An easy recipe for delicious keto pot roast.

3 lb. boneless beef chuck roast 1 teaspoon kosher salt ¼ teaspoon black pepper 1 medium onion sliced 2 tablespoons minced garlic 1 bunch parsley 1 cup beef broth (or red wine)

Strained cooking juices ½ teaspoon kosher salt ¼ teaspoon black pepper

Gravy:

Instructions

Season the chuck roast with 1 teaspoon kosher salt and 1/4 teaspoon black pepper. Place the roast in the slow cooker pan and add the sliced onion, garlic and parsley. Pour the beef broth (or wine) on top.

Cover and cook on low for 7 hours. Remove the slow cooker pot roast to a plate. Set the slow cooker to warm. Strain the cooking juices into a glass measuring cup, then return the beef to the slow cooker and cover, to keep warm while you make the gravy. Use a spoon to skim the fat layer off the top of the cooking juices.

Season with ½ teaspoon kosher salt and ¼ teaspoon black pepper. Transfer to a medium saucepan. Heat over medium heat, and continue to simmer, whisking occasionally, until reduced into a rich sauce, about 10 minutes. Flake the beef with a fork. Distribute evenly among plates lined with mashed cauliflower. Spoon 2-4 tablespoons of gravy on top of each plate and serve.

Arm Roast Boneless Beef

Boneless Pork Roast

An easy recipe for a juicy, succulent, very flavorful oven baked boneless pork roast. Rub with spices, then roast in the oven until done. It’s easy, tasty and affordable!

Olive oil spray 1 tablespoon kosher salt (not fine salt) ½ teaspoon black pepper 1 tablespoon garlic powder 1 tablespoon paprika (regular or smoked) 1 teaspoon dried sage 1 teaspoon dried thyme 3 lb. boneless pork shoulder roast

Instructions

Line a rimmed baking sheet with foil and fit it with a wire rack. Spray the wire rack with olive oil. In a small bowl, mix together the kosher salt, black pepper, garlic powder, paprika, sage and thyme. Pat the pork roast dry with paper towels. Place it on the wire rack.

Rub the spice mixture all over the roast. Spray its top liberally with olive oil. Heat the oven to 425o F. Allow the pork roast to sit at room temperature while the oven is warming, about 30 minutes. Insert a meat thermometer probe into the middle of the roast and place the pork in the hot oven. Roast for 15 minutes, then lower heat to 375o F and continue roasting until the meat thermometer reads 145o F. In my oven it takes 75 minutes (about 25 minutes per pound). Remove the pork roast from the oven. Loosely tent it with foil, and allow it to rest for 20 minutes. Carefully remove the butcher twine from the roast, slice and serve If your pork roast is bigger, you will need to rost it for longer.

If the top seems to be browning too much after 75 minutes, loosely cover it with foil.
