(premium beef)
Double R Ranch
What makes a truly memorable steak?
Begin with the very best cut of perfectly marbled beef, USDA Choice or Prime, seasoned just right and cooked to perfection. Double R Ranch has you covered. It’s premium beef is raised sustainably by Northwest family ranchers with attention to animal welfare, sustainable land management, safety and quality. Double R has earned its reputation as some of the very best beef there is.
the
Steak House Method SEASON
With a few tips from seasoned pros and a great cut of beef, you’ll be sinking your teeth into a delicious steak in no time!
Heat a heavy skillet over medium high heat until hot. Add a light coating of oil to the skillet, and season steak with salt and fresh ground pepper.
Claim Your Steak
Place steaks in hot skillet and sear for 4 minutes, turning once. If steak sticks to skillet, it’s not ready to turn. Wait until it releases on its own.
SEAR
Choose your cut
COOK
Consider a thick, juicy tenderloin for the ultimate melt-in-yourmouth experience. Or choose a New York Strip—the classic steakhouse steak—with a tender, yet firm bite. Can’t decide? The T-bone is like two steaks in one, with a New York Strip on one side of the bone, and a tenderloin on the other. And the ribeye offers the juiciest boneless steak option. Talk to your Haggen butcher to find the cut that’s right for you. We’ll even custom cut to your liking.
Place skillet in 350° oven for 10-20 minutes, depending on desired doneness. Turn once halfway through cooking time. Remove from oven when preferred internal temperature is reached. (See chart below)
REST
Seasoning
Remove steak from skillet and cover loosely with aluminum foil. Let stand for 5–10 minutes. The steak will continue to cook, and the temperature will rise about 5°.
Salt and fresh ground pepper are all you really need for a truly delicious steak. There are some enticing rubs that can add all sorts of flavors to your meat, but you can’t go wrong with just salt and fresh ground pepper. Plan to use a light, neutral oil on the skillet or grill, like canola or grapeseed oil.

Meatballs are a go-to comfort food so making them should be simple, too. Have fun and mix it up with spices and flavors.
1. Pick Your Meat
Any grind of meat will work but a blend of ground beef and pork is a popular combo. The fattier the meat, the more tender the meatballs, so keep that in mind when working with leaner meats. Meatballs made with turkey, chicken or lean ground beef lack fat and can easily overcook so keep an eye on them while in the oven. Let us to prepare meatballs for you! Call your local Haggen Meat Department for special orders.

2. Prepare & Cook
A binder is recommended to help tenderize the meatball. Soak breadcrumbs in a little milk and mix into the meat. Add an egg (or two for leaner meats) to help avoid dryness.
all natural handcrafted ground sausage Double R Ranch Northwest Ground Beef
Choose between roasting and simmering in a sauce. Roasting will add a crispy outside texture. Simmering in a sauce adds the flavor of the sauce to the meatballs, while making the sauce richer.
3. Choose a Sauce
Think more than marinara and try an accompanying sauce that’s from another part of the world.
Thai Green Curry
1/2 cup onion, finely chopped 1 clove garlic, minced 1 can unsweetened coconut milk (13.5 oz) 2 Tbsp green curry paste 1/3 cup lime juice, freshly squeezed 1 Tbsp parsley, chopped Once meatballs are cooked, remove from pan and set aside. Add onion and garlic to frying pan and cook until onions are translucent. Add coconut milk, curry paste and lime juice. Bring to a boil then reduce to a simmer. Add meatballs and simmer for 3 to 5 minutes. Garnish with parsley.
Swedish Creamy Gravy
sweet chili Dipping Sauce
Once meatballs are done, remove from pan and set aside. Melt butter in remaining fat, add the flour and brown a little. Add the meat stock and cream and cook, covered, for about ten minutes. Serve meatballs with sauce and mashed potatoes.
In a blender, puree the rice wine vinegar, fish sauce, hot water, sugar, lime juice, garlic, and chili paste until combined. Pour into a small bowl and serve with meatballs.
2 Tbsp butter 2 Tbsp flour 1 cup meat stock 1 cup fresh cream
1/4 cup rice wine vinegar 2 Tbsp fish sauce 1/4 cup hot water 2 Tbsp granulated sugar 1 Tbsp fresh lime juice 1 clove garlic, minced 1 tsp red chili paste, such as sambal oelek
