Notice to all Fall Fairgoers

In the interest of encouraging environmental responsibility, the board has passed a policy that in 2018, water bottle sales will not be allowed on the property at our Fall Fair. A UV filtered potable water supply has been installed at the main building near the Volunteer Tent. Signage encourages the fairgoers, vendors and volunteers to develop the habit of refilling their own bottles. This policy is a result of the damage done to equipment when the plastic bottles are left in the grass and elsewhere.

APRICOT JAM WITH VANILLA BEAN By Michele Dunkerley — Jam with no Pectin, First Place Ribbon

INGREDIENTS 4 pounds pitted and halved apricots, with 6 pits reserved 1 1/4 to 1 1/2 pounds white cane sugar (use as little as possible) 2 ounces of freshly squeezed lemon juice, strained 1 split vanilla bean Day 1: Combine the apricots with the sugar and 1 1/2 ounces lemon juice in a plastic storage container and store well. Cover tightly and let macerate overnight in the refrigerator. Day 2: Place the apricot pits between old cloths and tap them until they crack, using a hard surface. Remove the kernels and chop closely, then place in a fine-mesh stainless steel tea infuser with a latch. Set aside. Remove the apricots from the refrigerator and put 2/3 in a wide-mouth jam kettle.

Put the remaining 1/3 through a food mill and then add to the pan, including leftover solids. Add the tea infuser with kernels and split vanilla bean. Bring the mixture to a boil over high heat, stirring frequently. After a few minutes remove from heat, skim the foam and discard. Taste and add more lemon juice if you like. Return to a boil and decrease heat slightly. Continue cooking, making sure the bottom doesn’t stick, for 30 to 40 minutes, stirring frequently for last 15 to 20 minutes to avoid scorching. Test when jam seems ready and cook for a few minutes longer if runny. If ready, turn off heat, remove tea ball and vanilla bean. (Scrape bean into jam if you prefer.) Process in jars according to manufacturer’s instructions.

INGREDIENTS 3 eggs 1 cup vegetable oil 2 cups brown sugar 1 tbsp. vanilla 2 cups shredded zucchini 3 cups flour 1 tbsp. cinnamon 2 tsp. baking soda

½ tsp. baking powder 1 ½ tsp. allspice 1 tsp. nutmeg ½ tsp. cloves 2 cups chopped walnuts 2 cups raisins or dried cranberries 1 cup currants 2 cups candied peel 1/2 cup brandy or rum

Beat eggs and add oil, brown sugar, vanilla and ½ cup brandy. Add shredded zucchini. Combine dry ingredients and add to wet mixture. Stir until combined. Bake at 325° F for 1 hour 35 minutes in a greased bundt pan or two loaf tins. When cool pour over ½ cup brandy and ¼ sugar.

INGREDIENTS 2 cups vinegar 1 cup oil 4 litres Heinz ketchup 2 pounds onion 2 pounds cauliflower 4 tins green beans

4 tins mushrooms 2 16 oz jars stuffed green olives 2-3 tins pitted black olives 1-litre jar of dill pickle 2 pounds green peppers 2 pounds red peppers

Boil the vinegar, oil, ketchup and chopped onion for 20 minutes. Boiling each ingredient for 10 minutes before adding the next, add chopped cauliflower, green beans and mushrooms. FALL FAIR APPLE PIE By Steve Lynch - First Place Ribbon

PASTRY 2 cups all-purpose flour 1/4 tsp. salt 1 cup cold butter, diced small 1/3 to 1/2 cup ice water 1 tsp. cider or white vinegar Combine all ingredients and work as little as possible to form 2 flattened balls of dough. Refrigerate, wrapped in plastic for at least an hour, or overnight. Roll out on floured surface.

Preheat oven to 425° F (220C). Place the bottom crust in a 9-inch pan. Fill with apples, mounded slightly. Cover with a lattice work crust - *do not skip this step. Melt the butter in a saucepan. Remove from heat. Stir in flour to form a paste. Add water, white sugar, brown sugar, and cinnamon and bring to a boil. Reduce temperature and let simmer for about 5 minutes or so. Gently pour or spoon the sugar and butter liquid over the crust. Pour or spoon slowly so that it does not run off. When the pan is empty, get a pastry brush and add about a teaspoon of water to the pan and use the last bits to paint on the edges of the pie. Put it on a flat pan to help keep your oven clean. Bake 15 minutes in the preheated oven. Reduce the temperature to 350° F (175° C). Continue baking for about 40 to 45 minutes, until apples are soft.

Be Water Savvy Use Only What You Need

Water is one of Salt Spring Island’s most precious resources. Please join islanders as we work together to ensure that this summer, and every summer, we use this limited resource wisely, and that we respect and protect our island watersheds. Try these handy water saving tips: Run only full loads in dishwashers and washing machines. Shut off the tap while brushing teeth, shaving, or washing up hands or dishes. Use low-flush toilets. Flush less often. Keep showers short. Use low-flow shower heads. If bathing, try a 1/4 tub only. Use a bucket to capture and reuse shower, bath and dishwater in your garden. Inform guests from the mainland about our islands’ limited water supply, and ask them to be please be aware of keeping consumption down.
