THE HYGGE TIMES NEW YEARS EATS!
By Ashley Sinon Across differing territories and invisible borders, the world celebrates the shift into the New Year together. While the holiday shows a rare unity on earth, it also reveals the diversity of how countries of the world enjoy the festivity. If you happen to be ringing in the New Year in Spain, munch on a grape for each toll of the bells at midnight; aim for the sweeter ones said to bring prosperity in the coming months. Find yourself in Japan? Be sure to slurp up some Toshikoshi Soba, just don’t cut the buckwheat noodles as the length represents a longer life. In Germany, doughnuts are favored, the round shape alluding to the cycle of the year completing. Beware the favored Berliners, which usually contain jam or jelly, at this time of year the sweet filling may have been mischievously been substituted with mustard! This New Years may all the countries we belong to be filled with joy and peace to carry into 2018.

THE HYGGE TIMES DUTCH WINDMILL COOKIES
Here’s a Christmas recipe from my family. By Justin Appleby .5 cups blanched almonds, toasted 1.5 cup all-purpose flour .5 teaspoon baking soda 1.5 teaspoons ground cinnamon .5 teaspoon ground ginger .25 teaspoon ground cardamom .25 teaspoon ground coriander .25 teaspoon ground nutmeg .125 teaspoon ground cloves .25 teaspoon salt .5 cup softened unsalted butter .5 cup light brown sugar .5 cup sugar 1 egg
speed until light and fluffy. Add egg and beat until combined. With the mixer on low speed, add in the flour mixture and mix until just moistened and combined. Flatten the dough into a disk, wrap well with plastic wrap, and refrigerate for at least three hours, but preferably overnight. Preheat the oven to 350 degrees. Line several cookie sheets with parchment paper. Roll dough 1/8 inch thick on a lightly floured surface. Cut out cookies and place on sheets about 1 inch apart. Bake for 10 to 12 minutes, rotating sheets halfway through, until firm and lightly golden around the edges. Cool sheets on wire racks for a couple minutes before transferring cookies directly onto wire racks with a spatula to finish cooling.
SUPER SIMPLE OVERNIGHT OATS
EASY & HEALTHY BREAKFAST By Christine McGrath prep. time: less than 5 minutes total time: 8 hours/overnight makes one serving .5 cup rolled oats 1 cup milk (any kind) 1 tablespoon chia seeds 1 tablespoon maple syrup
Using a food processor, finely grind the almonds with 2 tablespoons of the flour. Whisk together ground almonds with the rest of the flour, baking soda, spices, and salt in a bowl and set aside. In a stand mixer, cream together butter and sugars on medium-high
Add rolled oats to bowl or jar. Add milk, chia seeds, and maple syrup. Stir ingredients together and leave in fridge overnight to set. May be enjoyed as is, or topped with fruits, nuts, or berries. Mix it up by stiring in a few dashes of cinnamon, cocoa powder, gingerbread spice, etc. or even 2 tablespoons of your favorite peanut or almond butter before refrigeration!
