s I write you for the final issue of 2016, it’s an unbelievably warm November day forecast to be in the 70s. Not what we’d expect exactly one week ahead of Thanksgiving in Chicago. But then again, the Cubs won the World Series this year, so who knows. 2016 has been an emotional roller coaster for the world that’s to be continued in the new year—socially, politically and environmentally; and now the holidays are upon us. Sometimes we just need an escape to reflect and recollect, to recharge our batteries and gain inner strength for the work we all need to do in 2017. When I spotted the image we chose to use for our cover this month, I knew it was perfect. It made me feel comforted, cozy and ready to enjoy a nice cup of hot tea (while, of course, reading a copy of Natural Awakenings Chicago – LOL). I hope this cover creates a similar warm, relaxed feeling as you view it. One other very important detail is on our cover, and this leads me to this month’s message. Notice the hot beverage is in a cute, reusable ceramic mug. Nothing to throw away (and hopefully the tea bag will be composted). It was purchased once and can be reused for a good, long time. But the same can’t be said for takeout cups, which are an environmental nightmare because they can’t be recycled easily, if at all. ‘Tis the season for bright red cups and holiday designs from coffee shops. They’re festive, merry and simple to grab as we dash about on holiday errands; yet according to CNN, an estimated 60 billion paper cups end up in landfills annually (Starbucks says they produce more than 4 billion of these each year). Why can’t they be recycled? Realistically, many of us grab a cuppa joe, enjoy it and toss the cup because it’s an extra effort to bring it home and well-meaningly place it in the recycle bin. But did you know, those cups aren’t recyclable in most municipalities due to recycling equipment and market limitations? They’re made from cardboard with a thin layer of plastic tightly bonded to the cup to keep the drink warm and the cup firm, which is not easily recycled. The plastic lids often aren’t recyclable, either. Starbucks and other companies say they are working to develop truly recyclable materials, but for now, we’re stuck with pretty holiday cups that use resources and clog landfills. Here’s a simple way to help reduce the trash, and it makes a perfect holiday gift—a good-quality, reusable travel mug, ideally made of insulated stainless steel and not plastic, so it’s easier to clean and doesn’t get a funky aroma after a few uses (keep it out of the dishwasher for even longer life). Walk into a Starbucks with your mug and save 10 cents per cup (oh, and by the way, keep writing “corporate” about why all we get is 10 cents). Walk into your favorite place to get coffee with travel mug in hand and ask them nicely to fill your mug instead of using a paper or foam cup. Initially, you may get a puzzled look from the staff, but a smile and a big thank-you goes a long way. You may need to train the staff until they’re used to your request. On more than one occasion, I think I may have even inspired the person next to me in line at a local chain who didn’t realize we could bring our own mugs and that said, “What a great idea!” So now that we’ve solved at least part of your holiday gift-giving dilemma, I want to thank you for reading Natural Awakenings each month and for supporting our fabulous advertisers and distribution locations. Learn About Recycling and Celebrate Net Zero at The Plant
M
any of us have questions about everyday recycling, including how it’s processed, what can be recycled rather than thrown into a landfill and why single-use batteries are so hard to recycle. The Illinois Recycling Association (IRA) is hosting a fun evening for a great cause with its first Net Zero Networking event, from 5:30 to 8:30 p.m. on December 7, where attendees can mingle with recycling professionals and get answers to their recycling questions. The event will be held at The Plant, in Chicago’s Back of the Yards neighborhood. The IRA encourages the responsible use of resources by promoting waste reduction, re-use and recycling in Illinois. The Plant is home to Plant Chicago, a not-for-profit engaged in an ambitious experiment in “closing the loop” by developing a circular economy of food production, energy conservation and material reuse, while empowering people of all backgrounds to make their cities healthier and more efficient. Admission includes a tour of this breakthrough facility, including a look at its anaerobic digester that will process about 30 tons of food waste per day once in operation, a craft beer in the brand-new Whiner Beer Company bar and a sandwich from the award-winning Pleasant House Bakery.

Logan Square Farmers’ Market is Open this Winter

he Logan Square Farmers’ Market will remain open for business indoors from 10 a.m. to 3 p.m. Sundays through March 26, 2017, at the old Pierre’s Bakery. The market will hold a special holiday farmers’ market on Thursday, December 22, from 3 to 8 p.m. The outdoor season will start again the second Sunday in May. The market features staple items and specialty goods from seasonal soups to vegan and goat milk soaps, vegan pantry staples, cheeses, tofu, cured meats, juice, seasonal pies, breads and locally grown and milled flours, among other items. A breakfast nosh or lunch is available on-site. This producer-only farmers’ market hosts only vendors that grow or produce their own food and agricultural products, including seasonal produce and humanely pasture-raised livestock. itamin D is widely known for the regulation of calcium absorption and mineral balance that directly affects the maintenance of bone strength and initiates production of antimicrobial properties. These physiological functions reveal a correlation between vitamin D deficiency and increased cavities and periodontal disease. Dental caries (cavities) can develop when bacteria reduce the pH in the mouth. The acid that is formed then demineralizes the surface of the teeth that eventually can spread to dentin. A sufficient amount of vitamin D fosters properties that help reduce bacteria and acid in the mouth. Tooth enamel is composed primarily of minerals such as calcium, phosphorus and potassium. Vitamins D3 and K2 are vital in increasing the absorption of those minerals in the body. The foods that contain vitamin D naturally are few and mainly from animal sources like salmon, tuna and sardines, so fulfilling the recommended dietary allowance for vitamin D can be difficult. Vitamin D is also absorbed through the skin as a result of UV light (sun) exposure. A combination of limited dietary supply and sunlight, especially in fall and winter months, contributes to the majority of the population being vitamin D deficient. When supplementing the diet, vitamin D is most readily available to be absorbed when taken in liquid or gel form. However, if vitamin D is ingested in capsule form, it is best to take it with cod or olive oil in order to help the body absorb the vitamin. Schedule a 25 hydroxy vitamin D blood test with a doctor. Bright Lights Encourage Healthy Eating
R
esearch published in the Journal of Marketing Research links bright light to healthier food choices. The study observed 160 diners at four separate metropolitan locations of a chain dinner restaurant between 6 and 8 p.m. Two of the restaurants used bright lighting (250 lux luminance) and the other two locations had dim lighting (25 lux luminance). The researchers found that diners at the well-lit locations were more likely to choose healthy options such as baked or grilled fish and chicken than the patrons at the dimly lit restaurants. These results were replicated in a laboratory test of 700 college students where scientists attributed students’ healthier choices to the alert feelings that being in a bright room elicits.

Evanston Eye Wellness Helps Patients See and Feel Better by Carrie Jackson
W
hen Dr. Deana LaBrosse opened Evanston Eye Wellness, in Evanston, last March 2016, she wanted to have a space where she could incorporate natural and holistic treatments with traditional optometry practices. Her office provides comprehensive eye care, medical eye care and contact lens services, with a focus on dry eye treatment and preventive health. “So much of medicine is focused on sickness. I try to take care of systemic health to limit the spread of disease and identify the root causes of eye issues. Diet, lifestyle and genetics all factor into healthy eyes and vision,” says LaBrosse. With the help of advanced diagnostic technology and vision correction products, LaBrosse helps her patients find overall wellness. “People who haven’t had vision problems in the past may not think about their eyes on a regular basis. But everyone should be concerned with ultraviolet (UV) exposure, blue light and any changes in their eyes. Waking up with red or itchy eyes is not normal. Contacts that are dry or uncomfortable, even at the end of the day, isn’t normal or healthy,” LaBrosse says. Treating dry eyes is one of LaBrosse’s specialties and passions. She says technology has improved dramatically over the years so that doctors now understand more about how the fluid in the eyes is regulated. “We can now take an image of the eye glands and tears and see how much is fluid and how much is particulate matter. This allows us to tailor a treatment to the patient’s specific needs,” notes LaBrosse.

Instead of eye drops or surgery, LaBrosse first recommends more holistic treatments for dry eyes. “Blinking is one of the most basic things people can do to lubricate and cleanse their eyes. Every time you blink, the natural oils in the tear ducts are allowed to do their job. When we’re staring at a screen, we forget to blink. I encourage my patients to blink as much as possible, using the muscles in their ocular anatomy instead of other facial muscles. Nutrition also plays a role in eye health. Eating foods high in lutein and other antioxidants such as kale appear to help protect eyes from illness. Patients who are at high risk for eye disease can also take supplements,” she says. Computers are to blame for a lot of modern vision problems. “Screens today emit high-energy blue light which can damage the cells in the retina and has been linked to cataracts and

macular degeneration. With people spending 10 hours a day or more looking at a computer screen, cell phone or tablet, this can cause serious, long-term problems. We’re seeing it in patients as young as 12 years old now with permanent tear gland damage. I recommend my patients take a break to look away from the screen every 20 minutes. Focusing on something in the distance allows the eyes to rest and rejuvenate,” LaBrosse says. Eye wellness is about much more than just vision. Changes in eyesight and eye function can be indicative of illnesses such as diabetes, stroke, high cholesterol or even brain tumors. “The eyes contain neurologic tissue and are the only place in the body you can actually view blood vessels. During an exam, I can detect those changes and recommend the patient follows up with the appropriate specialist,” says LaBrosse. As a business owner, LaBrosse is able to form relationships with her patients and make sure they have the tools to be successful. “Part of my job is to educate them on eye wellness and find out any of their concerns. If they have a family history of macular degeneration or other eye diseases, they might need to come in more often than once a year, but in general, routine checkups are the best way to prevent decline. “I work with my patients to make sure they like their glasses so they’ll actually wear them. I teach them proper ergonomics for sitting at a desk so they’re not getting headaches or straining their eyes, neck or back. I ask them about their nutrition, lifestyle, daily activities and offer suggestions to improve their eye wellness, which leads to overall wellness,” she says. LOVING LARGE Scientists Say We’re All Connected

rue love is not something reserved exclusively for soulmates, couples, children, friends or family. Observations by sages for millennia and by enlightened scientists more recently are increasingly aligned with the point of view articulated by renowned meditation teacher Jack Kornfield that true love and awareness—a sense of universal connectivity and the idea that divinity, or the sacred, is found in all things—are indistinguishable.

This state of being, generally denoted by strong feelings of love or acceptance toward others, brings us into contact with universal energy which connects all of humanity with the natural world. Clues to our united commonality are explored in two 21st-century books, Love 2.0: How Our Supreme Emotion Affects Everything We Feel, Think, Do, and Become, by Barbara L. Fredrickson, Ph.D., and A General Theory of Love, by medical doctors Thomas Lewis, Fari Amini and Richard Lannon. These authors explore the brain science that’s related to love and awareness. 28
Although trying to grasp love intellectually may be like eating soup with a fork, the authors of A General Theory of Love cite feelings as a good starting point. Fredrickson describes love as “the momentary upwelling of three tightly interwoven events: a sharing of one or more positive emotions between you and another; a biochemical synchrony between your and the other person’s biochemistry and behaviors; and a reflected motive to invest in each other’s well-being that brings mutual care.” Fredrickson, director of the Positive Emotions and Psychophysiology Laboratory at the University of North Carolina at Chapel Hill, believes love is a complex physiological response; a “positivity resonance.” She describes key factors in love’s ability to biologically transform us as oxytocin, a hormone active in social bonding and attachments, and the vagus nerve deep within the brain stem that connects with numerous organs, including the lead “character” in this relationship, the heart. The neural synchrony of positivity resonance between the brains of two individuals is a connected oneness that

During their 30-year friendship, Bob Staretz collaborated with astronaut Edgar Mitchell, Sc.D., the lunar module pilot on Apollo 14 and founder of the Institute of Noetic Sciences, to research and write “The Quantum Hologram and the Nature of Consciousness,” published in the Journal of Cosmology. Their scientific theory explains how all of creation learns, self-corrects and evolves as a selforganizing, interconnected holistic system through love. “Without exception, everything in nature exists and works together in total balance, resonance and harmony, interacting as one. From this perspective, Edgar and I reached the obvious conclusion—the organizing principle of the cosmos is agape love, an ultimate form of unconditional love that accepts all things existing in nature without regard to conditions, expectations, shortcomings, flaws or faults,” explains Staretz. The former executive director of Eternea, an organization focused on spiritually transformative experiences and the study of consciousness, Staretz says individuals that undergo such an experience attest that loving one another and all

Fredrickson notes is far more ubiquitous than previously thought possible. Her research shows that it requires only connection, not the intimacy or shared history that comes with any special bonds. Micro-moments of the connected oneness we feel as life-giving reverberations occur via shared smiles or laughter, a common compassion or an engaging story. Humans all hunger for such moments. The prerequisites are perceived safety and authentic sensory connection with another, even if it’s fleeting. In Fredrickson’s perspective, such neural coupling is a biological manifestation of oneness in which a habitual focus on “me” expands to a life-expanding “we”.

Anita Moorjani’s latest book, What If This Is Heaven? reiterates the life lesson she learned from her dramatic near-death experience in which she identified herself as a state of pure consciousness connected with everything in the cosmos. She clearly heard: “Your only work is to love yourself, value yourself and embody this truth of self-worth and self-love so that you can be love in action. That is true service, to yourself and to those who surround you.” This message continues with her, and she explains that by not loving ourselves, we are denying the part of God that expresses itself through us. An overarching insight from her lifechanging journey is, “Unconditional love is a state of being, not an emotion. It’s not just one side of the coin—it’s the whole coin.”

How-to Resources Interest in this deeper perspective led The Shift Network, which offers online transformative education, to host a recent Advanced Teachings for Truly Loving Yourself with Margaret Paul, P.h.D., co-author of Do I Have to Give Up Me to Be Loved By You? Many others are working to spread the word about a larger sense of lifegiving love, including Cleveland, Ohio, intuitive psychologist Debra L. Reble, Ph.D., author of Being Love: How Loving Yourself Creates Ripples of Transformation in Your Relationships and the World. She says, “Our soul’s purpose is to be and express love. We dream of love, yearn for love and make love, but rarely do we realize that we are love, a source of divine energy.” Reba Linker, a New York City life coach and author, hosts a Leaders in Self-Love Facebook page and the Paint Yourself into The Picture online coaching show. Linker’s philosophy on love resembles that of New Thought leader Michael Beckwith, minister, author and founder of the Agape International Spiritual Center, in Culver City, California—
to discern that our true nature is love is to know that we are created in the very image and likeness of love, the essence of life itself. Gary Sinclair, author of Healing Memories in Seconds, views his life from an altitude of oceanic oneness. His 35 years of study in a field that uses energy to heal spirit, mind and body led him to develop Soul Link, a memory energy therapy. His work is changing the face of therapy for those with post-traumatic stress disorder and led to the revelation, “Love pulls whatever it touches to its highest potential.” Teaching what he knows “beyond a shadow of a doubt” helps to shift his students’ worldview. “All of creation is made up of electromagnetic energy vibrating at different frequencies. We are energy beings who can learn to manage our energy to heal ourselves. We are all connected by omnipres-
ence, the energy of love, a heart connection of life. Consciously choosing this awareness allows us to be ‘love living life.’” Kamini Desai, director of education for the Amrit Yoga Institute, in Salt Springs, Florida, lends her yogic perspective to love. “We are each a wave on the ocean of existence. Even though we are separate waves, we carry the essence of the same ocean. When that essence manifests in us as spirit, its quality is a healing force of love surrounding our cells, causing our heart to beat and regenerating our organs. This intelligence guides and directs the universe in the same manner that it heals and maintains our body. In yoga, we learn to listen to its subtle voice so that we can follow its urges and energetic impulses to the source from which it springs.” The perceptions of California’s HeartMath Institute founder Doc Childre, dedicated to helping people access their intuitive insight and heart intelligence, are generally aligned with those of Fredrickson. Both approaches recognize how order and balance in the nervous system and smooth, harmonious and coherent heart rhythms enhance our ability to clearly perceive a far larger universe of experience. The ensuing connections widen the windows of perception to view ourselves as no longer separate, but part of a unified whole. Accumulated micro-moments of love communicated through synchronized gazes, touches and vocalizations forge a shared subjective appreciation of connection and oneness. We feel ourselves embodying positive resonance and experience easier and more immediate rapport in familial, familiar and even new relationships. Three Questions that Matter by Oksana Gritsenko
T
his is a very good time for deep inner reflection in preparation for 2017. Each of us is serving as a great contributor to the well-being of the planet, so individual self-awareness work is one of the most important things we can do. Here are a few practical suggestions toward completing this year with inner acceptance and clarity.
What were the major life lessons that I have received this year, and what did I see, feel and understand about who I am?
Intentions are very powerful from so many perspectives. Until we have intent, we don’t act, don’t shift, don’t create and don’t allow anything new. Opening the mind and letting imagination flow freely aligning with uplifting, wonderful emotions in our hearts creates a very powerful combination that drives us to be happy, fulfilled and satisfied with life. When we become aware of what we desire and clearly state it, even to ourselves, life suddenly seems to bring more opportunities. Some see it as magic; others as a simple psychological shift of seeing more of what we desire in the outer world coming our way, just because we are open to see it. Answering these three questions is a mindful and conscious way to become more aware of how we see ourselves, how we feel at the moment, realize where we want to be and decide how to get there. It is a great way to create a baseline of the current state of the self, gain clarity of desires for the future and plan to act upon them. Here are some tips to get to the next level.
Forgive. Being aware of the need to
forgive ourselves and others and release the burden of anger, shame or guilt we carry in our hearts and on our shoulders can be not only emotionally and mentally therapeutic, but physically healing, as well. Forgiving happens in the heart.
Writing these things down as we go through the entire year allows us to digest each one in no real hurry.
Am I gentle, loving and accepting toward myself, and what do I need to change to allow more of that in the new year? Sometimes looking into a mirror deeply into our eyes while asking these questions creates a shift or realization. Saying, “I love you! I am in love with you!” while looking at the self in the mirror is often of a huge help. When we release judgments of the self, we let go of a lot of stress, physical disorders, mental, emotional and physical tension, and we open our hearts to fall in love with ourselves. When we are in love, everything in the world changes its flavor. Colors become brighter, challenges less significant, opportunities more exciting and our being in this world more clear, meaningful and powerful.
What are my main intentions for myself and my life for the upcoming year? Sit on this one for a while. Meditate. Contemplate. Visualize. Ask what the visions are for the upcoming year, how life is different and how we are feeling in the new life we have created.
Focus on gratitude. Nothing elevates our spirit and emotions faster than the feeling of gratitude, whether we focus on what we are grateful for in the moment about ourselves, our families and lives, or being grateful already for all the blessings life is about to present to us daily. It is such a powerful, positive and pleasant way to live. We can give it a try and perhaps make it a daily habit. Life is being in each moment. It is ours to enjoy if we so chose. It is ours to create if we realize we have the power. It is ours to take advantage of with joy, ease and grace if we allow ourselves that pleasure. Our two walnut-sized adrenal glands, one atop each kidney, produce vital hormones that help control heart rate, blood pressure, digestion and many other functions, including how the body deals with stress.
Identifying the Core Issue
In his book, Adrenal Fatigue: The 21st Century Stress Syndrome, Wilson sheds light on the scope of the problem. “The fact that adrenal fatigue is unrecognized by conventional medicine has left millions of people suffering from an untreated problem that interferes with their ability to function normally and capacity to enjoy life. For those whose adrenal glands are ‘running on empty’, even something as basic as happiness seems almost out of reach,” comments Wilson, who resides in Tucson, Arizona. Individuals suffering from adrenal fatigue are most concerned about their low moods, energy, mental acuity and libido, for which conventional medicine typically prescribes antidepressant and anti-anxiety drugs. These medications do nothing to revive adrenal functioning. This faulty condition also affects weight gain and a propensity toward the development of some diseases, including 32
fibromyalgia. “Your resiliency, energy, endurance and very life depend on the proper functioning of the adrenals,” Wilson says. We’ve inherited our sympathetic nervous system and its stress response of fight-or-flight from our prehistoric ancestors. It hasn’t evolved to differentiate between an acute threat to survival and the chronic threats from looming deadlines, financial pressures and other modern-day worries. “The adrenal stress response to physical danger or any perceived psychological threat is identical—the release of norepinephrine and epinephrine responsible for cascading physiological reactions,” explains Dr. Vijay Jain, who treats fatigue from an integrative perspective at his Mind Body Wellness Center, in Palm Coast, Florida.
Suggested Treatments
Adrenal fatigue is mainly a self-induced health problem that doesn’t just appear. It results from an accumulation of ongoing choices that we can change. Jain applies ayurvedic principles to reestablish balance in the body’s three prominent mind-body types that influence personal well-being. These are known as vata, pitta and kapha. For people primarily characterized by vata and pitta typology, fatigue is the result of being overactive and burning the candle at both ends. For those with kapha constitutions, fatigue is the outcome of a sedentary lifestyle with insufficient movement and eating the wrong foods for them. He further recommends getting more sleep with regular bedtimes, practices such as yoga nidra meditation, pranayama (yogic breathing) and a slower-paced yoga practice with longerheld meditative poses, as well as massage and a diet designed to restore our biological energies, or doshas, to a balanced state. “Depending on a patient’s constitution I advise some to slow down and burn 50 percent less of their candle, while I tell others to increase their physical activity and improve their diet.” Jain also recommends a type of ayurvedic purification and detoxification treatment that involves a series of five therapies including massage and herbal treatments. Performed in sequence, these allow the body and mind to drop into a state of peacefulness. Acupuncture treatments are also helpful, along with a regimen of adaptogenic herbs such as ginseng, schisandra and ashwagandha, according to Jain. In Happy Healthy Thyroid: The Essential Steps to Healing Naturally, author Andrea Beaman writes about how she recovered naturally from adrenal fatigue. To restore energy and vitality to the body, she further recommends the healing practices of hatha yoga, qigong and tai chi. “These modalities build energy, whereas power yoga, and cardiovascular exercises drain energy in fatigued individuals,” advises Beaman. She notes that it can take six months to two years to restore desired energy levels. Beaman counsels individuals with behavioral characteristics that make it more challenging to burn less of their candle. She grabs their attention with the critical nature of their situation. “‘You are in and out of life in a blink. If you’re exhausted at age 48, how are you going to live a vibrant, happy and exuberant life right up to the finish line?’ That generally works,” she says. Yields: About 5 cups Popcorn: 1 tsp coconut oil, melted ½ cup popcorn kernels Maple Snickerdoodle Topping: 1 Tbsp coconut oil 2 Tbsp pure maple syrup ½ tsp cinnamon Sea salt to taste Heat the coconut oil in a medium saucepan, with a lid, over medium heat. Add 3 kernels of popcorn and wait for them to pop. Once the test kernels start to pop, add the rest, cover and allow to pop, shaking occasionally until popping slows to a near stop. Pour the popcorn into a large bowl and set aside. For the topping, whisk together the coconut oil, maple syrup and cinnamon, until well combined. Pour over the popcorn and mix well. Sprinkle the top with a few pinches of sea salt, mix again and taste. Serve immediately making additional sea salt available. Place on wire racks set over parchment or wax paper and sprinkle with sea salt. Let stand until set. Transfer apricots to baking sheets lined with parchment or wax paper and refrigerate until firm. ature’s holiday decorations can transcend cliché pine wreaths or farmed trees to make highly personalized indoor décor that supersedes traditional greenery. Yet mistletoe, holly leaves and berries, eucalyptus, poinsettias, tree needles, acorns and a cut tree’s water reservoir can be harmful to both pets and children. Here are some better choices.
The Tree
For smaller spaces or to make a statement, try grouping topiary trees of varying heights draped with solar twinkle lights and small ornaments or fresh flowers to create a focal point in a bay window. “A lemon-lime cypress lends another burst of unexpected color on an entry hall table,” says freelance floral designer Janet Corrao, in Nutley, New Jersey. “It smells good, too.” Plants six inches tall work well. Corrao suggests setting the pots in colorful, inexpensive metal buckets from craft stores for added glamour. Unless deemed a hazard to active kids or pets, set up a mid-sized step38
stool on a table or open a six-foot ladder in a corner and hang ornaments down the center space; add garlands and lights and set potted flowers and small gift boxes on the steps. Search “alternative Christmas trees” at Pinterest. com for more ideas. Another option uses hedge-like plants in lieu of a tree. Consider an English or Japanese boxwood plant or evergreen lilly pilly, and then trim to the desired size and shape. Plant it outdoors as weather and climate permit.
The Table
“While we were working on a photo shoot, the photographer decided to include a Christmas scene. I was able to add fresh greenery from the property to the red ornaments and white orchids that I’d brought along. It made a striking centerpiece running the entire length of the table,” says florist Angie Zimmerman, of Angie Zimmerman Designs, in El Dorado Hills, California. “For the fireplace mantel I used branches with red berries to add height on either side of the central mirror and then duplicated the centerpiece design between them.”

A festive table can be dressed with appealing edibles. Use a bread wreath as a base and stud it with skewered basil leaves, cherry tomatoes and small balls of fresh mozzarella cheese for an easy, self-serve, Caprese appetizer. A colorful dish of balsamic dressing or another dip in the center, along with small plates and holiday napkins, completes the offering. For a sit-down dinner variant, place a few Caprese skewers in small, clear, glass vases along the table with individual finger bowls of dip. Flatleafed green parsley sprigs add another special touch. Zimmerman further suggests using deep-red Roma apples, cored, as candle holders. Make living place cards with small pots of herbs. Chalkboard paint identifies the plant and guest seating. Also consider colorful painted pots sporting a small cactus. Transform oranges into aromatic pomanders by scoring the rinds with a citrus stripper in a spiral, circle or other pattern. Use a small nail to make holes and stud the fruits with whole cloves. Adding seasonal greenery and sterilized pine cones makes a beautiful and fragrant centerpiece.
The Front Door
“I love to use pine cones for centerpieces,” Corrao says. “Our weather is cold enough that I don’t have to worry about bugs when collecting cones in the neighborhood.” For warmer climates, bake the pine cones for 30 minutes in a 200-degree oven to melt excess sap, kill insects and fully open them. Sold online or in kitchenware stores, a bay leaf wreath offers cheer at the door. After the holidays, hang it in

For many, Christmas demands the smell of fresh pine boughs. Spice up the traditional greenery with carnations or other light-hued flowers colored with the juices of fresh, canned or frozen fruits and veggies—red from cranberries, beets and cherries; yellow and orange from yellow onions and carrots; purple from blackberries; green from spinach; pink from strawberries; and blue from red cabbage or blueberries. Freshly cut the flower stems and put them in the liquid from crushed produce or the can to absorb color. Hang garlands out of reach of young children and pets. Navjot Kaur, of Navjot Designs, in Chicago, says, “We all have greenery in our yard or patio gardens that can be used for the holidays. It’s fun to alter the design based upon what is available.” Imagination and inspiration can spark new, greener traditions.

Growing Indoors Over Winter by Holly and Joey Baird
T
here are two types of gardeners; the outdoor gardener and the year-round gardener. The outdoor gardener works the soil in the spring, plants, harvests and is usually done by mid-October. Year-round gardeners perform the same activities as the outdoor gardener and do their best to extend the season by using cold frames and low tunnels to get as much out of the season as possible, sometimes even harvesting outdoors in the winter months. For some year-round gardeners, a decision is made to shut down the outdoor garden when it becomes too much of a challenge to keep everything going and move indoors to grow over the harshest months of winter. The variety of crops may be limited, but they can be produced on a scale that suits the individual gardener. There are several ways to garden indoors; from very inexpensive to a higher cost that becomes more of a long-term investment. What can be grown indoors is determined by the method used. A southern-facing window is the least expensive way to grow indoors. This 40
works well with basil, thyme, sage and geraniums in hanging pots, which may be recycled from previous years. Herbs are a wonderful choice in an area that gets low sunlight, meaning about three to five hours of daylight. Herbs can also be grown in east- and west-facing windows if a southern exposure isn’t available. It’s not advisable to grow herbs or other plants in a north-facing window, as this does not provide enough daylight for the plants, especially during the shortest days of the year. Because they are more costly if purchased fresh at the store, herbs make a great addition to grow for the home cook over winter. Even a dwarf citrus or fruit tree may produce fruit yearround indoors. Another option is an LED grow light, such as the new compact system from the Oregon, Illinois, company HappyLeaf (HappyLeafLED.com). One advantage of using LEDs over fluorescent tube lights is that LEDs do not dim over time. Tube lights are recommended to be replaced every two to five years, while LEDs will last for up to 50,000 hours, do not contain mercury

and can cover three times the surface space of a tube light. LED lights are small and compact, and can be hung under a table or over plants to grow herbs and greens, for starting seeds and even growing tomatoes and peppers to full maturity with some additional accessories, as well as other vegetables. Another option to grow indoors over the long winter is a complete indoor growing system, such as an Eco Garden House (EcoGardenHouse. com), which fits into a spare bedroom or basement area. These types of enclosed systems contain grow lights, an irrigation system, thermostat, fans, light timers and climate control. For many gardeners, this would be considered an investment in winter gardening, with a typical monthly energy use cost of about $20 a month. Yet a system like this allows for a wide variety of crops. Plants such as cucumbers, zucchini and melons can be grown successfully, but require hand pollination to be successful. Plants fall under three categories: long day, short day and neutral day. Attempting to grow a short day plant adjacent to a long day plant will not be successful because one will produce a vegetable and the other will only flower. This is because some plants are used to thriving during longer periods of sunlight and some are used to short periods of sunlight; just as when growing outdoors, some plants are best planted in the spring or summer because of the shorter amount of daylight, while others are planted around the peak of the summer for longer amounts of daylight. It takes a large indoor growing system to successfully cultivate a combination of plants indoors in the winter. Some candidates include tomatoes, green beans, lettuce, Swiss chard, basil and kale. These are three great ways to grow indoors in any season. Based on household budget and level of interest in growing, indoor gardening can successfully yield a year-round gardening experience. Centennial Volunteers Kick Off New Winter Season Local residents can be a part of forest and river revitalization by joining an inspiring movement of volunteers gathering to restore seven special sites along the Chicago and Calumet rivers. Centennial Volunteers is a partnership between Friends of the Forest Preserves, the Forest Preserves of Cook County, Friends of the Chicago River, The Field Museum and Chicago Ornithological Society. The group will kick off a new season of workdays in December, when there are no bugs and there’ll be a big bonfire to stay warm. Centennial Volunteers are a part of a community of like-minded individuals that are not afraid to get dirty, get some exercise and have fun outside. Participants learn what it takes to restore diverse wildlife, trees, wildflowers and health in our forest preserves and river system. The goal is to grow a community of people that will become caretakers and stewards through ongoing education and training. Volunteers will be trained by experts in restoration and resource management and be involved in regular volunteer days on the weekends throughout the year. A Chicago Perspective on Meteorology by Rick DiMaio
I
n November, the first seven days of the month featured average temperatures that were nearly 12 degrees above normal. Climate records dating back to 1871 indicate that this period was the fourth-warmest week ever in Chicago for those dates. We even slipped in three consecutive days of 100 percent sunshine in a month where the average is 45 percent, the lowest of any month. It’s nice having September in November, especially when there is baseball. Not only did the Cubs make it to the World Series, but won a thrilling game seven in Cleveland in nearly 70-degree weather. It would be wrong not to point out that the 17-minute rain delay at the end of the ninth inning helped end a 108-year (baseball) drought. Talk about efficient rainfall. But having September in November cannot last forever, at least not into December. Yes, the month where we see the darkness of the winter solstice brightened by holiday lights is the month that typically brings winter to our doorsteps. It can also bring newly transplanted Chicagoans to their knees 42
if they have never experienced a true “Chicago winter”, kind of like the winters some remember in 1977-79 and more recently from 2013-14. Chicagoans love to talk to each other about how much we hate long, cold and snowy winters, but never really seem to complain to people in California, Texas or Florida. In passing conversations on the phone or Facebook posts, we pontificate about our ability to stand up to the elements and openly profess that the weather is never really as it seems on the national news or The Weather Channel. A lot of people are beginning to like these warm Octobers and Novembers because they love to continue to ride their bikes, play golf and walk their dogs along the beaches in Evanston and Rogers Park without worrying about cleaning dog paws of snow, salt and who knows what else is in-between their furry pads. Many also enjoy the first snow, usually that quick shot of one to two inches a week before or after Thanksgiving. Last year, our heaviest snowfall was the Friday before Thanksgiving. The

El Nino-driven winter of 2015-2016 was pretty much what most climate scientists and meteorologists expected. We’ve seen patterns like this before. 1998 and 1982 brought very strong El Nino-related weather events into the Midwest, keeping Arctic air and persistent snowfall several thousand miles to the north. However, more recent studies of strong El Ninos indicate that although Midwest winters tend to be warmer than normal with less Arctic air, that does not inhibit the development of large snowstorms capable of producing very heavy, wet,snowfall at either the beginning or end of the winter season. Warmer temperatures enhance the ability of the atmosphere to hold more water vapor. If the right circumstances play out, strong El Nino winters typically are characterized by fewer days of snowfall and fewer days of Arctic cold (the below zero stuff), but it does not protect us from the occasional 12 inches of heavy, wet snowfall. The winter of 2016-2017 promises to be quite different, though. The strong El Nino of the last 15 to 18 months has shifted to a now neutral La Nina. This simply means that above normal seasurface temperatures in the equatorial Pacific have cooled to near and slightly below normal. This pattern has created weeks of heavy rains and mountain snows in British Columbia and the Pacific Northwest, and resulted in aboveaverage temperatures in the northern Plains and upper Midwest in October and early November. Long-term trends of neutral La Ninas typically create near-normal winters in the upper Midwest and Great Lakes. The recent warmth will likely be replaced by more typical Chicago weather in early December and quite possibly very cold temperatures by midDecember. Past transitions from strong El Ninos to even neutral La Nina’s have resulted in 35 to 40 inches of annual snowfall and eight to 12 days of sub-zero temperatures across the winter. However, other atmospheric conditions can affect the actual winter weather, so never base expectations of the winter from a longterm forecast in early November. Whether we enjoy winter-specific activities like cross-country skiing or
remain inside counting the days to the vernal equinox, we might as well face it and enjoy the winter season. The Chicagoland area has many things to do once the snow begins to fly and the temperature falls below freezing. Several park districts construct outdoor skating rinks for both the casual skater and the wannabe Chicago Blackhawks. So while we try really hard not to put our bikes and golf clubs away and hope and pray that maybe this is the year the vernal equinox will don a March-in-February disguise, we still need to realize that keeping our bodies physically active will help our minds remain reasonably rejuvenated. If we get tired of the shovels and the skis and the skates and the cleaning of the salt from our dog’s paws, we can always rewatch the DVR of game seven, when it was September and October in November on one glorious night on the shores of Lake Erie. an and woman’s best four-legged friend can activate and energize even the most reluctant couch potato or exhausted owner, making the family dog an excellent exercise buddy. Regardless of how lax we may be, everyone feels better after some kind of workout. A study published in the journal Environmental Science & Technology confirms that working up a sweat outdoors affords an appealing boost of energy, enjoyment and improved state of mind. Dogs love routine, so they’ll be waiting by the door for their daily walks. Make each outing mindful by letting the pet choose the route and pace. While they stop to sniff, do hamstring stretches by leaning against a wall, fence or tree. Once the warm-up portion is completed, add sprints to burn more calories. Ask for a sit, pick a goal a short distance away and then give the cue to run together fast. After arriving at the goal, ask for another sit. “Our favorite time to go is before 7 a.m. to avoid cars and when the asphalt isn’t too hot for his paws,” says Monica Weintraub, a food and travel blogger currently working from Beijing, China. “Carl loves the burst of energy, and we both build muscle.”
A backyard agility course can complement or even substitute for walks. It’s easy to make with weave poles, jumps and tunnels. Vary the order of the obstacles and run alongside the dog to call out each one. When it’s excessively wet, cold and icy or hot outside, create an indoor agility course. Use blankets and upturned chairs for tunnels, cardboard boxes to designate a weaving trot and a hula hoop for jumps. Set it up on top of rugs that foster firm footing. Balance can also be improved with exercise balls. While some dogs only see a soccer game, others try to balance on the ball, strengthening core muscles like their humans. Learning doga, or yoga for dogs, incorporates a canine’s natural trainability, flexibility, mimicry of human moves and desire to please. Kristen Corral, who’s also certified in animal massage, teaches Anima yoga fusion classes for people and pets of all ages in Las Vegas. “Anima means an expression of one’s true inner self,” she explains. “We work on balance and never force the dogs into poses. together, it becomes a calming and relaxing activity.” Floor exercises with the help of a dog also helps strengthen core muscles. Do leg lifts and teach the pet to walk under a raised leg to ensure it stays raised for the proper amount of time. Incorporate fetch games with sit-ups; throw the toy when sitting up and accept it back while reclining. Alternate arms—the dominant one has better aim, while the other one adds steps for the dog as it runs to fetch an errant toss. For chair exercises, use a toy to lure the dog under the chair, moving it from side-to-side, simultaneously working the waistline. Fetch lets the dog chase the toy before dropping it in front of the chair, giving the owner’s core muscles a workout when bending to pick it up each time. Dogs love to play hide-and-seek. It’s easy with two people; one holds the dog while the other hides. If solo, teach the pet to sit until a timer goes off before starting the hunt. “I ask Felix, my mixed-breed dog, to hold a sit-stay while I go hide,” says Chantelle Wallace, a professional writer who volunteers to exercise animals at Skyline Pet Care and Fitness, in Austin, Texas. “Hide and seek activates both mental focus and physical exercise.” Dancing to favorite tunes expends lots of energy. Dogs may perform obedience moves to the beat or, like humans, dance like nobody’s watching. Scientists at the University of Missouri are among those that have found that music improves moods, too. Teaching a dog to help around the house impresses everybody and takes advantage of bad weather to catch up on chores. So many are relentless in telling the story of destruction that it seriously colors how we tell the story of our time. I stand among those shining a light on the abundant beauty, goodness and courage in our world so these become more visible and evident at a global level.
Are you optimistic about the future? I am hopeful about the future. My life of meaningful conversation has led me to re-imagine the meaning of hope. It has nothing to do with wishful thinking, but rests on the lives of beauty and goodness I see everywhere I turn. It’s a choice—a more exacting and courageous choice than cynicism or resignation. The pain and fear alive in the world surface as anger and violence, and some of us are called to be calmers of fear. We must create the world we want our children to inhabit and do so together. Creating a United Nations Office Based on the Wheel of Co-Creation by Nina Patrick
T
he Wheel of Co-Creation is a whole system worldview created by renowned thought leader Barbara Marx Hubbard. It identifies 12 sectors of endeavor in an active society, including arts, economics, education, environment, government, health, infrastructure, justice, media, relations, science and spirituality. When they identify what is new and beneficial in any of these sectors, individuals and communities begin to feel more confident and form a positive worldview. By looking at what is truly working instead of absorbing the bad news showcased by traditional media, we are inspired with a renewed sense of hope for the planet and collective future. Through this series of articles, the first of its kind to use the Wheel of Co-Creation, fresh perspectives and new developments related to economics, art, health and more have been presented.
A
midst the election turmoil and other dismaying world events there have been exciting developments with the Wheel of Co-Creation in other parts of the world. It was presented by the Foundation for Conscious Evolution at both the United Nations (UN), in New York, and to the 48
House of Lords, in London. On November 3, an Office for the Future that incorporates the Wheel of Co-Creation was proposed as a cabinet-level department of the UN. Today, an Office for the Future in the UN, originally proposed by Hubbard in 1984 when her name was placed in nomination for the vice presidency of the United States on the Democratic ticket, has potential to provide humanity with an opportunity to solve the unprecedented challenges of the 21st century by communicating, connecting and synergizing what is good, loving and creative in the world. The Office for the Future, once established, also would support the 17 United Nations Sustainable Development Goals, or Global Goals; a universal call to action to end poverty, protect the planet and ensure that all people enjoy peace and prosperity. Achieving the Global Goals requires the partnership of governments, the private sector, civil society and citizens alike to make sure we leave a better planet for future generations Included in the Office for the Future design is a Peace Room at the same level of sophistication as a war room. In a war room, enemies are tracked and strategies are devised to defeat them. Similarly, the Office for the Future Peace Room will track and analyze breakthroughs and innovations that assist an emerging world that works for all. The Office for the Future process highlights potential opportunities for collaboration and synergy between innovators, and communicates intelligence that emerges locally and regionally to the main Office for the Future. The intent is that countries around the world will open Offices for the Future using whole systems theory, which fosters exponential rather than linear patterns of growth.
