Chipotle Agave Shrimp Tacos Ingredients 1/4 cup olive oil 2# (40ea) Shrimp, medium, peeled/deveined 1/4 jar (4 oz) Chipotle Agave Cooking sauce 12 Corn Tortillas 1/2 # Shredded Cabbage
1/8 cup sour cream 1/8 cup Salsa Verde 1 avocado; diced 4 oz. Cojita Cheese; crumbled
Directions Add olive oil in a sauce pan over medium high heat and add shrimp. Cook 1-2 and simmer until hot (approx. 1-2 minutes). In a mixing bowl combine cabbage, sour cream and salsa to make a S.W. coleslaw. Warm tortillas in a microwave and top each tortilla with coleslaw, shrimp, avocado & cheese. Serve with a lime wedge. Have this meal done in under 15 minutes.
