Tourists visiting Bali around June and July can consider themselves lucky. The provincial government of Bali holds a a month-long cultural expo. Pesta Kesenian Bali, or Bali Arts Festival, is a grand event celebrating Balinese culture. It’s a much-anticipated event held every year at Denpasar. Its main mission is to preserve Balinese cultural values as well as to promote them. Either for tourists as well as for young generations. There will be parades, musical shows, dance performances, and many more sub-activities.
The other exciting festival in June is Mekare-Kare, famously known as Perang Pandan. It is an offering ceremony that is for paying tribute to Indra or God of war and the ancestors of the Tenganan village. The residents will gather in the middle of the village, drink palm wine, and the pandan war begins which is marked by rubbing thorny pandanus on the opponent’s body.
Apart from this art and culture festival, in June there will be an annual event of Balinese food called Ubud Food Festival. Ubud Food Festival is a three-day cross-cultural culinary adventure with Indonesian food as the star. Showcasing Indonesia’s diverse cuisine, innovative chefs and extraordinary local produce has been at the heart of every Ubud Food Festival.
What inspires you every day?
Everything. I keep my mind open to inspiration from my surroundings: all things sensory, from what I taste, feel, see, smell and hear. I’m like a sponge, I absorb and apply.
What are the signature dishes that you created for Hanging Gardens of Bali?
Flaming wagyu, 72 degrees roasted lamb rack, Nasi goreng satu Juta aka “the one million Indonesian fried rice”. Must-try all when visiting Hanging Gardens of Bali.
If your menu was a story book, what kind of story would it be telling?
A story of culture, and nouvelle cuisine.
What’s your personal favorite dish on the menu?
Flaming wagyu, 72 degrees roasted lamb rack and 42 degrees confit of salmon.
What do you love most about working with Hanging Gardens of Bali?
Freedom. My team inspires me to create something out of the box. And of course, who doesn’t want to work in such a beautiful property like Hanging Gardens Of Bali.
Describe Bali in one word: A stage.
INGREDIENTS A
30 gr button mushroom
30 gr grouper fish
30 gr ripe tomato
5 gr scallion
150 gr giant prawn
INGREDIENTS
5 gr coriander leaves
20 gr curry paste
2 gr lemongrass
250 ml chicken broth
50 ml coconut milk
CURRY PASTE
80 gr tomato
10 gr shallot
10 gr onion
3 gr garlic
2 gr ginger
2 gr turmeric
1 gr cumin
5 gr oil
3 gr curry powder
1 gr coriander leaf
15 ml water
CURRY PASTE METHOD
- Heat the cumin seeds with oil until the cumin seeds pop up and add the chopped tomatoes, cook until the tomatoes are cooked and oil comes out.
- Add the remaining ingredients except water and cook until all the ingredients are cooked, add water and reduce until the mixture turns into a paste, cool then blend with a blender until smooth.
- Mix the curry paste and chicken stock in a saucepan and heat until it boils, add the lemongrass and lime leaves, then season with salt, pepper and a little mushroom broth.
- Reduce until 1/2 of the liquid remains, then add all ingredients A and cook for a maximum of 4 minutes until giant prawns ripe. Add coconut milk and coriander leaves. Cook 1 min and plating.
