies, preserves, fruit butter, and dry herbs or dry teas, if they have a low pH. The city of Chicago, however, does not allow cottage food operations to sell at the farmers’ markets that the city sponsors. Newly approved legislation now allows individuals to sell up to $36,000 per year at farmers’ markets or, if the products feature a locally grown agricultural product, they may deliver it directly to the consumer. Also in Illinois, a home kitchen operation may sell up to $1,000 a month in baked goods to consumers, but only if the local city or county has adopted an ordinance allowing it. Chicago has not approved home kitchen operations. In Minnesota, a new law still pending at press time would allow home cooks to sell up to $18,000 per year of homemade foods that are labeled as homemade and are not potentially hazardous, as well as home-processed or home-canned pickles, vegetables or fruits with a low pH. They would be able to sell at farmers’ markets or directly to the consumer (even over the Internet, if the home cook delivers it personally), as long as they register with the state and take a short food handling class. In Wisconsin, home-based producers cannot sell anything other than jams, jellies, pickles, sauces and canned goods with a low pH, and their sales are capped at $5,000 per year. Sales are allowed at farmers’ markets and community events only. Wisconsin has been named by some as the most restrictive state for cottage foods.

I

n the last century, we have gone from about five pounds of sugar per person per year to more than 140 pounds; if we add the huge amounts of highly refined carbs that we eat every day (white bread, rice, potatoes, chips, pastries, etc.), we end up with a type of nutrition that encourages fat production and accumulation in the body with no escape route, and the added consequences of constant exposure to daily extreme blood sugar highs and lows. Up until a couple of centuries ago, we didn’t have unlimited access to food, especially highly refined, high-glycemic carbohydrates. What is commonplace to us today: grocery stores, convenience stores, restaurants, fast food, sugars, snacks and sodas, really appeared in the horizon less than 100 years ago. Thus our ability to modify, change and transform foods has grown at a pace thousands of times faster that our ability to evolve as a species to digest them in a healthy way. Our primal instincts keep us in love with (or addicted to) sweet foods because they represent a quick and easy energy boost that our bodies needed for survival in a harsh environment. We evolved to obtain and save every single molecule of that energy source we could get our hands on by converting any sugars or carbs that we could not use immediately into fat. On top of this, there is a perverse trap: our addiction to sugar. Recent studies show very clearly that our brain is stimulated by sugar in an incredibly similar way to hard drugs such as cocaine; the more we consume, the more we need to feel good, and it becomes a vicious cycle. The sum of our metabolic makeup, sugar addiction, bad carb 34

dominance in the marketplace and lack of alternatives, makes it very difficult to escape the trap. Most current dietary trends and research all seem to be pointing in a similar direction: reduce or eliminate sugar, avoid bad carbs, go back to eating more wholesome foods, cook less and eat more raw or fresh, favor vegetables, eat more protein and more recently, eat more healthy fats. Lifestyle changes are always challenging, but there’s plenty of scientific data and studies today that show the beneficial effects of replacing highly refined high glycemic carbs (those we convert into sugar very fast) with “good carbs” such as ancient grains, legumes, nuts and seeds. By substituting bad carbs with good carbs and reducing all forms of sugar intake considerably, we can transform our health and turn our body into a fat-burning machine, with stable sugar and insulin levels, reduced inflammation and a happy gut, which by means of billions of friendly bacteria, keeps us energized and feeling great. Get creative in the kitchen or look for better options in the marketplace. If we really need to cheat, only do it in-between meals on an empty stomach and eat half the normal amount. Being healthy is not about being miserable, but making good choices at least 80 percent of the time and indulging in smaller quantity less than 20 percent of the time. Southwestern Bean Salad Yields 4 to 6 servings Prep time: 20 minutes

Seasoned for a Southwestern flavor, the beans, corn and avocado make this a satisfying salad everyone will like.

1 15-oz can pinto beans, drained and rinsed 1 15-oz can black beans, drained and rinsed 1 cup frozen corn, thawed 1 red bell pepper, seeded and medium diced ½ cup diced medium red onion 1 cup halved or quartered cherry tomatoes 1 avocado, pitted and diced ¼ cup red wine vinegar ¼ cup lime juice 1 Tbsp agave nectar ½ tsp sea salt ½ tsp ground cumin ½ tsp chili powder 2 tsp Sriracha hot sauce ¼ cup chopped fresh cilantro Combine the beans and vegetables in a large bowl and feel free to add seasonal vegetables to taste. Blend the vinegar, lime juice, agave, salt, cumin, chili powder and Sriracha in a small bowl. Add more chili powder and Sriracha for a spicier dish. Drizzle over the beans and vegetables and toss to coat. Refrigerate for an hour and then sprinkle with cilantro before serving.

o more fully understand the concept of democracy, we can look to some past U.S. presidents. Abraham Lincoln defined it as “government of the people, by the people, for the people.” Thomas Jefferson said, “An informed citizenry is at the heart of a dynamic democracy.” Harry S Truman further recognized that “secrecy and a free, democratic government don’t mix.” By extension, “food democracy” describes a fair and transparent food system in which people have informed choices and control in determining what and how they eat. It’s what happens when we view people as citizens, rather than consumers, and treat food as a human right, reports the Oakland, California-based Pesticide Action Network (PAN). Kelly Moltzen, a registered dietitian in Bronx, New York, and member of the Franciscan Earth Corps, defines it as having the freedom to make choices about the integrity of our food from farm to plate, so that we can support the health and well-being of ourselves, 36

the Earth and all organisms that inhabit the ecosystem.

Food Sovereignty Feeds Independence

A PAN report on food democracy describes food sovereignty as the international equivalent of the U.S. movement to re-localize control over our food and farming. It’s rooted in regenerating historically autonomous food systems with, for and by the people. John Peck, Ph.D., executive director of Family Farm Defenders, in Madison, Wisconsin, explains that the term “food sovereignty” was coined about two decades ago by the globally active La Via Campesina, comprised of family farmers, farm workers, fishing folks, hunters, gatherers and indigenous communities around the world. “At its most basic,” Peck says, “Food sovereignty is about reclaiming local democratic control over our food/ farm system from corporate agribusiness.” This way, “Everyone has the right to decide what is grown or raised in

In their report, Deepening Food Democracy, the Institute of Agriculture and Trade Policy (IATP), in Minneapolis, describes how U.S. food and farming has increasingly become concentrated, consolidated and controlled by the few. Local food enthusiasts want to take back their food system from industrial, corporate masters that lobby for legislation which denies citizens the right to know how their food is produced or if it contains genetically modified ingredients (GMO). The growing local food movement is as much about returning power to communities, food workers, farmers and farm workers as it is about producing and distributing healthy, sustainably grown food, reports IATP. Anthony Flaccavento, an organic farmer in the Appalachian region of southwestern Virginia, has been working on national food and sustainable farming initiatives for nearly 30 years. In a recent Food Sleuth Radio interview, he described the resulting tremendous, multiple positive impacts of strong local economies, noting that a strong local food system is usually at their center. “Once you have vibrant, diverse local economies,” says Flaccavento, “you have better health, lower crime and incarceration rates—and more civic participation.” Basically, a more democratic food system could help fix many of the maladies ailing our nation today. Saving Seeds, Saving Democracy

Jim Gerritsen operates Wood Prairie Farm with his family in Bridgewater, Maine. He’s dedicated to using organic farming methods to protect the environment and food quality, provide ample harvests and foster good jobs for the next generation of young farmers. As president of the Organic Seed Growers and Trade Association, Gerritsen led a lawsuit against Monsanto in 2011, challenging the validity of seed patents. In a Food Sleuth Radio interview, he explains, “Patented seeds cannot be saved and replanted. To take that right away from farmers was a terrible mistake on the part of the Supreme Court.” Seed ownership belongs to the people; our seed resource is part of our common heritage. “Genetic engineering was an invention to take away from the commons the ownership of seeds,” he continues. “Regaining control of the seed supply is one of the most pressing battles we have in agriculture.” Gerritsen encourages everyone to plant an organic garden using organic seeds and to advocate GMO labeling. “Let’s let transparency reign, which is a hallmark of a democratic system,” he proclaims. The True Cost of the

Imagine if the price of a hamburger included the costs of cleaning up pollution from concentrated animal feeding operations (CAFOs) or medicating people with heart disease; the hamburger might be bumped off the dollar menu if all those external costs of the beef industry were considered.

T

rue cost accounting is a method of better aligning externalized costs of production with endproduct values. Many organizations such as the Sustainable Food Trust (SustainableFoodTrust.org) The Story of Stuff Project (StoryOfStuff.org), and the Lexicon of Sustainability (LexiconOfSustainability.com) are working to account for the true costs of food and agriculture, which include social, health and environmental consequences. Accounting for these external costs can lead to policy recommendations for fixing market failures, which occur when constraints prevent a market system from operating efficiently. Worldwide, it is estimated that 75 billion tons of soil are lost every year at a cost of approximately $400 billion per year, or about $70 per person, according to the United Nations Food and Agriculture Organization (FAO). Crop loss from overuse of pesticides is estimated to cost $520 million just in the United 40

States. According to the World Economic Forum, the cumulative costs of cardiovascular disease, chronic respiratory disease, cancer and diabetes in low- and middleincome countries are likely to surpass $7 trillion by 2025, an average of nearly $500 billion per year. These externalized health and environmental costs of agriculture are not reflected in the market prices for food products, but eventually paid for by sick consumers and taxpayers, representing a massive market failure. Other healthcare costs are associated with agricultural inputs and occupational hazards. Endocrinedisrupting hormones, found in many pesticides and plastics, cause a disease burden of up to $359 billion per year, or 2 percent of Europe’s gross domestic product. According to the U.S. Centers for Disease Control and Prevention, about 167 agricultural workers suffer a lost work time injury every day in the United States, with 5 percent of these injuries resulting in permanent impair-

ment. Public Health Reports estimates that agricultural occupational injuries cost an estimated $4.57 billion in 1992. Food waste also adds to the externalized costs of agriculture. According to the FAO, $700 billion in natural resources, including $172 billion of wasted water, $42 billion of cleared forest and $429 billion of greenhouse gases are wasted every year when edible food is thrown away. The FAO estimates that the world wastes a third of the food produced annually. These market failures can be corrected through the creation of more accurate economic models and policy recommendations. It’s possible to rein in external costs and reduce the harm to our health and environment without abandoning farmers that are already struggling to make ends meet. Diversified systems reduce the yield gap between organic and conventional systems and restore valuable ecosystem services, reducing farmers’ input costs and offsetting externalities. According to one study, the global net value of ecosystem services could exceed fertilizer and pesticide costs even if used on only 10 percent of the global arable land area. Agriculture can become the solution to the problems of climate change, malnutrition and diet-related disease, rather than contributing to them. Agriculture is unique in that it utilizes natural capital—land, water and ecosystem services—at the front end, and also influences its future viability through its production practices. By investing in more sustainable production practices instead of borrowing from future natural capital, agriculture can actually improve environmental outcomes through carbon capture, soil building and sustainable water management. A robust vision of true cost accounting therefore aims not only to reduce negative externalities, but also to compensate farmers for social benefits and positive externalities that result from food production. More Innovative than Antibiotics The Power of Xylitol Xylitol’s effectiveness in oral health and usage as a sweetener is well-known. New research also shows its usefulness in upper respiratory health. However, people may not know the reason why it is so effective. Xylitol has a unique ability to interfere with bacterial adhesion.

Anti-Adhesion Xylitol’s anti-adhesive effect was discovered by accident in 1996. A British medical journal published a study, which analyzed past research done with xylitol. Researchers found that there was an additional correlation between xylitol and upper respiratory infections—a correlation researchers didn’t see when the studies were performed originally. The 1996 study found that among the children tested in the studies, those who used xylitol chewing gum had 42% fewer ear infections. Researchers performed subsequent research to answer why there was this correlation. These studies supported the discovery of xylitol’s anti-adhesion property. Xylitol’s anti-adhesive effect interferes with bacteria sticking to tissue. In order for bacteria to thrive, they must attach to the cell membrane. There they metabolize and the body senses the bacteria, it reacts with various responses like congestion, runny nose, against bacterial infections using antibiotics, attempting to kill the bacteria. However, the use of antibiotics produces resistant bacterial strains, which leads to more serious problems. Xylitol’s anti-adhesive property interferes with bacterial adhesion, resulting in bacteria not being able to colonize and thrive; eventually they are washed out. This is an innovative way to avoid antibiotic resistance. Instead of them to become stronger and more resistant, xylitol doesn’t allow the bacteria to cling to the cell and start its metabolic processes. Professionals advise people to regularly wash

their hands to prevent illness. But washing with only water isn’t enough; they must wash with soap. Similarly, just as people should wash their hands, they should also wash their nasal passages. A normal saline solution is like washing with only water. Washing with a nasal spray containing xylitol is like washing hands with soap. Bacteria and People Bacteria, like people, congregate together. This is called quorum sensing. When people start coming together, they form a town or city. Bacteria act similarly; as they sense other bacterial “city.” If a group wanted to take over a city, historically they would send in soldiers to subdue the inhabitants so they could then occupy the city. However, there is no guarantee that they would control everyone, and there may be leftover survivors who rally together. But if that particular city were to have an extreme change in environment, the inhabitants wouldn’t be able to cope and they’d have to leave the city. Changing the environment is much more effective in expelling the inhabitants than attacking with soldiers.

What are Some of Xylitol’s Applications? Studies have shown numerous uses for xylitol, many of which deal with its adverse effects on bacterial adhesion. Sinus, ear, and respiratory infections begin in the nose as we breathe in bacteria which attempt to adhere to the cell membrane. With the use of nasal sprays containing xylitol, the bacteria found in the nose cannot stick to the tissue and are to greater probability that they will not infect the body. Jeffrey Smith Warns Against GMOs by Linda Sechrist

effrey Smith is the founder and executive director of the Institute for Responsible Technology, author of Seeds of Deception and director of the documentary Genetic Roulette: The Gamble of Our Lives. Smith and his organization’s Campaign for Healthier Eating in America are spearheading consumer rejection of genetically modified foods (GM/GMO) in order to force them off the market.

What basics should everyone know about GMOs? Genetic engineering is different from traditional crossbreeding. In engineering six major GMO crops—soy, corn, cotton, canola, sugar beets and alfalfa—a gene from a virus or bacteria was forced into the DNA of the plants. Derivatives such as soy lecithin, soy protein, highfructose corn syrup and sugar (unless labeled as cane sugar) are in the vast majority of processed foods.

How did GMO foods invade grocery shelves? Many U.S. consumers mistakenly believe that the U.S. Food and Drug Administration (FDA) approves GMO crops only after careful study. Instead, the agency claimed it wasn’t aware of any significant difference from other food crops and declared safety testing unnecessary. In reality, according to FDA documents later made public in a lawsuit, the consensus among FDA 42

Bush administration ordered the agency to promote biotechnology as a way to increase U.S. food exports, the FDA responded by creating a new position of Deputy Commissioner of Policy for Michael R. Taylor, a former Monsanto attorney. He later became a Monsanto vice president and is now back at the FDA as the U.S. food safety czar.

Why is Roundup, Monsanto’s weed killer for GMO crops, so toxic? Monsanto portrays Roundup as a benevolent herbicide. This is a lie. Glyphosate, its active patented ingredient, alters biochemical pathways in the body. Scientists such as Anthony Samsel and Stephanie Seneff have linked glyphosate to numerous diseases and disorders, including cancer, heart disease, diabetes, gluten sensitivity, Alzheimer’s, Parkinson’s, depression, autism and reproductive disorders. In March, the World Health Organization declared it a probable carcinogen.

How can we avoid unlabeled GMO foods? Eat organic foods, which are not allowed to contain GM ingredients, or products that are labeled non-GMO,

or those that don’t contain derivatives of the current nine GMO food crops, which now include some zucchini, yellow squash and papaya grown in Hawaii or China. Any packaged grocery product not labeled “Non-GMO” or “Organic” is likely to contain at least one GMO; this includes meat and dairy products, from animals that have eaten GM feed. NonGMOShoppingGuide.com is a reliable resource that lists about 30,000 non-GMO products. A non-GMO diet is recommended by thousands of doctors, as well as the American Academy of Environmental Medicine.

What more can “we the people” do to eradicate GMOs? We are in control, not government agencies. I believe that promoting a stronger message—that GMOs are dangerous and should be avoided—would better serve consumers and the food-labeling movement. High-profile campaigns will continue educating consumers about the dangers of GMOs and the necessity of rejecting them in favor of healthier nonGMO choices, especially for children that are most at risk. The desired result is that food companies will feel the loss of profits and remove GMOs as a liability. The tipping point in the U.S. is almost here. In 2013, the president of Whole Foods announced that when a product becomes verified as non-GMO, sales leap by 15 to 30 percent. Thousands of natural product brands were immediately enrolled for verification. Now conventional brands such as Post Foods’ Grape Nuts, Target’s Simply Balanced brand, Ben & Jerry’s ice cream and Chipotle’s restaurant menu are GMO-free. General Mills stopped using GMO beet sugar in Cheerios. When the rest of the food industry sees these non-GMO-labeled products increase in sales in conventional supermarkets, they will be forced to eliminate GMOs as well, to protect their market share. eople are biking more than ever. Recreational bicycling ranked second to running as the favorite outdoor activity among both youths (6 to 24 years old) and adults (25-plus) in a recent Outdoor Industry Association study. The National Highway Traffic Safety Administration (NHTSA) further reports that from 2000 to 2012 the number of Americans biking to work rose from 488,000 to 786,000. This positive trend also means more crowded bike lanes and other pathways challenge the community infrastructure’s ability to keep up, raising safety concerns. Plus, we naturally want to avoid aches and pains while enjoying the myriad benefits of pedaling.

Find the Right Bike

“Having the right bike for one’s needs that’s properly fitted is crucial,” says Dan Moser, a founder and steering committee member of the BikeWalkLee community coalition and a traffic safety consultant in Fort Myers, Florida. “Use a local bike shop whose mechanics test and adjust the bikes they sell.” A bike mechanic can determine the proper seat height and ideal distance from the handlebars to the seat tube. Back, knee or hip pain may develop if a 44

cyclist has to stretch their legs to get to the pedals, explains Tim Bustos, a bicycling consultant in Pensacola, Florida, and former bicycle and pedestrian coordinator for Davis, California, which

Biking only in daylight and avoiding alcohol could improve those numbers because 48 percent of biker fatalities occur beginning at 4 p.m. and 37 percent involve a driver or bicyclist that has been drinking. Even well-marked bike lanes don’t guarantee safety, so caution is required. Some motorists are careless about entering bike lanes and don’t correctly stop at crosswalks or look behind before opening car doors. The University of North Carolina’s Highway Safety Research Center, in Chapel Hill, reports that wearing a helmet reduces the overall risk of head injuries by 85 percent. “Cyclists are part of traffic, whether operating on a road, pathway or a combination,” says Moser. “Being acutely aware of one’s surroundings and minimizing distractions, following the rules of the road and pathway, and being prepared to deal with others’ mistakes are all vital.”

In addition to ensuring they’re employing proper leg extension, she advises, “Pedal a little faster in a lower gear; ideally, 75 to 90 revolutions per minute, which is easier on the knees and lessens muscle fatigue than traveling slower in a higher gear.” She explains that the correct seat height facilitates proper alignment of hips and a full rotation; if not, energy is forced outward, stressing the hips. Martin adds that the neck might experience strain from tilting the head up for long periods. “This can occur by wearing a helmet that is too low or forward in the front or poor-fitting eyewear that inches forward down the nose.” Right after a long ride, Martin suggests that riders gently bend downward over their crossed legs a few times, alternately switching legs, and also slowly bending the head up and down, sideways and then in a circular motion for a couple of minutes. “Overall,” she says, “the key is to have fun.”

acations bring rest and less stress, a change of pace and for some, a break from caring for the family pet, made possible by a growing number of professional pet sitters. “I have more peace of mind with a pet sitter rather than a friend. Even if they’ve already had a long day, sitters still properly take care of the pets,” says Christina Pierce, a federal examiner of financial institutions for consumer protection in Little Rock, Arkansas. “Many professional pet sitters are trained to respond to potential health and other issues. Especially with small animals, early recognition of a problem is key.” Pierce used to have chinchillas, and now has a cat she rescued and relocated from Dallas, Texas, plus two adopted former foster rabbits. “A sitter may be excellent, but not know your breed,” advises Rae Bailey, a retiree in Georgetown, Texas, who regularly uses sitters for her Scottie when she travels. “Don’t be afraid to ask questions.” She notes that dogs are particularly good judges of character, so if one doesn’t like the sitter, simply try another. Pet sitting services use a contract to outline rates, what the sitter will do, the number and duration of daily visits, start and end dates and how the house key is returned when the job is complete. Regular clients may have the sitter keep the key handy. Professional sitters are bonded, insured and backgroundchecked, have experience with a variety of species and breeds, are fairly flexible and love animals. A pre-visit will introduce

pets and sitter to each other and address any relationship concerns and individual needs, such as medications. “I had a diabetic Westie, a big consideration,” says Diane Meadows, a retired paralegal in San Antonio, Texas. “It was huge for me to hand over the keys and my trust, but our sitter was dependable and knowledgeable.” During one visit, her sitter also alerted Meadows to a possible propane gas leak. At the outset, have the sitter meet all the family pets to ensure mutual comfort. Show the sitter where the leash, toys, treats, food and water dishes are kept, supplies for cleanups, the family vet’s location, hours, office and emergency phone numbers and instructions for any security alarm system. Codes can be personalized and deactivated when no longer needed. Sometimes clients request extra services such as collecting the mail and newspapers, watering indoor plants and leaving lights on. Both young and older dogs need three visits a day to avoid household accidents. Cats are usually fine with one. “Cats like to be pampered. Upon arrival, she climbed on top of the car rather than go inside. “She was adamant,” he says. “I hired a sitter the next day. She loved her sitter’s visits.” Whether pets need special attention, daily walks, a midday backyard break or multiple visits while the family vacations, a pet sitter can provide excellent care.
