Everyone my age remembers the perpetual stoner and super slacker Jeff Spicoli from the iconic movie Fast Times of Ridgemont High straight out of the early eighties. Spicoli lived for skipping school and surfing big SoCal waves. He was famous for always being extremely high and his ruckus bouts with the no nonsense teacher Mr. Hand; a staunch anti-marijuana advocate and total bummer. Far less well known was the love Spicoli had for his mom and his mom's old school banana bread and bagels of course! Made just as Mrs. Spicoli made it back in the day this American classic is perfectly sweet, super moist, and full of complex banana flavor. As well as a good dose of cannabis! For me it is the best way to use over-ripe bananas.
Bananas did not arrive in the United States until the 1870's and it took until the 1930's before banana bread recipes became popular throughout the colonies and plantations. A healthy source of potassium, iron, magnesium, niacin, riboflavin, B6, vitamin C, fiber and energy, the banana is a nutritional powerhouse, minus the fats and cholesterol. All these vitamins and minerals help the banana contribute to a healthy body and mind. Bananas have also been found to contain Limonene and Eugenol; two powerful antioxidant rich terpenes found in other plants including cannabis. With legalization rapidly sweeping the United States the wall of stigma surrounding cannabis is slowly fading away. More and more people can finally use those over-ripe bananas to make this dank cannabis banana bread.

From the cannabis pantry:
Cannabis butter
cannabis sugar
cannabis vanilla
Chef’s strain: cali orange
chef’s strain: Gelato 33
PROVISIONS
1 cup chopped walnuts
1 cup cultured sour cream
½ cup salted creamery butter
½ cup cannabis butter (made in the mb2e)
1 ¾ cup pure cane sugar
¼ cup cannabis sugar (made in the mb2e)
4 pasture raised farm eggs, beaten
2 cups mashed organic
banana pulp
1 tsp cannabis-infused pure vanilla extract (made in the mb2e)
3 cups ap flour
2 tsp baking soda
2 tsp jacobsen kosher salt
A hefty pinch each of cinnamon
Allspice
Nutmeg and ground clove 1
tbsp fresh grated ginger
EQUIPMENT
Electric mixer, rasp, 2 standard loaf pans, large mixing bowl, whisk, chef's knife, cutting board
DIRECTIONS
Preheat the oven to 350°, grease and flour the loaf pans. Cream the butters and the sugars.
Add the eggs, banana pulp, sour cream, vanilla, grated ginger, and the chopped nuts.
In a large stainless bowl mix the flour, salt, dry spices and the baking soda.
Add the creamed banana mixture to the bowl of dry ingredients.
Gently fold the wet and dry ingredients together being careful not to over mix.
Pour the mixture into your 2 desired greased and floured loaf pans.
Bake at 350° for 55 minutes on the middle rack.
Test doneness with a toothpick inserted into the center, comes out clean when done.
Cool for 15 minutes.
Enjoy when still warm with maple whipped creamery butter or cannabis butter
