s we enter the month of July, there is one main holiday in which we place focus: The fourth of July. It is a time where family gatherings include picnics, fireworks and perhaps, an adult beverage or two. We come together to observe something that does not seem to be viewed as celebration-worthy, until this time of year: Patriotism. Why? Are we too afraid that celebrating the love for our country displays something else: Independent Supremacy? Or maybe we feel that it offers reverence to our past, one that includes painful and irreversible events, which might portray beliefs that we no longer carry. No matter the reason, patriotism seems to be confused with its original intent...a stronger community. Civilizations have been at war since the beginning of their existence. Humans have enslaved others since there were “others” to enslave. Unfortunately, these actions are engraved in our history. However, with that, I would like to believe with every passing year, decade and century, comes wisdom and progress toward something that resembles peaceful co-existence. My children and I recently viewed several episodes of “Life,” a BBC and Discovery Channel production. I remember learning about the circle of life when I was younger, but these episodes truly depicted that message. It’s amazing how efficient nature is. There is no waste, and organisms live symbiotically; there is rhyme and reason to the way animals and plants interact with one another. After many years of evolution, our species grew to be the leading force of intelligence on this planet. We moved through phases of life and lifestyles, into our modern world of industrialization, and now to a digital revolution. Our advances continue at warp speed, leading us to new technology, which automatically replaces the old. We can do most things from home, via keyboards and keypads, independently. With that, I often wonder if we in fact found our place in this circle of life. As you gather to celebrate the Fourth of July, even if it is for tradition’s sake, remember what it took to gain the independence and freedom we honor: Commitment. Trust. Loyalty. Dedication. Tradition. For it is not independence from one another that we gain strength, it is in fact the opposite. It is with common ground that we achieve empowerment, community, enlightenment and peace. HB

he taraxacum officinale, also known as the common dandelion, is a perennial, herbaceous plant. It is known for its toothy, notched and grooved leaves; with a stem that shoots from the center, sporting a yellow flower atop. Its common name derives from the French word Dent-de-lion, meaning “lion’s tooth.” Besides the interesting fact that these plants reproduce asexually, creating genetically identical offspring; and that the flower heads open in the daylight and close at night, these plants have even more unique qualities that often go overlooked. Dandelions are a rich source of vitamins A, B complex, C, and D. They are also high in mineral content, such as iron, potassium and zinc. Dandelion leaves are used to add flavor to salads, sandwiches and teas. You might also find dandelion root in some caffeine-free coffee substitutes. According to the University of Maryland Medical Center, dandelion roots and leaves were used to treat liver problems in traditional medicine. Native Americans used dandelion decoctions to treat kidney disease, swelling, skin problems, heartburn, and stomach upset. Over time, the use of dandelion root and leaves ranged from treating digestive disorders to breast problems; from fevers and boils to diabetes and diarrhea. Today, dandelions are mostly used to stimulate the appetite, aid in digestion, and for liver and gallbladder function. The other benefit of dandelion: stress reliever. It is said that if one makes a wish, while blowing the fluffy white dandelion florets into the air, that exact desire will come true. So, here’s to your health…and may all your wishes come true! HB

here’s almost nothing worse than experiencing ear pain, itching, loss of hearing, or a sinus headache.
Ear Candling is an ancient practice, dating back to biblical times in Egypt, the Orient, as well as European cultures. This simple, gentle treatment removes wax from the ear, improving your sense of well-being, physical, mental and even spiritual. The candle is a long hollow tube made from unbleached muslin immersed in an aromatic herbal solution. After it dries, the cone is then dipped into beeswax. magine this: King Arthur takes Guinevere as his Queen. Later, when Guinevere takes a liking to one of Arthur’s ravishing young knights, Sir Lancelot, she and Arthur invite him into a relationship in which they share Guinevere’s companionship. The three have a meeting at the Round Table and propose a set of ground rules by which they all must strictly adhere to. Arthur gets to spend quality time with her on Monday, Wednesday and Friday. Lancelot spends time with her on Tuesday, Thursday and Saturday. On Sunday, half the day is spent with King Arthur and the other half with Lancelot. Both men are entitled to have sexual relations with Guinevere and it is forbidden for either of the men to encroach upon the other’s scheduled quality time with her. The trio resides in the same castle, share their wealth, and fight battles side by side. This example is quite opposite of the Disney cartoons that most of us were raised on: one man, one woman, happily ever after. However Polyamory, which is a term coined in 1990, means loving more than one. People who choose to engage in Polyamory have multiple, intimate, and consensual relationships with emphasis on honesty, communication and emotional commitment. Most people who practice Polyamory begin from the premise that one partner can-
not meet all of their needs. A common belief is that love is not a limited resource only reserved for one person; rather, it is abundant and can be shared between more than one partner.
Polyamory is not for everyone and definitely takes a lot of time and attention. It is probably not a good idea to try Polyamory if: you are dissatisfied with your current relationship, you think it will “save” your relationship, it is the cool thing to do or for more sex. Be honest with yourself: Can you imagine your partner being sexually or emotionally involved with another person? Could you handle it? How available are you? Are you an excellent communicator (communication is even more of a necessity in that it involves more than just one person!)? Make a list of the benefits vs. challenges and discuss them with your partner. Additionally, define your sexuality and relationships on your own terms. I am not a big fan when it comes to “labeling” people’s sexuality and their sexual behaviors. The trouble with labels is that they can mean many different things to many different people. For most, the beauty of Polyamory is that it frees them from arbitrary lines and limits, so why construct new ones? HB

Poor Indoor Air Quality Affects Children and Pets Submitted By Catalytic PURE AIR LLC

ood indoor air quality is essential, especially for young children who breathe faster than adults--inhaling 50 percent more air per pound of body weight. Children and pets have many needs--food, water, exercise and love. But how often do you stop to think about what exactly your children and pets are breathing? Like children, pets also suffer from allergies, asthma and other respiratory problems. Even though indoor air is typically two to five times more polluted than outdoor air, and we spend about 90 percent of our time indoors, few of us understand the health effects of poor indoor air quality. Little attention is paid to the quality of the indoor air in our homes, workplaces or schools. But there are some very good reasons we should be very concerned about the indoor air quality, for our children and pets. The breathing zone for children and pets (less than two feet above ground) can be more contaminated than for adults (four to six feet) because many contaminants weigh more than air (mercury, pesticides, etc.). Children and pets spend more time breathing through their mouths, which also make them more susceptible to airborne contaminants. Remember that anything smaller than 2.5 microns is respirable, and may have negative health effects--a strand of human hair is 80 microns wide. Getting a pet, moving to a new home, and having children, motivate us to improve our indoor air quality and control odors,

but using air fresheners and or aerosols is a mistake. Global sales of air freshening products are on the rise, indicating we are not happy with our indoor air quality and want to improve it. But if consumers were more aware of the real impacts air freshening products have on indoor air quality and health, they would think twice. Here’s the unvarnished truth: Air fresheners almost never “freshen” the air. They just mask odors, either with synthetic fragrance or by interfering with your ability to smell, by coating your nasal passages with an oil film or releasing a nerve-deadening agent. In rare cases, they will actually break down the offensive odor. What’s in them, and what’s the risk to children and pets? Known toxic chemicals that can be found in air fresheners include camphor, phenol, ethanol, formaldehyde, and artificial fragrances (which contain their own mix of toxic chemicals). These chemicals can cause symptoms like headaches, rashes, dizziness, migraines, asthma attacks, mental confusion, coughing and more. Some of the substances in air fresheners are linked to cancer or hormone disruption.

No two homes have exactly the same air quality issues and there’s no way to eliminate them all, but you can do many things to reduce your exposure to the worst culprits. Below are some air quality tips to consider what you, your children and pets are breathing:
Improve Your Indoor Air Quality
• Remove the source. Get rid of your air fresheners, toxic cleaners, etc. Use your nose to find sources of poor air quality. • Ventilate. Open your windows and get some fresh air in the house or office. • Keep the house clean to reduce allergy-causing agents like microscopic dust mites, animal dander and pollen. • Use exhaust fans, or open windows in the kitchen or bath room areas when taking showers, cooking, or using the dish washer. Make sure clothes dryers are vented to the outdoors. • Many odorous chemicals/pollutants contain volatile organic compounds (VOC). VOC’s come from many sources: cleaning agents, furnishings, pesticides, hobby materials, rugs, building materials, paints, etc. What might be off-gassing in your environment? • Take care when cleaning the litter boxes in your home, as the resulting airborne dust can be harmful. Brush pets often, and outside. • Use a high quality air purifier to remove, rather than mask the indoor air quality problems.

or at-home remedies of burns, scalds, grease spatters and sun burns, try a vitamin C spray, one tsp. per pint of water; apply it directly to the burn. However, the grandest remedy for burns that all homes should have is Pleo muc cream. Pleo muc is a homeopathic dilution of cell membrane fractions of Mucor racemosis friesen, the fungus that grows on corpses. It is what mummies are made of and can be re-enlivened from a 5,000 year old mummy, and can’t be destroyed by burning up to 500o F. Burns Are a Heart Attack in the Skin Burns disrupt the fine capillary circulation in the skin or more major vascular disruption. When coronary arteries do not provide enough oxygen to the heart, muscle angina (chest pain) ensues. Likewise, when the skin doesn’t have enough oxygen, pain and injury result. Don’t Forget About Frostbite Frostbite is similar to burns in that it disrupts circulation in the skin. The current treatment of advanced frostbite, with amputation of the extremities, is certainly extremely harsh. About twenty years ago, one of the sons of an old patient was traveling from Los Angeles to Reno and decided to stop over at Mammoth Mountain resort for a jog up the mountain. Unfortunately, he got stuck in a blizzard half way down the mountain and his tennis shoes were no protection against the ice, snow and cold. I saw him later that evening; he had severe frostbite with dark purple and black toes, with numbness and extreme pain. I injected his toes with Pleo muc and procaine and had him apply pleo muc cream throughout the night. The next morning he had pink toes and no pain. That was one of my first “Wow” experiences with Pleo muc. In retrospect, I would have also bagged his feet with ozone gas, which also helps burns and circulation. WHAT KIND OF A LEADER ARE YOU?

At a time when our country is facing war and questioning its leadership, we should be reflecting on our own leadership styles. It isn’t through trying to change those already in leadership roles that can create real change in our country, but through changing how we lead ourselves and others that will make a significant difference in our day-to-day realities. Whether you are a business leader, parent, or simply “leading” your own life, there are two types of leadership styles, Inspiring and Controlling. There are 10 main characteristics that help define the difference between these two types of leaders. We put them in juxtaposition, not to make one bad and/or good, but to simply bring awareness to your own leadership style so you can make a different choice if you find yourself falling into any one of the characteristics of the Controlling Leader. An Inspiring Leader is authentic; they operate from higher ground principles and make their decisions coming from a place of love, whereas a Controlling Leader upholds a façade; they operate from lower ground principles and are coming from a place of fear. In our world today, there is a shift that is happening among individuals, as well as in the business world, from being ego-driven to souldriven in our personal and business missions. Following are the top 10 characteristics that define these leadership styles: 1.) An Inspiring Leader is open to change and is always looking for better and easier ways of doing things. Their decisions are based on the greater good of all and not solely on one individual. There is an ease about them because they live in divine flow trusting in a higher process. A Controlling Leader fights and resists change. They live in the past and because they have a need to control, often are working with hidden agendas to maintain this perceived control. They always seem stressed and are constantly pushing themselves and pushing others. 2.) An Inspiring Leader lives from their Soul and Spirit. Their family or business becomes the vehicle in which they assist others in changing and growing. They know who they are and why they are here and operate their life from a clear set of core values. A Controlling Leader lives from their ego and personality. They think they know it all and have a deep-seated need to be right. They use their family or business for self-recognition. They resist soul searching or searching for a deeper meaning in life. 3.) An Inspiring Leader is flexible, responsive and adaptable. They are connected to a bigger vision with “big picture thinking” and the awareness that we are all in this together! They are not threatened or intimidated by people with status or money. They accept 100% responsibility for their leadership style and not only admit but apologize when they are wrong. A Controlling Leader is inflexible, reactive and positional. They are disconnected from the bigger picture focusing on “what’s in it for me.” They are threatened or intimidated by people with more money or a higher position or status. They do not take responsibility for their leadership style, but place fault on others and will ignore the situation when an apology is in order.

4.) An Inspiring Leader acknowledges their strengths and weaknesses. They surround themselves with people that complement their weaknesses and capitalize on their own strengths. A Controlling Leader denies their strengths and tries to cover up their weaknesses. They surround themselves with people who are less talented than themselves to make themselves look good. 5.) An Inspiring Leader will be solution-oriented, helping others to identify and solve their problems. A Controlling Leader will be problem-oriented focusing on the negative and what’s wrong or who’s wrong and stay stuck in the problem. 6.) An Inspiring Leader is always giving the credit away to others where a Controlling Leader will not only take the credit, but will do so even if it isn’t theirs to take! As Lee Iacocca said, “One can accomplish great things when they no longer care who gets the credit.” 7.) An Inspiring Leader builds people up, empowers them to really go for it and spawns other authentic leaders. They provide direction and guidance and encourage others to believe in themselves. A Controlling Leader keeps people down below their “level” wanting them to stay dependent and small. They provide very little direction and act as if they know it all. 8.) An Inspiring Leader unites the people in their family or organization. They pass on positive feedback that creates respect and unity among others, where a Controlling Leader will pass on gossip and negative feedback creating division. 9.) An Inspiring Leader creates an open forum for ideas to flow freely from everyone and encourages others to express their ideas. A Controlling Leader creates a forum for their own ideas and has a deep-seated need for it to be their idea and their way, becoming defensive or reactive to others feedback. 10.) An Inspiring Leader is emotionally connected to what’s going on within the organization or family. They understand that quality time is not planned but is spontaneous and comes with quantity time. They feel the energy of those around them. They remember where they’ve come from and maintain compassion for others. A Controlling Leader “leads from the desk”, and is out of touch with what’s really going on within the dynamics and energy of the organization. They forget where they’ve come from and end up making decisions that can hurt people. This list of characteristics helps raise our awareness as to whether we are coming from a controlling or inspiring place in our lives. Awareness is the starting point to change. The next step is learning how to uncover the issue and/or suppressed energy within us that was causing us to control in the first place. Once the issue has been correctly identified, can we release it, should we choose to. These are the keys to becoming an Inspiring Leader on a more consistent basis. HB

e have two major foundations to our body. The first is our feet and the second is our pelvis, or low back. If one of these foundations gets out of place or distorted, problems can arise. By the age of 20, nearly 80 percent of us have some kind of foot problems, and by age 40 almost all of us do. Your feet are the foundation of your body. They support you when you stand, walk or run. They also help protect your spine, bones, and soft tissues from damaging stress as you move around. Your feet perform better when all their muscles, arches and bones are in their ideal stable positions. Healthcare professionals know that alleviating pain in one part of your body often requires treating a different part. ummer is here! The days are longer and warmer and we have become more active, so it is a natural time to lean up and loose the winter weight. But what happens when physical activity increases, the diet is lightened, and still those few excess winter pounds won’t come off? If the weight is not coming off as it should, it may be because of a Candida overgrowth. For the most part, the cravings for heavy food wanes with the cold, replaced by lighter, seasonal foods; for example, the desire for that piece of cake is replaced by the urge to eat a bowl of berries or a plate of pineapple. Replacing the refined sugars in cake with natural sugars of fruit still feeds Candida; and if you are still craving that cake, it is another sign that Candida may have taken over. Cravings are a very large part of Candida’s control over your body. As the yeast proliferates, it requires a good food source. Your body is already the right climate for the growth of yeast, since your intestines provide a warm, moist environment, all that’s needed is food; hence cravings for sugar, wheat and dairy, the things Candida grows best on. Dehydration, protein and mineral deficiency can also create cravings, and when the body is over run with Candida, it can be difficult to discern whether the cravings are because of something you need or something you need to feed. As stated in The Candida Yeast Answer, “Yeast can become a hardy, aggressive fungus. It multiplies rapidly, can assume long periods of dormancy, and when necessary, becomes cannibalistic. There are approximately 250 species of yeast, many of which are parasitic to the human body. The major yeast specie present in humans, however, is Candida Albicans.”

Constant weakening of the immune system results in autoimmune and or infectious diseases, and a general decline of quality of life. When Candida enters the bloodstream it becomes systemic. It can quickly invade tissue causing joint pain, inflammation and immunity issues. Candida robs the body of nutrients and secretes excessive blood pollutants; which contribute directly

A compromised immune system allows for the quick development of a strong foothold for Candida within the body. It then perpetuates immune deficiencies by releasing toxins into the blood stream, which continue to suppress the immune system. Hormones and steroids affect the immune system and create glandular imbalances, which creates a favorable environment for Candida to thrive. Improper diet is a major contributor to the growth of Candida. The highly refined, low nutrient diet most American’s eat, over time, transforms the colon into a lethargic pipe, encrusted with layers of decaying fecal matter; which creates a breeding ground for pathogenic bacteria. Candida also impairs the function of the small intestine, leading to malabsorption, thus weakening the immune system and starving the body of protein, vitamins and minerals. Good nutrition is also essential for the production of hormones, enzymes and the proper amounts of hydrochloric acid in the stomach, which in turn is necessary for proper digestion. It is estimated that less than 10 percent of Americans have enough friendly bacteria in their intestines to maintain optimal health. Adequate bacteria levels maintain proper acid-alkaline levels in the intestines. They also aid in the production of lactic acid and acidophilin, which helps to sterilize and prevent the growth of negative microorganisms. There are many strains of friendly bacteria; it is estimated that there should be approximately two pounds of friendly bacteria living in the intestines in order to maintain healthy intestinal walls. Lacto Bacillus Acidophilus resides in the small intestine, while Bifido Bacterium Bifidum lives in the colon. Without these friendly cultures to help keep it clean and moving, the colon easily develops diverticuli, polyps, impactions, bloat and gas.

Friendly bacteria are attacked by antibiotics, birth control pills, chemicals like chlorine (added to tap water and in swimming pools), and are weakened by uncontrolled physical and emotional stress. So it is easy to see how a standard American lifestyle destroys the good balance of the intestines and feeds unwanted microorganisms. But all hope is not lost. There are many things one can do to counteract the negative effects modern life has on the intestinal health. Denying the food source to Candida, through diet modification, has a profound effect on its ability to grow and thrive. or years, practitioners of acupressure (no needles, just gentle tapping or pressing) have known that there are certain acupoints on the body that have a very rapid, powerful, releasing-effect on negative emotions created by past trauma. Due to the way our fight-or-flight brain functions, any time an event even remotely like the original trauma occurs in your life, those original emotions and body sensations come flooding back. If the event was particularly emotional (like the loss of a job, a natural disaster or an automobile accident), or happened many times (such as a parent or spouse repeating a negative statement or calling us names) then we experience the emotions and the body sensations (throat tightening up, feeling sick to our stomach) that we experienced when it first happened. We wish we could forget that experience for good, but no matter how much we try to forget, it sticks like glue--until now. Finally, we have learned how to coax the subconscious mind into changing the past.

You may remember quantum physicist Fred Alan Wolf from the movie What the Bleep Do We Know. He is considered one of the most important authors and pioneers in the field of consciousness. He says, “The world is malleable, infinitely changeable; not only are we capable of changing the present, but also the past.” We have recently learned that by pressing just a few acupoints on the body, while saying very specific words that the limbic mind understands, the negative scene or memory disappears completely, or changes into another scene, something the mind considers more pleasant. When the scene changes, the emotions that were associated with the trauma also change into pleasant or neutral emotions, or just register as relief. At any rate, you feel at peace. But that’s not all. When the emotions change, the trauma leaves your body as

well. You can actually feel the change. It’s like a domino effect. The scene changes, then the emotions, then the body sensations. So what’s left in the way of that original negative memory? Sort of a foggy pale scene or nothing at all, with no emotional charge attached. Your body feels peaceful, relieved or just nothing. That neck and shoulder tightness disappears, or the knot in your stomach, your lower back pain or the pressure in your chest…is gone.
remove the negative scenes and memories held by that part of our brain, we will be improving our health and healing our emotions. We will have taken our power back; and as far as our subconscious mind is concerned, it has changed the past. This process is easily done over the phone. One of the best features of this quick little procedure is that the practitioner doesn’t have to know what the scene or memory is. If it is an embarrassing scene that you don’t want to tell anyone, that’s fine. You are the only one who needs to know what it is. It can be quickly neutralized without anyone else ever having to learn about it. Unblock yourself now by removing scenes and memories you never want to think about again. HB
Sometimes the scene disappears immediately; sometimes it morphs and changes into a peaceful or delightful scene; you may now see yourself walking through a field of flowers, or flying away with a flock of geese; or being picked up by an angel and carried to safety. It’s different for everyone. The most amazing thing about this Remove and Rejoice process is that whenever one is prompted to think of the original traumatic scene, it isn’t clear any more. The flock of geese or the angel, or the fields of flowers come to mind, bringing the emotions to match the new scene. If you try really hard to bring back the original scene (I don’t know why you would want to), it may reassemble itself indistinctly; like a faded old photograph, but the negative emotions will be gone for good, as well as the anxiety response from your body.

If you have experienced many traumas, or have developed a belief or attitude that has been created by living through those traumas, then instead of a scene, a simple shape can be used to represent the belief. The same acupressure points are used, the same magic words repeated, and voila! In your mind, the shape changes color, texture, size, and simply disappears or becomes something else…another shape or a pleasant scene, which of course results in different emotions as well as a feeling of release and freedom in your body. Breaking Stigmas While Offering Solace Written By Leslie Katz LCSW
T
he National Council for Community Behavioral Healthcare is introducing to the United States an exciting new program called Mental Health First Aid (MHFA). MHFA was originally founded in Australia in 2001 by Betty Kitchener and Anthony Jorm. The goal was to teach non-clinical laypersons, people they refer to as mental health first aiders, a way to understand techniques that are used in helping those who may be in the early stages of developing a mental illness. Mental Health First Aid is the help offered to a person developing a Mental Health Problem or experiencing a mental health crisis. The first aid is given until appropriate treatment and support are received or until the crisis is resolved. The method they devised involves 12 hours of training based on first, understanding the most common mental health disorders, and then using five techniques that combine to form the acronym ALGEE. The “A” stands for “Assess risk of suicide and harm,” the “L” stands for “Listen non-judgmentally,” the “G” stands for “Give reassurance and information,” the first “E” stands for “Encourage appropriate professional help,” and the final “E” stands for “Encourage and utilizes self help and other support strategies.” These letters serve as a pneumonic device to help mental health first aiders remember the information necessary to be supportive during a mental health incident. Although scientific evidence has overwhelmingly shown that mental illness is a sickness, caused by chemical activity in the brain, many people still feel stigma associated with mental health problems. This stigma can make it difficult for people to feel safe in getting the help they need. The goal of MHFA is to change the stereotypes that get in the way of someone both receiving and administering assistance. The mission of every MHFA instructor is to get the message out, and that everyone can be of service if they have the right tools.

The time investment in the training is a worthwhile way to get involved and make a difference. Is there such thing as a healthy

h the hot dog, one of those foods that gets associated with summer, barbecues and baseball. Hot dogs are in a group of food that has a bad reputation, and its reputation has mostly been well earned. Many hot dogs are often made from very low-quality meats, and contain all sorts of crazy fillers and chemicals that can in no way be defended as healthy. However, hot dog enthusiasts are reluctant to part with their beloved franks, and in recent years there have been a host of “Healthy Hot Dogs” entering the market. Which begs the question, can a hot dog be healthy? Let’s examine a few hot dog brands, whose labels boast that they are healthier than the average dog, and weigh the pros and cons:

Even though the use of Nitrates and Nitrites are regulated, with concentrations not to exceed 200 parts per million in finished products, it is best to avoid all meat products that contain this dangerous preservative. Trader Joe’s All Natural Uncured All Beef Hot Dogs Ingredients: Beef, water, contains less that 2% of the following; allspice, celery juice powder, evaporated cane juice, garlic powder, ginger, honey, lactic acid starter culture, mustard, nutmeg, onion powder, paprika, pepper, sea salt. Pros: Contains beef that has not been mechanically separated, nor any meat by-products. Any meat product that contains organ meats must be labeled with “variety meats, or meat by-products” so it’s a good sign not to see either of those statements on the list. “Uncured” on a hot dog label, means that the meat is preserved without nitrites, nitrates, or salt curing. Instead, celery juice is used, a source of naturally occurring sodium nitrate. It’s probably more accurate to say that uncured products are naturally cured, for the nitrites in the celery juice are consumed by the lacto-bacteria; this converts the celery juice first to nitrite, then to nitrous oxide, a gas that dissipates in the atmosphere. This slow curing method of preserving meat has been practiced for centuries and is a safer alternative to nitrite and nitrate cured meats.
Ball Park’s “Better for you” hotdogs, Turkey Franks: Ingredients: Mechanically Separated Turkey, water, corn syrup, contains 2% or less: salt, potassium lactate, flavorings, modified corn starch, paprika, sodium phosphate, autolyzed yeast extract, beef flavor (Beef stock, Maltodextrin, salt), sodium diacetate, dehydrated garlic, ascorbic acid (vitamin C), Sodium Nitrite, extractives of paprika. Pros: Less fat than a regular Ball Park hotdog; which must be Ball Park’s reason for listing this frank in the “better for you” section of its product list. Cons: The first ingredient on the list should serve as a giant red flag. “Mechanically Separated Meat” is “a paste-like and batterlike meat product produced by forcing bones, with attached edible meat, under high pressure through a sieve or similar device to separate the bones from the edible meat tissue.” That sounds appetizing, doesn’t it? The addition of corn syrup ups the sugar content of this frank, negating any of its low-calorie virtues. Then of course, there’s Sodium nitrite. Nitrates and nitrites are often added to hot dogs and other processed meats such as bacon, sausage, or sandwich meats to cure and preserve them. These preservatives are also known carcinogens that have been linked to cancer of the esophagus, stomach, large intestine,

Cons: This product is not organic, which means that the cows could have been exposed to certain herbicides, pesticides, hormones, antibiotics, or GMO feed. Applegate Farms: The Great Organic Uncured Hot Dog Ingredients: Organic Grass-Fed Beef, Water, Contains less than 2% of the following: Sea Salt, organic spices, organic garlic powder, organic paprika, celery powder, organic onion, lactic acid starter culture (not from milk).

Pros: Organic grass fed beef means high quality meat from cows that were not exposed to some of the dangerous substances mentioned above. Furthermore, there is increasing evidence that grass fed organic beef is higher in Omega 3’s and lower in saturated fats. The majority of the ingredients in this product are organic as well. It is sugar-free and contains no gross meatby-products, nitrites or nitrates.
In short, even the healthiest of hot dogs is probably best put in the category of “sometimes food.� Once in a great while, a hot dog made from high quality ingredients will not do one much harm, but the “healthy� labeling does not mean that any of these products will necessarily increase one’s health or well being either. Golden Calendula Written By Allison Prater
alendula Officinalis is sometimes called pot Marigold, for it was once a culinary staple. In the seventeenth and eighteen century calendula flowers were used in everything one could imagine; oatmeal, soups, puddings, dumplings, even calendula wine. The orange and yellow daisy-like flowers are native to North Africa, Iran, the Mediterranean and most of Europe. In addition to being a favorite food, it was prized for its gentle medicinal qualities, and was even considered to posses powerful magic. In the sixteenth century, calendula flowers were included in a potion recipe that made it possible for one to see fairies.
Below is a simple recipe for a calendula infused oil, intended for topical use. Enjoy the gentle soothing effects of this oil; it can be used daily, or on insect bites and other summer skin troubles.
Recently, a tincture of Calendula flowers has been used in the treatment of menstrual cramping, toothaches, fever, flu, and stomachaches. The herb induces sweating in a fever, increases urination, aids digestion and acts as a general tonic. Balms and ointments made from calendula flowers are often applied externally in the treatment of external sores, cuts, bruises, burns and rashes. In ancient Rome, the petals were applied to scorpion bites, and they are said to relieve the pain of bee stings.
Begin with a clean jar that is completely dry inside, any moisture in a jar can cause the oil to mold or spoil. Place the dried herbs in the jar with enough oil to cover the petals completely. Check the jar after several hours to make sure that the petals have not absorbed all of the oil, if this has occurred, add another inch or so of oil. Cover the jar with a clean piece of cheese cloth or coffee filter and secure with a rubber band. Do not cover with a lid yet, this mixture needs to breathe. The oil will infuse best in a sunny window or on the kitchen counter, for about ten days. Strain out the plant material completely, using your cheese cloth, being sure to get even the tiniest plant particles. Once strained, the oil may be stored in a covered glass jar, at room temperature, for up to one year. This oil may also be combined with beeswax or cocoa butter to make a thinker, richer balm or ointment.
Calendula Oil: One clean glass quart jar Clean piece of cheese cloth (or a coffee filter) 1/3 cup dried calendula petals Extra Virgin cold pressed olive oil (enough to cover herbs)
Calendula is easy to grow in one’s own backyard. Seed can be sown directly outside in the early spring, when the soil is about sixty degrees, or you can start them indoors and transplant. They are very hardy plants, and will usually come through a surprise spring frost with no trouble. Calendulas tend to attract aphids, whiteflies and thrips; it can be used as a magnet plant to draw them away from other crops that may be plagued by these pests. To harvest, pinch the flower head off at the stem, pull each petal, dry them in the shade on paper, or use a dehydrator on its lowest setting. The petals need to be kept from touching one another as much as possible, as this leads to discoloration.

And They Call the Wind “the Dryer”

The same study suggests that wind can cause deformed plants, and can delay crop maturity. This last is no small factor in the short growing season here in the high desert.
hese late spring days, my sister Beth and I often have coffee on the side porch by my flower garden. It usually smells fresh this time of year. “It’s always windy around your place,” Beth commented. “You should do something about it. It’s not good for the plants.” “I don’t like to take antacids. Besides, it’s a natural process, and it’s simply hyperbole that it can kill plants or strip paint or any of that other stuff.” Beth looked puzzled. “It must be blowing twenty miles an hour. See those branches whipping? You know that’s not good for your garden.”
In our dry conditions, the wind-whipped sand that strips paint off your house won’t do your cucumbers any favors either. It abrades the skin of plants, allowing even more moisture to evaporate. If the wind does stop blowing, dust on the plants interferes with respiration and photosynthesis. Beth is right. My plants need protection. A first line of defense is proper choice of garden location. My worst winds come from the south, so the north sides of buildings get some protection. Unfortunately, most of my sensitive plants are on the south side of the house.
Oh. She’s right about the wind at my house. She lives in town, where buildings and fences shield plants from the brunt of the wind. But I live out in sagebrush suburbia, where houses are separated by several hundred feet, and the neighbors’ fences and trees aren’t close enough to do much but funnel the wind my direction.
As a more permanent solution, I’ve planted some shrubs and trees on the south and west sides of my garden. I like a more natural look, so I staggered them in a seemingly random pattern, being careful to locate trees with thirsty roots further back. They won’t be large enough to be of much use for a few years, and in the interim, other options are available, depending upon budget and aesthetics.
That wind can do considerable damage. A study at the Panhandle Agricultural Experiment Station in Oklahoma found average decrease in yield of grain crops exposed to strong winds to be almost fifteen percent. The study noted that the damage wasn’t caused by a lack of water (although wind does cause considerable moisture loss), but probably from leaf destruction and energy going to tissue repair rather than production.
The cheapest solution is to use one plant to shelter another. Last year, I planted corn in a wide arc around the garden. Once it was high enough, it was a creditable windbreak. The year before, I used sunflowers. However, the need to rotate crops limits those options. Garden design is a bit like the logic

puzzle where you have a fox, a chicken, and a bag of grain to row across a river, and you can only take one at a time. The budget vs. aesthetics battle heats up when it comes to a fence. I’d love a dry-stacked stone wall around my garden. There are more than plenty of rocks in the country, but my back won’t take the DIY route, and my budget won’t take the contractor route. A screen made of bamboo or willow would be quite a bit less expensive, and still attractive. Or I could build a rail fence, and cover it with grapevines. Out here in sagebrush suburbia, I can get away with going very low budget, with a resulting dip in snob appeal. I can use snow fence, or even anchor a few wooden pallets with steel posts. Tacky? Maybe. But in any case, it will protect my garden. And if I’m lucky, it will leave just enough of a breeze to waft away any unintentional odors. HB

r. Amit Goswami, Quantum Physicist, wrote the Forward to this book and explains that John of God is more than a person; he is a scientific phenomenon of utmost importance. Dr. Goswami supplements the authors’ loving and beautiful description of the phenomenon that is John of God, with a scientific explanation, describing why he is convinced of the scientific proof of discarnate entities speaking and healing through a living person. John of God allows “spirit doctors” to take over his body, three days a week, in order to heal tens of thousands of people each year, of every kind of malady; from heart disease, paraplegia, blindness to cancer, and everything in between. Many had been declared terminal or incurable. They come from around the globe or from the next village, seeking healing and hope, spiritual growth or transformation. Joao Teixeira de Faria is known as John of God by thousands of people around the world, but prefers to be called Medium Joao. He is a full trance medium. The healings take place at the Casa de Dom Inacio, a healing center located in a village called Abadiania, about 70 miles south of Brasilia, in central Brazil. This center has been in existence for almost 40 years. Miraculous healings are a daily occurrence there, and people with untreatable diseases travel there from all over the world. John of God also travels abroad to do his healing, two or three times a year. When officials in Peru asked him to help with their cholera epidemic, he traveled to Peru and healed over 20,000 people. On his second trip to that country, people slept in line to be able to see him, sometimes for two nights. Men, women and children, the elderly, crippled and blind, as well as those stricken with a variety of illnesses, spent days waiting in single file in the 45 degree weather. The well-dressed people of means stood in line with the impoverished; the poor wearing only thin cotton pants and shirts. Medium Joao’s sense of justice does not permit privileges and he insists that rich and poor wait together, without favoritism. The authors explain that the extraordinary abilities and dedication of Medium Joao, and the phalanx of compassionate spirits he incorporates, have been scientifically tested and studied. Television documentaries, media presentations, books and magazines have brought awareness of this miraculous phenomenon to millions who might otherwise never have heard of him. Editor in Chief introduced John of God to many more Americans. A steady stream of doctors, scientists, quantum physicists, politicians, professors, actors and filmmakers from all over the world have been treated by the Entities (the “spirit doctors”) speaking and working through Medium Joao’s body. In the Casa, the Entities’ healing power is boosted by the presence of two Current Rooms, where people who have already passed by John of God sit in meditation. The bioelectric energy created in the Current Rooms is utilized in the healing of all. The Current Rooms are described as “a spiritual banquet” and have standards that are set by the Entities. No, that doesn’t mean a thing. It is [far] better to think of these as isolated, unpredictable, discrete events. It is not advisable to try to connect them in your mind with, say, the fires burning across Texas—fires that have burned more of America at this point this year than any wildfires have in previous years. Texas and adjoining parts of Oklahoma and New Mexico are drier than they’ve ever been—the drought is worse than that of the Dust Bowl. But do not wonder if they’re somehow connected.”

hether we want to submit these drastic environmental changes under the heading of “human caused climate change” or not, we have to admit that there must be some connection between the rash of “natural” disasters that have devastated our country in recent months and years. The tornadoes, floods, droughts and fires that are sweeping across this country are indicative of a planet that is not healthy, a planet that is out of balance. We can choose to ignore these symptoms all we want, but doing so will not help the situation to improve. If our own body was exhibiting multiple symptoms of imbalance and illness, we would more than likely heed these warnings if we did not want the disease to progress irreversibly. When are we going to heed these same warnings from the great body of earth, on which our fragile lives depend? Many of us can acknowledge the links between burning fossil fuels and an increase in greenhouse gasses; however the contributing factors to global warming are numerous. How we choose to organize our food systems and our farming practices has greatly impacted our environment and climate. In this three part series, we will explore how our choices in farming practices can either harm the earth, or help it to heal. We will also show how the health of an ecosystem is reflected in the health of the community that dwells there. In order to understand how to move forward in a responsible way, we must examine our past actions and learn from them. The history of fertilizer provides us with several important lessons. L
eave it to the Europeans to lead the way on fitness ideas. For example, in the 1980’s no one used trekking poles to help them get up the slopes of hills. We just gutted it out--with knee pain as the result. Once Europeans brought their “ski poles” across the pond, their value rapidly became obvious to us. Now, a new trend is heading our way--Nordic Walking. Most readers have no idea what Nordic Walking is. They may say “Oh, you mean walking with sticks?” If you do see folks Nordic Walking, you might be tempted to shout out “Where’s the snow?” Being fit and being in shape is a goal for most Healthy Beginnings readers. Nordic Walking might be the answer for you. First, let’s talk about what Nordic Walking is. It all started in the mid 1990’s. The Finns are avid cross-country skiers. To keep in shape during the off season, they pioneered the piece of gym equipment called the Nordic Track. This large machine featured sliding slats (reminiscent of skis) and a pulley system to work the upper body. Today, most of those machines are in museums and were replaced by the Elliptical Trainer. When used properly, the movable pull handles work the upper body. The poles one would use during Nordic Walking are telescoping, and are adjusted to the individual, such that the forearm is horizontal to the ground. The poles are high strength aluminum,

or even carbon fiber. They are feather light. The proper technique is to slightly drag the poles and keep them behind you at a 45 degree angle as you walk normally, with a left/right arm swing. You slightly push the pole into the ground to help propel you forward. This little action brings the triceps into action. By getting resistance into your walk, you involve muscles that normally would not get exercise. Even speed walking utilizes only about 70 percent of the body’s muscles. Nordic Walking ups that to 90 percent. To feed these muscles, your heart pumps more blood, raising your heart rate (this is good). More oxygen is needed to produce the energy you need, so you breather better. Normal walking causes blood to pool in the extremities leading to puffy fingers--not with Nordic Walking. To validate the benefits, the prestigious Cooper Aerobics Center in Dallas did a study comparing normal walking with Nordic Walking. Dr Kenneth Cooper is the leading researcher in aerobic health--he coined the word “aerobics.” Dr. Cooper’s top five exercises that provide aerobic benefit are: cross-country skiing, swimming, running, cycling and walking. Nordic Walking fits perfectly. Comparing the two forms of walking, their study revealed that Nordic Walking burned an average of 20 percent more calories, with some individuals consuming up to 46 percent more than the walkers. Their heart rates went up 6

percent and oxygen intake increased up to 20 percent. All this with no perceived extra exertion and no knee or joint pain. In addition, the back is supported and causes the walker to be more upright. Upwards of 8 million people in Europe Nordic Walk for fitness; half a million of those in Finland alone! The activity is emerging in the USA. One additional benefit of using poles--you carry a level of protection against snakes, dogs and other hostile critters!

Can you just use your trekking poles and get the same benefits? “Trekking” or “Hiking” poles (synonyms) are great for mountaineering. Going uphill they take about 5 percent of the work off your lower body and they relieve the stress on aging knees while going downhill. But, they are designed for steep grades and for supporting heavy loads. Backpacking with trekking poles is much easier. A good test is to compare and contrast Nordic Walking and Trekking poles with a bicycle analogy. Can you ride a road bike on a single track in the hills? Yes, but the high pressure tires, thin saddle and dropped handle bars would make for a very unpleasant experience. Could you ride a mountain bike on road trips? Yes, but the low pressure, knobby tires and aggressive configuration would be very uncomfortable. Each is designed with a specific application in mind. Nordic Walking is the road bike and trekking is the mountain bike. Each is optimized for its purpose. Nordic Walking poles are extremely lightweight--merely eight ounces each. They are thin and not intended to support a 150+ pound person on steep slopes. Nordic Walking is generally done on level paths or areas with only slight hills. For fitness, the idea is simple: push into the ground. It’s NOT intensity--it is consistency. Those little pushes add up. The triceps glow after just a few minutes. The strap system on trekking poles is designed to support the body weight (when used properly) while the Nordic Walking strap merely brings the pole forward with almost no gripping of the handle. Again, the intent is aerobic fitness. This is low intensity walking involving unused muscles to elevate heart rates over sustained period. With experience, the Nordic Walker can introduce a slight torso roll to get the lats and core muscles active. Finally, Nordic Walking is fun, it’s social and folks talk as they walk. Groups go around parks or even in shopping malls with rubber tips on their poles.

uly begins with the third of three eclipses, and it is an impressive one. You may be aware that the influential planets Saturn, Uranus and Pluto are arranged in what is called a T-square (three planets at right angles). This has been going on for a while--well over a year, in fact--and from time to time, it is “activated” by other influences. That’s precisely what happens with the July 1 eclipse of the Sun in Cancer. It fills in the “missing leg” and we get what’s called a grand square. We can expect some exaggerated news events, and some exaggerated emotions. But from the look of the charts, they will pass as quickly as they sprung up. Beware of getting caught in any drama--your own or that of anyone else, particularly involving family. Other aspects are highly supportive of those with a positive attitude.
Aries (March 20-April 19) It’s one thing to be spontaneous; it’s another to be reactive or impulsive. There is a fine line between the two right now. What side of that line you land on seems to involve where you place your priorities. This is the time to ask yourself: what really matters? If you are in reaction to something, run that question past the conscious part of your mind. If something is meaningless or trivial, treat it that way. If something has actual consequences, meaning or potential, treat it with respect and give it time and space to develop. Certain events may seem beyond your control in the early part of the month, but they are certainly not beyond your influence. One of the most meaningful things you can do is set limits and boundaries, particularly on your own emotions. Be cool, and evaluate the influence of the past on anything you might be experiencing now. We do have the capability to ignore what from our back files is calling for our attention, and we have the capability to resolve it and free up our energy. Many people live their lives dragged down by the past. I know you don’t want to, and I’m here to tell you it’s not necessary. Cancer (June 21-July 22) A partial solar eclipse in your sign on July 1 may have you reassessing very nearly everything and everyone in your life. The key to doing this productively is to see yourself as something other than boxed into your circumstances. Most of the factors that seem so influential lost their power many months ago; you’re just realizing it now. More to the point, you’re being invited to see your immediate opportunities for what they are, and to use the creative force of your mind to see them as authentic. You’re past the point where it’s even vaguely productive to doubt yourself. You may be confronted by how many people you care about invest their creative energy doubting themselves, and I suggest you look to them as an example of what you don’t want to be. Then, quickly look for examples and inspiration of what you do want to be, and by that I mostly mean look within. Leo (July 22-Aug. 23) Over the next week or two you’re likely to notice that your fears were exaggerated, based mostly on information you were missing. It is ignorant to think that ignorance is bliss. Knowledge may not, in itself, be blissful, but it can help us focus our reasoning abilities and see what we’re actually confronting and what our real potential is. Most of what you’ve been concerned about is emotionally driven. When you get your mind into the act, you tend to see things a lot more realistically. But at the moment, you need to assess informa-

tion carefully; some factors are much smaller than they seem, and others are much more useful than they seem. Therefore, think, but think carefully, adjusting your mental process as you go. Virgo (Aug. 23-Sep. 22) One sure way to find out whether your sexuality is your own is to try to do something you want with it. It’s one thing to think we’re totally in control of our desires and our pleasure as long as we follow the rules that everyone else has set for us, and to which we have tacitly agreed. But once we step outside of those rules and experiment with our ability to make choices, we get a reality check. Part of how we get by in the world is telling ourselves we’re free. How we actually get free is by experimenting with what we want, and consciously engaging whatever comes up as a result. If you don’t feel ready to experiment in the real world, try doing so in your imagination. Let yourself think, want, need or indulge anything or anyone you want, and then observe your responses. One last item, under the general heading of ‘reality check’: what do you feel confident telling others? Why or why not? Libra (Sep. 22-Oct. 23) In this world, we tend to work for our achievements. But when they arrive, often it seems like some circumstance we had no clue about or could not have predicted influences what we accomplished--or rather, like we would have seen it had we been paying attention. Your role now is to notice those “unforeseen” factors, use them to your best advantage. You may get caught by surprise, but even then you’ll still benefit from a little advanced preparation--and mostly from being open to some unusual form of success. However, I suggest you not think of success as something you work for as much as prepare yourself for. This is a moment to reap the rewards of what you’ve built on, and part of your preparation means being open to recognition, visibility and willingness to take some chances--kind of like you’ve been doing lately, but from a deeper place. Scorpio (Oct. 23-Nov. 22) Belief systems are dangerous things, mostly because we don’t see them for what they are. We tend to think that “we believe what is true because it’s true,” rather than we think something is true because it’s part of a pattern that we adopted. There is an easy way to test this theory. Identify one of your assumptions. This might take some thought, but find something you believe is true, then check it out. Determine how right or wrong your belief was. Once you do that a few times, you may decide you had better test every assumption that you make, particularly if it involves what you think of as a “belief.” Every time you hear yourself say that word, pause and ask yourself what you really mean. Sagittarius (Nov. 22-Dec. 22) Jupiter, your home planet (the gorgeous, enormous orange and yellow one with 63 moons) has taken up residence in Taurus for the next year. This will help you solidify and stabilize your plans, your finances and get clear about your desires. You may feel less ambitious, less hot to burst into the next phase of your life, and cooler in general. But from the aspects Jupiter is now making, I trust that you can see that you have the potential to make some excellent decisions in the next few months. The thing is, these will be deep decisions, and therefore ones that affect your life. Remember to look for the place where the outcome you want the most fits the thing that works best in the world around you. It is a fact that your

personal constellation aligns with the greater movements of the cosmos. Feel gently for that opening. Capricorn (Dec. 22-Jan. 20) An eclipse in your opposite sign, Cancer, may be giving you the feeling that you are at the mercy of the fates. You may have a knot in your stomach that you cannot control what anyone else feels, what they want, or how they respond to you. You will feel better when you embrace this lack of control; by better, I mean you will feel emotionally free, and free to move around in the world without the constant sense of an emotional burden. The people around you are giving you the opportunity to put that emotional burden down. You may on some level equate this with abandonment; it is nothing of the sort. Indeed, this moment is about you learning to embrace rather than abandon yourself. When you make this one simple choice, you will feel much more secure in your relationships. Aquarius (Jan. 20-Feb. 19) Do you ever have the feeling that people are holding out on you, as in not telling you what they know and what you should find out? It’s not usually intentional. Social conventions prevent us from saying too much to others; the emphasis on “mind your own beeswax” gets in the way of “please don’t hesitate to tell me what I need to know.” So, while you may feel like you get some news too late, actually, it’s right on time, to be useful, as long as you don’t fret over not knowing it sooner. Then, you can adjust your own standards for what you want to be told in advance, as well as what you diplomatically mention to others. Remember, these are situations where the messenger isn’t always appreciated, but you at least can afford to honor reality for what it is. Thank people for keeping it real. Pisces (Feb. 19-March 20) You have a lot of, and I do mean mucho, creative energy available. The more you use it, the more you will have. This is contrary to the usual laws of the Earth where the more you use, or give, something, the less of it you have. Everyone benefits from what you are offering, and the more you go full-spectrum, the more benefit you will create. This works personally for you as well. The best way for you to get into abundance consciousness is to be generous with yourself, put energy into what you have passion for, make sure people know what you’re up to and keep one eye focused on peace and justice at all times. You have every reason to have faith, and every reason to let go of the lack of faith that has been so irritating for so much of your life. HB

T
his is the month of July, which is very busy for me. I am now on a traveling soccer team! It is very hard to have that going on during my busy summer; not only do I have soccer going on, but I am also volunteering at a drama summer camp! My weeks are filled with soccer practice and summer camp, and my weekends are for soccer games and free time! What’s happening during your month of July? Another thing I am trying to achieve this summer: getting into better shape. In some of our past kids corner articles, I have written on “how to get in shape.” But, the hardest part of getting in shape is getting motivated! I know that when I work out, I need a reason to push myself harder; like I want to be a better soccer player. This summer, I just want to be in better shape and get fit. That single Idea can get me a long way. But for some, that might not be enough; you need to build confidence in yourself. Try saying out loud all the great things about yourself. For me, I see how much better I have gotten at soccer after working really hard this spring and then achieving my goals. Another thing is to set goals. Say to yourself that you want to get stronger. Make that promise to yourself, and you will. You could also use a chart, like on Monday do ten sit-ups, do ten push-ups on Tuesday, and so on. Then, increase the amount of reps during the following weeks to twenty, thirty, and so on. Get motivated to do better, believe that you can do it, and give it your all!
Kayaking through Siberia, Part 7 I began my healthy adventures in 1990. By combining bicycling, kayaking and hiking, I would eventually travel four times around the earth. I am 70 years old and have not been sick since 1972. It is never too late to live a healthy, active, adventuresome life as you will read in a series of articles. So I ended up with a huge meal of fish for dinner. For me, cooking a meal is simple, that is when it is not raining. I place a collapsible grill over a small wood fire. In this case, after gutting and scaling four fish, I fried them in oil in a frying pan. On other occasions, I used the pan to prepare pancakes from pre-mixed powdered milk, powdered eggs and flour, as a substitute for bread. I also carried a light-weight pot along to boil water to reconstitute complete, precooked, freeze dried meals from our Everlasting Health Center. I found these light-weight packages extremely convenient to produce a nutritious, delicious and filling meal. For times of inclement weather, I brought a number of well-balanced nutrition bars along, and that basically completed my food supplies.
Don’t forget to give yourself a treat this summer! What you need: • Popsicle maker (you can also use an ice cube tray) • Your favorite kind of juice (apple juice is my favorite) • Tooth picks (if you’re using an ice cube tray)
It started to rain again, early afternoon in the next day. What was that white stuff I occasionally noticed on either riverbank? Snow that through the process of thawing by day and freezing by night, turned into ice. To keep warm, I wore my down jacket below my raincoat. The excitement for this day started with a sound. Oh no, It was the unmistakable rush of rapids. Why this? My detailed maps did not show any of them, nor had they been mentioned by any of my Russian friends. Too late to get ashore, I had to act quickly. Should I steer towards mainstream, where it would be the deepest and thus safest, or head closer to the shore in case I flipped? At this moment, I was closer to the left bank and that is where I stayed. Oh, no! I will never forget the sight of rocks appearing ahead of me, so threatening looking. HB

very year nearly 3,500 Americans die in home fires and approximately 18,300 are injured. Children and the elderly are especially at risk in home fires because they are less able to escape when fire strikes. You can improve the chances that your family will survive a home fire by making sure that they can escape quickly if necessary.
• Be cautious opening doors that seem cool.
Have a Plan. The primary fire safety strategy for any home is to warn the occupants early. The best way to get the earliest warning of danger is by installing enough smoke alarms. The other part of the home fire safety plan is for everyone to get out quickly. When you are awakened in the middle of the night to a fire, your thinking may be confused, so it is important that you practice your escape plan ahead of time. That way, your whole family will know what to do.
Most people do not realize how quickly fires can grow. A home fire can become a killer in as little as 3 minutes. By practicing your escape, you can make every second count.
Preparing Your Escape Plan • Have at least two working smoke alarms, test them monthly. • Plan two ways out of every room. • Practice your escape plan twice yearly. • Have a designated meeting place a safe distance from your home. • When the smoke alarm sounds, head straight for the exits. Do not stop.
• Go directly to the designated safe meeting place. • Call the fire department from a neighbor’s home. • Once outside, stay out.
Preparation Saves Lives. A working smoke alarm is the best way of alerting residents to a fire. Smoke alarms save lives, families and firefighters. While the message is simple, statistics show that Americans need to pay more attention to not only installing, but maintaining the smoke alarms in their homes. A smoke alarm with a dead or missing battery is the same as no smoke alarm at all. According to the National Fire Protection Association, in 2003-2006, almost two-thirds of home fire deaths resulted from fires in homes with no smoke alarms or no working smoke alarms. The right equipment combined with simple maintenance, basic fire safety techniques, and a bit of organization can help make the difference when preventing a fire in your home. Prepare your home as if your life depends on it. IT DOES! HB

Unfortunately, the self-destructive forces in life don’t usually give up their influence and authority without a battle. They prefer things as they were and will try to derail your efforts at change. Such was the case with this woman. Whenever she wavered in her efforts to grow, giving in to her fears or laziness, her old habits and thought patterns quickly re-asserted themselves. Her depression returned like a dark, enveloping cloud. When she wasn’t moving forward, she was moving backwards. There was no middle ground, no neutral or “park,” and no sitting on the fence. When you apply the brakes to your psychological and spiritual growth, you don’t just stop, you go backwards. Life is structured this way to keep you moving forward. Stalling and procrastination are not indifferent to life; they go against life. They take away your momentum, your focus, and your resolve. So when your destiny grabs you, let yourself flow with it. Look forwards, not backwards. You know what the past holds, and you don’t need to go through it again. Instead, embrace your future with enthusiasm and an adventurous spirit. HB

Farming caused famine, or farming for the future? The choice is ours to make. Continued from Page 35 Nitrogen, Phosphorus and Potassium are the three most essential nutrients for plants. None of today’s major crops can survive without them. All of them can be found, in varying amounts, in manures and composts. For most plants, the most essential of the three is nitrogen. There are different types of nitrogen, for example, the air we breathe is composed of 80 percent nitrogen; but airborne nitrogen cannot be accessed by plants or animals. Plants depend upon fixed nitrogen, in the soil. Uncultivated virgin soils have fixed nitrogen stored in them; as the amount of fixed nitrogen is used by crops, the soil fertility drops year after year. In the fall of 1898 Sir William Crookes, the incoming president of the British Academy of Sciences, issued a dire warning. The combination of an increasing world population, and a dwindling of available fertile soil, would pose the threat of famine and starvation as soon as the 1930’s. There was only one way out, he argued. The creation of vast amounts of synthetic fertilizer would be necessary to meet the increasing demands for food. It must also be noted that nitre, a type of salt, also called saltpeter, originally discovered underground in caves, basements and crypts, is also essential in the process of making gunpowder. A single substance with the ability to increase crop yields, and supply a military with weapons, is a thing of value to any aspiring empire. The acquisition of it was a significant factor in the British takeover of India, for example. In addition to true saltpeter, there is also saltire, which is found in abundance throughout South America. For most of the 1800’s, many nations including the US, Britain and Germany depended on imported nitrites for both food and firearms. Motivated by Crooke’s warning, an ambitious German chemist named Fritz Haber began experimenting with ways to extract nitrogen from the air, and turn it into a source of fixed nitrogen, in the form of ammonium sulfate. This had been attempted by other chemists without success, but Haber finally managed to do so in 1909. Then, in collaboration with Carl Bosch, they created gigantic machines capable of producing ammonia in unprecedented amounts. This discovery put Germany in a position of great advantage. It could now produce its own fertilizer, bombs and gunpowder at less expense than importing it, and it was the only nation with access to the technology. The German government invested massive amounts of money to create two separate plants that housed the Haber-Bosch machines. These plants supplied the German Military in both world wars. Within their walls, the concept of chemical warfare was

born. These laboratories created the poison gases used in the trenches of World War I and the concentration camps of World War II. Many of the key ingredients and processes stemmed from the technologies and materials used to create fertilizer. Today, Haber-Bosch machines exist all over the world, drawing nitrogen from the air and converting it to synthetic fertilizer. These machines, and the materials they produce, have been credited with providing food to millions, if not billions of people. In some regions of the world that were facing extreme malnutrition due to famine, there now exists obesity epidemics. This has not been the only unintended consequence that has come from the use of these fertilizers. Only some of the synthetic nitrogen stays in the soil, the rest is either re-released into the air, or into the water. Irrigation and soil run-off carries the nitrogen far from the farm fields. Nitrogen pollution in the water feeds blooms of algae that cloud the water, reducing the amount of sunlight that can reach plant life; which affects the entire food chain, killing all life below. As

the vegetation dies and rots, it pulls oxygen out of the water. This affects both fresh water systems and oceans. Roughly 1.5 million tons of fixed nitrogen flow into the Baltic Sea north of Germany every year, making it one of the most polluted marine ecosystems on earth, and collapsing a once thriving cod-fishing trade. The Great Barrier Reef, Mediterranean and Black Seas are also showing effects of this pollution. The largest area of nitrate affected waters is the dead zone, off the coast of Louisiana in the US. It is an area the size of the state of New Jersey, and growing. This dead zone is one of more than 150 dead zones that have been identified around the world. The very material that was celebrated as a substance that could end world hunger is contributing to the death of thousands of life forms that were once available food sources. Meanwhile, the use of these fertilizers in combination with mono cropping, has contributed to the processed foods that are often implicated as a cause of obesity. Furthermore, repeated application of nitrogen fertilizers strips the soil itself, making it less able to absorb water, contributing to droughts, mudslides and floods. Healthy soil is able to hold more greenhouse gasses than depleted soil. The less healthy the soil, the more carbon is released into the air. When Crooke’s made his dire warning back in 1898, there were several factors that he failed to take into account. For instance, he failed to acknowledge the role that mono-cropping of nitrogen greedy plants, such as wheat and corn, play in reduced soil fertility. He didn’t consider the inefficiency of favoring annual food crops, which must be replanted year after year, over perennial ones, which can thrive for many years, and increase yields over time. He failed to take into account that with the increased industrialization and urbanization, comes a reduction in available land for growing food; and a higher cost to ship food from afar. To suggest that synthetic nitrogen is the one and only solution is limiting, to say the least.

Even Bosch himself was able to recognize the paradox inherent in his machine. In 1921, after an explosion at one of the original Haber-Bosch plants killed hundreds of workers, Bosch spoke candidly at the memorial, “It was precisely the stuff meant to provide nourishment and life to millions...the stuff which we produced and distributed for years, which suddenly proved itself to be a cruel enemy for reasons we do not know. It has put our work to ashes.”

Chiron Files into the water but not off the deep end

ater is becoming the dominant element in the charts, as the Sun moves through Cancer, and particularly as we’ve experienced a solar eclipse in Cancer on July 1. This reminds us of what I think of as the most significant personal theme of our times, which is emotional healing. This is illustrated most vividly by Chiron in Pisces, a relatively new influence that I’ve mentioned a few times. Pisces and the other water signs are the realm of feelings, emotions and the imagination. If we look honestly at how these things are contaminated, it starts to get disturbing. The truth is there are many influences competing for control of our feelings, and that control is not positive. It’s easier to make people feel bad, and when someone succeeds at doing that, they tend to get control. I was reading one of those commercial health websites the other day and found a kind of slideshow about all the things you shouldn’t eat if you don’t want to “bust your diet.” The program included descriptions of numerous items containing a pile of both salt and sugar, such as big, fluffy cups of “coffee.” I wrote to a friend about this, who explained something called sensory-specific satiety. By adding both sugar and salt, people’s taste buds are basically tricked into never reaching a satiation point--they want to keep eating and eating. That’s why you’ll find a ton of sugar in salty products and a ton of salt in sweet products. It keeps people munching--and this
is hooked right into the emotions. Sugar and salt both influence the emotions, as does the experience of desire, attempting to fulfill that desire and then going back for more when you feel like you don’t have enough. We could add all the influences of media, designed by focus groups, script writers, editors and directors, to get us to feel a certain way and thus respond by taking action. So all day long we are infiltrated by primarily emotional sensations designed to get us to act. Even before the Internet, people in the Western world were exposed to some 4,500 advertisements a day. Then there are the drugs we’re prescribed or self-prescribe for everything from migraines to depression. All of these influence how we feel. Then there are the entertainment products we ingest willingly. All of this is in the realm of Pisces. The first thing that Chiron does is bring awareness, calling our attention to an environment or situation. Chiron in Pisces is telling us that it’s time to beware of all of these influences and how they affect us. We might avoid the whole conversation because once you start, there is no end in sight; there are so many sources of emotional infiltration that it might seem like you could never deal with them all. However, Chiron in Pisces presents us with both the occasion and the responsibility to be aware. That awareness would embrace everything that influences how you feel, and everything that you choose specifically to influence how you feel. You might consider the new basis for everything you eat, drink or allow into your mind as being: how does this make me feel? This counts for raising awareness, and it counts for a lot. You don’t need to plunge in and change everything under the influence of Chiron; only that you touch the edge, admit the subject matter and respond

to what you find out. You might say that Chiron is about making adult decisions about what we know affects us. Yet one way that Chiron works is that the longer we ignore it, the more the stakes go up. One thing we face when confronting emotional situations is lack of confidence (which is itself often an emotional condition). In terms of confidence, an eclipse in Cancer (on July 1, though having an influence for at least the next six months) is a two-edged experience. On the one hand it’s pushing us into new territory. Eclipses are measured in cycles that go for many centuries, and this is the first event in a brand-new cycle--one that’s never happened before. So that can be intimidating, and it can invite us to enter unknown territory willingly, perhaps with some curiosity. Things to think about with an eclipse in Cancer include: what do I think of as risky, and is that realistic? What do I do for the sake of safety, and does that help me or hurt me? There are many influences in this chart about stepping out of the things that have held us captive since childhood. You would be amazed who is still dealing with the same things that stripped them of their confidence, or trying to please their parents, well into their 50’s and 60’s. To begin to escape these traps, we first need to notice we’re in them; then, at least, it’s possible to consider another possibility. You have options, and you have the power of choice. As you experiment with that, you will discover that it’s really true.

HOW TO PREPARE: 1. Mix all dry Ingredients together and make a well in the center. Mix wet ingredients together--the buttermilk, olive oil, lemon juice or lemon extract and vanilla (opt). 2. Now mix the wet ingredients in center and stir until well blended. Fruit Preparation: 1. Cut up 2 large mangos, first by cutting off each side of the seed and ends. Then cut lengthwise and cross wise in 1 inch cuts, fold out and remove with paring knife into a bowl. 2. Add 6 slices of pineapple and cover with its own juice. Cover with wrap and set in fridge for 1/2 hour. 3. Remove the fruit from fridge. Remove the pineapple slices to plate and use 1/2 cup of the juice to thicken with 2 tsp. cornstarch and return to fruit-mix in. 4. Pour the mango and pineapple juice mixture into a prepared, buttered 8x8 glass pan. Place the 6 slices of pineapple on top. 5. Cover the fruit with all but 2 cups of the cake batter. The 2 cups of left over batter will make an 8 in. one layer cake to be used however you wish. 6. Bake at 350 preheated oven for 25-30 min. or nicely browned. Very delicious! If you like mangos like I do, you will appreciate this recipe.
1. Cook all the ingredients together until tender. Remove from heat and remove the bay leaf. 2. Let cool somewhat and ladle into a food processor. Pulse or on 1, until smooth. 3. Add 11/2 tsp. Himalayan salt or Kosher salt, 2 dashes red pepper flakes, 1 tsp. the spice hunter mix. 4. Pulse again until the spices are blended in. 5. Reheat and remove from stove; add a 1/3 cup of heavy cream, blend and fill soup bowls. 6. Swirl a tsp of cream on top for a pretty finish. This amount should serve 4 or 5 people. I enjoy my recipe, as one can serve it cold like a Vichyssoise. Serve with baguette rounds, brushed with olive oil and toasted in the oven.

Preheat oven to 400 degrees. Top each tortilla with even amounts of spinach, corn, beans, cheese and steak. Drizzle BBQ sauce over and wrap them up.
1. Cut bread in thin slices and spread with butter or mayo.
Heat through in baking dish lightly coated with cooking spray for 10 minutes or until lightly browned.
4. Layer the cheese on top of the cucumbers.
2. Spread on some spicy brown mustard. 3. Add 3-4 slices English cucumber and sprinkle with fresh dill. 5. Place one leaf of butter lettuce on the cucumbers and top with the other slice of bread. This is one of my favorite sandwiches!

Cut pita bread in half. Gently open pocket.
Slice eggplant very thinly. Brown ground turkey with onion and garlic.
Combine cream cheese with 1/4 cup of the strawberries, mashing the berries as you mix.
When brown, add tomato sauce and red wine. Let simmer for 15 minutes.
Spread half of mixture inside each half of the pita.
Layer eggplant then meat mixture in 13 x 9 pan, ending with meat mixture.
Fill with remaining strawberries. Heat a cast iron pan or skillet to warm.
Add milk to clean saucepan and slowly stir in flour a little at a time until sauce thickens. Add feta and parmesan cheese.
Spray sandwich with nonstick spray and grill both sides until golden.
Pour white sauce over the casserole.
Enjoy warm.
Bake at 350 degrees until top starts to turn golden brown
Garnish with mint.
