TODD’S SUCCESS STORY My name is Todd Patterson. I had Gulf War Syndrome and was plagued with many symptoms. I had no energy, was pale and swollen, and in terrible pain. I had often considered ending my life because the pain was unbearable. Janet and I have been friends for a while. She had been trying to get me to Reno for quite some time to detox my body. Finally convinced, I arrived at the Circle of Life Spa for my first of many wraps, sauna sessions, and massages. I had some difficult and emotional periods as my body detoxed. Throughout history the rose has been as a symbol of romantic love and marriage, explaining perhaps, why June is national rose month. The Romans used roses at weddings and funerals, and they scattered rose petals at banquets to prevent drunkenness. Persian Warriors are said to have adorned their shields with red roses. The rose was the symbol of many armies in medieval times. The rose has also long been used as part of meditation rituals for the monks. Rose hips are sometimes eaten, mostly for their vitamin C content. They are pressed and filtered to make rose-hip syrup, as the fine hairs surrounding the seeds are unpleasant to eat. They can also be used to make herbal tea, jam, jelly or pie filling. In aromatherapy roses are often used for the skin; rose essential oil is good for all skin conditions, especially mature or sensitive skins. Roses are said to have a calming effect for grief, resentment, anger and depression. Rose essential oil has a sedative effect, which aids in times of shock and bereavement, being used to ease nervous tension and stress, and to lift the heart. To most of us, the rose is a symbol of freshness and health, beauty and peace.

State Homeopathic Medical Examiners Board Adds 2 Board Members The State of Nevada Board of Homeopathic Medical Examiners (BHME) recently welcomed two new board members appointed by Governor Jim Gibbons. Dr. Cyrus Pourzan, MD, HMD and Leticia Gardea are the new board members. Dr. Pourzan, is a licensed allopathic doctor and homeopathic doctor and practices out of his offices in Incline Village, NV. Ms. Gardea is Executive Director for the National Association of Hispanic Real Estate Professionals Foundation (NVAHREP) based in Las Vegas, NV. Both members received their oath of office at recent board meetings held in Reno. The State Board of Homeopathic Medical Examiners was created to regulate the practice of homeopathic medicine in Nevada and any activities that are within the scope of such practice, to protect the public health and safety and the general welfare of the people of this state. The Healthy Adventurer Would riding a bicycle in lieu of driving a car be a wholesome response to the threat of global warming? I strongly believe so. But who am I and why should you care? Allow me to introduce myself -- I’m Hans Frischeisen, Reno resident, age 66, and I practice what I preach. I have just completed the first segment of my third bike ride around the world. Yes, my third! In a series of forthcoming columns in Healthy Beginnings, I will share my adventures with you, especially the ones that relate to health, stamina, ecology, economy, education and the pure enjoyment of living! Oh, one other note -- I haven’t been sick since 1972. I am also an artist. My art is the mastery of traveling with less then 10 lbs of total luggage, on very long bike trips to very remote places. And imagine this -- my 10 lbs includes 3 days worth of food reserves. I’ll tell you some of my secrets in future columns, too. A short history: I was born in Germany and was educated there in the field of naturopathy. I immigrated to the US in 1963, began with IBM in 1966 as a sales representative in Anchorage, AK; transferred to IBM Las Vegas in 1973; to IBM Reno in 1978, and retired in 1990 in Reno.

Then began the first of my non-motorized travel adventures, including kayak trips from central Canada to the Arctic Ocean; through a Polish lake district, around the islands of Oahu and Grand Cayman; along the coast of Yucatan, Belize and Baja California. I hiked over 2,000 miles of the 2,600 miles long Pacific Crest Trail. Incredible things happened…and you can read about them here, too! I am passionately interested in natural health and have worked in the field non-stop since I left IBM. In 1990, I founded the Everlasting Health and Professional Center for natural healing, with 17 therapists and consultants. It is located at 1515 S. Virginia in Reno, and its primary treatment modality is Ayurveda, the oldest known method of healing, worldwide. In 1999, I began a non-profit corporation to explore the creation of a European-style natural health community in Truckee Meadows. The Nevada Health Forum, part of that endeavor, is in its 11th year, and has sponsored several well-known keynote speakers, e.g., Wayne Dyer, Patch Adams and Deepak Chopra. I also started the Organic Odyssey, Reno’s only organic, vegetarian restaurant at the time, and assisted my wife Lois in development of the Nevada Health Alliance, a quarterly natural health publication. M

assage has long been recognized as one of the oldest modality’s used in the history of humanity, not only as an aid for the prevention of sickness, but for helping to rebalance the physical and energetic conditions of the body. Thai Yoga Massage, Tuina (pronounced “tway-naw”), and Shiatsu are three styles of massage, or bodywork, that are becoming more popular in mainstream society. What is their commonality and how do they work? The answer lies in the direct approach and focus on the body’s intrinsic energy, which is called prana in India, chi in China, and bio-electricity in the West. To understand the fundamentals behind this kind of work, two things are needed: a basic knowledge of our energy makeup, and a brief history of these unique arts. Our bodies are a network of channels and points most commonly referred to as meridians and acupoints. These are conduits through which energy travels, feeding, nourishing and sustaining the human form. When the flow through these avenues is free and uninhibited there is health and vitality. forms of bodywork were developed over 2,500 years ago. Along with working the physical structure of the body, they created techniques for stimulating the movement of energy through the meridians and acupoints. This balances the yin and yang, or deficient and excessive conditions of energy throughout the body. It is on the foundation set forth by these two great civilizations that the principles of Thai Yoga Massage, Tuina, and Shiatsu are based. Thai Yoga Massage, called Nuad Borarn (ancient massage), is gaining rapid recognition for it’s tremendous therapeutic value. Though it’s teachings have been passed down for generations from the ancient temples of Thailand, it’s roots can be traced back more than 2,500 years to India’s yoga and Ayurvedic medicine. Thai Massage consists of gentle assisted yogic stretching, with thumbing and palming along distinct points and energy lines called marmas and sen lines, in combination with massage, and meditative breathing. This array of techniques opens the client to a deeper, and often times, more immediate release, both physical and emotional. Tuina, literally means push-grasp. It originates from China and was already an established discipline by 221 B.C. The many different hand techniques or massage strokes used in Tuina, can range from very rapid and invigorating, to slow and relaxing. In addition to this a Tuina practitioner applies stretches, stimulates meridians and acupoints, and maneuvers joints to nourish ligaments and tendons. Tuina is well known for it’s exceptional healing results. Shiatsu, translated as finger pressure, is the youngest of the three modalities. It was developed in Japan in the early 1900’s as an independent therapy from their ancient traditional massage called, Anma. Shiatsu’s consistent finger and hand pressure along acupoints, meridians, and anatomical structures helps to harmonize the flow of blood and energy throughout the body. A good Shiatsu treatment can be an extremely effective and healing experience. In the present day search for holistic alternatives for health, more people are turning to eastern wisdom and integrating it within the western lifestyle. The eclectic approach has always proved best for optimal health as there is no single modality that is a cure-all for our ailments. “What is a Naturopath?” Dr. Jessica Edge, B.S., N.D. By Erina Fischer

W

ith so many different alternative health modalities available to us, it can be overwhelming choosing an option when we are seeking to regain or preserve our health naturally. A very valuable option in our Reno area is Dr. Jessica Edge, one of only a handful of medically-trained, certified Naturopaths in Northern Nevada. Dr. Edge, a fourth generation Nevadan, graduated from the University of Nevada, Reno with a bachelor’s degree in biology. Dr. Edge’s interest in Naturopathy developed as an outgrowth of her research– she recognized the inherent link between nature and human wellness. “Something shifted while I was in college,” Jessica said “I came to believe that the body has an incredible ability to heal itself. Naturopathic medicine resonated with me.” She left her hometown to attend the 4-year accredited National College of Naturopathic Medicine in Portland, Oregon. Here she accomplished two years of science-based courses in anatomy, physiology, biochemistry, pharmacology and pathology. The last two years she was trained in clinical Naturopathy. In Portland she completed multiple internships, including time working in homeless clinics, primary care offices, geriatrics and more. She moved back to Reno to be with her family and today is a nationally board-certified Naturopath, as well as a member of The American Association of Naturopathic Physicians. Dr. Edge practices at the Reno Alternative Medicine clinic. You have probably heard of Naturopathy, but what exactly is it, and how can a Naturopath help you? Dr. Edge presented the seven key principles of a Naturopath to Healthy Beginnings Magazine:

1. First, do no harm– For instance, Dr. Edge is trained to understand drug and nutrient reactions and can help offset the side effects of medications.

2. The Healing Power of Nature–This is

the principle that most attracted Dr. Edge to Naturopathic medicine. Naturopaths use minerals and western herbs to aid in healing. Hydrotherapy, the use of alternating cold and hot water, is also used by Naturopaths to alleviate allergies and digestive disturbances and to increase circulation.

3. Identify and treat the cause– One of

the most defining principles of natural medicine is to reject the band-aid approach to healing using prescription medications that only covers up symptoms. Instead, a Naturopath works diligently to uncover the root cause(s) of illness and then, to treat– this is a primary principle –a cornerstone– of Dr. Edge’s practice.

4. Treat the whole person– As part of her

patient consultations, Dr. Edge assembles a comprehensive health history for each person, and performs a parallel review of symptoms by assessing lifestyle habits, energy levels, stress levels and sleep cycles. According to Dr. Edge, a common theme in illness is “chronic stress leading to chronic disease, as well as mood disorders. Stress uses up all our coping mechanisms.”

Flashes & Floaters What do they indicate?

lashes and floaters are probably the two biggest concerns that patients bring to their optometrists. So what are they? What do they indicate? Why do we get them? Floaters are commonly described by the person experiencing them as specks, dots, threads, and “squigglies” or “spider webs” in the field of vision. They are particularly noticeable when reading, when looking at a blue sky, or at a blank, light-colored wall or bank of snow. What exactly are these objects that move when you move your eyes and seem to appear out of nowhere?

Actually called vitreous floaters, floaters are areas of liquid within the clear gel that fills the inside of the eye. This gel is the vitreous humor. It is almost perfectly transparent to light (i.e. light passes directly through it without being altered) but these small areas of liquefaction are not; instead, they scatter incident light and produce a showing effect on the retina. This is actually what you perceive when you notice a floater- it is not the object itself, but rather the shadow it casts on the retinal photoreceptors. These vitreous floaters can range in size from tiny dots to areas large enough to look like a mouse running across the floor!! Floaters themselves are usually completely harmless; they might persist or they can settle below one’s line of vision over time and not be noticeable. Often, even if they do not go away or change position within the vitreous, the brain can simply “learn” to ignore them by employing a process called “psychological disregard”. Floaters can be of concern, however, when many of them (potentially hundreds) suddenly appear and produce an effect much like a reddish-brown curtain being lowered over the field of vision. This type of effect is associated with a retinal tear or detachment and must be evaluated as soon as possible by a qualified eye care professional. These floaters are reddish-brownish in color (red blood cells) and are very small and uniformly round in shape, unlike normal floaters which may be several shades of gray or black, various shapes and sizes and do not suddenly appear in very large numbers. A particularly large floater associated with retinal tears, may also be associated with flashes of light in the periphery of one’s field of vision. These flashes of light are the next topic we will explore.

Flashes of light off to the side of the field of vision are also intricately connected with the vitreous humor. In addition to filling the inside of the eye and providing the structural integrity of the eyeball itself, the vitreous effectively “holds” the retina in place. Occasionally, the vitreous can pull away from the retina in a localized area. This is called a posterior vitreous detachment, or PVD, for short. PVDs are often harmless in and of themselves, but they can often result in the production of these flashes of light at the visual periphery. These flashes are caused by a stronger than normal, localized pulling force on the retina by the vitreous at the edges of the vitreous detachment. This extra pulling, or tractional, force results in a stimulation of the retinal photoreceptors in that area – hence the perception of flashes of light. A single large floater or multiple floaters can also accompany a vitreous detachment. These flashes of light may also be a symptom of a retinal tear or detachment. We always recommend seeing your eye care professional when flashes of light appear -- a retinal tear or detachment must be ruled out in these cases, since the signs and symptoms of a benign vitreous detachment can be SO similar to those of a retinal detachment. Similarly, when a multitude of floaters appear suddenly, particularly if they are reddish/brownish in color and obscuring any part of vision, the condition requires immediate, close scrutiny by an eye care professional. n April 19, 2007 nearly 400 residents participated in the City of Reno’s Green Summit event. One of the Reno City Council’s top priorities is to create a green or “sustainable community” action plan for the coming fiscal year. As part of this effort, they will draw on local expertise and from the community to help determine what additional efforts the City government can do to benefit the environment. The Green Summit was an opportunity for residents to participate in the development of plans to reduce emissions, improve energy efficiency, recycle, create sustainable building practices, use environmentally friendly products, and to protect our environment.

Baked Sweet Potato Fries

Prep: 15 min. Cook: 15 min.

•1 lb. medium sweet potatoes, peeled •1 tablespoon olive oil •1/4 teaspoon seasoned salt Cut sweet potatoes lengthwise into quarters. Cut each quarter into 2 or more wedges to equal size of french fries. Toss potatoes in olive oil. Arrange potatoes in a single layer in a 15x10x1-inch baking pan. Sprinkle with salt. Bake in a 425ºF oven for 15 to 20 minutes or until browned and tender. Makes 4 servings.

The keynote speaker was Bill Becker, a national expert on sustainable development. Becker is the executive director of the Presidential Climate Action Project and the organizer of the “National Leadership Summits for a Sustainable America,” a series of 4 conferences in 2006 and 2007 to advance America’s sustainability in a time of global warming. In 1996, he founded and directed the U.S. Department of Energy’s (DOE’s) Center of Excellence for Sustainable Development and its Smart Communities Network Website. Before joining the University of Colorado at Denver in January 2007 to direct the Presidential Climate Action Project, Becker was senior advisor to the Global Energy Center for Community Sustainability and an adjunct faculty member in the Colorado Energy Research Institute at the Colorado School of Mines. He served both functions while on sabbatical from DOE, where he was director of their Central Regional Office. More recently, he organized and led a team of United States sustainable design

experts to Beijing to help Chinese officials make the Olympic Village for the 2008 Olympic Games green. In 2006, he participated in providing advice on tsunami reconstruction in Thailand. Becker was one of three national experts deployed by the State of Louisiana to help residents of the Lower Ninth Ward in New Orleans plan “sustainable reconstruction” after Hurricane Katrina. Following Mr. Becker’s address, community members and local experts participated in four breakout group discussions on transportation, green building, zero waste, and renewable energy initiatives for creating a more sustainable, green Reno. The Wellspring Within Greetings one and all! There’s a slew of good living to be had so I’ll be brief. I’m Taylor Donovan, DC (Doctor of Chiropractic). Awareness and Feldenkrais Method® Support Life is Problems: Stress Relief in a Stressed-Out Society NOTE: The Feldenkrais Method‚, a movement-based learning format, was developed by Dr. Moshé Feldenkrais (1904-84), an Israeli physicist who worked at the Curie Institute in Paris. A series of crippling knee injuries left him unable to walk, facing surgery and a poor prognosis; instead he treated himself. After a long struggle, Feldenkrais taught himself to walk again without pain, and refined his methods, (Awareness Through Movement‚ (ATM) and Functional Integration‚) to teach and help others. Life is, in essence, a series of problems. Our earliest problems are “Where’s food? I’m hungry” or “I’m tired and need to sleep.” We graduate to bigger problems: “How can I reach that cookie jar, way up there on the counter?” Pretty soon, we are solving problems like: “Do I ask him out on a date?”

Thus Awareness Through Movement® classes are a downto-earth approach to dealing with the problems of life. In an ATM class, participants explore solutions to various movement challenges. This transforms “problem-solving” into fun, as it was when we were children. ATM helps us learn to handle stress in two ways simultaneously: physically and mentally:

Then we have problems like buying and maintaining a house, relating to another person in a long-term, committed relationship (or not!) and all of the wonderful problems of parenting. The more we mature, the bigger and better our problems seem to get.

When problem-solving is not fun or challenging in a positive way, it causes stress. We all know when stress gets to be too much — and the damage it can cause. But our problems aren’t going to go away. So how can we learn to handle them? When I first took a weekly Awareness Through Movement® class, it was an island of sanity and relaxation in my insanely stressed-out life. I spent at least 20 minutes of every class fast asleep! Learning to identify and respect my physical, mental and emotional limits has been gradual, but the quality of my life is

now so improved, I can’t imagine how I lived like that. I now use my body as a barometer and listen to it when it tells me where my limits are. I still accomplish a lot, but only if I take the nonlinear approach I learned in those Feldenkrais® classes.

On the physical side, ATM lessons release us from our habits of hunching the shoulders, holding or restricting the breath, locking the chest and rib cage, tensing the belly, and otherwise preparing to fight or flee. ATM teaches us ways to notice those signs of stress and de-stress our selves throughout the day.

On the mental side, ATM helps us identify and respect our limits, and to focus on the process, instead of chasing one goal after another with nothing but stress in between. Moshe Feldenkrais insisted everyone should have at least three distinct options for doing every action. The more options available, the more chances of drawing upon one of the previously “superfluous” options in handling an unexpected problem. Respecting our limits is often a new experience, as there is little cultural support for it. If you begin to identify and respect your limits, be prepared for resistance—respecting your limits is a revolutionary thing to do. But it is an idea whose time has come, and you will be a role model for others when they see you at peace, with plenty of time to spare. Improved Awareness Leads to Greater Workplace Comfort So many of our repetitive postures began in childhood that we are barely aware of them any longer. Even as adults, rep-

Many computer users, for example, extend their mousing arm far from their body while working, and unnecessarily hold up the weight of their whole arm. If we unconsciously hold our heads forward while working on the computer, we place a similarly unnecessary strain on our shoulders and neck. But we usually don’t notice these unnecessary tensions until we are in pain! By then, of course, damage or injury to tissues may have already occurred.

Mini- Awareness Through Movement® EASY FLEXIBILITY LESSON To do this lesson, sit at the edge of your chair. 1. Turn your head to look to the right. Notice if there is any strain or pain in the movement and if you hold your breath. Do it again and notice where do you initiate the movement from. 2. Repeat this simple movement, but reduce the effort. Don’t go to the limit. Make the movement light as though floating through air or oil. 3. Now leave the head in the middle and turn both shoulders to the right. The left shoulder comes forward as the right shoulder goes backward. Again reduce the effort and repeat several times, don’t hold your breath, and make the movement lighter each time. 4. Turn your head a few times to the right and notice if more of you participates in the movement now. Is it a little easier? Pause a few seconds in the middle. 5. This time leave the head in the middle, but move your left knee a little bit forward so that the pelvis rotates, with the left side of the pelvis coming forward and the right side going backward. Repeat several times without strain or holding the breath. 6. Now again turn your head to the right and let all the parts of yourself participate. Is the movement easier now? Do you turn further? Do you initiate the movement from a different place than you did in the beginning? Can you feel how using more of yourself has freed the head and neck? 7. Repeat the same sequence, turning to the other side. eurologists would define Epilepsy as a neurological disorder that causes seizures and brain malfunctions. I would define Epilepsy as a challenge I have lived with for almost 22 years. I also don’t consider it a disorder. Epilepsy is a big responsibility, but you get used to after a while. Getting used to it hasn’t been an easy journey for me.

I just couldn’t accept being different -- I wanted to have friends like all the “normal� kids at school. I felt out of place and I thought everyone was pointing and laughing at me. I believe that I got Epilepsy from a childhood brain injury. When I was 3 years old I was climbing on my bookshelf and I pulled it down on top of me. That night I had my first seizure. Normally, doctors wait and see if you have more than one seizure before diagnosing you with Epilepsy. been there for me through the good and bad times. She has been through her share of problems too, but so has everyone. I realize today that I am better off than a lot of people with Epilepsy. Some people have to wear helmets so they don’t injure themselves when they have seizures. Epilepsy is not only caused by head injuries. It can also result from drugs and alcohol abuse. Alcohol isn’t healthy for anyone, but to someone with Epilepsy drinking alcohol is like inhaling carbon monoxide. And why do you think they put the birth defect warnings on cigarette packages? Because if you smoke, your child runs the risk of being born with Epilepsy. Birth defects, you see, also include brain trauma. Lack of sleep, poor diet, a traumatic experience, or many over-the-counter drugs can sometimes cause seizures. There are certain symptoms that come with having Epilepsy such as spacing off, fatigue, and nausea, which are minor problems. The more important issues are depression, anxiety, thoughts of or attempted suicide. I have had them all. When I’ve had such episodes, I would be alone in my bedroom. I’d pace back and forth while thoughts of suicide swirled around in my head. The brain is in constant overdrive when you are anxious or depressed. All you do is think about how you are feeling. The real world is of no importance to you. You don’t want to be around friends or family. You think everyone is against you and they don’t care. Yes, it can be called acting like a teenager, but not when you’re 25. Some people have told me it’s normal to have such feelings. O.K. But to plan your funeral and write out your will when you’re young and in good health? This doesn’t seem normal to me. Not to mention planning the day you are going to end your life. I’ve done all these things.


I used to pray to God asking him why he put me on this earth to torture me. I would beg him to end my life that night so I wouldn’t have to suffer through another horrible day. This is what depression is like, though people who haven’t experienced it don’t know it. Being stuck in your own little world also engenders other abnormalities and excesses, like obsession and jealousy. But being able to talk about all your problems with loved ones helps tremendously. Having family and friends around whom you have trust completely to support you is a huge help throughout all this. But talking with your parents isn’t easy because they take your mistakes as just an intentional way to break the rules, instead of as a learning experience. You definitely learn more by going out and making mistakes than staying at home watching Lifetime movies with your mom. Still, I must say my parents raised me right. I am a strong, open-minded woman with a legal craving for adventure. I don’t drink, smoke, or do drugs, but I do love staying out past midnight with my boyfriend. So all in all, I am very happy with my life and where it is headed. And just as with my Epilepsy, I am ready to accept whatever challenges life has in store for me in the future.

How can you help someone who is having a seizure?

1. Stay calm- don’t try to restrain or revive the person. If the person is seated, help ease him/her to the floor.

2. Remove hazards such as hard or sharp objects that could cause injury if the person falls or knocks against them.

3. Don’t move the person far unless the area is clearly dangerous, such as a busy street.

4. Loosen tight clothing and remove glasses. 5. Protect airways by gently turning the person on one side so any fluid in the mouth can drain safely.

6. Never try to force something into the person’s mouth! 7. Don’t call an ambulance unless the seizure lasts more than

five minutes, or is immediately followed by another one, or if the person is pregnant, ill, or injured.

8. Be calm and reassuring because the person may feel disoriented or embarrassed after having a seizure. When the seizure ends, let the person rest or sleep.

The good news is that you aren’t permanently stuck with the negative programming that you may have received. Through hypnosis, new positive ideas about yourself can be instilled, which will cause you to act in completely different ways. Your subconscious mind is a non-valuing organism. It just accepts everything you hear, feel, read, see or experience as the absolute truth. As we grow older, our conscious mind learns to reason, and to reject certain statements as untrue, but the subconscious mind lacks that reasoning ability. In addition, when you hear words that are delivered with great emotion, either positive or negative, that emotion embeds those words even deeper into your subconscious. So if you were told over and over that you were stupid, lazy, unattractive or whatever, the emotion those words evoked caused you to believe them even more, and the repetition sealed the deal. On the other hand, if you were told you could achieve anything you wanted, then you have a completely different view of life. Those positive thoughts will help you to consider new ideas, to risk, to step out into life knowing the positive truth about yourself, that you can achieve anything you set your mind to. People with higher self esteem are more inclined to focus on their strong points rather than their flaws, and have a general sense of happiness. They tend to choose more compatible mates, friends and careers. People with low self esteem are inclined to have perceptions of guilt and helplessness and are more likely to abuse drugs and alcohol. Fresh Summer Rolls By Jillana Miller

A

s temperatures rise and daylight lengthens, people begin to move into play mode. The climate of this wonderful season presents the opportunity to enjoy the outdoors, and to celebrate the exciting and refreshing flavors of summer cuisine. Summer rolls, a delightful Vietnamese dish is the perfect way to jump into a summer filled with healthy flavors. The rolls are served either cold or at room temperature. Traditionally summer rolls are delicate, flexible rice paper filled with mint, basil, lettuce, rice vermicelli and shrimp or pork. The rolls are typically served with a light peanut sauce. Method of Preparation:

For the rice papers:

Ingredients: 12 rice papers (found in the Asian section of most grocery stores) Take 12 paper towels and dampen with cold water. On a separate plate, layer the wet paper towels and rice papers so that each rice paper is sandwiched between two paper towels. Let the rice papers absorb the moisture for about 5 minutes. The woven designs on each rice paper should be almost gone and the rice papers will be pliable rather than hard.

For the salad mix and Fresh Herbs: Ingredients: 2 cups broccoli slaw 1/4 cup of diced tomatoes 1/4 cup micro greens 1/4 cup thinly sliced cucumber 3 leaves of basil 6 leaves of fresh mint Slice cucumber into very thin spears and set aside. Stack basil leaves and roll tightly. Hold in place and cut in very thin slices at an angle. This process is called chiffonade. Set basil aside with cucumber and fresh mint. These ingredients will be added to the final construction the rolls. Pour 2 cups of broccoli slaw and diced tomatoes into a small mixing bowl. Drizzle the mixture with rice vinegar and toss.

For the Tofu:

Ingredients: Six small slices of firm tofu (1/4” x 1”) 2 tablespoons honey 2 limes 1 teaspoon crushed red pepper 1 tablespoon sesame seeds 1 tablespoon peanut oil or vegetable oil Begin by juicing each lime into a small mixing bowl. Add all other ingredients and mix. Coat each slice of tofu in mixture and set aside. Heat a small sauté pan over medium heat. When the pan is hot, add the peanut oil and disperse it evenly. Now place slices of the tofu in the pan and brown for about a minute on each side. When finished, remove from pan to cool slightly.

Ingredients: 6 medium sized pre-cooked shrimp For the Indonesian Peanut Sauce Ingredients: 1 cup smooth peanut butter 1/4 cup soy sauce 1 cup brown sugar 2 tablespoons lime juice 2 tablespoons rice vinegar 1 1/2 teaspoon garlic 1/2 teaspoon cayenne pepper

1 teaspoon crushed red chili pepper 1 bunch of green onion 1 bunch of cilantro 1 cup chili sauce This list of ingredients may appear overwhelming. However the preparation is simple. The only items that need to be chopped are the garlic and the green onion. After chopping these items, add all the ingredients into a food processor or a blender. Blend until smooth. The recipe makes a lot of sauce, which is great because it is very versatile. By adding a little rice vinegar you can make an excellent Asian style salad dressing. Indonesian peanut sauce is also a great addition to stir-fry.

Assembling the Rolls:

Now that the prep work is done, it is time to roll. Place one sheet of rice paper on a clean surface. Spoon a small amount of salad mix in the center of the rice paper. Atop the salad, layer tofu and or shrimp, micro greens, cucumber, basil and fresh mint. To roll, grab the left and right sides of the rice paper and pull toward the center as far as possible. Hold these sides in this position, while you tightly roll the bottom side up and over these ends; like a burrito. Repeat this step with a second sheet of rice paper to prevent the roll from falling apart. If you have never done this before, your first roll may be a little sloppy. Don’t worry. You’ll do better as you practice with the next ones! Remember that this recipe is just one variation of summer rolls. It has lost nutrition and in some cases even become toxic, as in the process of charbroiling or caramelizing. Most of us now know that it is recommended we not overcook our vegetables due to the loss of valuable nutrition. My question is this: why should we even partially cook the nutrition out of our food?

What then is optimal eating? What foods contribute to vibrant health? Which foods can your body digest, assimilate, and eliminate efficiently? Fresh, whole, raw, fruits and vegetables are at the top of the list. Many people have eliminated the symptoms and causes of serious health issues by adopting this way of eating. But with few exceptions, most people are not eating enough fresh fruits and vegetables. If you have chosen not to eat fresh fruits and vegetables because you experience discomfort when eating these foods, I would suggest that you do some type of detoxification program and then try them again. Some herbs can act as repellants when grown near other plants or when you make an infusion and use it as a spray. For example, the carrot fly finds its victims by scent, and can be confused by planting aromatic herbs close by. These are some of the most effective repellants: chives, garlic, lavender, nasturtium, pennyroyal, tansy, thyme, sage, and wormwood. Planting garlic in between roses will increase their perfume and also helps the roses to fight off *black spot*. Many gardeners have sown legumes into fallow fields, knowing that it is good for the soil, yet unaware that legumes add nitrogen. As a general rule fragrant herbs chives, hyssop, marjoram, parsley, sage, and thyme - are beneficial in maintaining the health of the vegetable garden. Their benefits have not been analyzed scientifically but a number of gardeners have reported improvements in the general health of their vegetables when inter-planting with these herbs. Here is a sampling of herbal companions that can improve your gardening results: * Basil repels flying insects if planted ‘tween tomato plants. * Borage planted with strawberries will attract bees for pollination and improve the crop yield. * Caraway, buckwheat, and flax will improve the general soil of your planting area. * Chives will prevent scab in apple trees and will prevent black spot in roses. * Chamomile planted with onions will repel flying insects and improve crop yield. Chamomile is known by many gardeners as “the plant’s physician�, as it is beneficial to the surrounding plants in any garden.

* Coriander planted with anise improves the flavor of anise and attract bees to the garden, which will increase pollination. * Dill & fennel will attract beneficial insects to your garden. * Hyssop will improve the crop yield of grape vines. * French marigolds will repel aphids that may attack a tomato crop and ward off pests from bedding plants. * Mint in the garden will repel flies and cabbage grubs. * Nasturtium, when planted near apple trees, will ward off aphids and when planted near tomatoes will attract the blackfly to itself, and therefore away from the tomatoes. * Nettle will control blackfly and can improve the oil content of angelica nearby. * Pennyroyal repels ants and is therefore generally beneficial to any herb or vegetable garden. * Rosemary repels the carrot fly and is a good companion for sage. * Sage is a wonderful companion crop for many other plants. It will repel cabbage moths from your cabbages and will repel a large number of harmful flying insects, especially those around vines and predators of rosemary. * Summer savory will attract bees to your garden and will enhance the growth of beans. . * Tarragon and Yarrow are known to be generally therapeutic in the garden. Shining Some Light on “Organic”

O

rganic is a versatile word used commonly to describe systems or processes that parallel those in nature. Organic decision-making refers to people working harmoniously together; an organic lifestyle means to live simply and cleanly. In business, organic growth describes the process of increasing production at an intelligent pace; an organic organization is one that is adaptable and evolving. And more broadly, organic is a key concept differentiating between living and non-living matter. We often talk about food being grown organically, and many people will go far out of their way to ensure that they are consuming organic products. But what exactly is organic food? What does organic food mean? The term was popularized in the 1960s and 70s by people who sought to localize food systems by creating networks of small-scale farms. To them, the concept of organic went far beyond simply growing food without the use of petrochemical pesticides and fertilizers. They envisioned long-term soil health, economic prosperity for growers, and a short supply chain from producer to consumer. In short, “healthy, fresh and sustainable” in today’s jargon. After food scares in the 1980s that were related to the use of synthetic materials (inputs) in conventional agriculture, the demand for organically grown food exploded. Many growers expanded dramatically to meet the demand. Nonorganic producers saw a burgeoning new market of consumers willing to pay top dollar for such products. Organic producers sought government support to create legal organic standards and a system of oversight -- and thus the organic certification program was born. Today “Organic” has a very clear agricultural definition. For a farm to be considered “organic”, it must be certified by an agency accredited by the USDA based on standards set by the National

Organic Program. Many of these certifying agencies are private organizations, and some are also state run. The Nevada Department of Agriculture has its own certifying agency.

ensure the quality of their produce. As organic food production becomes more industrialized, the local-food movement represents a commitment to supporting local farmers and local economy.

For the farmer, acquiring an organic certification requires a clear farm plan and three years of detailed records, as well as a thorough inspection performed by the certifying agency, all part of the application process. A very small-scale gardener could become certified organic in Nevada for less than $200. However, the fees increase substantially in relationship to the grower’s projected revenue, and the cost of certification will be much higher for professional producers. Annual inspections and associated fees are necessary to maintain certified organic status, so the costs to the organic grower are ongoing.

Although the idyllic family farm has been largely replaced with industrial organic agriculture to meet the growing demand, you can be sure that produce labeled “organic” is produced without petrochemical or sewage-based fertilizers, conventional pesticides, genetically modified stocks (GMOs), or radiation. In addition, organic meat, eggs, and dairy must come from animals not treated with growth hormones or antibiotic drugs. The regulations for processed foods are more complex, as foods labeled “100% organic”, “organic”, and “made with organic ingredients” each have different requirements, so read labels carefully! While many people with chemical sensitivities and allergies are committed to certified organic food, increasingly people are setting their priority on food that is also grown locally. Nevada has 21 certified organic farms and six certified processing facilities. However, many of the small-scale producers seen at farmer’s markets choose not to invest in the process of organic certification, yet still use “sustainable” farming practices. The Wellness LifeStyle More than leaving well enough alone

eing sick can be very costly in terms of time, money and most importantly, in the quality of life category. According to a recent study by Harvard University, researchers found that 50% of all bankruptcy filings in the U.S.A. were the direct result of excessive medical expenses. Health care spending in the United States is more than $1.8 trillion, which is more than 4 times the amount spent on national defense and almost 40 times the amount spent on Homeland Security. While these numbers are big and impressive, it’s important to remember that these health care costs are not the cause of the health care crisis. They are merely a measure of how severe the health care crisis really is. The reason why the health care crisis exists is simple: there are too many sick people. This simple statement communicates a real truth about the source of the problem. Any proposed solution to the health care crisis that does not specifically lead to more people being less sick is doomed to failure. Just like changing seats on the Titanic, it can only, at best, delay the inevitable. The health care business is the fastest growing failing industry in our country.

A Few Fascinating Facts About Feet The feet contain about 25 % of the bones in the body, 52 out of the usual 206. There are 33 joints, 107 ligaments, and 3 arches in each foot. Anatomically and physiologically their function is to provide a stable platform, absorb shock, and generate propulsion. Neurologically, the foot has numerous reflex points, zones, and meridians, making it one of the most neurologically connected, complex, and sensitive parts of the body. The average person takes about 8,000 to 10,000 steps per day. That is about 100,000 miles over a lifetime, or about 4 trips around the earth! Your feet carry 100% of our weight. Fortunately, most people respond to ozone therapy. So in this month’s issue, I am going to give you a primer on what ozone therapy is, and why it works so well.

What Is Ozone? The oxygen you breathe is present in the air as a colorless, pair of oxygen atoms. This is the most stable form of oxygen. Ozone is a blue colored form of oxygen (it’s what makes the sky blue), and unlike regular oxygen, it is composed of three oxygen atoms instead of two. It is the addition of the third oxygen atom that makes ozone “supercharged” oxygen, and gives it all of it’s remarkable medical properties. The use of ozone to treat various medical conditions was first developed

If your pet lives outside he should have a house that is just as well built as your own. No animal should have to depend solely on his coat for protection from the elements. Rain can bring your pets body temperature down and cause severe medical problems. Including skin infections and foot problems from the mud. Freezing temperatures are just as dangerous for our pets as for us. If it’s too cold out for you then it is too cold for your pet. Bring your pet inside whenever it is too cold outside for you. Too hot for our pets? Heat stroke is a common problem for animals, especially in the summertime. Heat stroke occurs when the core temperature of an animal exceeds its normal set-point and reaches temperatures in excess of 106*F. From these elevated temperatures, death may occur in less than an hour as a result of permanent organ damage and blood clotting disorders. A high temperature occurs rapidly when the animal’s environment is enclosed and has poor ventilation, such as in a parked car with the windows closed or even cracked. The temperature inside a closed car in the direct sun may exceed 120*F in less than 20 minutes, even when it is only 70*F outside. Therefore, pets are at risk of heatstroke inside a parked car during the hot temperatures of our summers. Humans differ from dogs and cats in their cooling mechanisms. People can rely on sweating to cool off, but dogs and cats must cool themselves through their lungs by panting. When the air gets too warm, the animal is no longer able

to cool itself because the air is too hot for the lungs, and as a result its core temperature begins to rise. An owner can recognize that their pet is suffering from heat stroke by noting the appearance of the animal. The owner can look for excess panting, hyper salivation (drooling), very dark mucous membranes (gums), diarrhea and/or vomiting, lethargy or even coma. If heat stroke is suspected, the pet should be immediately seen by a veterinarian. The whole body of the animal needs to be cooled immediately to avoid a fatal outcome. This is best accomplished by rinsing using cool, not cold, water. Cold water is not recommended because cold water constricts the vessels in the animal which will inhibit heat loss and slow the cooling process. The veterinar-

ian will probably also need to administer medications and perform treatments to prevent vascular collapse and shock. A few tips can be easily followed to keep your pet safe and healthy this summer. Be sure never to leave your cat or dog in an unattended car. Also, your pets should have plenty of water and shade if they are left outdoors. An especially close eye should be kept on dogs and cats that have not had significant exercise recently, are overweight, or have respiratory disease. Even if you think you’re eating a ‘perfect’ diet, you might not be. Even if you eat only fresh, organic food, you might actually be damaging your health every time you take a bite. Even if you are following the very best dietary advice you’ve ever heard, it might be completely wrong for you.

How could this be?

If you remember that food is the fuel your body runs on, it will become clearer. Think of it this way – eating the wrong food is like putting diesel fuel in your gasoline car. You can bet that if you did this, your car would stop running before long. It’s the same with your body. If you put in the wrong fuel (foods), you won’t get far. Even when the foods you eat are allnatural, organic and fresh, if they’re the wrong ones for your unique metabolism, they won’t nourish you in the long run.

The result over time is a slow progression of having less energy, getting sick more often, and feeling as if you’re getting older far too quickly. Ultimately, the so-called diseases of old age crop up – arthritis, heart disease, diabetes and cancer.

Everyone is Different

There’s lots of evidence to suggest that everyone is as different on the inside as they are on the outside. One set of food guidelines simply can’t take into account all of the unique qualities that make up your body. There is no one diet that’s right for everyone. To see the truth of this, imagine what your ancestors ate a thousand years ago. If they lived in northern climates (think “Eskimo” or “Scandinavian”), they likely had a diet consisting largely of fats and proteins – fish, meat, natural fats and very little vegetables.

On the other hand, if your ancestors came from the Mediterranean region, they had lots of choices for fresh fruits and vegetables and ate more of these. Such different climates have very different naturally available foods. People who lived in these areas before modern times adapted to the foods they found around them. Those foods became their ideal foods.

How to Figure Out What’s Right For You

Since there is obviously a wide range of possible ‘ideal diets, how can you figure out the right one for you? Most of us get our cues about what to eat from our family or friends and from advertising or the latest fad diet book. These aren’t always the best sources. There is, however, one infallible source that will tell you every single time what foods work for you. Are you ready to learn it? All you need to do is memorize this rule: Your body never lies. That’s it. Your body knows what it needs and what it doesn’t. Of course I realize that it’s hard sometimes to tell the difference between a positive response to foods and an addiction or craving. To help clarify this, let me give you some of the basic signs you might notice if you eat the wrong foods:


• Changes in your energy level – either a drop in energy or a feeling of agitated, hyper energy. • Stress, irritability, over-reactions – if you get cranky an hour or two after you eat, keep a journal of your reactions compared to what you ate at the last meal. • Depression – some people have a sense of overwhelm, hopelessness or being ‘stuck’ that they can trace to food reactions. • Mental focus and clarity – if you get a bad case of ‘busy brain’ or you feel like you’re in a mental fog check to see how your foods are affecting this. • Cravings, hunger and not feeling satisfied – when you’ve eaten within the past hour or two and are still hungry, this is often a signal that your body didn’t get something it really needed. And no, it’s not sugar…

Taking a Shortcut If we’d all listened to our body signals when we were young, we wouldn’t have so many health issues as we get older. Like most of us, you probably didn’t do that. But if you start paying attention right now, after a while you will have a much better idea of your best food choices. If you’re like me, you don’t want to wait to see improvements in your health. Fortunately, there is a faster way to tell which foods are best for you. It’s a process that reduces the learning curve by at least a year, called Metabolic Typing. Metabolic Typing recognizes that each of us is as different on the inside as we are on the outside.

What a novel concept! Using a simple questionnaire and noninvasive tests, you can determine a great deal about your unique food requirements. For example, you learn:
