Gone are the days when the only decision you had to make was white or brown. Today there are a half a dozen other things to consider when selecting the perfect egg! Understanding the differences between labels will help you to choose from the many options of high quality eggs we have at Haggen.

Free-range

Eggs labeled “organic” by the USDA come from chickens that are kept cage-free with outdoor access. These chickens can’t be given antibiotics and their food must be organic and free of animal by-products.

Hens that are “free-range” are not only cage-free but are also given access to the outdoors. However, free-range does not necessarily mean that the hens were pastured; it simply means that the hens had the option to go outside.

These specialty eggs come from hens that were fed a diet rich in omega-3 sources, like flaxseed or algae. These eggs are richer in omega-3 fatty acids. Omega-3’s are thought to promote a healthier nervous system as well as a healthier cardiovascular system. 4 Haggen Northwest Fresh | March 2016

Pastured hens often eat diets that include greens, seeds, worms and bugs, which are more akin to a natural chicken’s diet. Studies have shown that eggs from pastured hens may have more omega-3 fatty acids, more vitamins and less fat and cholesterol.

2 refrigerated pie crusts 3 eggs 1/2 cup milk 1/2 cup cream 2 Tbsp butter, melted 1/8 tsp nutmeg Salt and freshly ground pepper, to taste 1/2 cup Gruyère, grated 1/2 cup smoked ham, cubed Preheat oven to 350°. Cut 6 circles out of the dough. Press cut dough into well-greased quiche pans. Trim and crimp the edges. Prick the bottom and sides of the crusts with a fork. Line the pie crust with parchment paper. Add pie weights (you can use beans or rice) to weigh down the pastry. Bake in oven for 10 minutes. Remove parchment and weights and continue baking until the shells are golden, about 7–10 minutes. In a bowl, whisk together the eggs, milk, cream, butter, salt, black pepper and nutmeg. Add the cheese and whisk a little more. Divide the ham among the shells, then pour the filling into the shells. Bake until the filling is set and puffed, around 15 minutes.

alternative: To make a spinach and Gorgonzola quiche,

substitute the smoked ham and Gruyère for 1 cup sautéed fresh spinach and 1/2 cup Gorgonzola cheese.

Assemble and grill

Butter one side of each slice of bread, place butter side down on flat surface. Drizzle the other side of the bread with Haggen Thousand Island dressing. Pile it high with corned beef, Swiss cheese and sauerkraut. Preheat your pan and grill like a pro!

To keep Salish Sea halibut available for years to come, the season is only open for a few weeks in March.

Considered one of the best tasting halibuts in the world, fresh Salish Sea halibut has a flavorful, tender bite that will long be remembered.

4 halibut fillets (approximately 24 oz) Kosher salt, to taste Freshly ground black pepper, to taste 1 Tbsp olive oil 1 lime or lemon, cut into wedges Season the halibut liberally with salt, and season with pepper. 1 cup Organic Valley Grassmilk yogurt 2 cloves garlic, mashed 2 Tbsp lemon zest 2 Tbsp lemon juice 1 cup cucumber, peeled, seeded and finely chopped Kosher salt and fresh pepper to taste Combine yogurt, garlic, lemon zest, lemon juice in bowl. Dice cucumber and drain for half an hour in a strainer. Fold in cucumber and season with salt and pepper. Chill and serve.

Scallion-Herb Yogurt Sauce

2 cups Organic Valley Grassmilk yogurt 3 scallions, thinly sliced 2 Tbsp olive oil 2 Tbsp fresh parsley, chopped 2 Tbsp fresh dill, chopped 2 tsp white wine vinegar Kosher salt and fresh pepper to taste Combine yogurt, scallions, olive oil, parsley, dill and vinegar in bowl.
