Hanging Gardens International is excited to announce that as of April 2023, Nandini Jungle Resort and Spa will rebrand under the Hanging Gardens International flag. As part of the Hanging Gardens International branding strategy, the resort name will change from Nandini Jungle Resort and Spa to “Nandini Jungle by Hanging Gardens” ™.

The change of name will consolidate the symmetry between our other Hanging Gardens International properties and emphasize the strength of Hanging Gardens International’s (HGI™) marketing capabilities, our growth domestically and internationally, as well as our commitment to providing a “once-in-a-lifetime experience” as our brand’s inherent identity.

What this means for all our clients and guests is that it is business as usual but with an increased brand uniqueness as well as being identified with a well-respected and internationally known luxury brand. Having our corporate brand integrated into the new name of “Nandini Jungle by Hanging Gardens”, we are conveying our commitment to providing a truly unique Balinese experience to our guests.

As a first point of contact with our brand, the new website www.nandinibali.com is designed to provide a smooth and effortless introduction to our identity.

Masonry Heritage Lounge is a new lunch spot at Nandini Jungle by Hanging Gardens that delivers authentic dishes from the Island of God, Nasi Campur. Step into the Masonry Heritage lounge, your eyes will be impressed by dozens of Balinese heritage pictures in the 30’s era overlooking the verdant rice field. Enjoy the selection of the authentic Balinese cuisine at its best and choose your favorite one!

INDIAN THALI

Indian thali, is one of delicious way to indulge in indian cuisine where you have a variety of Indian dishes in one platter. Indian Thali by Nandini Jungle by Hanging Gardens consist of Basmati Rice, Paneer Masalla, Alo Masalla, Dhal Thadka, Green Vegetable Curry, Chana Masalla, Dhal Curry, Roti Paratha, and Chutney. Let your tounge take a culinary journey.

Tourists visiting Bali around June and July can consider themselves lucky. The provincial government of Bali holds a one-month-long cultural expo. Pesta Kesenian Bali, or Bali Arts Festival, is a grand event celebrating Balinese culture. It’s a much-anticipated event held every year at Denpasar. Its main mission is to preserve Balinese cultural values as well as to promote them. Either for tourists as well as for young generations. There will be parades, musical shows, dance performances, and many more sub-activities.

The other exciting festival in June is Mekare-Kare, famously known as Perang Pandan. It is an offering ceremony that is for paying tribute to Indra or God of war and the ancestors of the Tenganan village. The residents will gather in the middle of the village, drink palm wine, and the pandan war begins which is marked by rubbing thorny pandanus on the opponent’s body.

THE BALI’S STORY

Apart from art and culture festival, in June there will be an annual event of Balinese food call Ubud Food Festival. Ubud Food Festival is a three-day cross-cultural culinary adventure with Indonesian food as the star. Showcasing Indonesia’s diverse cuisine, innovative chefs and extraordinary local produce have been at the heart of every Ubud Food Festival.

500 gr duck

100 gr balinese spices

50 gr tamarind

5 gr lemongrass

5 gr palm sugar

2 pcs bayleaf

2 pcs kefir lime

4 gr bread crumbs

50gr greeted roast

5gr fried shallot

5gr fried garlic

COOKING METHOD

- Cut the whole duck into half marinate with salt pepper, tamarind. Keep it rest for around 25 minutes.

- And then marinate the duck with bumbu bali, palm sugar, kaffir lime, crushed lemongrass, and bayleaf. Massage the duck to make the spice come in side and tender.

- Then wrap it in banana leaf, stuff it in the bamboo and grill for 5 hours or until it is perfectly cooked.

METHOD VEGETABLE

- Boil the long bean, and cut it into small size. Mix it with bumbu bali, roasted coconut, fried shallot, garlic, and chili seasoning with salt and pepper.

NASI JINGGO SATU JUTA

Nasi Jinggo is Balinese authentic ready – to – eat street food which is very popular since the 80s. Chef Gustu, brings this concept by his magical hands turning this traditional food into a five star luxury dish. “Nasi Jinggo Satu Juta” the one and only ultimate Nasi Jinggo in Bali by Nandini includes of aromatic steam rice wrapped in banana leaves, peanut crackers, vegetables pickle, sambal lobster, ayam panggang madu, beef and calamari satay. The finished rice is served together with grilled pork ribs with peanut soy sauce, pan seared tuna with kecombrang salsa, pepes ikan kemangi.
