HEALTHY LIVING HEALTHY PLANET

O

n a recent evening, I was washing lettuce, arugula and other greens I’d just picked from the garden.

This spring has been pretty unfavorable to backyard gardens­—cool, wet, foggy, record rainfall and temps lower than normal. Much of what I’ve planted is off to a slow start, with a few tomatoes, peppers and eggplants still waiting in their pots for some dryer soil. (Yes, these are the same tomatoes and peppers I started indoors in March). But, the lettuce is doing great.

As I stood at the sink marveling at the incredible colors and shapes in the lettuce varieties, I recalled the freshly picked lettuce from the gardens of my childhood. I remember my mom rinsing leaf lettuce at the big, white, porcelain sink that spanned the width of the kitchen windows. We had too much shade in our northwest side backyard to grow a lot of veggies Peggy Malecki (available sun was delegated to the tomatoes), but my grandparents on both sides had far more sunshine in their yards, and with that came an abundance of lettuce to share.

Salads were simple when I was a kid, and not the elaborate, multi-vegetable entrees I favor now. My grandparents grew basic green leaf lettuces. Early in the season, I recall that the lettuce was augmented by a sliced, store-bought cucumber and perhaps some croutons. The first garden cukes appeared in late July; initially sliced paper thin, and as the crop increased, added to the salad in large slices. Late in summer, green peppers and tomatoes enhanced the salad. Likewise, no fancy dressings. Choices at home were typically French and Catalina (my dad’s favorite) and a variety called Viva Italian! No store-bought dressing at my grandma and grandpa’s table; they relied on whisked sour cream, vinegar, a dash of water, plus salt and pepper.

Gardening and growing food is proven therapy to lift spirits, calm us, connect us with others and nourish body and spirit. The act of coming together to grow our own food in backyard or community gardens builds bonds and common experience. I believe that no matter how big your garden is—be it herbs in a windowsill container, a few peppers and tomatoes between your house and a neighbor, raised garden beds in a large space, or a community garden—the experiences you have and the food you enjoy will create lasting memories. For those without a garden, visiting or helping in another’s garden and enjoying the harvest also makes an indelible impression. Farmers’ markets, CSAs and other places to taste and share local food all build our communities and communal memories, as well.

Vegetable gardens are part of the larger conversation of local agriculture, and the importance of building and maintaining a healthy local food supply accessible to all of us.

Sure, homegrown veggies taste great, but they also contribute greatly to our overall health and the well-being of our communities. I’m pleased to say that urban and suburban agriculture take the spotlight this month in Natural Awakenings Chicago, with fresh perspectives on where and how we produce our food these days—and why it matters to us on so many levels.

Last Call to Enter Chicago Gardening Awards uly 7 is the deadline for entering the third annual Chicago Excellence in Gardening Awards (CEGA), Chicago’s only citywide gardening honors. Entry is free and open to the public. The awards recognize the hard work and creativity that make Chicago a healthier, more beautiful and more sustainable place.

Any garden type is welcome, including vegetable, ornamental, container, mixed use and specialized gardens (including green roof or wall, enabling and rain). The contest includes these categories: residential, small (up to four units); residential, large (five units and over); school; community garden; other organizations (business, church, fire department, etc.); and urban farms. As always, CEGA recognizes and rewards sustainability in the areas of native plant choices, water conservation, pesticide use, habitat restoration and more.

This year, the Metropolitan Water Reclamation District of Greater Chicago has donated five highquality rain barrels. Entrants will have a chance to win one of these barrels for their garden. In addition, everyone that enters their garden in CEGA will receive a $15 gift certificate from City Grange garden center (CityGrange.com).

CEGA is open to residents of the city of Chicago. Only one entry per garden will be accepted.

Submit online by July 7. Mailed entry forms must be postmarked by June 30. Judging begins in mid-July.

Winners will be notified by late summer, with awards presented in October.

Safe Haven Charity Run Fights Homelessness

Safe Haven Foundation will conduct the ninth annual, 5K Run, To End Homelessness beginning at 8:30 a.m., July 13, at Montrose Harbor Grove 16. The day includes a competitive or casual opportunity to participate in Chicago’s largest 5K Run and Walk along the dazzling Chicago lakefront, and a Fun Run for kids 12 and under (free with pre-registration).

After 25 years of serving Chicago, A Safe Haven Foundation has helped more than 100,000 people break the cycle of homelessness and addiction. All proceeds from the event will exclusively go to help homeless individuals—youths, single mothers, families and veterans—transform their lives and achieve long-term self-sufficiency.

The nonprofit A Safe Haven Foundation helps people aspire, transform and sustain their lives as they transition from homelessness to self-sufficiency with pride and purpose. Register Now for McHenry County’s Largest Green Event

he McHenry County College (MCC) Sustainability Center will hold its annual Green Living Expo from 10 a.m. to 3 p.m., November 2, at the MCC gym/multipurpose room and surrounding areas of the college, in Crystal Lake. The Importance of Addressing Your Gut Health

xactly what those different life forms do has been the subject of some exciting research in recent years, and while a few of these organisms can sometimes wreak havoc with your system, the majority of these “bugs” are good, helping you digest your food, stay protected from infections and even keeping your immune system properly regulated to prevent autoimmune diseases. In addition, mice lacking gut bacteria have been found to engage in “high-risk behavior,” and this altered behavior was accompanied by neurochemical changes in the mouse brain. Dr. Cryan believes beneficial microbes could one day be used to treat mental health problems in humans.

In further confirmation of the importance of the gut-brain axis, 18 Italian students at the University of Verona from ages 18 to 33 that took a freezedried mixture of four probiotics for six weeks experienced less depression, anger and fatigue compared to a control group of 15 that consumed a placebo. The positive effects continued, as discovered in follow-up testing three weeks later. The probiotics group also slept better.

The probiotic bacteria blend of 4 billion colonyforming units included Lactobacillus fermentum, Lactobacillus rhamnosus, Lactobacillus plantarum and Bifidobacterium longum.

Seniors that ate more than 10 grams—about two teaspoons—of nuts a day were able to ward off normal cognitive decline and even improve their cognitive functions by up to 60 percent, according to University of South Australia researchers. The study was based on 22 years of records of 4,822 Chinese adults ages 55 and older; 17 percent of them ate nuts every day, most often peanuts. These seniors had as much as 60 percent improved cognitive function compared to those that didn’t eat nuts, and they showed better thinking, reasoning and memory. “Nuts are known to be high in healthy fats, protein and fiber with nutritional properties that can lower cholesterol and improve cognitive health,” says study author Ming Li.

With the aid of a new infrared camera technology called optical coherence tomography angiography (OCTA), early Alzheimer’s disease can be detected by checking the back of the eyes for weakened and decreased blood vessels, reports a new study. Northwestern Medicine researchers reached the conclusion by comparing the vessels in the eyes of 32 people that exhibited the forgetfulness typical of early-stage Alzheimer’s with those of another 32 people with normal cognitive

Try Cordyceps to Strengthen the Lungs People suffering from chronic obstructive pulmonary disease (COPD), which includes emphysema and chronic bronchitis, can breathe easier by taking the Chinese medicinal fungus Cordyceps sinensis, a new meta-analysis shows. Researchers at the Guangzhou University of Chinese Medicine conducted a review of 15 high-quality studies that involved 1,238 COPD patients and found that cordyceps significantly improved lung function, exercise endurance and quality of life with no report of any serious adverse effects. Cordyceps, which is said to relax and open the airways, has long been used in Traditional Chinese Medicine as an anti-asthmatic, expectorant and cough suppressant.

Snack on Walnuts to Slow Growth of Breast Tumors

The gene expression in the breast cancers of women that ate a handful of walnuts each day for about two weeks changed in a way that suppressed the growth of the tumors, according to a small clinical study from the Marshall University School of Medicine, in Huntington, West Virginia. Five women in the experimental group with biopsies that had revealed breast cancer tumors ate two ounces of walnuts a day until their surgery two to three weeks later. Using cells taken during surgery, researchers identified 456 genes in the walnut-eating group that had significantly changed their expression and slowed tumor growth.

The inflamed gum condition known as gingivitis is fairly common and often mild, but can be a precursor of more serious periodontal disease linked to Alzheimer’s and rheumatoid arthritis. German researchers at the University of Freiburg tested 30 people: half in a control group that did not change their diet, and half that switched to a diet low in meat and processed carbohydrates and rich in omega-3 fatty acids, vitamin C, vitamin D, antioxidants, plant nitrates and fiber. After four weeks, those on the plant-based diet had significantly less gum inflammation and bleeding. They also lost weight and had higher vitamin D levels.

New research has found the basic micronutrient vitamin B12 may be the first good tool for averting the hereditary form of Parkinson’s disease, which accounts for about 15 percent of such cases worldwide. In lab tests, an international team of scientists found that AdoCbl, one of the active forms of vitamin B12, inhibits the activity of a mutated enzyme linked to Parkinson’s. Inhibiting this enzyme appears to help stabilize dopamine release in the brain.

Dopamine deficiencies manifest in the muscle rigidity and tremors that are hallmark symptoms of Parkinson’s.

Another recent study from the University of California San Francisco that included nonhereditary Parkinson’s patients found that symptoms worsened more quickly in early-stage patients that had low B12 levels than in those with higher levels of the vitamin.

Cannabis is enjoying a renaissance of sorts, and one new application for hemp, the no-buzz industrial variety used in fabrics, oils and foods, is cleaning nuclear radiation from toxic soil and removing metals like cadmium, lead, mercury and other pollutants via phytoremediation.

Allison Beckett, a cultivation expert at Marijuana.com, says, “Industrial hemp has been used in areas of high radiation, such as Fukushima, [in Japan,] with promising results. Not only does hemp pull toxic, heavy metals from the soil, it actually improves soil structure, making it usable as productive farmland again.

Plus, hemp is a vigorous plant that absorbs CO2 rapidly, making it an encouraging solution to climate change.” Hemp phytoremediation has been used in Italy to clean up the small town of Taranto, where a steel plant has been leaking dioxin into the air and soil. The Pennsylvania Industrial Hemp Council and Lehigh University, in Bethlehem, are running a project to test the process in an arsenic-contaminated area in Upper Saucon Township that once harbored a zinc mine.

Ireland Declares Climate Emergency

The Republic of Ireland is the third country worldwide to declare a climate emergency, with both the government and opposition parties agreeing to an amendment to a climate action report. “We’re reaching a tipping point in respect of climate deterioration,” says Climate Action Minister Richard Bruton. “Things will deteriorate very rapidly unless we move very swiftly, and the window of opportunity to do that is fast closing.” The UK governments of Wales and Scotland have also declared climate emergencies. Suggested responses include limiting oil and gas exploration, and issuing an additional biodiversity emergency measure.

The world’s oceans may be getting bluer, thanks to climate change. The effect is more likely to be detected by satellites than Earthbound people, and is caused by the depletion of marine phytoplankton as seawater warms. A new study from the Massachusetts Institute of Technology published in the journal Nature Communications predicts that more than 50 percent of the oceans’ collective 140 million square miles of surface area will likely be affected by 2100. Marine ecologist and leader of the study Stephanie Dutkiewicz says, “These microscopic organisms live in the water and are the base of the marine food chain. If there are less of them in it, the water will be slightly bluer.” Phytoplankton serves as a food source for small sea creatures that are eaten by fish, squid and shellfish. If phytoplankton populations dip too low, vital fisheries in certain areas could be decimated.

The Dirty Dozen list includes strawberries, spinach, kale, nectarines, apples, grapes, peaches, cherries, pears, tomatoes, celery and potatoes. Greenhouse Gases Hit Landmark

Certainty that we are facing a climate crisis today and not just in the future was reached in May through an alarming milestone in carbon dioxide levels. Attracts Community ‘Champions’

T

his year, a record five Joliet-area companies—DuPont, Ecolab, Exelon, Harrah’s Joliet, and Waste Management of Illinois—were recognized as “Prairie Champions” for supporting ecological restoration at the U.S. Department of Agriculture Forest Service’s Midewin National Tallgrass Prairie, in Wilmington, both with employee volunteerism and corporate donations.

The Wetlands Initiative (TWI), a nonprofit partner with the Forest Service at Midewin, led a Corporate Volunteer Day event on May 22, during which teams of employees from each company planted thousands of native seedlings to benefit the declining monarch butterfly and other rare insects, birds and wildlife.

To earn the Prairie Champions recognition companies committed to send a team of volunteers to the Corporate Volunteer Day and pledged $1,000 or more in donations to the prairie restoration effort in the past year. The Prairie Champions program began in 2016, benefiting the Lobelia Meadows Restoration Project at Midewin. In 2019, the companies supported a massive, new, seven-year restoration effort on Midewin’s west side. “We rely on these dozens of employees to expand the prairie restorations by thousands of plants each year,” says Allison Cisneros, The Nature Conservancy Midewin project manager.

The Wetlands Initiative, an Illinoisbased nonprofit organization dedicated to restoring the wetland resources of the Midwest, has worked closely with the Forest Service to carry out on-the-ground habitat restoration projects at Midewin since 1997.

Beginning in 2016, TWI has expanded its work at Midewin, tackling a $6.7-million restoration project in collaboration with the Forest Service and the National Forest Foundation that will ultimately transform 1,800 acres back to a rich prairie–wetland landscape. Once complete, the new restoration will create a vast corridor of wetland Staff stage trays of native seedlings and prairie habitats that will also provide for planting by volunteers unique educational and recreational opportunities for the public.

“Our employee volunteers were very excited to work the soil and plant the plugs that will grow into habitats for the iconic monarch butterfly,” says Exelon Generation Braidwood Station Site Vice President Marri Marchionda-Palmer. “As a proud producer of enough carbon-free energy for more than 2 million area residents, we are strong environmental stewards, and we really appreciate our growing partnership with the Wetlands Initiative at Midewin.”

What role does food play in medicine?

The second aspect is activity. We are a sedentary society. We sit a lot, so we need to move and be physically active. Sitting is the new smoking. It’s easier to prevent problems in our physical body than it is to fix them afterwards. If we choose the right way to eat and the right way to move, we are fending off about 90 percent of the physical problems we could be having.

What kind of medical outcomes inspire you?

For me, it’s watching the reunion of patients

with their families, patients who have gone through a successful rehabilitation and are then able to return home. My patients may be going through rehabilitation from two weeks to two months so that they can get back to a level of independence and return home to live with their loved ones. When we see patients who come to us who can’t get out of bed to walk, etc., and to see them regain their independence, that joy is amazing.

We have so many patients who come back to see us after they’ve reunited with their families to thank our entire staff for the help they received. It’s so gratifying to watch someone get back to what they want to do. Those reunions are always very special moments.

What do you think is one of the most surprising aspects of medicine?

The body has an unbelievable ability to heal itself. God has created this miracle which sometimes we need to guide back on track.

There are physical things we can do to our body to help it heal itself without needing an external medication.

During time of illness, people often become introspective about their choices around diet and exercise. Food can become medicine. What we’re seeing in the research, overwhelmingly, is that when people go on a plant-based diet—with whole grains and vegetables (not processed and packaged!)— many of these chronic illnesses begin to peel away. They begin to live disease-free and enjoy renewed health and vitality.

What do you like most about Veggie Fest Chicago?

It is, by far, my favorite festival, ever! It has the most diverse group of people who all have one common thing they are looking for, and that’s happiness. I’ve seen more smiles at Veggie Fest than anywhere else.

For some people, their happiness comes from the international food court or from the food demos. For others, they enjoy taking their kids to the Children’s Tent, watching them get their faces painted or having fun in a parade. Others love the fantastic live music or to go listen to a speaker from the health community give a talk on health or the environment.

By far, however, the biggest shining light, no doubt, is hearing Sant Rajinder Singh Ji Maharaj’s keynote address. He comes to the festival every year, blesses us with his spiritual presence, and helps us understand the benefits of the vegetarian diet beyond the physical.

It’s very easy to understand the physical and emotional benefits of a plantbased diet, but to really grasp the spiritual concepts, we are very lucky to have Sant Rajinder Singh Ji share his knowledge. He is the inspiration and guiding force behind the entire event.

When growing commercially, find a niche, says Niraj Ray, of Cultivate the City. The company grows plants of ethnic or cultural significance to appeal to Asian, African and Latino populations, from the nutrition-packed moringa to okra, a staple of both Indian and African cooking, given it is a growing market for immigrant populations not served by most traditional garden centers.

Seek natural allies like sustainability-minded chefs to bolster an urban ag business. The farm-to-fork chef ’s movement has been a boon for beekeepers and farmers, with chefs acting as patrons of the farms, according to beekeeping expert Teresa Coldwell. Sette Bello Ristorante, an Italian restaurant in Fort Lauderdale, funds vertical gardens at a community garden where the Coldwells have hives so its chef can have pure organic food like squash blossoms pollinated by local bees.

Metropolitan Water Reclamation District Marks 130 Years of Service

C

ompost, trees and rain barrels do not necessarily come to mind when considering the work of the Metropolitan Water Reclamation District of Greater Chicago (MWRD). The organization serves Chicago and 128 suburban communities to protect area water quality in both local waterways and the drinking water supply in Lake Michigan, while also working to minimize flooding across Cook County.

Over 130 years, the MWRD’s scope has evolved beyond protecting local water resources to pursuing innovative ways to recover other resources. One example is the new MWRD EQ Compost, in which the MWRD co-composts three parts wood chips with one part biosolids, an organic material that is a product of the wastewater treatment process.

Biosolids are used as a soil amendment to improve the organic carbon content, structure and porosity of soils to allow plants to more effectively utilize nutrients. Another bonus is that it is available to the public for free. Gardeners can either pick up the compost—“bring your own bucket”—or receive free delivery on orders of 10 cubic yards or more.

The EQ Compost can be blended with topsoil or potting soil 20 to 50 percent by volume to establish grass, repair lawns, to make a soil blend for planter boxes or pots or for raised vegetable or flower garden beds. It can also be used as mulch.

Trees are another environmental management tool that contribute clean air, shade, carbon sequestration and protection from wind and noise. Trees also align with the MWRD mission of stormwater management by absorbing water and reducing flooding. In response to the decimation of the area’s tree population due to emerald ash borer infestations and extreme weather, the MWRD launched a Restore the Canopy initiative in 2016.

Each Wednesday morning at its water reclamation plants, the MWRD gives away free oak tree saplings alongside the compost—more than 64,000 in only three years. Like rain barrels, which the MWRD distributes at cost via its website, the tree saplings work to conserve water, mitigate flooding and improve regional water quality.

Grow Ohio Valley takes an integrated approach to food sovereignty in Wheeling, West Virginia, and the Upper Ohio Valley.

“This part of the Appalachian Rustbelt has lost much of its population, jobs and economic base over the last generation. We want to promote health and wellness through fresh food, while helping to transform the urban landscape from falling-down buildings and vacant lots into productive community assets,” says founder Danny Swan.

The operation’s food hub aggregates produce from small local farmers, providing a guaranteed market for their produce and the opportunity to reach a larger market, usually only served by food grown thousands of miles away. The produce is supplemented by four urban farm sites run by the organization, including an apple orchard on the site of a demolished housing project.

Grow Ohio Valley also works to reach the “last-mile customers” that lack access to high-quality affordable produce via a mobile farmers’ market that goes to housing projects, senior communities and schools six days a week.

Their latest project, the Public Market, is a retail location on Wheeling’s Main Street that will serve as a year-round farmers’ market. The organization is also building alliances between local farmers and healthcare providers through a project called The Farmacy. A partnership with a local free clinic, it targets people suffering from diabetes and other diseases linked to poor diets with a doctor’s prescription for organic produce offered free through the organization’s CSA.

These urban agriculture pioneers are helping to not only grow food, but community, and are nurturing renewed connections to the Earth. City growing has so many benefits: decreasing packaging, costs and food miles traveled, making it easier to eat organic seasonal food and a more diverse diet. “The connection people feel when they plant seed and get to harvest the mature plant is transformative. Growing food is something we can all do to make a difference, for our health and the environment,” says Coleman.

Urban Agriculture in Chicago

I

t might surprise Chicago residents to learn there are more than 850 urban farms and community gardens, with at least one in every ward. It’s also possible that a local alderman or alderwoman has no idea what type of urban agriculture exists in their own community, which can range from a small residential garden to commercial urban farms. To help educate members of the city council and proactively support growing interest in urban agriculture, Advocates for Urban Agriculture (auaChicago.org) launched its Ward Ambassador program in 2016.

Our city council members deal with many issues and concerns, but urban agriculture often isn’t something they know much about, says Nick Lucas, program manager for Advocates for Urban Agriculture (AUA). As generalists, they tend to know a little bit about everything but it’s hard to stay abreast on what’s happening around urban farms, or composting or urban livestock. Ward 32

How Ward Ambassadors are Helping to Grow

ambassadors bridge the gap and serve as a trusted source for an alderperson to turn to for information.

The catalyst for the Ward Ambassador program came in 2007 when the city of Chicago almost banned backyard chickens.

Lucas says that at the time, a member of the committee voting on the proposed ordinance had a child at a school where one of the teachers was a chicken keeper. Hers was one of the voices the committeeman turned to in order to learn more. Thanks to trusted, preexisting relationships like theirs, the advocacy effort was successful, and the chicken coops were spared.

Urban agriculture enthusiasts quickly realized they needed to be more proactive in their approach so they wouldn’t be faced with a similar threat in the future. “Two things really came out of that experience,” says Lucas. “One was the need to be proactive with relationship building, and the second was the importance of being a little more forward-facing so that we’re not in a reactive mode when something comes up.”

He advises, “We want to put a local face to urban agriculture.

It’s about making sure each of the city’s 50 wards has a knowledgeable representative who can educate elected leaders about urban agriculture, as well as long-term coalition building, in case they need to be mobilized in the event a specific bill is being considered or there is an issue to be addressed.”

Currently, 60 percent of the wards have a ward ambassador tasked with reaching out to their alderperson twice a year: once in the spring and once in the fall, to coincide with planting and harvesting season. “We’re striving for at least two ward ambassadors per ward, but our dream is for all 2.8 million Chicagoans to become ward ambassadors eventually,” notes Lucas.

For those that want to learn more about how to incorporate urban agriculture in their community, Lucas points them to AUA’s free resource guide available on their website (auaChicago.org), which includes everything from city ordinances to compost best practices.

People that have an urban garden can add it to the Chicago Urban Agriculture Map. There is strength in numbers, and when elected leaders realize how many of their constituents are actively keeping some sort of garden, they are more likely to take the time to learn how urban agriculture is positively affecting their wards.

HELP FOR HOME GARDENERS Extension Agents at Your Service

any home gardeners readily list flies, wasps and beetles among the “pests” in their gardens.

However, many of these are actually pollinators that help boost production of fruits and vegetables; others are beneficial insects that keep the real plant-killers at bay. A quick call to the local cooperative extension service can help sort out friend from foe— and that’s just the beginning of what this valuable, underutilized resource can offer.

Each year, millions in federal taxpayer dollars help fund county agricultural extension programs administered through the 108 colleges and universities that comprise the nation’s land grant university system. The U.S. Department of Agriculture (USDA), which supplies the money, also helps fund science-based research meant to reach not only farmers, but home gardeners seeking advice on best practices.

The USDA is trying to do a better job of raising public awareness of assistance that’s readily available, free of charge, especially now that it’s getting more funding.

Organic on the Rise

provided increases for many of our programs, including the organic agriculture research and extension initiative program for which we received significant funding,” says Mathieu Ngouajio, program leader for the USDA National Institute of Food and Agriculture.

The USDA is eager to see the connections their constituents are making with the research. “We want to identify the needs of organic gardeners, and the best way to meet those needs to get our research into their hands,” Ngouajio says.

County extension agents are on the front lines of this effort, offering low- or no-cost soil testing, handbooks on a variety of local gardening topics and workshops on everything from making rain barrels and creating rain gardens to implementing eco-friendly pest control, cultivating native plants and employing best practices for organic gardening. Master gardeners that volunteer their expertise are central to supporting extension outreach activities.

“We would love more business from the public,” says Weston Miller, an associate professor with Oregon State University’s extension service. “The public service of

the master gardener program is to answer questions,” including what and when to plant and how much irrigation is required.

In Oregon, there are 3,500 master gardeners, with 650 volunteers in Portland alone. “We train master gardeners in how to use our resources and interpret the research to the public,” Miller says.

“There are trained volunteers in pretty much every county in the country ready and willing to answer any gardening question,” Miller says. For example, a new organic gardener might not know the correct soil amendments to use or how to start a composting pile to supplement the soil in an organic garden.

There is also a nationwide network called Ask the Expert (USDA.gov/askexpert) and questions will automatically go to an extension staff person or master gardener in the area where the inquiring gardener lives.

Reducing Confusion

Many of those getting into organic gardening might feel confused as to what connotes organic, Miller says. “Organic gardening is using a naturally formed material for fertilizer and pesticide, from plant, animal or mineral sources.”

The biggest area of confusion is that many people think organic means pesticide-free. But that is not always true.

There is organic pest control, Miller says.

“In terms of gardening, there are certified organic products you can use and still be organic.” One thing to look for on a label is the seal of the Organic Materials Review Institute, which indicates the product is suitable for organic gardening.

However, there aren’t many good options for weed management, he adds.

“You have to do weeding by hand or use an herbicide that isn’t organic.”

Another issue that extension programs can help with is making sure organic gardeners receive only scientifically researched information, says Nicole Pinson, an urban horticulture agent with the Hillsborough County Extension Service, in Tampa, Florida.

Soil as a Solution

erms like “organic”, “local” and “sustainable” are frequently heard when it comes to food and farming, and there are also a few new terms like “regenerative agriculture” and “soil health” that are important to the conversation. We may be hearing them because there’s a movement related to farming, food and climate change happening on a global and local scale. Regenerative agriculture is not something completely new and different from organic and sustainable farming; rather, its focus lies in understanding and valuing how soil really works.

Soil is a cornerstone of life on our Earth, but it is in trouble.

In 2015, the Food and Agriculture Organization of the United Nations (FAO) estimated that 33 percent of soil is moderately to highly degraded through erosion, salinization, compaction, acidification, chemical pollution and nutrient depletion, hampering its function. Soil is a valuable, non-renewable resource that deserves thoughtful care and management.

According to the Regenerative Agriculture Initiative, California State University, Chico (CsuChico.edu/regenerativeagriculture) and The Carbon Underground (TheCarbonUnderground.org), regenerative agriculture describes farming and grazing practices that, among other benefits, reverse climate change by rebuilding soil organic matter and restoring degraded soil biodiversity, resulting in both carbon drawdown and improving the water cycle. Specifically, regenerative agriculture is a holistic land management practice that leverages the power of photosynthesis in plants to close the carbon cycle and build soil health, crop resilience and nutrient density.

When a farmer allows soil life to flourish, the soil cumulatively performs a variety of invaluable functions from which we all benefit. Deep-rooted cover crops build a lively soil food web that makes plants healthier and the food farmers’ produce more nutritious. Living soils can absorb more water during big storms and hold onto it even in drought periods. Native wildlife and insects find the landscape friendlier for their survival. In a time of increasing climate change, soil “draws down”, or absorbs, carbon from the atmosphere.

ast December, a group of 18 farmers from across the nation and Puerto Rico convened at the Stone Barns Center for Food and Agriculture (StoneBarnsCenter. org), in Tarrytown, New York. The Center hosted a highly competitive program called the Entrepreneurship Intensive for Farmers and selected local farmer Jen Miller, of Prairie Wind Family Farm, to attend.

Jen and her husband Jeff own and operate Prairie Wind Family Farm, a 40-acre USDA-certified organic farm that grows a wide variety of certified organic vegetables, pasture-raised hens for eggs and provides fresh fruit to CSA members. They also attend the Oak Park Farmers’ Market from May to October. The farm is located in the heart of Prairie Crossing, a conservation community in Grayslake.

The Intensive’s facilitators recognized, “Farm owners and managers run complex, nuanced businesses. Those seeking to do so in a manner that is both economically and environmentally sustainable must apply creativity, vision and grit to their work.”

The previous farming season’s extreme weather events decimated one of the Miller family’s most important crops—tomatoes—so the Millers were no strangers to creativity and grit. “After we lost thousands of dollars due to our tomato crop failure, we realized that we needed to farm differently,” says Jen Miller.

“We re-envisioned our business to farm in ways that would better adapt to our changing climate, regenerate our soil and positively benefit our customers and our community.” With a vision in place, in 2019, the Millers began to dedicate significant time and effort toward building their soils and incorporating more regenerative farming practices onto the farm.

Prairie Wind Family Farm is already home to a variety of native plantings, marshlands and hedgerows that protect soil and serve as natural habitat for insects, birds and mammals. Even still, the Millers work diligently each day to increase soil health as they experiment with low-tillage, vegetablegrowing strategies, integrate a wide variety of cover crops, improve composting systems, build a permaculture “food forest” to increase the number of long-term, deep-rooted, perennial plants grown and balance the soil’s health.

Pollinate Native Plants, Fruits and Vegetables

hile raising monarch butterflies in her Round Lake backyard, Pam Wolfe began learning about some much lesser-known and tinier insects—native bees. She’s seen a green sweat bee visiting native goldenrods, asters and ironweed, and a squash bee visiting her vegetables.

“Native bees are the unsung heroes of pollination,” says Wolfe, a member of Wild Ones (WildOnes.org), which promotes using native plants. “People are concerned about honey bees declining, but they should also be thinking about and helping the native bees.”

Native bee numbers are declining both in the Chicago region and nationwide.

A Center for Biological Diversity (BiologicalDiversity.org) study has shown that nearly 25 percent of the nation’s native bee species are at risk of extinction.

Honey bees, which European settlers brought to North America in the 1600s, contribute nearly $20 billion to the value of U.S. crop production, according to the American Beekeeping Federation (abfnet.org). Their numbers have been declining due to reasons being researched by agriculturists.

But scientists are also focusing on the decline of native bees, which pollinate various crops such as blueberries and cranber38

ries, as well as a host of native plants that provide food and shelter for other wildlife.

Some native bees are capable of “buzz pollinating” plants, something honey bees cannot do—by rapidly moving their muscles to shake pollen loose from a plant.

Laura Rericha-Anchor, a wildlife biologist with the Cook County Forest Preserves (fpdcc.com) and a research associate with the Conservation Research Institute (ConservationResearchInstitute.org), notes her research is finding that some native bee species in the Chicago region are as common as they were 100 years ago, but others are quite rare or not being seen any longer. “Their numbers are declining due to pesticide, fungicide and herbicide usage, as well as habitat loss, climate change and the introduction of non-native bees,” she says.

Native Bees

“A grand symphony occurs with bees,” says Rericha-Anchor. “Bee species have synchronized their emergence from the ground with the blooming time of certain plants. But with the gradual warming we are observing, some bee species are emerging and their host plants are not available because they’ve already bloomed. If climate change predictions are correct, within 100 years, we will not only lose many of our native bees, but also the native plants they pollinate.”

She is writing a book-length scientific paper on the 483 bee species that occur in 53 counties near the southern tip of Lake Michigan in Wisconsin, Illinois, Indiana and Michigan. Many are native to the Chicago region.

One declining species is the rustypatched bumblebee. Once fairly common in the Chicago region, this bee’s population has declined by 87 percent in the past few decades, and is now listed as a federally endangered species. Like other native bumblebees, the rusty-patched requires plants that provide both nectar and pollen, underground nesting sites and hibernating areas for queen bees. Rusty-patched bumblebees are easy to identify if seen closely. The worker bees display a rusty patch in the center of the yellow hairs on their abdomen. ummer is an ideal time to add a healthy dose of fresh, organic herbs to make cool salads, luscious smoothies and other hot-weather eats and treats. Herbs are not only a flavorful addition to any meal, they are also chock-full of health benefits, from lowering blood pressure and improving mineral balance to increasing immune support, hydration, energy and healthy skin.

Most people consider using herbs in small amounts as seasonings for recipes such as spaghetti sauce, soups or desserts. However, they are edible plants, just like kale and spinach.

Although they tend to have strong flavors when dried, fresh herbs are usually quite mild and can be eaten in large amounts like any other vegetable.

Cool Benefits “Summertime herbs are important for dealing with the heat and humidity that the season brings,” says Nathaniel Whitmore, a Chinese medicine herbalist and shiatsu massage practitioner in Milford, Pennsylvania. An herb that he recommends for this time of year is American ginseng, which, unlike its Chinese namesake, is considered a “cooling” herb and helps keep the body moist.

When combined with fresh chrysanthemum flowers, the result is a powerful elixir that both hydrates and energizes. “A piece of American ginseng root and a few chrysanthemums placed in a jar of water and set on a windowsill for a few days makes a great cold infusion,” says Whitmore. “You can store it in the fridge for a few days and drink it in small amounts at a time to benefit from its energizing and hydrating properties.”

Soft-stemmed herbs such as parsley and dill can be used in large amounts in salads and summer sandwiches. Other heat-tolerant herbs that are easy to grow include lemon balm, rosemary, lavender, mint and basil.

“Lemon balm is great for headaches and insomnia that are common during summer heat waves,” says Michelle Schoffro Cook, Ph.D., an herbalist and doctor of natural medicine, in Ontario, Canada. “Basil can help reduce summer achiness, while lavender serves as a relaxant and an excellent bug repellant.”

In addition to relieving headaches and restlessness, lemon balm is also beneficial for those that suffer from high blood pressure.

A study in the Journal of Herbal Medicine reports that it is helpful in reducing blood pressure in patients with chronic stable angina.

Rosemary, another herb used for sleep disorders, was found to also help improve memory and decrease anxiety in a study conducted in Iran at the Kerman University of Medical Sciences.

One study in 2009 by researchers in the Department of Biochemistry at the University of Allahbad, in India, revealed that polyphenols found in herbs and plants harbor antioxidant properties that can help reduce the risk of developing cancer, cardiovascular disease, diabetes, osteoporosis and neurodegenerative disorders.

Fresh Is Best While herbs can be used in their extracted and dried forms, the most significant health benefits are often found in the raw, organic plant. “Fresh is better,” says Whitmore. “This is especially true when it comes to the more aromatic plants such as basil and lavender. A lot of the more volatile constituents are lost during the drying process.”

Most herbs grow best in dry garden areas that receive at least eight hours of sun each day. Although some herbs can grow in partially shaded locations, they won’t be as flavorful. Many herbs can also be grown in containers or pots.

Maria Noël Groves, a clinical herbalist in Allenstown, New Hampshire, and author of Grow Your Own Herbal Remedies: How to Create a Customized Herb Garden to Support Your Health & Well-Being, lists lemon balm, Korean mint, anise hyssop and purple basil as among her favorite summer culinary and beverage herbs that are easy to grow in pots. These make easy pickings for wraps, salads, sandwiches and more. “Lemon balm can also be used to make infused water,” says Groves. “With lemon verbena, lemon grass or holy basil, the result is refreshing and calming.”

Just take a few sprigs and place them in either plain or seltzer water. The result is a delicately flavored beverage that’s also healthy and hydrating.

Kale and Roasted Beet Salad Yields: 8 side salads

3 leeks, trimmed, sliced lengthwise and chopped 1 beet, rinsed, peeled and quartered 4 cups kale, loosely packed (other greens can be used) 1-2 Tbsp olive oil Pinch salt and pepper 1 cup stock (chicken or veggie) ¼ cup tahini ½ lemon, juiced 1 Tbsp honey 3-4 Tbsp olive oil Preheat oven to 400° F. Chop the leeks and beets and scatter over a baking sheet. Drizzle with olive oil, salt and pepper. Toss everything together to make sure it is well coated. Bake for about 20 minutes or until they begin to brown. Set aside.

Prepare the dressing by combining the tahini, lemon juice, honey and olive oil. Add salt and pepper to taste.

Prepare kale by cutting out the thick stem. Tear into bite-size pieces. In a large bowl, massage the kale with a little bit of olive oil to soften the leaves.

To the kale add the roasted beets and leeks. Then add the dressing and toss everything together.

For protein, add some favorite nuts or seeds from a local farmers’ market or roasted and shredded chicken from a local meat vendor.

Bring to a boil. Cook uncovered for 1 hour or until tender. Drain and let cool.

Toast the walnuts in a medium-dry skillet over medium-high heat until fragrant, 2 to 3 minutes.

In a large bowl, combine garlic, parsley, olive oil and lemon juice. Add wheat berries, vegetables, currants and walnuts.

Season to taste with salt and pepper.

Apricot Galette Yields: 4 to 6 servings

5-6 fresh apricots (preferably firm) Half a 17¼-oz package frozen puff pastry sheets (1 sheet) ¼ cup sliced almonds ¼ cup honey Optional: add a handful of raspberries or blueberries for color Preheat oven to 425° F. Pit apricots and cut into ⅛-inch-thick wedges.

On a lightly floured surface, unfold pastry sheet and cut out a 9-inch round.

Transfer round to a buttered, large shallow, baking pan and prick pastry all over with a fork.

Spoon almond mixture evenly over pastry, leaving a ¼-inch border. Decoratively arrange apricot wedges, overlapping them, and top with almonds and honey.

Bake galette in middle of oven until edges are golden brown, about 30 minutes.

Transfer galette to a rack to cool.

FOREST BATHING Mother Nature’s Rx for Body and Mind

I

n 1982, the Japanese government coined the term Shinrin-yoku (“taking in the forest atmosphere” or “forest bathing”) to inspire people to visit and appreciate national parks. Today, that walk in the woods has become a medically recommended activity worldwide for improving immunity, reducing symptoms of anxiety and depression, managing chronic pain and promoting better sleep. The research supporting the physical and mental benefits of forest bathing is so compelling that it’s advocated by the National Institute of Public Health of Japan and prescribed to patients there.

Researchers from the University of East Anglia, in England, examined years of studies and found significant evidence that experiencing nature has a positive impact on health. Published in the journal Environmental Research in 2018, the meta-

analysis involving 290 million participants from 20 countries concluded that spending time in green spaces lowers blood pressure and cholesterol, and reduces the stress hormone cortisol. The study also noted a lower risk of Type 2 diabetes and death from heart disease.

Terpenes and Tree Therapy

Another recent review of studies, published in the International Journal of Environmental Research and Public Health, concluded that Shinrin-yoku can ease the symptoms of adult depression. “Forest bathing plugs us into something we all seek—a source of peace and well-being. The thing that first hooked me into being a forest bathing guide was reading the robust body of research that proves the benefits of forest bathing,” says

Melanie Choukas-Bradley, a certified forest therapy guide and author of The Joy of Forest Bathing: Reconnect With Wild Places & Rejuvenate Your Life, in Chevy Chase, Maryland, attests to the therapeutic value of forest bathing. “Even occasional nature immersion can have beneficial health effects that can last for days. Many doctors are now prescribing nature to patients. There’s an organization devoted to this called Park Rx America.”

She recommends just 20 minutes during a lunch break to sit on a bench or on the ground beneath trees.

There are many theories of why spending time in the woods or any other natural place makes us feel good; for example, findings published in the journal Toxicological Research in 2017 attribute the immuneboosting, mood-lifting benefits of forest bathing to natural terpenes released into the air by trees, especially conifers. Terpenes contain anti-inflammatory properties that strengthen the body’s natural defenses.

Sensory Immersion, Not Exercise Shinrin-yoku is intended to engage the trinity of body-mind-spirit. “The main purpose is not exercise or getting from point A to point B, but rather having a mindful, sensory experience in nature. It isn’t some prescribed task you need to do, like pushups,” explains Hannah Fries, a poet and author of Forest Bathing Retreat: Find Wholeness in the Company of Trees. She communes with the wild for both health and inspiration. “Even if it’s only 20 minutes a week, go outside without a phone or other electronic device. Walk slowly. Look more closely. Listen. Smell. Touch. Interact with the living, breathing world around you. It’s that simple.”

It doesn’t matter if we commune with nature in a rural or urban setting, only that we remain dialed in to our surroundings. “Forest bathing is a tool for slowing down our buzzing minds and practicing a secret superpower—the skill of consciously choosing what we put our attention on,” says Beaudette.

Why Kids Need Unstructured Fun

ot so long ago, kids would be shooed out the door to play and told to return home at meal time.

But the rising use of digital devices and kids’ highly scheduled sports and school activities, as well as parental fears about safety, has made that kind of unstructured play rare—with resulting drops in children’s independence, resilience and creativity, experts say. In fact, play has been shown to be so critical to children’s development that an American Academy of Pediatrics 2018 clinical report, “The Power of Play,” recommends that doctors write prescriptions for it.

“Play is not frivolous; it is brain building,” concludes the report. It defines play as voluntary, fun and spontaneous activities that engross a child, often resulting in joyous discovery, and includes imaginative make-believe, experimenting and risk-taking. It cites 147 studies showing that play builds skills critical for adult success such as problem solving, collaboration and creativity; decreases 46

stress, fatigue, injury and depression; and increases range of motion, agility, coordination, balance and flexibility.

Here are some ways to up the play in children’s lives:

Give them lots of free time away from devices. Yes, they

might be bored at first—but boredom enhances creativity, partly by allowing for

The potential for learning is enormous.”

Don’t worry. “The data show that children are far more likely to get injured in adult-directed sports, where they are pushed to compete, than in free play,” says Gray. “Moreover, the kinds of injuries that occur in free play are relatively easy to recover from.” As for the fear of kidnapping by strangers, the odds are very small—one in a million, according to the latest U.S. Department of Justice data. “Weigh the effect of the limits you place on your kids to prevent that very, very, very unlikely possibility versus the fundamental importance for their own health and development of exploring freedom,” advises Brussoni.

There is tremendous power in being grateful, because what we focus on expands. Gratitude opens our heart to receive and give blessings. This puts us in a space to have more things to be grateful for.

Practicing gratitude can be as simple as saying, “I am grateful for…” or “I am thankful for…” If we find ourselves in a negative state, practice gratitude even for as brief a period as 60 seconds. It will positively shift our emotion, thereby allowing us to be open to abundance.

R = Receiving To graciously receive can be as simple as accepting a compliment.

Another way to receive is by requesting our heart’s desire.

There is nothing wrong with wanting more. The truth is that we can have more—as much as we are willing to receive.

A = Alignment The key way to get into alignment for more abundance is to know our purpose, follow our passion and work on releasing internal fears and doubts.

When we are in alignment, everything flows. There is ease and doors open for us. People, money and resources will show up on our path to help us achieve our goals. Therefore, we must always be awake to our goodness and take inspired actions to manifest our desires into reality.

C = Commitment Commit to gifting ourselves with an abundant mindset because our mindset is critical to our success. One way to quickly shift our mindset to the positive is to concentrate on our desire and ask ourselves, “What do I have to believe for this to be true?”

Our mind will creatively generate many possibilities that can get us excited, which then shifts how we think and feel to what is positive. As we do this, we will also create greater confidence in the knowledge that the universe is always working in our favor.

E = Expression Express our passion by first doing what we love. Then find a way to use our passion, purpose and life to serve others.When we do this, our world, our financial abundance and our joy will expand exponentially.

Alternatives to Antibiotics

Beyond Antibiotics Pets Can Heal With Natural Approaches

ike people, pets can develop allergies to medications that are overprescribed, including antibiotics, which also have a long list of side effects—many of which are long-term. There is also the escalating problem of resistance, which is the result of too-frequent and unnecessary use of these drugs.

One of the most important things to know is that dogs and cats are exposed to antibiotics when they eat food containing the meat of factory-farmed animals, which includes about 99 percent of pet foods on the market today. The exception is a very small number that contain free-range, organic ingredients.

Antibiotic Resistance

In many cases, even when bacteria are exposed for the first time to a particular antibiotic, the majority will die, but some will survive and pass on that resistance to other bacteria. The problem is not that certain disease-causing bacteria are antibioticresistant, but that the resistance genes in any type of bacteria can transfer their ability to survive to billions of other bacteria.

This is how superbugs are born.

These are a strain of bacteria able to withstand assault by multiple types of antibiotics. When a veterinarian can no longer eliminate bacterial infections with antibiotics, the life of the animal is threatened, and that’s the biggest concern.

If a veterinarian makes a diagnosis of infection, ask for a culture and sensitivity test. Otherwise, he or she is making a guess at what type of organism is present and the best antibiotic to treat it. Each time an unnecessary or inappropriate antibiotic is prescribed, the potential for resistance increases. Only in an emergency situation should a veterinarian prescribe an antibiotic before the culture and sensitivity test can be performed. The vet can then switch medications if necessary when the results arrive.

Giving the proper dose of the antibiotic at the proper intervals and using up the entire prescription is important, even if the pet seems to be fully recovered before the medication has run out. This will ensure the infection is totally resolved and prevent the pet from having to take another full course of antibiotics because

A 2016 study showed cranberry extract to be as or more effective in preventing E. coli-related urinary tract infections (UTIs) in dogs as short-term antibiotic treatment. In addition, cranberry extract can help fight multidrug-resistant bacteria in dogs with recurrent E. coli UTIs.

In a study of shelter dogs, researchers compared the use of probiotics to antibiotics to treat acute diarrhea caused by stress.

They concluded probiotic therapy was as effective as antibiotic therapy. In addition, dogs that were unresponsive to antibiotics appeared to benefit significantly from subsequent probiotic treatment.

Oregano oil, propolis, olive leaf, essential oils, colloidal silver and Manuka honey help reduce bacterial skin infections caused by methicillin-resistant staphylococcus aureus (MRSA) with good success.

If a dog or cat isn’t facing a lifethreatening health situation, talk with the veterinarian about alternatives to antibiotics.
