Did you know? • The sunflower plant can grow from 3 to 18 feet tall. • A sunflower only requires 90 to 100 days to grow. • A single sunflower can have up to 2000 seeds. • Growing sunflowers is a great way to attract birds to your yard. • There are more than sixty different varieties of sunflowers in the world. Out of all these, the most common one is bright yellow, with dark brown centers filled with seeds. • A sunflower head is made up of 1,000 to 2,000 individual flowers that are joined together to a base. The large petals that are found around the edge of a sunflower are individual ray flowers; these do not develop into seeds.
With damaging side effects of prescription drugs and health care being out of control, people are waking up and realizing that quick fix pills and potions do not exist, now more than ever; that it is ultimately up to each one of us to be accountable for our own health and wellbeing, everyday of our life.
• A domesticated sunflower has a single-stem and a large seed head. This is in contrast to the wild variety that is highly branched with small heads and seeds.

• A distinguishing quality of the sunflower is that its flowering head tracks the sun’s movement. This occurrence is known as “heliotropism.”
• In the last few years, a new form of low-pollen sunflower has been created. This method will not only help reduce the risk of asthma for pollen suffers, but also increase the life of the flower itself. • New kinds of sunflowers that range from orange, tan, maroon or striped petals are being created. Not only are they different in color, but their centers are also green and yellow instead of the original sunflower color we all love. • The tallest sunflower was grown in the Netherlands by M. Heijmf in 1986 and was 25’ 5.5” tall. • Kansas is known as “The Sunflower State.” • The largest sunflower head, grown in Canada, measured at 32.5”. • The Bonsai technique was used to make the shortest mature sunflower record. The sunflower was grown and was just over 2” tall.

Written by Marsha K. Weaver rilling is one of the easiest and most delicious low-fat cooking methods. However, recent studies show meat, poultry, and fish cooked this way carry an increased risk of cancers of the colon, stomach, kidney, and liver. Eating grilled foods increases your exposure to two types of cancer-causing compounds. Polycyclic aromatic hydrocarbons (PAH’s) are deposited on grilled food from the smoke produced when fat from meat, fish or poultry drips onto hot coals. Heterocyclic amines (HCA’s) form when the protein in meat, poultry or fish is cooked quickly at high temperatures (such as in frying, boiling, and grilling). Using a gas or electric grill carries the same risk as a charcoal grill. Does this mean that you should never eat barbequed foods? Of course not. There is little harm in the occasional summer barbecue. For people who grill foods several times a week, however, a few simple changes in grilling technique probably are warranted.
5. Don’t let juices from uncooked meats contact ready-to-eat foods. For example, when removing food from the grill, don’t put it on the same plate that held raw meat. 6. Avoid fire flare-ups by using lean meats, trimming away all visible fat, raising the rack to the highest position away from the heat (or adjusting the flame to low on a gas grill), and keeping food on one side of the grill and coals or other heat source on the other side. Use a squirt bottle of water to stop flare-ups. 7. Marinades are one way to enhance flavors, tenderize, and keep foods moist while grilling. Research indicates that marinating before grilling may be helpful in minimizing cancer risk. If you plan to use the marinade later as a table sauce, it must be boiled for at least three minutes to eliminate bacteria. 8. Cook meats until no longer pink on the inside. Turn meat at least once during grilling to help cook evenly throughout.
Here are ten tips to help you barbecue more healthily: 1. Clean the grilling surface thoroughly before cooking. Before placing food on it, heat the grill to kill bacteria. Removing charred food debris also reduces exposure to possible cancercausing substances. 2. If you’re using charcoal, let the excess starter fluid burn off before putting food on the grill. Coals should be grayish-white in color. Never squirt starter fluid on smoldering charcoal. It can cause an explosion. 3. Defrost meat before grilling. The outside of frozen meat chars while the interior remains cold. After grilling, always remove blackened material from the food’s surface.

4. Precook foods such as poultry or ribs by microwaving or boiling. Then use the grill briefly for that special “outdoors” flavor.

9. For a new twist, try grilling vegetables and fruits: eggplant, summer squashes, bell peppers, sweet onions, Roma or cherry tomatoes, mushrooms, mangoes, pineapple, or peaches. Cut vegetables into 1/2- inch slices or large chunks. Brush with warmed oil (seasoned with garlic or other herbs). Grill until tender. Turn only once. Fruit should be halved with pits removed. Grill as is (no oil needed), pulp side down. 10. Cook fish in foil packets to retain natural flavors and protect it from smoke and fire. By Marsha K. ummer is in the air and many of us are enjoying outdoor activities in the sun, savoring the last month of our summer vacation. The fall allergy season is quickly approaching, and what better time to prepare ourselves for seasonal allergies than now! For anyone who suffers from seasonal allergies, the month of August brings runny noses, itchy and watery eyes, sneezing, congestion, breathing problems, and susceptibility to secondary illnesses. This is due to the rapidly rising weed pollens and outdoor mold spore counts. The mold counts rise as plants and vegetation start to die off for the upcoming winter months. Weed pollen counts rise this time of year due to the beginning of Ragweed season, the number one cause of fall allergies across the United States. Other well-known weeds prevalent in this area: Sagebrush, Russian Thistle (Tumble-Weed) and Rabbitbrush, with its yellow blossoms, take us into late October. This is when we usually get our first winter freeze, marking the end of pollen allergy season. SURVIVAL TIPS TO ALLEVIATE YOUR ALLERGY SUFFERING 1. Keep or start taking your allergy medications. Take your medicine every day and don’t skip days because you start to feel better. Antihistamines tend to work best when taken regularly. They can take several days to reach full effectiveness. If you are taking herbal or homeopathic remedies for allergies, the same applies, sometimes with a more immediate effect. 2. Treat the cause of the allergies. Find out what you are allergic to and start treating for relief. Find someone who administers a “non-painful” allergy testing technique, which will identify specific allergens. There are customized desensitization treatments by injections or oral drops. For children or adults who do not like shots, the oral drops are a great option. The traditional methods of skin or blood testing for allergies are also available. 3. Keep windows and doors closed at home. will reduce indoor allergens. 4. Keep car windows closed. When driving around town, keep your windows up and adjust your air vents to “re-circulate” so pollen does not come inside. 5. Minimize early morning activity. Pollen counts are highest in the early morning hours from 5 A.M. to 10 P.M. Check the internet for the pollen count. 6. Wear dust masks and sunglasses if yard work cannot be avoided. Also, remove your clothes and shower afterwards because pollen sticks to your hair and clothing. This includes pet hair, after they have been outside. 7. Wash out your nose. Use nasal saline or sinus rinses to clean your nasal passages, two to three times per day. This helps decrease sinus drainage and congestion. 8. Avoid Dairy products. They are known to produce a lot of unwanted phlegm and congestion. 9. Drink plenty of cool lemon water. It hydrates, detoxifies and raises the body’s PH to prevent you from allergic reactions. Low PH, or high acidity, causes inflammation in the body. Inflammation in the body causes allergies. 10. Avoid foods that cause an itchy throat or mouth when eaten during high pollen season. You may be suffering from “Oral Allergy Syndrome.” It is related to hayfever. If you are allergic to Ragweed pollen you should avoid: bananas, melons, cucumbers, sunflower seeds or even drinking tea made from Chamomile or Echinacea.The proteins found in these foods are similar to Ragweed pollen proteins and give you an allergic “cross reaction” during the fall weed season. ately, I seem to be surrounded by people who can’t tell the truth! At first it was just annoying little lies, for example someone said they returned a phone call and left me a message, and I know they didn’t. That is an example of many similar situations. I have always prided myself on telling the truth and being honest about everything. Recently I was hit with a lie that was too big to just slough off. The secretary in our office wanted to take an unscheduled vacation back east to a wedding. I knew this only because she told a co-worker. She thought she wouldn’t get the time off on such short notice, so she had her husband call me and give me some story about surprising her with this special trip to see her friend. I knew she had already made her plane
reservations! That was the straw that broke this camel’s back. I fired her for being dishonest! Now I feel terrible and resentful that she put me in this position. I feel like I’m the bad guy and we do not have a secretary. If she had just been honest, of course I would have given her the time off. But the damage is done and I can’t stop thinking about it, the resentment is eating me up. What can I do? – BC

a trait you claim to be so intolerant of, most often this is mirroring a behavior you have demonstrated in the past that you are so embarrassed about; you stuffed your shame and then have become extremely indignant of any such behavior in someone else. Please, give this idea some consideration because I know your initial response will be to not agree with me. But take some time and see if you can pull up a memory, possibly a very old incident where you lied and were so ashamed that to protect yourself from those horrible feelings of guilt and shame, you went into complete denial. Then every time something comes up, someone else lies to you, that old memory tries to creep to the surface and you stuff it back down by reinforcing how committed you are to the cause of honesty! Identify an incident (there are probably more than one) and live through it for a moment. Embrace your embarrassment and then forgive yourself for making a mistake and let it go! When we expect only perfection from ourselves, we inadvertently become intolerant of others, and that is a sure path to living in resentment. This is highly important for a practitioner to understand if they want to resolve and eliminate vertigo, dizziness and balance problems. In fact, balance disorders are a complex combination of neurological, hormonal, immune, mechanical and nutritional problems.

There are several different kinds of balance disorders. There is vertigo that is associated with spinning and vertigo associated without spinning. There is ataxia, which is likened to clumsiness. There is disequilibrium, where your balance is off and you bump into things. There is visual vertigo, where you walk into an area and you see something that overwhelms your brain and makes you feel like you’re spinning. There is Ménière’s disease that causes imbalance, hearing loss, nausea and tinnitus (ringing in ears). Then, there is just plain dizziness, car sickness and more. These are all individualized variations of the same neurologic and metabolic mechanisms. Here’s the key to solving balance disorders: always keep in mind that these disorders are not simply inner ear problems. Good balance and steadiness is a result of a complex interaction between a few different systems; your visual system and what your eyes are seeing; your muscle joint feedback system and what your body is doing; your vestibular system (your inner ear) and what your head is doing. When all of these systems are playing together nicely, and they calibrate properly, you will have good balance. When they do not work properly, your balance goes to the wayside. The areas of the brain involved with balance disorder, and the biggest cause of balance disorders, are problems with the cerebellum; the frontal lobe and parietal lobe of the brain, not just the inner ear. This is called the Functional Disconnection Syndrome (FDS), for reasons that will soon become apparent. Your cerebellum is at the back of your brain. It is right at the base of your skull. The cerebellum coordinates everything: your balance, your body movements, your spine movements, your eye movements and even your thought processes. The parietal lobe of the brain must synthesize, or put together, all of the information coming from your eyes, inner ear, muscles and joints. This coordination of brain function creates the “map,” so your body and nervous system know where you are, where you’re moving, what direction you’re moving in and how fast. When one of

these areas starts to weaken or deactivate, it does not pull its weight; all parts of the brain including the cerebellum, frontal lobe, parietal lobe, and inner ear disconnect, and you become imbalanced. To reconnect this system, the newest research and brain and metabolic technologies found that you can “reset” the brain with numerous, targeted, specific brain-based “activations,” or exercises, which can strengthen the weakened areas and bring the synchronized neurological areas in balance. However, the involved brain cells in the “weakened” areas must be healthy in order to achieve balance. Neurons become unhealthy due to various stresses, traumas and improper fuel to the cell; the main fuel being glucose. Imbalanced glucose mechanisms must be investigated. Generalized inflammatory processes also destabilize brain cells. There are more causes of generalized inflammatory processes that can affect the brain than this article can cover, but the metabolic mechanisms, along with blood sugar, must be properly evaluated with blood, saliva, urine and sometimes fecal tests, which can be corrected to get the brain cells in proper metabolic balance. Once this is achieved, through dietary alterations and natural supplementation support, further non-drug methods can be utilized in order to activate the weakened brain cells; it will bring corrective long-term balance to the system and to the balance disorder sufferer. ature adults, like the rest of the population, are gaining weight. Between 1982 and 1999 the incidence of obesity among the elderly doubled. Today, more than 25 percent of Americans over age 50 are considered obese. Body weight and BMI (Body Mass Index calculated by body weight in kilograms divided by height in inches) gradually increase during most of a person’s adult life and reach peak values at 50-59 years of age in both men and women. Being overweight has a major impact a person’s quality of life. It is associated with decreased survival because it causes the heart to work harder and aggravate blood pressure and diabetes. Other problems associated with obesity are stroke, gallstones, problems with bones and joints, gout, breathing problems and depression. With obesity on the rise, what should elderly people do? For starters, redirecting focus on not gaining weight is as easy as reducing one’s intake by 100-200 calories per day. Not consuming a chocolate candy bar, a bag of fat free chips, one mochaccino or even an extra cup of cereal in the morning could equal 100-200 calorie deficit. What about exercise? Physical inactivity is a risk factor for many diseases and conditions; therefore, making physical activity is an integral part of daily life is crucial. Physical activity need not be strenuous to be beneficial. People of all ages benefit from moderate physical activity, such as 30 minutes of walking five or more times a week. In addition, physical activity does not need to be sustained for long periods of time in order to provide health benefits. Short bursts of moderate-intensity activity also yield health benefits, such as walking in two 15-minute segments or three 10-minute segments. Although, cardiovascular activities such as, walking or jogging maintain good cardiovascular and lung health, those activities do not make muscles strong. Studies show that lifting weights two or three times a week increases strength by building muscle mass and bone density. Older adults need to add strength training into their daily lives to reduce the risk of osteoporosis, lower blood pressure, reduce back pain. It will also help to reduce the likelihood of depression and increase a person’s metabolism. Strengthening exercises, when done properly and

Written by Andy Drymalski, EdD t is sometimes said that we are creatures of habit. This is no less true of our thoughts than of our behaviors. We can become so accustomed to a certain identity and self-concept, to a particular view of life and the world, that new ways of seeing, and being, have a hard time breaking through. Our conscious mind defines and creates reality more often than we realize. The ego is a filter, and frequently an imposing one. Previous articles in this series show how the psyche utilizes our illnesses and body symptoms to crack through the confines of our conscious mind. For some people, certain mental and physical illnesses may even communicate the powerful directive, “Change, or die.” Depending on the importance of an issue, the psyche may give us the option to die symbolically (that is, undergo a transformation in how we approach life), or die literally. Either way, we end up in a different world. In the second half of life, the imperative to understand and approach the world in new ways grows especially strong. Having “mastered” the challenges of the outer world, the psyche presses for our deepened awareness and adaptation to the inner world: the soul, symbols and a hungry spirituality. It seems that an intellectual and conceptual knowledge will not suffice. The psyche wants us to have an experiential and dynamic relationship to the spiritual core of our being, for it is from here that the deeper values and meaning of life flow. Consider the declines in hearing and vision, which often accompany advanced age. We usually attribute such changes to the “luck” of our genetics, our lifestyle and various “environmental insults” sustained over the years. We often draw the conclusion that our body is just “wearing out.” We get hearing aids to help us hear, or undergo laser surgery to remove our cataracts and then move on with our lives. Such are the gifts of modern medicine and technology, and we are rightly grateful for them. But the gain that comes from the restoration of certain abilities can also come at a loss if the meaning connected to their decline is not appreciated. That is, if we have not learned from and grown through the illness. From the perspective of Jungian psychology, there is a goal, or teleology, behind our symptoms. Our sensory declines are not just losses, not simply the body wearing out. They are also an opportunity for growth and expansion of the personality. Our vision and hearing keep us attuned and connected to the outer world. They allow us to communicate, to stay involved and stay informed of life around us. They make it much easier to live independently and to keep doing the things we like to do. Simply put, they allow us to remain rooted in the worldview and lifepath to which we are accustomed. But when we are unable to effectively see or hear, our attention is forced inward. Our sight is invited to become “in-sight.” We are prompted to explore the spontaneous images that compose our dreams, memories and imagination. In hearing impairment, we are challenged to more fully experience the voice of our inner self, the soul, or God. From a causal or materialistic perspective, the loss of sight or hearing is not given much meaning. They are viewed as impediments to be fixed. From the perspective of depth psychology, they can be an invitation to another, more fundamental level of reality. Does this mean that if we are losing our sight or hearing that we August 2010

should just let that physical process complete itself? Probably not, however what it could mean is that we should give more attention to the inner world and the realm of the soul. Perhaps we need to open our eyes and ears to a level of being beyond the consensual reality of society. For some people, this might mean paying more attention to their dreams. It could mean starting a journal, or perhaps writing an autobiography. Others may find a deeper connection to their inner world through contemplation, meditation or prayer. Some may be drawn to writing poetry, songs or painting the spontaneous images that arise from the unconscious. In addition, the hearing impaired person may be challenged to pay less attention to the content and “logic” of what people say, and more attention to the feelings and symbolism behind what is said. Perhaps life is asking them to hear more with the heart, with a decreased emphasis on the mind. Of course, the meaning, or purposive goal, behind any illness will vary from one person to the next. Generally speaking, however, most illnesses would impart a shift, subtle or bold, in the way we define ourselves, the world and our place in it. Hearing and vision loss, in particular, may remind us of the truth that in darkness and silence we are often most receptive to the voice and values of our deepest self. CHECK OUT ALL OF DR. What’s On The Label & What’s Not
Muscle Milk

n his book, In Defense of Food, Michael Pollan suggests, “If you’re concerned about your health, you should probably avoid products that make health claims. Why? Because a health claim on a food product is a strong indication that it is not really food and food is what you want to eat.” Such is the case with Muscle Milk. If the hideously, unappetizing name has not been reason enough to steer clear of this “Protein Drink,” a closer look at the ingredient list makes a very strong case for avoiding this food product all together. Marketed as a high protein energy beverage for body builders and gym rats, muscle milk is popular among kids and teens, even pregnant women. The product’s maker, CytoSport, claims that their product “promotes recovery from exercise, lean muscle growth and healthy, sustained energy,” as stated on their website. At first glance, one might believe that this product is in fact healthy. After all, it is filled with synthetic B vitamins, vitamin D, Biotin and several minerals that we are often told are essential for strong muscles and tissue. Great for growing bodies right? Actually, out of the 41 listed ingredients (possibly more, since some of the ingredients are rather vague, for example “natural and artificial flavors”) six are potentially hazardous, even down right toxic. 6 reasons to rethink muscle milk: Crystalline Fructose: A heavily processed dehydrated form of high fructose corn syrup (HFCS), this simple starch is a cheap sugar alternative. Many doctors suggest that HFCS consumption is related to coronary artery disease, increased obesity, liver disease and diabetes. Potassium Chloride (KCI): This chemical compound is a metal halide salt composed of Potassium and Chlorine. Besides being found in food products, KCI is also used in agricultural fertilizers, medica-
tions and is one-third of the ingredients used in judicial execution through lethal injection. KCI is toxic in excess. High doses can cause cardiac arrest and rapid death. That’s probably why it’s the third and final drug administered in the lethal injection process. Acesulfame Potassium (K): 180-200 times sweeter than sugar, it is often blended with other artificial sweeteners. The use of several different sugar substitutes together helps to mask the bitter aftertastes that they would otherwise have individually. Lab tests on rats suggest that the ingredient may be carcinogenic, and inhibits insulin production. The US FDA has yet to recognize these claims. Cholecalciferol: A form of vitamin D that is added to fortify foods; it is extracted from the lanolin in sheep’s wool. Poisonous at high doses, this is a common ingredient used in bait designed to kill pests. New Zealand uses Cholecalciferol in a gel that kills possums. It is also quite dangerous for domestic pets. Cholecalciferol overdose results in the systemic calcification of soft tissue, leading to kidney failure, cardiac abnormalities, hypertension, CNS depression and GI upset. Chromium (III) Chloride: Although considered less poisonous than hexavalent chromium, chromium salts are generally considered toxic. Potassium Iodine (KI): An inorganic compound, in the form of white salt. There have been reports of orally doses of SSKI causing swelling of the parotid gland (a gland that secretes saliva). Other side effects from KI include acne, loss of appetite or stomach problems, vomiting, skin rashes, irregular heartbeat and numbness and tingling of the hands and feet. If the above information did not surprise you, the July 2010 issue of Consumer Reports reveals more troubling information. An independent laboratory test of 15 protein drinks, including ready-to-drink formulas and powders meant to be mixed

The products were tested in volumes of three servings each, which provide between 27-180 grams of protein. Muscle Milk was one of three products found to be of special concern. Muscle Milk powders, at three servings, were found to contain all four metals, three of which were found at levels that were among the highest of all the tested products. Muscle Milk, vanilla creme, ready to drink formula had high traces of lead and arsenic, well above the daily limit. Cadmium is especially dangerous because it accumulates in, and damages the kidneys, which is an organ that is already susceptible to damage, as a result of excessive protein consumption. It can take the body 20 years to eliminate even half of the cadmium absorbed today. The abovementioned Muscle Milk products do not specify a maximum daily intake that is safe for consumers. The CytoSport website recommends that consumers should have one ready- to-drink shake before working out, and a second one afterwards. Greg Pickett, founder of CytoSport, argues that ‘’It would be uncommon, if not impossible, not to detect the trace amounts reportedly found in any agricultural product, such as dairy products.” On their website, CytoSport notes that both products were analyzed by NSF international, an independent organization that sets product standards, and were found to pass. According to government surveys, most Americans surpass the recommended daily protein intake already, without the assistance of protein drinks. Conclusion: stick to regular milk. References: 1. Parabens
Act as preservatives and are present in most moisturizers and some deodorants. Scientists have shown that chemicals in cosmetics can pass through the skin, into the bloodstream, and internal organs. Methyl, prophl, butyl, and ethyl (aklyl-p-hydroxybenzotes)– displayed estrogenic activity in several tests. This means that these chemicals mimic your body’s own hormones and can have endocrine-disrupting action when they are rubbed into your body or washed down the drain into your drinking water.

s Americans are living longer today, many families are faced with providing care for elderly parents. Perhaps you have noticed a loved one struggling with keeping doctor appointments or taking medications. You are doing your best to assist with providing care but are tossing and turning at night, in fear for their safety. You are overwhelmed by the impact this is having on you, your family and work. You are not alone. AARP estimates that 34 million Americans spend an average of 21 hours a week as unpaid caregivers. Today, many adult-children are challenged with meeting the needs of an aging loved one; it is expected these demands will continue to increase on families. The U.S. Census Bureau projects the senior citizen population to increase by 40 percent in the next five years. By 2050, the population of age 65 and older will more than double in the U.S.

Being a caregiver is not always easy. It requires a great deal of patience, commitment and often a seemingly endless amount of time for all involved. The child and parent relationship can begin to feel the strain within this situation. A parent can feel vulnerable, embarrassed or at the mercy of their own children. This can result in the parent becoming resistant, defensive or even resentful towards loved ones. The parent may express the desire to stay in their own home, keeping their own autonomy, regardless of their physical and mental abilities to care for themselves. The child may struggle with their own internal guilt. The feelings of restricting or limiting their loved one’s independence, caused by the necessity of making decisions for them can add to the challenge. Many households that care for an elderly parent include sharing tasks with family members such as siblings, spouses and children. Shared care of a loved one can provide many benefits as well as consequences to family relationships. There may come a time when the emotional and physical demands become too overwhelming for everyone involved. What do you do when the responsibility becomes too much? The most important factors to consider are realizing you need help on determining what type of care assistance is required. Keep in mind when you seek help from other sources, you are assuring your loved one is receiving the quality of care they deserve. Also, with the outside assistance you will be giving back quality time lost due to a child taking the on the role of being the caregiver. Sit down with the parent and discuss care options. Keep in mind that communication and an open mind, for all involved, is essential during this time. When determining if your loved one will benefit from assistance, consider how they handle the following basic life skills on their own: • Household maintenance, such as meal planning, cleaning or laundry • Personal Care, such as bathing, dressing or ambulatory services • Money management, a representative payee to pay for all financial expenses • Transportation to doctor appointments, pharmacy or grocery shopping • Medical assistance, such as ensuring adequate medical care is received or medication management
Assessing these factors first, will assist you in knowing how often services are necessary, therefore, they assist you with obtaining proper care. After you have determined what type of assistance is necessary, all parties involved should be better prepared to choose a caregiver. For many, hiring an in-home caregiver is the best solution. However, this process can be just as challenging as determining what assistance is needed. The thought of having a stranger coming in the home can be very intimidating. You may have fears of your loved one being taken advantage of, either through theft, exploitation, or worse, abuse. As you know, the caregiver will usually have complete access to everything in the home. In some cases, the caregiver will assist with intimate tasks such as bathing and wardrobe changing, which may raise concerns of vulnerability. There are many steps you can take when searching for in-home assistance. Some may seek a caregiver on their own; others might choose an agency. It is important to do your homework. If you are contemplating seeking a private caregiver or contractor, you should understand the legal and financial ramifications. According to the IRS, as an individual employer, you may be responsible for social security taxes, payroll taxes, unemployment compensation, interest on owed payments or possible civil fines up to $100,000. With professional agencies, the financial responsibilities are endured by the agency. Also, most professional agencies are both state and federally regulated and are required to perform background checks for their employees on record. Private contracted caregivers are not regulated. If the background check is requested by you, the

client, they may request that you also pay for the processing fees associated with such checks, adding to the overall cost. When interviewing caregiver agencies, you should have a list of questions to assist you in making the right choice for your loved one. Some of the questions you will want to have answered are: • How long has the agency provided home care assistance in the community? • Is the agency currently licensed and bonded? • What are the qualifications of the staff? • Is there minimum number of days or hours of required services? • Is assistance available on weekends, evenings and holidays, and is the hourly rate increased during these times? • Does the agency have after hour services available? • What are the billing and payment procedures? • What insurance plans are accepted? Choosing a professional agency and caregiver can be a very difficult decision. However, being prepared and knowing the right questions to ask can make a sensitive situation a little easier. You never want to be left asking yourself, “Did we make the right choice?” You want to know that you did. any of us spend 40 hours or more a week in our workplace, and we are very fortunate indeed, if our place of employment is a place that we enjoy. For those of us who own our own businesses, it is important to understand how the sensory stimulus of your workplace affects both employees and customers. A beautiful, orderly and comfortable workplace will attract loyal patrons. Happy, comfortable, productive employees further the success of the business. Below are some tips for helping you evaluate your workplace, and ideas for different sights, sounds and smells that will help maximize its potential. Take a minute to visualize the space where you work. Is it organized and orderly, or is it cluttered? How much natural light comes in? What do you see when you look out the windows? Does your workspace use florescent lighting? Cluttered and untidy workspaces can reduce productivity. It can be very distracting to work around needless clutter. If there is a lot of dust lurking in corners and on shelves, it is a sign of old stagnant energy that needs to be cleared out. Dirty work spaces communicate a lack of attention to detail to the customer, and sometimes much worse. For example, if a restaurant serves food on dirty dishes, the customer might display a fear of contamination. Lighting can affect attitudes and behaviors of the people working or visiting that space. Natural sunlight is essential for all humans. Natural light is not only beautiful, but it helps people working in a particular space to feel awake and alert. Fresh flowers and beautiful artwork make your workspace feel like a special place to be. Avoid artificial flowers or dead flowers that collect dust. Be sure to clean the glass on all windows and mirrors regularly to encourage natural light. How noisy is your workspace? Can you hear traffic outside? Are there many phones ringing at once in your workspace? Is there loud machinery nearby? Is there more than one radio on at the same time? Are the music choices appropriate to the atmosphere you intend to create? Loud noises, or an overabundance of too many sounds, affect attention span and mood in the work place. Be sure that any music played in the workspace is appropriate to the time of day and the atmosphere you seek to create. Loud, abrasive music would not be appropriate in a day spa, for example. If your employees enjoy the radio, consider satellite radio, which is commercial free, reducing auditory distraction. There are also instrumental albums that utilize sound frequency to stimulate brain waves, improving concentration and focus. Create a separate space for any noisy tasks, ideally where some of the sound can be blocked by a heavy door, or other means of creating a quiet space that patrons and employees can enjoy. How does your workspace smell? Especially in industries related to health. Fresh, clean smells clearly communicate that the space is one committed to wellness. Essential oil diffusers and lamps are a natural way to neutralize unpleasant odors, and energize or relax those within the space. Some oils even have disinfectant properties, reducing air born pathogens during cold and flu season. Rosemary is stimulating to the mind and clarifies thoughts.

1. In large bowl, mix all of the flours together with the flaxseed meal, in order shown. 2. Make a well in the center of the flours. Set aside. 3. Mix the beaten egg, safflower oil and the honey together in a smaller bowl. 4. Now pour the cup of warm water into the well of the flours. 5. Add the softened yeast to the water and stir. 6. Add the beaten egg, honey and safflower oil. Mix together with the flours, until incorporated. 7. Knead until smooth, about eight minutes. 8. Make into a round ball and place in a greased bowl. Turn the ball, so top is oiled. Cover the bowl with saran wrap and a clean towel. Set the bowl in a warm place to rise for 70 to 75 minutes. 9. Punch down, cover and let rest for 10 minutes. 10. Knead and shape into a round loaf. Place in a greased pan that is sprinkled with cornmeal. 11. Cover and let rise 30 minutes or until doubled. 12. Brush the loaf with beaten egg white and 1 tbs. water. Sprinkle with 1 tbs. sunflower seeds. 13. Bake in a pre-heated 350 degree oven on the center rack, for 25-30 minutes or golden brown. This bread is healthy and yummy!

HOW TO PREPARE: Serves 4 1. Put raisins in a small bowl with boiling water and let soak for 10 minutes. Drain. 2. Cut the bread into cubes and discard the crusts. Heat 2 tablespoons of the oil and sauté the bread in the oil until golden. Drain 3. Heat the remaining oil in the pan. Sauté the pine nuts until they are beginning to color. Add the spinach and garlic and cook quickly, turning the spinach until it has just wilted. 4. Toss in the raisins and season with salt and pepper. Transfer to a warmed serving dish. Sprinkle with croutons and serve hot.

ichard Bach has a deep love of flying his own plane, soaring through the skies and testing his mettle against the elements. As a result, much of his writing uses flying as either a metaphor or a background. As always, he provides life lessons that are fascinating and enlightening. In this work of fiction, Bach writes about a flight instructor named Jamie Forbes who hears a radio distress call from a very frightened woman in another small aircraft. Her husband, the pilot, has fallen unconscious and she doesn’t know how to fly the plane. Jamie talks her down and helps her land safely at a nearby airport, then calmly flies on without even stopping. Later on the radio he hears the woman being interviewed by a local station, explaining how a mysterious man in another plane hypnotized her so that she could land safely. He smiles, remembering that he just gave her suggestions, and knowing that since she was in a very receptive state (she wanted to live), she accepted those suggestions and acted accordingly, landing the plane with no incident. All this starts him thinking about a time when he himself was hypnotized and how it changed the way he looked at life. After that experience he realized how powerful suggestions can be; they can run our lives unless we are able to step back and look at things through a wider lens. Jamie meets his own guiding stranger on this flight from Seattle to Florida. As the trip progresses, he realizes how each of us creates, step by step, what seems to be the solid world around us. His presentation of the ideas of the Law of Attraction are woven into this intriguing story so that the reader can take a look at how they are living their own life, how they are creating their own reality, either consciously or subconsciously. It is light, easy and infinitely fascinating, as synchronicities and unique discoveries pop up around every corner. As Jamie begins to look at his own “accepted suggestions,” he is amazed at the number of times he has “attracted” just exactly what he was expecting. The stranger, who has now become a friend, surprisingly shows up at one airport after another as she guides him into a deeper understanding of how life really works. It’s not our wishes that come true, or our dreams; it’s the suggestions we accept.” Jamie realizes that if hypnosis is nothing but suggestions accepted, then a whole lot of the world we see around us must be paintings from our own brush. He began to realize that there is Hypnosis from Culture, family, religion, politics, peers and so on. The good news is that we always have choice. As adults, it is never too late to decline a suggestion. We can begin to dehypnotize ourselves from the dysfunctional suggestions we’ve accepted by just standing back and looking at what those suggestions (which have become attitudes and beliefs) are doing to our lives. For whatever we hold consistently in our thoughts, comes true in our lives. Do those thoughts help us to move ahead in our chosen direction? Do they make us feel good about ourselves? Do they empower us? The last part of the book launches us into a fantastic yet understandable discussion of space/time, as Jamie realizes that he is at choice in every area of his life. It would be inappropriate to reveal the ending of the book. It is brilliant, mirroring the very latest realizations from physicists who are also consciousness researchers. It is encouraging that a growing number of people are now beginning to understand the links between physics and consciousness, and hopefully in the future we will all realize how much power we really have. Bach’s ideas about life will make you think. As the author of Jonathan Livingston Seagull, Illusions, One, the Adventures of a Reluctant Messiah and the Bridge across Forever, he isn’t a stranger to big ideas. his is the last month we have off from school so I like to make the best of it and hang out with my family. I like taking walks, having picnics and going to the fish hatchery.
I began my healthy adventures in 1972 traveling all over the world by bike. Today I am 69 years old and still going strong. It is never to late to live a healthy active life and be your own healthy adventurer.
It feels good to breathe the fresh air, bask in the sun, tease and hug my brother and sisters and spend quality time with my mom. Sometimes we have a picnic in our yard or go to a park. I love the summer, I hope you have had a fun summer with your family, next month we will be back in school.
hen there they were, the ones we were most excited about to see: crocodiles. This was a good time to see them sun bathing on the shores. I discerned two kinds, the smaller freshwater crocodiles and the larger and more aggressive sea crocodiles. Yes, they actually are a threat at ocean beaches. Two days earlier, in a museum, I had a chance to see the largest crocodile ever caught. It was 6 m (18 f) long. Ironically, it had drowned having become entangled in tree roots. The guide slowed the boat down when we came upon “crocs�. At times we got as close as 10 m before they rushed, occasionally with a grunt, into the safety of the water. For the first 50 km after leaving Kakadu National Park little changed. But now, as I came closer to urbanization, the usual bush was intermittently replaced by mango, banana and other fruit orchards. The following night was my last to spend in the great Australian outdoors. At 9:00 the next morning, after biking 3,500 km (2,200 miles) I reached my destination, the northern coast of Australia. Later I used pencil and calculator and figured that I averaged 170 km (110.5 miles) daily. Now, it was time to celebrate. I was at the Esplanade, the prominent seafront of the city of Darwin, named after Charles Darwin, the father of the evolution concept. Should I award myself and stay in one of the glitzy hotels? During the week of August 31st through September 7th, Burners will spend one glorious week in Northern Nevada’s hot desert sun, exploring this year’s theme “Evolution.” They will have so many questions to ponder. As humans, what are we? Where are we from and where are we going? But more importantly, what are we going to eat today? To answer this, we have called on avid Burner and Sous Chef of August E’s restaurant in Fredericksburg, TX, Atticus Ahrendt. He provided healthful recipes that are easy to make and store. They are delicious, nutritious and perfectly “playa”ble.
Fruit Leather Take 2 cups of your favorite fruit and puree it in a food processor with a little water. Sweeten with a natural sweetener to taste and a little salt to balance the flavor. Take a cake pan and line it with wax paper. Pour the puree in the pan and put another piece of wax paper on top. Set your oven to low and dry the fruit with the door open for several hours. The fruit will have a leathery texture when it is finished drying. To store, cut and roll the fruit leather up in plastic wrap. This is a healthy and convenient snack out on the playa while you are away from your campsite.

Lightly toast each ingredient individually in a 300* oven. Combine and add ½ cup walnut, peanut, or almond oil and ½ cup natural sweetener like molasses, sorghum, or maple syrup. Mix well and bake again until golden brown. Lastly, stir in 2 cups of your favorite dried fruit. Benefits: This granola mixture is vital to a week in the desert. Rolled oats and Bran flakes are a good source of Fiber, Iron, vitamins B-1, B-2 and E. Sunflower seeds are a good source of magnesium which helps calm muscles and nerves by preventing cramping. In a double boiler mix together the carob powder, peanut butter, and honey. Add the rest of the ingredients and mix well. Spread out mixture in a cake pan or portion into an ice tray. his month the Sun enters Leo on July 22. The Sun acts as a focal point for the cosmic energies of this constellation as it influences life on Earth. Leo is a fixed fire sign. The stimulation of the fire element manifests as warmth and heat. The long, hot summer days and nights are the result. From an esoteric standpoint, the alchemical element of sulfur grows in power in nature and the human being. It facilitates the activity of spirit in matter and enlivens the life force. Fire is heating everything up. In our region, it is the fire season on all levels. If you are a Leo by Sun sign, or have significant planets in Leo in your natal chart, this information is even more directly applicable. Leo rules the heart. The Lion is a symbol for the heart and the principle of love. It is part of the rhythmic system of the body that keeps our lives pulsating in sympathetic vibration with the cosmos. It is the center of the circulatory system of the blood. The blood is the carrier of the “I Am,” or higher spiritual Self. It is through the blood and circulatory system that spirit directs and controls its vehicle, the body. Some people simply view the heart as a pump. From a spiritual point of view, the rhythm of the circulation of the blood is based in the rhythm of the cosmos. It is also believed that the heart consists of four ventricles. There is actually a fifth, etheric ventricle in which the higher Self is centered and grounded. In the spiritual traditions, this etheric ventricle is known as “the cave of the heart.” This is where the subtle activities of the transformation of the blood occur, which result in higher states of consciousness. During the time of the Sun in Leo, the sulfur content of blood increases dramatically, which results in the fire or passions running high. Taking a daily iron supplement can help to balance the situation. Leo also rules the spine, which is the extension of the brain and nervous system from the head. The cerebral spinal fluid flows through this system and is related to the kundalini, or the force of evolution. The primary expression of the kundalini is the sex drive. When it is sublimated and consciously worked with, it is the motive force of the evolution of consciousness. The primary seven chakras, or centers of consciousness, are located along the spine. The cerebral spinal fluid and the kundalini need to flow unobstructed along this important pathway to achieve well being and true health. If you are having back or heart problems,

You will feel better if you take the time for a cool shower or a swim. We are blessed with an abundance of rivers, lakes and swimming pools. Swimming should be a fundamental part of your summer experience. It is one of the healthiest activities you can do. The herbs of Leo strengthen the heart, regulate blood pressure and can have an uplifting effect on the spirit. Borage tea is excellent for strengthening the heart. Hawthorn berry tea can be used to treat high and low blood pressure. Motherwort is used to address heart palpitations and to prevent heart attacks. All of the above and more can be used to tone up the heart and circulatory system now. Vitamin D is ruled by the Sun and during the summer our bodies need more if it. Vitamin D is known as the sunshine vitamin and we receive most of it through the rays of the Sun. It is involved in the calcium formation of our bodies, which we can facilitate through supplements or leafy green vegetables. Our quality of life is directly related to our state of health. It is important to understand our strengths and weakness. We can then know how to achieve a state of balance among the complex mixture of cosmic forces that constitute our being. Self knowledge is essential if we are to live a truly fulfilling life. We need to consciously work with the forces of nature and the cosmos of which we are a part. When removed from the diet, sugar causes withdrawal symptoms such as tremors, headaches, flu like symptoms and more. As an immune suppressant, sugar decreases the activity of white blood cells for up to five hours after intake. In order for the body to metabolize sugar, it must rob from vitamin and mineral supplies of the body, which alone makes it a threat to proper bodily function. What’s worse, sugar is an acceptable addiction. Most people know and admit that they “need” their fix.

Characteristics of an addictive substance are: • In spite of negative consequences or the desire to quit, it is consumed anyway. • Dopamine and Serotonin (neurotransmitters in the brain) are impacted in the same way as with alcohol and hard drugs like cocaine. • Tolerance occurs with regular use and consumption amounts must be increased to derive the same effects. • Over time, the substance is required for normal functioning. • Withdrawal occurs when consumption is ceased. Sugar dependency is so common that it can be classified into four key types of addiction, each with different underlying causes and requiring a different approach to treatment. The first type of sugar addiction deals with energy and exhaustion. The afternoon slump occurs so we reach for sugar and caffeine or both. Instant energy occurs when the empty calories and sugar reach the bloodstream. The problem with this is that in a few hours the rush is over and we are again looking for a way to boost energy. Another candy, coffee or energy drink only promotes the cycle. Getting energy this way is like borrowing with a high interest rate, it costs a lot more in the end. The second type of sugar addiction is related to stress. When we react to stressful situations, our adrenal glands produce stress-handling hormones called cortisol and epinephrine. When adrenal glands are overwhelmed by chronically stressful environments, they become exhausted and don’t provide the “kick of energy” needed to get through a particular situation. In return we reach for sugar to pump them up. Following the sugar rush is a drop in blood sugar results in hypoglycemia. When the brain is starved of glucose we become anxious, jittery and
lightheaded. The answer is, more sugar! The third type of sugar addict needs sugar fixes regularly. Sugar is a staple in their diet, from morning until night. The constant craving for sugar is caused by an overgrowth of Candida Albicans, a type of yeast that grows in the digestive tract that is fed by fermenting sugar and carbohydrates. Candida overgrowth is responsible for a huge variety of unpleasant conditions and symptoms and is widely misdiagnosed as autoimmune diseases; in which case, medication is prescribed that further weakens the immune system and allows the overgrowth to spiral out of control. Physicians rarely consider Candida overgrowth to be the cause of a problem, diet modification is recommended even less often. The fourth type of sugar addiction deals with hormones. When hormones are out of whack a person may become sad and/or anxious. As the body tries to raise serotonin (the happiness molecule), a person might crave sugar, in an attempt to find balance. But as usual, as soon as the sugar effects wear off they are right back to where they started. Swinging high then low can wreak havoc with physical and emotional well-being, causing a person to feel totally unstable. Anxiety from imbalanced hormones can produce adrenal fatigue, leading to type two sugar cravings, compounding this type of sugar addiction. This might be too overwhelming that it seems hopeless to cure even one of these sugar addictions, let alone a combination of

two or more. Feelings like this are partially caused by the negative effects of the sugar addiction. It will take a commitment to the change of diet and lifestyle in order to rid your body of the symptoms of sugar addiction. It is hard to fathom that by giving up sugar, a person can achieve naturally sustaining energy, better digestive function, enhanced brain function, better looking skin and weight loss. Sugar addicts fear a day without sugar because they do not remember a time when they got through a day feeling well without it. As the body begins to detoxify and re-balance itself, natural energy levels increase. With proper supplementation, adrenals and hormones can be encouraged to regain their proper function. With cleanses and diet adjustments, Candida overgrowth can be controlled. Dear Jen, I recently got back into the dating game and I have gone on some dates. I feel like I am getting rejected by these men that I went out with and it is hard to put myself out there. What advice can you give me to keep going with this dating process when I take the rejection so personally? Desperately Seeking Connection Dear Desperately Seeking Connection,, Dating is a process and absolutely needs to be viewed as such. Every person isn’t right for every other person and accepting that early on in your dating adventures will go a long way in preserving your self esteem as well as enjoying the journey while trying to get to your end destination…Love. Just because a date decided you weren’t right for them doesn’t mean you’re not a great person, and quite possibly the perfect person for someone else. Sometimes you will be the person to decide it wasn’t a good fit and I’m sure you wouldn’t want him to take it as a personal rejection. We all need to keep in mind that every lid does not fit every pot and move forward; but don’t get discouraged, because every lid does have a pot! If you keep dating, learning and moving forward, the day will come when you will sit down across the table from someone and all will be right with the world. You’ll also need to consider that you might be exhibiting a behavior on these dates that is standing in your way of getting second dates. I would recommend that you attend one of my dating seminars, where we cover the do’s and don’ts of dating and the most common mistakes made on dates. I have also authored a book called “When Planets Collide,” which covers over 100 dating topics (whenplanetscollide.com). Once you have learned the do’s and don’ts of dating and have made sure you are showing up with the right attitude, not making common mistakes and presenting yourself well, you will find that it will be easier not to take the so called “rejection” personally. Instead of viewing it as rejection, you will begin to see that it just wasn’t the right fit.

odern studies and centuries of use s h ow t h a t a w i d e variety of herbs, essential oils, and other natural substances improve oral hygiene and help prevent and heal many tooth and gum disorders. Many herbalists advocate a preventative, holistic approach to mouth care that combines herbs with an improved diet and an effective daily oral-hygiene routine. Dental-health professionals agree that the most important factor in tooth and gum health is diet. Since the bacteria in the mouth thrive on sugar, it is best to reduce or eliminate refined simple sugars from the diet, and eat primarily fresh foods free of chemicals, additives, and preservatives. Eating whole grains and high-fiber foods like raw carrots, and chewing them thoroughly, stimulates the gums. Nutritional supplements also improve dental health. Antioxidants, including vitamins C and E, zinc, selenium, and beta carotene improve oral health, and folic acid reduces plaque, inflammation, and bleeding in the mouth. Daily doses of Coenyzme Q10 combat receding gum lines. Supplemental vitamins and minerals are important, since the body takes needed calcium from the jaw bone first in the event of a deficiency, which can lead to loose teeth. Eating kelp daily promotes healthy teeth and gums, since it is rich in vitamins, minerals and trace elements. In addition to diet, a thorough, consistent oral-hygiene routine is important for healthy gums and teeth. Since gum disease and tooth decay stem largely from excess bacteria residing between the teeth and gums to form plaque and tartar, the main goal of oral hygiene is to remove excess bacteria from the mouth. Dental professionals recommend brushing your teeth at least twice, and flossing 42

Since bacteria can also collect on the tongue, cleaning the tongue with a toothbrush, a commercially-available tongue scraper, or even an upside-down soup spoon, eliminates twice as much bacteria from the mouth as just brushing the teeth. It is also beneficial to thoroughly brush the gums, as well as the insides of the cheeks. Over time, bacteria can inhabit your toothbrush and reenter your mouth with each brushing, so dental-care professionals advocate changing your toothbrush twice a month. You can also buy a toothbrush sterilizer, or soak your toothbrush in an antibacterial mouthwash between uses. Electric rotary brushes have been shown to remove significantly more plaque than regular brushes. Rubber-tipped gum stimulators also further aid in cleaning, stimulating and massaging the gums to keep the tissues healthy. Brushing and flossing alone cannot always remove enough bacteria from deeper gum pockets, so dental-care providers often recommend oral-irrigation devices such as the “Water Pic” and “proxi-brushes,” very small brushes resembling bottlebrushes or pipe cleaners. These tools can clean hard-to-reach areas between teeth, around braces and other dental work, and inside spaces caused by receding gums. If you wish to maintain healthy teeth and gums naturally, you can easily incorporate natural and herbal tools and preparations, such as natural brushes or picks, powders, pastes, teas and mouthwashes into your daily oralhygiene routine. Many preparations are easy to make at home, and healthfood stores sell their own varieties that include the same herbs and ingredients. It is important to exercise care
when using herbs. Some herbs can be toxic if used for too long or in too great amounts. In addition, the active ingredients in some herbs are not recommended for certain health conditions, and can react negatively with prescription medications or other remedies. It is therefore recommended, especially if you are pregnant, wish to treat a child, have special health conditions, or are taking prescription medications, that you research the herbs that interest you before using them, and consult a qualified professional if you have questions or doubts. You do save on calories when you take out the fat, but many such dressings are loaded with sugar: more than 2 teaspoons per serving, and offer zero nutrition. Plus, they block your ability to absorb the carotenoid antioxidants in salad greens and tomatoes” important compounds that reduce the risk of heart disease. In one study, people eating fullfat salad dressing absorbed twice the nutrients of those using reduced fat dressing. Fat-free dressing allowed for virtually no absorption of these good guys. Myth #3: Celery Has Negative Calories, so It Will Compensate for the Extra Cheese! At six calories per stalk, celery is unquestionably a weight-friendly food. But, alas, the body doesn’t expend more calories than that to chew and digest it, according to David Baer, Ph.D., a research physiologist at the USDA Beltsville Human Nutrition Research Center in Maryland. “No negative calorie foods have been discovered yet,” he says.
Myth #4: Lettuce Is Lettuce. Not when it comes to nutrition (or flavor): Arugula and watercress are superstars, loaded with cancer fighting compounds. In fact, a chemical in watercress has been shown to deactivate one of the cancer causing toxins in tobacco smoke. Spinach is another hero because of its cache of lutein, thought to protect against cancer and blindness. And baby versions of kale, mustard greens, and turnip greens are less sharp, tough, and bitter than the grownups but are outfitted with the same cancer fighters. Dark leaf, mild tasting greens, including romaine, red leaf lettuce, and many mesclun mixes, don’t have a wealth of phytonutrients but have respectable levels of beta carotene. Light greens, like iceberg and endive, are pretty much all nutrition duds. Myth #5: Go for the Green. Colorful, all-vegetable salads offer good-for-you phytonutrients that aren’t available in greens. For instance, powerful antioxidants (anthocyanins) in purplish vegetables such as eggplant help reduce heart disease risk and improve brain function. Radishes offer cancer fighting indoles; red tomatoes are the ultimate in lycopene, linked to lower risk of heart disease and cancer. Myth #6: Garbanzo Beans Give Me a Meal’s Worth of Protein. A ladleful (about 1/4 cup) provides roughly 4 grams of protein -- not enough, if that’s the only protein you’re having in that meal. You need .36 grams per pound of body weight per day (so a 154 pound woman needs about 55 grams of protein daily). Get more by using 3/4 cup of beans, that’s 11 grams of protein, plus 1/4 cup of chopped egg (4 grams of protein) or 1/4 cup of shredded cheese (7 grams of protein).

Myth #7: If I Add Bacon, I Might as Well Have Ordered a Burger. Bacon won’t ever win any health prizes; in fact, nutritionists consider it a fat (and not a healthy fat!), as opposed to a meat. But it’s not as bad as you might think. One slice, about 1 tablespoon crumbled, has about the same amount of fat as 2 tablespoons of feta or shredded cheese or 1 tablespoon of sunflower seeds. Just make sure you keep other fats, such as croutons or creamy dressing, out of your salad. Myth #8: You Can’t Get Food Poisoning from Salad like You Can from Beef or Chicken. “Lettuce, sprouts, and tomatoes are some of the most common carriers of salmonella, toxic strains of E. coli, and other harmful microbes,” says Christopher Braden, M.D., at the Centers for Disease Control in Atlanta. How do they get into your salad? From the manure and contaminated water they’re grown in, from a dirty cutting board or knife, or from people touching the vegetables without washing their hands. Not much you can do about it when you’re out, but at home, wash veggies under running water. Myth #9: Organic Salad Is Healthier. When it comes to nutrients, freshness matters more than an “organic” designation. Every day after they’re picked, vegetables lose vitamin B, vitamin C, and other nutrients; heat and light speed the decline. A conventional head of lettuce that was picked yesterday will have retained lots more nutrients than an organic head of lettuce that’s a week out of the fields. Of course, there are lots of reasons to choose organic, but a nutrient bonus isn’t one of them.
