1 lb fresh, boneless white fish fillet, Icelandic cod, pollock or haddock 4 Tbsp olive oil, plus extra for drizzling 1 lime, juiced 2 tsp red chili powder 1 tsp smoked paprika 1 tsp ground cumin 1 tsp onion powder 1/2 tsp garlic powder 1 pinch sugar Kosher salt Freshly ground pepper Stir together olive oil, lime juice, chili powder, smoked paprika, ground cumin, onion powder, garlic powder and sugar with 1/2 tsp salt and 1/4 tsp freshly ground pepper in a mixing bowl. Add the fish and mix into the marinade, gently, with your hands. Cover and set aside for 15 minutes.

Arrange the fish on a grilling or baking sheet and drizzle with olive oil. Roast at 400°F in the oven for 12–16 minutes until the flesh is firm to the touch and opaque in appearance. Remove from the oven and let cool, covered loosely with aluminum foil.

Unlike iced coffee which is hot coffee that has been cooled, cold brewed coffee is brewed with room temperature or cold water for 12-24 hours. The taste is described as a bit mellower and more full bodied with less acidity compared to regular or traditional brewed coffee.

Brew strong coffee and allow to cool. Pour some of the cooled coffee into ice cube trays and freeze overnight. Fill glass with coffee ice cubes and pour cooled coffee over top. Mix condensed milk and whole milk together and add to coffee. Stir and serve.

Lemon Shrimp
with asparagus and Zucchini gnocchi Butter makes everything better! It lends rich flavor and silky mouthfeel to this simple shrimp dish, making it a keeper that you’ll want to serve to your favorite guests.
For the zucchini gnocchi:
2 Tbsp butter 1-16 oz package Gia Russa mini gnocchi 1 green zucchini, diced 1 yellow zucchini, diced 1 Tbsp fresh parsley, chopped Salt and pepper, to taste Boil water in large pot; add gnocchi and a pinch of salt. Cook gnocchi according to package instructions. In a sauté pan, melt 1 tsp butter over medium heat; add the gnocchi and toast until golden. In a separate sauté pan, melt 1 tsp butter; add the zucchini and stir fry for about 3 minutes. Add zucchini to the gnocchi. Season with salt, pepper and parsley. Set aside.

For the asparagus:
1 bunch asparagus, bottoms trimmed Blanch asparagus in boiling water until just tender, for 4 to 5 minutes.
For the shrimp:
1 Tbsp butter 1 lb giant freshwater shrimp 1/4 cup BelGioioso Parmesan cheese In a large skillet over medium heat melt 1 Tbsp butter; add lemon zest and cook until butter becomes fragrant. Season shrimp with salt and pepper. Add shrimp and cook for 5 to 6 minutes, until shrimp is cooked through. Arrange asparagus, zucchini gnocchi and shrimp on a platter. Serve topped with Parmesan cheese. Enjoy!

Prosciutto, Pea & Goat Cheese Pizza with Soft-Cooked Egg
Haggen artisan pizza dough 4 oz Creminelli prosciutto 4 oz Ferndale Farmstead Fior di Latte cheese 4 oz Montchevre organic goat cheese 1/4 cup snap peas 2 eggs 1/4 cup BelGioioso Parmesan cheese Salt & pepper to taste Arugula Before cooking, allow pizza dough to rest at room temperature for 20 minutes. Preheat oven to 425°F. Divide dough in half to make two mini pizzas or use entire ball for larger pizza. Roll out dough to desired size and shape on cookie sheet. Top with prosciutto, Fior di Latte cheese, goat cheese, snap peas and cracked eggs. Sprinkle with Parmesan, and add salt and pepper to taste. Place dough on cookie sheet in oven and bake for 12-15 minutes or until crust is golden brown and egg is cooked through. Remove from oven and top with fresh arugula.

Meyer Lemon & Goat Cheese SoufflĂŠ Cooking time: 12-15 minutes Prep time: 15 minutes 6 Tbsp unsalted butter 6 Tbsp flour 1-1/4 cups whole milk 8 oz fresh goat cheese 4 eggs, separated 1 tsp kosher salt Pinch of pepper 1/2 tsp ground nutmeg Zest of 1 Meyer lemon 2 Tbsp fresh chives 8 large ramekins 2 Tbsp butter 1/4 cup flour

Preheat oven to 350°F. Coat ramekins with a thin coat of butter then dust with a little flour. Turn the ramekins upside down and tap out any excess flour. Melt butter in a medium-sized saucepan over medium heat. Add flour and whisk until smooth. Add milk and goat cheese and whisk until smooth again. Remove from heat. Add egg yolks and using a spatula, gently fold whipped egg whites into the mixture. Add remaining ingredients. Fill ramekins to 1/2" from the top. Bake for 12-15 minutes until they are puffed up above the rim and golden brown. Remove from oven and serve right away. Makes 8 servings.

Zesty Ham Glaze 1 Tbsp oil 1 shallot, minced 3 cloves garlic 1/2 Serrano chili, minced 1/4 cup red wine vinegar 1/4 cup honey 2 Tbsp molasses 1/2 gallon apple cider

Over medium heat, sauté shallot, garlic and chili for 2–3 minutes in oil. Add vinegar, honey and molasses then reduce to syrup consistency (3–5 minutes). Add cider and reduce again to a syrup consistency. Tip: Bake ham as directed on package. When done, remove foil and turn oven up to 350°F. Brush with glaze every five minutes until ham has a nice glazed look.
