Fire & Ice Bento Box! Bento roughly translates as a lunch box. It is an important part of Japanese food culture. A bento box can be made of plastic, wood, or lacquer. It has compartments and a lid. If bento is a boxed lunch, what’s inside? The simple answer is anything you want. There is not one specific menu or recipe for bento; you can have rice, meat, fish, noodles, and vegetables. Bento is everywhere in Japan and of course here in Hakuba. Yoko’s located in Misorano do one of the best. The hottest place to be this season is right next to the roaring fire at the Salt Road Bar and Fire Pit. Located at the Hakuba Panorama Hotel in Happo, a short stroll down from the Happo Information Center, this is the first winter outdoor wining and dining site in the Hakuba Valley. Jing Hua A new Chinese restaurant is opening in Hakuba for this winter. A favorite of many in Singapore, Jing Hua’s menu, has remained unchanged since it opened 25 years ago. This is a true testament of how consistent quality can withstand the test of time. Bringing this food to Hakuba is welcome for both visitors and the locals! We are betting that fried gyoza dumplings will probably be the most popular followed by the hot & sour noodle soup, a must for those cold evenings. Who is the singing Chef? If you love wagu beef, love sushi and love singing karaoke then Yakihachi might be just the place you are looking for. Located a few minutes on foot from the main Hakuba train station, Yakihachi is home to the singing chef aka Tanigawa–san. Tanigawa-san combines his love of music as well as his passion in cooking in making everyone feel welcome and having one of those quintessential modern Japanese experiences that every visitor to Japan should partake in. If you are feeling a little shy, not to worry, ask Tanigawa to perform one of his favorites or request a title that you can all sing along to. More often than not, Tanigawa–san will get one of his guitars out and start strumming away as well! But of course you must enjoy the food. Shinshu Pork Kazu Mimi's

Originally from Osaka, Kazu was drawn to Hakuba, not for the love of winter sports but for the abundance of fresh ingredients that were literally on offer on his new doorstep.

Shinshu is the traditional name for Nagano Prefecture. It is located in the central part of Honshu, the country's main island, and is also known as the Roof of Japan. Because it is situated between the East Kanto and West Kansai regions, Shinshu flourished in ancient times as a crossroads being influenced by the unique cultures of both Eastern and Western Japan. The name is still used in the food industry in Japan with Shinshu meats widely rated by some as the best in Japan, not a mean feat in a land that takes cooking and eating a national pastime. Besides meat, probably the most famous of Shinshu food are Soba noodles which are grown locally in Hakuba. Buckwheat has a distinctive yellow or white flowers and grows quickly, allowing two harvests a year even in Hakuba, where the fields spend so much of the time under snow.

Ian has been in Japan for the past 18 years. Of British origin, he has been involved with and created a number of well-known popular restaurants including his current restaurant Roti in Roppongi, Tokyo
Chef Nakanishi has great experience extending over 40 years working in restaurants in Hakuba including the last 22 years at the Mominoki Hotel and Ogino’s Steakhouse. His philosophy is to use as much locally grown fresh ingredients as is possible.
Ian reccommends barbequed saikyo miso shinshu salmon, Nagano black rice lemon risotto A superb modern dish that really highlights local Shinshu produce. The white miso glazed barbecued Shinshu salmon is served with prized local black rice that is prepared Venetian style as a zesty lemon risotto. To this is added freshly steamed soy beans. The Shinshu salmon, rice and white miso are highly regarded ingredients of the Nagano area.

H a v i n g w o r k e d i n b o t h C a n a d a & I t a l y, Chef Nakanishi knows a thing or two about different meats as well as wild game. One of the signature dishes at Ogino’s Steakhouse is Shinshu Kuroge Wagyu which is one if not the best of the ultimate masterpieces of Japanese Beef. It is so densely marbled with fat that it literally melts in your mouth as well as being full flavored with relatively low levels of cholesterol. If you are in Nagano then you must tr y authentic Shinshu Wagyu.

Japan’s traditional cuisine, celebrated for its centuries-old cooking techniques and seasonal ingredients, has recently been added to the UNESCO’s cultural heritage list and in doing so becomes only the second country behind France to have its national cuisine designated a cultural asset. A recent development here in Hakuba is the advent of Japanese cooking classes. Hakuba Connect talked to a couple of instructors that offer cooking lessons here in the Hakuba Valley, Open Kitchen and Wamotenashi. Please tell us a little about yourselves. Misuzu I have been a professional cooking teacher for six years teaching both foreigners and Japanese in Ginza in Tokyo. I have been offering lessons through my company OPEN KITCHEN in Hakuba for the past two years, these are mainly in summer with guests participating in wide ranges of creating home style dishes using mainly natural ingredients that are grown right here in the valley. Sarasa Around 8 years ago I was a flight attendant for Virgin Atlantic based in London. While living in London I was more interested in western cooking but my flat mates wanted to know more about Japanese style of cooking. I realized that the two styles (Western & Japanese) of cooking are quite different and needs proper understanding of the methods to teach. Sushi was beginning to become popular and it wasn’t long before I was showing them the correct
Japanese style and flavor. When I’m not flying I now teach the same to international visitors in my own kitchen, called WAMOTENASHI located at Snowlines Lodge, Hakuba. Do you have some kind of cooking license? Sarasa Our kitchen is fully commercial licensed & I hold a Diploma in the knowledge of Japanese food & culture, certified instructor of Kazarimakizushi (sushi) and for 2014 I achieved the qualification of Junior Washoku (Japanese cuisine) meister. Misuzu I am actually a vegetable sommelier! Basically I am certified by the private-sector Vegetable and Fruit Meister Association as having expert knowledge of fruit and vegetable characteristics and the best way to eat them. I am an expert on produce in the same way that sommeliers are experts on the subject of wine. Please explain your classes.

Misuzu First, the customer calls, usually more than 24 hours in advance as I need to prepare all the ingredients. We decide on a menu that will suit them. Most of the customer opt for sushi, but sometimes on the cold days they want a hot-pot style of meal. For this I usually teach shabu shabu or sukiyaki. I then visit the self catering properties, where I set up the kitchen and start explaining about the ingredients and tools that we will be using. Misuzu As I visit the customers self catering accommodation. My customers already know each other and are already relaxed and are eager to start learning. I get a lot of small groups and even some full families. Sarasa Not everyone skis or snowboards and many times with guests staying for a week or so there will be time, be it a half or full day that they want to do something different. We get a lot from couples and groups. At first some singles might be a little hesitatant but as soon as we start preparing the food they relax and have a really great time. “ IZAKAYA!! “
An Izakaya is a place to Eat, Drink and have a Great Time!
I
zakaya, or Japanese style pubs, are not only great places to dine in but also perfect to get an insight into Japanese culture. If you have made it to Hakuba, then you have to make it to an Izakaya!

Japanese friends. An Izakaya is where everyone can loosen up and talk with not only their friends and co-workers but also with their bosses. The unwritten rule is very much like the Las Vegas rule, what is said in the Izakaya, stays in the Izakaya!
Izakayas were formed when liquor stores in Old Tokyo started offering a few snacks whenever someone came to buy sake. These stores soon began to sell a few appetizers and thus the Izakaya was born Time travel a few hundred years later and you have the modern Japanese Izakaya serving nihonshu -sake, shochu and local delicacies.
For foreign visitors, Izakayas are great places where you can easily access and experience Japanese culture and are indeed a great place to make new friends as people are more open and may even wish to either befriend you or to practice their English with you.
Izakayas are friendly and social places where it is completely reasonable to strike up a conversation with total strangers. When you visit an izakaya, you will no doubt encounter the other side to the reserved and polite mannerisms of our

there is no custom of tipping in Japan! Once you enter and sit down in the Izakaya, yes, Izakayas are for sitting not for standing, it is custom to order a first glass of beer, usually with the catch phrase “toriaezu biru” which can seem more like a greeting rather than an order. A small appetizer called an otoshi, is placed on your table. This is more like a table charge, at about 300yen – don’t get upset, they are not trying to scam you, but only to break the ice with this deliciously. Ordering can seem to be daunting for Izakaya first timers, but in reality it is rather simple. Many Izakayas will have pictures as well as English menus. To order, catch the waiters attention by calling out “onegai shimasu”, meaning please, which is a very useful phrase to know. You can always order more at any time. If you ever get close to the staff or locals, you should ask about the “ura menu” this is a secret menu only known to regulars.
Drinks The Japanese themselves after starting with the first round of beer, may then move on to nihonshu the rice wine that for some reason is commonly called “sake” in English, but in Japanese “sake” or “o-sake” refers to alcoholic beverages in general, which can be drunk hot or cold. There are hundreds of brands to choose from. Shochu – distilled spirits made from rice, barley or sweet potatoes among others is also popular and can be drunk neat, on the rocks, or mixed with water, fruit juices or even oolong tea. Naturally, soft drinks are available as well.
Food These days, Izakayas serve all sorts of food, but the focus is invariably on traditional Japanese dishes that go well with beer and nihonshu sake. Among the perennial favorites are yakitori (pieces of chicken grilled on bamboo skewers) and oden (potatoes, vegetables, eggs, octopus and other things boiled in a broth). Izakaya specializing in seafood are also common.
The Bill Usually people share the dishes and split the bill at Izakayas. This will likely be a handwritten piece of paper with only the total bill on it. It is very rare that an Izakaya will falsify the bill, if in doubt then you can always ask them to break it down. Lastly, as you leave the Izakaya, tell the staff in a loud voice “gochiso samadeshita”, which means thanks for a hearty meal and more importantly showing that you’ve enjoyed and appreciated the food and drinks.

Balancing act:
Stellar wine and JaPOW so fine! “ Upon arrival in the Hakuba Valley it’s easy to see why the number of foreign guests and residents is on the rise and when thinking of JaPOW it comes as no real surprise. What about fine wine? A lot of us don’t link the two, yet year-round Nagano resident C.Lawrence, aka Charles, has been doing so for many years. “
F
irst arriving in Hakuba as a tourist way back in 1998 to see with his own disbelieving eyes that Japan did indeed have mountains and enough snow to host the Olympics, wine lover and powder hound C.Lawrence was immediately hooked. It was then he decided to make the move to Hakuba. His first trip to the post-Olympic resort was in January 2000 where he stayed with local legend and infamous JaPOW hound, Mitch Large who was (and still is) operating Snow Beds, the only accommodation in the valley at that time catering to powder seekers. In those days steady work in Hakuba was quite near impossible to find which is hard to imagine now with all the foreign guests about, but in the early noughties , there were just a few hardy, JaPOW junkies in Hakuba who pretty much had the entire place to themselves. Lucky devils! It was on a mountain biking adventure in spring of 2001 that Charles met Evergreen Outdoor Center’s David Enright. With shared interests in the mountains, the pair became fast friends. David had just started backcountry tours and Charles was his first tail-guide and has been assisting ever since. Always the ever adventuresome oenophile, Charles began contemplating a wine specific venue when the numbers of foreign visitors began to reach the point that such a venue was seemed to be a good idea and thus was born Vendimia Wine Bar

(VWB) in 2007/08. Since then, he has worked to introduce fine drinking vino to restaurants throughout the Hakuba Valley and beyond via his consultancy, C.Lawrence Selections. Hakuba Connect sat down with Charles this summer to discuss wine and Hakuba powder so fine. HC: Why did you come to Hakuba? What about VWB? CL: I came like most everyone else, for the snowy mountains and great people. The Japanese are super to share this place with us. VWB sprang into being because of my deep love of fine wine. Most of the old-time Hakuba crew were guests to countless dinners hosted in my home, filled with fab food, wonderful wine and gratuitous camaraderie. Opening VWB was a natural extension of this passion for good food, wonderful wine and fabulous times spent with friends. That’s what VWB is really all about... sharing wine with friends being the focal point. VWB isn’t a restaurant. It’s a wine centric space with light bites designed to accentuate wine, an ideal place to uncork the evening as well to “wine” it down later.
HC: Besides wines, you’re known around the village as one of the powder hounds and work with Evergreen Outdoor Center as a BC tail-guide. What’s the story? CL: I’m a thrillist. Riding powder in steep terrain ranks right up there with nirvana, the state of being, not the band! Maybe I’m biased, but doing a tour with Evergreen Outdoor Center is the best way to venture into the glorious, yet dangerous, backcountry of Hakuba. Dave Enright and I have been friends for over a decade. Crazy! Met the esteemed guide Bill Glude while living in Alaska, sold him on Hakuba via legendary tales of the stupid steep and deeper than deep JaPOW of Hakuba. He’s now a fixture with Evergreen. Can’t forget James Robb, Evergreen’s workhorse guide and his years in the backcountry of Hakuba. These three have heaps of experience and know where to go. They lead while I make sure all guests have made the run and aren’t stuck somewhere in the deep powder. What a way to work and play. Other than a well stocked wine cellar, the BC has to be one of the world’s best places to work. Lucky life!
ceptable espresso shots. Don’t give a rip about latte art and such as to me, a purist in the purest sense, it’s all about pulling that immaculate shot. Milk simply covers bad pulls or charred beans. Sadly, it’s getting more and more difficult to find truly outstanding espresso as the trend has moved to milky drinks. Think an espresso bar would be great but not sure many folks would drop in as not too many true coffee geeks around...maybe that’s next? Build it and they will come? Beans of dreams? HC: What about VWB for the upcoming season? CL: Still searching for a location. Hope to find something by winter but if not, will still be selling wine in town via restaurants and hotels, so in that sense, wine in winter are go for season 14/15!
HC: What about wine in Hakuba? CL: Firstly, wine isn’t a snobby, pinkie in the air, nose held high drink. That’s just the sad misrepresentation from press and media. Detrimental but so it goes. Have loved wine for over two decades. To me, it’s the best drink. Having wine in Hakuba was never a problem as my connections in the business are deep and varied. However, that wasn’t the same for venues, and while not wanting to credit myself for the expansion of wine’s availability and the improvements in selections, will say I’ve worked diligently to make it more accessible and less intimidating for those who wish to offer a decent drop to their guests. Just hope it’s helping! HC: Thoughts on Nihonshu? CL: Great that you use the correct term! Sake is the word for alcohol that the Japanese used to describe everything alcoholic, especially their national drink, to foreigners in Meiji period and beyond, which has, in my opinion, sadly, and mistakenly been applied to the delicious drink ever since. Off my soapbox, I love it and believe it is the best dinner mate for Sushi. Even if I’ve placed wines on the list, will always go with some Nihonshu when eating sushi. Hakuba’s local, Hakubanishiki is a great way to whet one’s whistle whilst learning about the diverse universe of this historic beverage. HC: You once operated a coffee shop, Kamoshika Coffee, in Wadano. What happened? CL: Ha! Put it down to being slightly ahead of the coffee boom. Yes, did open after a shop that shall remain nameless and at the same time as another which will also remain un-named. I used beans roasted weekly by a guy in Matsumoto who has been roasting for the past 45 years. Mr. Misato and I developed a blend just for the shop. I also used local, low temp pasteurized milk. This made my coffee a wee bit pricier than other places. As an Aussie certified barista and true coffee fanatic who is also a trained wine judge, my taste buds are rather well practiced and have an unwavering thirst for perfection. Use a professional machine at home to pull some imminently ac-

JAPANESE FOOD One of the main attractions to visiting Japan is of course trying out the different dishes that are available for hungry tourists. Be it an on mountain restaurant, izayaya or dining in one of the top restaurants, Hakuba has a something for everyone. We have made a list of the most popular dishes that you are likely to encounter in your dining quest.

Sushi The most popular Japanese food, it is basically made of white rice prepared in sushi vinegar then topped or combined with fresh or raw ingredients such as seafood, fruits or vegetables. There are different kinds of sushi preparations. Nigiri Rice is formed into a ball or a chunk and topped with fresh seafood. Norimaki Rice, fresh seafood and vegetables all rolled up in sheets of dried seaweed called nori with the use of a bamboo mat. These are then cut up into small, bite-sized pieces. Temaki Basically the same as norimaki, but instead of being rolled in a cylindrical shape, the rice and all the other ingredients are rolled into a cone shape. Chirashi The rice is not pressed into any shape or form here, but just laid out in a bowl and all the seafood, vegetables and other ingredients are spread out on top of it. Inari Sushi rice is made as a filling for small deep fried tofu bags or aburaage.

Takoyaki A common street food in Japan, this is octopus mixed in a batter dumpling and fried in spherical griddles. Ramen An import from China, this Japanese noodle dish is based on a thin, spaghetti-like noodle served in a hot soup base and with different kinds of toppings.
Gyudon Beef donburi. The beef is braised or stewed in a mixture of soy sauce and onions and topped with raw egg.

Tekkadon Tuna donburi. Chunks of raw tuna are served with rice and strips of nori seaweed.

Tendon Tempura donburi. Lightly battered pieces of seafood and vegetables are deep fried and dipped in a mixture of soy sauce and miso.

Nabe Nabe is a style of hot-pot cooking. The dishes are usually prepared at the table. Expect to find plenty of vegetables with mixed with seafood or meat.
Yoshoku is the name given to dishes influenced by Western styles of cooking but developed independently in Japan. Most restaurants provide both chopsticks and cutlery, so you can choose which works best for you. Guratan (gratin) Fillings are topped with cheese and a white sauce made from milk, butter, and flour, which is then baked in an oven. Chicken and seafood, such as crab and shrimp, are popular fillings. Korokke Mashed potatoes mixed with sautéed diced onion and ground beef, shaped into a ball, coated in breadcrumbs, and fried. Believed to come from the European “croquette.” Eaten with ketchup or Worcestershire sauce.

Chanko-Nabe The traditional food of Sumo wrestlers as part of their weight gain diet. Very rich in protein it goes very well with beer and rice.
Hambagu (Hamburg steak) Ground beef or pork is mixed together with sautéed diced onion, breadcrumbs, egg, and seasoning, shaped into a ball, and cooked. Hambagu come with many toppings, such as a light sauce made from grated daikon raddish and soy sauce, a demi-glace sauce, or simply topped with cheese.

THE LODGE AT THE TOKYU WADANO Sometimes you feel like having an elegant dinner, other times you feel like grabbing a pizza, and then there are times when you wouldn’t mind both. If that is you, then kick back and relax at The Lodge an informal lounge bar located in the Tokyu Hotel. Pull up a seat at the mahogany bar or sink into one of the leather arm chairs and then choose from the extensive selection of spirits, wines and cocktails on offer. This year they are going a step further and introducing a wider range of bar foods that will be served from 2PM, including, homemade hamburgers with Wagyu beef, chicken. Beef steak, pork cutlet and carbonara spaghetti will also be served. What better way to fill yourself up and to watch the sun go down for the day in front of the roaring log fire. A great place for après ski. As the sun sets then a Japanese menu comes out including assorted sashimi, sushi, tempura and Hakuba home grown soba, buckwheat noodles to name but a few. My wife and I were invited to the Traumerei Restaurant to sample their seasonal fare. We visited during the relatively quiet inter-season period and were welcomed into a relatively busy dining room. There was a choice of two set courses, we decided to choose different ones, I chose the Autumn menu while my wife chose the Le Grand Menu.
Located in the heart of Happo village, Jacks Sports Bar is your home away from home. They have cricket Six Nations Rugby, Sydney to Hobart Yacht Race and Premier League Soccer playing on enormous High Definition Screens so you can catch all the live sports action while you relax with mates over some hearty bar food that will warm you up and keep you going all night long. Enjoy Japanese favorites such as gyoza, karaage and edamame or share a pizza with your friends. The fantastic bar staff will keep the chu-hi flowing (any flavor) and rev you up with some heart starters and winter warmers while you take on all challengers at foosball. They are also the home of two top Aussie DJs Jem and Bex who will spin the latest tunes to get your blood pumping. Catch up with friends and make new ones as you get excited over a game, enjoy some live music and share your daily ski and board adventures on the slopes of the Hakuba Valley. Later we were Nishino-san joined us at the table and heprovided us with humorous stories about both the excellent fare, which he added is mainly grown in the hotel’s gardens, as well as anecdotes on some of the more memorable customers that have passed through the Traumerei doors. Although the main courses were a hard act to follow, I was secretly awaiting the desserts and I was not to be disappointed as the waitress approached with the first of them, fig tart with creamy ice-cream. This was soon devoured with great relish as the crème brulee was brought in for the second of the desserts.
Our starters and mains showed us just how talented the Traumerei chef is, with outstanding presentation and flavors. With the starters being so good, my mouth was watering with the My enthusiasm for good cheese, thought of the mains. which I may add is not easy to get in Hakuba, was well and truly satisfied by the selection offered to us. The only problem was how to select which to choose, so I decided to try them all. Feeling suitably rotund the coffee finished me off, as well as closing a wonderful evening of gastronomic pleasure.
Whilst you might expect the Jalan starred Traumerei to be a traditional formal dining experience, it is actually very accessible and extremely welcoming. The staff are charming, the service impeccable, and the surroundings tranquil but not austere. Whether you choose to blow the budget on the à la carte or stick to the amazingly priced set menus, you are sure to experience one of the finest meals to be had in the Hakuba Valley. The privately run Traumerei is open for dinner daily in winter.
My fillet of Wagyu was an exquisite cut of beef, cooked perfectly to be very pink, tender and full of flavor. The mustard sauce was rich and a great accompaniment to the beef as were the selection of roasted autumnal vege- TRAUMEREI Page 41 tables. These same sides also worked well with my wife’s French fillet. You can’t really can’t go wrong with Japanese or French beef. The bottle of 2006, Château du Haut Maray, selected by the owner and our host Nishino-san, to accompany our mains was deliciously smooth and continued to

There are lot many ways to adjust one’s lifestyle towards having less of an impact on our environment. Obviously recycling, reducing waste and driving electric cars are direct routes towards this goal. Within developed western countries, we currently can see many large companies are now turning to being more “eco-friendly” and adopting more sustainable practices. Even the giant fast food chains like McDonald’s are manipulating their image to promote a greener face to the public. This change is definitely not only a wise marketing strategy to show concern towards nature but is also a step in the right direction for consumer products on the whole. Roots Cafe started 5 seasons ago with the concept to reduce impact on resources, land, water and air by sourcing as locally and organically as possible. Of course reducing the use of petroleum and chemicals used in production and thus a more ecologically sustainable end product. Their motto is ‘Healing the Earth, One Bite at a Time’. Owned by Evergreen Outdoor Center, a year round eco-tour operator, it is sometimes hard to justify overseas travel to their site and due to their Alpine ski / snowboard school they wanted to provide something that was low impact on the environment and allowed customers to think about their food and beverage choices not only on their vacations but in their daily lives back home too. They do not preach that everyone should stop eating meat and animal products but to make wise choices for the health and sustainability of their bodies and our shared home, Mother Earth. Hopefully many can appreciate these concepts and hopefully share in the goal of reducing the impact that raising of cattle, non organic foods, teas and coffees can have on the areas and the people where these products are produced. Roots Cafe are not 100% organic especially during winter but strive to be as organic and as locally produced as possible. One only needs to drop into most caf-
eterias or restaurants on Japanese ski hills and you’ll find the typical ramen, katsu curry rice or hayashi-beef. And although this fare is easy and readily made, historically it does not reflect Japan’s ancient Buddhist cuisine which is much more vegetable based. Like many more traditionally rural societies, countryside Japanese tended to get their protein sustenance in the form of legumes and vegetables.
For a nice change from the regular ski hill fare found on the resort, why not drop into Roots Cafe for some deliciously unique food & drink. Kick off your boots, slip on some slippers and kick back in a relaxing lounge vibe. They have comfy sofas, interesting reading material, live music in the afternoons and free wifi service. If you’ve never tried their vegetarian cuisine, we are sure you’ll be happily surprised.
This return to more traditional cuisine is now a coined catch-phrase here in Japan as “slow foods.” Conceptually the move is obviously a nod towards the fast-food generation and definitely has its appeal of being healthy, locally sourced and enjoying our food more slowly!
The Cafe runs from mid-December to the end of March. This year they will have longer Apres Ski hours and will be putting on an evening meal 3 nights a week to coincide with Evergreen’s night snowshoe & chocolate fondue tour. Hours are from 08:30 to 18:30, dinner 3 nights a week from 18:00 19:30 as well as one live (band) event on the weekends.
At Roots Cafe, the menu is based on using completely vegetarian recipes that highlight both Japanese tastes and the international palate. The rice used is locally grown and whenever possible locally grown organic vegetables are used in the dishes. Not using meat products not only cuts back on the total energy needed to raise the animals but also has been shown to have numerous health benefits. An estimated 70 percent of all diseases, including one-third of all cancers, are related to diet.
