Mom and I had a cleaning business for 19 years, never realizing the toxic effect the cleaning supplies had on our bodies. The dust particles and carpet fiber had destroyed mom’s lungs. Upon leaving the cleaning business, I went to work at the Airlines, again not realizing how harmful the work was to my health. The jet fuel, the radiation from the x-ray machines and the burnt rubber from the aircraft landing had coated my lungs. My mother and I had no idea how toxic we were. We only knew we did not feel well and were very tired all the time. In February 2004 my mom, Sharon Crank, found out about the Circle of Life Spa and called me excited to go check it out. We visited the spa and were both amazed and fascinated at how much better we felt by using the saunas and body wraps. With the help of Circle of Life, we soon detoxed and felt incredible! During that year, Sharon became a volunteer at Circle of Life Spa. She loved working and helping the many wonderful clients who came to the center. I began to volunteer at the spa as well and it was a great experience. When we found out the spa was closing, Sharon decided to buy the Circle of Life Spa! So many people counted on, relied on, and supported the Circle of Life Spa and we are happy to carry on this legacy. “An Apple A Day Keeps The Doctor Away” By Sara Piccola

M

embers of the rose family, apples have been associated with love, beauty, luck, health, comfort, pleasure, wisdom, temptation, sensuality, sexuality, virility, and fertility. Apples are rich in phytonutrients and phytochemicals. The colorful skin of an apple contains more antioxidant and fiber than the flesh. Regular consumption of apples can aid in lowering blood cholesterol, increasing bowel function, and reducing the risk of stroke, prostate cancer, type II diabetes, Alzheimer’s and asthma. Apples have been proven to assist people who suffer from gouty arthritis and rheumatism. Aside from their nutritional benefits apples are unique for their place in history. Evidence shows people eating apples as far back as 6500 B.C. Apples appear in many myths and legends, such as the temptation of Adam and Eve and the journey of Johnny Appleseed. In Greek mythology, Mother Earth provided Zeus and his bride with a tree of golden apples on their wedding day. Because of their association with sexual and romantic connotations, apples are a great dessert fruit and eaten at the end of a meal. Some interesting facts about apples are that there are more than 7500 varieties in the world, 2500 of which are produced in the United States. An apple tree takes 4 to 5 years to produce fruit and half of the United States’ apple crops are turned into apple products. Legend has it the Adam’s apple got its name from when the forbidden fruit got stuck in Adam’s throat when he swallowed it. While they may have been a forbidden fruit by our forefathers, their rich taste and fruitful benefits are greatly recognized and appreciated today.

Dear Readers, Fall is officially here, elections are just a month away and winter is around the corner. Ironically, fall is supposed to be the time of year when we slow down and ready ourselves for a restful winter. What tends to happen is our lives get busier, we ramp up at work, school is back in session and we start thinking about the up-coming Holidays. Even so, it is important to slow down and take time for ourselves. October is an excellent month for personal reflection and to assist you in that process we have a couple of great articles. One focuses on developing happiness skills to live a harmonious life and how we can interpret that on an individual basis. T

here are over 700 species of eucalyptus trees, almost all native to Australia, with a few in New Guinea and Indonesia, each one with its own healing properties. Most of the trees in Australia are eucalyptus but there is also the ancient tea tree known for it’s own healing properties. The leaves of the eucalyptus tree yield eucalyptus oil which has been used for medical purposes for several hundred years by Australian aborigines, the Koori, to make a kind of tea. More recently, western medicine has expanded the uses of eucalyptus oil. Used for its anti-bacterial properties in products like cough drops, lozenges, inhalants, and in topical creams for its antiinflammatory, analgesic and penetration effects. Eucalyptus oil can also be applied to wounds to prevent infection. One popular eucalyptus oil is distilled from the Blue Mallee eucalyptus tree, Eucalyptus Polybractea. The oil is used as a pain reliever because of its quick penetrating ability and has proven to provide anti-inflammatory benefits and reduce swelling in soft tissue. As an added bonus, the oil has a light, pleasant aroma. Eastern Australia, the northeast coast of New South Wales, is where you will find the ancient tea tree, Melaleuca Alternifolia. We now know that tea tree oil has beneficial medical properties including antiseptic and antifungal action, the treatment of insect bites and stings and is also believed to have beneficial cosmetic properties. Tea tree oil and eucalyptus oil have long been iconic essential oils in Australia. It is the oils ability to break the skin barrier and carry their soothing and relaxing properties to the underlying tissue that make them popular today. While there are many topical uses for each of these essential oils, the people who find these products most useful for relief are likely to be among the more than 30 million arthritis sufferers in the USA today. F

rom far-away places and a life of variety, June Milligan of Joyful Changes Hypnosis has made Reno her home for the past three years. June offers her clients relief and release from such things as smoking, weight gain, anxiety, stress, self esteem issues, pain and addictions. June discovered this career path while dealing with her own experience of pain while living overseas. She was diagnosed with a serious spinal cord problem, but in her research, discovered the issue to be a simple carpal tunnel problem. June experienced constant wrist pain at night and therefore had trouble sleeping, so was referred to a hypnotherapist in the U.S. She has carried this personal experience into the business she now owns, “I figured that if hypnosis worked for me over the telephone, it would work for anyone.” June first teaches simple acupressure techniques to relieve stress and remove emotional charges – such techniques make hypnosis much more effective and powerful. “By introducing advanced Law of Attraction techniques while teaching acupressure (to relieve emotional pain) then doing hypnosis, the result for the client is powerful, freeing and extremely effective.” With this multi-faceted approach to relieving the personal ailments and issues of clients, her success has been tremendous. June is a certified clinical hypnothera-

She attended the University of Ohio Medical School for advanced acupressure classes and has had additional training in Australia and Korea. June has Bachelor of Science and Master of Education degrees and is currently working to earn her certification in Matrix Energetics. Hybrid cars have gained in popularity over the last few years. By 2015 sales of hybrid cars are expected to have tripled. Nonetheless, per month, hybrid cars only account for 2% of all new vehicle purchases. The hybrid car gets better gas mileage, costs less to maintain, and preserves the natural environment. here’s nothing worse than experiencing ear pain, itching, loss of hearing, or a sinus headache.

Ear Candling is an ancient practice, dating back to biblical times in Egypt, the Orient, as well as European cultures. en Shiatsu is an Asian bodywork that helps the human body find balance using our chi (energy) as a guide. Our health and wellness depends on smooth energy flow to maintain the balance of mind-body-spirit. When our bodies have tension or pain our chi flow is stagnant or congested, while somewhere else in our body there may be depletion or weakness. An extreme excess of stagnation can lead to illness or disease. Diseases arising internally are always manifestations of a preexisting imbalance between Yin and Yang. The primary treatment goal of a Zen Shiatsu session is to re-balance and harmonize the chi flow in order to relieve discomfort and pain.

The Zen Shiatsu Approach Following a different approach than a western style massage, a Zen Shiatsu practitioner is aware of and interacts with the chi flow on established energy pathways defined as meridians. There are varying numbers of acupressure points on each of the 12 traditional meridians that the practitioner uses to affect the flow of chi. The practitioner’s theoretical background includes a knowledge of Traditional Chinese Medicine (TCM), including but not limited to, Yin and Yang theory; Five Element Theory; names and

placement of the meridians; location and benefits of acupoints; a philosophical and poetic understanding of TCM; and the body mechanics of human movement; all of which help to encourage the best flow of chi.

A Zen Shiatsu Session A Zen Shiatsu session is experienced on a futon on the floor. The client is wearing loose comfortable clothing and there is no use of oils or lotions. Before the session, the client is interviewed and fills out an intake form. Some of the questions may be unusual. What is your favorite color? What season do you like best? What season do you like least? What time do you wake up and go to sleep? Do you wake up in the middle of the night? What time is your sleep disturbed? These questions are geared toward our nature, the nature within us as it relates to the nature outside of us. Once an understanding of

The Skill of Happiness By Paul Hughes

H

appiness is not something we normally think of as a skill. We usually think of feeling happy for having done something right, or of things going our way. Perhaps we are happy because we just came into a large sum of money, or met the person of our dreams. In these cases happiness exists because of something. Then there are those people who are happy no matter what’s going on. They express gratitude for all that life has to offer, no matter how little or great that might be. For them happiness exist regardless of their circumstances – a state of peace, equanimity and bliss that comes from within. Some people might say happiness is a state of mind requiring a positive outlook. If that were true, happiness wouldn’t last very long, as our outlook is subject to change as easily as our thoughts are. True happiness it would seem must go beyond the mind to include something deeper and more fundamental to life itself. What could that be? Happiness is a feeling after all, so it would have to include our body and a feeling of physical pleasure right here in the present moment. It is through our bodies that we have a direct connection to the present moment, and in which our total experience of life is made possible. We often hear of the “power of now,” but without clear instructions on how to achieve it. If happiness is a skill, there must be fundamental things we can do to learn it. What are these fundamental things? Based on thirty years of experience, the practice known as Vivation has nar-

rowed these fundamental things down to five elements, or component skills necessary to create deliberate happiness. These elements are: • circular breathing • complete relaxation • awareness in detail • integration into ecstasy • do whatever you do, willingness is enough Each element supports the others, and when practiced together make it easy for you to permanently and pleasurably resolve any kind of negative emotion. After a Vivation session people often say they had no idea it was possible to feel so good. That’s because Vivation has no mental component. It works directly at the physical feeling level, helping you bypass any negative thoughts you had about those feelings or the circumstances that caused them. The result is a much more honest and pleasurable experience. For example, irrational fear is something we’ve all had at least once. Look

at the difference between a first-time public speaker and a seasoned performer. The first is fighting the feeling and experiences stage fright. The second has made peace with it and feels excited. The same holds true for other “negative” emotions. Rational fear resolves into awareness, grief into gratitude, and anger into creative action. The raw feeling never changes, only our relationship to it. Being able to do this is a powerful skill, and like any powerful skill requires a competent teacher to show you how. All it requires is learning how to apply the five elements of Vivation through the entire array of human emotions in your life. This might sound daunting, however, after only 7-10 coached sessions with a Vivation Professional you will gain the physically pleasurable skill to quickly and permanently resolve your negative emotions and transform your life into a happy and creative one.

elery seed is not well-known in Western herbal medicine, although it has been used medicinally for thousands of years in other parts of the world. Celery and its seed contain an abundance of important chemical compounds and nutrients, some of which are amino acids, boron, calcium, iron, magnesium, selenium, zinc and vitamins A, B1, B6, C, E and K. It was not until the early 19th Century that celery seed began appearing in American cookbooks, usually in pickling recipes. During ancient times, Ayurvedic medicine used celery seed to treat colds, flu, water retention, poor digestion, various types of arthritis, and certain diseases of the liver and spleen. The ancient Greeks and Romans used celery for its medicinal purposes and there was a popular belief that it was an aphrodisiac. In the middle ages, Italian farmers began to cultivate celery from “smallage,� a wild, bitter marsh plant. The principal sources of celery seed are India and China, but France also produces a small quantity. Indian and Chinese celery seed are similar in appearance while the French variety is slightly darker. Indian

celery seed has the strongest flavor, the French type is milder in comparison, and the Chinese celery seed is smaller and slightly milder in flavor as well. Indian celery seed, because of its color and taste, is considered the premium seed. The celery plant is slender and stands about two to three feet tall. It has three to five segmented leaves, and flowers with small white petals. Celery seeds, which are found in the flowers, are very small, tan to dark brown, and have a strong, pleasant smell. Celery seeds contain several substances including volatile oils, flavonoids (plant pigments with antioxidant effects that may protect cells from damage), coumarins (chemical compounds that help thin the blood), and linoleic acid (an omega-6 fatty acid). Today, celery seed is used primarily as a diuretic, increasing urine output to help the body get rid of excess water. Celery seed is also suggested for treating gout and to help reduce muscle spasms, calm the nerves (limonene renders mild tranquilizing effects), and reduce inflammation. High blood pressure can be reduced because of hypotensive properties and appetite can be managed and improved with celery seed. Other chemicals in the seeds act as a liver tonic (antioxidant properties) and pain reliever.

Some precautions, though, should be kept in mind before integrating celery seed into a diet. Pregnant women should not ingest celery seed because it may lead to uterine bleeding and muscle contractions in the uterus, potentially causing miscarriage. With professional therapy, compulsive shoppers can begin a journey for recovery. It is recommended that therapists who counsel shopping addicts should encourage clients to address two important questions when the shopping bug bites and prior to the actual spending. Is there enough money for this item? Is there enough space in the home for this item? Another suggestion is to keep large bills on hand when shopping, as it seems that shoppers value large bills and are reluctant to split them. Suggestions of leaving checkbooks and credit cards at home have proved to be unsuccessful in thwarting this obsession. Shoppers are cautioned to avoid openings of new stores or malls, as this spurs the

urge to shop. Choosing the right time to shop, when stores are closed or when you are short of time, hinders the urge to splurge.

The Inspired Intent of Joseph Pilates By L. Martina Young, PhD, Somatic Pilates Educator

W

ithin the current and fast-growing Pilates community, teachers and students alike continue to discover a variety of, and sometimes conflicting approaches to the “Pilates breath,” a way of breathing that is peculiar to the body-mind practice known as “Contrology.” Noting the different “styles” found throughout the plethora of certification programs—and in some cases, a lack of attention to the breath at all—questions abound like: • What is the importance of breathing this way in the Pilates work? • Is there a difference between Yoga breath and Pilates breath? And most confounding: • In the process of an exercise, when does one take the ‘inhale’ and the ‘exhale? Several considerations will be addressed in this article that elucidate some of the ways breathing might be thought of in general, and the process and intent of the Pilates breath in particular. Central to this discussion is an emphasis placed on the bodily experience of breathing, a skill essential to somatic (body) practices that recognize how cognitive understandings are not only heightened but also deepened through attentive experiential awareness. Thus, what teachers and students might consider is bringing their attention to the feeling of inhaling and perceiving what happens as their bodies exhale. In other words, feel how the body experiences breathing. Developing a nuanced somatic acumen provides clues as to when to inhale or exhale while performing Pilates exercises, clues that are informed by knowledge of the intent or purpose of each movement. From this point of view, Contrology, as a studied form of body-mind practice, offers salient gifts. By developing a language that accurately voices our bodily experiences, and bringing attention to how our experiences are perceived, we are able to discover the possibilities and deepen further into the work. Bringing cognition to what our bodies are doing and how we experience the doing defines the nature of somatic, or body-mind practice. The Pilates breath requires this level of perception. In his 1945 book, Return to Life, Joseph Hubertus Pilates passionately expounds on the importance of correct breathing,

stating that when “under the dominance of mental control,” breathing is the single most “positive activity” a person can do to maintain optimal health and vitality. So, what is the Pilates breath? One student observes his somatic experience as inspiring: “Inhaling through the nose, cool air traverses through clear passageways of both nostrils, an uplifting air tunnel, and then down the soft tissue at the back of my throat, passing between the hyoid bone just below my earlobes. Oxygen enters my house of ribs; lungs fill to capacity. As my diaphragm descends and expands in volume, a palpable vigor courses through my body. I feel more of myself.” An expanded self is precisely the effect of inhalation on the skeletal body; an inspiration indeed. The complex subtleties involved in the Pilates breath far surpass the traditional theory of merely exhaling on exertion as exemplified through the activity of weight lifting. The former considers the impact of breathing at the skeletal level of the body (a notion core to the Pilates approach altogether), and the latter, minding sheer muscular results. While Contrology involves the use of resistance—one’s own body weight (mat work) as well as external resistance (apparatuses)—the experience cannot be reduced to weight lifting. Rather, at its best, Contrology offers a much wider palette of sentient and somatic possibilities. According to Mr. Pilates, one must be properly instructed to be able to “draw the abdomen in and out at the same time”: to concentrically contract (shortening toward the belly of the muscle) the transversus abdominis—the lower crosswise muscle that acts as a support for the lumbar spine and lies between the thorax (chest) and the pelvis—while at the same time eccentrically contracting (expanding) the intercostal muscles wedded between each rib, together creating a deep intrinsic support throughout the skeleton. “Exhaling,” according to Pilates, is “an art in itself.” Blowing through an open and relaxed mouth activates the abdominal muscles in a concentric contraction toward the spine, expelling carbon dioxide out. Using the lungs like air bellows, the stable torso is able to maintain the spaciousness between the vertebral column that is achieved by inhaling, while a musculo-skeletal integration occurs—the core communication between bone and breath, mind and muscle.

e’ve all experienced it—the dry scratchiness and don’t forget the painful swallowing—it’s enough to make you want to swear off talking for the entire day. Sore throats are a common theme this time of year and unfortunately one of the biggest culprits behind unnecessary doctor visits. Most sore throats are brought on by viruses warning that you may be catching a cold. Since antibiotics and other medicines are ineffective against viruses, you can find relief in knowing your first line of defense may be as close as your kitchen cupboard. It’s no secret one of the best responses to a sore throat includes plenty of rest and liquids. Gargling solutions are also an effective alternative. For a simple solution, mix a teaspoon of salt into eight ounces warm water. Gargle the entire saltwater mixture several times a day. This will increase the blood supply to the area by washing away mucus and dilating capillaries, thereby enabling better circulation of infection-fighting antibodies. A popular household item, cayenne pepper is deemed a miracle spice for sore throats by many homeopaths. It’s suggested to add a ½ teaspoon of cayenne pepper to one cup of boiling water; stir well and gargle while mixture is very warm. This brings more circulation to the area and helps draw away the infection. To this formula you can add four

parts Echinacea, one part garlic bulb, and two parts peppermint leaves to one part cayenne. Other popular gargling solutions include:

Aloe vera juice: Gargle with Aloe Vera juice two times daily. Aloe Vera juice can be purchased at most health food stores and is useful for reducing the pain of a sore throat. Since Aloe Vera is not a medicine, it is one gargle that can be swallowed. As one is gargling, little sips can be swallowed in order to get deeper penetration down the throat. Because Aloe Vera is not a strong antiseptic, it will be less dramatic than some medications but since it can be done frequently, the overall effect has been reported to be excellent. Apple cider vinegar (ACV): Mix one teaspoon to two tablespoons of ACV in a glass of water. Gargle one mouthful every hour, swallowing afterward. The acid is very helpful in soothing and minimizing the sore throat. Note: After using this remedy be sure to rinse your mouth with water to prevent the acid from eroding the enamel on your teeth.

Grapefruit seed extract: This extract is a powerful all-around antimicrobial product and is an excellent disinfectant and antiseptic. Add five drops to a glass of water for a soothing gargle.

Lemon Juice: Add the juice of one lemon and one teaspoon of salt to one cup of warm water. Gargle three times a day for one minute. Slippery Elm: Used as an herbal remedy in North America for centuries. Slippery Elm is used to heal everything from wounds and burns to colds and coughs. Most health food stores sell it in the form of a lozenge, tablet or capsule, or coarsely powdered bark. Warm teas also are very soothing for a sore throat. The following natural ingredients can be used to make comforting teas that will calm the sorest of throat illnesses: • Chamomile blossoms • Echinacea • Ginger (helps to clear the throat) • Goldenseal (well-known for its antibiotic properties) • Hyssop (good for mild respiratory problems) • Licorice (will help clear mucus) • Marshmallow root bark (will coat the throat and relieve soreness and coughs) References: 1. major part of everyday healthy eating and ensuring that we are ingesting the correct amount of calories, fat, sodium, carbohydrates, etc., is properly reading a Nutrition Fact Label. The following are details to keep in mind every time you gaze at a product’s label before you choose to buy.

Start at the Top: • Serving Size should be listed in standard measurements - cups, ounces or pieces of items – to allow for easy comparison between similar foods. Serving sizes on Nutrition Facts Labels are loosely based on the amount of a product normally eaten in one sitting or reference amounts. Be sure to compare the listed serving size with how much you actually eat – if the serving size is 10 crackers, but you’ve eaten 20, then you need to double the calories, fat and so forth. • Servings Per Container helps you calculate calories and nutrients in an entire package; for instance, if there are 9 servings, then you can multiply calories and nutrients by 9 to get a total for the whole box. • Calories equal the amount of energy in the serving size of the particular food. In order to lose weight, you must take in fewer calories than what you burn off each day (basal metabolic rate). To maintain your current weight, you need to take in an equal number of calories to what you burn off each day. • The Nutrients portion of a label always lists, as mandated by the Food & Drug Administration (FDA), total calories, calories from fat, total fat, saturated fat, cholesterol, sodium, total carbohydrate, dietary fiber, sugars, protein, vitamin A, vitamin C, calcium and iron. Too much or too little of these nutrients have the greatest impact on your health. Limit all types of fat, cholesterol and sodium, and get more dietary fiber, vitamins A and C, calcium and iron. • The Percent Daily Value (%DV) indicates how much of a specific nutrient one serving of food contains compared with recommendations for an entire day. Used as a general frame of reference, the %DV is based on a standard 2,000 calorie diet. The foot note, typically at the very bottom of a label, reminds the consumer of this fact. If space allows, the label may include recommended amounts of certain nutrients based on a 2,000 and a 2,500 calorie diet. Variations on the traditional label are allowed by the FDA. For example, food for children under 2-years-old may not list information pertaining to the content of saturated fat, polyunsaturated fat, monounsaturated fat, cholesterol or calories from fat. Exceptions also exist for smaller packages with less label room. The FDA has extensive information regarding nutrition fact labels, package labeling and other food label facts pertinent to our health. Accurately reading the nutrition fact label is a very important starting point.

he purpose of this book by best-selling author and lecturer Marianne Williamson is to spiritually and psychologically reframe the transition from one phase of our lives into another, so that this new way of looking at things leads to a wonderful sense of empowerment, joy and awakening. Marianne begins the book with a quote from Carl Jung, “Thoroughly unprepared we take the step into the afternoon of life; worse still, we take this step with the false assumption that our truths and ideals will serve us as hitherto. But we cannot live the afternoon of life according to the programme of life’s morning; for what was great in the morning will be little at evening, and what in the morning was true will at evening have become a lie.� Marianne is very aware that every new experience confronts us with a choice, and the unfolding space of midlife and beyond is no exception. Midlife is not new territory, but the fact that so many women are reaching for some experience outside the culturally prescribed norms of “middle age� is new. She believes that through the experience of taking what we’ve learned in our youth and living our lives as an ongoing vision of possibilities, we become connected to a flow of life that seems too real to ever stop. In our fitness minded society, we tend to think of ‘fitness’ as buns of steel, rock hard abs, and training core muscles.

But what about our face? Is it ‘fit’? Our face, typically the first thing people see of us. It is our first impression. Of what importance is the face in today’s world? It’s so important that, according to the American Society of Plastic Surgeons, in 2007 alone, 595.7 million dollars were spent on facelifts, not including injection procedures like Botox, which represented another 4.7 million dollars! This does not include the billions of dollars spent every year on creams, lotions, serums, moisturizers, toners, scrubs and such. Here are a few basics of skin care: 1. Avoid overexposure to sun. Always use sunscreen of 15, preferably 30 up to 70 SPF. 2. Moisturize. Apply a light moisturizer at least in the morning and before bed. 3. Drink water. Our body is 60 -70% water - we need to replenish it for overall health. 4. Do not smoke. Studies show increased yellowing and skin wrinkling among smokers. 5. Eat properly. Fresh nutrition equals fresher skin. 6. Sleep. Sleep is needed to repair and rejuvenate the entire body - including the skin. Last, but not least, is the need for exercising the face. We take care to exercise our body: we walk, run, do aerobics and use an endless array of equipment for a workout.

But are we exercising our face muscles?

Like the other muscles in our body, our facial muscles will begin to lose their tone and begin to sag as we get older. This gives us a tired look even if we have taken good care of our skin. The face and neck are comprised of a network of muscles. How many muscles is dependent on how you count them. Some say 52 some 92 - there are yet other answers. (Many muscles have minor or major, posterior or inferior, etc.) What is important to know is: we need to strengthen and work these muscles if we wish to keep a more youthful look. Exercises generally consist of working these areas: forehead, eyes, mouth, cheeks, jaw and neck. The muscles overlap and are networked together so it is important to regularly work all the areas. They are easy to do and need no expensive apparatus - they can be done riding in a car, at your desk or watching TV. And they only take a few minutes. Here are a couple examples of recommended exercises (these are done sitting erect, looking forward - head held up yet comfortable): For the eyes: face forward, without moving your head, look to the right, then down, to the left then up and straight forward again. Do this 10 times one way, 10 the other. For the neck: Slide your tongue over your upper front teeth and then pull your bottom lip up. Then relax. Do this for 10 counts - two sets, one medium speed then the second slowly holding the stretch. For the mouth: “Suck your thumb”. Make a sucking motion toward your thumb (held to your mouth). Do this for two counts of 10 - one slowly, the next more quickly. Doing these types of exercises as a daily routine will result in a more sculptured and firm appearance. All organic ingredients using gluten free (GF) flours. ½ cup quinoa or cocunut flour (GF) 1 cup all-purpose baking flour (GF, Bob’s Red Mill) ¼ cup potato starch (GF) 1 tablespoon baking powder ½ teaspoon sea salt ½ cup honey

½ cup cold butter 2 eggs 1 cup buttermilk ½ cup currants ½ fine coconut flakes ½ cup walnut or pecan pieces Mix all dry ingredients together. Cut in the cold butter and blend. Mixture should look like small peas. Make a well in the center. Mix the eggs and buttermilk together then pour it into the well. Just mix until the dry ingredients are moist. Fold in the currants and walnut pieces. Bake in a pre-heated 400 degree oven for 10-15 minutes or until done (make sure to pay attention to your oven temperature). You can also use a convection bake oven; bake for 15 minutes.

Eating local and seasonal food often requires you to make changes in your shopping, meal planning, and food preparation habits. Try it for yourself: draw concentric circles of 50, 100, 150 and 200 mile radii on a map and see if you can base your diet on eating foods coming only from a given radius. You may be surprised to find that your tastes, and those of your family members, will change as you learn to eat locally available foods. These changes take time, so set a reachable goal and perhaps choose one or two new products each week to try. Buy fewer convenience foods, which, you have to admit, are often overly packaged, come from far-away places, and are less fresh and nutritious. Replace them with fresh vegetables, fruits, and products that burst with flavor and nutrients. For example, try baking with local honey instead of cane sugar. This substitution creates a taste sensation that will delight you and your family! simple and profound truth: health enriches life’s quality. Reaching thriving health seems a daunting journey with endless routes to explore. Less than 125 years ago, we lived our lives by firelight and feared the diseases passed from person to person, not caused by our lifestyle. Technological advances have filled our environment with thousands of toxins in our air, food and water. We have polluted our nest. Just as the earth’s ability to self renew is out of balance, so is the body’s. Now degenerative disease is racing across the globe: heart disease, cancer, obesity, diabetes and neuro-degenerative disease that lifestyle changes can reverse. Living Well May Not Come Easy! By Sally LeDuc, PT

hese shouts or affirmations are heard and implied nearly everywhere in our society today and in most every preventative health program being offered in our community, e.g. food markets, health fairs, health care centers, and the self-help literature. In some circles, use of the word well and wellness are common discourse. However, to define these words and apply a well concept to one’s life and live well everyday may not be so easy because the practical side of Living Well is often misunderstood. To simplify a vast body of literature and to offer a practical way to Be Well and have a Well lifestyle, six simple and practical wellness parameters should be considered: Physical, Emotional, Psychological, Social, Intellectual, and Spiritual Wellness. Physical wellness means to have a sense of resilience; Emotional wellness – a sense of centeredness; Psychological wellness – a sense of optimism; Social wellness – a sense of connectedness; Intellectual wellness – a sense of stimulating and enriching thought; Spiritual wellness – a sense of life purpose. How Well are you? If you were to give yourself a score on a scale of 1-10 for each of the six parameters what would those scores be? Would you have a high score in one or more areas and a very low score in one? Those who are advocates of wellness also use the word balance in their exclamations. What does being in balance mean? We hear the word often and we may even hear ourselves tell others to ‘get their life in balance.’ Using these six parameters and this simple scoring method can make understanding balance quite easy. If your scores were all

5s or 7s then you are in balance, if they were not then you are out of balance. It is more important to be in balance then to have several very high scores. How do you get in balance? The founders of this model and those who have spent years studying individuals respective of the six wellness parameters claim you should use your strengths to improve your weakness. In the past, many believed it more important to work on improving weaknesses then building upon the strengths. However, researchers today believe it is much more productive to use and build upon strengths rather than focus solely on weaknesses. For example, and in regard to wellness, if you have a great sense of social wellness but a very low sense of physical wellness or sense of resilience, why not get your close group of friends together to do a physical task, like a hike. Accomplishing an early morning hike to a lookout point above the valley with a close group of friends can help strengthen your sense of being physically resilient. Performed over and over again with your social group will help improve your sense of “I can do that;

I am resilient.” In this example, you are using your high sense of connectedness or social wellness to strengthen your lower sense of resilience. To Live Well and to Be Well may be concepts easy to intellectualize or cognitively understand but to apply the concepts to everyday life may not always be so easy. Hopefully this practical way of examining your life using the six parameters of wellness will help you apply the concepts, achieve greater balance in your life, and have a greater sense of Living Well. How Does Copper Work?

Copper is best absorbed and utilized in the body when cobalt, iron, zinc and folic acid is available. Although deficiency is rare, it can still happen. If copper is deficient in the body, iron is also normally in short supply, leading to anemia as well as the likelihood for infections, osteoporosis, thinning of bones, thyroid gland dysfunction, heart disease as well as nervous system problems. People with digestive tract disorder, such as those with Crohn’s or celiac disease, have a hard time absorbing copper and should supplement under the care of their physician. Large amounts of fructose can make a copper deficiency worse. If you regularly use antacids, your need for copper may be higher as well, as these can interfere with the body’s ability to absorb copper. Long-term use of zinc, another essential mineral, can block the absorption of copper, so it is important to regulate your copper intake to ensure a proper dosage daily. Do not take copper supplements and zinc supplements at the same time. It is best to take your copper supplement 2 hours after zinc supplements, to get the full benefit of each. Toxicity of copper is also extremely rare, and can be prevented by sticking to the daily recommendations for copper, and not going over 3mg/day. Toxic levels will lead to diarrhea, vomiting, liver damage as well as discoloration of the skin and hair, while mild excesses will result in fatigue, irritability, depression and loss of concentration and learning disabilities. Q: What is a “triple mix”? A: Triple mix is a very common term

given to a soil blend that is comprised of three parts. The most important question to find out is exactly what are the three parts of a “triple mix”. It is interesting to hear the response from your local landscape supplier when you ask them what is in their “triple mix”. Some of the most comical responses are: (1) Oh, it’s the three best parts of a good soil. (2) Ah Gee, let me see, I think it’s one part soil, one part compost, and one part manure. (3) I don’t know. (4) You better ask at the office. (5) What would you like it to be? As one can see, a “triple mix” is a relatively vague description. It can be three parts of anything. Ideally, a “triple mix” should be one part Sand, one part Garden Soil, and one part Compost. The overall performance of such a combination will be determined by the quality of each individual ingredient. The Sand should come from a proven source that does not contain high levels of sodium and has good physical characteristics that do not lead to compaction. Golf Course sand is a good example of a desirable sand. Concrete sand is often times not desirable. Garden Soil, sometimes called top soil, should come with some evidence that the supplier has had a soil analysis done to make sure that the nutrients are balanced and that there are not any toxic levels of minerals such as Boron or Sodium. The Compost is often times the most important ingredient added to a triple

mix. It is very important that the compost comes from a reputable supplier that can supply you with the recipe of what is in the compost and a written record of the composting process. Ultimately the quality of any soil blend is determined by how well it supports the growth of plants. A good supplier should have plants growing in their product.

Q: What is “Mushroom Compost”? A: “Mushroom Compost” is actually not

compost at all. It is spent mushroom substrate. Mushroom substrate is the growth media used to grow different varieties of mushrooms. The choice of mushroom species that a mushroom grower grows is dependent on the growth media available. Mushroom production is completely different from growing green plants. Mushrooms do not contain chlorophyll and therefore depend on other material for their food. Mushroom growers often times use compost turners to mix their mushroom substrate, however, if they were to truly compost the substrate, it would no longer grow mushrooms. Spent mushroom substrate is best used as an ingredient in a good compost recipe. In short, mushroom compost can often times cause more harm than good.

It’s Apple Hill Time! By Sara Piccola

L

ocated near the small city of Placerville, Apple Hill is a great way to kick off apple season and the holidays to come.

The great thing about Apple Hill is that it is close enough for a day trip but is enjoyable as an overnight trip, especially if you’re going to hit the wineries. Apple Hill consists of 56 ranches located off of Highway 50. Depending on where you want to begin your experience you can exit at Pollock Pines, Cedar Grove, or Camino. Once you are inside Apple Hill you can either drive from ranch to ranch, or as most recommend, park your car and hop on the Apple Hill® free shuttle. The shuttle buses run from 10am-5pm everyday and come every 15-30 minutes. The shuttle follows the Apple Hill® scenic route and allows visitors to get on and off at their own leisure. A day spent at Apple Hill is a great trip for everyone. Most ranches offer craft fairs that are full of unique handmade gifts. Tasty apple treats are abundant everywhere and will surely make everyone happy. The kids will have a grand time at the “kid friendly” ranches (some have petting zoo’s), pumpkin patches, and “pick-your-own” apple ranches. Some ranches even offer cooking classes and paper making using the pulp from apples. You can also visit with the first ever Apple Hill® ranch which contains a farm museum. Don’t forget about the wineries as mentioned earlier.

RADICAL FORGIVENESS ... How It Works By Colin Tipping

O

rdinary forgiveness is ‘letting bygones be bygones’. A certain willingness to forgive is implied but the belief something wrong happened is never questioned. “You did that to me, but I’ll let you off the hook and forgive you.� Research based at Seattle University, WA showed that ordinary forgiveness: (a) is universally difficult. (b) takes a long time - typically years. (Success was defined as finally feeling peaceful about the situation.) (c) The more people tried to ‘will’ forgiveness, the longer it took. (d) Most people required extensive therapy before any movement occurred at all. Radical Forgiveness on the other hand, has none of these difficulties. It can be virtually instantaneous; it is easy to do; it requires no therapy and very little intelligence beyond being able to follow some very simple steps.

Radical Forgiveness is Easy Radical Forgiveness is easy and instantaneous because it is a shift in perception that allows you to understand that, in truth, looked at from the perspective of the spiritual ‘big picture,’ nothing wrong ever happened. What brings about such a radical shift in perception - especially in situations where one feels very victimized and hurt? Surprisingly, it requires only a willingness to accept the possibility that life is not simply a series of random and haphazard events but is, in fact, a Divine plan that is unfolding for us exactly how we need it for our own spiritual growth. In other words, every event, however pleasant or unpleasant, has been called forth by a Higher Aspect of ourselves that knows exactly what we need for our own healing. When we live more out of that idea than the victim story, life begins to work perfectly. So how do we get there? Well, lack of forgiveness is nothing more than stuck energy, caused by past judgments, criticisms, blame and resentments. The way forward is to use tools or processes that help us release that stuck energy, raise our vibration and become the loving beings we have the potential to be.

The Process of Radical Forgiveness Radical Forgiveness is as basic as following these five steps:

1. Tell the Story: You must begin from where you are. You are a spiritual being having a human experience that involves emotional experiences. We make up that emotions are undesirable and wrong, so when we get upset about something we make up a ‘victim’s story’ and blame others for our unhappiness. Having that story heard and witnessed is the first step to letting it go. Likewise, the first step in releasing victimhood is to own it fully. So, in this step, you tell your story, and it is honored as your truth in the moment. 2. Feel the Feelings: Here you are encouraged to feel the feelings. It is the vital step that many so-called spiritual people want to leave out thinking that they shouldn’t have ‘negative’ 50

feelings. That’s denial and misses the crucial point that the feelings is where the authentic power is and that our strength, in fact, lies in our vulnerability and our willingness to show up as fully human. You cannot heal what you don’t feel. When people access their pain, this is the beginning of their healing. But this is not necessarily digging up the past. In fact, doing so is not necessary at all. Whatever is upsetting you now represents the past and following the feelings (the energy), as they are occurring while you tell your story, automatically heals the past pain. It is not even necessary to know what the original pain was.

3. Collapse the Story: This takes the power out of the victim story you made up. The Navajo Indians had a ceremony for doing this. Anyone with a grievance could come to the circle three times to tell their story, and they would be heard. On the fourth occasion everyone would turn their backs. “Enough already! Your story is just a story. There’s no real truth to it - it is just an illusion. We have heard it three times and we no longer wish to give it power. Let it go and then let yourself move towards what is really true.� 4. Do a Radical Forgiveness Reframe: Here we replace the ‘illusionary’ story with another story - the Radical Forgiveness ‘story.’ This one says that what appeared to have happened, far from being a tragedy, was in fact exactly what we wanted to experience and was in that sense, absolutely perfect. This is often very difficult to accept, but the good thing is it does not require you to see WHY it is perfect, or that you must GET the lesson involved. It is nearly always beyond our ability to comprehend anyway, so it’s a waste of time trying to figure it out. Willingness is all that is required You just have to be willing to open to the idea that there is a gift in it somewhere, and then choose peace. It really is that simple. When we get used to thinking this way, it’s amazing how simple and easy life becomes. It’s so freeing to stop resisting (judging) life and surrender to what wants to naturally occur. Life with Radical Forgiveness can be very sweet.

5. Integration: After you have allowed yourself to be willing to see the perfection in the situation, it is necessary to integrate that change at the cellular level. That means integrating it into the physical, mental, emotional and spiritual bodies so it becomes a part of who you are. It’s like saving what you have done on the computer to the hard drive. Only then will it become permanent. Breathwork is the best way to integrate this work. Other ways to integrate is through speaking affirmations, walking, doing forgiveness worksheets, ritual and ceremony. Radical Forgiveness is simple, quick and brings immediate relief. This forgiveness is permanent and when one has integrated it well enough into everyday life for it to become a way of life, life

becomes infinitely less stressful, more peaceful and a whole lot happier. Essential for Optimal Health or Dangerous?

H

uman Growth Hormone (HGH) or somatotropin is one of seven hormones produced by the anterior pituitary. It is secreted at night during sleep. It can also be stimulated by strenuous exercise, during starvation, or by low blood sugar reactions. It is an anabolic hormone that builds tissue. During puberty it is involved in the growth of bone, cartilage, internal organs, and tendons. HGH peaks in puberty and declines approximately 14% per decade. The human body remodels itself every few years. Eventually the anabolic or building process of tissues cannot keep up with the steady breakdown or catabolic processes. Body composition changes-for the worse, muscle and bone mass decline, and fat mass increases.

The Neuroendocrine Theory of Aging states that the aging process is due to declining hormone production rather than aging causing hormonal decline. Humans age because of declining hormones. In a landmark medical study by Rudman in 1990, and printed in The New England Journal of Medicine, entitled “Effects of Human Growth Hormone on men over 60 years of age”. How HGH deficiency is defined is controversial. The common measurement of the HGH axis is through a molecule called IGF-1. IGF-1 is produced by the liver in response to HGH stimulation. This biomarker of the HGH axis routinely goes down with aging. An average of 300 is normal for a 20 or 30 year old. By those numbers, almost all 40 year olds could be considered HGH deficient.

The cancer risk commonly linked to HGH seems to be mostly nonexistent. HGH has been approved by the FDA to treat short but otherwise healthy children. The FDA has approved HGH to treat HIV wasting disease. This AIDS associated disease has a host whose immune system is at very high risk of cancer from sarcomas and lymphomas. If HGH is so dangerous, how do you justify FDA approval for kids and HIV patients with compromised immune systems?

Endocrinologists believe that aging and HGH decline is normal and should not be treated. HGH replacement is costly and possibly dangerous, with many side effects. Traditional medicine recognizes that aging, HGH decline, and frailty are all related but no treatment is given, as aging is normal. Medical dogma was concerned with possible stimulation of latent cancer cells with HGH. Barbara Walters on “The View” recently stated that everyone knows that HGH causes cancer to spread like wildfire in the body. Athletes abusing HGH and anabolic steroids are common headlines. Congress has hearings on performance enhancing drugs. Perhaps if hormones are vilified in the press, legislation may be enacted to further limit use and abuse. Although this fact is little known, in 1996 HGH was approved by the FDA for Adult Onset HGH deficiency. Compounding pharmacies used to offer a generic HGH product. HGH is no longer available now due to pressure from the Pharmaceutical industry to “confiscate raw HGH from overseas in customs.” The FDA and the DEA are seizing foreign products and raw material. It is curious that the Feds are involved in curtailing hormones but seem powerless to curtail the inflow of illicit drugs into the country. The only HGH available currently is from the Pharmaceutical industry-at twice the

HGH has been used for 40 plus years in pituitary dwarfs who are lacking HGH. A review article in 2002 was entitled, “Still no increase in rates of cancer in HGH deficient children.” Replacing HGH physiologically in those patients has normalized the lifespan and reduced the heart disease associated with HGH deficiency. There is no increase in cancer. Multiple peer reviewed medical studies have shown improvement and reversal of disease states. HGH improves the brain. Studies show improved memory, cognition, work performance, and motivation. Beta amyloid plaque, which is involved in the Alzheimers disease cascade, is lowered by HGH. HGH deficiency is associated with osteoporosis. HGH treatment results in the reversal of osteoporosis.

There are some known side effects of HGH usage including fluid retention, insulin resistance, joint aches, and carpal tunnel. This can be controlled by lowering the dose, temporarily stopping HGH, and restarting HGH at a lower dose. HGH use in Age Management Medicine is physiologic replacement of HGH to optimize health and improve quality of life. In 1998, Peter Sonksen wrote on HGH and IGF-1 Research: “GH is essential for normal adult life, and without it, life expectancy is shortened, energy and vitality are reduced, and the quality of life is impaired. Anteriorly, the thoracic cavity softens and descends downward from the first rib and sternum, while posteriorly the spine both ascends (crown of the head) and descends (sacral-coccygeal) along the two-way vertical line of gravity, head to foot. Due to the crus (cross), architectural attachments of the diaphragm that connect to the lumbar vertebra, the Pilates “posterior-lateral” inhale and “deep abdominal” exhale optimizes the way healthy breathing impacts on the skeleton: inhaling is an extensor, creating space between the joints; exhaling is a flexor, bending the body or returning it to a neutral position. A primary precept of Contrology is initiating movement from the bones, while allowing the muscles to do what they are designed to do for each action, without compensation, strain, or over-exertion. Poetically, the Pilates breath reunites our aerating experience to the fluid and spatial act of rhythmic motion. The entire breathing project is a conscious partici-

pation with the body’s architectonics for psycho-physical levitation. After all, we are made in the image of levers, to be able to lift ourselves and one another, not by dead weight, but rather by rising to the occasion of our capacity to lift upward, body and soul, while also being grounded, gravity and grace. The breadth and ethical scope of the way Joseph Pilates instructs us to breathe prepares us to re-imagine the human body’s harmonious manifestations of its intentional thought. In a 1962 Sports Illustrated interview, Mr. Pilates suggests that to be fit, one must “act like an animal.” For the ancient Greeks, (an important reference for Joseph Pilates), the term fit originally meant “harmony.” In this light, Pilates implies that by using our instinctive human gifts, we gain in moral measure the kind of grace, aptitude, strength, and agility that animals exhibit under ordinary healthy conditions. Living in harmony from and with the core of our bodily beings ul-

timately generates conditions by which all of us can learn to live peaceably—with integrity and with our vulnerabilities and limitations—mind, body, and spirit. What the philosophy of Contrology as a whole underscores is that we are, each of us, endowed with the birthright to experience the rondos aeternus—the eternal round and “return to life”—in the moment-tomoment dance of our fully articulating and inspiring bodies. Who Regulates

Pet Food?

Whose responsibility is it to make sure pet food is safe and healthy?

T

here are three different organizations who split some responsibility for pet food: the FDA Center for Veterinary Medicine (CVM), the Association of American Feed Control Officials (AAFCO), and the Pet Food Institute (PFI).

FDA Center for Veterinary Medicine (FDA/CVM) The Center for Veterinary Medicine is the branch of the FDA that deals with all things animal. The FDA/CVM describes its mission as a “consumer protection organization [that fosters] public and animal health by approving safe and effective products for animals.” They are responsible for the evaluation, approval and/or surveillance of animal drugs, food additives, feed ingredients, and animal devices. They don’t have any regulatory control over the source of pet food ingredients, which means that pet food companies can include animal “by-products” (like feathers and fur, brains, and other bits that have no nutritional value without fearing interference from the CVM. CVM investigates pet food in cases of widespread pet illness or death. They also investigate health claims on pet food–for example, if cat food says it’s good for the bladder, CVM has to make sure it’s true. The CVM doesn’t regularly test pet food to make sure it’s safe and healthy; the government’s only pet food authority is really no authority at all.

Association of American Feed Control Officials (AAFCO) CVM relies on AAFCO. AAFCO is an organization, not a government agency. They are made up of government representatives, pet food companies, the Pet Food Institute and rendering industries. AAFCO has no regulatory authority, but state governments rely on them to set model standards which the states can adopt. AAFCO also defines food ingredients; they’re the ones who decide what counts as “by-products” in your pet food. AAFCO’s definitions are considered standard, but they’re not enforced.

Unlike CVM, AAFCO does run some tests on pet food. They analyze new foods to make sure they contain the ratio of protein, fat, fiber and minerals that they state on the label. Like CVM, though, AAFCO doesn’t regulate where that protein, fat, or fiber comes from, or if it’s digestible and safe, as long as it’s there. They also do feed trials, where new pet foods are fed to animals to make sure they keep the animal healthy–feed trials are only done for foods labeled as “complete and balanced.” The trials include 8 animals minimum, 25 percent of them can be removed from the test, and the remaining animals can lose up to 15 percent of their starting body weight.

Pet Food Institute (PFI) Started in 1958, the Pet Food Institute is “the voice of U.S. pet food manufacturers.” They represent the interests of 98 percent of all pet food manufacturers. Their whole job is to represent the pet food industry to the public and the media, and lobby Congress on the Industry’s behalf. They, along with pet food manufacturers, play a major role in setting AAFCO’s standards. They exist to protect the pet food industry, not pets.

States are the only ones who have any real control over pet food standards, and since they base their standards on AAFCO’s recommendations, the standards are minimal to say the least. The amount of regular testing done on pet food varies from state to state, but state standards are written in such a way that tests are likely to miss major pet food problems, like the presence of toxic amounts of melamine.

So, who’s protecting pets?

There are almost no pet food regulations, and the regulations that do exist are hardly enforced. Several case studies of toxic chemicals in commercial pet foods illustrate the problems inherent in this lack of regulation. It is relatively easy for a manufacturer to include a chemical ingredient in pet food. Any food additive that has been cleared by the FDA under the extensive “Generally Recognized As Safe” (GRAS) category is permitted. When it comes to the presence of dubious food additives, chemical pollutants or untested ingredients in pet food, pets and pet owners are still largely on their own. What we really need are strong government standards for pet food that address everything from raw ingredients to pet food preservatives, and a transparent labeling system to allow pet owners to choose what they feel is best for their pets without guessing!
