Every culture and religion in the world has its own way to define and celebrate the coming of the New Year. While the Chinese celebrate with drums and cymbals, the Muslims celebrate the first of Muharram, and the world, in general, celebrates the first of January with fireworks and parties, the Hindus of Bali welcome the New Year with the ritual of Nyepi. For, contrary to other cultures that celebrate New Year with vivacious and loud festivities, the pinnacle of Balinese New Year is a day of complete silence.
For others, a chance for Mother Nature to ‘reboot’ herself after 364 days of bearing human activity. No lights are turned on at night – total darkness and seclusion go along with this new moon island-wide – for 24 hours straight until 6am the following day.
Hence the name Nyepi, meaning “to keep silent” in the local language a day fully dedicated to connecting oneself more closely with God (Hyang Widi Wasa) through prayers and at the same time as a day of self-introspection to decide on values, such as humanity, love, patience, kindness, and others, that should be kept forever.
A culinary journey through the ingredients, the flavors and the seasons of Bali. Three Elements offers an à la carte selection of appetizers, entrées and desserts as well as two unique tasting menus with optional wine pairing using the highest quality products and impeccable technique to create a modern Indonesian cuisine. Chef Ridwan Hakim, the Corporate Executive Chef of Hanging Gardens International has dedicated himself to the progressive culinary masterpieces that allow him to follow his tremendous imagination to bring the classic dishes to the next level and reflect the freshest of ingredients, and presentation.
INGREDIENTS
250 gr US beef ribs
10 gr potato
15 gr zucchini
5 gr sprout
5 gr shallot
20 gr carrot
5 gr red sorrel
4 gr bread crumbs
SAUCE
400 ml beef stock
20 gr kluwek
10 gr candle nut
10 gr roasted nut
10 gr roasted turmeric
10 gr lesser galangal
25 gr garlic
30 gr onion
10 gr galangal
10 gr ginger
- Trim excess fat and silver skin on the top of the short ribs, and brine it for 4 hours in brining liquid.
- Char the short ribs on charcoal grill for 4 minutes and let it cool down, vacuum pack the short ribs and cook in sous vide at 56°C for 48 hours. Open the vacuum pack, portion the short ribs into 150 gr (bone out) rectangular shape and sear quickly in skillet for 2 minutes.
SAUCE METHOD
- On the sauce pan sauté all ingredients to make a sauce until it softened, then add beef stock and reduce by half, add demi-glace powder and cook for another 15 minutes in simmer mode, pour into food processor and blend it, add beef stock to adjust the thickness if necessary.

Nasi Goreng has been ranked as one of the world’s most delicious dishes. In honor of this, our chef has elaborated the ultimate fried rice dish. Made from carefully selected single crop organic rice, this extravagant dish includes fresh scallops and salted golden egg yolk mayo. The chef fries each ingredient separately in a smoking hot wok creating “the breath of the wok” delicately seasoning to create an indescribable “umami” flavor. The finished rice is served with baked lobster, pork ribs, Balinese duck curry, sambal udang, red snapper sambal matah and sate ayam.
