SWEET POTATOES INGREDIENTS 4 cups sweet potatoes, peeled and diced 4 cups water 1-inch fresh ginger root, peeled ½ cup coconut milk 1-2 tbsps NOW Foods Organic Maple Syrup 1 tbsp extra-virgin coconut oil 1 pinch sea salt Freshly ground nutmeg to taste ½ cup pecans, toasted DIRECTIONS Peel and dice sweet potatoes and place in medium saucepan. Add water to cover and cook on medium high for 10 minutes or until fork tender. Drain sweet potatoes. In food processor, pulse peeled ginger root to mince. Add cooked sweet potatoes, coconut milk, maple syrup, coconut oil, sea salt and nutmeg and pulse until smooth consistency.

In dry sauté pan, lightly toast pecans over medium high heat until fragrant. Garnish sweet potatoes with toasted pecans to serve.

CHEF MEGAN’S HOLIDAY SURVIVAL GUIDE What is it about the holidays that has us so unwrapped into a frenzied state of mind when we work so hard to stay between the navigational lines for the rest of the year? A healthy holiday strategy can be much easier that you think.

Start now and your New Years resolutions will already be in place.

EAT REAL FOOD. The holidays don’t care that you are trying to stay between those navigational lines so fill up with real food like sweet potatoes and fiber filled foods before you go party up.

Keeping your regular mindful eating schedule is the best way to ease through the holidays.

LIMIT YOUR SUGARS. How many folks get holiday cookies made for you? Resist! Stick to your low sugar consumption plan and perhaps they won’t stick with you in the new year! You know what they taste like so have one or two, not the whole plate. Besides, holiday sweets can be really overrated with once a year baker still using last year’s ingredients.

COUNT YOUR COCKTAILS AND MAKE THEM COUNT. Know that each tipsy beverage will weaken your resolve to choose healthier options so alternate with some fizzy water. Garnish your sparkling water

with fresh lemon or lime and you will fit right in at any party. Keep your party picture face on point so you won’t end up on your friend’s social media feed when you didn’t look so “awake.”

BREATHE IN AND OUT FULLY WITH MINDFULNESS EACH DAY. 10 minutes a day make you a better person. 4 counts in and 6 counts out. See, you are feeling better already. Peppermint Chocolate Chip Pancakes

Ingredients: • Colette & Frank’s Gluten Free Goodness

Pancake Mix • 3 T unsweetened cocoa • ½ cup mini chocolate chips • 1 tsp peppermint extract or 1 tsp vanilla • 2 eggs • 6 T oil or butter • 2/3 cup milk or milk substitute

Directions: n In a medium-sized bowl, mix all dry ingredients. Add wet ingredients and stir until just combined. Add in chocolate chips. n Heat griddle over medium heat and grease lightly with butter or oil. n Scoop approximately 1/4 cup (or 2 spoonfuls) of pancake batter onto the griddle. Mixture should be like the batter of a cake. If it is not, add a little more milk. n Cook until pancakes have bubbles on the top, then flip and cook an additional 30-60 seconds. Repeat with the remaining pancake batter. n Serve topped with chocolate sauce, crushed candy canes, or your favorite pancake topping.

Traveling around the holidays can be so exciting! But, it also comes with its own set of challenges: from being out of the routine, to feeling festive and wanting to indulge safely. Here are 3 tips to help you prepare to have the best holiday traveling season ever!

Did you know that Airbnb offers experiences and guided tours?

These are an amazing way to explore your destination with the help of a local expert. I like to participate in these types of tours to help me navigate the food experiences and options in the area.

Check to see if there are any going on at your destination! There are tons of different kinds

of experiences such as food tours and cooking classes. Especially around the holidays, it can be fun to find a holiday-themed cooking class or food tour for the place that you’re going. If you’re going somewhere that you’ve never been before or don’t know the language, hiring a local guide through Airbnb to navigate the food scene for you can be super helpful (especially when you are trying to find foods that are safe and healthy, and avoid foods that hurt you). When you’re looking for a food-related Airbnb experience, look for a guide that can customize a menu to fit your needs. There are tons of different experiences outside of culinary, based on interest and activity levels as well.

Many people know that you can book accommodation through AirBnB but not as many people know about the experiences because these are kind of new and they’re really rad!

The next tip is to create a food or special diet card before you go on your trip. These are helpful whether you’re traveling home for

the holidays or are traveling to a new destination as a vacation.

My favorite website is Allergy Translation because you can order a free English language card and very inexpensive translated versions (in 43 different languages) depending on where you’re going. They also have an app which is really rad. You can get that information right to your phone so you don’t have to carry around the paper! Allergy Translation also offers special diet versions, describes cross contamination concerns, and offers over 200 different foods for your card! There are tons of different sites and cards out there so I recommend researching and finding one that best fits your needs. Allergy Transaction is a great place to start because they offer so many different things.

The last tip is to research restaurant options and have a few different choices. Write down the contact information, hours, and menu options for each restaurant.

Then, call ahead to find out which chefs will be working, if possible, and when a less busy time for their restaurant is. I usually like to do two different options for every meal that I am going to have when I travel to prepare for unexpected situations! This way, everyone can be excited about what they’ll

eat before they even get there.

Having two different options is important so you’re not stuck trying to find a safe restaurant or meal while you’re starving. To start researching, I use the websites Happy Cow and TripAdvisor and look at the reviews and photos.

Traveling can be really stressful, especially around the holidays.

With a few extra steps, and some planning before you leave, it can really be enjoyable and doable!

I know that it’s the holidays, and there’s so much stress happening already with seeing everyone you want to see, and the pressures of indulgent foods being present, and for those reasons it’s always good to do a little extra planning on the front end so that way the trip goes as smoothly as possible.

BATH BOMBS INGREDIENTS 1 cup baking soda ½ cup arrowroot powder ½ cup citric acid 1/2 cup pink himalayan salt, fine ¼ tsp beetroot powder, optional 21/2 tsps grapeseed or apricot kernel oil 15 drops peppermint essential oil 5 drops rosemary essential oil 1 tsps dried rosemary sprigs 1 to 2 tsps witch hazel or water, as needed DIRECTIONS Add baking soda, arrowroot powder, citric acid, and pink himalayan salt to large glass mixing bowl. Whisk to blend and remove any clumps. Addoptional beetroot powder for color. Next, pour grapeseed oil and each drop of essential oils into a separate, small glass bowl. Stir to combine. Then slowly pour wet ingredients into dry mixture, whisking as you go. If the mixture begins to fizz or foam, slow down.

After mixing the bowl of wet ingredients into dry mixture, scoop a small amount into your hand and squeeze it together to test the consistency. It should stick together

and hold it’s shape. If the mixture is too dry and powdery, add a ½ teaspoon of witch hazel or water.

Then mix well and test again.

Repeat until you have the correct consistency.

Once the bath bomb mixture is ready, place a pinch of dried rosemary sprigs in the base of a silicone tray mold. Fill each opening in the silicone mold to the top.

Allow to dry uncovered 8 hour or overnight. Once dry, gently release bath bombs onto a soft flour sack towel. Store in a dry place or container until use.

Yields: 12 - 3 to 4 oz bath bombs.

HOLIDAY HACKS FOR YOUR HEALTH

The holidays can bring us extra stress and temptation when it comes to living a healthy lifestyle. With extra holiday parties, family gatherings and your Grandma asking “did you try my dessert?” This holiday season lets keep those extra 10 pounds away and our hearts filled with Joy.

1.

Start your mornings with a protein shake or green smoothie to feed the body and ensure your metabolism is turned on from the start of the day. When we go for long periods of time skipping meals or eating non-dense nutrient foods our body will go into hibernation mode (just like those sleeping bears) and we will begin to store fat for the winter. This easy nutrient dense breakfast will keep your body in fat burning mode all season.

Forget the calorie counting and choose veggies first. This will allow you to leave the stress of sticking with a diet behind for the holiday season. Focus on filling your plate with 50% veggies, as this will allow your cells to get the nutrients they need to produce energy and the fiber to keep you regular. Fill your remaining plate with 25% fruit and 25% protein, even plant based protein is a great choice. Then, if you still have room for dessert, choose one that is process sugar free. One of our favorites is a slice of German Chocolate Cake from the Purple Sprout Cafe or a Pumpkin Pie from Hail Merry’s.

Choose red wine at the holiday parties. Red wine has been linked to fewer heart attacks and increasing levels of high density lipoprotein (HDL, the good cholesterol).

Doctors have also found that red wine has antioxidants including flavonoids and resveratrol which benefit the heart. Cheers to a Joyful Holiday season!

Turn up the holiday music and dance. The movement will help your body digest a big meal faster and keep you energized for the evening. Take a moment to be with nature and sit in silence. One of Tiffany’s favorite things to do is watch the snow fall out the window and slow her breathing. Giving thanks for the new season and the cleansing of the old. One of her favorite times to do this is in the early morning when the house is quiet and she can have a cup of Sandhill Coffee in silence. Remember to give yourself time to breath and reset, to help lower your stress level this season.

HOLIDAY SPICED PEPPER JAM

GLAZED SALMON INGREDIENTS 1/4 cup Rollicking Buckaroo Pepper Jam 1 tbsp sesame oil 1 tsp coconut amino’s 2- 4oz pieces salmon filet, de-boned, skin on 1/4 tsp fine sea salt 3 tbsps olive oil for cooking 1 tbsp fresh parsley, chopped

DRESSING FOR GREENS 1 tsp olive oil 1/2 tsp rice vinegar 1/8 tsp fine sea salt 4 cups mixed greens

DIRECTIONS Place pepper jam, sesame oil, and coconut amino’s in a small bowl, whisk to combine. Place salmon on a plate, pour mixture over salmon. Allow to sit while mixing dressing. Place olive oil, rice vinegar, 1/4 teaspoon fine salt in a large bowl, whisk to combine. Add mixed greens, toss to combine using tongs or hands. Divide evenly among 2 plates. Heat olive oil in a large pan or cast iron pan over medium high heat. Once oil is shimmering, place salmon in pan skin side down, pour remaining pepper jam marinade over salmon. Sprinkle each piece evenly with fine sea salt. Cook for 4 minutes uncovered.

Using a fish spatula, turn salmon over and cook for 4-5 minutes, or until center is medium. Serve immediately with fresh parsley and your favorite vegetable or rice side dish.

THE HINTON’S In our home we celebrate Christ’s birth, we celebrate heritage and we celebrate our community during the holiday season. Every year we have a Christmas tree filled with ornaments the girls have made over the years in school or at home, with twinkling colored lights. Christmas Day at our home is filled with food starting with a special breakfast of gluten free pancakes with maple bacon. For lunch we enjoy steaks and side dishes, and eventually finish the evening with a tasty chili. The day is spent watching old favorite movies like Star Wars and hanging out with family and friends.

Leading up to Christmas Day, we make allergy safe cookies and put plates together to share with the neighbors, like I did as a child with my Grandmother.

I would spend a week in my grandmother’s kitchen with my cousins making hundreds of cookies.

Then we would arrange them on tea plates made of china and give to the community and neighbors as a gift. The china plate from the flea market became a treasured memory of holiday sweets given during a season of celebrations.

ALLIE’S SUGAR COOKIES Ingredients 3 cups Allie’s Cookie Flour 1 cup sugar 1/4 tsp salt 8 oz unsalted butter (OR Earth Balance for dairy free) 3/4 tsp baking powder 1 egg (OR egg replacer for egg free) 1 Tbsp low fat milk (OR Hemp milk for dairy free) 1 tsp vanilla *The kits are soy free, but the sprinkles contain soy lecithin.

Directions In a bowl, sift together flour, baking powder and salt. Set aside. Put butter and sugar in a large mixing bowl and beat until blended. Add egg (or prepared egg replacer) and milk and continue beating. Put mixer on low speed and gradually add flour. Beat until batter pulls away from the side of the bowl. Spread the dough on parchment lined cookie sheet. Dough should be no more than 1/4 inch think. Cover with plastic wrap and refrigerate approximately 2 hours.

When ready to use, pre-heat oven to 325* F. Cut desired shapes and bake 7-9 minutes or until edges begin to brown.

Yields approximately 20 3” cookies.

COZY WARM VANILLA

ROOM SPRAY INGREDIENTS 1/2 cup distilled water 2 tbsp King Arthur Pure Vanilla Extract 4 drops cinnamon bark essential oil 6 drops orange essential oil 4 drops clove essential oil 1 spray bottle, 5 ounce DIRECTIONS Using a funnel pour half a cup of distilled water and two tablespoons vanilla extract into a spray bottle. Add four drops of cinnamon bark, six drops of orange, and four drops of clove essential oils. Close the lid and shake well to combine. Shake lightly before each use. A spray bottle with a fine mist is recommended.

Yields: 5 ounces

Purple Sprout Cafe and Juice Bar is one of the healthiest restaurants and full service juice bars in the Midwest that serves organic, non-GMO, sugar-free, largely gluten- and soy-free vegan food, with many paleo-friendly options. “We developed this gluten free German Chocolate Cake recipe from an old recipe from my husband’s grandmother Evelyn, who has passed on. My husband remembers always having this cake for his birthday growing up and even received one in the mail when he was away at college. We love making this cake for special occasions in our home. With the holidays approaching, now is the time to fall in love with this rich German chocolate cake. It pairs perfectly with a warm cup of coffee.”

GERMAN CHOCOLATE CAKE INGREDIENTS ½ cup semi sweet chocolate, chopped 2¼ cups gluten-free all purpose flour ¾ cup unsweetened cocoa powder 1½ tsp baking powder ½ tsp baking soda ½ tsp salt 1 cup lukewarm coffee 1 cup coconut milk 1 tbs lemon juice 1¼ cups unsalted butter, room temperature (or equivalent non-dairy substitute) 2¼ cups granulated white sugar 5 large eggs, room temperature (or equivalent egg substitute) 1½ tsp pure vanilla extract DIRECTIONS Preheat oven to 350 degrees. Lightly butter and flour your cake pans.

In a heatproof bowl, placed over a saucepan of simmering water, melt the chocolate. Remove from heat and let cool to room temperature. In a separate bowl, sift the flour, cocoa powder, baking powder, baking soda, and salt. In a small bowl, combine the coffee and coconut milk (with lemon juice).

Beat the butter until smooth and creamy. Add sugar and continue beating

until the mixture is fluffy. Scrape down the sides of the bowl as needed.

Add the eggs, one at a time, mixing well after each addition. Add the vanilla extract and beat to combine. Then add the melted chocolate and beat until incorporated. Add the coffee/coconut milk mixture and flour mixtures in three additions, beginning and ending with the flour mixture. Beat until the ingredients are mixed together. Divide the batter evenly among the three prepared pans and smooth the tops. Bake for about 30 to 35 minutes or until a toothpick inserted in the center comes out clean. Cool the cakes completely before spreading the Coconut pecan frosting.

COCONUT PECAN FROSTING INGREDIENTS 1 cup pecans, chopped 1 cup of granulated sugar 1 cup coconut milk 3 large egg yolks, lightly beaten (or egg substitute) ½ cup unsalted butter, cut into pieces (or butter substitute) ⅛ tsp salt 1½ cups sweetened or unsweetened shredded or flaked coconut ½ tsp pure vanilla extract DIRECTIONS Preheat the oven to 350 degrees. Place pecans on a baking sheet and bake for about 8-10 minutes or until lightly browned and fragrant. Remove from oven, cool, and then chop finely. In a medium saucepan, combine the sugar, coconut milk, egg yolks, butter, and salt. Cook over medium heat, stirring constantly. When the mixture begins to boil and thicken, remove from heat (about 5 minutes). Stir in the chopped pecans, coconut, and vanilla extract.

Let cool until spreadable (about 30-60 minutes).

To assemble: Place one layer of cake on your serving plate, and cover with one-third of the frosting. Place the second layer of cake, onto the first cake layer and frost with another one-third of the frosting. Then add the third cake layer and frost the top of the cake with the remaining frosting (sides of cake are left bare). The finished cake can be stored at room temperature for a 2-3 days or it can be refrigerated.
