W

e’ve been unusually blessed this season with an abundance of above-average warmth. Tomatoes and peppers were still ripening in mid October, for goodness sake! As someone who really, really doesn’t like the bone-chilling cold wind and dry air of the winter, I’ve been externally thankful for the extension of no-sock season. Internally, though, I’ve been a bit conflicted with my comfort, as the warmer weather we’re enjoying is at least in part a direct result of climate change, which is altering jet stream and precipitation patterns and imposing a new norm. NASA reported in July that in the first six months of 2016, two key climate change indicators—global surface temperatures and depletion of Arctic Sea ice coverage—had broken numerous records. Globally, according to NOAA, September’s temperatures were the second highest on record, following 16 straight months of 138-year record-smashing global highs. Closer to home, record warmth continued in the Great Lakes region through September, and I’d guess into October. Climate change brings warmer ocean surface water temperatures which, scientists believe, have led to a very active tropical storm season comprised of both hurricanes affecting the East Coast and typhoons affecting the West Coast. Although the U.S. didn’t take a direct hit from Hurricane Matthew or Typhoon Sarika, the resulting wind and rain caused billions of dollars in property and environmental damage, lost wages, several deaths and personal misery for millions of people. In North Carolina, where floodwaters are taking weeks to recede, the environmental damage left by leaked waste (and millions of dead animals) from subsumed hog and chicken farms and coal ash residue from power plants is staggering. What will it take to clean up the toxic mess, and where will it all go? Our hearts go out to the residents of Haiti and eastern Cuba that took the full brunt of the storm. Already challenged with poverty and bad infrastructure, many were left with nothing after the storm passed, and no reliable place to turn for food, shelter and medical supplies. Cleanup is a challenge, and leading a comfortable life won’t be possible for a long time for our global brothers and sisters. As we turn our thoughts to Thanksgiving gratitude, we can give thanks for our blessings of comfort—food, drinkable water, heat, clean clothes, toothpaste, a warm bed—and the other parts of daily life we take for granted. We can also make a difference this season by donating to one of the many organizations that are arranging aid for the Caribbean nations, as well as for our own U.S. citizens in need after this year’s storms. Help is needed now, and even more so months from now, when most people will have forgotten the disaster and moved on. That is, all except for the people whose lives have been changed forever. November is National Adoption Awareness Month

by Sally Wildman November is National Adoption Awareness Month, and its purpose is to bring awareness to the many children without a permanent home who are available to be adopted by local families. In 2016 key policy changes were accomplished at both federal and state levels. The new Act for Continuing Appropriations and Military Construction, Veteran Affairs et. al. extends benefits for fertility treatment and adoption assistance to veterans with reduced reproductive capacity caused by injury in the line of duty. Previously these benefits were available only to active duty members of military. According to staff of Illinois Department of Children and Family Services (DCFS), in 2016, there are approximately 1,000 children in care of the state that are available to be adopted. This occurs when parental rights of birth family are terminated by consent of parents or by a court decree. Of those children, between 100 and 150 are in need of an adoptive home, and some are children with siblings. Often these children have been in state care for several years while a court gives their parents opportunity to “cure conditions that led to abuse, neglect or abandonment” in order for their safe return home. Based on recommendations from adults that personally experienced foster care during their childhood, a new policy has been initiated by DCFS to promote normal life experiences of children while they are in foster care. One such change is designation as “youth in care” rather than “foster child”. Another policy change is giving foster parents more discretion over a child’s activities such as sports, school trips and social activities. Those that decide to become foster parents receive training and support from the agency that assists with their placement. To build community awareness of these adoptable children, individuals can ask their schools and libraries to host discussions and provide current materials about adoption and family building options and attend adoption educational programs to learn about current trends in practice. More directly, those who want to help these children find a permanent, loving home can offer to adopt one or more into their own family. Keeping it Clean and Simple

hen it comes to health, being conscious of what we put on our body can be just as important as what we put in our body. The average adult is exposed daily to as many as 126 unique chemical ingredients found in personal care and skin care products, according to the Environmental Working Group, a nonprofit organization that evaluates cosmetics and household products for safety. Researchers have linked some ingredients in these products to a host of neurological, hormonal and metabolic health issues. The process of selecting safe skincare products can be daunting and confusing. Some contain hidden toxins in formulas marketed as all natural, non-toxic, or hypoallergenic. The ingredient lists can be overwhelming, made even more confusing because benign chemical ingredients may have unfamiliar names. To add to the confusion, the U.S. has not developed parameters for the use of many of these chemicals found within personal care items. However, government recently banned a very common ingredient, Triclosan, which is found in products such as toothpaste, mouthwash, body wash, hand soap and hand sanitizer. The U.S. Food and Drug Administration recently ruled the chemical to be ineffective and linked to increased bacterial resistance and hormonal imbalances. Acupressure Eases Fatigue in Cancer Survivors

reast cancer survivors are often plagued by chronic fatigue that lasts long after their treatment is finished. They have few options to relieve the condition, but acupressure shows promise. A study published this summer in the Journal of the American Medical Association concluded that acupressure can significantly improve two symptoms of fatigue experienced by breast cancer survivors: sleep quality and quality of life. The researchers tested 424 women that had completed cancer treatments at least a year prior to the study. They were divided into three groups—one self-administered relaxing acupressure and another stimulating acupressure, while the control group followed a conventional care plan. After six weeks, fatigue was reduced from 70 percent to 43 percent among those receiving acupressure, with two-thirds of the women in the acupressure groups reaching levels of fatigue considered normal. The relaxing acupressure group showed substantial improvements in sleep quality compared with the conventional care group at week six, but the two groups reached parity at week 10. The relaxing acupressure group was the only one that showed improvements in quality of life, making it a reasonable, low-cost option for managing fatigue symptoms.

luoride is a toxic substance for certain (Tinyurl.com/Silent-Killer-Fluoride), but it is the long-term, chronic effects of drinking it that affects health the most. Fluoride weakens the immune system and may cause allergictype reactions, including dermatitis, eczema and hives. Unlike other water treatment processes, fluoridation does not treat the water itself, but the person consuming it. This is why more than 97 percent of Western European nations have rejected tap water fluoridation. The main, most well-known fluoride benefit comes from topical contact with the teeth, not ingestion. There is no need to swallow fluoride, whether it is in the water, toothpaste or any other form. The Centers for Disease Control has acknowledged that fluoridation is causing fluorosis, or discoloration of children’s front teeth. The Neuroscience Center Specializes in Treatment-Resistant Disorders

A

As the plan to restore homeostasis (balance) progresses, patients are able to control their actions, mood, sleep cycles and other factors that are preventing their healing. Inflammation is the root cause of many disorders that TNC treats. The Brain SPECT imaging technique measures perfusion (blood flowing through capillaries), which is one aspect of inflammation. TNC thinks that the inflammation needs to be neutralized before

Among the specialty treatments at TNC is hyperbaric oxygen therapy (HBOT), which requires a rigid and pressurized chamber to deliver 100 percent oxygen to a patient’s pulmonary system. The safe pressurization delivers the dissolved oxygen into every cell in the body at levels which are 15 to 20 times normal, accelerating the healing process of numerous conditions. The HBOT chamber helps revive some of the cells that are dormant, which then enables the body to heal itself. One of the HBOT chambers at TNC is unique to the region because it is outfitted with special safety features so that several patients can be treated simultaneously, or a caregiver or parent can personally attend to a nervous or frightened patient. A combination therapy of transcranial magnetic stimulation (TMS), administered along with an infusion of ketamine, is another groundbreaking form of therapy offered at TNC. This treatment results in the ability to stop depression with suicidal ideation and/ or reduce intense pain with a better than 80 percent success rate, even in cases of non-response to medication and other treatments. This combination treatment was developed and patented at TNC. As a minimally invasive approach, this process stimulates relevant regions of the brain and does not interfere with other procedures. Patients receiving the combination therapy often see rapid relief from suffering and return to their normal lives in a matter of days or weeks, rather than months. The remission can last for a very long time, even years after completion of a series of treatments. People with brain diseases will have slower brainwave activity in a sleep-like state. Whitcraft doesn’t offer meditation to employees, but Gallo says mindfulness enables her to be available to her staff and solve problems without getting “swept off my feet so easily by all the desires, agendas and emotions confronted at work.” Carroll cautions that it’s not about trying to eliminate our own or others’ emotional agendas or personal biases at work; rather, individuals use mindfulness to become more conscious of and relaxed about them. “Meditation helps develop agility in viewing… to self-regulate, drop fixed mindsets, become self-aware,” explains Carroll, who has coached university presidents, CEOs and nonprofit executives in mindful leadership techniques. “You learn things from a competitor’s perspective or pick up on social cues you may miss if you instead had a fixed lens on a situation.”

he workplace can be filled with stress, egos and distractions that challenge the productive and happy atmosphere we desire. Both employees and employers are adopting mindfulness to help cope and transform both themselves and their work environment. Rooted in Eastern philosophies like Buddhism, most workplace mindfulness programs have stripped the techniques to a secular form more appealing to skeptics or adherents of other religions. The key practice—simply known as “sitting” or meditation—involves focusing our attention on our thoughts, breathing, emotions or bodily sensations for a set time period, while the term mindfulness refers to the ability to be aware of the present moment, whether meditating or in a business meeting. While Fortune 500 companies like Procter & Gamble, Aetna and General Mills have instituted formal mindfulness programs, Michael Carroll, meditation teacher, executive coach and the author of Awake at Work, says that the mindfulness revolution has been largely seeded from the ground up. It’s emerged through people exploring the practices in their personal lives, and then bringing them to work.

While meditation may be on the upswing in the workplace, it was a battle to legitimize it, according to Tara Healey, program director for mindfulness-based learning at Harvard Pilgrim Health Care (HPHC). A longtime meditation practitioner, Healey started the Mind the Moment program a decade ago while serving as an organizational capacity building consultant. Surveys had shown that employees were overwhelmed and dissatisfied, but lacked the skills to rectify their situation. “The leadership said, ‘Great, let’s do it, but not tell anyone,’” relates Healey. She notes that meditation, a core component of her multifaceted mindfulness course covering everything from workplace stress to mindful listening, wasn’t accepted in the workplace at that point. Today, 30 percent of her company’s 1,050 employees have completed a six-week class introducing them to the power of mindfulness; some go on to participate in a guided monthly group meditation practice or use company meditation rooms for individual practice. The health services company also offers the course to its member companies throughout New England. To date, more than 12,350 people in 174 companies have participated, encompassing varied fields from higher education and health to finance and technology. A survey of employees showed that initially 99 percent felt it was a good use of their time; another taken six months later found that 87 percent were still using the techniques. HPHC informatics analyst Stephanie Oddleifson, who took the course nearly 10 years ago, says it transformed her way of thinking and behaving in the workplace and furnished a set of practices she uses every day. In times of conflict, “I was so quick to make up stories in my head and jump to conclusions previously,” she says. “Now I’m able to pause before responding and observe my thoughts without getting caught up in them. I can diffuse tense situations with humor and not take things personally.” Additional research substantiates the anecdotal evidence for meditation’s workplace benefits. In 2015, scientists from Canada’s University of British Columbia and Germany’s Chemnitz University of Technology compiled data from 20-plus neurology studies, finding significant correlations

A Rice University study specifically found a positive relationship between workplace mindfulness, job performance and employee retention. While workplace mindfulness programs vary and may incorporate helpful talks, encouraging readings and group discussions, Healey and Carroll both caution that reading or talking about mindfulness or meditation is no substitute for the practice itself, which many find challenging. “You won’t taste the benefits just reading about it,” remarks Healey. “The practice will come into play come showtime.”

Preventing, Reversing and

Managing Diabetes Naturally by Linda Sechrist

A

ttending to the miracle of our body’s metabolism—which consists of numerous processes that include the digestion of food for growth and energy—is critical to good health. Diabetes, a metabolic disorder, is a serious threat to these processes, as well as for any hope of anti-aging and longevity.

Types of Diabetes

There are four types of diabetes: Type 1, Type 2, gestational, and latent autoimmune diabetes in adults (LADA). In Type 1 (not caused by eating or lifestyle habits), the immune system destroys the insulin producing beta cells in the pancreas. Type 2, caused by lifestyle and eating habits, is a metabolic disorder in which the cells are unable to use insulin. Healthy lifestyle changes and better eating habits, if made when symptoms 26

are first identified, may be able to reverse type 2 diabetes. Gestational diabetes, which occurs during pregnancy, typically disappears afterwards. Women that had it are more likely to develop Type 2 diabetes later in life. LADA is autoimmune form of diabetes in which the death of the beta cells occurs over a span of years, rather than rapidly. The American Diabetes Association advises that 8.1 million of the 29.1 individuals that have been diagnosed with diabetes were previously unaware and had not detected the earliest symptoms.

Early Symptoms

Telltale signs of diabetes are dry mouth, excessive thirst, frequent urination, constant hunger, even after meals, unusual weight gain or loss and lack of energy. According to functional medicine prac-

Managing the extra blood sugar level from poor food and drink choices requires a lot of energy and causes an inflammatory response. If untreated, later symptoms may include numbness and tingling, as well as the pain or discomfort of neuropathy in the hands or feet. Other complications are heart disease, stroke, kidney disease and vision problems,” explains Martin.

Blood Sugar (Glucose) Levels

Normal blood glucose levels vary throughout the day. For healthy individuals, a fasting blood sugar level on awakening is less than 100 milligrams (mg) per deciliter (dl) of blood. Before meals, normal levels are between 70 and 99 mg/dl. “Individuals that have developed early stages of insulin resistance will not always experience high blood glucose levels, but without medical intervention, those with Type 1 diabetes will experience extremely high glucose levels,” notes Martin. Fasting glucose levels should vary between 100 and 125. A fasting glucose level above 126 is an indicator that lifestyle changes are needed to avoid progression into full Type 2 diabetes.

High Risk Groups

The Role of Exercise Fluctuating Blood Sugar

“Rollercoaster sugar levels are irritating to the nerves and weaken the lining of blood vessels. Fluctuations cause insulin levels to spike, stress the pancreas and cause sugar crashes (hypoglycemia), which can lead individuals to make impulsive, poor food choices. They also raise triglycerides, a type of fat (lipid) that circulates in the blood, along with cholesterol. Triglycerides are an important measure of heart health. An excessive amount of more than 150 in fasting blood can lead to a risk of stroke and heart attack,” advises Kirshenbaum. An awareness of risk factors, such as a family history of diabetes, is important in early detection. Both health professionals agree that with this knowledge and help from a fully informed medical professional regarding the necessary steps to prevent diabetes from progressing to the next stage, the individual knows what types of realistic changes can be supportive and how to go about making them. Martin and Kirshenbaum educate patients and help them integrate dietary changes that are critical in the earliest stages. Additional patient education includes the necessity of eating low-glycemic index foods and reducing blood glucose levels, while increasing healthy fats choices such as nuts, avocado and olive oil. The role of cardiovascular and resistance training exercises in reversing pre-diabetes and managing diabetes for diagnosed individuals is of utmost importance. “Exercise increases the muscle cells’ demand for glucose by moving glucose out of the blood and into muscle cells,” explains Martin.

Control and Reversal

There is no quick fix for preventing and reversing diabetes. Restoration of health begins with the most important health lifestyle changes required—replacing processed and sugary foods with nutrient-dense, whole foods, determining possible food sensitivities with an elimination diet, eating some protein with every meal, eliminating environmental toxins, performing a form of cardiovas-

cular exercise and resistance training at least three to five times a week, and adding stress-relieving practices such as yoga, tai chi or qigong.

Platelet-Rich Plasma Offers Hope for Hair Restoration and Anti-Aging by Promila Banerjee

A

person’s hair is one of the first things we notice. Yet, whether stress-induced, due to hormonal imbalances, micronutrient deficiencies, genetic or autoimmune conditions, poor hair care or any medical condition, including alopecia, hair loss is a common concern for many men and women, and it can impact our daily confidence levels. New treatments for some hair loss conditions incorporate a person’s own blood cells. Although blood is mainly comprised of liquid plasma, it contains solid components such as red cells, white cells and platelets. STAY SHARP Powerful Ways to Avoid Mental Decline by Lisa Marshall

A

slow descent into dementia seemed inevitable for a 66-yearold man that had been misplacing his keys, missing appointments and struggling at work. He failed doctor-administered cognitive quizzes and tested positive for a gene variant linked to an exponentially higher risk of Alzheimer’s disease. A brain scan revealed scattered clusters of sticky, amyloid plaque—a hallmark of the disease. His hippocampus, or memory center, had shrunk to rank in the lowest 17 percent of men his age. Told there wasn’t much that could be done, he sought the help of University of California, Los Angeles Alzheimer’s researcher Dale Bredesen, a neurologist and founding president of the independent Buck Institute for Research on Aging. He recommended a personalized, 36-point plan, including a high-fat/low-carb diet, intermittent

fasting, strict sleep schedule, select dietary supplements and other lifestyle changes. Within three months, family members reported marked improvements in his memory. At 10 months, brain scans revealed his hippocampus had grown 12 percent. “Such improvements are unprecedented,” says Bredesen, who described this and nine other hopeful cases in a provocative paper published in June in the journal Aging. “These are the first examples of a reversal of cognitive decline in pre- and early Alzheimer’s patients.”

Addressing the Sources

Bredesen is among a small but growing group of researchers, physicians, caregivers and patients challenging the conventional wisdom that the road to dementia goes one way, with no cure or repair of damage done. They argue that the key to both prevention and reversal,

at least in early stages, is to pinpoint its numerous drivers—from nutritional and hormonal deficiencies and exposure to infection to environmental toxins and harmful drugs—and attack them simultaneously. It’s a stark departure from the classic, often unsuccessful, one-pill treatment approach. Of the 244 clinical trials for Alzheimer’s drugs between 2002 and 2012, all but one failed. “Imagine having a roof with 36 holes in it, and your drug patched one hole. You still have 35 leaks,” says Bredesen, who believes his synergistic approach—the Bredesen Protocol—can likely make Alzheimer’s drugs work better or render them unnecessary. Skeptical colleagues point out that Bredesen’s paper described only 10 case studies, not a clinical trial. “It is intriguing, but not enough to make recommendations to physicians or patients,” says Keith Fargo, Ph.D., director of scientific programs and outreach for the Chicagobased Alzheimer’s Association. “The current consensus in the scientific community is that we do not have a way to reverse dementia.” While agreeing that a larger study is needed, Neurologist David Perlmutter, of Naples, Florida, whose bestsellers Brain Maker and Grain Brain promote nutritional changes for supporting brain health, considers Bredesen’s study revolutionary. “To reverse Alzheimer’s in one patient is monumental, much less 10,” says Perlmutter. They recently presented together at a conference organized by Sharp Again Naturally, a New York nonprofit that educates patients and caregivers about natural means of slowing and reversing cognitive decline. After losing her mother to Alzheimer’s, the nonprofit’s co-founder, Jacqui Bishop, 74, stopped her own frightening decline by changing her diet and getting her thyroid hormone levels under control via supplements. Now she’s helping others do the same. She says, “We are trying to change the conversation from one of despair to one of hope.”

Mending Body and Brain

Key to Bredesen’s approach is the notion that instead of being one disease, Alzheimer’s consists of three sub-types with distinct drivers: inflammation or

To determine which one to target, he tests patients for blood-sugar, inflammation and hormone levels, heavy metals and critical nutrients such as D and B vitamins. Then he crafts a personalized plan. He notes that the 10 years it can take to progress from subtle decline to full-blown Alzheimer’s provides a huge opportunity. “Ideally, we want people to come in when they have mild impairment or are asymptomatic,” says Bredesen, advising that tests be done for the APOE4, or “Alzheimer’s gene” in one’s 40s. “People have not wanted to know in the past because they’ve been told there is nothing they can do about it. We completely disagree.” One way to stay cognitively sharp is to eat fewer carbs (which boost blood sugar) and eat more fat, says Perlmutter. “There is a clear relationship between elevated levels of blood sugar and increased risk of Alzheimer’s.” One study, published in 2013 in the New England Journal of Medicine, tracked 2,067 healthy adults for seven years and found that the higher their average glucose level, even if they weren’t diabetic, the more likely they were to develop dementia. For instance, those with a level of 115 milligrams per deciliter were 18 percent more at risk than those measuring 100 milligrams per deciliter. A 2012 study published in Neurology followed 266 adults for four years and found that those with higher blood sugar saw certain areas of the brain shrink 6 to 10 percent more than those with lower blood sugar. Gluten can also be problematic, advises Perlmutter, when it’s inflammatory and driving brain degeneration. In contrast, good fat, like that in avocados, fatty fish, coconut oil and walnuts, serves as a foundation for neurons and an efficient, clean-burning fuel source for the brain. This is particularly helpful in someone with early-stage

Get-Smart Supplements Curcumin: This potent constituent in turmeric (the yellow spice that gives curry its flavor) has been shown to combat many of the problems that contribute to brain degeneration, including inflammation, free radical damage and high blood sugar. It also boosts growth of new brain cells. Take 500 milligrams (mg) twice daily or eat a diet rich in curry. DHA (docosahexaenoic acid): This omega-3 fatty acid serves as a key building block for brain cell membranes. Take 1,000 mg daily (derived from fish oil or algae) or eat lots of fatty fish. Coconut oil: It’s rich in medium-chain triglycerides, an efficient, clean-burning fuel source for the brain. Take one or two teaspoons daily. Probiotics: These help fortify the intestinal lining, reducing the gut permeability and inflammation that can impact cognitive health. Alzheimer’s, says Bredesen, because the disease can make it harder for the brain to use sugar for fuel. In some cases, both doctors recommend an extremely low-carb, or “ketogenic” diet (fewer than 60 grams of carbs per day). Starved of carbohydrates, the liver produces fat-like compounds called ketones, a brain-fuel source shown to stimulate growth of new neural networks. Bredesen also recommends 12 hours of fasting each night, with zero food intake within three hours of going to sleep. Fasting promotes a process called autophagy, by which the brain essentially cleans itself of damaged cellular material. Eight hours of sleep is also vital. According to University of Rochester research, the space between brain cells opens up during sleep, allowing cleansing channels of fluid to flow more freely. “If you were operating your house 24/7 with no time to rest or clean, it would be disastrous,” says Bredesen. “The same is true of your brain.” Also, they say, keep teeth clean because bacterial infections, including those in the gums, have been shown to hasten formation of neuron-killing plaque. Also critically examine the prescription drugs being ingested. A recent study of 74,000 people published in JAMA Neurology found that regular use of heartburn drugs like Prilosec and Nexium increased dementia risk by 42 to 52 percent. Meanwhile, anticholinergic drugs like Benadryl and statin drugs prescribed to manage cholesterol have also been linked to increased dementia. “We see ‘statin brain’ all the time,” observes Perlmutter, who says once patients go off the drugs, they tend to get better.

False Hope or Sound Advice

Fargo says researchers are keenly interested in many of the ideas in Bredesen’s paper. Although it’s too early to endorse them, numerous studies are underway. But he wonders if some patients that assert that they’ve reversed dementia actually suffered from something else, like sleep apnea or depression. Bredesen stands by his research, asserting that the 10 patients in his paper had all been formally diagnosed with Alzheimer’s or its precursors. One 69-year-old entrepreneur that was

After his father, then 75, was diagnosed with Lewy Body Dementia, the New York City financial advisor attended a Sharp Again Naturally meeting seeking advice. “I was skeptical, but when the answer you get from everyone else is, ‘There’s nothing you can do,’ you become more willing to listen.” He took his father off his cholesterol medication, fed him spoonfuls of coconut oil daily and put him on a specific supplement regimen. His balance improved and he could participate in family outings again. “If you had told me a few years ago we’d be able to take Dad to a restaurant for his 80th birthday, I would have said, ‘No way.’ But we did.” Tramontozzi says his father isn’t cured, but the advice he obtained facilitated more time together and insights on how to avoid a similar fate. “These are all things a healthy 37-year-old should be doing right now anyway. I had always been a dancer, and found Pilates provides the movement therapy that my dance classes lack.” Current trends are combining Pilates not only with yoga, but also dance and even boxing. “My favorite fusion Pilates class is barre,” says Halley Willcox, a certified Pilates teacher originally from Austin, Texas, now a grad student at the University of Arizona, in Tucson. The boxing variation, called piloxing, incorporates pugilistic moves and barefoot interval training. “No prior experience is necessary; the possibilities are endless,” comments Willcox. Anderson believes, “The growth we’re observing is due to the fact that Pilates addresses fitness across the entire body, rather than parts. It creates a wonderful feeling of overall well-being; the exercise is done in a balanced manner on all planes and is coordinated with conscious breathing. Plus, it doesn’t cause injuries, it prevents them.”

Pilates is recognized as a highly effective way to improve posture.

Pilates improves balance and coordination because all the muscles work together. The entire body is learning how to dance in unison with itself.”

Boosts Immunity “The more I committed to a regular Pilates practice, the more I noticed I wasn’t getting sick as often,” says January. “Pilates helps boost the immune system through reducing stress, a well-known contributor to disease. It’s accessible to people of all ages. You don’t have to be flexible or strong to begin, just willing.” She offers this advice to beginners. “Check out all the local studios to see what they offer. It’s best to start out taking classes twice a week with a certified teacher for two to three months. That’s easy to commit to. Festive Sips and Nibbles Vegan Holiday Treats that Everyone Loves by Judith Fertig

F

or those that like to eat plant-based meals most of the time, the holidays can present a challenge. Social occasions from Thanksgiving to New Year’s Day abound, including multi-course dinners and potlucks; tree-trimming and baking parties; neighborly hospitality; nibbling on treats while wrapping gifts; and gathering to watch a holiday movie. Because so much is happening in such a short period of time, people often revert to serving traditional foods such as Aunt Mary’s cheese ball or Grandma Daisy’s three-layer chocolate bars. These vintage recipes, however, can be laden with processed ingredients. Foods that signaled holiday cheer ages ago need a tweak or two to satisfy today’s health-minded friends and family members. With traditional flavors of the season like aromatic spices, fresh rosemary and chocolate, plus a plantbased philosophy, family favorites can get a new twist. Natural Awakenings asked cookbook authors, chefs and bloggers from around the country to help us celebrate wonderful holiday moments, big and small. Adding a plant-based nibble or sip not only helps party hosts stay on track, it also helps keep guests from over-indulging, so that everyone ends up enjoying themselves even more.

Addictive Nibbles

American-born Sandra Gutierrez grew up in Guatemala and now lives in Cary, North Carolina. As the author of The New Southern Latino Table and Empanadas: The Hand-Held Pies of Latin America, she shows how fresh, seasonal, Latino foods can add grace and flavor to any table. “In the South, appetizers can be as simple as shelled pecans tossed with spices,” she says. She applies the same easy treatment to pumpkin seeds, or pepitas, tossing them with ancho chile powder, cumin, coriander and other flavorings to bake in the oven until crunchy. “These take only minutes to make and will keep for a few weeks if stored in an airtight container.” Then, when people drop by, she has a ready-made, plant-based, delicious nibble to offer with drinks. Brother chefs Chad and Derek Sarno, of Austin, Texas, are the co-founders of WickedHealthyFood.com, a website devoted to plant-based eating habits. Chad has co-authored (with Chris Karr) Crazy Sexy Kitchen: 150 Plant-Empowered Recipes to Ignite a Mouthwatering Revolution. Derek is the former global executive chef for Whole Foods Market. “Shoot for 80 percent healthy and 20 percent wicked, and you’ll be 100 percent sexy,” they advise with a wink.

A little indulgence is fine during the holidays, they say. “For vegans and vegetarians, think of your 20 percent as a chance to let loose every now and again and enjoy whatever makes you feel a bit wicked—fats, sugars, salts, beer; you get the idea—unless you’re following doctor’s orders. We want you to eat for health, and as chefs, we want eating healthy to taste great.” For the holidays, they like to have easy, yet big-flavor nibbles on hand such as homemade popcorn flavored with fresh rosemary and truffle oil, or crunchy, roasted chickpeas that pack a little heat from sriracha, a homemade or bottled hot sauce.

Celebratory Sips

Sophia DeSantis, of Carlsbad, California, changed to a vegan diet because of her husband’s health issues several years ago. “We ate plant-based for one month and just kept on going,” she says. “Within three months, he was off all meds and hasn’t needed them since.” That victory made her an impassioned vegan cook for their three children, as well. Whether preparing food for family or guests, she says, “I don’t even mention the type of food, because I simply make delicious dishes that just happen to be plant-based. There are a million and one ways to redo traditional favorites.” DeSantis makes her own pistachio milk for a special hot chocolate she serves during the holidays; she blogs her recipes at VeggiesDontBite.com. Other options for plant-based sips include chilled, dairy-free eggnog, perhaps topped with coconut creamer and a dusting of freshly grated nutmeg. Mulled cider or pomegranate juice, warmed in a stove pot with whole spices like cinnamon and cloves, plus slices of citrus fruits, add holiday flavors and aromas. Having already prepared nibbles and sips handy in the pantry, freezer or refrigerator makes both planned and spontaneous hosting easier, as well as providing ready-made goodies to bring to other gatherings. “Then, there’s always something available you can enjoy,” says DeSantis. Frothy Hot Chocolate with Pistachio Milk

Spiced Pepitas These crunchy pumpkin seeds are lemony, salty, spicy and zesty, all at the same time. A handful of these toasted tidbits whets the appetite. Yields: 2 cups 2 cups raw pumpkin seeds 1 Tbsp grated lemon zest 1 Tbsp lemon juice 2 tsp salt 1 tsp ground cumin ½ tsp freshly ground black pepper ½ tsp ground coriander ½ tsp ancho chile powder ½ tsp cayenne pepper ¼ tsp garlic powder ¼ tsp sugar (optional) Preheat the oven to 375° F. In a medium bowl, toss together the pumpkin seeds, lemon zest, lemon juice, salt, cumin, pepper, coriander, chile powder, cayenne and garlic powder. Spread the mixture on a baking sheet and bake for 5 minutes. Remove the baking sheet from the oven and shake to redistribute the seeds, and then bake for another 3 minutes. Pull it out to shake the pan again. Then finish baking for 1 to 2 minutes or until the pumpkin seeds are crispy and golden without burning them. Beer-Miso-Sriracha Roasted Chickpeas

Cocoa ½ to ¾ cup unsweetened baking cocoa or cacao powder ¼ to ½ cup date paste 1 tsp cinnamon 1 tsp vanilla extract Dash Himalayan pink salt

Any favorite beer will work. Yields: 2 to 4 servings

For the pistachio milk, soak the nuts overnight in a bowl of water. Rinse before placing them into a highspeed blender with the 2 cups of water. Blend until the mixture is completely puréed and milky.

1 (15½ oz) can chickpeas or garbanzo beans, drained and set aside 1 Tbsp sriracha 1 Tbsp organic miso paste (any color) 1 /3 bottle of beer Black and white sesame seeds Dried chili to taste Smoked salt for garnish to taste Preheat the oven to 375° F.

Strain mixture through a nut milk bag or cheesecloth; then add the nut milk back into the blender.

Whisk wet ingredients until mixed well. Toss mixture with chickpeas.

Add all other ingredients and blend at a high speed until thick.

Place mixture on baking pan and roast for 20 to 30 minutes, shaking and stirring periodically until mixture is evaporated and chickpeas begin to get color; beware of burning.

A Meatless Cornucopia for the Holiday Table by Heather Lalley

‘T

is the season for overindulgence that winds up on January first, when we all resolve to do better next time. There is still time this year to create luxurious, comforting, plant-based side dishes to grace the holiday table. “The less-is-more concept is more relevant with vegetables,” says Chicagobased cookbook author Anupy Singla (IndianAsApplePie.com). Singla’s third cookbook, Indian For Everyone, just came out in paperback. A host of fall and winter vegetables are ready to take co-star billing on any holiday table. Think broccoli and cauliflower and kale and okra and so many more. Options for serving abound, from simply bulking up traditional holiday favorites with more vegetables to preparing simple, no-fuss, plant-focused casseroles, braises, gratins and more. The humble cauliflower is having its day, from major national chain restaurants to home kitchens. The restaurant California Pizza Kitchen (cpk. com) recently launched Spicy Buffalo Cauliflower, featuring fried cauliflower 40

florets in buttermilk batter tossed with Sriracha-buffalo sauce. Locally-based Bar Toma Chicago (BarTomaChicago. com) serves a hearty, well-seasoned, wood-fired whole head of cauliflower with a side of whipped goat cheese dip. Chef Mark Mendez, of Vera (VeraChicago.com), in Chicago’s West Loop, likes to bake cauliflower with goat cheese and bread crumbs. Once the cauliflower florets are “super-soft and cooked,” he mixes it with golden raisins and pine nuts. Singla is a fan of cauliflower mashed potatoes, as well as the traditional Indian dish aloo gobi, a spiceinfused mixture of cauliflower and potatoes. Brussels sprouts are also gaining new fans as people discover they don’t need to be cooked down to mush. In fact, the tiny little cabbages taste much better when caramelized a bit and left with some bite to them. Mendez roasts them in the oven with an anchovyspiked vinaigrette for a salty, savory flavor boost. Winter squash is another luxuri-

ous side offering, and there are so many options for preparation. Singla likes to roast butternut squash with oil and fenugreek seeds, lime or lemon and chiles. She often serves the dish with lamb, or for a fully vegetarian meal, with a simple bowl of dal (a thick lentil stew common in Indian cooking). “It’s so addictive,” she says. “It’s such comfort food.” Butternut squash is a classic, but dozens of other squash varieties are available this time of year, Mendez says. Scope out winter farmers’ markets, ethnic markets and even standard grocery stores for unusual varieties of winter squash. His favorite is the red kuri squash. “It’s really bright orange and it’s super-intense,” he says. “It makes a good soup.” When preparing healthful vegetable side dishes, don’t worry about adding a little fat. Whether it’s butter or oil or ghee, that flavor boost will make every dish more delicious. This is holiday food, after all. “It’s okay to have a little bit of fat,” Singla says. “Don’t be afraid.” Then there are a whole world of winter greens ready to be served on their own or added to favorite seasonal dishes. Toss handfuls of spinach into soup just before serving (a good method is to line the soup bowl with spinach leaves and ladle the hot soup on top to affect a light wilt), and the bright green color will add interest, while the freshness adds a layer of texture. Wilt kale and add it to a casserole or stuffing. Mendez serves a kale salad with Manchego cheese, bread crumbs and a squeeze of lemon at his restaurant. He also likes to braise the dark green leaves in tomato sauce, chicken stock, anchovies, garlic and chili flakes. “Put it in a pot and cook it really, really slowly,” he says. “Use more kale than you think is necessary. It’s going to shrink.” Alternatively, kale can also be braised in a heavy pot in the oven at about 300 degrees, or it can be stewed down in a slowcooker for many hours. To spice up the holiday table with some vegetables that may be unfamiliar, Singla fills whole, split okra with a chickpea flour mixture. “It’s finger food,” she says. “There’s a whole meal in there.” Or, set the potatoes aside and


try a mashed trio of carrots, parsnips and turnips. Take a knobby celery root, slice it thinly and turn it into roasted celery root chips. Perhaps brown it in butter and oil before braising it in broth until soft. Grab a kohlrabi and grate it into a slaw or salad or shred it and mix with an egg, breadcrumbs and spices to turn it into crispy kohlrabi fritters. And don’t forget the less-than-pretty rutabaga. Baked Tandoori Cauliflower Yields: 6 cups ½ cup plain, unsweetened yogurt 1 Tbsp tandoori masala (recipe below), plus more for sprinkling 2 tsp salt 1 1-inch piece ginger, peeled and grated Juice of 1 lemon or lime, divided 1 large head cauliflower, trimmed and cut into bite-sized pieces 1 small yellow or red onion, finely sliced

Transfer the cauliflower to a serving bowl or tray. Sprinkle the remaining lemon or lime juice over the dish. Smother the cauliflower with the onion, chiles and cilantro. For added punch, sprinkle on a bit more of the tandoori masala just before serving. From Indian for Everyone, by Anupy Singla 1-3 fresh Thai, serrano or cayenne chilies, stems removed and finely chopped 2 Tbsp chopped fresh cilantro

Tandoori Masala Yields: 2 cups

Set the oven rack to the highest position and preheat the oven to 400 degrees.

1 cup whole dried red chilies ½ cup coriander seeds ½ cup cumin seeds ¼ cup whole black peppercorns ¼ cup whole cloves 2 Tbsp green cardamom pods 1 Tbsp ajwain (carom seeds) 2 tsp fenugreek seeds 3 3-inch sticks cinnamon 1 heaping Tbsp dried ginger powder 2 tsp garlic powder 2 tsp turmeric powder ½ cup unsmoked paprika

Arrange the cauliflower in a single layer on a lightly greased baking sheet. Bake for 30 minutes, turning over the pieces once halfway through the cooking time to ensure all pieces are lightly browned on both sides. Remove from oven.

Combine the dried chiles, coriander and cumin seeds, peppercorns, cloves, cardamom pods, ajwain, fenugreek seeds and cinnamon in a shallow, heavy pan over medium heat and dry roast the spices for 4 minutes.

In a large mixing bowl, combine the yogurt, the tandoori masala, salt, ginger and ½ of the lemon or lime juice. Whisk until combined. Carefully fold the cauliflower into the mixture, ensuring all the pieces are coated. Refrigerate for 2 hours or (ideally) overnight.

Place the cooled, roasted spice in a spice grinder or powerful blender and process into a fine powder. Sift after grinding to refine the powder. Transfer to a large mixing bowl. Add the ginger, garlic, turmeric and paprika to the mixing bowl and whisk to combine. Store in an airtight jar in a cool, dry place for up to six months.

Rosemary-Infused Carrots Yields: 4 servings 1 lb organic carrots, peeled 2 cloves garlic, peeled 2 Tbsp olive oil Salt and pepper to taste 2 rosemary sprigs 1 tsp parsley, chopped Lay the carrots flat on a cutting board and cut the on the diagonal into 1 /8 inch ovals. Gently tap the garlic with the side of a knife, just until the flesh cracks. Heat the olive oil over medium-high heat in a large nonstick pan for 1 minute, then add in the carrots and lightly crushed garlic. Let sit without shaking the pan for 3 minutes. Sprinkle some salt and pepper over the carrots, place the two rosemary sprigs in the pan and stir, turning the carrots so the uncooked sides become exposed to direct heat. Cook, undisturbed, for an additional 3 minutes. The carrots should be lightly browned on each side.

Test a carrot for doneness. If it’s too hard, continue cooking for another minute.

During the entire cooking time, shake the pan every 15 to 20 seconds to prevent the spices from burning. The mixture should be just toasted and aromatic. Remove from the heat, transfer to a plate and set aside to cool for 15 minutes.

Sweet and Sour Sweet Potatoes Yields: 4 cups 2 Tbsp oil ½ tsp fenugreek seeds 1 large sweet potato, peeled and cubed 1-3 Thai, serrano or cayenne chiles, stems removed, chopped 1 tsp coarse sea salt ½ tsp red chile powder or cayenne 1 heaping Tbsp jiggery or brown sugar Juice of ½ lemon 1 Tbsp chopped fresh cilantro In a wide, heavy pan, heat the oil over medium-high heat. Add the fenugreek and cook until the seeds just start to sizzle and turn light brown. Don’t overcook them, or they will turn bitter. Add the sweet potato and chiles and cook for 3 minutes until lightly browned, stirring occasionally to prevent sticking. Reduce the heat to low and partially cover the pan. Cook for 3 to 4 more minutes. Turn off the heat. Add the salt, red chile powder, jaggery, lemon juice and cilantro. Squash Carrot Sweet Potato Soup with Coconut Cream (Vegan) Yields: 4 cups ½ large butternut squash, diced 1 med. sweet potato, diced 2 med. carrots, diced ½ med. yellow onion, diced 1 Tbsp avocado oil 2 cups vegetable broth (make your own by simmering different veggies for about 30 minutes) or just water ¼ tsp ground nutmeg ¼ tsp ground ginger ¼ tsp cumin powder ¼ tsp garlic powder ¼ tsp sea salt ¼ can organic coconut cream (or make your own by blending the water and meat of a young coconut) Love and gratitude Warm the avocado oil in the pot over medium heat. Sauté the onion and the carrot for about 5 minutes. Add the squash and sweet potato to the pot and add in the vegetable broth/ water. Add the spices and salt and bring to a boil. Cover and cook over low heat for about 20-25 minutes. Puree the soup with an immersion blender for a smooth consistency. Mix in the coconut milk or spoon it over the soup when serving. National Bison Day will be observed from 9 a.m. to noon, November 5 at Midewin National Tallgrass Prairie (fs. usda.gov/midewin) to honor the first national mammal, as designated in May. At Midewin, the grazing activity of a small herd of bison is helping to restore the prairies. Bison and ecology specialist Duane Lammers will deliver the keynote address at 11 a.m. at the Iron Bridge Trailhead. American Bison Coalition National Coordinator Julie Anton Randall and Keith Aune, bison program director with the Wildlife Conservation Society, will also speak. Guests will be able to ask questions and there is an area for children with games and information about bison. It’s recommended to bring binoculars and wear sturdy shoes or hiking boots. Because the herd’s grazing pattern is unpredictable, there is no guarantee of a bison spotting. Representatives of federally recognized Native American tribes will be present. Jim Stone, executive director of the Rapid City, South Dakota-based InterTribal Buffalo Council, will talk about work they are doing to restore buffalo and to preserve Native American historical, cultural, traditional and spiritual relationships for future generations. “Our goal is to re-establish healthy buffalo populations on tribal lands and to re-establish hope for Indian people,” says Stone. Lammers, a bison consultant and director on more than 60 film projects around the world, will speak about the economic aspects of the bison. He also specializes in wildlife management, landscape ecology, bison husbandry and humane handling methods and has 40 years of experience working with bison herds of 2,000 animals. He has also helped develop several bison products and has used their grazing to enhance other wildlife, plants and water sources. Lammers will bring items for display that are made from bison byproducts, such as socks, gloves, a hat, a baseball glove and boots. “Over the years, I have marketed every part of the bison, including even the noise they make,” Lammers says. Lammers works with Midewin National Tallgrass Prairie as a bison consultant through the National Forest Foundation, and was a consultant when a small herd of bison was introduced at Midewin in October 2015. The herd is a 20-year experiment to restore the landscape to native tallgrass prairie because the herd’s grazing activity is significant in reinvigorating a diverse habit for birds and wildlife. The U.S. Forest Service is working with volunteers, nonprofit groups and federal partners to restore 18,500 acres to as close to historic prairie as possible. “We are working to show people what the Illinois prairies might have looked like hundreds and thousands of years ago, and the bison herd is essential in that mission,” says Prairie Supervisor Wade Spang.

Saving pollinators and rescuing endangered species like the monarch butterfly and the rusty-patched bumblebee aren’t the only reasons to make the switch to native plants and sustainable land practices at our home, church, school and business. The way we use our land can impact nearly every other environmental challenge we face. By reducing space devoted to water-guzzling grass treated with chemicals, leaf blowers and lawn mowers and replacing imported yews and boxwoods with native shrubs and plants that are non-invasive and support insects and birds, we reduce water pollution from runoff, maintain the health of the soil and even help sequester carbon to address climate change. Chicago Living Corridors (CLC) can help. Unlike most conservation organizations, this alliance of habitat groups focuses on unprotected private property. Private property makes up 95 percent of the land in the Chicago region, and that is a huge untapped resource for restoration of our fragmented natural systems. To address this gap, the CLC is mapping properties that use native plants and environmentally friendly practices and providing landowners with education, information and the resources they need. CLC has applied for a MacArthur 100 & Change grant to create the Living Land Bank, an exchange market for natural plantings, sometimes called “green infrastructure”. Organizations involved with natural systems can participate with CLC to join the executive committee to get their properties on the regional map or coordinate other activities. For landowners and homeowners interested in understanding more about sustainable landscaping practices, CLC provides information to get started and make landscaping more interesting.

The temptation to buy inexpensive clothes whispers, “It’s smart to trend with the latest fad,” or “Disposable wear can be tossed if it gets stained,” or “I can wear this outfit only once for a special event.” The lure to buy future throwaways seems especially prevalent during the holiday season of gifting and gatherings. Consumers can fall into the cycle of buying from inexpensive chain stores, wearing items a few times and then discarding them during spring cleaning purges. According to The Atlantic magazine, Americans now buy five times as much clothing annually as they did in 1980, yet recycle or donate only 15 percent of it. They simply discard 10 million tons as waste, reports the Huffington Post. Conscious consumers consider the extended consequences of their purchases. The production and transporting of an average shirt, for example, can deliver about nine pounds of carbon dioxide into the atmosphere, reports Eve Andrews, culture editor for Grist.com. She offers five tips: buy less; shop smarter and only for what’s truly needed; look for durability and design that won’t fall apart or look dated in a few months; decrease frequency of laundering to increase the life of the garment; and donate what no longer works. Buying items that are durable, timeless and made under fair labor conditions from selected organic, resale and outlet stores that sell high-end clothing that lasts at reduced prices will save money over time and reduce resource abuse and waste. Five top outlet chains for superior and lasting value per a 2016 Consumer Reports readers survey are Bon Worth, L.L. Bean, Haggar, OshKosh B’gosh and Izod. Quality labels are welcomed by consignment stores, so the wearer can even retrieve some of the purchase price for gently-used classics. Giving used threads to thrift shops, churches, The Salvation Army and Goodwill Industries is another way to extend the life of items, help others and save landfill space. Another option is to cut up portions of clothing earmarked for disposal so they can live on as cleaning rags for home and vehicles.

he holidays bring buffet feasts, ribboned gifts, stockings of goodies, ornaments and tinsel that to animals all look good enough to eat. Pets can get into trouble, especially if they’re away from home. Boarding may be the best alternative when the family travels for holidays.

Brad Nierenberg blogs about dogs at PawsitivelyBradleyNierenberg.com, from Wilmington, Delaware. He relates an experience when friends watched Bitsy, his Cavalier King Charles spaniel, and she escaped out the front door. Fortunately, a neighbor found her. Afterward, he says, “I asked other dog-crazy owners which kennel they’d recommend.” Kennels used to be an indoor cage with a dog door to a fenced run area outside. Dogs could see each other, but not play together. Well-heeled facilities offered fancy amenities, geared more 48

to impress the owner than comfort the pet and were generally bereft of enriching experiences. “Pets are living, breathing, loving creatures, and boarding facilities not yet up to speed need to catch up to how people feel about pets today,” says Charlotte Biggs, COO of the nonprofit International Boarding and Pet Service Association, near Austin, Texas. It helps its members create safe, responsible pet care facilities by including holistic, positive and green practices in their safety and training manuals. Susan Briggs, co-founder of the independent Professional Animal Care Certification Council for the pet care industry, in Houston, advises, “Take a tour. Kennels should be clean and organized. You should feel comfortable with the staff.” “Do the employees talk about your pet like you’re bringing the car in for an oil change? If it’s ignored in favor

of paperwork, maybe you should keep looking,” says Josh Brown, owner of Far North Kennel, in Anchorage, Alaska. “You want to go where the staff bends down and lets your pet come to them. It should be obvious your dog’s going to get positive human interaction. When you walk out after touring the facility, you should feel better about boarding than when you walked in.”

Ask Questions

Costs vary, so ask what’s included in the basic fee, such as group play, treats, administered meds, special bedding and feeding the same food as at home. The pet also should be able to have their bed, toys and favorite things with them. Also be clear about medications, health or mobility issues and special bedding or grooming preferences. An apparent bargain can be either less than expected or more expensive once all costs are totaled. “Ask if titers are accepted in lieu of current vaccinations, and don’t feel pressured to over-vaccinate,” advises Briggs, who explains that titers assess levels of immunity from previous vaccinations. She also suggests asking about the facility’s emergency plan, including evacuation. The more information everyone has, the better the pet’s stay will be. Socialized dogs or cats should be able to enjoy group playtime or a communal catio (enclosed indoor/outdoor space for felines); others would rather watch from afar. Stays should be individualized, not uniform. Facility owners suggest first booking a day visit and then an overnight as a test.
