Cranberry pomegranate Relish

Cranberry Ginger Relish 12 oz bag fresh cranberries 3/4 cup orange juice 3/4 cup sugar

1 Tbsp orange peel, grated 1 tsp fresh ginger, ground 1/2 cup crystallized ginger, minced

Combine cranberries, orange juice, sugar, orange zest and ground ginger in large saucepan. Stir over medium-high heat until sugar dissolves. Bring to a boil. Reduce heat to medium; cook for about 30 minutes until cranberries pop and sauce thickens.

Stir in crystallized ginger and cook 1 minute longer.

Cover and chill.

When it comes to Thanksgiving dinner, there are some dishes we’re simply not willing to do without. For some, the turkey is the most essential part of the meal; for others, the side dishes are the highlight.

Making little tweaks to the basics can turn a simple holiday dish into a classic—the one your family requests year after year!

Oh Good Gravy!

Seasoned holiday chefs know that making gravy ahead of time is a great time-saver. Roasting the drumsticks and vegetables adds a deep, caramelized dimension to the flavor, and the roux is the key to silky richness. As a bonus, add in the pan drippings from the turkey just before serving.

Is it stuffing or dressing?

This question has caused more than one heated holiday debate, and agreeing on the key ingredients is an impossible mission. No matter what you call it, it’s an essential side dish on any holiday table, and there are countless ways to make it delicious.

Mary’s poultry

Roasted Turkey Gravy 3 lbs turkey drumsticks 3 medium carrots, cut 3 celery ribs, cut 1 onion, quartered 4 cloves garlic 6 sprigs of fresh thyme 6 stems of fresh sage 6 stems of fresh parsley

2 Tbsp olive oil 6 cups low-sodium chicken broth 1 cup dry white wine 1 bay leaf 1/4 cup butter 1/4 cup flour Kosher salt and fresh ground pepper to taste

Preheat oven to 450°.

In large roasting pan toss drumsticks, vegetables and herbs with olive oil. Roast for about an hour, stirring occasionally until the meat and vegetables are browned.

Remove from oven and transfer the drumsticks and vegetables to a large stockpot. Add the chicken broth, wine and bay leaf; bring to a boil. Reduce heat and simmer. Add a cup of the stock to the roasting pan, scraping out the brown bits with a spatula; add to stock pot.

Simmer for 1-1/2 hours or more if desired.

Strain the broth into a bowl. Press to extract as much liquid as possible; discard vegetables and turkey. Let cool and skim the fat.

In large saucepan, melt butter over medium heat. Slowly stir in flour and whisk until roux turns golden brown. Slowly add broth, letting the roux absorb the liquid before adding more.

Season with salt and pepper.

Cook until thickened and bubbly.

Northwest Savory Dressing 6 to 8 chestnuts in the shell 2 brats, skin removed 1/2 cup onion, chopped 1/2 cup celery, chopped 12 cups cubed dried bread 1/2 cup fresh parsley, minced 1 tsp salt 1 tsp pepper 3 tsp fresh sage, chopped 1 Honeycrisp apple, chopped 2 eggs, beaten 1/2 cup milk or coconut milk 1-1/2 cups chicken stock Preheat oven to 350°.

In small pot cover chestnuts with cold water, bring to a boil and simmer for three minutes.

Remove from heat. Scoop out a few at a time and peel off the shell and skin with a sharp knife. Chop chestnuts and place in a large mixing bowl.

In a medium frying pan crumble and sauté the sausage until browned and cooked through.

Add the onion and celery and sauté for another 2 to 3 minutes. Add sausage, bread cubes, spices and apples to mixing bowl. Pour eggs, milk and stock over bread mixture, tossing lightly to coat.

Lightly grease a 3-quart rectangular baking dish. Place dressing in dish and cover with foil.

Bake, covered for 10 minutes. Remove foil and bake for an additional 15 minutes, until top is golden brown.

These are descended from the first breed of turkeys that ever existed in the United States.

They breed naturally, run and fly, and are generally just very healthy birds. These extra activities result in larger thigh meat and slightly less breast meat than found on a typical turkey. The flavor is superior, and the cooking time is slightly less than a standard turkey.

Gingerbread Spice Mix

An easy-to-make holiday gift—but remember to keep a jar for yourself!

4 Tbsp ground ginger 4 Tbsp cinnamon 1 Tbsp allspice 1 tsp ground nutmeg 1/2 tsp ground cloves 1-4 oz jar

Combine spices and fill one small jar. Sprinkle on coffee, cocoa, oatmeal or anything nice! Great with Haggen Hot Buttered Rum.

Gingerbread Waffles

Adding a few seasonal spices into the mix makes for a memorable breakfast.

1 cup flour 1 tsp baking powder 1 tsp ground cinnamon 1/2 tsp ground ginger 1/2 tsp ground cardamom 1/4 tsp ground cloves 1 cup milk 2 eggs, separated 2 Tbsp butter, melted In a mixing bowl mix flour, baking powder and spices.

Add milk, egg yolk and butter, whisk until smooth.

Beat egg whites until peaks form and fold into batter.

Heat a waffle iron. Spoon batter into each mold, and cook until golden brown. Serve warm waffles with whipped topping.

Whipped Topping 1 cup whipping cream 2 tsp vanilla 1 Tbsp sugar

Whip cream until peaks form. Add sugar and vanilla and whisk.
