Bacon-Asparagus Strata
8 slices Hempler’s Applewood Smoked Bacon 1 bunch medium size asparagus, trimmed and cut into 2" pieces 5 cups French bread cubes 1-1/2 cups shredded Mifroma Cave Aged Gruyère, grated 1/2 cup onion, chopped 1/2 red bell pepper, chopped 12 eggs 1 cup milk parsley, chopped Lightly coat a 3-quart rectangular baking dish with cooking spray; set aside. Cook the bacon in a skillet over medium heat until evenly browned. When cool, cut crosswise into 1/4" strips. Place asparagus in a steamer and steam until bright green but still crunchy, about 5 minutes. Remove asparagus, place in a bowl of ice water to cool; drain and set aside. In greased 3-quart baking dish spread half of the bread cubes. Top with half the cheese, bacon, asparagus, onion and red bell
pepper. Top with remaining bread cubes, cheese, bacon, asparagus and pepper. In bowl whisk together 6 eggs and the milk. Pour the egg-milk mixture over the casserole, and refrigerate overnight. Preheat oven to 325°. Bake uncovered for 30 minutes.
Remove from oven. With the back of a spoon, press 6 yolk-sized indentations and crack an egg into each. Sprinkle chopped parsley over the eggs. Bake 20 more minutes or until eggs are set. Cut into squares and serve.

To peel the citrus, cut away peel and white pith in wide strips, following the contour of the fruit. Then cut the fruit crosswise into 1/4" thick slices and remove seeds. Arrange the citrus slices on a serving platter, alternating colors. Sprinkle with cranberries and garnish with mint leaves.

6 to 8 russet or yellow potatoes 3 Tbsp butter 1 Tbsp fresh thyme Kosher salt and pepper, to taste Preheat oven to 425°. Peel the potatoes. Thinly slice each potato crosswise, cutting only 3/4 of the way through, so they are still joined at the bottom. Brush the potatoes with the melted butter and place in a buttered baking dish. Season with salt and pepper. Sprinkle with thyme leaves. Roast for 30 to 45 minutes or until potatoes are cooked through with a crisped top, basting every 5 minutes with butter. Exact cooking time will depend on the size of the potatoes.
Roasted Rainbow Baby Potatoes
A colorful medley of potatoes with distinctive flavors and textures—a delight to behold as they come out of the oven. 1-1/2 lbs rainbow baby potatoes 2 tsp fresh rosemary, chopped 1 garlic clove, minced 3 Tbsp olive oil 2 tsp fresh parsley, chopped
Goat Cheese Mashed Potatoes
Creamy, tangy goat cheese makes these mashed potatoes irresistible. 6 yellow potatoes 2 Tbsp butter 1/2 cup half-and-half 6 oz MontChevré organic goat cheese 1/4 cup fresh green onions, finely cut Kosher salt and pepper, to taste Peel potatoes and cut in half crosswise. Place potatoes in large pot and add enough salted water to cover potatoes by 2". Bring to a boil, then reduce heat to medium and simmer until potatoes are tender when pierced with a fork, 25 to 30 minutes. Drain well and set aside for a few minutes. Mash potatoes with half-and-half and butter until butter is melted. Add cheese, green onions, salt and pepper and mash until fluffy and evenly seasoned.
Preheat oven to 425°. Lightly grease baking dish with olive oil. Clean potatoes and cut in half. Place potatoes, rosemary and garlic in large bowl. Add the olive oil and toss. Season with salt and pepper, and toss again. Spread the potatoes in a single layer on a baking sheet. Bake 30 minutes until the potatoes are crispy, stirring every 10 minutes. Garnish with parsley.

Bright and colorful, poinsettias are breathtaking on their own but they can be even more spectacular when paired with holiday greenery. Pair them with lush ferns, lilies or kalanchoe and tuck them into a container to dress your holiday tabletop.
Care Tips

Choose the right tree and keep it fresh n Measure up
Before you head out make sure you know just what size tree fits in your home. Measure the height of your ceiling and subtract the size of your tree stand. Measure the opening of your tree stand and make sure the size of your tree trunk will fit.
n Freshness Test
Look for a tree with good proportions and even color. Gently grasp a branch and pull it towards you. If the tree is fresh just a few needles should fall off. Pick a few needles and bend them in half. For fir trees each needle should snap. If the needles arch without breaking your fir tree is too dry.

A few hours after the tree is cut, the trunk seals itself and it can’t take in water. Make sure that your tree has a fresh cut once you are home.
n Check water daily
Keep your tree well watered. Trees absorb a lot of water, and this prevents the needles from drying and dropping off, and maintains its fragrance. Don’t let the water fall below the cut end of the trunk or it may seal over, preventing water intake. December 2016 | www.haggen.com

Sweet Endings Baby, it’s cold outside but the desserts are
plentiful and the fire is a cracklin.’ Warm up
a chilly winter night with a warm drink and a taste of heaven.
Chocolate Peppermint Cake 1 lb semisweet chocolate, chopped 1 1/2 lbs unsalted butter 1 Tbsp orange zest 2 tsp vanilla extract 8 eggs 1/4 cup sugar 1/2 cup crushed peppermint candy 3/4 cup whipping cream 2 Tbsp powdered sugar
Combine the eggs and sugar in a bowl and whip until double in volume. Fold the egg mixture into the chocolate-butter mixture until well blended.
Preheat oven to 375°.
While the cake is baking, whisk together whipping cream and powdered sugar until thick enough to hold its shape when scooped up. Refrigerate until ready to serve.
Combine the chocolate, butter, orange zest and vanilla in the top of a double boiler. Heat the mixture, stirring occasionally, until fully melted and smooth, about 5 minutes. Set aside to cool while preparing the eggs.
Spoon the chocolate batter into a buttered prepared 10” round pan and bake until the cake has puffed up nicely and a toothpick inserted in the center comes out nearly clean, about 25 minutes.
Cut the cake into wedges and top each with a generous dollop of the whipped cream. Sprinkle the crushed peppermint candy over and serve. Haggen Chef Bryan Weener
