N
o matter how an animal companion enters your life - young or old, healthy or hurting - new pet parents rarely contemplate the time when that same bundle of fur, feathers, or fins will depart. As with our human companions, there’s typically an illness, accident, or advanced age that catches us off guard, unprepared to deal with the end-of-life choices that we humans accept when we elect to share our lives and our love with a pet. Many of us have made frantic calls to our veterinarian’s office, or to a 24-hour emergency clinic, when a furry family member’s health takes a turn for the worse. If we’ve planned ahead - or if we’re just plain lucky - the vet’s staff may be able arrange a time to euthanize the pet in their office, then arrange for cremation or other disposition of the pet’s remains. But what if the vet’s office is booked solid? Or everyone else is ringing in the new year? Or the trip to the vet has been a lifelong source of panic for pet and human alike? Peaceful Pet Passage, based in Mechanicsburg, offers an alternative to traditional death-care options for our companion animals. Like several of the other enterprises that have joined the 25acre Golden Lake campus, founder and owner Rob Lauver has added a variety of services to address pet and human needs since the pet camp’s opening in 1987. In fact, the original boarding service was phased out during 201217, as he added Peaceful Pet Passage to his animal care portfolio to provide in-home euthanasia, pet cremation, and pet burial services. “There comes a time, for most of us, when we need to say goodbye to our loyal companions. They have lived a long life, and now it’s our responsibility to let them pass peacefully and pain-free,” Lauver explained. “We understand that it’s difficult to let go, and we’ll do our very best to make the transition easier. We can help with pet euthanasia, either in-home or at our facility, when the time is right. Our cremation services are done locally, right here on our property, and we also offer both traditional and green burials.” Peaceful Pet Passage has three veterinarians on staff to provide end-of-life pet services, plus three drivers who transport pet remains for cremation and/or burial services.

“We can handle a maximum of 2,200 pets per year, but there are about 40,000 animals cremated in the Harrisburg-York region annually,” Lauver said. “We never want a single pet to be forgotten, so there is room in the market for additional providers to offer cremation services locally.” An entrepreneur from a young age, he built his first house when he was 17 years old. Lauver worked at Appleton Papers and drove a truck for his father, who was in the recycling business. “My father couldn’t drive past a trash can without wondering whether there was something in there that could be recycled for another useful purpose,” Lauver noted. “Although my dad had always planned to be cremated, he saw what care we took with deceased pets and asked me to arrange a natural burial near the pet cemetery. At his request, I built his casket from simple poplar 6 HARRISBURG MAGAZINE AUGUST 2019
plywood. Many people are surprised to learn that as long as you have a signed death certificate, natural burial is legal by rite in the Commonwealth of Pennsylvania.” “When the time came for his funeral, we handed each guest a Sharpie marker to write notes or messages on the lid of my father’s casket, then we laid him to rest on our property, just as he had requested,” Lauver added. “This is a passion for me. If I couldn’t do this, I’m not sure what I’d be doing.” Connected only by the loss of an animal companion, Lauver’s clients are very loyal. “Daisy, our schnauzer-chihuahua mix, was 18 and one-half years old. I worked from my home office for her entire life, so I could see that her time was coming. She was restless and couldn’t get comfortable, and we had planned to call Peaceful Pet Passage when the time came,” explained Kari Hultman of Lemoyne. “We had not been able to work out the timing
with two of our other pets, Emmie and Rosie, so I called to see how soon one of the vets might be available to make a house call.” “Often pet parents don’t know when it’s their pet’s time until it’s too late. Thankfully, Dr. Carney was available,” she added. Hultman and her wife Nancy Sheets were able to sit with Daisy, their long-lived first puppy, in the comfort of their own home, until Dr. Elizabeth Carney arrived to help Daisy across the Rainbow Bridge. “She and Tom Krepps were very caring throughout the whole process,” Sheets added. “They did not rush us while we said our goodbyes, and we are grateful for their patience.” Hultman’s own parents, Ardie and Swede Hultman of New Cumberland, passed away in March 2017, less than two days apart. “My parents were sick for a long time, and we had actually been mourning with them for two years. It may sound awful to someone who hasn’t been through this, but they could no longer do what they wanted to do. Their personalities had changed, and we found ourselves praying that they might pass in their sleep,” she remembered. “They were both under hospice care. At least dad was able to get up occasionally with his breathing machine. Mom passed first. Dad was able to get out of bed with his breathing machine to say goodbye to her, but during the next day, he was living with one foot in each world. It wasn’t fair to him. We had to let him go.” Despite the trauma of losing both parents in less than 48 hours, Hultman knew that her parents had both suffered as their conditions worsened over the years. Even after 18 years and an initial diagnosis of kidney failure, Daisy’s passage was more of a shock. For Harrisburg residents Kristen Zellner and Kelly Wiant, the decision to ask for help from Peaceful Pet Passage was a given when Sam, Kristen’s first rescue, began to experience health problems. “I started to work at Abrams and Weakley General Store for Animals in 2006. Sammy became the store mascot shortly after I adopted him from Castaway Critters. His likeness is still in the middle of our company logo,” she explained. “He was a pistol – and a fear biter – like the kid in school who misbehaved,” she added. “Sammy enjoyed a rags-to-riches life and gave us the gift of many good laughs. But none of that made it any easier when his health began to fail.” With the onset of seizures, Kristen took him to the vet for extensive testing but did not find a cause. Later, additional bloodwork confirmed cancer, which had metastasized, near his pancreas. Unfortunately, surgery was not an option. “I already knew about the cremation services offered by Peaceful Pet Passage. We knew we
wanted them to help ease his discomfort when the time was right,” Zellner noted, “and we knew that we wanted to celebrate Sammy’s life with some of his favorite people and treats." Now the owner of Abrams and Weakley, Zellner planned a special day for Sammy the following Saturday, inviting friends and family members to join them at home. The “going away” celebration included HaagenDazs ice cream, a bit of cabernet, a tea cake, and a blessing by her wife, the Rev. Kelly Wiant, of Market Square Presbyterian Church in downtown Harrisburg. “Everything they do at Peaceful Pet Passage allows you to believe that your pet is the only one in the world,” Wiant noted. “We respect them and recognize the care they show for these pets and their human families.” “After days of lying on a chair, Sammy got down to meet Dr. Carney and sniffed through her bag,” Zellner concluded. “I can never say enough about the gift that Peaceful Pet Passage gave us. We were allowed to spend our time with him. After so many anxious trips to vets’ offices, he was calm in his own home with the people who loved him.” Their daughter Cora was born a month after Sammy’s passing. The arrival of a healthy infant did not allow the couple much time to grieve. Two years later, they remember both the sadness of death and the birth of new life.

Recommendations for Good Grief The death of a pet can be a devastating loss for surviving members of the human and animal family. Each of the pet parents from the accompnying article offers some suggestions to help others during their time of mourning. With any sort of loss, allow yourself time to feel and to grieve. Don’t rush because he/ she was “just a dog.” Be gentle with yourself and patient with your feelings. Be aware that grief may cause the pain of previous losses to resurface, even if there’s no apparent connection to your pet. Consider some sort of memorial service, or other ritual, to mark the occasion. Feel free to share news of the pet’s passing with friends and family. Many pets have significant fan clubs with photos to post. Encourage others to share stories of your special fur baby. Surround yourself with others who understand the size of the “hole” that a pet loss may cause. Take care to shower other family members – including other pets – who may grieve in their own unique way. Plan to attend the annual Pet Blessing in October. This event is hosted by Abrams and Weakley and sponsored by Market Square Presbyterian Church. This free Alternative Worship Event is open to the public. Support a pet-centered non-profit organization with your time, talents, and other resources. Consider volunteering at the state or local Humane Society, Castaway Critters, Molly’s Place, Speranza Animal Rescue, PAWS, Furry Friends Rescue, and others in the area.

K
elly Wolf Megonnel's Facebook page is filled with the usual fare: the vivacious blonde sipping fruity drinks at local deck bars with her “girls,” enjoying sun-drenched beach vacations with her husband, and giving shout-outs to her favorite NFL team, the Philadelphia Eagles. But last year, her hundreds of Facebook friends were shocked to see posts featuring something they had never seen before: Kelly's family. Thanks to Ancestry DNA, the petite dynamo with the bright white smile and facial features that have drawn comparisons to Natalie Wood, was able to find out who her father was, after decades of searching. Even more thrilling, Kelly was ecstatic to discover that not only did she have an accomplished father --she had a lookalike brother, a paternal grandmother in Florida, and an uncle in L.A. who was an Emmy Award-winning filmmaker, globe-trotting archeologist, and best-selling author. Kelly, a Middletown native who now lives in Lower Paxton Township and works as an administrative assistant for Dauphin County, was born in 1972 to a young mother. She went through most of her adult life never knowing who her biological father was. When she was 12 or 13, she was heartbroken to learn that her stepdad was not her "real" dad. "When I would go out, I would always look to see, 'Is that my dad?'" She searched crowds for men with her big eyes and tiny upturned nose. She would fantasize about what her biological father looked like and what he did for a living. She lamented the fact that she never had a dad to teach her how to drive, help her with homework, laugh at her sappy Father’s Day cards, or advise her when she hit life’s speed bumps. She assumed her father lived locally. She wasn't looking for child support or even a permanent relationship, she insists; she just wanted to “know.” “I didn’t want to disrupt someone’s life and be rejected,” she said. But she admitted to a stubborn identity crisis. She said she always felt lonely and different growing up, even though she was surrounded by a devoted mother and many other people who loved her. Then, in January of 2018, she decided to purchase an Ancestry DNA test at a post-holiday sale. She admits that it was "far-fetched” to think that she would be able to find her father from a small cardboard box with some Q-tips and sanitary vials. She remembers the day--March 10 --when the test results came back. It was at the end of a hectic slog at work. She ran to her friend Amy's office

to open the results with her. It felt like opening the envelope under the floodlights at the Oscars. Kelly had always assumed she was a GermanItalian-Irish mix, but she soon discovered she was half-European Jewish. She was also 27 percent English and Welsh, 21 percent Germanic Europe, and a fraction of Swedish and Irish. After she opened her test results, Kelly went onto a closed Facebook group called “DNA Detectives,” operated by DNA expert CeCe Moore, who has appeared on the TV news magazine 20-20 and countless other rootstracing TV shows. Kelly posted her story to the Facebook group, saying she did not know how to begin looking for her Jewish side. Through that post, she found a "search angel," a professor at Waterloo University in Ontario, Canada. Jennifer Harris, the search angel/genealogy professor, messaged her privately, detailing a record of success in helping adoptees, lost biological parents and other genealogical searchers. “I took a leap of faith and gave her access to my Ancestry account," Kelly said. Within two days, Kelly had the answer she had longed for. She finally discovered who her long-lost dad was, thanks to her father’s second cousin, who emerged as the genetic link. All along, Kelly’s mom had thought Kelly’s dad’s name was Jeff Adkins, but it was, in fact, a close permutation--Jeff Elkins. The professor had access to records Kelly did not. Through her, Kelly discovered not just her dad, his name, his face, and his story, but that he had died in 2008. She also discovered that her father had won some kind of legal settlement, so he may have a significant sum of money. After learning that fact, she was terrified that her family would think she was a gold-digger, following the money. As a preemptive strike to help ward off that suspicion, the professor suggested that Kelly reach out to her uncle. Kelly did, by Facebook Messenger. He was Steve Elkins, a man of such accomplishment that he has his own Wikipedia page. “For 45 years, I've been trying to locate my biological father," Kelly wrote to her Uncle Steve, via the social media avenue. “My entire life I’ve been missing half of my identity.” She was very clear: “I don’t want anything from anyone, other than to know where I came from and who I really am.” After private messaging her uncle, her knees started shaking when the bubbles on her iPhone screen showed he immediately began writing back. Kelly's mom Wendy saw a picture of Elkins on Wikipedia that the search angel sent, and confirmed the memory. “It was a very surreal experience,” Kelly said. “I was shocked at how much I looked like my dad.” "Even now, I’m shaking and overwhelmed with emotion right now. I’ve waited my entire lifetime for this moment.” One of her assumptions about her life was imploded when she realized she was NOT an only child. She had a brother—Matt Elkins. 12 harrisburg magazine august 2019
When Uncle Steve wrote back, he said Kelly had piqued his curiosity, and he was happy to help her solve the mystery—“if true.” Steve said when Kelly reached out, he and his wife Janet were returning from a vacation. His first thoughts were, "Is this a scam? Is someone after money?" but, he confessed, "I was intrigued." He and Janet called Kelly that night. They thought to themselves, since Kelly's dad had died 10 years before and there was no estate, they figured they had nothing to lose. "We called her up and knew immediately she was a good person," Elkins said. "She seemed lovely." Kelly learned that her father died in 2008 of complications from diabetes –a nugget of medical information she was glad to know. Her father was born and raised in Chicago but spent a year in Harrisburg, assigned to a job in radio production, writing advertising jingles. Kelly sent pictures of herself to her uncle. Elkins said he was amazed at how much her pictures as a toddler looked like his brother as a toddler. Elkins recalled that Kelly's dad had been in Harrisburg in 1972 and had mentioned a major flood--Agnes. That single tidbit validated for him that Kelly’s story was authentic. And some other marks of validation were also undeniable. Uncle Steve has the same mole as Kelly on his upper lip, and a similar mole under his armpit, which took them both aback. Uncle Steve did his own DNA test after Kelly's Facebook message. “It’s been my missing link,” Kelly typed— “wanting to know my dad.” Her messages to her uncle, and his replies, are now treasured keepsakes on her phone. Uncle Steve then sent her pictures of her dad, her brother Matt, and Matt’s mom. She discovered that Matt owns a boutique toffee shop called Heavenly Toffee in Oakland, California. And yes, it’s no surprise: Kelly loves that heavenly toffee. Her uncle’s DNA test came back the week before they decided to arrange a long-overdue meeting. He was a clear DNA match. She joked to him, “Congratulations. You're an uncle!” The newfound family decided to meet in DelRay Beach in Florida because Kelly’s paternal grandmother lives there. She was the grandmom Kelly always wanted and had never met. Now 92, Kelly keeps a photograph of her kindly visage on her phone. Steve said that Kelly’s grandmother greeted the news of Kelly’s existence with the statement, "You live to be 91, you get to see everything!" but added, "At 91, nothing surprises me!" Steve said, "There is such a similarity in her look to my brother when he was younger." Kelly and Matt were dead ringers. "The eyes, the smile are exactly the same," Steve said. Elkins' wife, Janet, said, "Kelly had a lot of courage and tenacity to always strive to find her family. She was the catalyst, and we couldn't be happier. We feel like the fortunate ones." For the reunion, brother Matt, his mom Marilyn, and Uncle Steve came out to the sun and sands of Florida. They all stayed in the same 14 harrisburg magazine august 2019

hotel. The date was May 3, 2018. Kelly even hired a videographer to record the emotional meeting, as they all met outside the hotel in the glaring sunlight, a canopy of palm trees in the background. Kelly and Matt took a picture of themselves together soon after that first heart-warming meeting. They both had the exact same aviator sunglasses on, and the same color blue shirts. The moments leading up to that drumroll moment were high-intensity. Family members all flew into Fort Lauderdale. The suspense was high as they approached their designated meeting point at the hotel. Matt would text to Kelly. “The Uber is ten minutes away.” “The Uber is five minutes away.” It was a heart-pounding moment for both Matt and Kelly. And at that moment of meeting: “I just hugged him,” Kelly said. Before the meeting, they had talked on the phone daily. "It was the best thing ever," Kelly said. "To know there was someone else out there who was like me. It’s beyond what I can describe.” Steve remembers Kelly at that poignant reunion as “like a kid at Christmas.” “We look so much alike—it’s easy to recognize your own face in the mirror,” Matt said. “I looked at her and thought, ‘This would be me with longer hair!’” The newly constituted family unit stayed together for four nights and five days. They rapidly sensed that they liked doing the same things, and they had the same taste in food. When asked what kind of food, Kelly just laughed and said, “We just all like to eat." Another commonality, she said, is their “persistence.” “We argue on principle,” she said. “My mom is very sweet and gentle. She is my best friend. The rest of the family has more of the fight in them….in a good way,” Kelly said. Matt and Kelly both share a love of golf. Matt said he looks more like Kelly than he did his own dad. “We clicked just like that,” Matt said. They often talk for hours at a time on the phone. Kelly posted the tears-inducing reunion –or more accurately, union--on Facebook After those fateful hugs, the family spent their days at the beach. She finally met her grandmother, too, who was then 91. She was “very accepting and loving,” Kelly said. In fact, her grandmother told Kelly she loved her when she left, and Kelly’s heart melted. Since Kelly's maternal grandmom had died, she was overjoyed to have a grandma again. Kel continues to send her flowers and pictures. For Kelly, her brother Matt is 18 years younger than her and still single. He was just featured in Oakland magazine for his online toffee business, which he sells in boutique style grocery stores at httoffee.com. Kelly said her Harrisburg family and friends were "really excited for me.” Despite the joy, several storm clouds poked though the sunlight. Kelly is disappointed that her family lives across the country, though she will see them again in the fall. She is also
profoundly sad that her dad passed away before she got to meet him. She focuses on what she has. The Facebook comments on Kelly's page after the Florida meeting were priceless, filled with many “Wows!” and "Congratulations!" and her favorite--"He is your twin!" One friend wrote, “Twinning.” But not meeting her dad--“That makes me extremely, extremely sad.” She struggled to summarize her grief, still palpable, for someone she never met. “It really hurts.” Her dad would have welcomed her, her new family told her. Steve Elkins said that Kelly's dad--his brother, Jeff -- "was a go-getter, an entrepreneur and stubborn and persistent. Kelly inherited that." Matt always hated being an only child, he said. He always wanted a sibling. Steve said Matt is “over the moon he has a sister.” At 28, Matt loves to see his friends’ jaws drop when he mentions he found a sister he never knew existed. If his brother would still be alive, Steve said he would probably be very accepting...."after an initial period of shock." Brother Matt said Kelly and her dad share similar personality traits. Matt remembers his dad as highly educated and driven, with a gifted entrepreneurial spirit. Their decorating style is also similar. Kelly’s dad’s home is decorated in a style she would have picked, Kelly said. “It’s amazing you can be so much like
somebody you never met,” she said. “It proves the power of how strong genetics are.” For those with a lost family member, Kelly offers this gentle advice: “Do not be fearful of rejection. You have a life now, as it is. So if you find your family, it is just a bonus to the great life you already have. And if it doesn't work out, it’s ok. Nothing is lost.” That is how she prepared herself mentally before she reached out to her uncle, post-DNA test. “I have a husband and family who love me. If I find my dad and he rejects me, it’s not a loss. But if he accepts me, it is a huge gain,” she reminded herself frequently. “I see many reunions on Facebook,” she said. “I see some that are heartbreaking stories where it doesn’t turn out well. My heart breaks for them. I prepared myself for the worst.” “It’s a very emotional experience.” “To finally look in the mirror, I am whole. It’s an unimaginable feeling. I feel whole.” “I feel really fortunate. I found a family that accepted me and loved me.” For the first time ever, she can post pictures of her brother and utter those two words she thought she could never say: "my brother." Although she is still young and healthy, Kelly is starting to think about her heirs. She has no children, and her husband’s siblings don’t have children. “It’s nice to know that someone will still live on after me.” Kelly is so proud of her Uncle Steve. He is an Emmy Award winner for cinematology. He
retired from that endeavor at the top of his game, and then, as if his lifetime accomplishments were not enough, he discovered the Lost City in Honduras. He wrote a book about his discovery, which became a New York Times bestseller. He is still doing archeology to conserve the rain forest and has launched a foundation. For Elkins, his pride in Kelly is returned. "Kelly is self-made. She did really well for herself. She wanted nothing from us." As DNA tests gain popularity, these stories are becoming more common. "It's a real story of the times," Elkins said. But it’s more than just a testament to the power of technology to locate a last family member, and of nature over nurture. It’s about having a family for the first time ever. Though Kelly never had a chance to grow up with her brother, fighting over valuable square inches in the back seat of the car, digging for seashells on the beach, cheering at each other’s ball games, standing awkwardly in the background in prom pictures, or uttering the proverbial lines exchanged so often between sister and brother—“Don’t tell mom,” they are making up for lost time. It all still feels like a fairy tale for Kelly. It is ironic that a man famous for finding a “Lost City” had also found his lost niece. "We are very happy to be related to Kelly. We are very happy to have her in our lives," Steve said. "It's a lovefest. It's remarkable." "That hole in her heart has been filled." 7

Meet Jeannine Peterson The Driving Force Behind Hamilton Health Center
You might not recognize Jeannine Peterson if you met her on the street, but say her name and most folks know she is the driving force behind Hamilton Health Center. It is Peterson who has discovered the secret of success when it comes to making sure the Harrisburg community has access to health care and social services, regardless of health, economic or insurance status. "I learned a long time ago how to recognize a need and find an opportunity to fill that need," says Peterson, President and CEO of Hamilton Health Center. After the organization, which was founded in 1969, had accumulated a $2 million deficit, Peterson, who was serving on the Board of Directors at the time, accepted the board's request to become CEO of the floundering organization. The year was 2000. "I agreed to step in and keep the doors open," says Peterson. "And you know what? I turned the ship around." When Peterson stepped into her new role as President and CEO, she says the appointment was meant to be temporary. A former state deputy health secretary who oversaw drug and alcohol services, mental health, communicable diseases and preventive health, she says she relied on her "passion" for providing people with quality care regardless of their ability to pay to help right the ship and fill in the deficit. For Peterson, her dream of providing quality, community health care really began to take shape in 2006 when she started to envision what Hamilton Health Center would look like with all of the Center's facilities and services under one roof. "I was really excited about my plan. The board believed in my vision," says Peterson. “We really listened to what people said they needed," she says. "'There’s a lack of dental services. There’s a lack of behavioral health help services. There’s a lack of addiction services. . . We heard that from our clients and we heard that from our board. "We were committed to making it happen." After developing a strategic plan and following it, Peterson and her board set out to grow the business. First, they acquired a former printing plant in South Allison Hill. The facility was gutted and transformed into a one-stop shop for medical and dental care and WIC nutrition services. Peterson says listening and learning helped grow Hamilton. “Once people walked inside the facility and saw what we had accomplished they were willing to help. This community is very generous.” The needs of patients quickly evolved into an opportunity for Hamilton to become involved in the latest round of partnerships and new services, something which Peterson attributes to the opioid crisis. Peterson herself launched her career in the field of substance abuse in the 1970s, and her 22 years with the state included service as the Department of Health’s Deputy Secretary for Drugs and Alcohol, so she was well acquainted to what services were needed to combat the crisis. One of the state’s 45 “Centers of Excellence” for treating addiction, Peterson says its expanded case management model now covers men, women and families. Medication-assisted therapy is offered in-house and at Hamilton’s satellite clinic in Perry County. With our satellite clinic located in Perry County it allows patients to access quality health care locally instead of driving 30 or more miles to Harrisburg. “Our goal is to make sure that people trying to recover from addiction get the help they need, they will be able to obtain the necessary medication and meet with their caseworker." But the one thing that really makes Peterson proud is the announcement that a medical practice owned by UPMC Pinnacle will
be transferred to Hamilton. “On Aug. 1, UPMC Pinnacle will transfer ownership of FamilyCare Millersburg in Upper Paxton Township to Hamilton,” says Peterson. “The practice will become Hamilton Family Care at Millersburg and will become Hamilton Health’s seventh location in central Pennsylvania. We are very excited about this latest chapter in our 50 years of serving our community.” What a group of Harrisburg-center doctors and dentists did in 1969, when they founded Hamilton Health in a trailer has transformed into an ever-expanding Federally Qualified Health Center with a budget of over $30 million, and is due, in large part to Peterson’s strategic vision and loyalty to a dream. “Every day our team of compassionate healthcare providers works together to make Hamilton a better place to live by bringing quality care to the area,” says Peterson. “We have remained at the heart and soul of a movement built around one thing: Providing people with quality care regardless of their ability to pay,” says Peterson. “I am proud to have led the way, and happy that our goals have become reality.”

ummer is flying by, and it seems that every delicious summer fruit and veggie is in season now including peaches. Peaches. The epitome of August and a seasonal marker. Delicious in ice cream and pies, cobbler, and salads, grilled, and yes, even simply eaten over the sink. Here are some recipes that make the best of this delicious fruit.
PEACH SORBET INGREDIENTS • 4 medium peaches, sliced (approx. 3 1/2 cups) • 1 tablespoon raw honey • 1 teaspoon lemon juice • 1/4 cup warm water, as needed INSTRUCTIONS Slice the ripe peaches and remove the pits. Lay out the fresh peach slices on a baking sheet lined with parchment paper. Freeze the peach slices until completely solid, which should take at least 3-4 hours, or overnight. Place the frozen peach slices into the bowl of a food processor or heavy duty blender, along with a little raw honey, and freshly squeezed lemon juice. Blend until smooth. Add a little warm water and press down with a spatula to help the process along. Eat immediately for a softer texture, or transfer into a freezer-safe container and freeze for 3-4 hours or until firm.

PEACH AND GOAT CHEESE BRUSCHETTA INGREDIENTS • 8 slices Italian bread, toasted • 3 ounces goat cheese • 8 slices fresh peach • Small bunch of fresh basil leaves • 1-2 tablespoons good olive oil • Pinch of salt and pepper INSTRUCTIONS Spread goat cheese on toast. Top each with a slice of fresh peach, basil leaves, and a light drizzling of olive oil. Salt and pepper to taste.

PRETTY PEACH JAM INGREDIENTS • 8 medium peaches, peeled and cut into wedges • 1 small unpeeled navel orange, cut into wedges • 2 cans (8 ounces each) crushed pineapple, undrained • 12 cherries (1 can) • 3 tablespoons cherry juice • 2 packages (1-3/4 ounces each) powdered fruit pectin • 10 cups sugar INSTRUCTIONS Rinse thirteen 1-cup plastic containers and lids with boiling water. Dry thoroughly. In a blender or food processor, cover and process fruits and cherry juice in batches until smooth. Transfer to a large stockpot; stir in pectin and bring to a rolling boil over high heat, stirring frequently. Add sugar and return to a rolling boil. Boil 2 minutes, stirring constantly. Remove from heat. Immediately fill all containers to within 1/2 inch of tops. Wipe off top edges of containers. Immediately cover with lids. Let stand at room temperature 24 hours. Jam is now ready to use. Refrigerate up to 3 weeks or freeze up to 1 year. Thaw frozen jam in refrigerator before serving.

PEACH COBBLER INGREDIENTS • 5 peaches, peeled, cored and sliced (about 4 cups) • 3/4 cup granulated sugar • 1/4 teaspoon salt For the batter: • 6 tablespoons butter • 1 cup all-purpose flour • 1 cup granulated sugar • 2 teaspoons baking powder • 1/4 teaspoon salt • 3/4 cup milk • Ground cinnamon INSTRUCTIONS Add the sliced peaches, sugar and salt to a saucepan and stir to combine. Cook on medium heat for just a few minutes, until the sugar is dissolved and helps to bring out juices from the peaches. Remove from heat and set aside. Preheat oven to 350 degrees. Slice butter into pieces and add to a 9x13 inch baking dish. Place the pan in the oven while it preheats, to allow the butter to melt. Once melted, remove the pan from the oven. In a large bowl mix together the flour, sugar, baking powder, and salt. Stir in the milk, just until combined. Pour the mixture into the pan, over the melted butter and smooth it into an even layer. Spoon the peaches and juice (or canned peaches, if using) over the batter. Sprinkle cinnamon generously over the top. Bake at 350 degrees for about 38-40 minutes. Serve warm, with a scoop of ice cream, if desired.

GRILLED PEACHES WITH VANILLA MASCARPONE INGREDIENTS • 2 large ripe fresh peaches, halved and pitted • 2 tablespoons olive oil • 5 teaspoons pure maple syrup, divided • 3 tablespoons vanilla whole-milk Greek yogurt • 1 tablespoon mascarpone cheese, at room temperature • 1 tablespoon small fresh mint leaves INSTRUCTIONS Preheat grill to medium-high (400°F to 450°F). Or heat a grill pan over medium-high. Brush both sides of peach halves with olive oil. Place peach halves on oiled grates, cut side down, and grill, uncovered, until grill marks appear, about 1 minute. Flip peaches, brush 1 teaspoon of the maple syrup on cut side of each peach half, and grill until tender throughout, about 1 more minute. Stir together yogurt, mascarpone, and remaining 1 teaspoon maple syrup in a small bowl. Serve peaches warm or at room temperature, topped with mascarpone mixture and mint.

GRILLED HALIBUT WITH PEACH AND PEPPER SALSA INGREDIENTS For the salsa • 1 1/3 cups coarsely chopped peeled yellow peaches (about 1 pound) • 1 cup chopped red bell pepper (about 1 medium) • 1/3 cup thinly sliced green onions • 1/3 cup chopped fresh arugula • 1/4 cup fresh lemon juice (about 2 lemons) • 4 teaspoons chopped fresh oregano • 1/8 teaspoon salt • 1/2 habanero pepper, seeded and minced • 1 garlic clove, minced For the marinade • 4 teaspoons fresh lemon juice • 4 teaspoons olive oil • 1/2 teaspoon paprika • 1 garlic clove, minced • 4 (6-ounce) skinless halibut fillets • 3/8 teaspoon salt • 3/8 teaspoon freshly ground black pepper INSTRUCTIONS To prepare salsa, combine first 9 ingredients; toss gently. Let stand 30 minutes before serving. Prepare grill to medium-high heat. Combine 4 teaspoons juice, oil, paprika, and 1 garlic clove in a large, shallow glass baking dish, stirring with a whisk. Add fish to juice mixture; turn to coat. Cover and let stand 15 minutes. Remove fish from marinade; discard marinade. Sprinkle fish evenly with 3/8 teaspoon salt and black pepper. Place fish on a grill rack coated with cooking spray; grill 3 minutes on each side or until desired degree of doneness. Serve fish with salsa.

PEACH ICEBOX CAKE INGREDIENTS • 2 (10 3/4-oz.) frozen pound cakes, thawed • 1 (10-oz.) jar peach preserves, divided • 1 quart vanilla ice cream, slightly softened • 1 cup heavy cream • 1/2 teaspoon vanilla extract • 3 tablespoons powdered sugar • 1 cup peeled fresh peach slices INSTRUCTIONS Trim brown crusts from pound cakes using a serrated knife. Discard crusts. Cut each cake into 1/2-inch-thick slices. (You will have 18 to 24 slices.) Line bottom and sides of a 9- x 5-inch loaf pan with plastic wrap, allowing a 4-inch overhang on sides. Place 1 tablespoon of the preserves in a microwavable bowl; chill until ready to use. Arrange 6 to 8 cake slices, side by side, to cover bottom of pan in 1 layer (trimming slices, if needed, to fully cover bottom). Spread 2 cups ice cream over cake layer to edges of pan. Spread half of the remaining preserves (about 1/3 cup) evenly over ice cream layer. Repeat process with 6 to 8 remaining cake slices (trimming if needed), and remaining ice cream and preserves. Arrange last 6 to 8 cake slices over preserves layer. Pull plastic wrap overhang up and tightly over cake. Freeze 8 hours. Beat cream and vanilla extract with an electric mixer on high speed until foamy, 30 seconds. Gradually add powdered sugar, beating until stiff peaks form, 1 to 2 minutes. Remove cake from freezer. Holding the plastic wrap overhang, lift cake from pan; invert onto a platter. (Discard plastic wrap.) Spread whipped cream over cake. Melt reserved 1 tablespoon preserves on HIGH until just melted and smooth, 10 to 15 seconds; mash large lumps with a spoon. Gently stir in peach slices to coat. Spoon mixture over cake; serve immediately. 7

Bartender’s Best By Charlie Wohlrab Labor Day. . .the bittersweet holiday. On one hand, it is a threeday week-end with picnics and barbecues; on the other hand, it is the unofficial end of summer. But one thing is for sure. By the time Labor Day rolls around there is still time for a few summer cocktails before autumn and football season begin. Might I suggest a few cocktails to mark this bittersweet holiday? First, the Passion Fruit Margarita. I was introduced to this drink at a beach bar in the Caribbean. And while I must admit that everything tastes good at a beach bar in the Caribbean I was successful in replicating this fruity drink at home. And I must admit. This cocktail tastes pretty good.
PASSION FRUIT MARGARITA • 2 ounces Passion Fruit Juice • 2 ounces Tequila • ½ ounce Triple Sec Add ingredients to a blender filled with ½ cup crushed ice and blend until smooth. Pour into margarita glasses, (you might as well use them one more time before they spend the winter in storage) and top with a lime slice. Some people like to salt the rim of the glass. I don’t, but if you do, simply rim the glass with a lime wedge and then dip and swirl the glass in a saucer with a thin layer of salt.

A quick word about passion fruit juice- this may be somewhat difficult to find in some locales. I go to a family grocery that caters to the surrounding neighborhood, and I can find it there—sometimes—so when they have it, I buy it to keep a container on hand. Also, my margarita glasses do not spend the entire winter in the cabinet. During those short, dark days of winter I will have the occasional margarita to remind me that summer is in the future. Second, the vodka and tonic. As with many drinks that use gin, you can substitute vodka. My wife prefers vodka, so vodka it is. This is a fine summertime drink with an interesting history. In the early 19th century, the British who lived in India would take a dose of quinine to ward off malaria. quinine is very bitter so they flavored it with sugar, water, and lime to create the “tonic.” To improve compliance, they added gin, which also has an interesting history. Gin was created in Holland in the 17th century and was called “genever,” which is Dutch for Juniper. People were distilling various herbs and spices believed to have medicinal properties, and Juniper was one along with others used to create the genever. During the 30 Years War, the British “discovered” genever and gin was born.

VODKA AND TONIC • 1 and ½ to 2 ounces Vodka • Tonic • Lime Wedge Fill an 8 ounce glass with ice. Squeeze the lime over the ice and drop in the glass. Add some tonic, the gin, and the top with tonic. I like to add the tonic in two parts to get a more uniform cocktail. Two points: First, I always wash my limes or any fruit I will add to a cocktail to remove whatever is on the rind; and second, I always look for a “tonic” that actually contains quinine. However, the amount is so small you would have to drink gallons to ward off malaria, but it is a matter of principle.
