elcome to the month of October! As we move closer to the coming holidays, most of us begin to think about staving off cravings; or, at least trying not to eat everything in sight. But, it seems we often overlook the eating habits of our youngsters throughout this time of year. With each passing holiday, as my children load their plates with festive fare, and I offer a parental disapproval, the folks around me politely say “oh, it’s ok, let them have all ten of those desserts…the holidays only come around once a year.” As true as that statement might be, the logic behind it is passé. When those types of comments made their debut, I’m pretty sure fast food chains, coffee chains, ice cream chains--etc., etc.--were not readily available to all. Even if you go back 50 years, the general public did not frequently eat the way the general population does now. Not to mention, with the growth of families where both parents work, the growth of restaurants greedily followed. During my childhood, it was exciting to eat out; a “special occasion.” However, as both of my parents began to work longer hours, eating out became more normal to me. Sure, they chose “healthier” restaurants, but it still impacted my view on eating habits. That being said, you don’t need the holidays to have a lapse in a healthy diet. All you have to do is drive down the street, and you’re bound to reach a fat-filled destination. Plus, with strategic marketing lurking at every corner, every day could be viewed as a holiday…there always seems to be a reason to “buy now” or “eat now.” There are always opportunities to indulge. Sure, the holidays come around once a year, but that “special” indulgence is not as special anymore. It is with us; everywhere we turn, throughout the entire year. So, those ten desserts, they mean something more to me than just letting loose and teaching my kids it’s ok to over-indulge during the holidays. Instead, I can teach them that it’s ok to have a dessert, or even two smaller desserts, at the many holiday type parties we attend--rather than gorging on ten at one time. To me, moderation is the most important lesson of all. With that, make sure to check out this month’s article on childhood obesity-an interesting look at kids’ eating habits at school and at home. If you sat under an Averrhoa carambola tree, you would happen upon an interesting fruit. Carambola, or starfruit, is an edible fruit that generally has five ridges running down its side; and from the cross-section view, it resembles a star. This tree of stars is native to Asia; and as its popularity grew, it now calls many tropical destinations home, including the semitropical areas of the US. The fruit itself is completely edible. It is firm and juicy and has its own unique taste. Some liken it to a mixture of fruit, including apples and citrus family fruits. It is rich in antioxidants and Vitamin C. It is also known for its antimicrobial properties, warding off bacterial villains such as E. coli, and Salmonella typhi. Although its intriguing shape and nutritional benefits are appealing, some studies link ingesting this fruit to serious risks and side effects. Starfruit contains Oxalic acid, which is extremely harmful to those with kidney issues. The fruit also contains natural inhibitors that are said to affect the potency of certain medications, typically those linked to cardiovascular illness. HB

here are many modalities available for the safe, nontoxic care of children. I will concentrate on vitamin A in this issue, and in ensuing articles cover other therapies such as other vitamins, minerals, fatty acids, volatile oils, homeopathic remedies, isopathic remedies, oxidative therapies, herbal remedies, hormonal support, allergy treatment, dietary adjustments, amino acid therapies, antibiotics and anti-fungal therapies.
xerophthalmia--the leading cause of blindness in the world, especially in the third world, when the eyes dry out from lack of vitamin A and then ulcerate and become infected resulting in blindness. Beta carotene is a double vitamin A molecule, and is much less useful than vitamin A. This is the substance in carrot juice that turns the palms and body orange; it scares doctors into thinking the child is being poisoned from vitamin A.
Vitamin A is generally regarded as the anti-infection vitamin and mucous membrane protector. It prevents squamous metaplasia, changing of the body linings from tall, ciliated cells (contain little hairs on them which move out mucous and infection) to cells that are like the ones on the skin, which do not protect the lungs, intestines, sinuses, oropharnyx and ears from infection. Vitamin A is vital to support the adrenal glands (stress glands) and is specific for otitis media (ear infections), acne, growth impairment, hyperkatosis (rough skin), night blindness and

here’s almost nothing worse than experiencing ear pain, itching, loss of hearing, or a sinus headache.
Ear Candling is an ancient practice, dating back to biblical times in Egypt, the Orient, as well as European cultures. This simple, gentle treatment removes wax from the ear, improving your sense of well-being, physical, mental and even spiritual. The candle is a long hollow tube made from unbleached muslin immersed in an aromatic herbal solution. After it dries, the cone is then dipped into beeswax. “
s Marriage Becoming Obsolete?” was the name of the article that caught my eye last week. According to the article, 39 percent of people think marriage is on its way out. I was intrigued, and immediately began to ponder this question. I started to look up statistics regarding marriage, which proved to be dismal. Almost 96 percent of adults within the United States have married during their lifetime; however, 50 percent of first, 67 percent of second, and 74 percent of third marriages end in divorce, with women initiating divorce over 60 percent of the time. Has society’s rules changed faster than the rules of marriage can keep up? For thousands of years, marriage was a business agreement between two families, encompassing property rights, and politics; ultimately ensuring survival of family and offspring. You may have noticed today’s rules of survival are not what they were thousands, hundreds, or even fifty years ago. Women’s liberation played a large role in the changing institution of marriage. Since they won the right to vote, and were forced into the work force in the early nineteenth century, they no longer needed men to survive. The dynamics of married life was further redefined after the sexual revolution; better birth control options and abortion rights liberated women from the confining roles of a homemaker. More men are choosing to be stay-at-home dads, while numerous women are choosing to further their education and career goals. Today, women are empowered more than ever before; they have the choice to enter or end a marriage. Perhaps the unions that marriage provides is not becoming obsolete, but society’s institutional rules are. Today, less people are marrying for survival needs as more marry for love, and the fulfillment of their sexual, emotional and spiritual needs. Many brave couples are forging a new standard of marriage; one not based on society’s outdated institutions built on the submissive role of women. From a dominating role of food gatherer, hunter and protector of the family, men will need more time to adjust to the contemporary role of an equal partner. The dynamics of married life will continue to be redefined as men and women are sharing in the so-called exclusive domains reserved for women (cooking, washing, parenting, housekeeping etc.). The biggest challenge now lies in how to balance these roles within a marriage, and what they mean to each individual couple--not what society thinks they should mean. After all, it is you and your partner that have to live day in and day out together, facing the world and all of the challenges that come along. HB

on the outside of the bones (periostium). There are no long term side effects from acute vitamin A overdose; they all go away with discontinuation of the vitamin. Vitamin A is bound to a liver protein, a retinol binding protein, which is produced in higher amounts when people take larger doses of vitamin A. When vitamin A is bound, it is non-toxic; when it is free and unbound, it is toxic. People with skin diseases have taken up to one million units per day without side effects, but the dose must be increased slowly.

Rats on a vitamin A free diet showed extensive focal metaplasia. Keratization of normally columnar, ciliated epithelium occurred in over half of subjects. Acute otitis media with effusion was found. Vitamin A deficiency disrupts the clearing mechanism of the ear. A study from the ENT department of the University Of Texas School Of Medicine studied Micronesian children that were vitamin A deficient and developed otitis media. They also found that vitamin A deficient Guinea pigs showed otitis media and Eustachian tube dysfunction as the primary mechanism. The Wisconsin Division of Health studied the severity of Measles and showed that Vitamin A reduces mortality in African children with acute measles. In the U.S., children hospitalized with measles retinol (vitamin A) concentrations were depressed, and the degree of depression was associated with the degree if illness severity. Actually, many other studies show that mortality (death) from measles approaches zero with vitamin A supplementation. HB
Cod liver oil (CLO) is a good first supplement for babies, starting around three months of age. The fat soluble vitamins do not cross the placenta in pregnancy and need to be replaced in infants. Not only does CLO have vitamins A and D, but also EPA (eicosapentenoic acid) and DHA (docosahexenoic acid), which are fatty acids that protect the brain, improve intelligence and prevent cancer. The dosage for children should be 1,000 units per year of age. One tablespoon of CLO contains about 4,500 units of vitamin A, so a three month old could take about 1/8th tsp. Also, give vitamin A intermittently, five days per week, so it doesn’t build up to toxic levels. Vitamin A emulsion (drops of vitamin A) is made from lemon grass and is neutral tasting oil if CLO is resisted by the child. Actually, little children tend to really like CLO and love to crunch the pearls in it.

xidation is a chemical reaction that involves oxygen. It ranges in scope from rust formation on an iron tool, to a campfire, to the destruction or stimulation of different cells in our body. Without it, life as we know it would be impossible.
method of doing this involves the removal of a sample of blood, which is anticoagulated, mixed with ozone gas in a sterile bottle, and then given back to the patient intravenously. There are many different theories about how and where oxygen and hydrogen peroxide are utilized in the body. Both have been found to be important in regulating the immune system, and are used to kill harmful organisms. They are also important in the regulation of everything from proper blood sugar, to the production of certain hormones and compounds necessary for brain and nervous system function.
Bio Oxidative therapy is the use of oxygen, in several different ways, to improve health, or restore it after it is lost to disease. These therapies range from something as simple as aerobic exercise to things as complex as intravenous hydrogen peroxide and ozone, to hyperbaric treatments.
Bio Oxidative therapy is reported to be beneficial for treating a broad range of ailments including various types of infections, emphysema, coronary artery disease, post-stroke syndrome, gangrene, spider bites, multiple sclerosis, rheumatoid arthritis and cancer.
The body uses oxygen to produce hydrogen peroxide in different amounts, for many purposes. Both of these compounds are helpful in regulating things as diverse as cell membranes and hormone production, to blood sugar levels and cell energy production.
This relatively inexpensive, non-toxic and safe therapy is used much more frequently in Europe, but is slowly becoming more accepted in the United States. Because of the cost and toxicity of many modern pharmaceuticals, it is being looked at more closely by physicians and patients alike. HB
The therapeutic use of intravenous hydrogen peroxide was pioneered in this country by Dr. Charles Farr in Oklahoma. In 1993, he was nominated for a Nobel Prize for his research in its use. Childhood Obesity Concerns More Than Just Schools

he rising obesity rate in America’s young adults has marked childhood obesity an epidemic. The link to childhood obesity brings schools to the frontlines as one of the first lines of defense against the epidemic. Students have the opportunity to eat a large portion of their daily food intake and be physically active at school. With more than 95 percent of young people enrolled in schools, it seems to be an ideal setting for teaching young Americans how to live a healthy lifestyle. Therein remains the question, are schools really the biggest step in gaining control over this epidemic of childhood obesity? The Centers for Disease Control and Prevention’s Behavioral Risk Factor Surveillance Survey reports the percentage of 18 to 24-year-olds overweight or obese in America increased from 33.4 percent averaged for 1996-1998 to 42.5 percent for 2006-2008. That means that over 11 million young adults are overweight or obese, and are putting themselves at risk. Consequences of childhood and adolescent obesity range from psychosocial risks, in which obese children are subject to social discrimination resulting in low self-esteem, to additional health risks like cardiovascular disease. Asthma, hepatic steatosis, sleep apnea, and Type II diabetes can also be associated with significant weight gain. Sherry Gifford, a health and physical education specialist at Mannion Middle School in Las Vegas, observed how toxins and chemical imbalances from poor diets can even cause psychological problems that end up getting kids put on medications that they shouldn’t be taking.
Eismeier, a spokesperson for Mission: Readiness, said that although a lot of recruiters are doing a great job at working with potential enlistees to get them in shape and help them change their lifestyles to join the military, the high rate of obesity is making it an almost impossible task. “Many people are nowhere near the physical requirements for joining the military,” said Eismeier. “Obesity is affecting our ability to recruit a strong military.” The people with Mission: Readiness have called on Congress to enact a robust child nutrition bill that would adopt the Institute of Medicine’s (IOM) standards for what foods should be served and sold in schools, and increase funding for developing child nutrition programs and improving the quality of meals served in schools. Eismeier said that they have proposed funding $1 billion per year for 10 years to increase quality by providing fresh fruits and vegetables, whole grains, and low-fat dairy. Funding would support training staff to prepare the most nu-

Many school districts have already implemented school wellness policies that meet IOM standards. School wellness policies that follow IOM standards regulate portion sizes with low fat, sugar, and sodium content in school meals, restrict foods of minimal nutritional value from being given away, sold, or used as incentives for students or during the school day, provide a list of healthy snacks to be sold in vending machines, and even designate time for daily physical activity. Some states like Nevada have even taken IOM standards a step further by doing things like taking the required 100 percent fruit juice and reducing the serving size to 8 ounces, for less calories and sugar.

IOM standards that take junk food out of schools, in exchange for healthy alternatives, sounds like they could be the answer to fighting childhood obesity. Many school districts however, have already adopted IOM standards into their school wellness policies and since the obesity rate has continued to rise, it doesn’t seem to be working. How many of us have gone off to college and seen old high school classmates years later that are obese? It can be a shocking surprise. Upon further thought, we often realize they are generally the friends we knew who never really had regular family meals together, with their parents; or the ones whose parents did not make regular healthy food choices. All of those take-out and order-in meals catch up to us as maturing adults; those overweight high school pals are our proof. Our parents are the most influential factor in mapping out our diets early in life. They also influence our exercise habits.

Schools are on an honor system, and will sometimes disregard the wellness policy. Snacks are still going into vending machines that aren’t supposed to be there, and teachers are even breaking policies by doing things like throwing pizza parties and giving out candy as rewards for students who do well. There is usually no disciplinary action taken against schools that break the wellness policy. Johnson thinks this is a big part of the problem.
“Weight management requires exercise whether they’re getting it at home or in schools,” said Johnson. “Kids are going home and sitting in front of the Xbox or whatever they’re using, and they’re playing video games all night. And we know that’s happening. I can’t let the parents off the hook here. A lot of the education starts at home.”
Although schools have a large responsibility in raising healthy Americans, there is obviously only so much they can do. There are changes to be made in other aspects of the community in order to reverse the epidemic of childhood obesity. As do almost all of our lifelong habits, our eating habits start at home. According to Johnson, it is just as important for parents to teach their children the values of healthy living at home. Parents need to teach their children the importance of good nutrition, combined with regular exercise, so they are able to make good choices at and away from home.

the exercise they need. Feeding children quality home-cooked meals is another important thing parents can do to help their children by instilling lifelong healthy eating habits. If children aren’t used to making healthy choices at home, then they’re most likely not going to know how to make healthy choices at school or in other public situations. Schools can only do so much to address the epidemic of childhood obesity. Parents are the other part of the solution. Together, parents and schools are the biggest influences on a child’s path to adulthood. t is believed by some that the feeling of appreciation, or gratitude, immediately contacts what we call “Higher Self.” The vibrational signature of those emotions seems to open a portal to “Higher Mind,” where we can allow wisdom, insight, creativity and inspiration to flow in, as well as solutions to problems that may have been plaguing us.
a feeling of joy or approval as we observe something, such as a beautiful sunset or a selection of music or piece of art. The positive feeling is the same, however, and that emotion seems to be the power that draws more of the many things we appreciate toward us. A Nigerian proverb says, “Give thanks for a little and you will find a lot.”
The positive effects of gratitude and appreciation have been known for centuries. The whole subject of positive psychology was created around the practice, and books listing hundreds of quotes from both ancient and modern healers are now readily available.
When people talk about wanting to be happy, appreciation always plays a big role in that emotional state. The key to happiness seems to be realizing that in most circumstances there’s always something to be grateful for, even when on the surface, it seems that there is not. That’s why the diary of Anne Frank is so perennially appealing, and why there’s such profound joy and beauty in hospice work.
There are subtle differences in the meaning of the words gratitude and appreciation. Gratitude seems to focus on being thankful for a gift, or for something we have or are experiencing, something that has come to us. Appreciation seems to mean

Research shows that those who regularly wrote in a gratitude journal had more energy, suffered less illness, exercised more, and were more positive about their future. They experienced richer personal relations, as well as better health. Gratitude is a gift we give ourselves as well as others. Voltaire said, “Appreciation is a wonderful thing: it makes what is excellent in others belong to us as well.” A grateful life does not require a life full of material comforts. Rather, an interior attitude of thankfulness can be sustained, regardless of life circumstances. So how much time would it take to create a gratitude journal of your own? Only a few moments a day; and the benefits far outweigh the small amount of time it takes. By focusing daily on what you appreciate in your life, and what you have to be grateful for, moves your thoughts to additional possibilities, raises your vibration, and allows insight and inspiration to flow. Our thoughts have great power, since they cause our emotions. Our emotions then drive our words and actions, and our words and actions go to make up our lives. So, if we begin our day with thoughts of things we appreciate and are grateful for, we’ve given ourselves a big boost for that day. Also, there are advanced spiritual practices that cannot be done without first getting to a place of appreciation. The skill of being able to immediately get to a place of gratitude and appreciation, in your mind, is a prerequisite to moving ahead with certain meditations; such as those taught by Tom Kenyon. It is very worthwhile to “practice” the feeling of gratitude and appreciation, so you can get to the point where you can “be” in that space in a few seconds. Think how useful it could be have the skill to instantly be in a space to contact Higher Mind whenever you choose. We are always attracting something, so if we focus on the benefits and beauty around us, we attract more of that; which gets us out of the complaining zone and into the creating-what-we-want zone. Empower yourself by being aware of what you’re thinking, then pivot your mind away from negatives to a highminded place of gratitude and appreciation. Your happiness and health may depend upon it. HB

s it important that a Feng Shui consultant be certified? No.
Across the globe, there are many schools teaching various methods of feng shui, and offering certificate programs. Unfortunately, there are no standards of measurement to determine when someone is qualified to practice feng shui. In this profession, every consultant is unique based on their training, experience, skills and knowledge. The fact that an individual has not experienced the desired outcome, based on the recommendations from one consultant, doesn’t mean they won’t achieve success from a different one. As an example, a client of mine was previously told by another consultant that her house received too much energy, and to place mirrors around the inside of her front door. Conversely, I found that her house in fact received very little energy and the mirrors made it worse, resulting in financial problems. Reflecting on my experience, after I received my first certificate, I never saw results from what I learned. My second program of study opened my eyes to the depth of feng shui and finally, after training with a feng shui master for eight years, I now see great results. Although a certificate is not required to be proficient in feng shui, it does require years of strict training and serious dedication. Since feng shui is a science that focuses on unseen energies, it cannot be learned from a book or a few classes; it is best shown through the hands-on training of an expert. disorders are estimated to affect 28 percent of the population, between the ages of 50 to 89. The prevalence of tics in school aged children is estimated to be as high as 19 percent. These numbers reflect truly how common these afflictions are, yet they do not do justice to how disabling a movement disorder can be.
hat are movement disorders? Movement disorders are a group of diseases and syndromes that affect an individual’s capability to produce and control movements. There are many different types of movement disorders. Some consist of an individual having too much movement, while at other times the movement disorder can consist of too little movement, or an inability to initiate movement. Furthermore, in certain cases, there can be a mixing between too much and too little movement. There are a myriad of conditions and syndromes that produce movement disorders. Some of which include Parkinson’s disease, Parkinsonism--caused by drugs or poisons, Parkinson-plus syndromes, Huntington’s disease, chorea, Wilson’s disease, inherited ataxias (Friedreich’s ataxia, Machado-Joseph disease, and other spinocerebellar ataxias), Tourette syndrome and other tic disorders, Essential tremor, Restless leg syndrome, dystonia, stroke, encephalopathies, myoclonus, and hemiballismus, to name a few. The list can go on and on. There are textbooks and neurological societies dedicated solely to this topic. Movement
As a generalization, movement disorders consist of a breakdown in the basal ganglia of the brain. The basal ganglia, for all intent and purpose, are the filter mechanisms of the brain. If you want to move your arm for example, the brain has to send a signal that basically gets the “okay” from the basal ganglia before that movement is initiated successfully. The basal ganglia have many different parts to it, and the dysfunction of any given area can lead to certain types of movement disorders. The medical approach to treating movement disorders consists primarily of medications. These medications attempt to replace neurotransmitters, which may be deficient due to one area of the basal

Therefore, the individual and the practitioner who is prescribing their medications, can determine the appropriate dosage, and possibly reduced dosage of their medications.
ganglia not working properly. These medications can produce awesome changes to the movement disorder, and therefore the life of the afflicted individual. Unfortunately, as time goes on, often more and more of the medications must be used as the individual becomes less responsive to the initial dosage. As a consequence, the practitioner who is prescribing the medications is faced with the dilemma of the dose limiting side effects of the medication. What this simply means is that there comes a point where the benefits of the medication used to treat the movement disorder are outweighed by the side effects of that medication. Therefore, the current theory in treating many of the movement disorders is to use as little medication as possible so that the patient’s life span will be prolonged as much as possible.
If you or someone you know is suffering from a movement disorder, getting evaluated from a neurological and metabolic perspective should be your first step. Movement disorder patients often use the analogy of being trapped in a cage to describe what their lives have become. The chiropractic neurology, and the functional metabolic approach, is unique in that they attempt to stimulate the basal ganglia by firing the sensory and motor pathways that go to this area of the brain. This is done by designing specific sensorymotor exercises that the patient performs in office and at home, with the purpose of stimulating the dysfunctional regions of the basal ganglia. Metabolically and nutritionally, the basal ganglia are extremely sensitive to toxins, heavy metals, infectious processes, lack of oxygen, autoimmune processes and more. These factors need to be determined by utilizing specialized tests; which are common, but not often run. These tests will direct a non-drug functional dietary protocol, which aims to calm down that individuals metabolic system and its effects on the basal ganglia. any people agree that bowel cleansing is a good idea, yet they may have many pre-conceived notions about receiving Colon Hydrotherapy. One misconception is that Colon Hydrotherapy is painful, smelly and just plain gross. And although the procedure can be uncomfortable at times during the treatment, when done in a relaxing, professional setting it can actually be relieving and invigorating. Here is an overview of what a thorough, professional Colon Hydrotherapy session is like: Following a consultation in which the client’s health issues and wellness goals are discussed and after determining that there are no contraindications to performing the procedure, the client is asked to use the restroom and disrobe from the waist down. The client lies face up on the treatment table covered with a towel. Attention to the client’s personal dignity is given at all times. A new disposable speculum measuring 3⁄4 inch in diameter is inserted into the rectum. Water and waste hoses are attached to the speculum and also to the closed system machine. This machine includes a pressure gage used to monitor the pressure in the colon during the fills. There also is an illuminated observation tube in the machine that allows the client to observe the matter that is removed from the colon. The Colon Hydrotherapist is trained to identify and discuss the waste matter and suggestions are made according to what is seen in the tube. Abdominal manipulation is used throughout the treatment to identify and break up any impacted matter in the colon. A low pressure fill is administered under close observation of the pressure valve and by communication with the client about how and what they are feeling. When the bowel is sufficiently hydrated the pressure valve is released, water begins to circulate and waste matter is removed from the bowel. Licorice
The Grandfather of Herbs Written By Allison Prater
L
icorice, or Glycyrrhiza glabra, is an acquired taste; most folks are either repulsed by it, or relish its sweet, distinctive flavor. As it is commonly known in the form of candy, most are unaware that many licorice candies are not flavored by licorice at all, but anise. True licorice remains quite popular throughout southern Europe, used to flavor not only candies but ice cream as well. Apart from its confectionary use, licorice has a wide range of applications medicinally, cosmetically and even as a tobacco enhancer. In China, it is called the “great detoxifier,” and often referred to as “the grandfather of herbs.” Licorice is a popular medicinal herb, having been so since the times of the ancient Assyrians. Its roots were valued by citizens of the Roman Empire, and it was commonly used in Chinese herbal formulas. It is most often used to soothe sore throats and coughs. Licorice soothes the chest and helps to break up phlegm. It is still found in many cough syrups and drops. It has been used to treat ulcers, relieve rheumatism and arthritis, and to help induce menstruation. It is sometimes taken in powder form, as a laxative. The root contains glycyrrhizin, a substance that is 50 times sweeter than sucrose, which encourages the production of the hormone hydrocortisone. This could explain its anti-inflammatory actions and why it is sometimes used to re-stimulate the adrenal cortex after steroid therapy. Licorice has also been used in the treatment of dropsy, fever, menstrual cramps, menopausal symptoms, bronchitis and hypoglycemia. It is sometimes used to mask the tastes of other herbs that can be less palatable such as mullein, ginseng, and comfrey. It is used in mouthwashes and toothpastes as a sweetener. When applied topically, licorice root is emollient and soothing. It is also used in facial steams, and as a medicinal shampoo for dandruff.
Licorice is most easily cultivated from root cuttings, placed a foot apart in deeply tilled soil. Sandy soil, with plenty of compost, is ideal. The plants enjoy plenty of water and sun. The roots are not ready to harvest for at least four years. When harvesting, the nitrogen rich tops of the plant make a great addition to the compost pile. The roots should be dried in the shade for six months, in a very dry space to prevent molding. When the roots have cured, they should be stored in air-tight containers at room temperature. The remnants of the roots from a plant that was harvested should easily begin the next crop. Licorice is a plant that can become very persistent and intrusive, if not cut back regularly. For those who do not have the contraindicated health conditions mentioned above, this oatmeal recipe below is a soothing treat for cold and flu season. It helps to relieve congestion in the sinuses and lungs, and supports the immune system, and is sweet and delicious too. One of the lesser known uses for licorice is its inclusion as a flavoring for tobacco products, especially chewing tobacco. Some products contain as much as 10 percent licorice, and as much as 90 percent of the licorice purchased in the US is used by the tobacco industry. Ironically, licorice is a helpful herb for those who want to quit smoking. Chewing on sticks of the root gives the user something to fiddle with, and the sweet flavor makes it pleasant to chew.

Licorice is not an herb that should be used by everyone, and should be used with caution. The cortisone-like components of the glycrrhizin increases the retention of salt and water in the body. In extreme cases, this can cause dangerous side effects such as abnormal heart action, and kidney failure triggered by potassium depletion. Licorice should be avoided by those with cardiac conditions, hypertension, kidney complaints, or obesity issues. Pregnant women should also avoid this herb, as they are already subject to edema.
Combine oats, salt and water in a sauce pan, and bring to a boil. Once boiling, cover and reduce heat to low. Let oats sit covered for about 20 minutes, until they are nice and fluffy. Mash the banana and licorice powder together and blend into the cooled oats. Add a little raw honey, if extra sweetness is desired. HB

HCG:
A Good Diet for Those Who Want to Lose 7-10 Pounds Written By Lynn Kehoe

ecently, I wrote an article (January’s Healthy Beginnings Magazine) about how effective HCG is for weight loss. Since writing the article, many people have asked me about whether HCG would be a good weight loss tool for losing seven to ten pounds. I had a personal interest in finding out if HCG would be a good solution for losing this amount of weight, since I had eight more pounds to lose after my first 30 days on the HCG and six weeks of follow up.
early third week. Once you reach your goal weight, you take your calories up to 800–1,000 per day to maintain you current weight. You also continue on the drops through the 23rd day, just like you were trying to lose a greater amount of weight. My contact told me that a person will know they are near their goal weight when they start to feel a little weak. At that point, the body has burned most of the fat it can, and the 500 calories are not enough to fuel it.
When I first started taking HCG, I had a goal to lose 26 pounds. After 30 days, of which 27 were on the diet, I had lost 20 pounds. As the diet outlined, I had to take six weeks off of the drops, and follow a regimen to add calories and various food groups back into my daily diet. Although I attempted to follow this course of action, it was the holiday season, Thanksgiving through New Years, and I didn’t do the best job of following the diet as outlined. To my surprise, at the end of my six weeks following the diet, I had added only two pounds, leaving me only eight pounds from my goal.
I started my second round of HCG on January 10th. It took me 12 days to lose my last eight pounds. I finished taking the drops on Feb. 2nd and the low caloric diet on Feb. 5th. I did as the company rep suggested and went to 800–1,000 calories a day after I achieved my goal weight. For the first time in a few years, I am actually looking forward to bathing suit season. I also get to wear some clothes that I have not worn in years. My dieting partner Marjorie is doing well. She also started the diet again in January and lost an additional 14 pounds, bringing her total weight loss to 34 pounds. She smiles a lot more these days.
I couldn’t decide whether to start the HCG drops again or try more conventional ways to lose the eight pounds. I called my contact at the company whose HCG product I was using to discuss my dilemma. They told me HCG was a good solution for my remaining weight loss and gave me the information on how to approach it.
Some additional tips I picked up along the way: Mornings can be very difficult. An apple isn’t always satisfying to get your day going. It is alright to have an egg white in the morning instead in order to give yourself some protein.
For a dieter with a goal to lose seven to 10 pounds within the 26 day HCG cycle, as opposed to 16 plus pounds, you still begin the diet as everyone else does. The first two days you can gorge on whatever foods you like, while starting to take the HCG drops three times a day. On day three, you drop down to the 500 calorie diet, just as the normal HCG diet suggest, no matter what your weight loss goal is. The diet starts to vary, for those trying to lose seven to 10 pounds, after you reach your goal. You will probably get to your goal in the late second or

Coconut oil or fat free lotions can be used. Remember not to use lotions with oils. Make sure to measure out your 10 drops in a spoon when you take the drops. If you only use the dropper and put the drops directly in your mouth, you may get inconsistent dosages.

Hot Times in the Garden

ravel in the summer is dangerous for me. This year, as I drove through Fallon in the middle of July, my car developed a mysterious pull to the left, and came to a complete stop in front of Workman’s Nursery, where plants were on sale at half price. Three flats later, I managed to get the car back on the road, only to need another emergency stop at Flower Tree Nursery, where six gallon-sized pots finally stabilized the car enough to make it home. Like sufferers of any other addiction, those of us who buy plants face the consequences the next day, when we sober up. In this case, the consequences were pretty dire. Temperatures were slated to be in the hundreds for the foreseeable future. I also wanted to set some of the plants on the west side of the house, on bare, compacted dirt where I’d mixed lime plaster the summer before. Until I saw some weeds coming in, I’d assumed the soil was sterile.
I planted in the evening. I know conventional wisdom says to plant in the morning, but I wanted to give the plants as much time to adapt as possible before the extreme heat hit. I dug the holes wider than the plants, and just a bit deeper, so that I could leave a little well around the plants.
Fortunately, I have enough self-control to buy tough plants. I’ve convinced a few friends that I’m a good gardener simply by choosing plants that are impossible to kill. But even my tough plants were going to need a little tender care to survive these conditions.
This next step is extreme, and it makes my gardening mother wince when she sees me do it, but it usually works for me. I untangle the roots, gently if possible, and roughly if necessary-and it’s usually necessary. If the roots spiral around, the plant may live for a while, but it will usually die. I’ve occasionally taken half the roots, and had the plant do just fine.
As soon as I got them home, I watered my new acquisitions well and put them in a shady place. Even the toughest plants in pots appreciate a little shade in hot weather, especially if they are root-bound, as many of these were.
I’m a cheapskate, so I often buy perennials like columbines in six-packs. They’ll sometimes be so root-bound that the small root-hairs form a cloth around the root-ball. When that happens, I scratch the roots with the little plastic tag that comes with the

plants, working from the bottom of the root up toward the plant, until I’ve gotten most of the cloth off. Otherwise, those roots will actually resist water. Then I spray as much of the potting soil off the roots as I can, even when the plant isn’t root-bound at all. Although it’s fine to amend the soil for annuals and garden vegetables, I never do for perennials or trees. Unless the plant is unusually vigorous, the roots will have a tendency to stay in that nice pocket where living is easy, because of the difference in soil structure between the planting hole and the surrounding soil. This is particularly true if you’ve been parking your truck on that surrounding soil, as I’d been doing. After I dig the hole, I put a little water in it. When that’s drained out, I spread my roots out in the hole, making sure to keep those roots moist at all times. I fill the hole halfway with the dirt from the hole, and water thoroughly. I fill the rest of the hole with the native soil. Then I top dress with manure or compost, and water once again. Food for the plant will leach down with the water. For the first days after I set out new plants, I always water morning and night, and if it’s really hot, I’ll water during the day as well. Despite conventional wisdom, it’s fine to water plants during the heat of the day. Especially on new plants, I’ll often give them a little bit of a bath to give them a break from the heat. I do want to make sure that the plant itself is dry when the sun goes down, to prevent fungus. The plants I’d chosen were double-tough; agastache, catmint, lavender, sedums, gaura, and groundcover veronicas and snowin-summer, and some snapdragons. But most of these plants had major surgery on their roots--and the thermometer was hitting the hundreds. Fortunately, I’d been to Poke-and-Peek the week before, and I’d cleaned them out of flat sheets. So I gathered up lawn chairs, buckets, sawhorses, and whatever else I could find to hold the sheets up off the plants. I draped sheets over the supports. The sheets allowed some filtered light in, and when it got hot, I sprayed them down with water. The air under the wet sheets was twenty or thirty degrees cooler than the outside air. I know--I checked. I checked for at least thirty minutes. I kept waiting for someone to ask why I had sheets in the yard. I planned to lift one eyebrow, cool-like, and say drily, “Well, it is a flowerbed.” But nobody asked. I hate when I waste a good joke. All the plants survived, except one snapdragon that my nephew Bobby backed over. But then, you have to expect a little death loss when you set out plants in the middle of July. Fast forward two months, this same woman wanted to take a creative writing class at the local community college. The $400.00 tuition was a problem, however. The school wanted her entire payment up front and she did not have the money. Again she became disheartened and questioned whether it was what she was supposed to do. At this time, she had a dream that a dog she once owned became aggressive towards her. The dream reflected how her thought of not taking the class put her in conflict with her deeper instincts. She made the decision to sign up for the class and worry about how to pay for it later. Shortly thereafter, she received an unexpected check for $406.00 from her former mortgage company as penalty assessed in a class action lawsuit. This timely surprise was accompanied by a dream the following night in which a loyal dog was at her side everywhere she went. The unexpected check and her dreams illustrate that when we stand by our deeper self, it stands by us.
I know a woman who is called to write. She is a natural at writing, and life has been asking her to do more and more of it. Two months ago her computer stopped working. She tried to buy a new one on a payment plan through Dell, but it fell through due to her bankruptcy status. She was devastated and began to question whether or not she was meant to keep writing. We discussed the situation and she decided to keep writing and wait for an answer. A week or two later, while waiting to meet a friend for lunch in a casino, she put $10.00 in a slot machine and won $500.00. This amount was equal to the cost of the laptop she had earlier tried to buy. Life supported her in her path at a time when she was just about to give up.

his month is dominated by Aries and Libra--the polarity of “I am/we are.” This astrology peaks with the Aries Full Moon of Oct. 11. Inside of our relationship dramas, sagas and desires, our DNA and hormones are humming along, giving us instructions to reproduce the species. And at the same time, there is an epic political battle being waged between men and women, involving who controls reproduction. “Anti-government” and “anti-regulation” activists make one exception: the uterus. This standoff is illustrated by two little-known planets that the Full Moon aligns with exactly: Aries Moon conjunct Bienor (the strong man of Greek mythology) and the Libra Sun conjunct Haumea, a Hawaiian fertility goddess. We could look at this another way: who controls creativity? If you don’t take over the creative process within yourself, someone is going to do it for you. Aries (March 20-April 19) You might want to pause and ask yourself what you’re trying to prove. There is little you can accomplish by conquering anything or anyone, and plenty of damage you can do. While you seem to be past the emotional restrictions and frustrations that dominated your summer months, it would be unwise to overcompensate in the other direction. Therefore, I suggest you tamp down any competitive feelings and establish harmony with your environment. People around you will be eager to return the favor. If you push the limits in any situation, you’re likely to encounter a boundary of some kind; notice if it happens, and revise your approach. You might experiment with things like negotiation, using a more creative method (rather than confrontational) and understating rather than exaggerating.

There used to be a concept called false confidence, but that seems to be the prevailing state of affairs on the planet. It’s also possible to lack faith in yourself when it’s the most obvious thing you should have. The only way to find out if you’re really capable of something is to try and see if you can do it. This includes taking concrete steps to improve your income. You have the talent. You also have the guts.
Taurus (April 19-May 20) You may be feeling out of your element, but be gentle with others when you feel inclined to blame them for your feelings. There is an easy solution--that’s likely to be the one you think is too “easy.” But that’s the whole idea: there is a relatively simple and direct approach to what may seem like a complicated or exaggerated emotional situation. Meanwhile, I suggest you do what you can to keep your emotions in perspective. Ask yourself how important something really is before you make a big deal out of it. Don’t look for conflict where there is none to be found. If you look for the common ground you share with others, you’re likely to find it, and that in turn is likely to lead to some rewarding episodes of unexpected growth.
Leo (July 22-Aug. 23) You may encounter a mental block when trying to solve a problem, and if that happens, I suggest you take a more disciplined approach to your work. There is something to be said for applying yourself to a project every day, even perhaps several at the same time. Many have discovered the benefits of discipline in turning creative energy into something tangible and useful. Energy is the one thing you have right now. Focusing your efforts in a way that may seem businesslike or “un-artistic” will help you bring in a new vision, one that you’ll be able to sustain yourself with for many years. You may have this idea that your identity is not sufficiently stable to take on the kinds of challenges that are being presented to you. But what exactly do you think builds your sense of identity, your confidence or strength to stand up to the challenges and opportunities of existence? That would be direct experience. At a certain point it’s necessary to reach beyond what you’ve done in the past, so that you can do something new, or something that exceeds what you thought were your prior limitations. Aquarius (Jan. 20-Feb. 19) Life is not a matter of theory--but the great thing about theory is how manageable it is, compared to what actually happens. What actually happens is different than what you might fear happening (that, too, is a matter of theory). That all said, it seems to be time for you to spark up some actual movement in your life, and your next step should be according to some kind of structured plan. I don’t mean a 100-page business plan; five or six possible steps thought through carefully and written in your notebook would be adequate. Those are different than what will actually happen, but at this stage I suggest you work with a mix of about 10 percent theory, 85 percent action and a dash of faith that you’re doing the right thing.
Libra (Sep. 22-Oct. 23) You’re likely to show up as the voice of reason and the example of maturity in a close personal situation. This is nothing new, but you may have the feeling that someone has an advantage over you based exclusively on brute strength. That may be true temporarily, but it’s not going to last long. his year, I am trying very hard to keep my grades high! I have always received good marks, and been on honor roll consistently; but getting used to a new school, and making friends at the same time, makes keeping my grades high a little more challenging. I need to work very hard on my homework, study for all of my tests/ quizzes and make sure I work at doing my best at everything I do. What are your goals in school this year? A couple of weeks ago, my grandmother gave me this book called The Seven Habits of Highly Successful Teens, by Sean Covey. When I first saw the book, and flipped through the pages, I have to admit, it looked pretty boring. The next time I saw my grandma, she asked me if I had read any of the book. My answer was no. So, she said we could read it together, and we did. The first chapter of this book talks about good habits to get into. Like getting good grades, being healthy and active, being responsible, and so on. The author also talks about how to plan, and the positive things about planning. Then, he explains the differences in teens that follow the Author’s rules and teens that follow bad rules or habits. This book has great advice, and could really help teens. So, I guess I learned a lesson: never judge a book by its cover…and listen to your grandma. HB Have a great month!

I began my healthy adventures in 1990. By combining bicycling, kayaking and hiking, I would eventually travel four times around the earth. I am 70 years old and have not been sick since 1972. It is never too late to live a healthy, active and adventuresome life, as you will read in a series of articles.
Kayaking through Siberia, Part 10 Then it dawned on me; the village had been abandoned. A lone dog, wagging its tail, approached. The poor thing must have been left behind. “Sorry Fido, I am in worse shape than you,” I said patting the animal…and the severity of my situation struck me harder. What could I do? I would not survive a night in this condition. Building a fire in this rain would have been impossible for me. Should I break into one of those cozy homes and leave a note with some money behind for the damage I may cause? But, I could not get myself to do that. As I was to find a few hours later, my decision to continue with my kayak was a good one. Shivering, I hurried back to the boat and readied it for takeoff. Unfortunately, I had to reenter the rapids, which extended another 200 m down river. Again, the current was in control. Any navigational skills I may have were limited to keeping the bow in forward direction. Two huge rocks were coming up about 12 m apart. Just when I thought I would clear them, a flat rock, barely reaching the surface, appeared right in front. Too late! The bow hit it and the kayak slid partly on to it. A terrifying moment! I was stuck. Cautiously I climbed out of the boat. The rock was algae overgrown and slick. Slipping now would have disastrous consequences. Oh, don’t think of that now! There I stood, surveying the situation. It would be rather precarious to reenter a narrow kayak into the water, rushing around me on either side, and getting into my seat. Now, should I choose the right or the left? Both looked bad. To the right, there were more low level rocks; and to the left, the current was swifter. I had to act. Living with Dystonia – A Movement Disorder Written By KEVIN VANIA

Secondary dystonias are cases that can be attributed to drug exposure, trauma, or another disease or condition. Many of these apparent outside factors are ones you can try to avoid.
here may be more people who are afflicted by neurologic disorders--which present themselves in many forms--than we are aware of. Neurologic diseases are disorders of the brain, spinal cord and nerves throughout the body. Together, these parts control all the workings of the body. When something goes wrong with a part of your nervous system, you can have trouble moving, speaking, swallowing, breathing or learning. You can also have problems with your memory, senses or mood.
A large number of drugs are capable of causing dystonia, namely a class of medications called neuroleptics, which are used to treat psychiatric disorders, some gastric conditions, and certain movement disorders. Talking to your doctor about the possible risks of taking certain medications is important in protecting yourself against the irreversible side effects many drugs can have.
Certain neurologic diseases can cause movement disorders like dystonia. Dystonia is a very complex, highly variable neurological movement disorder that causes muscles to contract and spasm involuntarily. The involuntary movements result from abnormal functioning of the basal ganglia, a deep part of the brain that helps control speed and fluidity of movement as well as prevents unwanted movements. In dystonia patients, this abnormality causes opposing muscle groups to contract simultaneously as if they are “competing” for control of a body part. As symptoms can affect any part of the body, these involuntary muscle contractions result in abnormal postures and repetitive, often twisting movements that cause varying degrees of disability and pain.
Some dystonia symptoms are also believed to be traumainduced. Similar movement disorders such as Parkinsonism, tremors, chorea, myoclonus, tics, and hemifacial or hemimasticatory spasm are also believed to follow brain and peripheral trauma. You can best protect yourself from movement disorders associated with trauma by exercising safety in any dangerous activities you partake. Don’t be afraid to push the envelope and try new things, but know your limitations. Use safety equipment; There’s a good reason your mother always told you to wear a helmet. Although there is no known cure for dystonia, multiple treatment options do exist. A movement disorder neurologist can treat dystonia patients to help lessen the painful symptoms of muscle spasms and awkward postures. The goal of treatment is to improve the quality of life and help patients function on a daily basis with minimal effects of the symptoms.
An estimated 300,000 people in the United States have been diagnosed with dystonia or are awaiting proper diagnosis, making it the third most common movement disorder behind essential tremor and Parkinson’s disease. There is presently no cure for dystonia; its cause is unknown. Scientists have not yet identified the precise biochemical process in the body that triggers the symptoms of dystonia. However, they do know that dystonia can occur as a result of mutated genes or exposure to certain medications, trauma, toxins, infections or stroke.
Oral medications are the most common treatment for secondary dystonia. They work by affecting the neurotransmitter chemicals in the nervous system that carry out the brain’s instructions for muscle movement. Botulinum toxin injections are another treatment that may be used as a nerve blocker to treat specific body parts affected, such as muscles in the hands or feet.
Although dystonia is a chronic disorder, it does not shorten life expectancy or result in death. No medication or therapy can prevent progression from happening, but prompt diagnosis and treatment can minimize the impact of symptoms.
For patients who don’t respond to either treatment mentioned, there are several surgical procedures such as pallidotomy and thalamotomy, intrathecal baclofen, and deep brain stimulation that can be performed to treat dystonia. These procedures involve interrupting the abnormal communication between the brain and the affected muscles.
Primary dystonias include some genetic forms in which a gene has been identified, as well as other forms for which a cause is unknown.

In addition to medication or surgery, patients should seek complementary and supportive therapies. Traditional practices have long been effective at treating dystonia, but may not fully address how patients live on a daily basis. Treating dystonia is most successful when the overall treatment plan addresses the whole person--body, mind, and spirit.

Stretching muscles can increase flexibility, and strengthening underused muscles can increase mobility and prevent weakening of the bones. HOW TO PREPARE: For topping, combine all ingredients in heavy small saucepan. Bring to boil over high heat.
In large saucepan over medium-high heat melt butter. Add onion and carrots; reduce heat, cover and cook 8 minutes. Add broth. Cover and simmer 15 minutes or until vegetables are very tender. Transfer mixture to food processor. Process until fairly smooth. Return carrot mixture to saucepan. Add pumpkin, milk, salt and cayenne pepper. Bring to a simmer. Simmer uncovered 5 minutes, stirring occasionally. Combine sour cream and nutmeg. Mix well. Ladle soup into bowls; place spoonful of nutmeg cream in center.
Reduce heat; simmer uncovered 15 minutes or until fruit is softened and sauce is thickened, stirring occasionally. Meanwhile, for pancakes, combine all ingredients except butter in food processor. Process until smooth, scraping down sides of work bowl once. Or batter may be mixed by hand in large bowl. Heat non stick skillet or griddle over medium heat until hot. Spread small amount of butter every over surface. Pour 1/4th cup batter for each pancake onto hot skillet. Cook about 2 minutes on each side or until pancakes bubble and bottoms are browned. Keep pancakes warm in 200˚ oven until all pancakes are made. Serve with warm topping.

Combine first six ingredients in large sauce pan and bring to boil. Simmer for 5 minutes remove from heat and cool. Add remaining ingredients and blend lightly. Chill makes 7 cups.
Cut watermelon rind into pieces and remove green skin and pink flesh. Dice the resultant rind into one inch cubes; cover with water and boil until the pieces are tender when pierced with a fork. Drain. Mix salt, alum, vinegar and sugar in large saucepan and bring to a boil. Pour over the rind just covering it. Do this for three mornings, then on the fourth morning add cinnamon and oil of cloves to the syrup. Heat to boiling and pour over rind. Do this for a total of five mornings. On the last morning simmer the rind in syrup for ten minutes. Pack the rind in sterile jars. Boil syrup again and pour over the rind in the jars. Seal and process 15 minutes in boiling water bath.
Note: This will keep in the refrigerator indefinitely and flavor improves with standing.

Mix canned pumpkin into cake mix. Add a little water as needed- batter is suppose to be thick. Pour into greased pan & bake for about 30mins. When inserted, knife or toothpick should come out clean.

You can spice this up by adding a tsp vanilla or chocolate chips or nuts- but make sure you add in the extra calories!
Put first five ingredients into a blender and pulse until well mixed. Fill each ramekin 3/4 full and bake for 1 hour or until centers are set (custard will get firmer when it cools down). Serve warm or cold with a tsp of maple syrup and whipped topping (optional). Number of Servings: 6

How to make your own
Tomato Preserves What you need. Tomatoes - about 6 to 8 lbs; or 6 cups of prepared tomatoes. This makes about 10 half-pints (8 ounce jars) of tomato preserves! Half pint canning jars Grated lemon rind - 1½ teaspoons ¼ cup lemon juice 1 cup sugar to 1 cup of pulp/prepared tomatos. Optional seasoning / spices: ½ teaspoon ground allspice ½ teaspoon ground cinnamon ¼ teaspoon ground cloves 1 Water bath Canner Step 1 - Removing the tomato skins Here’s a trick you may not know: put the tomatoes, a few at a time in a large pot of boiling water for no more than 1 minute (30 - 45 seconds is usually enough) then.... Plunge them into a waiting bowl of ice water. This makes the skins slide right off of the tomatoes! If you leave the skins in, they become tough and chewy in the sauce, not very pleasant. After you have peeled the skins off the tomatoes, cut the tomatoes in half. If you are using paste (Roma type) tomatoes, you can skip to step 5. Other varieties, like Big Boy, Better Boy, Gardener’s Delight, cherry tomatoes, etc have so much extra water that we need to remove the seeds and excess water. Step 2 - Squeeze of the seeds and water Just like it sounds: wash your hands then squeeze each tomato and use your finger or a spoon to scoop and shake out most of the seeds. You don’t need to get fanatical about it; removing just most will do. Another way to do it is to cut each tomato in half, across it, instead of lengthwise. Then just shake the seeds and juice out.

Next chop them up - I like 1/2 inch size cubes. I get that going while I’m preparing everything else, so it’s done by the time I’m ready to fill the jars. Be sure to let it go through the rinse cycle to get rid of any soap! Lids: Put the lids into a pan of boiling water for at least several minutes. Note: everything gets sanitized in the water bath (step 7) anyway, so this just helps to ensure there is no spoilage later!) Step 5 - Bring the tomatoes to a gentle simmer, add spices, if desired <-- Start with the chopped tomatoes in the pot... Place chopped tomatoes in saucepan and heat slowly to simmering, stirring constantly to prevent sticking and burning. Cover and simmer 10 minutes, stirring occasionally. Measure about 6 cups of the cooked tomatoes into a large saucepan. Optional: Add lemon rind, allspice, cinnamon and cloves.
Step 10 - Process (Boil) the jars in the water bath canner Put them in the canner and keep them covered with at least 1 inch of water. Keep the water boiling, and the lid on - I have the lid off just for purposes of illustration. Most people will only need to process the jars for 5 minutes. If you are at an altitude above 1,000 ft, see the table below. Recommended process time for Tomato Preserves With Powdered Pectin in a boiling water canner. Process Time at Altitudes of Half-pints or Pints 0 - 1,000 ft 1,001 - 6,000 ft Above 6,000 ft
Step 6 - Add the lemon juice and pectin, bring to a boil

Add ¼ cup lemon juice to the prepared tomatoes in the saucepan. Measure the sugar and set aside. Stir powdered pectin into prepared tomatoes. Bring to a boil over high heat, stirring constantly. Step 7 - Add the sugar, as soon as the tomatoes reach a full boil Stir in sugar as soon as you reach a full, hard boil. Stir and bring it back to a full rolling boil that cannot be stirred down. Then start timing and boil hard for 1 minute, stirring constantly. Step 8 - Testing for “jell” (thickness)

I keep a metal tablespoon sitting in a glass of ice water, then take a half spoonful of the mix and let it cool to room temperature on the spoon. If it thickens up to the consistency I like, then I know the jam is ready. If not, I mix in a little more pectin (about 1/4 to 1/2 of another package) and bring it to a boil again for 1 minute.
Lift the jars out of the water and let them cool without touching or bumping them in a draftfree place (usually takes overnight) You can then remove the rings if you like. Once the jars are cool, you can check that they are sealed verifying that the lid has been sucked down. Just press in the center, gently, with your finger. If it pops up and down (often making a popping sound), it is not sealed. If you put the jar in the refrigerator right away, you can still use it. Some people replace the lid and reprocess the jar, then that’s a bit iffy. If you heat the contents back up, re-jar them (with a new lid) and the full time in the canner, it’s usually ok.
Notes about “set” (thickening or jell): It takes 3 ingredients for jams and jellies to set: pectin, sugar and acidity. The amount of pectin that is naturally occurring in the fruit varies from one type of fruit to another and by ripeness (counter intuitively, unripe contains more pectin) It takes the right balance, and sufficient amounts of each of pectin, sugar and acidity to result in a firm jam or jelly. Lastly, it takes a brief period (1 minute) of a hard boil, to provide enough heat to bring the three together. Generally speaking, if your jam doesn’t firm up, you were short in pectin, sugar or acidity or didn’t get a hard boil.
