elcome to the February edition of the Handy Mag. Did you know that the the Anglo-Saxons called February Solmonath which means cake month! It’s what I ate too much of over Christmas and spend January and February trying to work off! I hope it’s not going to be another frozen month. I don’t think I can take much more cold having had to ration oil over Christmas. We almost ran out and couldn’t get a delivery until mid January! At least we might have saved a bit of money on heating bills! The other thing we need to spend less money on is petrol. I can’t believe how much it now costs to fill up the car and where I live there are no other options but to drive everywhere. I’m going to shop locally as much as I can and combine trips as much as possible. It’s childrens activities that are the problem - scouts, dance classes, after school sports, friends houses etc etc. They will just have to learn to entertain themselves at home - in the cold! What is there to do in February?! There are quite a few events locally. A Valentine’s Day dance on the 12th at Stockton-on-the-Forest Village Hall raises money for Myathenia Gravis and a Charity Fayre at Haxby Memorial Hall is on the same day to raise money for the hall. Have a look at the events pages and find something to cheer you up this month! Well done to Mr Bodill from Haxby and Lynn Jeffrey from Swinton on winning the Handy Mag competitions in the November and December editions. Until next month....

Just look at it – even if it drove like a canoe, dealers would still be shifting them by the bucket load. And that’s because style sells, especially when it doesn’t cost the earth. Peugeot has set its sights high for the RCZ. It’s gunning squarely for the market leading sports coupe, Audi’s TT, and the Germans must be worried. Problem is the French firm has a bit of a habit of making stunning cars that don’t deliver in the driving stakes. Take the 206CC as an example – that was a car that brought a folding metal roof to the masses, but my word was it unpleasant to drive. So what about the RCZ? Have Peugeot got the combination right this time? Well, climb behind the wheel and your first impressions are dominated by an interior that doesn’t feel as you’d expect. The driving position isn’t as low as you’d imagine – you sit up quite high, much like you do in the hatchbacks the marque’s famous for.

The interior doesn’t feel as stand-out as you’d expect either, especially after the visual drama of the exterior. Don’t get us wrong, it’s well laid out, just lacking in the excitement some buyers may demand. On the road it’s grippy and well balanced in the bends and although the steering is light, it’s precise and well weighted. There is a fair whiff of body roll in the bends though which comes as a surprise considering its sports coupe proportions. What’s more the gearbox feels a little sloppy. There’s a high-powered 200bhp version of the RCZ available, but for this test we

The 1.6-litre unit is a bit underpowered and needs an incredible amount of revs to get the best out of it. With a 0-60mph time of 8.4 seconds it hasn’t really got the go to match its show. That being said, it’s still an involving car to drive and surprisingly entertaining to boot. But as we said, for most buyers it might just as well be powered by steam – they really aren’t concerned with what’s under the bonnet. For them it’s the looks that count and we have to agree – this could actually be the best-looking Peugeot ever. Those curvy lines, lumpy roof and striking nose are the reason dealers can’t get hold of enough to satisfy demand – and the reason it will become a very common site on our roads. Whether it’ll have the same visual appeal when they’re two a penny in the staff car park remains to be seen. But, for now, it’s one of the stand-out cars of the moment.

enticing invitation to discover the island, beyond the usual T-shirts and computer chips. Barely the size of Holland, the island claims 200 peaks above 3000 metres, the highest density on earth, glorious beaches, gorges and cliffs, a bustling capital and colourful year round festivals. Most spectacular is the Chinese New Year in February when on the last day of celebrations, thousands of paper lanterns are released into the night sky, carrying good wishes and prayers to the stars. There are fireworks and temple offerings, lucky red envelopes filled with cash and traditional dumplings shaped like the full moon. Up north, in the cusp of the hills, Taipei shares in the festivities among chaotic traffic, green cycling lanes, sizzling food stalls in the night market and red and gold pagodas nestling below the tower blocks. But the capital’s pride and joy is Taipei 101, towering 508 metres above the city. Named after its 101 floors, it houses a financial centre, glamorous boutiques and the world’s fastest lift whizzing visitors up to the viewing platforms, at 1010 metres a minute. It’s a showcase of Feng Shui design, including a 660 ton golden pendulum to keep the tower straight in typhoons and earthquakes. Taiwan sits on a fault line which on the positive side, means an abundance of hot springs, highly popular in the winter months. Most developments are found around Taipei and the western plains where bullet trains rush towards the tropical south. On the other side, the east coast is rugged and wild with precipitous cliffs plunging into the Pacific and tribal lands heading into sparsely populated mountains. Fourteen aboriginal groups are officially recognised, accounting for just 2% of a mostly Chinese population, but each one preserving a unique culture. Among them are the Truku who live around Taroko, one of eight national parks, where a dramatic gorge digs its way down to the ocean. There are meandering trails and turquoise pools, marble rocks, caves and cliffs, exotic birds, butterflies the size of your hand, red-faced monkeys and the occasional black bear. You can stay in luxurious tribal venues, eat glutinous rice and bird’s nest fern, bargain for local craft or 22 • info@thehandymag.co.uk

South of the romantic Sun Moon Lake and close to the Tropic of Cancer, the district of Alishan is another lovely spot, home to the Tsous who grow tea and coffee in green rolling hills. Here red-roofed villages shelter in the hollows, ornate temples splash colour on lonely hilltops and veils of mist drift through whispering bamboo. Taiwan’s highest peaks beckon all around. At nearly 4000 metres, Jade Mountain is the ultimate challenge but in the shivering dawn, most visitors opt for the nearby Celebration Mountain, conveniently close to rail and road and the best place to enjoy a magical sunrise. When the first golden rays sweep across the sea of clouds at your feet, Taiwan is sure to touch your heart, just like the Chinese lanterns glowing after dark. By Solange Hando

How to get high-tech kit without paying high prices Whenever a new gadget comes out - a new iPhone, for example, or a fancy laptop - the press coverage tends to miss out one little detail: the gadget is usually incredibly, ridiculously expensive. Do you really need to pay that much for your high-tech kit? The answer, of course, is no - and that doesn’t mean you need to compromise, or end up with gadgets that don’t do what you want them to do.

Valentine’s Day

F

ebruary and Valentine’s Day, a delicious high point in every teenager’s year. Who sent this card? I don’t recognise the writing. Could it have been... him? If only it was! I bet it wasn’t, though. I don’t think he likes me. But then Cheryl said she thought he liked me. And he did give me some of his crisps after double chemistry. Perhaps he does like me. But it couldn’t have been him: he would never have made a suggestion like that. I certainly wouldn’t do that, even if he did like me. I don’t think I like him after all. I hope this card wasn’t from him. I bet it was, though... And so on. But how did we reach this point, where people feel it’s okay to send anonymous cards to each other suggesting things they’d never dream of saying out loud? It all starts way back in the late Roman Empire, with (of course) St Valentine. Ah, but which St Valentine? There are seven on the Vatican’s official list: a Roman priest and an Italian bishop both martyred in the third century; a priest, a bishop and a hermit all martyred in the fifth; a Spanish hermit martyred in the eighth; and another one in the ninth. We don’t know a lot about any of them, except that something about the name “Valentine” seems to have really annoyed pagans with swords. The first two might even have been the same, since they were both supposedly executed on February 14th and buried beside the Via Flaminia just north of Rome. Mind you, how anyone can be certain of the day and the month when the years are given variously as 269, 270, 273 and 280 is anybody’s guess. The Vatican itself isn’t all that sure, since it removed them both from the General Calendar of saints’ days in 1969; although as they both retain their listings in the Roman Martyrology they’re both still counted as saints. Separate saints, too, even if they were the same person. The cult of St Valentine got off to a slow start: Pope Gelasius I inaugurated his (or their) saint’s day in 496, but there’s no record of a church being dedicated to him (or them) before the 10th 26 • info@thehandymag.co.uk

century; and it wasn’t until the late 14th century that he (or they) were explicitly associated with romance – by Chaucer, as it happens, in The Parliament of Fowls. It quickly became the custom to send one’s beloved a poem for St Valentine’s Day, although Henry V cheated and hired the poet John Lydgate to write an ode for his queen, Catherine of Valois. Henry’s inability to write his own verse was a deficiency widely shared, so people started sending keepsakes instead. In the mid19th century printers caught on to the marketing potential and started mass-producing Valentine’s cards; but it wasn’t until the postcard craze of the early 20th century that it became customary (for obvious reasons) for cards to be sent anonymously. Well, that just about wraps up the history. The one outstanding question is: why is St Valentine associated with romantic love? The suggestion is that he was arrested for conducting weddings. Me, I think it’s just coincidence. Think back to where we started. You’re a Roman-era peasant. It’s February. There’s nothing to do on the farm and it’s vile out, so you stay in. You can’t actually read, and there’s nothing on the telly. What you going to do? You’re going to snuggle up and make beautiful lurve, that’s what.

Employment for under 16s

M

ost school age teens are keen to find part time work to earn some money. Aside from the financial benefit, in an increasingly competitive market, it’s useful to gain some experience of applying for work and taking on the responsibility of a job. There are two main aspects to consider as your teen (aged 13 to 15) takes their first steps into the world of work: the legalities and actually securing a job.

For parents and guardians First of all, under the age of 16 there are employment restrictions on the hours and the type of work that can be undertaken. Below are just a few key rules but you can find more information at www.direct. gov.uk. • 13 is the minimum age for employment • The working day must be between 7am and 7pm • During term time a teen can work a maximum of 12 hours a week, and from Sunday to Friday there’s a limit of two hours a day. Up to 5 hours a day (aged 13 or 14) or 8 hours a day (aged 15) can be worked on Saturdays or school holidays. • During school holidays the limit is up to 25 hours (aged 13/14) or 35 hours (aged 15) a week. • The employer must provide an employment permit, the application form for which the parent or guardian signs. • There is no minimum wage for under 16s • There are some occupations such as factory work or work in pubs which are not permitted.

For teens What about getting a job in the first place? There aren’t many around, so if one becomes available you’ll need to be quick and you’ll need to stand out from the crowd. If you see a job you are interested in applying for, send your request in as soon as possible. Often – if it’s unskilled work – an employer will take on the first person to apply. 30 • info@thehandymag.co.uk

If you are old enough to take on a job, you are old enough to apply for it too. Why would any prospective employer choose an application from Mum or Dad over someone who had applied in person? By all means mention that your parents know you are making the application and that they will support you, but the first contact must come from you. (For parents: if your teen’s application is accepted, it is of course quite reasonable that you meet their employer before the job commences.) If your application is by email, make sure your grammar, spelling and punctuation are faultless, don’t use texting shortcuts and proof read your mail before you send it off. Mails that say “i saw yr job ad and i am interested” will go straight into the recycling folder. It might be the norm to use short forms and lower case letters with your friends, but it’s not when applying for a job. Add some extra information about yourself. If you keep fit, do voluntary work, or have already had a job mention this in your mail too. You could even add in a photo. Don’t assume that just one mail is enough. If you are really keen, send another, make a phone call or even send a letter. Even if you are told the vacancy has been filled, send a reminder occasionally that you are still interested should another position become available (although don’t make a pest of yourself either!) Your primary goal in doing all this is to stand out from the crowd. If yours is the mail that has perfect spelling, you keep asking and you personalise your application in some way, then you are much more likely to land yourself some paid work.

Chocolatier “The key element of successful chocolate-making is matching the flavour of the chocolate used to the ingredients going inside the chocolate, be it a ganache or a truffle.” Gareth Mellor, Chocolatier

ifferent grades of chocolate, like wines or spirits, have different properties, flavour profiles, textures and characteristics.

Think of the difference between a Sauternes dessert wine and a flinty Sauvignon Blanc. Both are made from grapes, both are wines but they are distinctly different drinks. The same goes for chocolate. Chocolatiers work with couverture chocolate, a form of chocolate high in cocoa butter and cocoa solids that means that it is highly workable and suitable for dipping, coating, molding and garnishing. The skill of the chocolatier is in understanding the different properties of the couverture they work with and choosing the right combinations of chocolate and filling. Sweet and mellow couvertures, like Valrhona’s Grand Cru Manjari Madagascar, fill the mouth with flavours that seems to extend right up into the ear canals. Its citrus notes stem from acids produced during the fermentation process and its dark, earthy undertones and 64% cocoa content mean that it is the perfect accompaniment for sharp, bitter lemon flavours, raspberry truffles and sea salt and caramel creations. The couverture made by Michel Cluizel of Normandy contains 72% cocoa from South American, African and Javanese beans. The tiniest drop of it on the tongue reveals long lasting dense layers of malt, smoke and tobacco. A great carrier of flavour, the Cluizel couverture is used in mint chocolates to give a clean yet full bodied taste. Felchlin, a company of Swiss chocolatiers, produced a rustic couverture chocolate to

With a light, coarse structure that melts away to leave granules of cane sugar on the tongue, the chocolate looks like something that has been carefully hewn from the earth’s core. Fermented for 48 hours this is the Dom Perignon of chocolate and its rough and ready appearance disguises a potent and heady cocktail of sweetness and strength. The process of creating new truffles or flavoured ganache depends greatly upon the chocolatier’s senses, from smell to sight to touch. “You eat with your eyes first.” Gareth Mellor, a chocolatier based in Tynemouth explained. “My olive oil and lemon truffle has two drops of colour on its shell, one yellow and one green, to tell you which tastes you will find inside. The dark brown sphere of my fresh mint chocolate is strewn with delicate strands of bright green, again, to tell your mouth what to expect”. The mint chocolates do indeed look like minute and edible Jackson Pollock paintings, colour coded for the taste buds. Next to the mint creations sit three orderly lines of what could be a nut of some sort. “Cedarwood truffles,” explained Gareth. “I dusted them with cocoa to give them an earthy, autumnal feel. Some combinations come through a process of trial and error. Others are sheer flukes. I sat for half

A perfect end to a romantic dinner for two. Crisp, buttery heart shaped cookies layered with cream and fresh raspberries, served with a raspberry coulis and topped with a chocolate filigree heart. There will be plenty of cookies to save for another day if you keep them in a tin.

For the cookies Ingredients 250g unsalted butter, softened 250g caster sugar 2 large eggs, lightly beaten ½ tsp vanilla extract 500g plain flour 1 tsp baking powder Method 1. Beat the butter and sugar together until light and fluffy. Beat in the eggs and vanilla. 2. Combine the flour and baking powder in a separate bowl and add to the butter mixture. Stir in, then work into a dough with your hands. Turn onto a floured board and knead into a ball. Divide the dough in two. Flatten each piece into a rough disc and wrap in clingfilm. Chill for at least 1 hour. 3. Preheat the oven to 170°C, gas mark 3. Place one of the discs of dough on a floured board. Dust the dough with flour. Roll out to a thickness of 35mm and cut out heart shapes using a 10cm heart shaped cutter. 4. Place the hearts slightly apart on a non-stick baking tray and cook for 10-12 minutes or until lightly coloured. Cool on a rack.

For the chocolate filigree hearts Ingredients 1 bar of plain chocolate Method 1. Melt the chocolate in a small bowl over a saucepan of barely simmering water, remove the bowl from the saucepan and allow the chocolate to cool a little. 2. Using your heart shaped cutter as a guide draw two hearts spaced apart on a piece of baking parchment. 3. Spoon the cooling melted chocolate into a small plastic piping bag and snip a tiny bit off the bottom to make a small hole. 4. Next comes the tricky bit, you need to work quickly to draw a chocolate heart on the parchment and then fill in as shown in the photo to make your filigree heart. Repeat for the other heart and leave 36 • info@thehandymag.co.uk

somewhere cool to harden (not the fridge). 5. If you don’t fancy giving it a try make some chocolate curls by scraping the chocolate bar with a potato peeler and sprinkling the finished cookies with curls instead.

For the coulis Ingredients 1 punnet fresh raspberries 1 lemon, squeezed Caster sugar to taste Method 1. Place the raspberries, lemon juice and one tablespoon of sugar in a liquidiser and blitz to form a runny puree. 2. Taste and add more sugar if you like, if it’s not runny enough add more lemon juice and taste again to check the sweetness. 3. If you want perfection sieve the coulis but it’s not essential.

To Assemble 1 punnet fresh raspberries Small carton double cream, whipped but save a little in the bottom of the carton to decorate the raspberry coulis. 1. Place a cookie heart on a large plate and top with raspberries interspersed with piped rosettes of cream (or small blobs if you don’t have piping bag). 2. Cover with another cookie heart and this time arrange the raspberries on a layer of whipped cream as in the photo. Carefully place the delicate chocolate filigree heart on top. 3. Pour a little coulis around one side of the heart and arrange three berries as in the photo. Decorate the coulis with tiny drops of the reserved cream. You can turn these drops into hearts by using a cocktail stick and starting at the top of the drop pull sharply down through the centre to form a heart shape.

ruit trees require regular care and pruning to maintain a proper balance between vegetative growth and fruiting, when a fruit tree is pruned it ‘shocks’ the tree into improved fruit production. Light pruning may then be required to develop the quality of the fruit produced. Various pests and diseases can attack fruit trees, it is possible to control these with tried, tested and approved chemicals or organic alternatives and cultural control methods. Tree/bush owners should clear away dead leaves in autumn, composting or burning these leaves to prevent re-infection of disease during future growing seasons. The tree may require a winter ‘clean’ to kill overwintering bugs and in early spring, grease bands should be fixed to trunks to prevent the march of Codling Moth into the tree, which look for homes within the juvenile buds and young fruit. In

This is thought to be the best fruiting crab, it makes a small tree with an irregular, oval crown and thrives on most soils. White flowers are followed by relatively large, conical orange/red fruits which have good flavour if required for preserves or jelly.

Pale pink flowers in the spring are followed by sweet edible fruits in late autumn to early winter. This tree prefers a fertile, moist free draining soil in full sun or partial shade.

Olea Europaea - Olive This tree is worth growing for its evergreen foliage alone, which are small, leathery and grey/green in colour. Small white fragrant flowers are borne generally on last years wood and the fruit are harvested in the green to purple stage, they can benefit from a severe biannual prune in April.

This makes a small, gnarled, wide spreading tree of rounded form. It has large, hairy leaves and large white flowers are borne in May and June. The small brown fruits are only edible when ‘bletted’ or left to turn half-rotten.

Hellebore Helleborus H

ellebores are valued by gardeners for their evergreen or semi-evergreen leaves, early, long-lasting flowers and an ability to withstand severe weather and deep shade. Although commonly known as the “Lenten Rose” or “Christmas Rose”, hellebores don’t belong to the rose family. With approximately 20 species and countless cultivars, there will be a hellebore to suit everyone. Flower colours vary from the pure white, early blooming Helleborus niger to the deep purples and pinks of Helleborus orientalis and many other varieties, mostly in shades of green and pink. With a long history of use in witchcraft and supposed medicinal properties, several legends surround the hellebore. During a siege in 585BC hellebore was said to have been used to poison the water of Kirrha in Greece. Some believe

Alexander the Great accidentally died of an overdose of hellebore which he was taking as a medicine. They can be propagated by division but don’t expect the new plants to produce blooms in their first year. Hellebores require little care. The only regular care they require is the removal of old or diseased foliage in autumn and early winter. Hellebores are excellent plants for providing year round interest and flowers at this dark time of year.

OAKEN GROVE SURFERS

The Silver Surfers group has changed its name to Oaken Grove Surfers because we have responded to the government’s request to help all adults of working age to become computer literate. It is part of the ‘Manifesto for a Networked Nation’. We run Online Basics courses (part of My Guide) and we are a registered UK Online Centre. We help beginners become competent at using a keyboard and a mouse, searching the internet, staying safe online, sending emails and much more! Everyone is welcome at our sessions on Monday mornings and Thursday afternoons. Thinking about getting

a new pet?

T

here are many things to consider when you are thinking about getting a new pet. Firstly which type of pet would best suit your lifestyle, for example a household where the owners will be out for eight hours or more a day will not be best suited to a dog as they require regular walks and a lot of companionship. Dogs also require very hands on toilet training and basic training so it is best if there is someone around all the time in the early days until you have cracked it. Cats often suit working people as they do not require the same attention and companionship that dogs crave and they practically toilet train themselves. They are happy to be independent and do their own thing throughout the day then socialise with you in the evening. They also do not mind being left in the house alone if you want a trip to the pub! Perhaps if you have small children, you have considered a small pet such as a rabbit, guinea pig or hamster. These can give you great enjoyment but again it is worth considering that they need cleaning out regularly and also require a lot of companionship as they live in large groups in the wild. It is often best to house small pets together, taking into consideration which sexes get on best together (this differs in each species) and being careful not to have any multiplication accidents! They will also need a lot of human contact from early on to ensure they are good at being handled. Once you have decided on which pet you want it is important to visit your local vets to find out your pets requirements to ensure it is well looked after, healthy and happy. Your Vet Nurse will discuss many things at your new pet check such as the importance in vaccinating your pet against life threatening diseases and how often they need to be vaccinated. Cats, dogs, rabbits and guinea pigs should all be vaccinated. It is also a chance to discuss the benefits of having a microchip in case your pet becomes lost or is stolen, and how it works. You will be told about how often to flea and worm your pet and about the different products available that best suit your pets temperament! new year means a fresh start and at York Cats Protection we have plenty of fabulous felines that are looking forward to their fresh start in 2011. We currently have two such cats that are looking for very special homes this year, Meila and Cracker. Meila is a bouncy and energetic young lady who hasn’t had the best start in life. Having picked up cat flu as a youngster, young Meila has spent her days hidden away in our isolation pens. She has had treatment for the infection and her snuffles have subsided greatly, however she does have residual cat flu meaning that during times of stress or other illness, she may develop cat flu symptoms once again. It is for this reason that Meila also has to be the only cat in a household and must be

kept up to date with her annual vaccine. Despite all this Meila is the liveliest young cat and would make a lovely addition to a family. Lovely lady Cracker lies on the other end of the age spectrum. Where Meila is young and bouncy, Cracker is much more calm and sedate – but is still desperate for a good fuss and plenty of love. Cracker is also a special cat and has a few health problems that are common in many older cats. She has the beginning of liver failure and hyperthyroidism but it doesn’t seem to be affecting her personality. Cracker really is just that, a cracker, and she would suit a quieter, mellower home. This festival is for York Residents young and old. Residents need a valid YORKcard to gain admittance at each participating venue. We are pleased to say that £942.56 was raised by the Alternative Gift Market to bring practical help to the needy in Cape Town, and 971 boxes were collected for the children in the Samaritans Purse Christmas Shoe Box project. We believe that the boxes will be sent to Swaziland.

ommunity Composting Group York Rotters are encouraging people to make a New Years resolution to slim their wheelie bin. Catherine Bamford, York Rotters Project Officer said ‘a lot of people are aware of the need to recycle and want to do their bit to help the environment and composting is a great way to do more. Composting is nature’s way of recycling and is about turning garden and kitchen waste into compost, not only helping protect the environment but helping save money too. There are even compost bins designed to compost cooked food waste, helping to further slim your bin’. Go to www.greencone.com and enter your postcode into the discounts box to find out more about the offer subsidised by the York and North Yorkshire Waste Partnership. Catherine said ‘composting is really easy and does not take a lot of time or require a large garden, in fact you can compost even if you only have a small yard. York Rotters are holding a free training course on How To Compost on Saturday 12th February from 10 – 12 followed by a free lunch. From 1 – 3pm there will be a session on ‘Using Your Compost to ‘Grow Your Own’ in a Small Space’ run by local gardening expert Sandra Geere.
