hen I think of fall or autumn, earthy c o l o r s s u ch a s b u r n t orange, deep purples and browns come to mind. I ponder the transitioning seasonal vegetation and how it enters its final days. Even the annuals come of age during this time. To me, it signifies the last stage of the life cycle, before “death” begets closure.
However, it does not stir sadness or a melancholy mood. Instead, it produces a calm awareness and a state of preparedness for the next phase. I see it as sheer brilliance; the kind of wisdom one attains from a full life. Those grainy colors and withering leaves, they remind me of the strength and knowledge that lies within.
Although it may wilt and fade or become dry and brown, the earth demonstrates its perspicacity through its robust autumnal stage. This month’s issue offers a few ways you can increase your inner strength and smarts. Check out “Endurance Training for the Whole Being,” by Rachael L. Scala. The article provides insight on the importance of nutrition during heavy endurance training. Take a look at our “Ingredient Watch: The Guide to Grains,” for a closer look at the world of grains. And, if you like tomatoes, try Marie-Claire’s “Sloppy Jomato” recipe for a quick and easy raw entrèe.

lbeit wheat is not for everyone--in some cases it can be seriously ill-producing--it is still one of the top three cereal grain crops in the world. According to some sources, wheat is grown on more land area than any other commercial crop. Along with rice, it is one of the main human food crops of this time. Just pick up a food product, any product, and read the label. It truly does not matter if you are at a national chain grocery store or a local food co-op, a lot of the labels will include “wheat.” It is added for its higher nutritional value, in comparison with other staple foods. It is high in protein and several vitamins and minerals. Regardless if you love wheat, have wheat and gluten sensitivities or just prefer to stay away from wheat-containing carbs, it’s safe to say that most of us can admire those amber waves of grain that so eloquently paint our bountiful prairie and farmlands.

H
ave you been running from God? Have you been running from the reality that life knows you, life sees you, and life expects something from you? This is the reality of God.
Outside of prayer and meditation, most religious groups do not teach their members how to interpret the language of God. Shouldn’t this be a priority if you really want people to have a vital, personal relationship with their Creator? The bible is full of references to dreams, visions, signs and synchronicities, but when was the last time you attended a religious service that offered instruction on these things, or emphasized their relevance and importance to a God-centered life?
One reason we run from God is that we are afraid to have a genuine encounter and relationship with Him. Most people prefer the idea of God to the reality of God. We like God in the abstract rather than the personal, in the past or future rather than the present, distant rather than intimate, weak rather than strong, and without authority rather than with authority. It seems that most of us would rather believe in God than know God.
It’s not so hard to run from God anymore. When we fail to learn His language, it’s easy to forget that He even speaks.
Sometimes we run from God because we don’t want to be accountable to Him. We don’t want His input, His requests or expectations. We want to keep God at a distance so that we can hear Him when we want to, and tune Him out when we don’t. Answering to God, and knowing the importance of answering to God, is more of a relationship than many people want.

Ironically, one of the ways we run from God is by running to church, an ashram or temple. We tell ourselves we’re trying to find God but, more frequently, we’re trying to lose Him. Organized religion promises a certain safety to our ego. Despite the rhetoric of most religious institutions, they generally defend against a personal encounter with God. A living relationship with God implies transformation and change. Groups, however, prefer the status quo. Only so much individuality, innovation and independent thinking is tolerated, and then, only slowly. People join groups, including religious groups, to be supported, not pushed. They want familiarity over dynamism, acceptance over challenge, reassurance over self-examination, peace over struggle and personal sacrifice.

here’s almost nothing worse than experiencing ear pain, itching, loss of hearing, or a sinus headache. Ear Candling is an ancient practice, dating back to biblical times in Egypt, the Orient, as well as European cultures. This simple, gentle treatment removes wax from the ear, improving your sense of well-being, physical, mental and even spiritual. The candle is a long hollow tube made from unbleached muslin immersed in an aromatic herbal solution. After it dries, the cone is then dipped into beeswax. The cone or candle is then placed into the ear opening and the top of the cone is lit; soft warm white smoke billows down the tube into the ear and softens the wax. The flame on top of the cone creates a vacuum that pulls out built up wax, toxins, bacteria, dirt and residue from past medications. Chronic Dehydration Part 2, Is Your Body Dying for Water?

ince 75 percent of one’s body and 85 percent of the brain is supposed to be water, unless you drink at least six to ten glasses of water each day, you’re probably dehydrated to some extent. It’s that simple; you are water and must put effort into staying that way. Because each body cell requires adequate water to stay healthy, long-term water shortage can manifest itself in as many different ways as medicine has invented diseases.
even gaunt looking, because you’re so dehydrated your body is beginning to shrivel up? If your maladies keep multiplying, you’re not necessarily “getting older,” you could be getting more seriously dehydrated.
Most people recognize the acute form of dehydration (because it’s hard to ignore) when a person suddenly gets severe muscle cramps, becomes dizzy, then wants to stop everything and collapse. Few of us realize there is long-term chronic dehydration (because it’s easy to ignore), and far too many pooh-pooh the fact that it can seriously damage your health.
For those who like scientific proof, there are various dehydration indicators which can be found in a blood test, says Martin Rutherford, D.C., a Reno chiropractor who treats the patient (and not the diagnosis) for many acute and chronic conditions.
Even when we think we drink enough water, we could still be dry inside. For such an important part of our health, there are several ways to determine chronic dehydration.
Your body’s pH level will be in the acid range instead of the slightly alkaline range of 7.4. On the pH scale, 1 to 7 is the acid range, 7-14 is the alkaline area. Being too alkaline is as bad as being too acidic.
Because it’s what we’re taught, we wait for the muscle cramps and exhaustion to realize there is chronic water loss. But that doesn’t happen with long-term dehydration because it develops slowly over the months and years. It’s much like growing older—you don’t notice it while it’s happening.
A high hemoglobin count acts as a buffer or bicarbonate to keep the body alkaline. Your red blood cell count may be too high at greater than 4.5 (women) or 4.9 (men). The red blood cells will have low oxygen content, and there will be more of them than normal to meet oxygen demand.
Look at yourself in a 20 year old photo and notice the changes your body has made in the intervening years. Then look at yourself again. Are you “plumper” than you used to be? That could be because your body is desperately trying to hold onto what little water you’re giving it. Or are you now much thinner,

f you can carve 20 minutes a day out of your busy schedule to do self hypnosis, you’ll be able to significantly increase your feeling of well being, your self esteem and your sense of empowerment.

For instance, being told by your mate every day that you’re a wonderful person will probably have a very positive cumulative effect on your self esteem. However, watching the negativity of TV news programs day after day can profoundly change how you approach life. So, ideas that we expose ourselves to on a daily basis shape who and what we are and what we believe about ourselves and about what we can accomplish.
A suggestion is an idea designed to create a response in thought or behavior. We get many external suggestions: from other people, from the culture, from advertising. Self suggestions, on the other hand, are ideas we propose to ourselves, ideas that come from our own minds. Suggestions are like food—food for the mind. The suggestions we take in on a daily basis, whether from an external source or from

minds are not separate islands with a remote relationship to our bodies. They are intricately linked. When we think a happy thought, our subconscious mind instructs our body to produce endorphins, the pain-killing hormones and serotonin, the feel-good hormone. The same is true of negatives: our bodies produce cortisol, the stress hormone, which damages our cells and compromises our immune system.
relaxation, deep breathing, calming music, a certain favorite visualization or all of the above. Then repeat your affirmations to yourself if you have memorized them or read them to yourself. Some people find it helpful to record them and just listen. That seems to be the easiest way. We need to find a way to be more self empowered in every way: learn how to heal ourselves, be self motivated, understand that we’re responsible to ourselves, for who we are and what we create. When we give that job away to someone else, we’re disempowering ourselves. When we know what we want, and take action to make it happen, we are so much happier, have greater self esteem and are able to actually create the situations and conditions we want. If we can reprogram our subconscious mind to assist us in getting there, what could be better?
In fact, when we experience anything, our subconscious mind stores all our emotional and physical reactions in its memory for future reference. Our bodies also store those experiences. Just like we don’t want to eat junk food very often, we shouldn’t engage in “junk thoughts” because they’ll have the same negative effect. It’s crucial to find ways to supplement our mental nutrition; we must find ways to supply ourselves with healthful, uplifting suggestions in order to counteract the negative ones that bombard us every day.

Reprogram your subconscious mind, empower yourself, and move on toward the life you want to live!
We need to find a way to be more self empowered in every way: learn how to heal ourselves, be self motivated, understand that we’re responsible to ourselves, for who we are and what we create.

We often have expected affirmations to change our behavior, but sometimes they don’t “stick.” That’s because the subconscious won’t accept them unless they’re repeated often, and accompanied by a consistent and motivating emotion. Also, many of our notions to change our behavior or habits never “take” because they are contradicted by other ideas already in our subconscious. Therefore, a structured method for delivering consistent messages to the subconscious is needed. Blood pressure can be higher or lower than desirable. You may have low blood pressure with a rapid pulse rate because without enough blood pressure, the heart must work faster to get the blood moving.
A well hydrated person will have one longitudinal furrow in the tongue. A person with depleted fluids may have additional furrows.
Kidney BUN (blood urea nitrogen) greater than 16 or 5.7. The liver produces urea as a waste product of protein digestion and it is removed from the blood by the kidneys when they are filtering properly. Effectiveness of kidney filtration is hampered by a low water supply. Creatinine levels are elevated (.65-.09) signaling kidney trouble. Albumin may be greater than 5.0 or 50g/L.
The simplest dehydration indicator is the color of your urine. Dehydrated brain cells release an antidiuretic hormone that lowers urine output to conserve water, so the urine becomes more concentrated (darker in color). As the urine continues to darken, there is less fluid output flushing away your cell waste products, so this waste accumulates in cells and poisons them. When water intake is high enough, less antidiuretic hormone is produced, so the kidneys produce more urine to dilute the color and it becomes lighter.
If you’ve had a recent blood test, you can look at your results for these red flags that indicate your body may be in trouble from water deficiency. Drawing conclusions from a blood test is very complex, so for evaluation present yours to someone qualified in dehydration.
Gauging your output color after you’ve urinated is not a reliable test because the urine has been diluted by the water in the bowl. The accurate method is to catch a few ounces in a widemouthed plastic or glass container. Then you are judging the actual urine color.

Clear or very pale yellow means you’re adequately hydrated. So pat yourself on the back and keep drinking (water).
Blood pressure will drop when a person goes from lying down to standing up. This may even result in dizziness or fainting.
Dark yellow or gold is a sure sign dehydration has begun unless you are consuming B Vitamins, laxatives with cascara or senna, medications like chloroquine, nitrofurantoin, primaquine, methocarbamol or metronidazole.
Capillary refill time is noted by holding your hand at the same level as the heart and then pressing on the pad of the middle finger for five seconds. This will turn the finger pad white. After pressure release, it takes less than two seconds for normal color to return.

laxatives, excessive carrots, Vitamin C and medications such as pyridium. Brown urine means severe dehydration is destroying your tissues and organs. Pink or red from blood in the urine are signs of kidney or bladder infection, or too many beets, berries or food dyes. The urine color chart is easy for even children to understand. It costs you nothing and is always there to check for color. Discounting the other causes, when your urine color crosses the red line, you should make drinking water a higher priority. If your urine color is constantly amber or even brownish, it should scare you into immediate re-hydration mode. The following are some simple things enjoyed by wellhydrated people: Fingernails are strong and do not chip or break easily Bowel movements are easy and quick There is no heartburn after meals Skin is soft and itch free Little is spent on chap sticks because lips are usually moist There are no hay fever medications in your cabinet “Colds” (which are the effects of hay fever) are caught by everyone else There’s enough energy to last until bedtime If your life has the opposite of these things, drink a glass of water and be sure to read next month’s article about how the American diet and lifestyle affect your hydration level. Mycoplasma:

A manufactured disease agent? Written By Robert A. Eslinger, D.O., H.M.D.
here are 200 species of Mycoplasma. Most are innocuous and do no harm, only four or five are pathogenic. Mycoplasma fermentans is a disease agent that is not a bacterium and not a virus; it is a mutated form of the Brucella bacterium, combined with a visna virus. Mycoplasma used to be very innocuous, but biological warfare research conducted between 1942 and the present time has resulted in the creation of more deadly and infectious forms of Mycoplasma. Researchers extracted this mycoplasma from the Brucella bacterium and actually reduced the disease to a crystalline form. They “weapon zed” it and tested it on an unsuspecting public in North America. Dr. Maurice Hilleman, chief virologist for the pharmaceutical company Merck Sharp & Dohme, stated that this disease agent is now carried by everybody in North America, and possibly most people throughout the world. According to Dr. Shyh-Ching Lo, senior researcher at The Armed Forces Institute of Pathology and one of America’s top mycoplasma researchers, this disease agent causes many illnesses including AIDS, cancer, chronic fatigue syndrome/ fibromyalgia, Chrohn’s colitis, Type I diabetes, multiple sclerosis, Parkinson’s disease and collagen-vascular diseases such as rheumatoid arthritis and Alzheimer’s. Official government documents in both the US and Canada, as well as articles in the New England Journal of Medicine and the Journal of the American Medical Association document this. The mycoplasma acts by entering into the individual cells of the body, depending on your genetic predisposition. Once the mycoplasma gets into the cell, it can lie there dormant, sometimes for 10, 20 or 30 years, until something like trauma or a vaccination that doesn’t take occurs, and it is then triggered. Many doctors don’t know about this mycoplasma disease agent because it was developed by the US military in biological warfare

experimentation, and it was not made public. This pathogen was patented by the US military and Dr. Shyh-Ching Lo. Brucella is a disease agent that doesn’t kill people, it disables them. The crystalline disease agent goes into solution in the blood; ordinary blood and tissue tests will not reveal its presence. So, the doctor thinks your complaint is “all in your head.” Mosquito vector “testing” was carried out in 1957, by the US Army and the CIA, in the town of Punta Gorda, Florida. The mosquitoes were infected in Canada by Dr. Guilford B. Reed at Queen’s University, bred in Belleville, Ontario and taken down to Punta Gorda and released. A report in The New England Journal of Medicine revealed that one of the first “outbreaks” of chronic fatigue syndrome was in Punta Gorda, Florida that same year. It was a “strange coincidence” that a week before these people “came down” with this disease, there was a huge influx of mosquitoes noted in and around the town! Leg Pain—Peripheral Artery Disease and a non-drug therapeutic approach

s clinic director of a chiropractic and alternative functional medicine clinic, we treat a lot of patients with “leg pain.” We treat and have written about how to diagnose the variable cause of leg pain ranging from sciatica, to I band syndromes, to peripheral neuropathy, fibromyalgia, statin and vitamin D excess induced pains and more. But amazingly, very few patients have been screened for the possibility of peripheral artery disease (PAD). The National Heart, Lung and Blood Institute estimates that about 50 percent (8-12 million) of the US adults older than 65 have lower extremity athrosclerosis, commonly knows as peripheral artery

disease (PAD). Despite the high prevalence, many patients and clinicians do not immediately consider PAD as a potential cause of leg pain in older people. The disease occurs equally in men and post-menopausal women, but men are more likely to have symptoms. Once recognized, modification of risk factors and nondrug therapeutic interventions can reduce PAD progression and

improve symptoms on functional status. I personally would argue that even non-symptomatic PAD warrants aggressive treatment to reduce cardiovascular risk factors because PAD can be a harbinger of other cardiovascular problems.

There are sophisticated exam procedures that can be very diagnostically accurate in the PAD evaluation. They are also very expensive and frequently deemed not medically necessary by the insurance industry. However, the simple in-office evaluation of the ankle pulse can rapidly focus the diagnostic evaluation. The taking of the pulses—all of the pulses—in all leg pain cases should be a standard procedure. The ABI test is the most commonly used and most useful diagnostic test for PAD. It’s a simple test that can be done in the office in less than five minutes. The ABI test compares blood pressure in the ankle with blood pressure in the arm. Other causes of leg pain should also be ruled out with a proper orthopedic exam for low back contributions and neurologic exam for peripheral neuropathy or fibromyalgia contributions also need to occur. A drug review and general symptoms exam should be performed to rule out drug side effects, nutritional deficiencies or other metabolic contributions.

These panels also allow for non-drug treatment evaluation of oxidative stress (the process that breaks down your arterial walls) and lipid/ cholesterol problems. Non-drug blood pressure control and regulation. Non-drug balanced glucose blood sugar regulation. Assessing immune system dysfunction (maybe the most important and underappreciated aspect of PAD and coronary artery disease as this process also damages the arteries in legs and heart) and believe it or not, exercise.

Most PAD occurs in the calves and affects walking. But 50 percent may affect other areas of the legs and may not stop the patient from walking or be asymptomatic. The bottom line is if you have leg pain, get it checked. The functional medicine approach is a comprehensive diagnostic approach that fully assesses all potential aspects of leg pain, is patient-centered and treats the patient and not the diagnosis. Its non-drug approaches are safe and effective alternatives to more aggressive treatments that frequently carry with them significant side effects.
Anything short of the above referenced exam is insufficient and can result in a long road of misdiagnosis.

Life’s Simple, but Important, Health Decisions

Healthy Oils
Eating bad oils, especially Trans fats such as margarine and commercial cooking oils, cause inflammation and depletion of good anti-inflammatory oils. Trans fats are shaped like railroad tracks and were developed by the Germans in WWII by bubbling hydrogen through fat to give it a longer shelf life, which they sent to the troupes on the Eastern front. Trans fats block cis fats, the good guys, and promote oxidation and inflammation in our bodies. Cis fats are shaped like a half moon. Regular commercial, cooking oils are processed as follows:
This is the type of oil you are getting in commercial foods, and when eating out. It is much better to use organic, cold pressed oils in salads such as olive oil, safflower oil and sunflower seed oil. When heating oils, the best is grape seed oil, as it does not go rancid at high heat and has a neutral flavor. Coconut oil also tolerates high heat well without going rancid. Of course you get the coconut flavor, which many people love. Olive oil at high temperatures does go rancid. Actually, lard and Crisco are not all bad as we need saturated fats as well as unsaturated fats in our diet.

Salt has been much maligned by health experts in recent years. Even the National Institutes of Health have lately been recanting earlier warnings about salt and high blood pressure. There are great differences among salts and it is important to understand that regular table salt is dried (anti-caking) with aluminum, which is related to Alzheimer’s disease, diabetes and hypertension. Table salt is also heated to 1,1000F to make it is pure white, which drives off all the trace minerals that we need. Always use sea salt! Salts such as Celtic salt from France contain 13 percent trace minerals as does Real Salt from Utah. We love dirty salt because it is full of these important, trace minerals. Some salts are high in fluoride and bromide such as Himalayan salt and Baleine from Morton; they should be avoided. People with burned out adrenals, almost all of us, urinate out salt and other minerals and need to increase salt use. Remember my favorite saying, “when your adrenals are weak you leak.” Weak adrenal people, tired and dizzy, can drink ½ tsp of sea salt in one glass of water in the AM and early afternoon to improve their energy. Carry a little salt container of good salt when you go to restaurants or on trips.

’ve sat on the floor in my hallway crying. I have felt like no matter how much I love my children and no matter how much I do for them, they will never feel my love and never be happy. This might sound like the common complaint of many parents; their children do not appreciate all they do for them. However, let me explain to you why it’s not the same thing at all.
had a hard birthing experience? What if their child was removed from them immediately after birth for any extended amount of time? What if the pregnancy wasn’t planned? Dr. Krebs says that other bonding experiences are built upon this initial bonding opportunity and this can be problematic for adopted children. However he says, and it has been my family’s experience also, there are things that can be done to remedy these attachment issues and that it is well worth the effort.
Dr. Charles T. Krebs explains the importance of the bonding that takes place between mom and baby immediately after birth. “Children are presented to their mother immediately after birth, at that critical time her brain is primed with a hormone, but it’s actually a neurotransmitter in the brain called Oxytocin, and when Oxytocin fires in the brain with the picture of that child’s face, we have this natural inborn system called the nurturing system that’s within our brain stem, and that baby’s face elicits a release of additional Oxytocin and that initiates a bonding.”
All over the world, people have this inborn nurturing response. The sounds we make at babies are Universal and are out of our brain stems. These are called Brain Stem Vocalizations and are used to elicit a response from the baby. Babies’ brains are wired to respond. This is a secondary bonding response and different than that initial bonding with mom. is difficult for them to display the receipt of the love, (Reactive Attachment Disorder) because they didn’t have that initial bonding experience, (Or have had initial bonds broken) which automatically elicits further expressions of bonding when you are in those particular situations. And what are those experiences? You look, you smile, you’re happy, you feel good. You’ve got dopamine and Opiates released in your brain that say, ‘I feel good when I look at that person and I want to interact with them.”
Like I said, I was desperate to enjoy motherhood. I was desperate for my child to actually feel the love the family was giving her. I didn’t want her to go through this life in that Separation Distress System.
Before we started attachment parenting and had our daughter’s Brain Integration done I would tell people, and it was no exaggeration, our daughter could fight and argue about us asking her the simplest of things. Things that normally evoke a good response like, want to go to the park? Want a cookie? Those questions were often met with breakdowns that could last for 45 minutes, and they were happening five to eight times a day. “We also have on our brain stem beside the nurturing system, we have another system that they initially called the panic system because it was an animal model and they watched what animals did…So, what happens if you separate a chick from the hen, a kitten from the cat, or a child from its mother? The chick goes peep! peep! peep! The kitten goes meow! Meow! Meow! And the child goes, Mommy! Mommy! Mommy! Endurance Training for the Whole Being Part I: Nutrition

ate summer may find you, among many in our active corner, deep in the rhythm of endurance training. It’s the best time of year to train for such events, be it a marathon, century ride or triathlon. Perhaps you’re a seasoned athlete and have your training program and diet in place after careful adjustments and years of experience. You know what to eat before speed runs versus long runs, or what gives you extra power during giant climbs on your road bike. In this two-part article, I will examine more holistic elements of staying strong and healthy during endurance training.
There’s a difference between pre and post workout foods, so taking into account the source of those foods is essential. Before a run, I prefer to have a small serving of complex carbs such as a piece of multigrain toast. During prolonged exercise, sustaining with electrolytes and clean (non-GMO) simple carbs keeps me going. After, I make sure and get some form of protein. I avoid certain foods because they caused digestive issues with me, which are amplified if I eat them around working out— milk products, red meat and sugar. While I don’t avoid them altogether, I find that I feel at my optimal performance when I don’t eat them immediately surrounding my runs.
For me, eating has been a rewarding element of training, particularly for marathons. The day before my first marathon, I joked about eating pizza all day (yes, I had three slices) to “carbload” before the race. I ran my best time, a 3:49 the next day.
Quality > Quantity Since choosing more nutrient-dense, clean foods, I need less volume (i.e. a gluten-free fruit and nut bar vs. a handful of animal crackers). Getting plenty of in-season fruits and vegetables, in creative ways, has helped with this as well. Why would I eat apples in August when they are shipped from halfway around the world and have far less flavor and nutrients than their peak in fall? I often blend up whatever fruits and veggies on hand in my blender with water and lemon juice (sometimes almond milk if I have a sweet tooth). See one of my sample recipes below. I make dinners that are balanced between high nutrient carbs, protein, vegetables, and of course, flavor. There’s no reason that food should taste bland while working out—though I advise against very spicy, salty or sugary things close to workouts.
By the time you read this, I will have run my third marathon. I’ve taken a more comprehensive approach to the physical, nutritive, and spiritual elements of training than ever before. While the pizza may have worked, I now eat more mindfully so that my eating both enhances my training and boosts my overall health. As I write this, I am enjoying my favorite power breakfast—a green smoothie with ground flax and a piece of peanut butter toast—this will charge me for my mountain bike ride but not weigh me down.

Hydration
Carbohydrates
Hydration is a more sensitive and important issue in training. If you’re like me, you drink as much as you can when you can— water, electrolyte tabs, coconut water, sparkling water, etc. I make sure to keep my fridge stocked with light, unprocessed drinks and ALWAYS carry a water bottle with me to work, driving, etc.
Whole grain—can be misleading on labels—make sure it’s not mixed with bleached, processed junk
A standard recommendation is to drink eight oz of water every 15-30 minutes of activity. Once you pass the 30-minute mark, you may need more carbs and electrolytes to avoid crashing. Here, I use plant-based electrolyte mixes and add them to water—a hydration belt or Camelbak is a great investment to keep yourself healthy out on longer expeditions (i.e. 20 milers). Be sure you’re replenishing essential minerals when drinking a great amount of water—a great and enjoyable way to do this is to drink coconut water! Better than conventional sports drinks, it’s a naturally isotonic beverage and contains plenty of electrolytes.
Non-corn-based sugars: honey, maple syrup, agave, molasses, organic cane sugar

White meats: chicken turkey some pork, all free-range and organic if possible

Ideally, we could replenish and care for the body with food only. Realistically, there are certain ratios and quantities that are more easily obtained from supplements. The word “supplement” has been a crucial reminder for me that they are just supplements, meaning contributing to the diet I already follow. Since animal protein causes stomach problems for me, I seek plant-based, GMO-free sources of proteins and amino acids for muscle repair and proper function. I usually mix it with water or almond milk and some frozen fruit; the result is delicious. My muscles have felt more fortified this training session and I feel that recovery comes much quicker.

All the rules, regimens, timing and measuring can add unnecessary stress to your training regimen. Make sure you are allowing enjoyment into your routine as well. You will come to enjoy treats more when you eat more consciously. Appreciate all food for what it does in your body during high-intensity training periods and do not punish yourself for indulging occasionally. Ultimately, use this approach as a guideline for eating in a way that optimizes your overall quality of life.

Quinoa. Beans. Grilled Veggies. Homemade peanut sauce (2 parts peanut butter to 1 part soy sauce to 1 part agave nectar to taste)—portion using your fist—eat around 11-12 hours before your workout.

djusting to a new home is a process—a process that never ceases to amaze me. There are lessons of letting go, accommodation and discerning what matters to you now. Often for me, it’s a time to latterly make another choice and to choose to live my life a different way.
of tidying up the kitchen and bedroom and then something (Spirit) whispered to me, “Go out front.” I turned on a dime. Left the bed unmade and walked down the hall to the living room. As I entered I saw a woman endeavoring to make her way out my front door! I quickly scanned over to where my laptop was sitting on the coffee table and sure enough, it was gone. “Stop right there!” I insisted.
Recently, I took a small “mother-in-law” apartment here in the Bay Area to be closer to my work, church and the arts community I so love. I often imagined and affirmed having a second home—now I have one! My Godson and his friends are now holding camp in what I’m calling my “country house.” A country house that is evolving into a “frat house,” but that’s another story and another lesson.
She continued out the front door, was nearly half way down my drive way, when I hollered at her again. “Stop! You cannot have that!” When she realized I was coming after her, she stopped in her tracks, turned around and faced me. My lap top and power cord was clutched to her chest.
Choosing to leave Tracy, a community filled with people I love and adore, was hard for me. However, the choice was what I call a “Spirit guided choice” to go toward something, rather than away from something. Being back in the Bay Area provides me with the opportunity to more fully live my vision to preach, teach and write. I want to maximize this new opportunity so each day I pray!
“You cannot have that. Give it back to me now.” She offered it back to me as tears started to roll down her face. I noticed she was also carrying a small plastic bag filled with items. As I took the lap top from her I asked, “Is there anything in that bag that belongs to me?” She said no, and started to open the bag so I could see its contents. That small act of being willing to show me the contents of the bag inspired me to repeat what Spirit was whispering into my ear. “Tell her you trust her.” Trust her? Why would I say such a thing? But I learned long ago, never to doubt what Spirit guides me to say.
I pray that God shows me what it is that I am to see and guides me to do what I’m called to do. Some days, more than others, God’s plan absolutely astounds me and places me in situations that I would have never anticipated, such as coming face to face with an intruder in my new home.

I trust you when you say there isn’t anything more of mine in your bag. I know that you did what you thought you had to do. But I want you to learn from this.

I want you to know—you can make another choice. We always have the opportunity to make another choice.” “Thank you!” she said, as she fell against my chest. I held her for a few moments as she cried. I then encouraged her to go on her way. “Promise me that you’ll remember that you can always make another choice.” “I will.” was her response as she walked down the street and out of sight. I stepped back into the house, placed the lap top on the coffee table just as my client arrived. I don’t know if my client could sense the “energy” still pervasive in the room; however, her greeting was “What’s going on?” I recanted the story and she expressed her amazement at the choice I had made. “I don’t know if I would have acted in the same way. I suspect that I would have gone right into fight mode.” Indeed that would have been a logical choice. However, had I gone into fight mode, the outcome could have been so very different. The intruder most likely would have run and I couldn’t have caught her. She may very well have tossed my lap top to the ground causing it to be severely damaged or ruined and the loss of my lap top would have been horrendous. It contained so much of that I hold dear. Pictures, emails, songs and plays that I have written that only exist on my lap top. If I had chosen “fight mode,” I could have been “right”; I could have been “justified,” but at the end I would have lost something I valued, just to be “right.” I simply made another choice. I also had to be accountable. I had to own my part in the lesson. You see, I am the one who left the door open. I never checked the screen to see if it was securely shut or locked. I’m accountable. I took it for granted that door was locked, but it wasn’t. When we take even the smallest things in life for granted, we run the risk of losing something we value. In this lesson, I learned to trust spirit and to act on what I was guided to see, say and do. I learned that I’m accountable for each and every experience that I have in life. I also learned that when life offers up the opportunity for fight or flight, we can make another choice. We can choose to “face it.” If I am to be all that I am called to be, I must face each and every challenge, opportunity and confrontation with a commitment to stand in my truth as I know it; to face whatever it is with the absolute faith that Spirit will reveal to me—all that it is that I am to do and learn in any given situation. It is by only “facing” our challenges will we overcome them anything else is to be less than authentic. Rev. Jack is a Spiritual Life Coach. A Guide to Grains

their whole forms, wheat berries and brown rice are abundant in vitamins, including B’s and E, minerals and fiber. They are stripped of these beneficial properties when they are denatured to become bland, white foods. Refortifying these foods with vitamins has shown to be of little benefit, and has even been proven to be harmful in some cases. In the case of many flours, bleaching and bromating agents are often added, the safety of which has yet to be sufficiently evaluated.
n recent years, grains have become a hotly debated group of foods. Some passionate followers of the Atkins and Paleo diets claim that grains should be all but eliminated from human consumption. Many folks are beginning to follow gluten free diets, and noticing a host of positive changes to their health once the glutenous foods, such as wheat, oats, rye and barley have been eliminated from the diet. There are still many virtues to including grains in the diet, as long as they are consumed in a healthy, unprocessed form.
It is also interesting to note that even when grains are milled in their whole form, they start to lose valuable vitamins, minerals and flavor within hours of being ground! This means that commercially processed flour that sat on the shelf for months, if not years, has very little benefit to offer us. If you enjoy baking, it might be worth

considering purchasing a grain mill to grind your own grains at home. This can be done with wheat, rye, corn, barley and oats, just to name a few. The enhanced flavor and nutritional content will be well worth the extra effort. Sprouting grain is another way to enhance its nutritional benefits. Historically, humans ate grain in a partially germinated form without even realizing it. Whole grains that were left standing in stacks in open fields would often begin the sprouting process before they were taken into storage. Sprouting grains increase their vitamin B content, especially vitamins B2, B5 and B6. Sprouting neutralizes enzyme inhibitors that can make grains difficult to digest; instead, numerous enzymes that aid in digestion are produced. It also neutralizes phytic acid, a substance that is found in the bran of all grains, which inhibits the absorption of essential minerals such as calcium, magnesium, iron, copper and zinc. Sprouting inactivates aflatoxins, potential carcinogens found in grains as well. Sprouted grains are best eaten lightly steamed, but can be added to breads or baked goods too. Soaking grains overnight before cooking is another way to make them more easily digestible. By letting grains such as rice, oats, amaranth and quinoa soak, good digestive enzymes are activated, and starches that are difficult to digest are broken down. Be sure to pour off the water the grains have been soaking in, and to rinse them thoroughly before cooking. You will find that it takes less time for your grains to cook, and that they will be softer and more flavorful.

Another ancient method of enjoying grains is fermentation. Sourdough breads made with traditional sourdough starters are good examples of fermented grain. Ethiopian injera made from teff and Japanese amazake made from rice are other good examples. The fermentation process facilitates the creation of lactic acid, which helps maintain beneficial flora in the digestive tract.

Cubeb: The Tailed Pepper Written By Allison Prater
P
iper cubeba, or cubeb, is a member of the piper family, cousin to piper longum and piper nigrum, better known as black and white pepper. The dried, wrinkled cubeb berries are similar in appearance to peppercorns, though grayish-brown in color. Their thin stalks, or “tails” that remain attached, give the fruit its nickname of “tailed pepper.” Its flavor is described as a cross between allspice and black pepper.
was also thought to repel demons. This belief was shared by Europeans as well. Catholic priests in the 17th century included cubeb as an ingredient in incense to ward off incubus during exorcisms. The classic Arabian text, “One Thousand And One Nights,” mentions cubeb as a cure for infertility. Cubeb has also been used to treat amoebic dysentery, and respiratory problems such as bronchitis and asthma.
It is rare to find cubeb in western spice racks these days. Apart from its use as a flavoring agent for gins and cigarettes, it has all but disappeared. It is still a popular spice in Indonesian cuisine, often used in gules (curries). It can be found in Moroccan cuisine as well, used in savory dishes, sometimes making an appearance in the famous spice mixture Ras el Hanout, which means, “head of the shop,” referring to the mixture as having the best spices the seller has to offer. It can also be found in sweet foods such as markouts, a semolina based pastry that is sweetened with honey and dates.
From the 1800’s to as late as World War II, cubeb cigarettes were widely smoked and were somewhat ironically believed to benefit those with conditions such as asthma. In the musical “The Music Man” Harold Hill warns parents that their sons are smoking cubeb cigarettes in the song, “Trouble.” Cubeb oil can still be found on lists of ingredients found in cigarettes to this day. Cubeb is also one of the botanicals that flavors Bombay Sapphire gin, and Pertsovka, a dark brown Russian pepper vodka. There are many online spice suppliers if you are interested in purchasing and experimenting with this exotic spice.
Cubeb is mostly grown in Sumatra and Java, hence its other nickname, “Java pepper.” As early as the 4th century, the Javanese protected their monopoly of this spice by scalding the berries to sterilize them, ensuring the vines could not be cultivated elsewhere. Even so, the berries were traded far and wide.

The Choke’s on You “A Rough Patch” Written By Teresa Howell

second year doesn’t come. So you have to fool your artichokes into thinking they’re a year older than they are.
“Oh,” I sighed. “You grew up so fast. Seems like only yesterday I sent you off to kindergarten with a box of crayons and a pair of blunt scissors in your little backpack. Now I’m going to have to spring for a graphing calculator.”
I was prepared to bake a cupcake for each of them, and sing them “Happy Birthday,” but Lindsey explained there was a better way. She had me plant the seeds indoors in February. The best light for plants at my house falls on my bed, so I spent the spring hot-sheeting it with a tray full of artichokes.
indsey and I were sitting at the patio table, drinking hot tea and talking about school shopping. Lindsey will start high school this year, so we’ve been negotiating the budget.
After spending its first “summer” (my late winter and early spring) lolling around in bed, my artichokes went out to the garden in mid-May. They can tolerate cool nights, and in fact they need quite a bit of time at temperatures below fifty degrees. Nevada spring temperatures are perfect for forcing artichokes; cool nights typically persist at least all spring. I did make provisions to cover them in case of a hard frost.
“Mom, you’re choking up!” Children can be so precious. “No,” I said, trying not to sound tragic. “It’s just the steam form my tea fogging up my reading glasses.” But Lindsey wasn’t listening. She was over at the raised bed where the artichokes are—and sure enough, almost every one of them had a little choke or two on it.
In mid-July, the chokes appeared. I haven’t tried them yet, but artichokes would actually prefer a cooler summer than we have here. The heat supposedly makes the choke tough and woody. But, as my father always said when the cut of meat was less than choice: “It might be tough, but it would be a lot tougher without it.”
This is my first year growing artichokes—successfully, that is. I tried them a few years ago, but they didn’t thrive. I think it had to do with my irrigation system. When I first discovered drip tubing with pre-spaced emitters, I went through a phase where I thought I could put one plant at each emitter, so I planted them along tubing with two-foot spacing. My soil is sandy, and the little bit of water wasn’t enough for the artichokes. I had no idea how fast they should grow, and by the time I realized my mistake, it was too late to salvage the crop.
Although I have read that you can force any variety of artichoke, Imperial Star is supposed to be the easiest to force. They’re available from many seed catalogs, as is cardoon. Cardoon is a close relative of the artichoke, although instead of eating the “choke” or flower bud, you eat the stem.
Artichokes, I found out, like plenty of moisture and lots to eat. So this year, I transplanted them into a raised bed well amended with manure. The drip system gives the bed plenty of moisture, and the artichokes are mulched with three inches of sawdust.
Any artichoke-specific pest or disease would have to pack its little valise for a long trip away from their customary haunts in order to find my few little plants. Some generic pests will eat them; aphids and slugs were mentioned in the literature. I have not noticed any around my artichokes so far, although Lindsey occasionally looks at them with a calculating eye.
They’re a perennial, typically growing in frost-free zones. They can’t take heavy frosts. I’ll cover them up with a thick layer of mulch this fall, hoping to winter them over, but I will be very surprised if it works.

Nancy found that many of the religious and societal beliefs she held before this experience turned out to be the exact opposite of the truths she gleaned from Source. That’s why she named this book BACKWARDS What we identify as one human being is in fact a composite of what humans would think of as two separate beings. Each being is independent, self-aware and has its own unique character traits, emotions and nature. One being is the flesh and blood human. The other is a being composed entirely of light and energy—an eternal Light Being that inhabits the human (animal) body as its soul. We can shift our perspective at will, between that of our temporary human host to the eternal Being of Light within. Yet there is nothing wrong with human nature itself. We Light Beings chose humans as host bodies precisely because we wanted to experience human nature along with the deliciousness of being physical. And we are not without resources to improve our lives here on Earth, to evolve both body and soul. We have free will. In fact, we are so free we can choose bondage, either physically, emotionally, psychologically or mentally. Nancy discovered that Source is Prime Being, Collective Being and Creative Being. As Creative Being, Nancy found that Source used “attention and intention” to create things out of its own Energy through the process we humans call “manifesting.” Source manifested its will that each thing exist, and so it did, immediately. Source’s thoughts and intentions manifested all of creation into reality. We have the same ability, as living integral parts of Source. However, things don’t manifest immediately here in this physical place. There is a buffer of time here that doesn’t exist in non-physical. Nancy divides her book into three parts, each of which has multiple chapters: Part 1: We Have It Backwards; Part 2: Applying the Lessons Learned; and Part 3: What Happens When We Die? She also provides a fascinating Level of Perspective chart which looks at the same subject from four points of view: Human Mode of Thinking; Soul experiencing Non-Physical while Out of Body; Light Being’s Perspective; and Source’s Perspective. The author continues to practice law, lead occasional workshops and write books on what she learned while in the Light. eptember is the month of the Libra equinox--a high-energy moment, a time of balancing and notably the first month of 2012 with no inner planets retrograde. If you’re wondering what the sensation of quicksand has been all year, that would be it. Therefore, take advantage of this relatively brief interval of psychic calm to get your most important priorities taken care of. Think of today as New Year’s Day and dust off your resolutions, your business plans and your most significant desires--and get your rear in gear. The Virgo New Moon is Sept. 15 and the Pisces Full Moon is conjunct Chiron, on Aug. 31. (and last) time of this cycle. You may not reverse yourself, though you’ll know if you’re paying attention when you start to see things differently. Your perspective is different than it was two or three months ago, and as Mercury makes aspects to Chiron, Uranus, Neptune and Pluto, your world will look and feel different because you’re making deeper contact with yourself. Be especially mindful if you find yourself trying to convince yourself of anything.
Aries (March 20-April 19) Be careful to avoid a showdown. There are many ways to handle your present situation, and that would be the worst option. The best option is some form of diplomacy, requiring a healthy respect for authority. Stay within your authority in any partnership or relationship matter; don’t assume privileges that you don’t have. Make sure you err on the side of humility for the next month; be deferential but not patronizing. Another is you’ll respond with sensitivity to others’ circumstances, no matter how difficult or painful. That’s natural for you, though you might not want anyone to harsh your mellow. The best way to do that is to transcend the source of drama within yourself. Returning to the theme of creativity: draw from a deep spot, and resist any temptation to be glib. The result will be something truly authentic that will change you and--perhaps just a little--change the world.
Taurus (April 19-May 20) You may be getting the message the time has come to focus your mind. Yet as some studies show it’s also based on sensory clues and common sense. That doesn’t make it any less useful, or rare. For you a key attribute of this gift is what some call “women’s wisdom”: a mix of what your body tells you, what has been traditionally time-honored, and knowledge of the natural world. When in doubt, apply the Course in Miracles lesson, “I am never upset for the reason I think.” This will be especially helpful if any anxiety reaches the level of paranoia. You’re trying to pass something through your psyche, and its encountering resistance, which may feel like fear and can show up in diverse forms. This process has two transition dates--Aug. 15, when Mars makes its conjunction to Saturn; and Aug. 23, when Mars enters your birth sign. Please remember those dates.

2 in 1 cinnamon or rip-off buns Written By Kate Maxon
Never throw out your potato water! Use it for a soup base or for these two delicious breads. INGREDIENTS:
5. Add remaining flour, and salt, stirring well.
For the Rip-Off buns:
6. Turn out on floured surface; knead until smooth and elastic, using additional flour if dough is too sticky.
2 packages active dry yeast
7. Poke the dough with your finger, if the imprint remains deep, you need more kneading! If it springs back, you’re cool! Divide dough ball in half. Let rest, covered, another 15 minutes.
3 to 4 C warm potato water 1T. organic cane or beet sugar About 7½ C unbleached white flour OR 3 C whole wheat flour & 4½ C. unbleached white flour 1T. sea salt
8. Roll out one of the dough balls into a roughly 8x12 rectangle, a ½” thick. Spread butter on surface; sprinkle with brown sugar, then cinnamon. 9. Starting on the long side, roll up dough; cut into 1 or 1&1/2” slices placing them on their sides in a pie pan which you have coated with butter, sprinkled with brown sugar, cinnamon, and drizzled with the cream.
1 T. lemon juice* About 2 T. softened butter (for buttering bowl and pan)
10. Let rise until almost double; preheat oven to 325F. Bake for about 35 to 40 minutes.
Additional ingredients for the Cinnamon buns: 2-3T. butter (for pan and spreading on flattened dough)
~3/4 C. light brown sugar
11. After C buns have been in oven about 15 minutes, pinch off uniform pieces of dough from second ball; make 5” long rolls to place in buttered loaf pan, pushing each up snug against the other until pan is full.

12. Cover and let rise until almost double.

13. Take cinnamon buns out of oven and invert pie plate on wax paper; raise oven temp. to 375 and put loaf pan of buns into oven for about 45 minutes.
TO PREPARE: 1. Proof yeast by warming 1 C potato water to 110 to 115 degrees; add 1 T sugar, stir and add 2 pkgs yeast. Let stand in warm place until bubbly.
14. Loaf tests done when easily slips from inverted pan and sounds hollow when tapped on bottom.
2. In the meantime, put about 4 C. of the flour into a large bowl.
15. After C buns have stood for 5 or 10 minutes inverted, lift off pie plate.
3. Add and stir in the remaining potato water and lemon juice with a large wooden spoon. 4. When yeast is bubbly, stir it in. Let stand between ½ hour and 45 minutes in a warm place.
16. You will likely have to use a spatula and scrape the rest of the “caramel” off the pan onto the buns.

lour, a basic and indispensible food staple, can vary in quality and nutrition depending on the type of grain and the milling process used. Baking and cooking with a variety of whole grains adds nutrition and excitement to your meals.
Types of Wheat Flours Flours made from wheat are the most common. Wheat contains the most gluten. Gluten is a protein found in some grains that helps bread rise and keep its shape. Flours with more gluten make better breads.
Durum flour is ground from durum wheat, the hardest wheat grown. Semolina is refined durum flour. It is the flour commonly used for making pasta/ The bran and germ have been removed by an air sifting process, giving semolina pasta its characteristic light color.
Gluten flour is made from hard wheat that has been treated to
remove some of its starch and concentrate its protein. Gluten flour contains at least 70% pure gluten. It can be added to lowgluten flours to lighten the load. If it also used to make seitan (wheat meat). This is a highly refined flour and should be used sparingly to improve bread rising capabilities.
Graham flour , named after Sylvester Graham, an early
Whole wheat bread flour or hard whole wheat flour is ground from hard red spring or hard red winter wheat berries and is the best for making breads and rolls.
Whole wheat pastry flour or soft whole wheat flour is milled from soft winter wheat berries, a different variety of wheat than the one used for bread baking. It has the ability to hold a lot of fat, and it ideal for pastry and cake making. Breads made with whole wheat pastry flour will not rise.
Other Flours Flours come from many sources including grains, legumes, starchy vegetables, nuts and carob, but each has its own baking properties and uses.

well with other flours to make smooth textured breads, muffins, pancakes, and cookies. Amaranth is an ancient Aztec food with an impressive amount of protein, fiber and minerals.
Barley flour adds a nutty, malty flavor to breads or pancakes. Barley is usually used as a whole grain or in malting, but it is also valuable as a flour because it gives breads a cake-like texture and pleasant sweetness. It can also be used as a thickener.

Refining
After milling, some flours are refined. The refining process strips away the fiber-rich bran and the germ which contains valuable vitamins and minerals. White flour is refined whole wheat flour. Flours labeled as wheat instead of whole wheat are often refined. Some refined flours have been enriched. This sounds a lot better than it is. Of the 22 nutrients that are lost in the refining process, only 5 are added back in the enrichment process. Whole grain flours are not refined and contain al of their valuable nutrients.
A note for people with gluten sensitivity
All forms of wheat, barley, kamut, oats, rye, spelt, and triticale contain gluten. Amaranth has minute traces of gluten. All other grains and flours do not contain gluten is processed in a gluten-free environment.

I hope you are following the “7 great habits of Highly Effective Teens,” and making sure you are not only doing good in school, but also taking time out of your schedule to have some “me time.”
3. A good item to have in your closet is a fun belt! They can take almost any outfit and turn it into a fun “going out” outfit. For example, I have an old, oversized plain shirt that used to be my grandpa’s. With my brown combat boots, a tight-waist brown braided belt and dark blue tights, my oversized shirt just made an extremely cute outfit.
Often, a new school year signals a new wardrobe. If you are like me, you probably get bored of your clothes. I either get rid of them, or just never wear them. But, I have some great new tips that can jazz up your normal wardrobe into a wardrobe you love and want to wear.
4. Scissors…take an old shirt that is not worth keeping, cut it up and turn it into a new piece. I took an old long sleeve shirt and cut it into a cropped tank top that looked like it was supposed to be cut up; it is super cute. Paring it with some ripped on purpose jeans and combat boots would look great!
1. I like to shop for the basics, things that will go with several different outfits. Try to visualize all the outfits you plan on wearing, and then find specific items that will match each of them. For example, a jean vest or jean jacket not only goes with almost everything, but it is super “in” right now.
If you are like me, you use clothing to express your personality, so show it! Use your imagination, creativity and a touch of recycling to create your dream wardrobe. Have a great month of September! *Make sure to ask your parents before you do anything to your old clothes.
2. If you know how to sew, you can easily change up your wardrobe by sewing something completely new out of your old clothes. I don’t know how to sew, but my grandma is teaching me. We got together and made a new skirt and several new pieces for my closet.

estless? Longing for that “special-something-taste”? Are you going through your cupboards to find your desire but not able to define what you want? Your body is craving some instant, wholesome, hearty food! You can use anything to create your own version but you will be surprised how simple, fast, savory and satisfying this recipe is. All you need is a tomato, some leftovers and five minutes to cook up this “sloppy jomato.” The rest is imagination. INGREDIENTS 1 (hearty heirloom) tomato per person Some basil leaves ¼ of a cucumber in long, thin slices A few lettuce leaves A few thin slices of red onion or spring onion Parsley and/or cilantro A few scoops of Marinara sauce
