Food for thought A

s I scan through the growing number of books in my library, I am grateful for the wealth of information at my fingertips. I then turn to my computer to research some more and find myself browsing and learning each and every day. Although I enjoy the ease of searching that the Internet has to offer, I still prefer sitting down with a good book or magazine for my reading pleasure. With the excessive amount of information available, few of us actually have the time to wade through it all. Comprehending the information and putting it to practical use can be a difficult task at the best of times. Guided Synergy Magazine is happy to help you make sense of it all. The content in each issue offers readers a practical approach to timely, relevant information through the expert opinions and experiences of local and regional practitioners in the holistic and natural health industry. In this issue, our focus is on food. If you are a foodie, then you are really going to enjoy this Spring/Summer issue full of cool recipes with a fresh perspective. We have also delved into the controversial topic of genetically modified foods. See our article on page 25 titled “Playing with Our Food: Are Genetically Modified Foods Safe?” by Neil Blacklock of Canmore, Alberta. Awareness of this topic is an important first step and, as Neil outlines in his article, there are some things we can do to protect ourselves. If you are ready to do some spring cleaning starting with yourself, Stephanie Slon’s “Spring Cleaning You!” offers great information to help you begin a safe cleanse. As she mentions, there are plenty of cleanse programs on the market. Drop by your local health-care store for advice. Even if you are in perfect health, it is always good to consult a professional. For those of you who are reading our magazine for the first time, we publish a northern and southern Alberta edition

three times per year. Each edition features a regional practitioner of holistic, natural or alternative medicine who has a personal life experience, opinion or story of interest. Our feature this spring is Dr. Pat Meerholz. In February, I attended an event in Calgary featuring various speakers, including Deepak Chopra and Adam Dreamhealer. Here I met Dr. Pat Meerholz and his manager, Marina Theron, who were also attending the one-day event. I accepted an invitation to visit the Jubilee Health Retreat, recently opened by Meerholz, and drove out to Cochrane, Alberta, the following day. As I made my way out to the property on that early Sunday morning, I was awestruck by the gorgeous blue Alberta sky, the majestic evergreens and a fresh blanket of snow. Upon my arrival, Dr. Pat Meerholz; his wife, Jeanette; Marina and her two teenage sons gave me a warm welcome. As we toured the retreat I could see the attention to detail in the workmanship of every square foot, I could hear the excitement in their voices as they described the programs and services offered and I could feel their pride spilling over into my own body. My tears welled up and my heart was overjoyed with this new approach to caring for people. I hope you enjoy this Spring/Summer issue and all it has to offer on your quest for a healthy life. alfway around the globe from his native South Africa and more than 40 years into his medical career, Dr. Pat Meerholz is finally, in the Rocky Mountain foothills of Southern Alberta, realizing the dream he has worked towards for 25 years. The rustic country home Meerholz shares with his wife, Jeanette, on 189 acres northwest of Cochrane, has been transformed into the Jubilee Health Retreat, where guests can escape from the pressures of daily life and learn how to take better care of themselves. His home may soon become his castle, with plans to build a 20-bedroom facility on a quarter section of land a short distance away by the summer of 2013. The trip to Jubilee Health Retreat is just the beginning of a weeklong journey that Meerholz hopes will impact his guests for a lifetime. Stresses melt away with every kilometre along a route that seems to literally define where the foothills meet the prairies. Horses and deer graze in adjacent fields freshly dusted by an overnight snowfall, and a coyote and her pup bound across the road, uninterested in any human contact. Cell phones don’t work well in this part of the world. “All along I’ve realized there’s more to healing than tablets and surgery, so I’ve tried to follow that calling,” says Meerholz, 64, who obtained his MBChB (bachelor of medicine

and bachelor of surgery) from the University of Pretoria School of Medicine in 1971. “In medicine we talk a lot about treating diseases, but we never talk about healing somebody.” Meerholz prefers a natural approach to healing that includes good nutrition and positive lifestyle choices. While he can guide people in this direction, he notes they must first be willing to help themselves. Although Meerholz’s medical career has followed a traditional path in private practice and orthopedics, he is influenced by his homeland, where indigenous people live close to their roots and are accepting of herbal and alternative treatments. His parents were spiritualists, so he comes by his interest in holistic and intuitive health naturally. “I know about energy and spirits from them, so it was natural just to go in that direction.” Growing up in the 1960s, Meerholz observed the weekly sessions his parents conducted in their home where they would communicate with the spirit world. He was particularly attracted to the prayer circle portion of the sessions, in which an appeal was made on behalf of anyone in need of healing. “That impressed us a lot as children, and we all wished to be part of the healing circle,” says Meerholz. He continues, “From there I wanted to be a healer and went on to study medicine, where I found out we are not healers but treaters of symptoms. To be a healer we have to come full

circle and approach healing from a holistic standpoint.” As it turns out, Meerholz’s career and life would take many twists and turns before he found himself on his desired path. After graduating from medical school, he first went into private practice and then took a post as the head of the orthopedic section at Klerksdorp Hospital. He lived and worked throughout South Africa, including at a copper mine in the Karoo—a semi-desert region in South Africa—where he was in charge of the company’s medical department and ran a private practice, treating mine workers. This was followed by stints in Kimberley, Queenstown and East London, where he lived on a houseboat. Raising a family was also part of the program— Meerholz and his first wife had four daughters. When his wife died in 1986, he remarried. Meerholz and his second wife had one daughter, but the marriage ended in divorce after five years. In April 1997, Meerholz met Jeanette at a nursing home in Joubertina where he was doing a locum and she was a nurse. Change was in the air, and he set aside his plans to sail around the world on the yacht he had built. They married three months later and moved to Canada the following November. They settled in Preeceville, Saskatchewan, where they saw their first snow, and Meerholz set up a family practice. Continued on page 8 ➤ Spring/Summer 2012 l Guided SynerGy 7

“I came to Canada to a new land with new laws, no crime and a good economy,” says Meerholz. “I was very surprised to see people leave their vehicles unlocked and running in the winter while they did their shopping and drank coffee. In South Africa that would not happen. The truck and everything on it would be gone before you could say ‘jack rabbit.’” While in Preeceville, the Meerholzes purchased a quarter section and planted saskatoons on 80 acres. In 2000, they relocated to Fort McMurray, leaving the farm in the hands of Meerholz’s brother. “I was in Fort McMurray from 2000 to 2008 and that was solely to earn enough money to fulfill my dream,” says Meerholz. He reached his goal, but not without a cost. “When I left Fort McMurray, I was burnt out. It was too much work, too many long hours and too many people,” he adds, describing how in eight years the city’s population grew from 40,000 to 60,000 people, while the number of general practitioners decreased. A job offer from Caleo Health in Calgary provided a much-needed change to his stressful lifestyle. Working four days a week as a general practitioner, doing assessments for spine surgeons, gave him the freedom to start searching for the perfect place to develop his retreat. He found it 27 kilometres northwest of Cochrane in 2010. Tucked into the forest and bordered by a nature reserve, where the footprints are more often of the four-legged variety, Meerholz was impressed by the silence and beauty of the land.

three-day detox program prior to their arrival and, once there, have a consultation with Meerholz, along with fitness instruction, life coaching, and pampering and nutrition sessions. All are sent on their way with life plans to follow when they return home. Meerholz believes people need to take responsibility for their own health. He places a strong emphasis on nutrition, working with two nutritionists trained at the BodyMind Institute in Calgary who have also completed David Wolfe’s raw nutrition certification. Fresh fruit and vegetables—steamed but still crispy to retain all the nutrients—are a must, and processed food is to be avoided. “It’s easy to talk about. It’s not easy to do,” says Meerholz, who recalls how, when he was growing up in South Africa, meat, rice and potatoes were staples, and a daily serving of meat was the sign of a rich man. “It’s completely different—we should be more into natural food, more into berries, more into fresh veggies and water,” says Meerholz. “That’s why behind that fence, it’s all berries,” he says, pointing to the grove of saskatoon, black currant and sour cherry bushes growing outside his window. Nutrition became increasingly important when Jeanette, 58, was diagnosed with breast cancer in February 2011, prompting the Meerholzes to reconsider their own food choices. “For cancer care, you need good nutrition, you need your mind to be strong, and forgiveness is a big part of it,” says Meerholz. “And you have to have love, love of yourself.”

FEaTuRE Through this experience, Meerholz recognized the need to create a cancer care program that helps people understand the various treatments available, both traditional and alternative, in order to guide them in making informed choices. “We can help them to accept and to get inner peace. Without inner peace, you cannot be healthy,” says Meerholz, explaining that when the body is under stress, it releases adrenaline—also known as the fight-orflight hormone—causing negative effects such as a suppressed immune system and constipation. Helping people connect with their spirituality is another key component of Jubilee programs. Spiritual healing, Reiki, meditation, Qigong and yoga are all emphasized, particularly in the body, mind and spirit retreat, to assist people in finding their god or higher self. The Journey, an international best-selling book by Brandon Bays, is used to help participants heal themselves of any hurt and pain they might be holding on to from their past. They also watch The Shift by Wayne Dyer, a 2009 inspirational film that explores the theme of finding spiritual purpose in our lives.

Whether it’s eating properly, exercising or finding inner peace, Meerholz stresses that the power to heal lies within the individual. “You’re in charge completely and you can decide what happens in your life,” he says. “Dying is a fact of life. You cannot change that—it’s inevitable,” adds Meerholz. “But we don’t have to live dying; we can die living.” ✽

Acupuncture: How does it work?

a medical doctor’s perspective A

cupuncture is a branch of Chinese medicine, originating over 4,000 years ago. Since it was brought to the West, many people have been pleasantly surprised at how effective acupuncture can be in treating a vast number of health conditions. When I first heard about acupuncture in medical school, I couldn’t at that time understand how sticking thin needles into people’s bodies could help their arthritis, and I certainly was not taught about how wonderfully effective this simple healing technique could be in helping people’s symptoms. Acupuncture was mentioned in passing in one of our lectures and that was that. In general, the Western medical profession is trained to start with medications, and only if these medications are not working to then look into alternative treatments like acupuncture—maybe. And for some reason, acupuncture is best known in Western medicine for its use in pain management, and not for treating other conditions such as digestive ailments, anxiety, skin problems and so on. It is good for pain management, but it is also effective for pretty much everything I’ve learned about in my medical training. In the Western medical model, the body is essentially seen as a physical machine made up of biochemicals and independent parts that can degenerate and malfunction. Therefore, like a mechanic repairing a car that isn’t working, the Western medical model says, for example, to give an antidepressant to someone who is depressed because he/she does not have enough serotonin in his/her brain. However, I think we are missing out on a large piece of the pie if we adopt such a limited perspective of our lives as human beings. We are multifaceted, complex and amazing beings, capable of much more selfhealing than the Western medical model teaches. Acupuncture is one method that allows the body to heal itself. In Chinese medicine, it is said that life energy, called qi (pronounced “chee”), circulates in pathways all over the body, 10 www.guidedsynergy.ca

called meridians. Qi comes from many sources in the body, but one place it originates from is the organs. So, for example, the qi of the heart meridian flows out from the heart and down the arm, all the way to the fingertip of the little finger. Also, in Chinese medicine the organs have not only the physiological function that is recognized in Western medicine (for example, the heart pumps blood throughout the body and the kidneys are for water regulation), but other functions as well (for example, the heart is an important emotional center in the body and kidney qi is necessary for hair and bone health). Most of the acupuncture points on the body also have multiple functions, so I have noticed that when I treat patients for one condition, other aspects of their health may also improve.

Acupuncture is also useful in disease prevention and for the maintenance of good health.

Since the Western medical model and the Chinese medical model differ in such fundamental ways, viewing the body so differently, it is nearly impossible for Western medicine to explain how acupuncture works. Trying to study the effects of acupuncture using Western medical philosophy and research methods is like trying to compare apples and oranges.

The most common question I am asked is “Does it hurt?” My response is that it usually feels like a mosquito bite but less intense, and once the needles are in you usually cannot feel them. Most people find it quite relaxing.

Here are a few examples of conditions that acupuncture can help with: • irritable bowel syndrome • constipation • diarrhea • nausea and vomiting

Ever wondered who you are and where you’re going?

Tastes of Spring I can tell by the dinnertime smells wafting by my porch these days that people are finally firing up their barbecues again. But even when it’s too chilly to be babysitting supper on the grill, there’s no reason to scrap magnificent beet burger plans! Frying them on the stove ensures the beets are nice and tender, and the rice gives them a great toothy texture that I love. With their flavours of lemon juice, thyme, parsley, cider vinegar, vegetable stock, coriander and paprika, you’ll be sampling more burger mixture than you think before it gets to the pan. If you use gluten-free flour or breadcrumbs, this dandy of a meal can be celiac friendly, too.

Beet Veggie Burgers ingRedients 1 onion, diced small 3 medium or 2 large red beets (about 1 pound total), shredded 2 tablespoons apple cider vinegar 3 to 5 cloves garlic, minced 1 can black beans, drained and rinsed (or any type of bean except green) 1 cup cooked brown rice, cooked in vegetable stock instead of water (or 2 cups if you like a crunchier texture) Juice of half a lemon 1 tablespoon extra-virgin olive oil 2 tablespoons minced parsley 1 teaspoon coriander ½ teaspoon thyme ¼ teaspoon paprika and a dash of cayenne (optional) Salt and pepper 2 tablespoons all-purpose flour or breadcrumbs Extra-virgin olive oil for frying diRections Heat a little splash of olive oil in a pan over medium-high heat. Add onion, reduce heat to medium and cook until onion is translucent. Stir in beets. Cover the pan and cook until beets are tender, stirring occasionally. Add cider vinegar and a bit of water if necessary to prevent sticking. Add garlic and cook for about a minute. If you have a food processor, use it to pulse the beans a few times. If you don’t, put the beans into a large bowl and use a fork or potato masher to mash them up a bit. In a large bowl, combine beans, cooked rice, beet and onion mixture, lemon juice, olive oil and all the spices. Stir and then taste for seasonings. Add

a pinch of salt and pepper. Add the flour or breadcrumbs and stir well. I find the burgers hold together better if I blend about half of the mixture in a food processor, but this is optional. Heat a skillet over medium heat (I use the same pan I used for the onions and beets – no need to clean it in between). Add enough olive oil to completely yet shallowly coat the bottom of the pan. Drop a small bit of burger mixture into the oil; it should sizzle. If it doesn’t, the oil is not quite hot enough.

Wait a minute or two, watching the pan carefully. Using your hands, scoop up enough burger mixture for a patty and shape it between your palms. Set it in the pan. Depending on the size of your patties and your pan, you should be able to cook two or three at a time. Cook for 2 minutes or so before flipping them. There should be a nice crust on the cooked side. If they break apart a little when you flip them, just reshape them with your spatula. Feng shui for the heart of your home W

hen people think of the relationship between their kitchens and their health, they are more likely thinking about the food in the cupboards than the cupboards themselves. But your kitchen’s layout, as well as its placement within the home, can have a profound effect on your health. The kitchen, especially the stove, plays an important role in feng shui. The stove is related directly to both health and wealth. Why? None of us, no matter what our culture or where we live, can be considered healthy or wealthy if we cannot feed our families. Once that basic need is met, notions of health and wealth are highly subjective. The kitchen is where we come together to share in the preparation and consumption of nutritious meals. In modern homes, we may also entertain—a yang function—in this room, which is, at its heart, a private, nurturing yin space. Its yin nature dictates that the kitchen should be no further forward than the centerline of the home. If it is closer to the front of the house, we are less likely to feel nurtured at home and more likely to eat out. The direct center of the home is also not ideal, as the kitchen’s heat can overwhelm the balance that is essential there. Nor do we want to be able to see the kitchen directly when we enter

the front door. This placement can hamper weight loss efforts, as well as negatively affect our overall health, particularly that of the heart. With the kitchen well placed, we can turn our attention to the layout of the room itself. Most kitchens contain all five elements: cabinets made of wood, stone countertops, water at the sink and fridge, metal in the pots and pans, and fire at the stove. In feng shui we always strive to maintain a balance between these elements. Placing some of them near others can create conflict that we may not even be aware of. In the kitchen, conflict commonly arises when fire and water are placed too close to each other— for example, if the stove sits right next to the sink or fridge. This can drain the life out of us, but the intervention of a wood element helps to restore the balance. The kitchen lies at the heart of creating and maintaining a healthy lifestyle—in more ways than one! Give your body a fresh start T

here’s something about this time of year. With the appearance of newly budding leaves and sprouting grass, we want to make a fresh start in our lives. Spring-cleaning begins: cupboards are washed and reorganized, that junk drawer is sorted out and unnecessary items that have accumulated over the winter are donated to charity.

Taking a fibre supplement while detoxing is usually recommended to aid in completely removing toxins. Ground flax seed or psyllium husk works great, and both are available at your local health food store. Ionic detox footbaths, which have garnered a lot of attention over the last five years, can be an extremely effective part of your detox plan. In this method, you sit with your feet in a tub of salted, negatively charged water. Ionic detox machines work on simple principles. Toxins attach to cells with a positive bond. The negative ionic charge breaks these bonds, allowing the toxins to be flushed from the body. It is always surprising to see what comes out in the water! An easy, cost-effective DIY way to detox is a simple relaxing hot bath. Adding a cup each of baking soda and Epsom salts to the bath water creates a hypertonic solution, which draws toxins from the body through the skin. This technique is great before bed if you have sleeping difficulties or struggle with aches and pains.

Healing hurt and hate I

f you hate, you hurt, and then you cannot heal. Why is this so? What does hate create? Hate creates a barrier, a block that stops energy from moving freely. With this restriction comes pain, both emotional and physical. Resolution and healing cannot take place, because they require a free flow of energy. Everything in the universe vibrates, and different things vibrate at different speeds and frequencies. Hate is a dense emotion. That is, it vibrates more slowly and at a lower frequency than, say, love or joy.

In that moment I learned why forgiveness is so important—it is important for my healing! It allows me to release the futility of trying to get reparation or satisfaction from people who have hurt me. Neither of those things is attainable. Those who have hurt me did what they did because of their own pain and anguish. I was just the thing they took that pain out on. It was never about me; it was about them. Holding onto negative, dense emotions just hurts me further, so it is to my benefit to forgive them and to focus my attention on my own journey.

ingRedients 1 head leaf lettuce, torn into bite-size pieces

ingRedients 2 cups gluten-free all purpose baking flour

3 pears - peeled, cored and chopped

1 teaspoon baking powder

5 ounces Roquefort cheese, crumbled

1/2 teaspoon salt

1 avocado - peeled, pitted, and diced

1/2 cup butter

1/2 cup thinly sliced green onions

1/2 cup turbinado sugar

1/4 cup white sugar

2 eggs, lightly beaten

1/2 cup pecans

3 tablespoons maple syrup

1/3 cup olive oil

6 ripe bananas, mashed

3 tablespoons red wine vinegar 1 1/2 teaspoons white sugar

1 1/2 teaspoons prepared mustard

Preheat an oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.

In a large bowl, combine flour, baking powder and salt. In a separate bowl, cream together butter and sugar. Stir in eggs, maple syrup and mashed bananas until well blended. Add the banana mixture to the flour mixture; mix until batter is just moist. Pour batter into prepared loaf pan.

1/2 teaspoon salt fresh ground black pepper to taste diRections In a skillet over medium heat, stir 1/4 cup of sugar together with the pecans. Continue stirring gently until sugar has melted and caramelized the pecans. Carefully transfer nuts onto waxed paper. Allow to cool, and break into pieces. For the dressing, blend oil, vinegar, 1 1/2 teaspoons sugar, mustard, chopped garlic, salt, and pepper. In a large serving bowl, layer lettuce, pears, blue cheese, avocado, and green onions. Struggling with food issues T

he topic of food sensitivities is floating just below the surface of our collective awareness. As you enter a health food store, you are likely to hear the tail end of a conversation about eliminating dairy or gluten. When you turn on the TV, you might see a short report about reducing sugar intake. Although there is not yet a great deal of research into connections between food intolerances or chemical sensitivities and chronic physical symptoms (especially the cluster of symptoms vaguely known as chronic pain syndrome), there is plenty of anecdotal evidence. To shed some light on the topic of food sensitivities, I interviewed Kelly Stubbert, who has dealt with food sensitivities for a number of years, both her own and her daughter’s. Kelly has lived in Grande Prairie for the past 18 years, working as a customer service representative at the Health Hut for 15 of them. She had completed courses in Brain Gym, Touch for Health, educational kinesiology, applied nutrition, Reiki and homeopathy. A digestive care advisor with Renew Live, she passionately believes in educating people so they can make informed decisions about their health and well-being.

years I’ve spent thousands of dollars on naturopathic doctors and supplements, and countless hours in various medical offices getting poked, prodded and tested, and I still had no answers. At some point I decided to look at what was closest to home: food. Julia: I know you’ve tried elimination diets for both yourself and your daughter. Can you describe them in more detail, please? Kelly: There are a number of published studies suggesting a link between asthma and wheat and dairy products. Eliminating those foods from my daughter’s diet seemed to control her symptoms to a certain degree. I continued to do research and testing, and eventually found out that a sensitivity to eggs might be behind her lack of focus and concentration and her chronic constipation. As soon as I removed egg products from her diet, she became more attentive—both at home and at school.

Kelly: It has been over ten years for my daughter and three years for me.

For myself I chose a different approach: I decided to reduce or eliminate all the foods I was eating on a regular basis—any one of them might have been the trigger. Millet, brown rice and quinoa became my new grain staples, while lamb, turkey, salmon, legumes and nuts were my protein sources. I leaned more toward an anti-inflammatory diet and therefore excluded citrus fruit and nightshade vegetables from my meals. Once the basics of the diet were in place, chronic pain slowly began to diminish and eventually disappeared altogether.

Julia: What experiencing?

you

Julia: What was the most frustrating part of the process?

Kelly: My main symptom was chronic pain that appeared, disappeared and moved around the body without rhyme or reason. For my daughter, asthma, constipation and lack of focus and concentration were the biggest areas of concern.

Kelly: The diet was extremely restrictive, so eating out was completely out of the question, as was enjoying regular everyday foods. After a while I gradually began to add back foods that I had previously eliminated. And then, of course, the pain returned as well.

Julia: I know you’ve been dealing with food sensitivities, both with yourself and with your daughter, for a while now. How long has it been?

Julia: How did you connect the dots between your symptoms and the foods you were eating? Kelly: It took a while. Over the last few 20 www.guidedsynergy.ca

Julia: That’s when you decided to do the allergy testing? Kelly: That’s right! I couldn’t eliminate

everything from my diet to pinpoint ten things I was sensitive to. So I chose to get tested for specific substances instead. Julia: What did you find out? Kelly: I’ve got a list of a few very specific items to be eliminated: oranges, potatoes, corn, oats, soy and nuts. But perhaps the most profound discovery was that I am allergic to many trees and grasses. Dr. Sam Dube, who was doing the testing, suggested eliminating the foods that belong to the same families as those trees and grasses. For example, because I was allergic to certain grasses, I’ve eliminated celery and buckwheat; my allergy to birch has led to the elimination of apples, cherries, most stone fruits and nuts. Julia: How are you feeling today? Kelly: I am pain free. My daughter is asthma free, her bowel movements are back to normal and she is doing so much better at school! Julia: Thank you so much for sharing your story. This has been a great opportunity to learn. In my desire to get to the bottom of food sensitivities I went to my trusted advisor, Dr. Christopher Lyddell. He asked, “Why do you pick the most complicated topics for discussion?” Frankly, I don’t know. What I do know is that so many people around me—my friends, students and clients—are struggling with issues of food and environmental sensitivities. So we need to have these conversations. We need to shed light on what is happening with our food supply and how it is affecting us. Don’t Lose Your Cool in Pitta Season Balancing your constitution in late spring and summer

H

ooray for summer! I’m pretty sure most of us feel this way. Summer brings with it longer days, warmer temperatures, outdoor activities, windows left open (but bug screens left closed!) and a need for change in our diet. According to Ayurveda, from late spring into early fall is considered pitta season. Pitta is the Sanskrit term describing the combined elements of fire and water. Not only is pitta the dosha (constitution) for summer, it is also the dosha in our body responsible for metabolism, digestion and transformation. In order to keep body and mind in balance during pitta season, Ayurveda recommends a diet favoring foods that are cool, dry and a little heavier than those in the kaphareducing diet of winter and early spring. Eat fruits with sweet, bitter or astringent tastes, such as apples, coconuts, pears, melons, grapes, avocados and oranges. Highly acidic fruits, like grapefruits, may aggravate a highpitta constitution. Most vegetables pacify pitta. Enjoy them raw or lightly sautéed. Reduce or avoid hot peppers, garlic, onions and radishes. Use cooling spices such as cilantro, dill, fennel and mint. Small amounts

of ice cream, butter and milk are okay, but avoid or reduce sour dairy products, including buttermilk, sour cream, cheese and yogurt. Minimize red meats and seafood while increasing freshwater fish and poultry.

A cold beer, a cool drink or a glass of crisp white wine is perfect in pitta season. However, it’s best to avoid the heating traits of hard liquor and red wine. And remember to drink plenty of water—one of the elements of pitta.

In addition to what you eat, how you spend your days is important. Ayurveda has a few simple recommendations for keeping your constitution balanced throughout pitta season. Avoid the sun between noon and 3:00 p.m., the hottest time of the day (known as pitta time). Instead, take a short summer siesta! Favor exercises that don’t overheat you, like swimming and other water sports. Early morning, before the sun starts to hit its peak, is the best time for running, biking or hitting the gym. After exercising, take a cool bath or shower and then apply healing and cooling coconut oil to your skin. As your long, full day of summer enjoyment draws to a close, keep your pitta cooled (while warming your heart) with a moonlight stroll alone or with a loved one. This allows your body to unwind while connecting with the cool, clear elements of nature.

The science behind seeds W

hether you want to get outside more this year, lower your grocery bill or increase your supply of home grown food, it’s all good ~ go ahead, get your hands dirty. As pollinators move from flower to flower during our summer season, they are helping nature set seed in the plants around us. Once formed and mature, these seeds will spread by wind, water and animals to new locations in the surrounding landscape. Not all of the seeds will grow, but the ones that do, help the cycle continue year after year. The fruit, vegetables and thousands of other plants tIps for best results • Choose seeds as fresh as possible • Store in a cool, dark, dry place until planting • Be mindful of moisture level in soil • Plant seeds to the recommended depth • Consider temperature for indoor and outdoor planting

that we depend on, are part of this cycle. Understanding how that cycle works can help us mimic nature and recreate environments to propagate our own garden plants. No matter what their size, seeds typically consist of three main parts: the embryo, a supply of nutrients for the seedling and a seed coat for protection. These tiny powerhouses of energy are just waiting to explode and get to work. All they need is the right internal or environmental conditions that will cue them to start growing. They will sit in a state of hibernation and wait until the right temperatures, soil conditions and moisture are available. This natural safeguard acts as a seed bank, ensuring the seeds do not germinate until the next appropriate growing season. The seeds you choose to grow should be as fresh as possible. For best results, they

should be stored in a cool, dark, dry environment until ready to be started indoors or direct seeded outdoors. The germination rate and vigor will depend on how good your seeds are to begin with. Germination may range anywhere from 3 to 30 days depending on what you are growing. Mature seeds are usually dry, and will require moisture to swell and crack the seed coat. If seeds are buried too deep in the soil or overwatered, they can be starved of oxygen required for metabolism. Soil temperature can also impact germination. Many seeds will germinate at temperatures slightly above room temperature 16-24 C. Other seeds may require cold temperatures of -5C to break dormancy (vernalization) while others may require the hot temperatures of a forest fire to crack seed coats (scarification). Most seeds are unaffected by light or darkness to break dormancy and germinate but once the process of photosynthesis starts, more light = more energy for seedlings. As long as the embryo is alive (viable), and all dormancy or environmental conditions are met, the seeds should germinate. When the right conditions are present, a seedling emerges from the seed and soon roots and leaves will start to form. Up to this stage, the seedling has depended on its own nutrient supply within the seed. From here on in, the plant will depend on photosynthesis for energy and will require a constant balance of water, nutrients and light.

are genetically modified foods safe? “a nuclear disaster only lasts 10,000 years, whereas gene pollution is forever – self-perpetuating and irreversible.” – dr. John Hagelin, institute of Science, Technology and Public Policy at Maharishi university of Management What Is Genetically Modified Food? When a gene is artificially inserted into the DNA of an organism, the result is a genetically modified organism, or GMO. Through genetic modification or genetic engineering, genes from bacteria, viruses, insects, animals or even humans are inserted into other plants and animals. DNA transmits genetic information from one generation to another. Through advances in biotechnology, geneticists can now artificially modify an organism’s DNA code by transferring specific gene traits from other organisms. Some traits used for genetically modified (GM) crops include insecticide resistance or programmed death. The goal of genetic engineers is to produce what they believe is a superior product. Genetic modification also allows them to produce foods that have never existed before. Those with a vested interest in GMOs cite many benefits to the practice. However, there is a very real question of its safety. We now face major concerns over detrimental health effects, lack of control and extensive crosscontamination of crops. These concerns are far from being resolved as people and the earth are used in a kind of non-consensual experiment. Health Risks In many instances, when you ingest a GM food, your body faces a challenge in identifying whether what you’ve just eaten is really a food or a toxin. And what your body can’t metabolize is either excreted or stored away in fat tissue. If a toxin is stored long enough in your body, it can give rise to inflammation, and inflamed tissue can result in cancer. The experiments done with GMOs range from the strange to the alarming. Genes from a jellyfish have been inserted into a potato, producing a “super potato” that glows when it needs watering. Goats have

been injected with spider genes in an attempt to produce milk containing the proteins that make up spider silk, which will be used to make lightweight, biodegradable, ultra-strong fabric. One study has shown that GM DNA can survive human digestion and be transferred to bacteria present in the digestive tract. This process, known as horizontal gene transfer, poses possible health risks including cancer, the creation of new viruses and disease-causing bacteria, and antibiotic resistance. What Can You Do? Genetically modified foods are more common than you might think. Approximately 70 percent of the food sold in Canada contains ingredients that have been genetically modified, such as soy, canola or corn. How can you protect yourself and your community?

• Educate yourself on which products contain GMOs and stop buying them. Be aware that, in most cases, companies are not required to label foods as genetically modified, and some products labeled as “natural” may contain GMOs. The NonGMO Project’s site (www.nongmoproject.org) is a good resource for finding foods free of GMOs. • Buy organic. Although there is some danger of cross-contamination from GM crops, food certified as organic cannot intentionally contain GMOs. • Encourage local supermarkets and suppliers to reduce the number of GMO products they carry. • Lobby for mandatory labelling of GM foods. • Join a group that is working to restrict or ban the genetic modification of our food supply. • Spread the word. Educate your friends and family. The Institute of Science and Society has written an open letter to the governments of the world concerning GMOs. To date, this letter has been signed by over 800 scientists from 84 countries. Here is an excerpt from their letter: “We . . . call for the immediate suspension of all environmental releases of GM crops and products, both commercially and in open field trials, for at least 5 years; for patents on

seeds, cell lines and genes to be revoked and banned; and for a comprehensive public enquiry into the future of agriculture and food security for all.” Much of the research used to support GMOs has been conducted or paid for by the companies producing these products.

rbor was the Latin word for “tree.” An arborist is a practitioner, consultant and conduit of proper tree care. Preparing to write this article, I dug around for information on the impact that trees have on our health. Surprisingly, there isn’t much published on the topic. I’m slightly floored by this because of the long integrated history of mankind and trees. But it does look like interest in this subject is growing, and I’m certain we will see more research in the days to come.

Several studies have shown how important getting outside is to children’s physical, mental and social development. Another has shown that hospital patients who have a view of or access to nature have faster recovery times than those who don’t. In one study, office workers with a view of nature experienced less job pressure and greater satisfaction with their

Consciously or unconsciously, we have strong interpersonal connections to trees. Our ties run deep and they affect each of us on different levels. Fast forward to the summer months and to the mass exodus from the city to the campgrounds that happens every weekend. Why do we put ourselves through this hassle and expense, burning up our precious time to connect with the wilderness? It’s because we crave nature’s diversity. Tired of the organized chaos of the city, the unrelenting background noise, we opt to sooth ourselves among the trembling leaves of the aspen or the sway of the evergreens in the breeze. Maybe you have heard mentioned with increasing frequency the word greenspace. This term refers to parks, boulevard trees, backyards, botanical gardens, fields, or even just a window with a view of these. Research 28 www.guidedsynergy.ca

work. Even planting and maintaining trees has the restorative effect of giving back to our environment and communities. It can raise the actual selfesteem of a given population, as if we plant a little bit of our pride with the sapling. This is a time when our collective consciousness has been raised to focus on a healthy environment. We can all benefit from the simple beauty of a tree. From roots to shoots, it signifies a connection to an earth that we all desperately care about. Simply put, most trees will outlive us humans. Trees are living links to the past and will continue to be an essential part of our future. Renewing and maintaining our urban forest may make all the difference to how healthy that future is.
