CHICKEN STOCK RICE

MAKE ‘N BAKE CHICKEN BREASTS Quick, easy, and healthier than store-bought.

INGREDIENTS:

INGREDIENTS: 4 skinless, boneless ½ tsp. salt chicken breasts ¼ t. pepper ½ C. sour cream ¼ t. garlic powder ½ C. mayonnaise ¼ t. paprika 2 C. finely crushed ¼ t. each of finely crushed bread crumbs dried basil & oregano ¼ C. cornmeal ½ t. each of finely crushed 1 T. crushed dried dried parsley & celery leaves chili peppers

1½ C. white rice, rinsed well

1 medium sweet green pepper, diced

2½ C. chicken broth

¼ t. paprika

1 medium carrot, finely diced

¼ salt

1 stalk celery, finely diced 1 medium onion, diced 2 cloves garlic, minced

Weed the lamb’s quarters in your garden into a basket instead of the compost heap. They indicate rich soil, are packed with vitamins, and taste wonderful, too!

1 medium sweet red pepper, thinly sliced

1 T grape seed oil (olive oil will do)

INGREDIENTS FOR FILLING: 2 C. peeled, sliced apples – your choice 2 C. 1” chunks of rhubarb 1½ C. organic cane sugar or regular sugar ½ C. unbleached white flour

Letting the pie filling stand overnight in covered bowl (NOT in refrigerator!) melds the flavours and sweetens the interior of the rhubarb.

1. In heavy skillet over high heat, melt butter, add oil; stir in carrot, celery, onion, garlic, green pepper, sauté for about 2 minutes.

2. Mix sour cream and mayo well in medium sized bowl.

3. Add chicken stock. Reduce heat immediately to low.

3. Thoroughly mix bread crumbs, cornmeal, salt, pepper, garlic powder, paprika and crushed herbs in large shallow bowl.

1. Preheat oven to 425 F.

4. Cook covered for about 20 minutes.

4. Dip each breast in sour cream/mayo mixture, coating all sides.

5. Turn off heat; let stand 5 minutes before serving.

5. Roll in crumb mix, coating well. Place on very lightly greased baking tray. 6. Bake for 35 minutes or until meat is no longer pink. Do not over bake.

1. Measure sifted flour and salt into medium bowl; cut in lard with pastry cutter until very well blended.

1. Rinse and drain lamb’s quarters; pat dry.

2. Sprinkle with 8 T. ice water and mix lightly with fork, adding more water if needed to form soft ball.

2. Trim leaves and top, discarding thick stems and discoloured leaves. Set aside.

3. Divide into 2 balls. Do not overwork dough as it will lose tenderness.

3. In large heavy skillet on medium high, heat grape seed oil and butter; add garlic, cooking for about a minute.

4. Roll out on lightly floured surface; put into 8”, lightly greased, pie pan.

4. Add green onions and red pepper, cooking another 2 to 3 minutes.

5. Spoon in Overnight pie filling. 6. Dot with butter.

5. Last, add greens all at once, stirring continuously for another minute or two until greens are wilted. Serve immediately.

7. Cover with second pastry. Press and flute edges tightly. Cut vents. 8. Using pastry brush, apply cream to pie top. Sprinkle with sugar. 9. Bake in 425 F oven for about 50 minutes or until crust is golden.
