s I sit here writing this story, a beautiful layer of snow covers the sierras. Look around— we are so graced with beauty every day of the year in the Reno/Tahoe area. According to the staff at Healthy Beginnings Magazine, snow represents that winter has officially begun! This month’s cover is slightly different than usual. Everything about it exudes January. This is what January is supposed to look like in the Sierras; beautiful pines dressed with light fluffy snow. I’ve lived in the Lake Tahoe/Reno area for 13 years and am still left breathless at the first snowfall. New snow means heading up to the mountains. There’s something about winter that makes you want to take in a big breath of fresh mountain air and take a moment to be thankful. We are surrounded by the beauty of another Lake Tahoe winter—the crisp mountain air, the excitement of a new ski season and the prospects of a new year. So cuddle up at night and get out there to enjoy the winter activities during the day. Remember, if you get the urge to eat some snow, go for it, just don’t eat yellow snow!

Dear Readers, Welcome 2009, here we go and it looks like it will be a wonderful and eye opening ride! As one of our writers said this month, “This is an exciting time to be alive.” She is right! I just returned from the 16th Annual World Congress on World AntiAging Medicine and Regenerative Biomedical Technologies Conference that was held in Las Vegas, December 10th -14th. It was an incredible venue; 6,000 physicians and natural health care professionals from around the globe attended this week long educational event. Workshops and lectures were held on topics such as: Innovations in Anti-Aging Medicine, Energy Medicine, Pain Management, Sports Medicine, Human Growth Hormone Replacement Therapy, Iodine Insufficiency and Cancer, Beneficial Vitamins, Rejuvenation through Detoxification to mention just a few. Discussions covered information regarding new advancements in integrating conventional medicine with natural medicine. There were also more than 900 vendors marketing the latest in technological advancements in energy medicine, whole food nutritional products, medicine and nutrition for the skin, body sculpting technology, and spa medicine. Like my good friend said, “It was great being around so many likeminded professionals.” I am going to piggy back on that thought. It was also great knowing that so many health care professionals were interested in looking deeper into the cause of disease rather than just using and or relying on synthetic drugs to band aide health problems. Again, it is my belief that it is up to each one of us to be accountable for our own health. Yes, there are birth defects and hereditary diseases, yet even so, we can make the best out of each situation by feeding our body’s good whole food nutrition, getting some form of exercise and by practicing a positive mental attitude and sometimes pivotal thinking. Going Green How To Get Rid of Unwanted Direct Mail at Home and at The Office

s your mailbox cluttered with junk mail? Have you ever asked yourself how some of these companies even got your mailing address to begin with? Every time you provide your name and address when buying a product you’re signing up to receive direct mail pieces. This occurs when you buy a car or a house, use a shopping card, sign up for a credit card, subscribe to a magazine, buy something from a catalog, give money to a charity, or fill out a product registration form. Once signed up, your name is put into a database for that company. Often companies will rent out their database lists to other businesses for direct marketing. There is a way to cut back the amount of direct mail you receive. By contacting the Direct Marketing Association you can register to have your name removed via the Mail Preference Service. This will take your name off most major catalog list rentals. You can register online or by mail. The Direct Marketing Association also allows you to pick and choose what direct mail pieces you receive. Sometimes it’s nice to not have to go the store to see what is on sale. s winter rolls in, our skin seems to become drier with the drop in temperature. Considering skin is the body’s armor, it is important to protect and enrich the skin to ensure its youth and longevity. With such a variety of products on the market, and in the event that you received more bottles of lotion that you will ever need during this past holiday season, it is important to be aware of the little things: ingredients in moisturizing lotions, the helpful and the harmful.

Petrolatum or Petroleum Jelly This ingredient is very common in hand and body lotions and is an FDA

approved over-the-counter skin protectant, creating a sealing effect on cuts, inhibiting germs from getting through the skin and creating infection. Though it sounds like the perfect answer to painfully chapped skin, beware – petrolatum is often contaminated with impurities linked to cancer and various health concerns.

Mineral Oil Similar to petrolatum, also called paraffin oil, mineral oil is another common ingredient in lotions. It is a by-product in the distillation of petroleum to produce gasoline and other products based from crude oil. It is fairly inexpensive to use

Lanolin Alcohol This ingredient is considered an emollient alcohol, highly refined and rich in skin-softening cholesterol. The alcohol is derived from lanolin, a fatty secretion from sheep’s wool. “You will know you are free when you no longer have to be who you are.” at the Watergate Health Club in Washington, D.C. His reputation as a “magician” quickly spread and he found himself treating celebrities, as well as the Japanese ambassador. He was also invited to the White House to treat President Reagan’s friends and colleagues. Master John’s reputation spread worldwide. He outgrew the health club and began travelling all over the world. Master John assists people in regaining their health and happiness. He emphasizes, “God created man to be healthy and happy, it is a birthright.” Teaching people how to breathe properly is a large part of his treatment. Master John’s passion lies in helping people function normally and happily, not just physically but mentally as well. According to Master John, it takes a minimum of three treatments to rid the body of its imbalances, therefore, this minimum is strongly recommended for every client. From Master John’s own experience he has learned how the body accumulates energy blocks from years of physical and emotional health. He then recommends a follow-up treatment to rebalance and further harmonize the body. In Master John’s brochure you’ll find a section about “healing reactions.” He cautions that after a session, it may feel as if you’re getting worse before you get better. This is simply the body’s reaction to rebalancing. My first two sessions with Master John resulted in an overwhelming sense of emotional release and some sore muscles. I would have been worried, but I was warned of the healing reactions and instead embraced the change from my old body to the new. Master John’s success stories and testimonials are breathtaking. He finds the most difficult part of his work is getting people to believe in what he does. Master John believes people are only educated by what doctors say, and most doctors leave out God’s original design for man, to be healthy, happy, and harmonized. Master John’s practice is very spiritual; however, he is not religious. He believes in unity and following life’s purpose of whole living and true freedom within ourselves. He says mankind has finally realized every being in the universe is made up of energy. Energy is fluctuating daily; nobody’s life is perfectly balanced and harmonized. aster John Miyata, D.S.M. has every reason to refer to his work as “beyond medicine.” He has been practicing Total Healing Energy Treatments for over 30 years. Master John first became interested in natural healing about 40 years ago, before he came to the United States. Living in Korea, where he grew up, he was promoting a book written by Japanese Shiatsu master, Toku Jiro Namikoshi– the founder of all Shiatsu. From this book Master John learned about the human wellness system and it motivated him to begin studying Shiatsu. Shiatsu is the Japanese term for healing people using mostly hands on pressure on specific meridian points throughout the body. There are 365 meridian points in the human body. Master John uses between 100 and 150 meridian points with each client. Meridians are the human body’s original computer system; we are all wired the same. Master John has had intensive correspondence and self-studies in Chinese, Japanese, and Indian healing methods. He incorporates all of this with Chinese Chi Gong and principles from yoga to harmonize and balance the client’s energy. The body can become imbalanced very easily. Stress is the main cause of imbalance in our energy. This imbalance can cause symptoms such as, anxiety, depression, body pains, digestive problems, endurance levels, unknown diseases, and energy loss. Master John’s treatments are extremely effective for these symptoms. Master John first realized the power of his skills while he was working as a contractor for the Environmental Protection Agency. Many of his co-workers experienced constant headaches and body pains. Master John became curious about these pains and began practicing what he had learned on close friends in the office. Before he knew it, he was considered a “magician” by his office mates. He had the ability to cure people by a simple touch, lasting no longer than one or two minutes. After 10 years of working for the EPA, Master John took a job

Brain Fog? Memory Loss? Part III

L

ast month I reviewed several basic causes of brain fog and mentioned that we can help ourselves keep a fresh and youthful brain by taking special nutrients. Everybody strives to stay sharp in both the office workplace and the home environment. We all have lots to remember and we need to keep manufacturing the brain chemicals (neurotransmitters) which keep our flow of thoughts and memories moving at youthful levels. All neurotransmitters deteriorate with aging and stress but replacing neurotransmitter precursors through foods that make brain chemicals, works great; such as the amino acids tryptophan and 5 HTP for serotonin (a natural way to cure depression) and phenylalanine, tyrosine and l-dopa to make norepenephrine (adrenalin) and dopamine (awake and alert brain chemicals) work great. Of course aging in general slows down brain functioning but there are many special supplements that help to sharpen the memory. The most important neurotransmitter for memory is acetylcholine. Acetyl L carnitine (ALCAR), a fatty acid, increases the amount of acetylcholine in the brain needed for learning, memory and improves energy production to prevent brain cell loss. ALCAR allows the brain to work on fats instead of sugar and is great for memory, mood, energy and anti brain aging. All of the choline products help make acetylcholine. Phosphatidylserine, phosphatidylcholine, lecithin and their derivatives help make up our nerve membranes which transport nutrients in and toxins out of the cells and are the raw materials for acetylcholine, the memory neurotransmitter. CDP Choline (cytidine 5-diphosphocholine) is a new entry on the choline scene and readily crosses the

blood brain barrier to improve brain energy and acetylcholine levels. Phosphatidylserine not only increases acetylcholine but also stabilizes blood sugar for great sleep. We can now go another step forward and grow neurons which have been lost to aging, stress and toxicity. Not only can we use ALCAR for memory but we can combine it with Acetyl L Carnitine Arginate to stimulate neuron growth. oloring your hair is perhaps the quickest and most dramatic way to change your look. It is also a good excuse to go out and buy a new wardrobe! However, different coloring methods suit different hair styles, so get some expert advice when deciding which one to choose. Here are some things to consider before you get started:

Skin Tone: Your new hair color should complement your skin tone. Fairskinned people won’t look as good with very dark hair because it draws color out of their skin. Dark, tanned skin won’t look as good when mixed with a one-tone blonde; but four or five blonde, chestnut or honey tones look fabulous. BLONDE: If you want to be blonde, talk the process through with your colorist (or stylist) before you go for it. RED: Red is the ultimate sexy shade, it’s a color that cries out for attention. Hair holds on to red-toned pigments well, so going copper-top can be easy for most people. But be warned - if you are blonde you will usually have to go two or three shades darker than your natural color to achieve a rich red (brunette), and it’s not easy to reverse. BROWN: Brunette is always a safe

choice as it suits nearly every girl in town. Varying the shade with highlights can achieve a huge range of looks. From chocolate brown and bronze shades to honey or dark blonde, combinations of natural tones give incredible shine while darker-pigmented tints add condition to your hair.

for any hair color to be permanent, oxidative (peroxide) dyes must be present. However, there are permanent natural hair coloring products that use natural botanical ingredients and can gently provide beautiful permanent hair color while minimizing exposure to harsh chemical damage; both to you and your hair. Modern, commercial permanent hair coloring products will typically contain these three ingredients in varying amounts: Hydrogen Peroxide is a bleaching and oxidizing agent, detergent and antiseptic. A good natural permanent hair color contains the least amount of peroxide necessary to open the hair cuticle; typically 2-4% by volume, compared to commercial color products that may use 10 times as much. p-Phenylenadiamine (PPD) is the coloring agent. It is an extremely toxic chemical which may cause severe allergic reations in some people. A good natural hair color will use only the minimum amount necessary, as little as 0.08% can be effective. Some commercial hair coloring products may contain up to 6%. Ammonia is a toxic reactive and corrosive chemical widely used in fertilizer, plastics and explosives. Together with peroxide, it is used to open the hair cuticle and remove existing color in preparation for the new color. High quality natural hair coloring products do not need to use ammonia.

Also, a semi-permanent tint will not cover large amounts of grey hair (more than 50%). If a permanent tint is used correctly and has significant amount of natural plant extracts (more than 97%), you will always achieve a beautiful effect.

on’t let the name deceive you – Winter Savory is a perennial flowering plant, available during all seasons, but native to warm temperate regions of southern Europe. In legends, both winter and summer savory belonged to the satyrs, mythological halfman, half-goat. The satyrs lived in meadows of savory, possibly attaining their strong sexual appetite from the herb. The herb was given its Latin name, Satureja meaning “after the Satyrs,” by Roman writer, Pliny. It is thought that the herb possesses several medicinal uses, which include acting as a mild antiseptic, digestive and expectorant. When ingested, it may be a remedy for colic and a cure for flatulence. Winter Savory has also been used to treat nausea, diarrhea, congestion, sore throat and menstrual discomforts. If you are stung by a bee, try rubbing a sprig of winter savory onto the infected area for instant relief. Winter Savory’s more typical uses, though, are for cooking and as a wonderful border plant for an herb garden. It requires six

hours of sun per day in soil that drains well. It produces fragrant, white flowers attractive to bees. In cooking, winter savory partners very well with both beans and meats, often with lighter meats such as chicken or turkey. In addition, it is ideal for flavoring bread mixtures, stuffing and seasoning breadcrumbs. When uncooked, the herb’s flavor is strong, often spicy and peppery, but can lose much of it when cooked for longer periods of time. Combining Winter Savory with other herbs such as bay, basil, parsley, marjoram, oregano, rosemary and thyme only strengthen all flavors and can be used in a multitude of variations. It is also an important component of herbes de Provence, with lavender, thyme, rosemary and basil. Try adding winter savory to simple meat recipes you already use for that extra something, or try one of the following for a whole other dish!

Lazy Gourmet Chicken You will need: 6 chicken thighs, skin on, bone in 4 cloves of garlic 2 tsp. of fresh winter savory (or 1 tsp. dried) Ÿ cup dry, white wine Ÿ cup sweet, red vermouth Juice of ½ lemon ½ tsp. sea salt or more to taste Place all the ingredients, except the chicken, in the blender until well mixed. Place the chicken, skin-up in a shallow pan and pour the blended mixture over top. Cover the pan with a lid or foil and cook at 350 degrees for 30 minutes. Simmer the water, honey and savory in a saucepan for about 10 minutes to make a sauce. Remove the savory springs from the syrup and add the lemon juice and butter. hat is your physical potential? Weekend warriors and professional athletes alike are always pushing their physical limits. H

aving diabetes may be distressing, but learning how to manage diabetes with exercise can help to lessen some of those fears and reservations. However, before starting it pays to get smart so you don’t find yourself having a negative experience or a hypoglycemic reaction. Disturbing as the realization may be, the number of people with diabetes is growing each year with obesity, the number one reported risk factor for developing Type 2 diabetes. On Oct 31, 2008, the Centers for Disease Control and Prevention (CDC) reported that the number of new cases in the US nearly doubled in the last decade. Incident rates increased from 4.8 per 1,000 in 1997 to 9.1 per 1000 in 2007. The benefits of exercise far out-weigh the benefits of not exercising. If you have diabetes those benefits are even more valuable. The benefits are: (a) blood glucose and body weight control, (b) lowered “bad” cholesterol and elevated “good” cholesterol, (c) reduced risk of heart disease, and (d) the improved sense of resilience from an increase in strength, en-

Remember, it is not good to skip meals when you are a diabetic and especially if you are exercising. 4. Do not exercise if your blood glucose level is above 300, or if your fasting blood

Consciousness

& the Problem of the Shadow (part I)

I

n his early twenties Carl Jung had the following dream. “It was night in some unknown place, and I was making slow and painful headway against a mighty wind. Dense fog was flying along everywhere. I had my hands cupped around a tiny light which threatened to go out at any moment. Everything depended upon my keeping this little light alive. Suddenly I had the feeling that something was coming up behind me. I looked back, and saw a gigantic black figure following me. But at the same time I was conscious, in spite of my terror, that I must keep my little light going through night and wind, regardless of all dangers.” This fascinating dream highlights some important characteristics of the psyche. We all have a “little light,” the light of consciousness. Our consciousness is the awareness and understanding that we bring to the world around us, and the world within us. The brighter your light, the more deeply your understanding penetrates and illuminates your world. Like light beams shone into the waters of a lake, our insight may extend just a few inches into the unconscious or a considerable distance further. Regardless of its brightness, Jung believed that our understanding is our greatest treasure. The dream also suggests that consciousness, like life itself, is fragile. Perhaps more so, for it is possible for a human being to live a long life having developed very little consciousness whatsoever. Consciousness should not be confused with intelligence or book learning. A person can be quite knowledgeable–even an expert–on any number of subjects, yet remain remarkably unconscious regarding the underlying forces which motivate his behavior and impact his world. From a Jungian perspective, the avoidance of consciousness is a major component behind most mental illness. Addictive and compulsive behaviors, for example, usually serve as an escape from thoughts or feelings we don’t want to be conscious of. Jung recognized that the dark figure behind him was his own shadow on the swirling mists, brought into being by his little light. In the development of the personality we embrace and identify with some aspects of our nature and reject others. What we choose to integrate becomes part of our persona and ego identity. What we reject becomes part of our shadow. In reality, however, we are never free of our other half, our disowned self. And what we do not come to terms with in our self is projected upon the “screen” of our outer world and relationships. example, if I am lazy but believe myself to be just as hard-working as the next person, then my laziness and the attitudes that support it are denied and disowned. Although it may be apparent to everyone else that I am lazy, my laziness is outside my conscious awareness, and so dwells in the shadow of my unconscious. In my dreams I may encounter a friend of mine who I think is lazy. In the dream he is a symbol of my own laziness. In outer life I may criticize him for his laziness. In fact, I may be acutely sensitive to his sluggard behavior and more annoyed by him than other people are. My strong reaction to his laziness arises from the fact that I am projecting my shadow onto him. There is a part of me that is fed up with my own laziness, but I am unconscious of this. I externalize my anger in much the same way that I project my laziness. I berate my friend instead of turning a more critical eye upon myself. We can project both positive and negative aspects of our disowned self onto other people. For example, when we fall in love we typically project our soul onto our beloved. Our other is irresistible partly because we have projected onto them our own “gold,” the positive attributes of our other half. In our society, men have tended to project their capacity for feeling and nurturance onto women. Women, on the other hand, have tended to project their courage, strength, and heroism onto men. It is human nature to discover aspects of our self in other people before we discover them in our self. But in time the honeymoon ends, the projection collapses, and we wake up wondering who this person is in bed next to us. It is at this time that the opportunity for a more authentic relationship begins. We can now begin to know our partner in a more human light, and develop those attributes of our self we had formerly projected. It is often the case that the person or situation on whom we project our disowned attributes possesses them to some degree as well. Their behaviors or attitudes provide the “hook” onto which we hang our projection. (So, the next time

you call someone a “moron,” and they fire back, “You’re projecting,” it may be legitimate to respond, “Well, I probably am projecting, but you’re still a moron.”) Humor aside, projection offers the opportunity for us to learn about ourselves. Our responses to other people and life events provide a mirror into our own unconscious. In the process of withdrawing our projections we are able to reclaim and develop parts of our personality that will make us more complete, whole, and conscious people. Regarding the encounter with one’s shadow, Jung wrote: “If you imagine someone who is brave enough to withdraw all his projections, then you get an individual who is conscious of a pretty thick shadow. Such a man has saddled himself with new problems and conflicts. He has become a serious problem to himself, as he is now unable to say that they do this or that, they are wrong, and they must be fought against. He lives in the ‘House of the Gathering.’ Such a man knows that whatever is wrong in the world is in himself, and if he only learns to deal with his own shadow he has done something real for the world. He has succeeded in shouldering at least an infinitesimal part of the gigantic, unsolved social problems of our day.” As the new year dawns, so may the opportunity for a new level of consciousness in your life. So when you see your shadow beside you on a cold winter day, invite him inside, pour him some hot chocolate, and let him tell you about life on the other side of your world. Get Rid of Clutter in 5 Easy Steps Written by Jennifer Chang

Don’t know where to begin when it comes to clearing clutter from your home? The following pointers may help:

1.

Walk from room to room and make a mental note of what clutter you see and what you would like to clear. If you’re not at home, just close your eyes and visualize the inside of your home, again walk from room to room, and you will find, you know exactly where the clutter is. If you have not used something in the last year or especially two years, and you don’t absolutely love it, then it is probably time to let it go on it’s way. You can sell it, recycle it, donate it, or simply throw it away.

Make a decision to clear out at least one drawer. Try not to overwhelm yourself by intending to clear your whole house or whole room at once. Most people find that after clearing out one drawer, they feel pretty good, liberated and then decide to do another. You can clear your whole house, small segments at a time.

3.

While sorting out what you want to keep and what you want to throw away, ask yourself, “What does this do for me? Does it lift my energy or does my energy drop when I think about it or even look at it?” Use these questions as guidelines to whether it stays or goes. It is unproductive to ask “Will I need this someday?” The answer to this question will always be “maybe” and you will never throw anything away.

If you know that you are prone to hoarding, make a new rule. Every time you introduce something new to your home, something else has to go. Then at least your clutter will be different if not decreased.

O

nce again, you’re the first to have cleaned your plate. You sit, hands on your stomach, moaning and groaning about how full you feel. If this sounds familiar, then chances are you’re no stranger to the effects of indigestion following a good-sized feast. Four in 10 adults suffer from indigestion, which is most often brought on by overeating or eating too fast without chewing. But slow eaters aren’t in the clear either. Indigestion also can be brought on by food allergies, lack of exercise, drinking too much alcohol, smoking, medicines such as aspirin, improperly cooked food, and finally, stress and anxiety. It’s important to understand that indigestion is caused when the acid in your stomach flows back up your esophagus or when your stomach is irritated or inflamed. While it’s most common to experience indigestion after meals, you can suffer from it at any time, day or night. Indigestion is affiliated with a number of symptoms including pain, fullness or discomfort in the upper part of your stomach or chest. Heartburn is another symptom of indigestion, as is the build up of gas and loss of appetite. Fortunately, treating indigestion can be done easily and naturally. There are several remedies you can try at home, following a meal that are proven to ease the discomfort. Eating foods that contain digestive enzymes can help break down the amino acid bonds in proteins, promoting good digestion. Try drinking a half-glass of pineapple juice after every meal. Or for an effective solution, mix a spoonful of lemon juice with one spoonful of ginger

and two spoonfuls of honey in a glass of lukewarm water. Mix them well and drink. Lemon juice alone has also been known to cure indigestion as it fights against bacteria. Mix a tablespoon of lemon juice in a cup of hot water before a meal to prevent acid indigestion. Eating an orange or grapes are more effective indigestion remedies as they give rest to the digestion organs and supply nutrition. Baking soda is a popular remedy, but has an unpleasant taste. Simply mix equal parts of baking soda with water for immediate relief. For relief on contact, water treatments have proven to be effective remedies. For on-the-spot healing, try applying an ice bag over your stomach for a full hour after meals. A daily cold friction bath has proven to be helpful as well. Alternate hot and cold baths at night before bed.

Other natural at-home remedies include: • Drink one cup of ginger tea after meals to promote healthy digestion and to prevent heartburn • Chewing a fresh piece of ginger with salt, five to ten minutes before meals, stimulates digestion • A tablespoon of cinnamon water, taken an hour after meals, relieves flatulence and indigestion • Cumin seeds help your body digest food as well as reduce gas and soothe indigestion. Mix one teaspoon of cumin seeds in a glass of water. Add one teaspoon of fresh coriander leaf juice and a pinch of salt. This can be taken twice daily after meals. • One or two teaspoons of coriander juice, added to fresh buttermilk, is highly beneficial in treating digestive disorders

ith the coming New Year, resolutions abound. One of the most popular of these Resolutions is to follow a healthier diet and to lose weight. This is of course a great resolution to make, but only if you can stay with it! If you start to feel deprived of your favorite foods, chances are you’ll abandon your well-intentioned plan before the month of January has ended.

The relatively high fiber content in gram (or Besan) flour means that the carbohydrates it provides are absorbed more slowly into the bloodstream, which makes this a good alternative flour for diabetics. The fact that Besan contains no gluten makes it a great ingredient for gluten-intolerant individuals as well.

One way to make sure that this doesn’t happen is simply to find ways to make your favorite foods, such as baked goods, healthier. That way you can continue to enjoy them and not stray from your healthy goals! Cookies, cakes, breads and that wintertime breakfast favorite, pancakes, can be a real Pandora’s box of diet transgressions. Most cookies, breads, muffins and pancakes are made, of course, with butter, white sugar and white flour. While mighty tasty, they offer little more than copious amounts of empty fat and simple carbohydrate calories. The good news is that with some innovation in the kitchen you can create baked goods that are higher in protein and offer more complex carbohydrates and nutrients than the baked treats we’re used to. By substituting different types of flour in your baking, flours higher in protein, you’re adding a slightly higher nutritional value to your holiday snacks. Remember though, no matter how nutritious your baking is the calories within still add up, so moderation is always the key! There are many good-quality specialty flours available at your local supermarket, such as oat flour, buckwheat flour and/ or soy flour that can be good baking alternatives. One of the best high-protein flours can be found at your local Indian market. Made from the chickpea, “gram” flour (also known as “Besan”) offers high protein content, complex carbohydrates (thus entering the bloodstream more slowly than simple carbs) and a higher vitamin and mineral content than regular, bleached white flour. Gram flour, which is one of the oldest cultivated crops on earth, dating back some 7,500 years, is considered to be a good source of zinc, folate and calcium, January 2009

High Protein & Gluten Free Flours

Note: “gram” flour is not to be confused with “graham” flour, which is basically a type of wholewheat flour. Other types of flour available at the Indian market include Moong dal flour, made from moong dal, otherwise known as mung beans. (Which, incidentally, are the beans used to make bean sprouts.) When baking with gram or moong dal flour, it is best to mix in these flours at a 2:1 ratio with white flour—for example, if the recipe you’re using calls for three cups of flour, substitute one of those three cups with the chickpea flour. If you are feeling brave, you can push this ratio a bit, using a larger proportion of the chickpea flour than white. When following recipes that aren’t contingent on the exact chemical processes needed for successful baking, (such as pancakes or crepes), you can be much more liberal with the ratios of alternative to regular flour that you use. Give it a try. Be creative with your baking all the while knowing you are adding more nutrition and protein to your favorite baked goods. Such wounds can range from severe physical or sexual abuse, to that of simply feeling unloved, abandoned or unappreciated by one’s parents. If left unhealed, these wounds become the touchstones for our sense of who we are, beliefs about what our worth is, what we deserve and how successful we will be in our lives. They affect every aspect of our lives and all our relationships. A Wound Becomes A Repeating Pattern. We subconsciously act out these wounds over and over again, enfolding them into a subtle, but deadly, pattern of repetition. Each replay creates still more pain – until we say “enough is enough!” “Well, Enough is Enough Now.” Assuming they are still alive, the chances are good that your relationship with your parents will improve dramatically, as well. “Breaking Free” is not only for you; they feel the benefits, too. The five stages of Radical Forgiveness: First: tell the story. Second: feel the feelings. Third: collapse the story. Fourth: reframe the story. Fifth: integrate the new story into your being. Once you have worked through the stages of Radical Forgiveness, you will begin to ask yourself, “Why in the world did I hold onto my resentments and grief for so long”, it is then that you will clearly see that everything happened for a reason and there is a divine purpose. Once this purpose is recognized, you are able to move forward with vision and hope. Those that have experienced the benefits of the Radical Forgiveness program have described it in this way: “compassion”; “shifts of energy” and “now my heart is feeling the love.”

s New Year’s Resolutions come and go…the road to NOWHERE is paved with good intentions. Keep these basics in mind to ensure success on your path to better health.

Planning – Without a good map, how do you find your way? GPS doesn’t apply. Seek expert advice if you don’t know the road. Have a compelling reason: “I want to reduce my risks for diabetes, heart disease, osteoporosis and other health problems so I can enjoy my life.” Set realistic goals for lifestyle changes - Fad diets are fads - they don’t last and are NOT safe; you gain back more weight than when you started. You must have a plan beyond the first month. Nutrition – Dieting can lead to eating disorders and diet pills have side effects. This is not solid nutrition; your metabolism gets distorted. Having money in the bank doesn’t give one the sense of security it used to. The idea of value has changed. Meriam-Webster states that “value” is a noun meaning something intrinsically valuable or desirable. So how do you know what is intrinsically valuable? Joni Mitchell sang in Big Yellow Taxi, “you don’t know what you got ‘till it’s gone”. Using that measuring stick, some of the most intrinsically valuable things are: air, if that was gone you’d know it within seconds; water, within days a person would miss that; and food, certainly you could survive for a while, but not

forever. Being alive and healthy is great, yet it could be lonely without family and friends. A case could be made that we all need community to thrive and that our ancestors needed community to survive! Yet, it is the community of the 1930’s that comes to mind now. During the Depression, people helped one another, when they could, by sharing skills, knowledge, food or shelter. If a time comes again, when money can no longer buy enough food, it is the community of family and friends that will help you survive. In a time, when money is worth less, access to a local community of food producers is worth more. That is a great argument for supporting our local food producers. They are the folks who have the skills and knowledge to successfully grow food in this high desert environment, in alkaline soils, little rainfall, and temperature extremes. They know how to protect food crops from pests and disease. They have also learned how to do all these marvelous things with fewer to none of the chemicals that earmarked agriculture of previous decades. What would happen if the local food producers went out of business because folks passed by these growers and bought food from larger chain stores? How would local families be able to afford to eat if a time came when food was too expensive

to truck here from California? Would there be any local farms to turn to? We don’t have to wonder about that outcome if we make a commitment now to use just 10% of the family’s food budget to purchase food from our local Great Basin farmers. We ensure their survival. They will be there for us if a food availability emergency were to occur. Their food makes a smaller carbon footprint when transported to our local farmer’s markets and local food co-op. Their food is fresher and tastes better, precisely because it has not traveled so far to get to your table!! This is truly a “Use it or lose it!” situation. The local farming community is extremely valuable for our whole community’s well being, now and into the future. Overcoming Anxiety When Speaking

H

ave you noticed that some people seem to speak to groups like they were born for it? Don’t believe it. For most of us, it takes overcoming a lot of anxiety in order to take the chance of presenting ourselves in front of either strangers or colleagues. This anxiety is also known as stage fright. Quite often stage fright arises in a mere anticipation of a performance, often a long time ahead. It has numerous manifestations: fluttering or pounding heart, tremor in the hands and legs, diarrhea, facial nerve tics, dry mouth and more. Any of you who watched the head of General Motors being grilled in a congressional committee recently noticed the tic he had of repeatedly squinting his eyes. Even the most experienced leaders have their times of anxiety. What is that anxiety all about? “Why do I feel like such a wimp when I notice my legs shaking as I go up to a podium to speak?” you may ask. First, you’re not a wimp. You’re just human, and need an inner shift in your subconscious mind. The theory of mind provides some insight for us. About 12% of our mind is consciousness, our waking self. The other approximately 88% is our subconscious mind. Down in that subconscious twilight is the reason for our anxiety—a memory of some fearful experience that has coupled itself to public self-presentation. Using hypnosis, can relax the conscious mind enough to access the subconscious mind and uncouple that experience. Then a person’s anxiety can be transformed. After that the person is only minimally bothered by anxiety if at all. Meghan had a terrible experience as a young child, at least viewed from her young perspective. Her piano teacher

had her students preparing for a recital, and they had to memorize their pieces. Meghan was so proud to have her piece memorized and able to perform it perfectly. She was eagerly looking forward to showing off at the recital. Then the teacher told her another student would play her piece, and she had to choose another one. The wind went out of Meghan’s sails. She tried to memorize the new piece, but couldn’t always get it right. At the recital she made many mistakes in front of a large crowd. She told about feeling her face burning with embarrassment until she could escape back into the audience. Now an adult wanting to speak to large groups, Meghan’s anxiety was stopping her. Here is how she worked with uncoupling this shame from public performance through hypnosis. First she went into trance facilitated by her own hypnotherapist. Trance is a state in which one is very relaxed and able to focus in a powerful way on whatever issue is presented. Then she was helped to find that experience in the subconscious mind. Her hypnotherapist asked her, “What did the child need?”, and then said, “Give her what she needs.” As the scene replayed itself in trance, Meghan the adult, went to the teacher and said, “Meghan (the child) will be playing the piece she has worked on and is ready to play. It is not fair to her to change her piece so late in the game.” Then as the adult, she viewed herself, the child, playing her piece perfectly, with great joy. Her adult self grabbed her up as she ran happily down the isle after performing and celebrated her victory. Today Meghan’s anxiety when performing publicly is quite manageable. the difference between something vividly imagined and experienced reality. So when a person is in trance, deeply experiencing a healing “re-do” of an experience, the subconscious mind accepts this as experienced reality. The old memory is replaced with the new experience. The conscious mind still remembers the old experience, but all the emotional power and trauma to the nervous system stored in the body is released. It can seem like magic to the person freed from the old traumatic experience.

This rhythmic, energetic shift of nature’s annual cycle celebrates the “rebirth” of the Sun. December 21 is the shortest day and longest night of the year. From now until the Summer Solstice June 21st, the Sun will move from the southern to the northern hemisphere. There will be a corresponding lengthening of the day and shortening of the night. This cyclic expansion and contraction of light and darkness is a fundamental theme of life.

The civilizations of the ancient world celebrated these times as symbolic of death and rebirth. Capricorn rules the principle of contraction and the inhale of nature. This is cold and flu season and we are more susceptible to illness. Our vitality is lower and it takes more effort to stay healthy. But out of these death principles comes rebirth. As the Sun moves northward, a new cycle of life unfolds when we celebrate Spring Equinox on March 21. In astrological terms, Capricorn is a cold, dry sign. In regards to the four temperaments, Capricorn is melancholic. This manifests as depression or melancholy. Many people will

struggle with these feelings as well as sadness, loneliness and feeling down during this time. It is a natural tendency to look within and take stock of our lives now. If we do this, and we should, most of us will recognize our shortcomings and weaknesses that need to be addressed. This can result in a negative mood of worry, doubt, or anxiety but is intended to motivate us to take action for positive change. Capricorn and its planetary ruler, Saturn, rule karma or the cosmic law of cause and effect. Karma, both positive and negative, expresses as our patterns of thinking, feeling, and action. We are creatures of habit. Some of these habit patterns are positive and creative while some are negative and destructive. This is the appropriate time to evaluate our lives and acknowledge the changes that are necessary to improve our quality of life. This traditionally takes the form of New Year’s resolutions. But the majority of people do not follow through on their good intentions. Capricorn also rules the character qualities of organization, self-discipline, patience, and perseverance. Feng Shui, Body Energy & Attracting Money?

an the use of feng shui improve your finances? Absolutely! But how many people have tried some form of feng shui for money and had no results. You’ve probably read the same repetitive information telling you to do this and telling you to do that. But, have you ever read about money? What is money? Have you ever thought about what it is? Money is not just a green piece of paper, but is actually energy and if you want money, you need a strong body energy vibration to attract the energy of money. Everything you do, say, think, eat and listen to influences your energy vibration and your ability to attract money. This is another great reason to take care of your body. If your body is weak, tired or addicted to something, most likely you will have difficulties attracting money. The foods you eat influence your energy vibration. A good example is vegetarians and carnivores, they won’t know why but they will not feel comfortable with each other. This is because their energy vibrations don’t match. Drinking alcohol, eating sweets or deep fried foods and addictions, both physical and mental, serve

to maintain a low energy vibration. Feelings, thoughts and emotions are critical to one’s quality of life and success. Feelings of sadness, anger, joy and love all have different vibration frequencies. Feelings of joy and happiness attract money. Feelings of anger and judgement do not. How you interact with others and treat people also influences your energy vibration. In addition, be careful of your addictions to your emotions. A perpetually angry person is addicted to anger and therefore creates more of the same. The same is true of a happy and joyful person. n the South, it is considered good luck to eat black-eyed peas on New Year’s Day because they are thought to symbolize wealth (because they look like little coins when cooked). They also swell when they are cooked, which is another sign of prosperity. Southerners have also been rumored to eat one pea for each day of the year to insure good fortune! The following recipes are a tasty way to get these auspicious legumes into your diet. Different from the traditional black eyed pea recipe, Southern Cavier is meant to be eaten as an hors d’oeuvre with chips. The traditional version is great too. Enjoy!

ave you heard the news? Weight loss is out, body composition and health are in. What’s the difference? Weight loss just refers to how much less your body weighs on a scale. But this doesn’t tell you anything at all about what kind of weight you lost. You can only learn that by measuring your body composition. And a new study shows just how important that really is. Body composition analysis tells you four things about your weight: How much of it is fat, how much is lean mass (muscle and bone), how much is water, and whether or not that water is intracellular or extracellular. Maintaining an optimal body composition is what keeps you healthy and disease free. Your actual weight doesn’t make much of a difference. There are three ways you can lose weight. One is fat loss, one is lean body loss, and the third is water loss. Let’s take these one at a time. Fat loss is the only one of the three that can lead you to health and longevity. Ideal fat weights for women are between 18-22%. That means that no more than 18-22% of the total weight on the scale is fat weight. For men the ideal body fat weight is lower, between 14-18%. Lean body mass loss is what happens to us as we get older and more disease

prone. A loss in lean body mass is not desirable. It means a lower metabolism, decreased energy levels, and osteoporosis and other diseases. The problem is that unless you are measuring your body composition you have no idea of whether or not your weight loss stems from losing fat or from losing lean mass. Here’s an example: She thinks she lost fat, but . . . A 50 year old, 5’2” woman weighed 122 pounds when she was in her twenties. 90 of those 122 pounds were lean body mass pounds. Now that she is fifty she weighs 148. So she goes on a diet and loses 26 pounds. Do yourself a favor please, don’t be like this woman – promise to never again go on a diet. It’s just not healthy. Here’s why. She now weighs the same as she did when she was young, and she is thrilled. But should she be? When her lean body mass is measured it turns out that instead of having the 90 pounds of muscle and bone she had when she was younger, she now only has 80 pounds. She has lost a very significant amount of her lean body mass. And even though the report from the scale looks good, because of her lean mass loss she has decreased her metabolic rate, decreased her energy production, and increased her risk of disease across the board. Lastly, is the issue of water loss. The water in our bodies is in one of two areas. Either its’ inside the cells (intracellular water) or its’ outside the cells (extracellular water). In healthy young bodies, about 53% of the body’s water is intracellular, and 47% is extracellular. This balance of water is so critical that a full 60% of all of the energy we produce goes into making

sure that there is enough intracellular water for the cells to optimally function. As we become older the balance of water in our bodies shifts so that more and more water moves out of the cells. This causes the ratio of intracellular water to extracellular water to decrease. The result is cellular dehydration and drastic loss of cellular efficiency. Let’s go back to our 50 year old dieter. Not only did she lose lean body mass, but she also lost eight pounds of water. But where did that water come from? When her body composition was measured it turns out that she lost 6 pounds of intracellular water and 2 pounds of extracellular water. Instead of improving, her water balance became significantly worse. She may be happy with what she sees on the scale, but her cells are not happy at all. They are becoming too dehydrated to perform well, and despite the best of intentions, instead of making herself healthier, she is moving in the other direction. What happened to this unsuspecting woman is just what the new study mentioned above points out. The researchers looked at 24 overweight women between the ages of 52-64. All of the women were placed on a weight loss program for 20 weeks. Because of the potential for losing lean body mass, one half of the group was placed on a hi protein diet. This diet made sure that these women were taking 30% of their total caloric intake in the form of protein. The other half were kept on a diet that contained half as much protein. At the end of the study all the women had their body composition analyzed. The results were amazing.

The group on the high protein diet lost an average of 18.48 pounds. The low protein group lost even more, 25 pounds. But was any of this weight loss healthy? In the lower protein group, 37.5% of the weight loss was from bone and muscle, not fat. The results were better but still bad in the high protein group. 17.3% of all of the weight they lost was from muscle and bone. No matter whether the diet was high or low in protein, the results were the same. All of the women had lost lean body mass. This meant that their overall metabolism had decreased to the point that they were almost certain to eventually regain the weight they lost. And because of this metabolic shift, when they regained the weight almost all of it would be in the form of fat. And that’s why dieting is so bad – the net effect over time is that it exchanges muscle and bone for fat. This study and the many others like it should convince everyone that weight loss diets are not only useless, they are downright unhealthy. So what’s the answer?

Avoid Financial Stress —Protect Your Health—

he decline of Wall Street, the mortgage crisis, and the looming threat of layoffs has left one thing on people’s mind, financial stress. In times like these it is hard to not be stressed about finances, but have you considered what this stress can be doing to your health?

Financial stress is linked to health problems such as depression and sleep deprivation. However, the possible health problems go deeper than being sad and having a case of the toss and turns at night. Financial stress can lead to anxiety, digestive problems, hypertension, ulcers, drug and alcohol use, and appetite disorders, to name a few. As a result, a person is forced to go to the doctor, seeking treatment, making for more bills and more stress. It is a vicious cycle. This may seem extreme, and you may be thinking you could never get stressed to the point of needing medical assistance. It has been estimated that as many as 90% of doctor’s visits are stress-related. An everyday small series of events can lead to a menacing amount of stress, without your realization until it is too late.

If you are not in credit card debt, learn how to save money and cut costs in order to avoid heading down the stressful path of debt.

People who are currently experiencing financial stress are more likely to practice unhealthy coping behaviors such as drinking and overeating, in turn leading to more stress. When finances are tight people tend to cut corners in areas like health care to pay for basic necessities, leaving small problems unchecked which then turn into larger problems, and increased stress. Exercise, yoga, and meditation are all good stress relievers. Although financial times are tough, our physical and financial health should not be sacrificed. Beef Wellington From the Healthy Beginnings Test Kitchen of Lois Ehlers

You will need: • 3-4 lb. beef tenderloin • 1-1/2 cups flour (I use Bob’s Red Mill baking flour which is a mixture of gluten free flours). • 1 stick butter (cold and cut into 1/2 inch cubes) • 1/4-to 1/2 tsp salt First, season beef tenderloin with salt, pepper and an herb of choice (savory or thyme is good). Brown the meat in a skillet on all sides; set aside to cool. Preheat oven to 425 degrees.

Pastry for Beef Wellington Take your remaining ingredients, cut cold butter into flour, either using a fork or your food processor. If using a food processor, pulse until the mixture is like coarse meal. Next, add the water to the flour (pouring water in a thin stream), until mixture holds together. Remove from processor and put on a well floured work space. Shape dough into a ball, then into a 6 inch disk. Wrap tightly with wax paper and refrigerate dough for 30 to 40 minutes. Remove the pastry disk from the refrigerator and make sure your board is well floured.

Roll the dough out, always starting from the middle out to the edges. Roll to the desired thickness you like. Mine was about 1/8th of an inch, but can be thinner. Wrap your browned and cooled tenderloin with the pastry. Insert a meat thermometer in the center. Cook for 20 minutes. For rare, internal temp. should be 115 degrees. For medium rare, thermometer should read 120 degrees. Remember, the internal temp will rise 10 to 15 degrees after roast is removed from oven. The juices from the meat will permeate the crust. Total recipe time is 30 – 40 minutes.

L

icorice, or Liquorice, is the root part of the plant Glycyrhizza glabra, from which a sweet flavor in extracted. Native to southern Europe and parts of Asia, the licorice plant is related to peas and beans. Found in the tombs of ancient Egyptian pharaohs, making its importance seemingly obvious. Licorice was used to treat many illnesses, but mainly was used as a tonic and cold remedy. It is one of the mainstays of traditional Chinese medicine and has been used for over 3,000 years as a tonic to rejuvenate the heart and spleen, and as a treatment for ulcers, cold symptoms, and skin disorders. Known most for its use to sweeten gum-like candy today, licorice has several noted medicinal uses and health benefits in our modern world. Powdered licorice root is still an effective expectorant. Soothing coughs, colds and bronchitis, it is often found in modern cough syrups, and is also used in tooth powders. Additionally, licorice may be useful for both mouth ulcers and peptic ulcers. In its simplest form, the root is dug up, washed and chewed on as a mouth freshener.

Licorice is also a mild laxative and may be used as a topical antiviral agent for shingles, ophthalmic, oral or genital herpes. Consuming licorice can prevent hyperkalemia, the elevated level of electrolyte potassium in the blood. Though licorice may have this beneficial effect, large doses of glycyrrhizinic acid and glycyrrhetinic acid in licorice extract can actually lead to hypokalemia (low level of potassium) and serious increases in blood pressure. Among its regulatory properties, licorice is an adaptogen which helps reregulate the hypothalamic-pituitary-adrenal axis. It can also be used for auto-immune conditions including lupus, scleroderma, rheumatoid arthritis and animal dander allergies. Whenever introducing a supplement into one’s diet, dosing should be strictly considered, along with possible side effects. Depending on its form, the following are suggested doses for an adult 18 years or older:

• Carbenoxolone gel or cream: A 2% cream or gel 5 times a day for 7-14 days for herpes simplex virus skin lesions • Commercial preparation, taken orally, often contains 7.6 percent glycyrrhizic acid: 3.5 grams a day has been studied for body fat mass reduction. • De-Glycyrrhizinated extract tablets: 380-1,140 milligrams three times daily taken by mouth 20 minutes before meals. Without glycyrrhizin, the chance of increased blood pressure and water retention is reduced. • Licorice fluid extract (10 to 20 percent glycyrrhizin): 2-4 milliliters per day taken by mouth to soothe the throat or mask unpleasant medication flavors. • Licorice powdered root (4 to 9 percent glycyrrhizin): 1-4 grams taken by mouth daily, divided into three or four doses, to reach the endocrine system and liver. Excessive consumption of licorice or licorice candy is known to be toxic to the liver, cardiovascular system and may produce hypertension and oedema, an excess of fluid build-up under the skin. There have been occasional cases where blood pressure has increased with excessive consumption of licorice tea, but such occasions are rare and reversible. Doses as low as 50 grams per day for a two week period can cause a significant rise in blood pressure. When considering using alternative methods of treatment it is important that your natural health care provider and/or medical care provider be kept in the loop. he idea that sugars can heal is counter-intuitive to what we have been led to believe. But the authors of this book are not talking about table sugar. They’re describing something called glyconutrients, which consist of eight essential sugars, only two of which – glucose and galactose –are commonly found in our limited, over processed diets. here’s nothing worse than experiencing ear pain, itching, loss of hearing, or a sinus headache. Ear Candling is an ancient practice, dating back to biblical times in Egypt, the Orient, as well as European cultures. This simple, gentle treatment removes wax from the ear, improving your sense of well-being, physical, mental and even spiritual. The candle is a long hollow tube made from unbleached muslin immersed in an aromatic herbal solution. After it dries, the cone is then dipped into beeswax. The cone or candle is then placed into the ear opening and the top of the cone is lit; soft warm white smoke billows down the tube into the ear and softens the wax. The flame of top of the cone creates a vacuum that pulls out built up wax, toxins, bacteria, dirt and residue from past medications. Ear Candling may also help with a dry hacking cough (a result of a sinus infection), sinus headache, tinnitus, and itchy ear. Today more people are seeking alternatives to digging in the ear with Q-tips or using a hydrogen peroxide flush to clean a blocked ear canal. Ear Candling is a relaxing, natural, non-intrusive treatment.

Of course, alcohol can have a powerful effect on anyone’s body, but it’s especially important for people with Type II diabetes to be particularly cautious. It’s not necessary to avoid alcohol, but the American Diabetes Association stresses the importance of moderation, which generally means two drinks per day for males and one per day for females. It’s also important to avoid drinking on an empty stomach. Your liver sees alcohol as a poison, and desires to get rid of it as quickly as possible. When your liver is busy cleaning up alcohol, it “ignores” certain other jobs, such as converting stored carbohydrates into glucose. This means that for the hours the alcohol remains in your body the only glucose you’ll be getting is from the food you eat. This can lead to some dangerous lows for people whose diabetes is controlled with medications such as insulin. Mixing alcohol with exercise, such as dancing in a club or playing volleyball on the beach, can make this worse. Of course, low blood sugar is less of a risk if your diabetes is controlled through diet and exercise alone. If you have reason to be concerned about lows caused by drinking, there are steps you can take. First, talk with your health care provider about your specific needs and how drinking alcohol may affect the medications you take. Second, drink in moderation

and with food. Nurse one or two drinks all night. Start out on a full stomach, and make sure you have high-carb snacks while you drink. Try to stick with drinks that have a lower alcohol and sugar content—for example, light beer and dry wine. Try mixing your own drink if possible, to give your self more control over the situation. Remember the signs of low blood sugar are often confused with intoxication, so wear an ID that says you have diabetes—it could save your life if you have a low. Don’t drink and drive, ever. Finally, continue checking your glucose and making sure you have enough to eat even hours after drinking. Remember, it can take your liver a long time to finish clearing alcohol from your body. It’s the latest dietary don’t – and while most gluten-shunners avoid the protein because of serious health reasons, many people have chosen to eliminate it from their diet simply because it makes them feel better. Gluten is normally found in grains such as wheat, rye, oats and barley. Once thought rare, an intolerance to gluten affects thousands of people. Celiac disease is the most common diagnosis in connection with gluten intolerance. People with celiac disease are sensitive to gluten, and experience damage in the small intestines. The damage affects the absorption of food and causes weight loss, diarrhea, and iron deficiencies. An immune disorder detected through a blood test and intestinal biopsy, celiac disease has been diagnosed in 110,000 Americans – and if everyone with the disease were diagnosed, it would be 3 million, according to Alessio Fasano, medical director of the University of Maryland Center for Celiac Research in Baltimore. Fasano and other researchers also believe that some people who don’t have celiac disease still have some gluten intolerance or sensitivity, causing symptoms ranging from bloating to rashes. Even if you are tolerant of gluten, too much gluten can lead to negative side effects. A 1998 paper by Dr. Patricia Kane proposed that an excess of gluten had a significant link to autism in children. This study indicates the importance of a gluten-free or low-gluten diet in children. A gluten-free diet is no doubt one of the most difficult diets to accept, but if you succeed, it could tremendously enhance your quality of life. Manufacturers are trying to make it easier for people. In response to the growing trend of gluten-free

diets, there are more gluten-free versions of foods that the truly intolerant would otherwise have to give up, including cereals, breads and pastas. A diet containing no gluten allows the small intestines to heal. After recovery, the intestines can then assist in normal absorption of nutrients as waste passes through it. This is essential for the body to obtain all the vital nutrients it needs to sustain itself. Even if you are not gluten intolerant, you may see improvements in the way you feel including relief from chronic constipation, bloating and diarrhea. Some people have even claimed to lose several pounds simply by eliminating gluten. Try going gluten free as a nutritional experiment. It usually takes three to six weeks without any wheat or gluten products to notice improvement, but some people feel better within a couple of days. Going wheat or gluten free also is a great opportunity to increase whole food variety in your diet. Whole vegetables, fruits, grains, beans, nuts, seeds and lean meats have more vitamins, minerals and phytonutrients than refined products. You may even notice it helping to save you money. Eating healthier food can actually cost less, especially if you eat more seasonal vegetables. Plus you will literally get more value in nutrients per mouthful, than processed snacks and meals. And if all else fails, your family will be blessed by your newfound passion in the kitchen – you can even get the kids involved in making some of the healthier sweet treats. References: 1. he U.S. Food and Drug Administration may soon decide the future of a low-calorie, natural substance derived from the stevia plant. Stevia is of the sunflower family and native to subtropical and tropical South America and Central America. The strain of stevia isolated and awaiting a possible stamp of approval is called Rebaudioside A - a pure compound derived from stevia and responsible for stevia’s sweet taste. The natural sweetening capacity of this pure compound makes it ideal for the food and beverage industries. If rebaudioside is approved, consumers will find it more and more on the ingredient labels of processed foods and beverages.

Currently, FDA only approves stevia-derived sweeteners as a dietary supplement. In the past, FDA has not approved stevia outside this specific purpose because, as the FDA stated, “Available toxicological information on stevia is inadequate to demonstrate its safety as a food additive.” Though not commonly used in the U.S., stevia originates from Brazil and other areas of South America where it has been used for centuries. Japan’s food regulations have also approved the alternative sweetener, increasing in popularity over the past few decades.
