GRAND SEASON

From an early age, Roger knew he was born for hospitality. His family ran a quaint hotel and patisserie in his hometown in Switzerland, which ignited that passion.

After pursuing culinary roles across Switzerland, he commenced his Hyatt journey as a Chef de Cuisine at Hyatt Regency Dubai and Galleria where he rose to Executive Sous Chef four years later. He later took on a diverse path of Food and Beverage and senior leadership roles throughout different hotels in the company in Southeast Asia before he assumed the role of General Manager of a Hyatt Regency in South Korea.

Pursuing additional experiences away from Hyatt, Roger gained further knowledge as he embraced the challenges of watching over several properties as Cluster General Manager of Ayana Resort Bali and Vice President of Resorts Planning at Resorts World South Korea. Prior to taking on the role as General Manager of Grand Hyatt Manila, he managed a dual position: Senior Vice President of Josun Hotels & Resorts and General Manager of Josun Palace in Gangnam, South Korea.

Roger shares that the best thing about being in a hotel is that no two days are the same. There is the fulfillment of delighting patrons, the thrill in the unexpected and providing an environment where creativity thrives – all while forging good relationships with guests, owners and team members. That, to him, is the true hallmark of service.

Mark

Zaragoza, Executive Sous Chef at The Peak

This may be Grand Hyatt Manila’s biggest comeback, with Chef Mark Zaragosa returning as The Peak’s Executive Sous Chef. Chef Mark’s journey with Hyatt began in 2017 as part of the pre-opening team at The Grand Kitchen. Even before his Hyatt career, Chef Mark made a name for himself in the culinary industry.

He spent the early years of his career with Gordon Ramsay’s team at MAZE in Doha, Qatar. Prior to his return to Hyatt, he was part of Marina Social by Jason Atherton at Marina Intercontinental in Dubai for two years and a year with Bistro Du Vin by Les Amis. Chef Mark has dedicated himself to menu development, ensuring both quality and consistency in his work.

Now, he brings his extensive expertise to lead a stronger team, committed to delivering exceptional service and exquisite dishes, all aimed at creating unforgettable experiences for both new and returning guests at The Peak. Exciting times are ahead!

Won Young Jeong, Pastry Chef

Sometimes, a change in flavor leads to the sweetest paths. For Chef Won Young Jeong, it was a slice of tiramisu. Having already set his sights on an illustrious culinary career, an encounter with the beloved dessert became his turning point. Thus began a string of reputable stints that sparked a passionate rise to the top.

He began his Pastry career in Michelin-starred establishments Jean Georges and Eleven Madison Park in New York before officially joining the Hyatt family as Pastry Sous Chef in Park Hyatt Seoul in his home country of South Korea.

Chef Won pursued paths outside of Hyatt to further grow his skills and expertise, notably joining the DoubleTree by Hilton Hotel as its pre-opening Executive Pastry Chef before joining the Grand Hyatt Manila family in the same role. He brings with him an innovative collection of ideas with an Asian flair, all while aiming to constantly warm the heart with his sweet treats.

Alex Hersent, Bar Manager

French revolution has reached The Peak through the highly anticipated new Bar Manager, Alex Hersent. He brings with him a wave of Parisian flair and cocktail mastery and innovation. Alex joins his Hyatt Family with extensive background in Bar Management, Mixology and Beverage Consultancy all over Europe and Asia- joining several hotel groups, bars and resorts.

Prior coming to Manila, he was part of a French cruise ship, Le Ponant, sharing his craft and creativity across Antartica, Carribean and South America.

With his reputation for bold, innovative drinks and guest relationships, he’s ready to transform every sip into an extraordinary night for every guest. Prepare for a whole new bar scene at The Peak Music Bar and Whiskey Bar.
