2020 has been a year that we all will remember in the years to come. COVID-19 affected many families and businesses that nobody could have expected. The real estate market saw a flood of activity across the nation and here in Northern Michigan. After the lock down ended in June, we saw a flood of homes enter our market and rapid sales. As we enter a new season, home inventories have now shrunk to the lowest levels we have seen in some time.

Erika Walls, Associate Broker Erika Walls joins Harbor Sotheby’s International Realty with over twenty years of real estate industry experience. She took a short break from real estate in 2014 to acquire a few manufacturing facilities in Western Michigan, together with her husband. Her primary focus was overseeing business development. Through Erika’s hard work and dedicated team, she increased sales with several existing and new customers by an average of over thirty-four percent annually. Through the team’s diligent work, the company quickly became one of Michigan’s Top 50 Companies to watch. Erika is professional, genuine, diligent and very responsive to her client’s needs. She demonstrated her passion for assisting clients in the real estate industry during her eleven-year tenure as a real estate paralegal with Warner, Norcross & Judd, LLP. Erika’s keen aptitude stemming from her sincere interest, knowledge, experience and strong attention to detail won her numerous letters of client satisfaction and partnership approval. Erika is highly experienced in condominium development and acquisitions and mergers. She is thrilled to be reentering the real estate industry as an Associate Broker and being an advocate for her client’s; assisting them in making their dreams a reality. Erika maintains an active involvement in several community service organizations. Currently, she serves as Vice President of the Northwest Michigan Industrial Association. Erika studied Business Management at Grand Rapids Community College and Davenport University. ...OF THE EXCEPTIONAL Parker Marshall, Sales Associate Parker Marshall grew up in Grosse Pointe and Harbor Springs. Every summer his parents rented a house in Harbor Springs until they eventually built a home on Lake Michigan. The exposure to Grosse Pointe’s varying styles of architectural design left a profound impact on Parker’s appreciation for the aesthetics of real estate at an early age.

Parker attended high school at Interlochen, where he fell in love with theater and Shakespeare. After high school, he graduated from Sarah Lawrence College in New York with a concentration in filmmaking and film history and spent two years abroad in Germany. After he came back, he spent a year in Petoskey until 2012, when he moved to Los Angeles. In Los Angeles, he eventually landed at the James G. Elliott Company as a Sales Associate selling advertising space in major American magazines. From there he tried his hand in tech startups, working as a marketing manager, where he utilized his skills in video, social media, and marketing. While in Los Angeles, Parker lived in Mount Washington, on a hillside house where his beloved bougainvilleas overflowed with color. He also lived in the Arts District in Downtown Los Angeles where he witnessed the transformation of how real estate developers turned an industrial warehouse zone into a hip well-to-do area for working professionals. Here he gained an appreciation for product development, beautiful marketing, brand identity, and design. This past year, Parker worked as the director of new business development for three companies in Los Angeles, before eventually moving back home to be closer to family. In September he joined the Harbor Sotheby’s International Realty team in Harbor Springs. He views this as the perfect career to utilize the talents he acquired over the past decade. He is a one man video production studio, and can edit video on a professional level. His background in sales allows him to negotiate and communicate, as well as to stay on top of the ball, and his experience in marketing will give his listings an edge to effectively reach consumers. Parker is the son of the plein air painter Heidi Marshall, who was former creative director of Young & Rubicam and Saatchi & Saatchi. His step father is Tom Bailey, former director of the Little Traverse Conservancy. His step brother, John Bailey, is the owner of the local Hello Jane Farms. He has a Goddaughter whom he loves dearly in Los Angeles. Parker is highly athletic and teaches adult dance classes locally. In the summertime, he sails and swims. He studies early modern English and Norwegian, and plans to tour Norway’s north Atlantic coast next summer. He is a self professed coffee snob, and you can typically find him in a coffee shop getting buzzed and working on marketing. Spotlight Artist Connie Landis

Connie Landis is a year-round resident of Petoskey. After raising her four children in the Chicagoland area, she followed her passion and moved “Up North.� Since childhood, Connie has been coming to her family’s home on Lake Charlevoix where her mother, artist Martha Landis, permanently moved almost 40 years ago. She was raised in an art-appreciative home and enjoyed the arts through classes during her school years and college at DePauw University. Working in oils for the past 25 years, Connie paints interior scenes, still life and the figure--particularly strong, female figures. Her work exhibits bold brushstrokes and fluid motion. She paints quickly, believing there is life in each stroke, which, in turn, brings life to the painting.

Beauty & Strength Having been raised by a strong woman, and raising two daughters herself, Connie loves conveying the beauty and strength found in the female form. Her work exhibits bold brush strokes, confidence, and fluid motion, as she prefers to paint fast to capture the moment and emotion exuded by her subject. “I focus on the core of the body, where I believe the heart and soul reside. Emotions are energy in motion. I hope to create a touchstone for the viewer by feeling the energy in each figure. It is exhilarating to come in with a big, juicy stroke of color that works without touching it again. The brushstrokes themselves help to tell the story of the subject.” Crooked Tree Art Center in Petoskey is where Connie enjoys volunteer work and workshops. “We are so blessed to have such a rich, diverse arts community right here in Northern Michigan. CTAC is sophisticated, but warm with a small town charm. Place bread in single layer in large, flat dish (9” x 13” pan). Pour milk mixture over bread, turn once, cover and refrigerate overnight. -To cook, preheat oven to 400 degrees. Pour melted butter evenly on cookie sheet. Arrange soaked bread slices in a single layer in pan. Sprinkle with walnuts. Bake until golden, 15 to 20 minutes. -Serve with real maple syrup and fresh raspberries. Serves 4-8

QUARK SPATZLE: aka GERMAN EGG NOODLE MAC & CHEESE ~ Parker Marshall “ I lived in Germany for two years, and would always order this alongside beef goulash. This posh recipe comes from the cook book East of Paris which features some of the best dishes of Austrian Cuisine. Seems like it would go perfect with the freezing weather. I’ve impressed many a date with this one.” 1 cup quark cheese (see tips, below) 4 extra-large eggs 3 large egg yolks 2 cups all-purpose flour 1 teaspoon fine sea salt 1/4 teaspoon freshly grated nutmeg Freshly ground white pepper 6 tablespoons unsalted butter 1 cup chopped onion Fine sea salt and freshly ground black pepper 2 garlic cloves, chopped 1/2 nutmeg, freshly grated Sea salt and freshly ground white pepper 1/2 pound Alpine Gruyère-style cheese, such as Hoch Ybrig or Gruyère (see Note), grated 1 cup beef stock or low-sodium canned beef broth 3 shallots, thinly sliced, for garnish 2 tablespoons chopped fresh chives, for garnish -Prepare the spätzle: Bring a large pot of water to a boil and salt it until it tastes like sea water (about 2 teaspoons per quart). Whisk the quark, eggs, and yolks together in a large bowl. Use a rubber spatula to stir in the flour until smooth. Season with the salt, nutmeg, and white pepper. -Using half of the spätzle dough at a time and working quickly, push the dough through the holes of a colander (or spätzle maker) into the boiling water. Stir the spätzle and cook until the water returns to a simmer, about 1 minute. Then, using a skimmer or a large slotted spoon, transfer the spätzle to another colander. Run cold water over the spätzle to stop them from cooking further. Set that batch of spätzle aside. When the water returns to a boil, make the rest of the spätzle, repeating the procedure. -Heat a large cast-iron skillet over medium heat. Add 3 tablespoons of the butter and then the onions. Season with salt and pepper, and cook, stirring occasionally, until soft and light brown, about 15 minutes. Add the garlic and cook until tender, another 2 minutes. Raise the heat to high and add the spätzle. Fry, stirring frequently, until the spätzle begin to turn golden, about 10 minutes. Season with the nutmeg, salt, and pepper. -Add the cheese and fry, stirring, until it begins to brown, about 10 minutes. Add 1/2 cup of the beef stock and cook, stirring often, until it is absorbed. Add more stock until a thick, soupy consistency is achieved. -Meanwhile, melt the remaining 3 tablespoons butter in a small saucepan over medium-high heat. Add the shallots, season with salt and pepper, and fry until they are brown and slightly crisp. -Serve immediately, garnished with the fried shallots and chives. Note: Hoch Ybrig is made in Zurich from cow’s milk. It is a buttery, nutty, pungent cheese, similar in flavor to Gruyère. It is available at specialty cheese stores.

Brown sausage add in broth, diced spinach, beans, diced tomatoes with chilies, garlic simmer for 15 minutes. Add in diced Italian bread, as desired. Top with Mozzarella cheese. Once cheese is melted, serve and enjoy.

4 cups three cheese tortellini 2 pounds diced boneless/skinless chicken breast 2 cups diced onion 3 tablespoons olive oil 4 teaspoon minced garlic 2 - 10.5 oz. cans of cream of mushroom soup ¾ cup half and half 1 tablespoon Italian seasoning ½ cup grated parmesan cheese 1 tablespoon lemon juice 1 pound fresh sliced mushrooms ¼ cup butter 1 pound fresh baby spinach 3 cups cherry tomatoes cut in half 8 oz. Mozzarella cheese. 1 cup cooked bacon crumbled

4 medium tart cooking apples, peeled and sliced (4 cups) ¾ cup packed brown sugar ½ cup all-purpose flour 1/3 cup quick-cooking or old-fashioned oats 1/2 cup butter, softened ¾ teaspoon ground cinnamon ¾ teaspoon ground nutmeg

Preheat oven to 400° Cook tortellini according to directions on package. Place in a large greased casserole dish. In a medium bowl combine cream of mushroom soup, half and half, Italian seasoning, parmesan cheese and lemon juice. Set bowl aside. Preheat Large Skillet with olive oil. Add diced chicken, onions and garlic. Cook until chicken is no longer pink. Drain liquid off. Add butter and fresh mushrooms and cook covered until mushrooms are done. Add spinach and cook until spinach is done. Drain liquid off. Add sauce mixture and heat until sauce starts to thicken. Add cherry tomatoes and pour mixture over tortellini. Top with mozzarella cheese and bacon. Bake 20 minutes in oven or until cheese is melted and starting to brown.

BAKED ACORN SQUASH WITH BROWN SUGAR & BUTTER ~ Chris Etienne “This is one of our favorite comfort food side dishes. We also fill the squash with sweet peas to add to the flavor and presentation. Delish! Goes great with grilled fish or meat.” 1 acorn squash, cut in 1/2 2 tablespoons brown sugar 2 tablespoons butter, softened 2 tablespoons maple syrup Salt Freshly ground black pepper Preheat oven to 400 degrees Scoop the seeds and stringy pulp out of the squash cavities and discard. In a small mixing bowl, combine the brown sugar, butter, syrup and salt and pepper, to taste. Rub the squash cavities and cut sides of the squash with the butter mixture and place them on a baking sheet, cut side up. Bake in the preheated oven for about 1 hour until the squash is tender when pierced with a fork. When the squash is done baking cut it in half and then into quarters. The serving size is 1/4th of the squash.

HERB CHICKEN STEW ~ Brad Rellinger “The dish usually comes out right about the time the weather changes for our family. The pepper parmesan really makes the dish, and if you can do bread bowls it’s a home run. The best part of the pepper parmesan bread is picking off garlic cloves on the outer crust. Bon appetit 2 cups all-purpose flour 1 tablespoon Paprika 2/3 boneless/skinless chicken 1/2” diced Canola oil, to saute Salt & Black Pepper 2 Onions, sliced 2 large carrots, peeled sliced 3 large potatoes, washed, squared 1/2 diced 1 tablespoon thyme 2 tablespoons dried basil 1 tablespoon oregano 1 tablespoon ginger powder 1 tablespoon coarse ground fennel 2 tablespoons soy sauce 1 tablespoon garlic juice 1 quart chicken stock In a bowl, mix together the flour and paprika and dredge the chicken in the flour. Shake off excess flour. In a stock pot or dutch oven on high heat, coat with canola oil and brown the chicken. Season with salt and pepper and remove chicken. In the same pot, brown the onions, carrots and celery, season again salt and pepper. Add the potatoes, thyme, basil, oregano, ginger, garlic, fennel, soy, and stock. Bring to simmer. Return the chicken to the pan. Cook until chicken is cooked, potatoes are tender and stock is reduced 20%, about 30-40 min. Serve with pepper parmesan bread, or bread bowls from Crooked Tree BreadWorks, and top with fresh jalapeno (optional)

Heat oven to 375°F. Grease bottom and sides of 8-inch square pan. (I use butter or coconut oil). Spread apples in baking dish. In a medium bowl, using a pastry blender, combine remaining ingredients until crumbly. Sprinkle over apples. Bake about 30 minutes or until topping is golden brown and apples are tender. Serve warm and top with whipped cream or vanilla ice cream Sometimes I will use a 9”x13” pan, add a few extra apples and double the topping ingredients.

LEBERKNODELSUPPE (LIVER DUMPLING SOUP) ~ Andy Stillings “A favorite dish I discovered while coaching alpine ski racers in Austria is Leberknödelsuppe (Liver dumpling soup). This soup was the perfect way to warm up and replenish after hours on the slopes. Liver is a great protein source making this recipe perfect for any ski enthusiast!” 1 lb. beef liver 3 bread rolls 1 cup whole milk (lukewarm) 1 onion 1/3 cup parsley half pound of bacon (diced) ½ teaspoon dried marjoram 5 tablespoons breadcrumbs 2 eggs 64 oz beef stock salt pepper parsley (for serving) Cube bread rolls and add to a bowl. Add lukewarm milk and knead by hand. Let soak until the rolls are soft Peel and finely dice onion and mince parsley. Cut liver into smaller pieces and transfer to a food processor. Add diced bacon and mix until smooth Add liver-bacon mixture, diced onion, minced parsley, dried marjoram, breadcrumbs, eggs, and soaked bread rolls to a bowl and mix until smooth. Season with salt and pepper In a large pot, bring beef stock to a boil. Form quenelles from dumpling mixture and add to beef stock. Reduce heat, as the dumpling should not be boiled. Let simmer for approx. 25 min. Serve liver dumplings in the beef stock and garnish with fresh parsley. Enjoy!

3-INGREDIENT FLOURLESS CHOCOLATE CAKE~ Kristin McDonald (A decadent, gluten-free flourless chocolate cake recipe with no added sugar necessary) 8 large eggs, cold 1 lb. dark, semisweet or bittersweet chocolate, coarsely chopped 2 sticks unsalted butter, cut into 16 pieces optional toppings: powdered sugar and/or berries -Adjust an oven rack to the lower-middle position and heat the oven to 325°F. Line the bottom of an 8-inch springform pan with parchment paper or waxed paper and grease the sides of the pan. (Be sure to grease the sides really well!) Wrap the outside of the pan with 2 sheets of heavy-duty aluminum foil and set it in a large roasting pan, or any pan that’s larger than the springform. Bring a kettle or pot of water to boil. -In a stand mixer using the whisk attachment, beat the eggs at high speed until the volume doubles. This usually takes about 5 minutes. -Meanwhile, melt the chocolate and butter together. You can either do this in a double boiler on the stove (by placing the chocolate and butter in a large heatproof bowl, set over a pan of almost-simmering water, and stirring until melted and smooth). Or you can do this in the microwave (by heating the chocolate and butter in a microwave-safe bowl in 30-second intervals, stirring in between, until the chocolate and butter are melted and smooth). Then fold about a third of the beaten eggs into the chocolate mixture using a large rubber spatula until only a few streaks of egg are visible. Fold in half of the remaining egg foam, and then the last half of the foam, until the mixture is totally homogenous. -Scrape the batter into the prepared springform pan and smooth the surface with a rubber spatula. Place the roasting pan on the oven rack and VERY carefully pour in enough boiling water to come about halfway up the sides of the springform pan. Bake until the cake has risen slightly, the edges are just beginning to set, a thinglazed crust (like a brownie) has formed on the surface, and an instant-read thermometer inserted halfway into the center reads 140° F, 22-25 minutes. Remove the springform pan from the water bath and set on a wire rack; cool to room temperature. Cover and refrigerate until cool. -About 30 minutes prior to serving, carefully remove the sides of the springform pan, invert the cake onto a sheet of waxed paper, peel off the parchment paper, and reinvert the cake onto a serving platter. If desired, lightly dust the cake with powdered sugar and top with berries. To slice, use a sharp, thin-bladed knife, dipping the knife into a pitcher of hot water and wiping the blade before each cut.
