Haxby Advent Windows
I
n 2015, the first-ever Haxby Windows event took place, which gave 24 shops and businesses the opportunity to put on a window display using the theme of a Christmas Carol. This year, we have decided to keep the same theme, as it was so popular. The shops all reported back that so many people came to look at their display, and remarked how lovely it was to see shops and businesses and the local church coming together to provide something special for the community they serve. Again, this year, shops and businesses will be allocated a specific day to put out
their display in the lead up to Christmas, and each one will feature a Christmas Carol as its theme. The displays will then stay in place until Christmas, and some will possibly keep theirs for a short while after, so that if anyone would like to tour the village and look at the whole set, they can. Some of the displays will be created by the shops themselves, some by volunteers, and some are designed by schools and young people’s organisations in the area.

The first display on Thursday 1st December, will be at Aroma Café, the coffee shop of Haxby and Wigginton Methodist Church, and there will be a list of which days and where the displays are going to be in place. Local fundraiser Jennifer Carmichael explains, “The reaction you get from the general public when you collect at Christmas is wonderful and it’s a fantastically rewarding way to spend just a couple of hours of your time. These collections make it possible for Marie Curie nurses to provide free hands-on care for people with a terminal illness in their own home, and people are always so generous during the festive season. Festive Fundraising for Marie Curie

ith Christmas Day looming, Marie Curie is appealing for volunteers to come forward and sign up to help out with the charity’s Christmas Collection Appeal this year. Collections are taking place all over York in the run up to Christmas to help raise funds to support the local nursing service. Marie Curie nurses provide practical care and emotional support to people living with a terminal illness, and their families, in their own homes. Marie Curie services are completely free to patients and families. It costs £20 to pay for one hour of care from a Marie Curie nurse so every little bit really does help. Last year collections across York raised over £5,500, and local fundraisers are trying to make this year even bigger and better. CYCLE SAFE By Jimmy Hannon, PCSO 5637 After Christmas and the New Year many of us will be looking to take more exercise in an effort to lose those additional festive pounds. For a lot of us this may well involve getting a cycle out of the garage or shed and using it for the first time in a period of months. Nobody would ignore the maintenance of their car and set off on a journey without checking that it is roadworthy but many people just take the bike out and get on it without checking. It takes only a couple of minutes to check the important parts of your cycle and to make sure that they are all working. Everybody should check that the brakes are working, that the chain is oiled and undamaged and that gears are in working order at the very least. None of this is complicated and a fault in any one of these key areas could cause you serious problems when on the road. If you do not feel confident in checking these parts of your cycle then it is inexpensive to take it to a cycle shop and have them check it for you. When you have checked that your cycle is safe to ride make sure that you have lights that work. It goes without saying that you would not drive your car without lights on in the hours of darkness but there are still many people who do not have lights on their cycles. Whilst it is not a legal requirement to wear a cycle helmet they are relatively cheap to buy and should you ever have an accident on your cycle then a helmet will prevent you suffering a serious injury. It is also important to make sure that you wear appropriate clothing whilst cycling. Florescent jackets make you much more visible to other road users and will help to keep you safe on the roads. It is also important to remember that when cycling on the road you must adhere to the rules of the road as you would when driving a car. Traffic lights, signalling, and correct lane use (including the use of a cycle path when available) all help to keep you safe. It makes it much easier for other road users to know what your intentions are if you signal early, clearly and use the road responsibly. SHORT STORY CHRISTMAS IS CRAFTY by Jackie Brewster “We’re doing Christmas differently this year,” Carol announced, carrying in huge shopping bags. “Roger, stop what you’re doing and give me a hand with this tree.” Jonty wagged his tail. He knew all about Christmas, because it happened once every seven years. Roger would set up a tree in the lounge and then climb the creaky loft ladder for the box of decorations. The pair of them would coo over the little snowmen decorations made from cotton wool and toilet roll tubes, the doily angels, and the crepe paper snowflakes that they would stick to the patio doors. Carol would get nostalgic and ask Roger to pour her a sherry and put on a Slade CD. And Jonty would lie under the coffee table, waiting patiently for a mince pie to fall on the floor. “I’ve been to this stall called Christmas is Crafty,” Carol said, unpacking the contents of her bags. “It’s inspired me.” “I like Christmas just the way it is,” Roger said, but judging from the smells coming from Carol’s shopping Jonty wondered whether Christmas had been vastly improved. “Look at all the adorable new decorations I’ve bought,” Carol said. “Everything is handmade.” “All the stuff before was handmade, by the children,” said Roger. “The kids are all grown up now Roger; it’s time to move on,” Carol said, opening a box of dried clementines which had 22 • info@thehandymag.co.uk
been studded with cloves and tied with sticks of cinnamon. “These things are handmade but better, you know, professional.” Jonty gave them an appreciative sniff. “Honestly Jonty, get your nose out and give me some space,” Carol said. “Look at these Roger, good enough to eat?” Jonty’s ears pricked up. Carol showed them a box of gingerbread men delicately decorated with raisin buttons. Then she unravelled a raffia rope threaded with colourful popcorn, and a dozen huge pine cones sprayed with silver and gold. “The theme is Rustic Cottage,” Carol said. “You’ve got to have a theme.” “I thought we already had a theme,” Roger said glumly. “Do stop sulking,” Carol said. “You decorate the tree, while I do a spot of stencilling on the patio doors.” Jonty settled into his place beneath the coffee table. Roger hung the new decorations in silence, while Carol sprayed the glass on the patio doors so that it looked like snow had drifted up the panes. Jonty waited for the sherry and Slade but they never came, in fact Carol went up to bed early, leaving Roger to lock up.
Though Jonty regretted his lack of mince pie, he reminded himself that Christmas was different this year, so he waited in his basket until he heard sounds of snoring from the bedroom above. Then he padded into the lounge, a firm plan already in his mind. First he licked the snow off the patio doors. It tasted pleasantly of soap. Next a well-aimed leap from the back of the sofa brought the fir tree down. He then crunched his way through the gingerbread men and the clementines. They smelled better than they tasted. The raffia strings of popcorn proved interesting; he found there was no stopping once he’d begun, and it was necessary to eat the whole chain right to the end. Then he chased the pine cones across the floor. Finally, tired and queasy, he chewed them all up as well, just for fun. Feeling thankful for Carol, he dozed amid the wreckage of this wonderful new type of Christmas. Then he thanked Roger for kindly leaving the lounge door open; something that Roger had never once, in all Jonty’s days, done before.

It has begun... The big month has arrived and with it comes so many dusty, old traditions! Will you be hanging stockings or having a kiss under the mistletoe? Will you be decorating a Christmas tree and telling children to be good for the omniscient Santa Clause? Everyone celebrates Christmas differently, but many of us follow the same key traditions, often without knowing why. ‘Tis the season to step back into ancient history... When we decorate an evergreen tree, were complying with a superstition from Viking times! In Scandinavia, Vikings believed evergreens were special plants of the God of the Sun, so placing a decorated evergreen in your house was an offering in return for spring, instead of the unforgiving winter solstice. Similarly, kissing under the mistletoe pre-dates back to ancient Norse mythology. The trickster God, Loki, used an arrow fashioned from mistletoe to murder his brother, but the same poison was also the remedy! After mistletoe revived him, his mother vowed to plant a kiss on those passing beneath it, thus giving kissing under the mistletoe a slightly darker outlook... Hanging stockings is a more tragic story; a former monk ‘Sinter Klaus’ slid down the chimney of a suffering, motherless family to fill the three children’s stockings with gold. Whilst this is ostensibly a moral tale, the alternative outcomes suggested, such as the children being sold into slavery or left to die, reflects humanity’s darkness alongside the light. From this story we get one of the legends of Saint Nicholas; a ghost trail leads back to 280 AD to a monk who is greatly admired for his piety and kindness all year round. Whether you believe in him or not, he is undeniably a pinnacle figure at Christmas. Now whilst these traditions don’t have the same reasoning behind them anymore, they’re still intrinsic cogs in our Christmas culture, providing great morality lessons too! Yet as you’re wrestling the tree into the house, think: yes, Christmas does have so many intricate, historical roots behind it, but make this year unique! It only comes once a year so make it special, make it memorable, make it your own...

Join Father Christmas and Jingles The Magic Elf for a Magical Performance at Burton Agnes Hall this Christmas Father Christmas, Mrs Claus and Jingles the Magic Elf will be thrilling children, and adults alike, with magical performances of magic, song and storytelling. Children will be greeted by Mrs Claus in the Great Hall and guided through spectacularly decorated rooms to meet Jingles the Magic Elf, who will perform a show of exciting festive magic. Father Christmas will then greet the children, along with Jingles and Mrs Claus, and each child will be presented with a special Christmas gift. The Audiences with Father Christmas will take place on Saturdays 3rd, 10th and 17th December at 10.30am, 12.30pm and 2.30pm. Each event lasts approximately an hour, with an opportunity afterwards for photographs. Tickets are £12.50 per child and include admission to the Hall and gardens. The Victoria Falls
to a piece of string. Meanwhile, along the Knife’s Edge Bridge suspended in mid-air, strange poncho-clad creatures crawl like aliens across the face of the fall, soaked to the skin but gazing, exhilarated, at the force of the water and the giant rainbow over the Victoria Bridge which spans the deep river chasm. Opened in 1905, the bridge was built in England, shipped to Mozambique and assembled at the site in 14 months. Trucks and trains cross it at a snail’s pace and it marks the border between Zambia and Zimbabwe.

n November 1855, a Scottish missionary sailing down the Zambezi was the first European to set eyes on the awesome falls, long known to the natives as ‘the smoke that thunders’. “Scenes like this,” he mused, “must have been gazed upon by angels on their flight.” His name was David Livingstone and he called the falls ‘Victoria’ to honour his Queen. Stretching 1.7 km across Zambia and Zimbabwe, reaching a height of 108 metres, twice that of Niagara, and pouring an average of 550 million litres of water a minute, the Victoria Falls defy imagination and, with all statistics combined, they are the largest in the world. Mist and spray are visible for 20 km around. Surprisingly this mighty phenomenon does not occur on mountainous terrain but on flat land. It all started millions of years ago when earthquakes created faults in the old lava sheet and as soft material filled up the cracks, the river forced its way through,

carving out over time the eight zigzagging gorges we see today. But nature is not set in stone and the great Zambezi continues its work, protected by UNESCO and national parks on both sides of the border. Most visitors view the falls from the Zambian side, where the Eastern Cataract brings the first heart-stopping moment as roaring waters plunge over the edge and the placid upper river continues to flow unaware towards the precipice. But just feet away, the great mass of water tumbles into the ‘boiling pot’, trapped in a massive swirl as it struggles to escape through the tightest of bends. A long flight of slippery steps leads down to the cauldron’s edge, a spine-chilling place where baboons bare their teeth and you might shudder at the sight of a crocodile swept over the edge. Up on the top, those who dare bathe in the death-defying Devil’s Pool on Livingstone Island, where the explorer measured the drop with a bullet attached
Zimbabwe claims over two-thirds of the falls with 16 breathtaking viewpoints along sign-posted trails which meander through pristine rainforest to reveal the entirety of the falls: Devil’s Cataract, Main Falls, Horseshoe, Rainbow (the highest), then looking right across the bridge into Zambia. There are fewer visitors on this side and along with birds and butterflies, you might spot antelopes, bushbucks and other game. A statue of Livingstone looks down on it all, perhaps pleased that here, the water never dries. It’s different in Zambia when around October-November, the falls can dry up, breaking up the magnificent curtain of water into narrow streams and exposing the rock face, but on the other hand, Zambia claims the best viewing spots to enjoy the full moon. On a clear night, a magical lunar rainbow, or ‘moonbow’, appears over the water, ghostly and pale to the naked eye, but a good camera might capture the colours and one of the most enduring memories of the Victoria Falls.

My Gran insisted on soaking her Christmas turkey in brine (or ‘broin’ as she used to call it, being a Birmingham girl). I never really understood why until I tried it for myself. You need 750g salt for a large turkey. Use a large watertight plastic box and dissolve the salt in 4 pints/2 litres of boiling water. Add 9 pints/5.5 litres of cold water and leave to cool. Immerse the turkey in the brine, breast side down. Cover with a lid and put in a cool place like the garage for 24 hours. You might want to seal the lid or weight it down to prevent mice from gaining access! The next day empty the brine and pat the turkey dry and refrigerate overnight. Remove the bird a couple of hours before cooking to allow it to come to room temperature, and prepare in your usual way. So why go to this trouble? Here comes the science bit! Roasted turkey can be dry and tough because it’s lean and we tend to err on the side of caution with 60 • info@thehandymag.co.uk
cooking times, (no-one wants to serve up a plate of festive salmonella right?). Moisture loss is inevitable when you cook any type of muscle fibre. Heat causes individual coiled proteins in the fibres to unwind (the technical term is denature), then join together with one another, resulting in shrinkage and moisture loss. Meat loses about 30 percent of its weight during cooking but by brining first, you can reduce this moisture loss to as little as 15 percent. The main reason for this is because the dissolved salt causes some of the proteins in muscle fibres to pre-unwind and swell. As they unwind, the bonds that held the protein unit together as a bundle break. Water from the brine binds directly to the proteins, and then gets trapped between them when the meat cooks and the unwound proteins bind
All this ensures moister, juicier results. But what if you don’t have the container or the inclination to soak your bird? Is there an easier way? Yes, you can ‘dry-brine’, that is presalt the turkey. This seasons the meat like the wet brine, but does not use any water. Instead, it involves rubbing salt and seasonings directly onto the meat and / or skin, and then letting the meat rest in the refrigerator before cooking. For a 15lb /7Kg turkey you need about 3 tablespoons of salt, ¾ teaspoon of ground black pepper and herbs of your choice. Pat the turkey dry and then rub the salt mixture liberally over the surface. I like to rub about a third of it under the skin but if you don’t want to go to the bother of separating the skin from the meat it’s fine to just rub it over the skin. You need to allow time for the salt to penetrate the meat so allow a day’s brining time per 5lb /2 1/4 Kg of turkey. Dry brining has the advantage of producing extremely crispy skin, and we all know that’s the best bit! FINAL TIP: Make sure you use an unseasoned turkey. Avoid pre-prepared or self-basting turkeys as they have been injected with brine. Enjoy!

veryone seems to be talking about “the cloud”, but what does it actually mean, what’s happening in this cloud and where is it?! Firstly, I’m no IT expert (I prefer to leave that to the professionals), but simply put, the cloud is somewhere at the other end of your internet connection. Golf GTI Clubsport S
WHAT IS IT? It’s the fastest front-wheel-drive car around the Nürburgring, a stripped-out hardcore celebration of the 40th anniversary of the Golf GTI and a limited edition collector’s piece all in one. The Golf GTI Clubsport S is the result of asking engineers to do what they can to cement the GTI’s name in the hot hatch pantheon. WHAT’S UNDER THE BONNET? Lifting the Golf’s bonnet will reveal the same two-litre, turbocharged petrol you’ll find elsewhere in the Golf range – notably the Golf GTI and Golf R. In this application it’s been tuned up slightly, producing 306hp – broadly similar to the Golf R’s output but with a different exhaust system freeing up a couple of horsepower. That’s paired with the six-speed manual gearbox for weight purposes, as the extra few kilos of the dual-clutch gearbox (DSG) would work against the weightsaving nature of the Clubsport S. WHAT’S THE SPEC LIKE? The GTI Clubsport S is a topspecification Golf and it comes with the appropriate bells and whistles. The infotainment system is 66 • info@thehandymag.co.uk

You’re missing one or two things – not least of which are the rear seats, replaced with a faux strut brace and cargo net. Cruise control is absent, unusually, leading to an oddly sparse suede steering wheel. WHAT’S IT LIKE TO DRIVE? It drives exactly as you’d expect the car that set the fastest front-wheel-drive lap of the Nürburgring ever to drive. It’s really very savage in a straight line, barking through the exhausts with every upshift, and scrubs off speed no less impressively. The sticky Michelin Pilot Cup tyres offer huge amounts of grip, too. On the mixed and drying roads we used, the Clubsport S exhibited a little torque steer if you gave the car some stick, but far less than you might expect. Otherwise, it’s a very neutral car to drive on the road. WHAT DOES THE PRESS THINK? AutoExpress reckons that the Clubsport S has ‘even more involvement and surprising refinement’, while Autocar thinks that it’s ‘by a nose, the very best fast Golf you can buy’. WHAT DO WE THINK? It seems odd to turn a car with
such broad credentials into a two-seater sports car, especially as the rear compartment trim is still present, but you can’t really ignore the way it drives. The Golf R might be a safer bet for all-weather performance, but the Clubsport S makes a great case for itself on dry roads and doesn’t feel as wrung out as other front-wheel-drive offerings of similar power outputs. Losing the rear seats makes the Clubsport S a bit of a tough sell when silhouette rivals retain the family usability and two-seat competitors are commonly less expensive, but as all of the UK’s allocation of 150 have already been sold, it’s almost a moot point. At this time of year there are plenty, such as the indoor cyclamens and azaleas or a flamboyant poinsettia or a gorgeous Christmas cactus, which look fantastic whilst in flower - but don’t forget that lots of the foliage houseplants look great, too. Alan came to us as an unclaimed stray, he is a friendly chap who would make a great pet given the chance. As soon as his cubicle is opened he comes running for a fuss and loves to have a game with you. Alan seems slightly nervous around young children so we are looking for a home where any children are teenagers. Daphne is the sweetest cat who came to us via an inspector after she was found abandoned with her kittens. Daphne has been a fantastic mother and now her kittens are grown up she is looking for a home to call her own. She is extremely friendly and will be suitable to live with infant school age children, and possibly other cats.

We’re holding our annual Christmas fair on Sunday 4th December from 11am to 3pm at the York Animal Home on Landing Lane. There will be lots of stalls with Christmas gifts, crafts and the favourites Everyone’s a Winner, a grand raffle and children’s lucky dips. Please come along and help us raise much needed funds to ensure all our animals have a Christmas as good as yours.

ONE OF OUR FRIENDLIEST CATS IS LOOKING FOR A NEW HOME Poor Ziggy has had some bad luck recently, first of all his previous owner sadly passed away and then he contacted cat flu which has meant he has been stuck in the Centre for longer than expected. Although he is over the sneezing stage of his cat flu he does have some lasting damage to one of his eyes and would have to be the only cat in any new home. Despite this run of misfortune Ziggy’s spirit has not been dampened and he’s always eager to meet people, play some games, gobble a bowl of food and entertain with his crazy antics…it’s always party time in Ziggy’s world!
This energetic young fella is called Ziggy and he’s one of the friendliest cats that we’ve ever had here at York Cats Protection Adoption Centre.

The festive season is an exciting time, with plenty of food, presents, not to mention all the decorations! Here are some tips to help keep yours pets out of trouble this festive season. Food Alert! Keep all that extra food well away from pets. Rich foods can lead to upset tummies, but especially be aware of raisins in puddings and cakes as they can be very toxic to the kidneys. Chocolate is another festive favourite, but as little as 50g of plain chocolate can be fatal in small dogs. If your pets get hold of turkey bones, there is the potential for dangerous gut blockages. Also don’t forget about the presents. Dogs with their sensitive noses will be able to tell which gifts are edible and the wrapping won’t do their tummies any good either! Visitor Alert! Christmas is a time for families and our homes are often full of visitors. Many pets revel in this extra attention but some will find it extremely stressful. If your pet is more shy than sociable, make sure they have a safe place they can retreat to.
Winter Walks! When going out walking take care of your dog’s paws. Snow and ice can ball up between the toes, especially on furry paws, and road grit can cause nasty sores if not washed off. Also slim fine-coated breeds like whippets benefit from a coat in cold weather. Dastardly decorations! Make sure the Christmas decorations are well out of reach or securely fastened down. Cats especially find the twinkly lights and baubles irresistible which could cause them harm if accidently swallowed or broken. Toxic Plant Alert! When cats are not going out as much they might amuse themselves by chewing house plants. Beware of lilies which are toxic to cats. All parts including the pollen are toxic causing kidney failure. A robust chew toy: We think the KONG products are a great present for dogs of all sizes and ages. You can stuff them with treats, smear dog toothpaste in the grooves, hide them and generally keep them entertained. If you are buying a chew type toy make sure you can dent the product with your finger nail, anything harder can damage your dogs teeth. A puzzle feeder: These are great for all sorts of pets. Maze feeders help slow the speed at which your dog eats food, so can help overweight animals. Interactive puzzle feeders provide great stimulation for cats who would naturally hunt for their food. You may need to train your cat to use them, see foodpuzzlesforcats.com for ideas. A fishing rod toy: Apart from catnip mice these have been my cats’ favourite toys. You can make your own, anything feathery or dangly that your cat can pounce on (remember to put them away afterwards as cats can get things caught around their tongues).

A cardboard box: My children turn the big ones into spaceships, my cat’s favourite bed is a towel lined banana box from the supermarket on top of the boiler (the robust ones also stack to make cat bunkbeds). Small pets like them to shelter under or jump onto! Some peace and quiet: If you have lots of visitors, as well as insisting on bringing a tree (which may be viewed as either a cat activity centre or adorned with potentially edible items) indoors, make sure your pets can retreat to a quiet place should they choose to.
